Funding for Dublin grain facility AUSTRALIAN Grain Export Pty Ltd’s Dublin packing facility is set to open new markets for local farmers following a grant of up to $2 million announced this month as part of the state governments’ Regional Growth Fund. The fund has allocated $13 million to projects across regional South Australia in its second round, which will see AGE build a new plant to value-add to pulses delivered by growers from the Mid-North, Adelaide Plains, and Yorke Peninsula, and as far as the Eyre Peninsula. Other projects to receive funds include a timber plant upgrade in

No CAP meeting for APC in December DESPITE unprecedented submissions following public consultation on a large dog breeding and kennel facility proposed for Two Wells, Adelaide Plains Council’s chief development regulatory board did not meet this month as planned. In a statement APC confirmed the CAP (Council Assessment Panel) did not hold a meeting in December as scheduled, with the next likely meeting to be in February 2021. “It is extremely unlikely that either of the dog kennel applications will be presented to the CAP in February given the significant number of community responses received by council and the assessment process that will need to be undertaken,” the statement read. “Any updates, including CAP agendas, will be made available on our website.” APC received well over 300 submissions against the proposal on Coats Road, Two Wells, which outlined a desire to house 300 dogs at the site. Social media went into overdrive once news of the proposal went public, with reports more than 10,000 emails were sent to APC against the development.

Industries and Regional Development, David Basham, said projects such as AGEs would not only directly boost local communities but would also have more wide-ranging benefits for the state. “2020 has been a tough year for South Australians and our regions have been hit particularly hard, firstly with drought, then bushfires and now the coronavirus pandemic,” Minister Basham said. “Regional South Australia will be critical to our economic recovery and the Marshall Liberal Government is building what matters to back businesses to create jobs.”
Moving Mallala’s monument? ADELAIDE Plains Business Advisory Group (APBAG) held a Zoom meeting on Thursday December 3, with chairman, Ian O’Loan, welcoming three guest speakers to those present. Disappointingly, there wasn’t a quorum, however the speakers, Anne Moroney, Ben Cunningham and Barry Lloyd, were well received. “Anne and Barry spoke on the Northern Adelaide food bowl cluster, and Ben spoke on the strategic, economic and tourism plan of Adelaide Plains Council,” Ian said. “Ben spoke on various issues, including whether council’s strategic plan looks at traffic management, the economy and town ex-
Louise Michael reports: pansion.” Ian advised that in 2006, a traffic study was completed, and the Veteran’s Affairs Department offered to relocate the monument that currently sits in the middle of the main town intersection, to the museum. Around the same time, planners of the (then) council also proposed a bypass around Mallala, however then voted against it. “With development such as Gracewood, Plains Grain and other businesses, and increased traffic particularly trucks, good traffic management is required,” Ian said. “We need to be proactive and think and plan ahead.”
Ian said APBAG plans to hold a breakfast meeting in February, and a subsequent meeting in March. “This is an independent group that provides the opportunity for business owners to mingle and get to know each other, work together, share business experiences and discuss potential problems,” Ian said. “The purpose of the subsequent meeting is to seek interest for new members – that is our objective.” “We also need to increase economic development in the APC region. “Any business in the Adelaide Plains Council region, even home-based businesses, are welcome to be involved.” Further details will be available early next year.

“So then it comes down to do we modify the project to meet the budget or do we modify the budget?” he said. “It is a lot of increase in money (but) the alternative is that we reduce the scope and do the abridged version. “I think part of the appeal is that we actually deliver it as a finished project, rather than in dribs and drabs, so it has the most impact in terms of the mood of the town, the excitement of the new development that’s growing in leaps and bounds. “This site is likely the most visited spot in Two Wells because of the toilets.” Cr Carmine Di Troia said the council had to move forward positively. “Yes it’s gone over budget,

support for the project, saying as a result, it was important the project was delivered in its entirety. “I do commend the project to the chamber, it is seriously exciting, it is highly anticipated and I can’t wait for the official opening at the end of March next year,” he said. APC’s infrastructure and environment manager, Tom Jones, said local builders and landscapers were approached by council in line with the DCP requirements but only two tenders for varying aspects of the project were received. “There are reasons for the lack of interest,” he told the chamber. “It really comes down to pressure on the sector due to federal government, state government initiatives. “We need to do further work with tenderer two and other local suppliers to ensure we can deliver this project for that sum. During open discussion Cr Brian Parker questioned whether council was getting value for money. “It seems to me that for a million dollars I would be expecting at least more than one tender to compare value to ensure the ratepayers get value for money,” he said. “It will be interesting at the end of this project to see exactly how much this project is going to cost council, and in turn, ratepayers.” Utilising Open Space
Maintenance Fund dollars would provide an opportunity for the elected body to deliver the Village Green project in its entirety with no additional outlay to the public purse, Mr Miller advised. “This funding stream of course, is specifically aimed at open space, shovel-ready investment,” he said. Cr Margherita Panella was concerned the council was ignoring a budget it had set with regards to the project. “I’m not comfortable that we set a budget, you guys have got to make sure that you stick to the budget, you don’t go over it,” she said. “But it seems suddenly it’s creeping up, creeping up, and that’s not what ratepayers want. “When we set a budget, that’s the expectation of the CEO, to deliver that budget outcome, so I’m a bit disappointed actually. Cr Lush agreed with Cr Panella’s sentiments, saying it was a “fair sort of a blow out”. “If we continue to do business like this we’re going to have a lot of blowouts,” he said. “Because it's from the federal government I’m less concerned, it’s a gift, but the $486,000 on top of it, that’s not a gift.” Cr Marcus Strudwicke weighed into the debate, raising the point APC had not actually set a budget for the project, merely an allocation of funds, and it was only now they were committing to a specific costing based on tenders.

ADELAIDE Plains Council held a special meeting on Monday December 7 to discuss Two Wells’ much publicised Village Green project, which outlined a shortfall of more than $400,000 following closure of the tender process. The meeting also saw council redistribute funds from its Open Space Maintenance Fund to the Village Green project to meet this shortfall, which the chamber voiced their concerns about. The project has been 12 months in the making, with APC receiving $1 million in Federal Government Drought Communities Program (Round 2) funding late last year. Of this, $700,000 was allocated to the Village Green initiative and $300,000 to other community projects across the district. A further $186,000 of ratepayer money was redistributed from council’s own budget to the Village Green project. At the December meeting councillors learnt the project had only attracted two tenders, both of which did not tender for the whole project, and it was now estimated to cost $1.06 million. APC CEO James Miller said the project’s 100 per cent detailed design was approved in October, and stated that while council was under significant time pressures, he remained “extremely confident” the project deadline of March 31 next year would be met. Mr Miller acknowledged the “overwhelming” community and business sector

AUSTRALIA’s peak industry body for the vegetable and potato industries, has announced the appointment of Renee Pye from South Australia as a grower director on its board. Renee will replace vegetable grower Danny De Ieso, who is stepping down after serving more than six years on the AUSVEG Board. Renee is the marketing and media manager for leading potato, carrot and onion packhouse Zerella Fresh, which is one of the largest producers in South Australia. Renee is involved in a number of key areas of the business, including new product development and marketing, and is an emerging leader in the South Australian industry. She has overseen the development of Zerella Fresh’s Spud Lite range, which has contributed significantly to the company's recent growth. AUSVEG chairman, Bill Bulmer, welcomed Renee to the AUSVEG Board, saying the industry was lucky to have a strong, passionate, up-and-coming industry advocate who will provide a unique and informed perspective on South Australian issues and advise on AUSVEG’s national policies and agenda. “South Australia is a critical supplier of vegetables and potatoes for the national horticul-

Taking down her shingle Few believed horse vet Elizabeth Woolsey Herbert when, a year ago, she announced she would retire in 12 months’ time, for her 70th birthday. With that significant birthday coming soon, Elizabeth is indeed “taking down her shingle” on December 18, when her veterinary practice will close permanently. The “shingle” marking her home and veterinary practice is “Hughesy”, a plastic horse that has for some years stood beside the Two Wells to Gawler Road bearing messages, part educational, often amusing, and always timely, to all who pass by. Born and bred in San Francisco, Elizabeth moved to South Australia in 1991 with her former husband and their daughter. After buying her current property, a former glider factory, they converted sheds into a home, clinic, office, storage, and Elizabeth started to build her practice. Most horse owners then expected horse veterinarians to be big, strong blokes with a mixture of strength and skill, height and knowledge. Into the fray stepped petite 157cm, 50kg Elizabeth Herbert, declaring herself as a horse vet in a district where small, female veterinarians were expected to treat dogs and cats. Elizabeth soon dispelled any misconceptions about her ability,
Kay Boon reports: swiftly developing a loyal clientele. She knows where, when and how to act, with the confidence of 45 years’ practice, as well as a good dose of commonsense. She also knows how to communicate, and is not afraid to comfort a grieving client. It was her commonsense that brought international acknowledgment for the way she treated horses burnt in the devastating Pinery bushfire of November 25, 2015. As terrible news began to unfold, Elizabeth’s Adelaide Plains Equine Clinic was hearing horror stories of horses and ponies injured, or burnt to death; of hoofs burnt, skin sloughing away, eyes scorched and muzzles peeling, or lacerated by fences. Fourteen horses were admitted to the clinic that first night, and some were soon returned to their owners. However, eight remained for longer-term and, remarkably, all were saved, despite dreadful injuries. Elizabeth and her staff kept treatment records from which Elizabeth had an article published in the Equine Veterinary Education journal: “Findings and strategies for treating horses injured in open
range fires” was the second-most read article in that journal in 2018. Typical of Elizabeth’s generosity, the article is freely available internationally, enabling prompt, simple, and cost-effective treatment of burnt horses. “I have friends all over the world who can’t believe how lucky I am to have such interesting cases and experiences,” she said. “A good part of the reason is because the clients are such practical people who let me do a bit of ‘MacGyvering’ on their horses. It was never boring.” Elizabeth has many post-retirement plans. She may move back to the USA, and dreams of trout-fishing in beautiful streams, and of writing. As of next week, don’t expect to find “Hughesy” guarding over weekly wisdom on the Two Wells-Gawler Road. If there is a sign outside the former clinic, it may well say, “Gone fishin’.”

FAIBS SHORE UP 2020
AFTER the second South Australian lockdown due to COVID-19, Friends of Adelaide International Bird Sanctuary (FAIBS) was fortunate to be able to gather their volunteers together for two more events along Gulf St Vincent shores to round off a very a-rhythmic year. Toward the end of November, 20 helpers gathered at Light Beach to remove tree guards from previous plantings, pleased to discover a significant proportion of the seedlings had survived. These plants are instrumental in securing soils and sands, as well as providing corridors necessary for fauna and flora sustainability. The early morning calm,

In early December, with COVID-19 restrictions relaxing just enough, FAIBS was able to hold its AGM. At this event, the 2021 committee was confirmed, with Mary-Ann van Trigt continuing as president.

Water flowing freely WATER main upgrades are flowing across the Northern Adelaide Plains as part of SA Water’s $155 million investment in improving water services for customers and sustaining South Australia’s water infrastructure. Work is under way to enable the connection of around 2500 properties in several new housing developments in Angle Vale to SA Water’s sewer network, through the installation of around five kilometres of sewer main and construction of two connecting wastewater pump stations. The new infrastructure will replace a temporary tankering facility, which local residents currently discharge into, before the sewage is transported to SA Water’s Bolivar Wastewater Treatment Plant. SA Water’s general man-
ager of customer and commercial Kerry Rowlands said the upgrade aims to better manage sewage flow and odour, and cater for forecast population growth in the area. “A permanent sewer connection will provide residents a safe and reliable wastewater service, and significantly reduce the level of odour generated by the current tankering setup,” Kerry said. “We will decommission and remove the temporary facility once the new section of pipe is connected and transporting sewage from local properties. “It’s important our customers then do their part to keep the sewer system flowing, by only flushing the three Ps – pee, poo and (toilet) paper – down the toilet.” Work will start this month on Heaslip Road – between
Green Court and Angle Vale Road – and continue south from early January. Construction will typically occur overnight from Sunday to Thursday between 7pm and 6am, to minimise disruption to people travelling through the area. “Residents living near the area slated first for sewer main installation have been notified, and we will progressively provide information to more properties as works proceed along Heaslip and Curtis Roads. The complex works are expected to take around eight to nine months to complete. This project is separate from other nearby SA Water works under way, involving the installation of wastewater and water mains to accommodate the under-construction Angle Vale B-12 school.
Jobmaker scheme ELIGIBLE employers are now able to register for the new JobMaker Hiring Credit scheme, being administered by the ATO on behalf of the Government. The JobMaker Hiring Credit payment is a wage subsidy paid directly to employers that will help to accelerate growth in the employment of young people during the COVID-19 economic recovery. The scheme is an incentive for businesses to employ additional job seekers aged 16 to 35 years. Eligible employers can access the payment for up to 12 months for each eligible additional employee they hire between October 7, 2020 and October 6, 2021. They will be able to claim up to $200 a week for each additional eligible employee they hire aged 16 to 29 years, and up to $100 a week for those aged 30 to 35 years. This means an employer
will be eligible for up to a total of $10,400 over the year for each eligible employee aged 16 to 29 years or $5200 if aged 30 to 35 years. Deputy commissioner James O’Halloran said the ATO is working hard to make it as easy as possible for employers to access the Government’s JobMaker Hiring Credit payment. “The ATO is here to support employers and the community to easily access important economic stimulus like the JobMaker Hiring Credit,” Mr O’Halloran said. Mr O’Halloran encouraged businesses to check their eligibility and take this first step to register for the scheme from this week and then employers will be ready to move to quickly make a claim in February 2021. You cannot claim if you are not registered. “We encourage employers
to register from now to ensure their hiring credits can be paid promptly from when the first quarterly claim period opens in February 2021,” Mr O’Halloran said. “Employers are reminded that new employees must have received the Parenting Payment, Youth Allowance (Other) or JobSeeker Payment for at least 28 consecutive days (or two fortnights) within the 84 days (or six fortnights) of being hired to allow for a claim to be made by the employer,” Mr O’Halloran said. “Employees need to have completed a minimum average of 20 hours (worked or paid) per week during the time they were employed in the JobMaker period. “I encourage employers seeking advice on the JobMaker Hiring Credit to contact their tax or BAS agent, or call us on our dedicated help line 13 28 66.”

As club patron, on Monday, 30 November I was pleased to conduct the election of officers at the Two Wells Football Netball Sporting Club Annual General Meeting. This year marked the 50th season since I commenced my involvement with football at Two Wells. I am always pleased to continue my support for the club and look forward to celebrating many more years of involvement. Tony Burne, who was Captain-Coach of the 1981 A Grade Premiership side, is in the process of organising a 40-year reunion to be held at the club next season, which I will provide further information about in this column next year. I also want to express my appreciation for all the feedback I receive on my Two Wells & District Echo columns and, with 2021 fast approaching, want to wish everyone a blessed Christmas and a very happy and prosperous New Year!
Bec O’Brien reports: THE new public school currently under construction in Angle Vale has a name. Earlier this month the State Government’s education department announced the Birth to Year 12 school on Riverbanks Road at Angle Vale would be named Riverbanks College B-12. The department sought public feedback by way of a community survey to name the school, as well as two other new school sites at Aldinga and Whyalla. Work is now under way to shape the schools’ brand and identity, such as logo, motto and uniforms. The new schools will open in 2022 to students from Reception to Year 2 and Years 7 and 8 on day one, as well as a smaller number of students in Years 3 to 6.

Mobile phone ban for primary schools A NEW policy that includes a proposal to restrict primary aged students from accessing mobile phones or personal devices during school hours has been released by the Government for consultation with schools. Educators can now provide feedback on the draft policy, which will be introduced in government schools in 2021. Under the draft policy, access to phone and personal devices while the student is on school grounds would be restricted in primary schools. Secondary schools will adopt mobile phone policies that suit the circumstances of their school community, according to a policy framework that prioritises learning. The policy does not apply to school-sanctioned ‘bring your

own devices’ such as laptops and iPads used for learning purposes. At Clare Primary School, principal Mark Vincent said the policy fitted with the school’s current rules and so would not create any major change to mobile phone access for his students. “Currently any mobile phones are kept in the front office, they are handed in at the start of the day so there are no mobile phones in student hands during the school day,” he said. “Most of those who do bring a phone are students travelling on buses where parents just want to have the safety net of being able to contact them, which we’re happy to support. “We’d have less than five students each day bringing a mobile phone to school.
“We do not believe children need to have mobile phones at school. While they can be tools that can support learning, we have plenty of other tools available to our students to support that – things like ipads and laptops in the classroom.” Education minister John Gardner said the draft mobile phone policy had been developed in consultation with school principals, principal associations and senior school leaders. “We understand families may want their child to have a phone while travelling to and from school so they can contact them outside school hours. This is a non-negotiable aspect of the policy,” he said. “However, we believe that during school hours it is sensible for primary students to store their
personal devices safely so they can focus on learning. “At secondary level, we understand there needs to be more flexibility for sites to develop their own policies that reflect the needs of the school community. “Some schools actively use apps in phones as part of learning programs. Some teachers get their students to use their phone’s camera function to photograph notes in class so they can stay engaged in their learning more effectively. And we note a rule that is appropriate for a 12-yearold student is not always relevant for an 18-year-old. “The draft policy provides a strong framework of principles, with the necessary element of local flexibility to accommodate the different needs of individual school communities.”

Transition sessions at Xavier Bec O’Brien reports: XAVIER College’s Two Wells campus is moving ahead in leaps and bounds, with inaugural Reception students undertaking transition sessions last month and site works including landscaping, play areas and pathways in full swing. The new school will welcome its first students through the doors at the start of Term 1 in 2021 and initially cater for Reception to Year 6 students. Recently appointed Two Wells Campus Head Janet Coomber said interest in the school has been strong and classes are filling fast. Mrs Coomber said the school’s first Reception students participated in transition sessions held at Xavier’s Gawler Belt campus, where they took part in a range of play, skill and friendship building activities and toured the school grounds, including a much-loved visit to meet the resident farm animals. “What an exciting time it was!,” she said. “It was with great delight Xavier College welcomed their newest little students, who have become the first ever members of the “Xavier Bambinos” group. “Supported by parents, grandparents and caregivers the little Bambinos got to know each other, play and meet some of the older students at the Gawler Belt site. “These sessions were run by Ms Adele Taylor, and have incorporated a combination of play, skill development, and friendship building, with the aim of helping the children acclimatise to a school setting. “Staff were thrilled with the way in which the children have settled into life at Xavier, and parents have equally been pleased to see children taking part in some great learning activities.” Mrs Coomber said some of the feedback the school received following the sessions included comments such as “they were really excited to see their children having a go at writing”; and “students loved visiting the animals” (at the Agricultural Science area); and “families felt incredibly welcomed by all staff”; and that “their children were absolutely loving school already!”

The Girl in the Mirror I forgot how much I enjoyed true thrillers. I do love mysteries and suspense too but nothing beats the jaw drop of a good twisty thriller! Iris and Summer are identical twins, the oldest daughters of deceased Ridge Carmichael, a wealthy man who set his children up for a fight to the death over his millions through his will. The first one to marry and produce an heir in his name inherits the lot. When Summer needs Iris’ help to sail their yacht out of Thailand, Iris, drawn to the sea and the sister she idolises, doesn’t even think twice. The two set sail leaving Summer’s husband and step-son behind but only one twin makes it to shore. I personally didn’t read the blurb before going into this one so I don’t really want to say any more. Thrillers are just better if you don’t know exactly what to expect I think.

Twilight Market Success at Two Wells Marie Tapscott reports: THE Two Wells Community Garden held its first Christmas Twilight Market on Friday December 11. After the Christmas Street Parade was cancelled for the first time in decades this year, local volunteers decided to utilise the beautiful garden space and invite the community to enjoy a summer evening browsing 15 stalls of local handmade goods, arts, crafts, plants, jams and old wares. Local young musicians entertained the crowds with Christmas carols and rock and roll music, drawing an appreciative audience. The Two Wells Scout Group was kept busy serving sausages and drinks, while Santa enjoyed a constant stream of children visiting him for a chat in the old jail cell. The Craft Shop was also open for business and the volunteers were run off their feet all night. Organisers of the event were overwhelmed with the community response to this market, after launching a huge marketing plan on social media and in The Echo only three weeks ago when it was decided to go ahead with the market, despite the uncertainty around the lockdowns. It is estimated around 500 people came through the market providing a much needed boost to the local community and businesses. The volunteers are now planning for future markets in 2021. Organiser Di Meaney said the volunteers were blown away by the response to the market. “Following a ‘light bulb’ moment, very recently, to hold this event, we never envisaged having so many people attend,” Di said. “They came from far and wide as well as such a great local turn out! “A big ‘shout out’ to both the garden and the craft shop volunteers for their tireless efforts, to the stall holders, to Father Christmas for taking time out of his busy schedule to visit, to the amazingly talented young musicians, to the Scouts for providing the sausage sizzle and, not forgetting the friendly clown who added some colourful entertainment!! “A big thank you to all in the community for supporting our market. “We hope there will be more to follow.”

Fern favourites: These beauties are well suited to either indoors or outdoors ANOTHER year is almost over! This month we’ll take a look at some plants for inside and outside. In the last couple of years there has been a renewed interest in plants for inside the house and three to choose from that are easy to grow both inside and out include a favourite of Queen Victoria the elegant Kentia Palm, the Birds Nest Fern and then the Maiden Hair Fern. Kentia Palms – Howea forsteriana - are native to Lord Howe Island but are quite easy to grow here in South Australia. Outdoors they may grow to 10 metres by six metres but indoors will be slower. One advantage of this palm is they dislike being repotted soAMATEUR may be kept in the same pot for a long time. Inside grow GARDENER them in indirect light and be careful not to overwater in winter. Outside they need a shady spot but may tolerate some sun in the winter months. Kentia palms need well-drained soil rich with humus. Inside they may be attacked by mealybugs and spider mites so mist the fronds to not only keep them clean but also as a preventative measure. Remove the fronds when they are dead but do not be tempted to lop them AMATEUR off before. GARDENER Asplenium nidus or Birds Nest Fern is as the name suggests, reminiscent of a bird’s nest. Nidus comes from the Latin meaning nest and the middle of the fern does

resemble a bird’s nest. This plant is native to the rainforest areas of Queensland and T parts of New South Wales but again is well suited to microclimates here in South Australia. They like a shady moist position outside with the soil being enriched with compost and humus. In Autumn prune back all the dead fronds and they appreciate a feed in spring and autumn. Inside they respond well in a light warm position and like the Kentia Palm have a shallow root system and therefore do not need to be repotted all the time. A word of warning though, the Bird Nest Fern may become top E heavy as the fern matures. They are epiphytes and dislike drying out or having too much water - a bit like Goldilocks! The glossy fronds are an attractive shade of green and grow to just over
one metre. These ferns have an extra bonus of filtering the air inside the home. One more reason to grow them. A favourite with so many people is the dainty Lacy Maiden Hair Fern - Adiantum. Adiantum comes from the Greek language meaning non-wetting as the fronds can shed water without getting wet. Maybe like water off a duck’s back? The fronds are feather-like and stand out against the contrasting black stalks. OutsideGthey need a damp shady position with protection from the wind and inside keep away from heaters and draughts plus direct sunlight. They resent being repotted and drying out however they dislike wet feet so choose a free draining potting mix. The stems have been used for dying fabrics and the aromatic oil is used in some shampoos, hence the name. They may be attacked by scale and mealybugs so keep an eye out for these. If they do dry out, they will die back however cut back the fronds, immerse in water to remove any air pockets and then keep damp. Most times they will come back as beautiful as ever. These are three beautiful Australian plants that are easy to grow both inside and out and are spectacular in their own way. Happy gardening over the Christmas holiday period.

Virginia’s graduation Virginia Primary School’s Year 7 class of 2020 celebrated their graduation from primary school with a quiet lunch at the local hotel on Thursday, December 10. The milestone was a low-key affair this year due to COVID-19 restrictions but the air of celebration was felt none-theless amongst the 20-or-so students heading off to high school next year. Busy time for CFS
With Chantel Harris TWO Wells CFS has been extra busy with the official start of the fire season this month, with 90-odd callouts, mostly consisting of grass fires, vehicle fires and strike team deployments. Two Wells CFS attended the Templers fires that burnt more than 350 hectares of crops and the Uleybury fire, which burnt through more than 80 hectares of grassland. Brigade members also attended a handful of fires across the district started by the last couple of lightning storms. Mother Nature can definitely put on a sho w. It is with disappointment we note we are attending too many deliberately lit car fires. This is such a waste, not only for the owners who have lost a vehicle, but also for the time and effort of our crew. We ask the public to keep an eye out to catch these perpetrators. If you see or hear anything, please contact SA Police on 131 444. Two Wells CFS has also attended a few self-combusting haystack fires. This is due to hay being baled wet followed by hot days, which causes it to catch fire. Keep inspecting your bales to make sure they are not getting too hot. TWO Wells Uniting Church hosted a special luncheon earlier this month to celebrate all its wonderful Op Shop volunteers. Held at the church hall on Tuesday, December 1, 13 volunteers plus a few helpers, enjoyed a scrumptious lunch of sandwiches, sausage rolls, spring rolls, pies, pavlova, trifle and cakes, all served with a smile by Rae Wilson, Judy
Lunch to celebrate volunteers Heaslip and Pam Duncan. Recently retired church members, Gloria and Jim Pederick, were also given a “last hurrah” at the luncheon. Malcolm Wilson was also very helpful in being the dishwasher for the day. Pamela thanked all who helped make the Op Shop such a success and presented everyone with a certificate, calendar, and
goodie bag made up of melting moment biscuits baked by Rae and Malcolm Wilson, as well as a Christmas stocking made by Mollie Frost. The Op Shop is open weekdays 9am to 4pm and 9am until 12 noon on Saturdays and will remain open during the school holidays, being closed only during Christmas and New Year.

Hit for six! Two Wells won the toss and elected to bowl first against Atco. The pressure was on straight away and wickets came quick and fast. Kayhla scored a sensational run out and also bowled the openers out, finishing with figures of 4/9 off two overs. Hayley Matthews kept her strong form going, bowling well throughout the match and taking 1/5. Tanya finished off the Atco innings by taking the last wicket, leaving her with figures of 1/3. Atco ended up bowled out for 28. Two Wells’ innings started well with Hayley and Anna both playing some great shots. Hayley ended up with 11* and Anna eight . Tanya and Leanne finished the innings off, with Two Wells making 1/63 which was a comprehensive win. The girls were unbeaten heading into the Christmas break.

Nail biting final win for Virginia Two Wells junior cricket report VIRGINIA Tennis Club’s Orange Ball team of Domenic Ciampa, Illario Bombardieri, Anthony Lazaridis and Ilijah Edson had a nail biting match earlier this month to take out the final of the Term 4 competition. The boys played Todd Street on Saturday December 12 at Virginia and won by the smallest of margins, three sets 17 games to three sets 16 games. The lads, with the exception of Illario, have played together for the past few years. They have met Todd Street on several occasions and have always had a great contest against this particular opposition. The club wishes to thank Michelle for being team manager and Jo for taking on training this team. The Virginia Tennis Club will be open on February 1 from 3.30pm for anyone who is interested in taking part in the second half of the season to drop in and chat with club representatives. Footy year in review AS with nearly everything else in South Australia in 2020, football and community sport in general went through many ups and downs due to the COVID pandemic and restrictions enforced by our State government. It was a credit to the dedication and determination shown by the people involved at all levels of sport that football was able to get competitions under way in early July across the Mid North region. In a “normal” season we would see games starting in April but in 2020 this coincided with the peak lockdown in SA and all sport was postponed indefinitely before approval was given in mid-June for training to re-start. All three Mid North competitions, Adelaide Plains FL, North Eastern FL and the Northern Areas FA, voted to hold a shortened season starting early July and culminating in grand finals held on the last weekend of September. Congratulations go to Mallala (APFL), Brinkworth-Spalding-Redhill (NEFL) and Broughton-Mundoora (NAFA) on winning the senior premierships this year. There were clubs across the zone and state that chose not to compete this year and we look forward to welcoming Balaklava, Hummocks-Watchman, Eudunda-Robertstown,
Burra-Booborowie-Hallett and Jamestown-Peterborough back to the field in 2021. I am sure all clubs will bounce back bigger and better than ever from their temporary hiatuses. Numerous players from these clubs played elsewhere in 2020 under special permits approved by the SANFL and Community Footy for those who still wanted to play our great game after their clubs voted not to enter sides. 2021 will also see some change in leadership at the top level across the region with Justin Duffy succeeding Andrew Bowley as the NAFA president, Andrew Mitchell replacing Peter Meyer as NEFL president and a change in structure in the APFL with Michael Vigor remaining president of a new look delegate style board comprising the president, two vice-presidents and a representative from each of the eight APFL clubs. A massive thank you to the exceptional hard work, strong
leadership and countless hours dedicated to the future of football by Andrew and Peter as they move onto the next chapter of their footballing lives. As many people would be aware, Balaklava FC started the process for changing leagues late in 2020 with a move mooted to the North Eastern competition however this will not occur for season 2021 but may be looked at in future years. The APFL in 2020 had guest club, Bute FC, from Yorke Peninsula, compete as their league did not play. As a club, they had a wonderful season with all four sides making the finals and their two colts grades playing off in the grand finals but without any victories. Bute will return to a reinvigorated YPFL in season 2021. Throughout 2020 the country football communities persisted with the challenges placed before them by SA Health and the SA Government and came out the other side with strong crowds attending games and a very high level of play and sportsmanship shown by all 34,000 participants across country and metro SA. Speedway Classic WHO would have thought December 5 was only the third meeting for the season. Venue administrator, Darren Shaddock said it’s been wonderful to see so many competitors out on the racetrack at Murray Bridge. A massive event with a record 130-plus cars, with just a few from over the Victorian border. The main feature event was the Zeke Agars Classic for the 15-lap V6 Sprints, won by #99 Darryl Barkla. The club had all the regulars from the other nine racing categories fighting to win in their nominated feature event. Modified sedans made a return to this meet with a long absence from the Murray Bridge track. #9 Terry Brown, a Murray Bridge driver claimed the win. Ten-year-old #8 Ryan Gilding made his first ever appearance Saturday night. He is hoping to build up to joining the other 16 drivers in the junior sedans next season. Super sedan #93 Kym Dury’s black and green machine finished in the top spot in the feature, while 17-year-old Hayden Vickers from Angle Vale showed the Wingless Sprints field how it’s done. After good heats, Vickers started at the front in the feature race but

finished third under very windy conditions. In the same category, Roseworthy’s #11Tyson Martin was the rookie. A new driver to this discipline must complete three meetings from the rear of the field, and must exhibit driving skills under pressure before joining the rest of the field. Stewards deemed Tyson capable of holding his own in the field after just two meetings. He finished seventh out of a field of 22. Past Australian Champion #36 Ryan Alexander was triumphant in the opening round of AMCA feature race while 3V24 Mark McCarthy claimed his second Late Model feature of the season. Victorian #V10 Cameron Pearson, #S10 Mat Crimmins, #19 Brad Gartner and #110 Jason Robinson completed the finishers. The next event will be on Boxing Day night featuring a Demolition Derby, followed by events on January 2 and 23.

Bec O’Brien reports: WHEN it comes to old cars you often hear about ‘barn finds’, well, this is the story of Two Wells local, Robert Dyer’s, ‘barn find’, Back in October 2013 Robert, or Bob as he is known around town, and his wife, Evelyn bumped into a friend while out shopping and decided to catch up over coffee. “Reluctantly I said yes as I had work to be done at home in the shed,” Bob laughed. “The chap asked me if I would be interested in a new project, as he had an unfinished one that might interest me. “He told me he had a Ford Capri that needed a new home. “Well, I have always wanted a Capri, ever since they came out in 1969. “Two of my mates had them but at the time I couldn’t afford one, the best I could do was an Escort.” Bob’s excitement and interest in the Capri grew the more the friend elaborated. He learnt a lot of money had been spent on the car in the mid to late 1990s including an engine rebuild, new brakes, exhaust system, upholstery, tyres and paint. “I asked him how much he thought he would sell it for,” Bob said. “He didn’t know, but it probably owed him quite a bit. “By this time my excitement had started to die, as I thought there was no way I would be able to afford it.”

Share your car story with Bec from the echo bec@twowellsecho.com.au The car had been locked away in a shed and not used for the past decade, and Bob was rueing the fact he hadn’t asked to view the vehicle. Biting the bullet, about six weeks later he contacted the friend and arranged to look at the car. “If only to get an idea of the condition and value for future reference,” Bob said. Luckily the car was located only a short drive away. “On arrival we were taken out the back to a shed and under a very perished car cover, and covered in dust and bird droppings, we saw the telltale nose of a 1970 Mark I Ford Capri,” Bob said. “Of course, I was very excited. “After a good look, it was evident the
vehicle had not seen the light of day for many a year. “It was last registered in 2002. “The paint work was very dull and faded, a few rust spots were starting to show through and the mice and spiders had been living in it.” However, after a thorough inspection and discussion a price was negotiated that both parties were happy with and the deal was done. “Once I got the car home, I washed and vacuumed it and that made a huge difference,” Bob said. “I then polished it and WOW it came up like new, no need to repaint, just a few rust spots to take care of.” Luckily, Bob was able to make and
install all the panel work and touch up the paint himself. A new water pump and thermostat later, and after a thorough check and installation of a fresh battery, the Capri was fired up. “It had 10-year-old fuel that was still in the tank and started without any problems,” Bob said. “Finally, I had the car I had always promised myself.” So, here are the specs. The vehicle is a Mark I Ford Capri 1600cc OHV crossflow, with a three-speed automatic gearbox and painted Vermillion Fire (which is an orange colour). It is now valued at more than seven times what Bob paid. “Almost every
time we take it out, we get lots of looks and comments like; ‘my Mum had one of these’ or ‘I learnt to drive in one of these’ or ‘I had one like this, I wish I kept it’,” Bob said. “Capris are quite rare now. “Back when they were produced they had to compete with the Holden Torana, and as the Torana was an Australian car, the British designed Capri got left behind. “This car was manufactured 50 years ago in October 1970, coincidentally the same year Evelyn and I were married, so it has extra significance to us.” Bob jokingly added that if he had to compare, he thought the Capri had probably fared better than him and his wife!

TALENTED Two Wells netballer Carla Harris has been selected as part of Phase 2 of the State U17 netball trial process. Carla’s selection follows a standout performance at the Academy Games held at Priceline Stadium in October this year, where the 15-yearold represented the Northern Regional Netball Academy (NRNA). The next phase of the state netball trials will be held in late February and if Carla is successful, will travel with the U17 team to Hobart in July

to compete in a national age competition. Having spent all her junior netball years at Two Wells Netball Club, Carla was promoted to the senior squad for 2020 before COVID-19 saw the end of the season. However, she still found her way onto a court, playing basketball for Owen’s U18 women’s team in centre and point guard positions. As in netball, Carla’s strength in basketball is her ability to score well and grab rebounds effectively, and she

is keen to pursue a basketball career parallel to her netball interests. “I’m wanting to play for the Bearcats basketball club based at West Adelaide,” she said. “I like the faster pace, the higher contact and the ability to play a lot of different positions across the court.” Last month Carla tore the ligaments in her right foot but has recovered quickly and is keen to get back on the court. No doubt this young lass is one to watch; keep aiming high Carla.

Mark Wasley, Adelaide Plains Council We are into the festive season and should make time to relax and recover from the most unusual year. Celebrating Christmas with friends and family still may not be the same as before but we should be thankful that South Australia has weathered the pandemic very well. Reflect on the year that has been and plan for the year to come with a refreshed outlook and the will to make things better for 2021. Wayne Thomas, Clare and Gilbert Valleys Council To me, Christmas is about family and gratitude. It is also a time of reflection. As I look forward to celebrating Christmas 2020, I look back over the difficulties of this COVID-19 affected year and think of how the first Christmas was fraught with problems too. This year, some family will not be able to celebrate with us. However, unlike previous generations, we have electronic means of keeping in touch and for this I am grateful. The growing season turned out better than it threatened earlier in the year, and visitors have returned. For this I am grateful. Both the people and environment of this district are relatively healthy. For this too, I am grateful. This Christmas we hope to gather together as many family members as we can. But I will also be remembering those less fortunate – those whose businesses have been negatively affected and also those who will be socially isolated this year. I wish everyone a happy, holy Christmas which brings refreshment, so we can all enter 2021 with enthusiasm for a positive future.

To me personally, Christmas means the end of the working year and a time for reflection on all that has, or has not been, achieved during the calendar year. This year has been hard for all of us but has taught us some lessons as well that will not be forgotten readily. We are, as a town and individually, more able to cope with changes to our normal routines, we have become more caring and considerate and more aware of our neighbours and family. My other meaning of Christmas is - it’s the time to gather with family and friends and celebrate yet another year under our belt, and reminisce about past Christmases and loved ones. Above all I like to enjoy myself, connect with overseas family, eat too much and probably have a Pimms or Baileys or two.
Christmas is a time for us all to pause, reflect and celebrate. Christmas should be time for people to come together (COVID restrictions apply of course!), but for family and friends to share such valued time with each other. I wish everyone a very Merry Christmas, hope those travelling (if allowed) do so safely, and hope that the communities within the District Council of Mount Remarkable are able to celebrate the year that was together. Merry Christmas! Ben Browne, Northern Areas Council Christmas for me is a time to relax and spend a few days with friends and family, and I would like to take the opportunity on behalf of the Northern
Christmas time for me is the joy of celebrating the birth of Christ. All the colourful decorations and beautiful nativities bring great pleasure. Sharing with my wider family has always been a strong tradition and we come together (about 30-40 of us) but not on Christmas day. That frees me up to help serve a luncheon organised for people in Balaklava by the local churches. For me the gift of giving is greater than receiving. That may be a present, a card or a phone call to distant friends. For all my family, friends and community I wish you a blessed Christmas and may the peace of Christ the King be with you all. Kathie Bowman, Orroroo Carrieton Christmas is all about family, our children and their partners, our grandchildren and their partners all gathering together to enjoy an all too infrequent get together. It’s champagne cocktails mid-morning, seafood for entree, a hot main course and my daughter’s home made Christmas pudding all washed down with Skillogalee Riesling (my favourite drop). It’s the pleasure of witnessing the excitement of our youngest grandchildren. More often than not it’s a trip to Mt Gambier while at home it’s Carols in the Main, Christmas lights and our Christmas pageant. It’s a time of fun, happiness and joy.

Lightingsaup mtsirhC Christmas WHILE many Christmas pageants and community parties have been cancelled this year, many residents have continued the tradition on decorating their homes and yards with Christmas lights and other decorations. • Balaklava’s new look pageant is on this Friday from 5.30pm at Ralli Park. • Auburn Traders Assoc and ACDC are holding a Christmas Eve event for their community on December 24 from 6pm at Centenary Park. BYO rugs and chairs, with a barbecue and drinks available to purchase. • Blyth is hosting its Christmas street carnival on December 21 from 6pm. Great fun for the whole family! • Clare Christmas Market is on this Saturday at the town hall from 9.30am to 2.30pm. • Wild Horse Plains residents, Leigh Baker and Jackie Haebich and daughter Charlotte have been busy decorating their front yard (below).

• Two Wells CFS brigade is hoping to bring a little Christmas cheer to local residents this year, in light of the annual street parade being cancelled, with a unique “drive-by” around the township. Volunteers will be helping Santa out this Saturday, December 19, aiming to bring smiles and a festive spirit to residents around town. • It’s the last few days of Avon’s Magic of Christmas Trees festival which is on in the hall until this Saturday from 11am to 3pm. Entry is $3, or family 2x2 $10. And when you visit the hall, check out the funny poem written by local Sue Mudge (right), just for the festival. It has been framed and is on the wall! • Saddleworth Historical Society once again has its nativity display in the window of the local museum. Go along and have a look at this delightful display (below).
Spreading some Christmas cheer around the district this year will be members of the Two Wells CFS brigade along with CFS mascot Smokey the Koala and of course the man in the red suit.

Twilight market success at Two Wells THE Two Wells Community Garden held its first Christmas Twilight Market on Friday December 11. After the Christmas Street Parade was cancelled for the first time in decades this year, local volunteers decided to utilise the beautiful garden space and invite the community to enjoy a summer evening browsing 15 stalls of local handmade goods, arts, crafts, plants, jams and old wares. Local young musicians entertained the crowds with Christmas carols and rock and roll music, drawing an appreciative audience. The Two Wells Scout Group was kept busy serving sausages and drinks, while Santa enjoyed a constant stream of children visiting him for a chat in the old jail cell. The Craft Shop
was also open for business and the volunteers were run off their feet all night. Organisers of the event were overwhelmed with the community response to this market, after launching a huge marketing plan on social media and in The Echo only three weeks ago when it was decided to go ahead with the market, despite the uncertainty around the lockdowns. It is estimated that around 500 people came through the market providing a much needed boost to the local community and businesses. The volunteers are now planning for future markets in 2021! Organiser Di Meaney said the volunteers were blown away by the response to the market.
“Following a ‘light bulb’ moment, very recently, to hold this event, we never envisaged having so many people attend,” Di said. “They came from far and wide as well as such a great local turn out! “A big ‘shout out’ to both the garden and the craft shop volunteers for their tireless efforts, to the stall holders, to Father Christmas for taking time out of his busy schedule to visit, to the amazingly talented young musicians, to the Scouts for providing the sausage sizzle and, not forgetting the friendly clown who added some colourful entertainment!! “A big thank you to all in the community for supporting our Market. “We hope there will be more to follow.”

WITH the musical magic of Micah Hamann and the antics of Bill Greenslade, Balaklava’s new-look annual Carols by Candlelight on Sunday night delighted the crowd. The change of venue from the Triangle to Ralli Park oval was a stroke of COVID genius, allowing everyone easy viewing of Balaklava Transport’s truck stage and room for the kids to roam. A clean “Bill” of fun set the night with Bill Robertson leading the kids in Christmas aerobics and Bill Greenslade’s hilarious rendition of The 12 Days of Christmas with son Liam. But Kelly Bickle stole the show with Mariah Carey’s “All I want for Christmas is You!” Wow! Many other items were shared with performances from Casey Lawrie, Lacee McPharlin, Tim Goldney, Sophia Manuel, Micah and Isaac Hamann, Carmen Palmer, Mel Greenslade, the Von Trapp Jenkins family (Jonathon, Rachel, Joseph, Bethany, Hannah and Layla) and The Farmers: Todd, Peter and Hosea McPharlin, Alex Evans, Grant and Jackson Anderson. All carols were beautifully supported by the choir made up of some of the performers and also Cathy Hamann, Kirsti McPharlin and Charlotte Lockwood, along with musicians including Tom Goldney, Nick Lawrie and Bethany McPharlin. Prior to the singing, those present enjoyed some food before Todd McPharlin gave a velcro version of the gospel. Errol Meaney closed the night with warm Christmas greetings. Balaklava is fortunate indeed to have such a talented community!

ACROSS the country, people will be experiencing an anxious time this Christmas. COVID-19 has overshadowed our outlook, and the use of the term unprecedented has been extraordinarily common in all forms of media and conversation. But times marches on. You may recall back toward the beginning of this strange adventure, I encouraged us to seek the things from this experience that can make our lives better. Well, this is a great time to really start putting some of those things into action as the barriers between us are relaxed. Cherish your loved ones, whether they be family, friends, or fur-babies. Do not lose sight of what it means to be compassionate, humble and vulnerable with others while drawing on your resilience to overcome the things that would otherwise cause tension or offence. Consider what it means to be priv-
ileged enough to have options and choices. As simple as this may sound, it is a freedom that is not accessible to all of humanity. Beyond all the conspiracies that have gained breath this year, this simple fact remains - we are free! And finally, be blessed this Christmas. What does that mean? Well, it starts with the capacity to
receive and culminates in your ability to give. Not receiving and giving of material gifts but of essence, the spirit of things the church focuses on in the time of Advent.The essence of love, hope, peace, joy, and restoration. As we turn from the sunset of 2020 toward the dawning of 2021, there are still a great many things that can have the
power to cause us fear, doubt, or anxiety – if we elect to surrender to that power. Dear ones, find rest in your own calling and capacity to be the best you can be, full of the power to represent the good humanity is created to be. And be sure of this - you are not alone, and you are loved. Be blessed.

Follow the Christmas Star FOUR days before Christmas, on December 21, Jupiter and Saturn will align so closely in the night sky they’ll almost appear to collide in a phenomenon which hasn’t been seen since 1226. The two largest planets in the solar system will be so close they will appear to be fused creating a radiant point of light often referred to as the ‘Star of Bethlehem’ or the ‘Christmas Star’ Coincidentally on the winter solstice, astronomers are calling it the Great Conjunction of 2020 where Jupiter and Saturn will be separated by just 0.1 degrees and can be seen from

anywhere on Earth. Australia and the rest of the Southern Hemisphere will need to look toward the west at twilight to see the impressive sight, but only for about one hour. Make sure you have a view to the southwest unobstructed by trees or buildings for a little over an hour after sunset. Viewers will also have to hope for clear weather on that night as well. You don’t want to miss it, as according to NASA, Jupiter and Saturn will not appear this close in the sky again until 2080.

2020 has been a memorable, though sometimes challenging year. Along with millions of other Australians I spent much of the year working from home, though only a very short drive from my home in Lyndoch there were cellar doors closed for months with staff having a very different experience than me. These extended to different states within Australia, and finally to Australia’s experience compared to other countries. I felt very safe and privileged to be living in regional South Australia, possibly one of the best places in the world to live through 2020. I also felt privileged to be in a position to help others through this period. As 2020 comes to a close I would first like to thank the Staff and Contractors of Country Home Services for maintaining focus on those who depend on us, and secondly thank our clients and broader communities for the resilience, positivity and support we have shown for each other. Bretag family’s Bush Christmas TRAVELLERS along the road between Jamestown and Orroroo are being given a delightful bush Christmas greeting as they pass by Mannanarie this festive season.
The Bretag family – Andrew and Rhiana and children, twins Anika and Oden, 5, and Elka, 2 – have created a Christmas scene using ‘treasures’ found around their farm.
“We’ve got an old Chev truck that was lying around the farm, in fact all the ‘props’ have been found on the property,” Andrew said. “The tree is made from succulents
out of our garden and the star on top is the radiator fan out of the old truck.” At night the display really comes to life with twinkling Christmas lights, much to the delight of passers-by.

LIONS Clubs are known for making the best donuts in the world, but Balaklava Lions member, Kossie Chegwyn, recently swapped donut cooking for Christmas cooking. Kossie has shared her recipes for two delicious Christmas treats – Sherry Balls and Apricot Balls. And yes, we had a taste test and loved them! In the sherry ball recipe, Kossie swapped the sherry for port, mainly because the sherry had ‘vanished’, as had the Baileys which was used in another recipe, apparently! Bella, Lacey and Sadie Thomas enjoy cooking the same recipe made by generations since it was first published in the ‘Tidings.’ WITH the help of their mum, Alicia, the Thomas girls of Gulnare, Bella 7, Sadie 5 and Lacey two-and-a-half, have just completed their annual Christmas honey biscuit baking day. Alicia explained that her mum, Coral Dutschke used to make this honey biscuit recipe with her five daughters, Paula, Amanda, Heidi, Simone and Alicia. “We’ve all had a go, but mum’s biscuits are still the best,” Alicia said. “Bella was definitely the most helpful, cutting, decorating and placing biscuits onto cooling trays. “Sadie very carefully ensured ALL of the biscuits were covered in sprinkles or 100 and 1000s, and Lacey was of no help at all, just distracted me enough to make some of the biscuits extra ‘crunchy’ in the oven.” The Thomas team made far too many biscuits to count. “We will share these with some special people in the lead up to Christ-
Yana Zanette reports: mas,” Alicia said. “Cooking with the girls is fun, they love it and makes for beautiful memories.” Coral and Alicia did some research and found the original recipe came from Mrs Martha Zweck, wife to Hugo of Hart (between Blyth and Brinkworth). It was printed in the local ‘Tiding’ newsletter/magazine which is now called ‘Lutheran Women’ magazine. The idea for a shared recipe was so women could cook the same honey biscuits in their community to then be gathered together and taken to Adelaide, packaged up and distributed to the elderly in hospitals/aged care facilities. This is still running today by the Lutheran ladies.

Christmas Honey Biscuits The recipe: Ingredients 680g honey 450g sugar 4 eggs – well beaten 1100g plain flour - may need more, may need less 3 teaspoons carb soda ½ teaspoon mixed spice ½ teaspoon cinnamon Method Slowly melt honey and sugar on a low heat on the stove stirring occasionally. Wait to cool – very important! If mixture isn’t cooled enough eggs will cook when added and you don’t want this! Fold in four well beaten eggs. Sift flour, carb soda, mixed spice, cinnamon into a bowl. Add flour mixture one cup at a time, stirring well, until mixture is very firm. Roll out in sections on a well-floured surface and cut out shapes, re-rolling offcuts. Lay shapes on a biscuit tray and cook in a moderate oven (180-190deg) for seven minutes. Allow to cool until firm on the tray then remove and place onto a cooling rack. Notes Before putting into the oven, baste biscuits with egg wash and sprinkle with 100 and 1000s or sprinkles. Alternatively, ice biscuits once cooled. Mixture can be stored in the fridge for a few days, just bring to room temp before rolling out dough. Store cooked biscuits in biscuit tin.

Geoff Brock’s Christmas Roast Dinner Ingredients: - Roast Beef - Masterfood seasoning - Sea salt - Cooking spray - Extra virgin olive oil - Pure honey - 12 potatoes - 8 carrots - 2 sweet potatoes - Half butternut pumpkin - 6 sweetcorn cobs - 1 head of broccoli Method: 1. Place uncooked roast on a plate and pat the meat dry. 2. Lightly rub Masterfood seasoning and sea salt across whole roast, ensuring it sticks to the meat. 3. Preheat oven to 200°C
4. Spray pan with cooking oil to prevent sticking and pour olive oil into pan and allow oil to heat. 5. Once oven is preheated, place seasoned meat into the roasting pan with fat side facing down. 6. When the meat becomes warm, pour a generous amount of pure honey across the whole roast, allowing to drizzle down each side of the roast. 7. Regularly turn roast over ensuring each time honey is covering the roast. 8. While the roast is cooking, cut and prepare vegetables for roasting. I used carrots, sweet potatoes, pumpkin, sweet corn and broccoli. 9. When roast has been cooked to your liking, remove from roasting pan, being very careful it does not drop into the hot oil in the roasting pan. 10. Cover whole roast in two layers
of alfoil ensuring it is covered. This allows the roast to further cook in its own juices. 11. Gently place cut potatoes into the hot oil, being careful not to cause any splashes. 12. After about 30 minutes, place the cut carrots and sweet potatoes in with the potatoes. 13. After 10 minutes place pumpkin in with the other vegetables. 14. After a further 10 minutes carefully place corn cobbs and broccoli into the pan. 15. Allow to cook for a further 10 minutes, then remove all roasted vegetables and place onto serving plates. 16. Removed alfoil from the roast beef and carefully carve the meat at required thickness. Place meat onto large serving tray.
17. Place on Christmas table with serving plates of Vegetables. NOTE: After all this effort I then used Maggi instant gravy to complete the meal!
Jon Gee’s homemade Yorkshire puddings Traditionally Yorkshire pudding is served with roast beef and gravy, but goes just as well with Christmas turkey at this time of year. This mixture will make 12 muffin sized Yorkshire puddings. Ingredients 140 grams of all-purpose plain flour. 4 large eggs. 200 mls of milk. Lard, Ghee or Coconut oil for tray. Method 1. You will need to prepare the batter at least one hour before you put them in the oven. (even overnight) 2. Firstly start by making the batter.
3. Place 140g of plain all-purpose flour into a glass or plastic pouring jug. 4. Make a well in the flour. Add the eggs and stir, incorporating the flour into the eggs a little bit at a time until it’s just combined - don’t overmix it. 5. Next, add 200 mls of milk, don’t be tempted to whip it just mix it until it’s smooth. Don’t worry if it has small lumps in it. 6. Place the batter into the fridge for at least one hour. 7. You need to pre-heat your oven to 220°C. 8. Place approximately 1/2 tsp of lard, coconut oil or Ghee into each hole on the tray and heat in the oven for 10 minutes. (use 1 tsp for tray with
larger holes) 9. After the tray has been in the oven for five minutes remove your batter from the fridge. 10. Add a pinch of salt and a pinch of pepper to your batter and mix gently until mixture is smooth. 11. Remove the pan from the oven and quickly distribute the batter into the 12 holes. (Six if using the larger pan) 12. Place in the oven and cook for between 15 and 18 minutes or for the large tray allow 25 to 30 minutes. 13. Do not open the oven until the Yorkshire puddings have finished cooking. 14. Serve with your favourite gravy!

RESIDENTS in Owen have been busy creating masterpieces for this year's Christmas Lights competition. The main street’s light show is something to behold! Local resident, Nyoman Sumadi (better known as Ming) is aiming to have everyone’s property along the street lit up quite literally like a Christmas tree. And although the annual Christmas Street Party has been cancelled, there will still be something special happening on Christmas Eve, so Owen residents, keep an eye out!
• THIS year, the coastal communities of Thompson Beach, Webb Beach, Port Parham and Dublin are holding an outdoor Christmas lights competition, aptly called, “Light up the Coast”. The competition has attracted 14 entries, in three of the towns. Voting for a winner started on December 10 and runs to December 20. Winners, decided by the community, will be announced on December 21. There are cash prizes, vouchers and other prizes up for grabs. It’s well worth a drive to check out these dazzling displays!
