monthly welcome Hey y’all! It’s Perry, your friendly neighborhood Vice President and District Service Chair! Welcome to the November Newsletter! With spooky szn officially behind us, you better bust out the old Swiss Miss hot chocolate and your favorite holiday songs, because, pandemic or not, the holiday spirit will be coming to a Target near you. I hope you enjoy this edition of the newsletter, and get some cute Fall recipes before you’re expected to make a side dish for the family Thanksgiving.

what we’ve been up to We kept busy during the month of October. CKI hosted numerous online and inperson events, socially distanced of course! We have weekly online service nights, yoga with Payton, and more! Check out some of the events we hosted this month.
newnans lake cleanup
Our members spent their Saturday at Newnans Annual Lake Cleanup. Organizers showed their appreciation by giving CKI members cute reusable bags.

trick-or-treat for the homeless Every year CKI members pass out Trader Joe’s bags days before Halloween in several Gainesville neighborhoods. We ask residents to fill-a-bag of donations. On Halloween night our members deck out in costumes and pick up donations to go to the Gainesville branch of St. Francis House.

COVID game days Even amongst a pandemic you can still enjoy America’s favorite sport. Below are some game day activities you can enjoy while being socially distanced or with your household. Whether you are attending the games in-person or watching at home, remember to be safe and GO GATORS!
watch the game!! By projecting the game onto a sheet or a wall you and your friends can set up a “drive in tailgate”. Everyone could sit in their trunks (or folding chairs) and enjoy the game drive in movie style.
trunk tailgates Easy, fun, and socially distanced this game is a classic. You can set up a ranking system and become victor over your roommates.
game day feast My favorite thing about game day is the FOOD! Either order or cook your game day favorites of pizza, wings, burgers, hot dogs, and more.
hold a virtual day Create a zoom room and have the host share the game on their screen!
become the cornhole champion Even if you’re at home you watch the game and dress up in Gator gear.

thanksgiving recipes Did you know that we have some chefs in CKI? Check out some recipes submitted by members that you can try and whip up for Thanksgiving.
Jamaican Style Banana Fitters submitted by Alexia Walker
Ingredients • 3 bananas (ripe, starting to turn brown) • 1 1⁄2 cups flour • 1⁄4 cup water/milk • 2 -4 tablespoons brown sugar • 1⁄4 teaspoon vanilla extract • 1 pinch salt (optional) • oil (for frying) Instructions Step 1: Peel bananas and smash them in a bowl using a fork or spoon until they are runny. Add flour, water/milk, sugar, vanilla extract and salt. Step 2: Mix until the batter is a just a bit thinner than pancake batter. It cannot be too thick! Step 3: Using oil and at medium heat, place small amounts of batter (about a tablespoon) into frying pan. Step 4: Wait until the edges are firm before flipping to other side. They should dark brown in color on both sides. Step 5: Once done, soak excess oil out of fritters with paper towel. Step 6: Enjoy! Additional Tips It’s okay if it turns out a little burnt. It will still taste pretty good.

The Impossible Cake

Ingredients • 9 eggs • 1 can of condensed milk • 1 can of evaporated milk • 2 butter sticks • 1 cup of milk (any kind will do)
• 1 box of devil’s food cake mix • 1.5 cups of granulated sugar
Instructions Step 1: Use 1/2 stick of butter to cover a cake mold (to prevent sticking) Step 2: on a pan, pour 1- 1.5 cups of granulated sugar on medium heat. Stir occasionally until the sugar is melted and has a light brown color Step 3: pour the the melted sugar to cover the cake mold (BE VERY CAREFUL BECAUSE ITS HOT) and let it sit Step 4: for the cake follow the instructions on the cake mix box ( mix 3 eggs, 1.5 melted butter sticks, and 1 cup of milk together in a bowl) and mix Step 5: for the flan- place 6 eggs, 1 can of evaporated milk, 1 can of condensed milk in a blender until everything is mixed.. about 5 minutes on high speed Step 6: pour the cake mix to the cake mold and let it rest at room temperature for 5 minutes Step 7: pour the flan mix on top of the cake mix (DO NOT MIX THE CAKE MIX WITH THE FLAN MIX!!— just let them chill) Step 8: in a preheated oven at 350 F - place a bowl big enough to fit the cake mold and pour some water Step 9: place the cake mold on inside the bowl and bake it for 20-30 minutes. Step 10: after it’s fully cooked let it cool down for 15 minutes Step 11: flip the cake mold over a flat pan Step 12: let it sit for 10-20 minutes and it’s ready to serve

The College Caprese Sandwich submitted by Perry Neislen
Ingredients • one Ciabatta Roll (or your preferred sandwich bread) • a tablespoon of Balsamic Oil (or balsamic glaze) • a tablespoon of Olive Oil • a handful of fresh Basil • about a cup of sliced Mozzarella • one Tomato • two pieces of Bacon (or your favorite bacon substitute) Instructions Step 1: Cut your Ciabatta Roll into halves and toast each half on a low toaster setting (you don’t want it THAT toasted, yet) Step 2: Fry your bacon (or bacon substitute) on a small skillet over medium heat Step 3: Once your bacon is done frying, remove it from the skillet and toast the open half of each side of the Ciabatta roll in the bacon grease until it’s slightly browned (if you didn’t make bacon, you can toast it in butter, oil, or any butter substitute) Step 4: Drizzle olive oil and balsamic vinegar onto the open sides of the ciabatta roll halves Step 5: Place basil leaves on each half so they’re covering the entire roll Step 6: Cut your tomato into slices, and place those over the basil Step 7: Cover your tomato slices with slices of Mozzarella Step 8: Top each side of the sandwich with the bacon, ripped in half lengthwise Step 9: Season with salt and pepper and enjoy :)

Shrimp Tostada

Ingredients • bag of frozen shrimp (I typically use medium sized shrimp) • tostadas (you can buy or make them out of tortillas) • chiles (optional) • avocado • cilantro • radishes • crema • sriracha • lime juice • garlic • olive oil • salt and pepper Instructions Step 1: desfrost your shrimp (and remove tails if yours has any) Step 2: chop cilantro, radishes, and celery into sliver like pieces Step 3: mix your cilantro and radishes together and add some lime juice (no specific amount of lime juice just depends on your preference) Step 4: chop garlic and chiles Step 5: mix your defrosted shrimp with olive oil, garlic, chiles, salt, and pepper Step 6: cook your shrimp in a saucepan at medium-high heat, flipping the shrimp until they become opaque and pink Step 7: mix crema, sriracha, and lime juice (how much sriracha and lime juice depends on your preference) Step 8: slice an avocado and place slices on the tostada Step 9: top tostada with your shrimp, cilantro mixture, and a drizzle of crema Volume 12, Issue 3
