I can’t believe this is our sixth edition of Vista. Where does the time go? You may have noticed the new design of this issue, which is in keeping with our recent brand identity refresh. Of course, that’s not all that’s new in the world of Celebrity Cruises®. As so many of you are enjoying our Signature Event Sailings, we thought we’d introduce the tours that bring these sailings to life. Now you can set sail for the 145th Open Golf Championship in Scotland and even play with professional golfers. Why not samba the night away at the Rio Carnival in Brazil or soak up the atmosphere of Mardi Gras in New Orleans? We have some deliciously different shore excursions too. Our new Chef's Market Discoveries will take you to the culinary heart of a destination, combining the best in cuisine, culture, wine and more. From exploring lively fish markets to savouring local delicacies, they’re a must for the foodies among you. Your mouth will also be watering at our latest Great British Chefs recipe – this time from food and travel blogger, Rosana McPhee. And don’t forget to join us at Taste of London this year – more about that in our News. The foodie theme continues with an in-depth look at Blu restaurant. Our destination focus is Athens – you can never tire of the world’s historical capital, and we have a few handy tips on what to see and do while you’re there. Finally, it is with great sadness that we announce the passing of Emma Pontin, Godmother to Celebrity Eclipse®. I’d personally like to dedicate this issue to a most courageous, inspirational woman who recently lost her battle with cancer. Our thoughts are with her husband Richard and all her friends and family. We will be remembering Emma and raising money in her honour by participating in a charity walk. You can find out more on page 24. I hope you all have a lovely summer and look forward to seeing you on board soon.

How do I get priority waitlist for dining times in the main restaurant?

One of the key skils of the loyalty team is to be able to answer any of your questions; from Club Points, to making sure you are getting the most out of your benefits. Here, Sarah Sotheron, our Customer Experience Manager, shares the answers to some of our more frequently asked questions; One Category Upgrade - what is it and how do I get it? All Classic members and above can benefit from a One Category Upgrade if available on your chosen cruise. We have multiple sub categories of each stateroom, for example a Balcony stateroom is made up of sub categories ranging from 2D-1A.

Elite members and above are automatically given priority waitlist for dining times in the main restaurant. Just ensure your membership number is in the booking when selecting your dining time and if your preferred choice is not available, either it will automatically make it available to you or it will put you towards the top of the waiting list. How do reciprocal points work with Royal Caribbean’s loyalty programme? Captain’s Club Select members or above and Royal Caribbean®’s Crown and Anchor Society Platinum members or above, can receive reciprocal loyalty benefits. You must give your membership number at time of booking for the programme that relates to the brand you are sailing with. How long have you worked at Celebrity Cruises® and how did you start out in the industry? I joined Royal Caribbean Cruises Ltd. in November 2011. This was my first role in the travel industry and two years later I took on the role as UK & Ireland Head of Guest and Trade Services for Celebrity Cruises. When I first started I was only contracted for 6 months, and now I have been here for 5 years because I love my job so much! What's the best part of your job? No one day is the same and I get to work with and meet so many amazing people who are really committed to doing an incredible job and share a passion to deliver a great service to our guests. I also love receiving excellent customer feedback about my team. What are the biggest challenges in your role? I think my challenge is no different to most, getting everything done that I want to achieve in the day! Why Celebrity Cruises? For me it is one of the most exciting brands of today. Our awards are testament to an amazing holiday product. It is fantastic to be part of an ever-growing, exciting brand.

What do you feel most proud of in your time so far? My team, and how far we've come since we became a dedicated Celebrity Cruises call centre, raising the bar to deliver an outstanding, quality service. I have a team of 70 and in January and February alone I received 48 written customer compliments regarding how helpful, engaging and knowledgeable my team have been. Have you ever had any unusual requests from guests? Many - and to share would not be cricket but the fun part is always trying to accommodate; we always aim to deliver and enhance our guests' experience. How do you deal with a disappointed guest? On rare occasions we are unable to meet guests' expectations. In these situations we always take plenty of time to listen to the guest, understand what was missing, and look to find mutual solutions to alleviate any disappointment. We always emphathise with our guests and strive to provide the best possible solution. If you weren’t doing what you do now, what would be your perfect career? That's a hard one. I have been working in contact centre operations for over 20 years

and the variety of tasks, engagement with people and working with clients, gives me the perfect balance. That being said, working for Celebrity Cruises has opened up my world so if I wasn't working here my ideal career would be to travel it! You are our first employee we’ve interviewed for Vista who works on land – would you like to work on one of our ships? With a teenage son, yes I've considered running away to sea; however, I still enjoy my cruise holidays far too much to want it to become my place of work, it is my place of total enjoyment, to relax with a Martini or two. What's the best cruise you've ever been on? It's hard to choose, but I think I'd have to say cruising the Mediterranean on Celebrity EquinoxSM last summer. Kotor, Montenegro completely wowed me - the scenery of the bay of Kotor was amazing, and sailing out of the port on the Lawn Club with wine, cheese, and Jazz on the Lawn was the most magical moment. If you could choose any of our 2016 itineraries, what would it be? I can only pick one? Hmm, I'd have to give two - Alaska and Asia - my bucket list is always in alphabetical order! They are amazing destinations where you can experience a completely different culture.

THE ACROPOLIS You can’t experience the real Athens without a visit to the Acropolis, which is just a 20-minute drive from the port of Piraeus. Towering high above the city, this iconic 5th century citadel is home to some of the world’s most famous ancient architecture, particularly the Parthenon. Intricately decorated with ornate sculptures, this mighty temple was built for the goddess Athena. After all that exploring, you’ll find little cafés at the foot of the Acropolis for refreshments.

STREET FOOD TO MICHELIN STARS Whether you want quirky street vendor cafés, quaint tavernas or Michelin star restaurants, there’s an abundance of superb places to eat around the city. Don’t miss out on a tasty koulori—a traditional sesame covered bread that’s healthy and available on every corner. Or, for the ultimate dining experience, try the Michelin-starred Hytra, with its super contemporary twist on delicious Greek dishes. Heavenly.

ARCHAEOLOGICAL MUSEUM OF DELPHI Greece is home to many fascinating museums, but one of the finest and most visited is the Archaeological Museum of Delphi. Boasting a wealth of statues and sculptures – some dating from as far back as the 8th century BC – one of the museum’s most famous exhibits is the Charioteer of Delphi, widely considered to be one of the best examples of ancient bronze statues in the world.

CELEBRITY TIP Archaeological Museum of Delphi is open to the public throughout the year, from 9am to 4pm. But don’t leave it too late, last admission is 3.40pm.

Why not replace the buzz of downtown Athens with peaceful Plaka (Athens’ Old Town). The drive to ancient Corinth was interesting; the ruins were extensive and included the tribunal where St. Paul preached; we went to a terrific museum; the ride on the canal catamaran had a wonderful spread of ‘mezzo’ (snacks); and the guide gave us a lot of information.

Mouthwatering Mpourekakia Rosana McPhee is a Brazilian food and travel blogger and here she shares her recipe for mouthwatering Mpourekakia – mini pies packed with an aubergine and feta filling. Inspired by her recent adventure in Athens, these divine little pies make the perfect party snack. SERVES: MAKES 40 COOKING TIME: 3 HOURS

INGREDIENTS

METHOD

PASTRY

—Preheat the oven to 200°C/gas mark 6

—Preheat the oven to 170°C/gas mark 3

1kg self-raising flour

—Prepare the aubergines by placing them whole in a heatproof dish in the oven for 20–30 minutes

—To assemble the pies, roll half of the dough out and reserve the other half covered with cling film, so it does not dry out

—Meanwhile, make the pastry. Blend the yoghurt, butter, salt, sugar, nutmeg and vinegar in a large bowl

—Cut out round shapes in the pastry, using a pastry cutter or glass rim, so all pies are the same size

—Gradually add the flour, constantly kneading so the dough does not stick to your hands. (You might not need to use all the flour!)

—Place a small amount of the filling onto the pastry circles, close and either crimp the edges together (the original method) or use a fork to seal the edges (quick way). Place the pies on some baking parchment on an ovenproof tray

200g of Greek yoghurt, full-fat 350g of butter 1 tsp salt 1 tsp sugar 1 tsp nutmeg 1 tbsp of vinegar FILLING 2 large aubergines 1 egg 200g of feta, grated (Greek) 200g of mature cheddar, grated Salt Black pepper

—Wrap the dough in cling film and place in the fridge to rest for 20–30 minutes —To make the filling, peel and roughly chop the cooked aubergines. Place in a bowl with the rest of the ingredients, mix well

—Repeat the process with the other half of the pastry —Beat an egg with a pinch of salt and brush the mini pies with the mixture. Sprinkle the black sesame seeds on top

25ml of olive oil, (Greek) 1 pinch of cinnamon, (optional) TOPPING

—Place the pies in the preheated oven for 45 minutes. Serve piping hot.

WITH DETAILS PROVIDED BY BOTH TRADE REGULATIONS AND THE PRIDE OF THE WINEMAKER, THE CHARACTERISTICS OF A WINE ARE EASY TO UNCOVER. 1— WINE PRODUCER Driven by history, the name will tell you if the wine has heritage and quality, and helps to set expectations. A brand name is not allowed to mislead anyone about age, identity or origin. 2— APPELL ATION AND VARIETAL The country or region where the grapes are grown. It may be as broad as an entire country, or defined as a single renowned vineyard. If a single vineyard is mentioned, the country is often added to help place the origin. 3— CL ASSIFICATION For European wines, certain phrases designate a wine has achieved a standard of higher quality as determined by the country’s government. For France: Appellation dʼOrigine Controlee (AOC), Italy: Denominazione di Origine Controllata e Garantita (DOCG) or Denominazione di Origine Controllata (DOC) and Spain: Denominacion de Origen Califi cada (DOC) or Denominacion de Origen (DO). Grand Cru, Grand Cru Classé and Premier Cru are commonly used in France to denote the vineyards of higher quality.

4— RISERVA Italian for ‘reserve,’ this declaration can only be applied to Italian DOC or DOCG wines that have been aged longer than the required time. The better wines are usually chosen to become Riservas. Total aging time varies from wine to wine. 5— VINTAGE The year the grapes were harvested. A season of blessed grape-growing weather and perfectly timed harvesting can mean great things. Unfortunate conditions may affect vintage quality, quantity and availability. 6— ESTATE BOT TLED If a wine is labelled ‘estate bottled’ it means that 100% of the wine must come from grapes grown, harvested and bottled in the winery’s own estate. 7— ALCOHOL PERCENTAGE AND VOLUME Wineries are allowed a 1.5% disparity in displaying their Alcohol by Volume (ABV). So a wine labelled as 14% ABV may contain up to 15.5% ABV. Most wines are between 12% to 14%, but can be as low as 8.5%.
