Hot and happening in the city It’s been a busy summer for Celebrity Cruises®, particularly across London. We showcased our award-winning culinary delights at Silver Screen Cuisine along with Great British Chefs, where film enthusiasts enjoyed fine food along with an exclusive screening of 'The Hundred Foot Journey'. Then there was our Taste of London event in Regent's Park where our Senior Executive Chefs presented an exclusive three course tasting menu, and Oz Clarke hosted a series of exquisite wine tastings. Oz was also on hand at London Wine Week – we were honoured to be one of the official sponsors of the event, where our Lawn Club took centre stage. Being less than an hour’s train ride away, you might want to make Padua a must during your overnight stay in Venice. Home to an ancient university, unspoilt historical sights and medieval marketplaces, peaceful Padua remains almost untouched by tourism.

This impressive 17th-century church was commissioned by Venice’s plague survivors as a thank you for their salvation. Referred to by most locals as simply Salute, the massive domed church, which sits at the entrance to the Grand Canal, is one of the most photographed structures in Venice. Better still, admission is free.

Day 2 SAINT MARK’S BASILICA An artistic masterpiece, the Basilica di San Marco, is both an iconic Cathedral and the mightiest of Venetian monuments. It’s also one of the world’s finest examples of Byzantine architecture. Located just off the Grand Canal, the glittering basilica has been a workplace for many great Italian and European artists over the centuries.

Pappardelle with slow cooked tomatoes, Parmesan & basil We hope our Venice article has given you a flavour for this wonderfully romantic destination. Now we’d like to really tempt your tastebuds with a recipe for Italian inspired Pappardelle with slow cooked tomatoes, Parmesan and basil. This colourful culinary creation is easy to make and simply irresistible. Enjoy. RECIPE BY: MICHELIN-STAR WINNING CHEF ROBERT THOMPSON

INGREDIENTS

METHOD

PASTA DOUGH

SERVES 4

500g of pasta flour

COOKING TIME: 1 HOUR 40 MINUTES PLUS SLOW ROASTING TOMATOES

1 egg

—To make the pasta dough, in a food processer slowly blend the flour with a good pinch of salt and a little olive oil. Add the eggs and then slowly add the saffron water.

6 egg yolks Olive oil 1 pinch of saffron, infused with 100ml of boiling water Salt TOMATOES 1 punnet of Heirloom tomatoes, slow roasted with a little olive oil 2 to 3 handfuls of basil leaves Olive oil Parmesan for dusting

—Knead until completely smooth. Rest the dough in the fridge for at least one hour. —Roll out the pasta dough down to number 2 on a pasta machine, then cut lengthways into strips 3cm wide. Hang the pasta over a rolling pin or pole until it has dried slightly. —Carefully lower the pasta into boiling water and cook for 2-3 minutes or until al dente. Drain well and toss with a little olive oil and seasoning. —Arrange the pasta in a bowl with slowroasted Heirloom tomatoes, grated Parmesan and torn basil.

Your position sounds very exciting, what does it involve? I’m in charge of our Celebrity Exclusives, experiences that are designed to immerse you in the sights, colours and culture of a new destination. I also help to create our ‘Private Journeys’ – personalised destination experiences that are precisely tailored to a guest’s requests. Whether it’s priority access to the Vatican or a private helicopter ride over the beautiful Amalfi Coast, almost anything is possible. You say the sky’s the limit – there must be some constraints? Depending on where you are in the world, I’d say most requests can be met. For example, I could provide you with a chariot and genuine gladiators in Rome or cordon off the Uffizi Gallery in Florence, so you can enjoy it all to yourself. That’s impressive. So Private Journeys are quite different to standard shore excursions? Shore excursions are perfect for small or larger groups, and follow pre-set schedules. A Private Journey is personalised from start to finish. They are meticulously designed to give more insight into a destination, and add that extra-special touch to your holiday. Have you ever had any unusual requests? We get some requests that are harder to arrange than others – like when grooms want to go that extra step for their brides. You’ve travelled the world – what’s your favourite destination(s)? I love the Mediterranean. Scenic Tuscany, and Florence, with its marvellous architecture and being the birthplace of Renaissance, are my favourite cities. What has been your most memorable experience as a Destination Concierge? That’s easy. A young couple chose to celebrate their honeymoon on the beautiful island of Santorini. I created an experience that was completely exclusive; an incredible restaurant, genuine local wines; the perfect romantic setting. They loved it.
