On Beretania Street, see Washington Place behind the wrought iron fence. ‘Iolani Palace is one of three of Hawai‘i’s royal residences— the only ones in the nation. Architecture buffs will find a treasure trove of jewels in Honolulu’s Capital District of which ‘Iolani Palace is a great example. Delicious & down to earth
Hawaiian food
If an island lu‘au is on the itinerary, you’ll definitely have the opportunity to sample the delicious fare of our host culture— Hawaiian food. If you’ve never tried it, draw on the adventurous tastebuds of Travel Channel’s Andrew Zimmern and make it a point to do so!

Laulau - It’s like unwrapping a gift—peel away the outer ti leaves to find edible taro leaves that look and taste much like cooked spinach. Inside, you’ll find either pork, chicken or butterfish. Usually cooked in the imu (underground oven), laulau is also steamed on the stovetop.
Kalua pig - The highlight of every lu‘au is the uncovering of the kalua pig that’s been cooking in the imu for hours. Its flavor is smoky, salty; consistency is tender and juicy. It can also be cooked in a slow cooker or oven for the same delicious flavor.

Hawaiian food Lomilomi salmon - It may not be a traditional Hawaiian dish, but lomilomi is a favorite. It’s made with diced salmon, tomatoes, green and round onions and salt to taste. Let it marinate overnight to enhance the flavor of the salmon. The salmon’s omega-3 fatty acids are a plus!
Poi - Certainly an acquired taste, poi is made from mashing steamed or baked taro root, and adding water to create a desired consistency. Its flavor varies as each day passes. It’s low in fat, high in vitamin A and complex carbs, and is easy to digest.
A word on Poi
Taro is highly regarded by Hawaiians, who believe that the plant is the original ancestor of all Hawaiian people. Because the taro plant is central to the Hawaiians, its cultivation is an honored tradition.

hoosing the right fish from the menu is like selecting fine wine—each has its own taste, aroma and texture. People eat twice as much seafood in Hawai‘i as the U.S. per capita national average. What does that mean to you? Every restaurant has fresh fish on the menu with a not-so-familiar Hawaiian name. Use this guide to find the fish that has the qualities you enjoy the most.
Onaga
Long-Tail Red Snapper: Soft and moist with a delicate flavor, onaga can be baked, steamed or sauteed.

Moonfish: Popular with chefs, opah has a juicy, rich flavor with a roast pork-like aroma. Texture is very tender.

Mahimahi, Dolphin Fish
Considered one of Hawai‘i’s most popular choices, ahi is served raw as sliced sashimi or cooked rare.

Consider a tankini or one-piece that shows less skin, but can be just as appealing as a bikini. • Just as with regular tops, a v-neck looks good on a lot of women. Rev up your adrenaline as you get behind the wheel of an electric kart at the indoor Podium Raceway. After a short intro, gear up, then hit the gas, easing into tricky hairpin turns, then racing down the straightaway at speeds of up to 45mph. Great fun for the family! An arcade and cosmic mini-putt available too. With names such as Da Flowrider, Tornado and Raging River, you know you’re in for a fun day at Wet’n’Wild, Kapolei’s 29-acre tropical waterslide park. All ages can enjoy a leisurely float ride in the Kapolei Kooler and swim in a simulated beach environment. It’s fun for the whole family. Experience a thrill of another kind—the kind that makes your hair stand on end—with Oahu Ghost Tours. Visit our haunted places on daily tours; Waikiki picks ups are available.
Unless you intend to wing it, travel requires careful planning in order to make the most of each day—be sure to include a few days of relaxation too! Turn the pages and make special note of our top sights. Also see the backcover fold-out for O‘ahu’s top 10 attractions. Exploring Chinatown is a must, page 104, as well as the North Shore, page 122. One way to visit the Arizona Memorial is via Hawaii Duck Tours. Sign up for the Pearl Harbor Duck Tour and ride on a fully restored, amphibious WWII DUKW or ‘‘Duck.’’ A limited number of tickets for the Arizona Memorial are available, as well as a stop at the Battleship Missouri Memorial. Additional tours aboard the Duck are available. Park Hawaii, and you’ll still wish you had more time. See the 300,000-gallon aquarium housing Hawai‘i’s native sharks; learn about dolphins at the Dolphin Cove Show; laugh out loud at the Kolohe Kai Sea Lion Show; hear trainers as they share facts about threatened penguins; and there’s so much more to do! You can even interact with dolphins, rays and sea lions. Ask about it! Conveniently located in Waikiki are Waikiki Aquarium and Honolulu Zoo. Be sure to visit these gateways to the animal world as well.

A snorkeler’s paradise
Hanauma Bay Nature Preserve (Map G:S10), the state’s first designated Marine Life Conservation District, is home to abundant marine life in all colors. The scenic bay is a remnant of the island’s volcanism and is edged by a 2,000-foot, crescentshaped beach that’s protected by an offshore reef teeming with tropical fish. Conditions here are ideal for novice snorkelers and the park has an informational video and short, walk-thru exhibit introducing its marine life. See schools of vibrant butterfly fish; black-striped manini, or convict tang; the aptly named trumpetfish; pastel-colored surgeonfish; and multi-colored parrotfish. You might even spot a Hawaiian green sea turtle munching on coral! Restrooms, showers are available bayside. Open 6 a.m.-7 p.m. daily; closed on Tuesdays. Fees: $1 per vehicle, $7.50/person, 808-396-4229. Tip: Go early to avoid long lines and a full lot.
Gear up & H2O go!
Snorkel Bob’s rents and sells its own brand of gear: Seamo Betta and Li‘l Mo Betta RX masks; Bigfoots (15-17) and Moflex fins; Ultima Bubba dry snorkel; plus Mofl02 for fresh air with every breath. Bob’s 250-page fish photo book, Every Fish Tells a Story, is $7.50 with snorkel gear for the week (reg. $28). Free 24-hour interisland gear return. Snorkel Bob’s Yacht Consortium let’s you pick your craft to sail into adventure. The fleet runs daily, providing luxury and economy transport along with cleanliness, service and positive buoyancy. Book two seats on boats, zipline, whirlybird or lu‘au adventures and get a free turtle beach bag or boogie board for the week. THIS WEEK OAHU
