Jean-Pascal Navarro discovers the soaking in the demijohn, a technique that is normally found in the Roussillon area for the Banyul wines.
“Cuvée du Pressoir Romain” Mediterranean wine. Ruby colour. Fresh red fruits (blackcurrant, strawberry, redcurrant). Soft attack, smooth extracts, a touch of spices, musk and fresh leather. A wine that can be appreciated young thanks to the soft tannins. Can be stored for 8 to 10 years. 12€ for a bottle of 0.75L.

Not long ago, there were 70 of them. Today, the only ‘family vineyard’ in the area is run by the Rasse family who produces Red, White and Rosé wines next to the Baou at an altitude of 400m.

In Saint-Jeannet, next to Nice in the south of France, the Romans occupied an oppidum. They knew perfectly well that this place which is ‘blessed by the Gods’ as Denis and George Rasse like to say, would be perfect for wine growing thanks to the natural convections, at a low altitude close to the sea and just below the first barrier of the Baou.

For over 20 years, a sharing of knowledge between Georges and Denis Rasse allowed them to save an exceptional terroir.
