Tell us about your first impressions of our Celebrity ships? I thought ‘this is a wine lover’s paradise’. On my first time on board we went straight to the wine tower and spent an age just looking through the bottles. I kept asking the sommeliers on board “and how many wines did you say there were?” “and how many producers?” The sommeliers are brilliant. We were sharing stories about favourite wines and things we would recommend within minutes. What wine would you recommend to guests from our selection on board?

The most fabulous wine dinners I’ve been to have a combination of wine experts and wine lovers who are expert in something else. For wine experts I’d have Jancis Robinson MW and Hugh Johnson. Then I’d scatter guests who’ll entertain. Peter Cook for a combination of charm and slightly cruel humour. My fiancée Christina who knows more about Champagne than anyone I know and is a consummate host. Lord Byron famously drank Burgundy from a human skull, so I’d ask him along. And Thomas Jefferson was a great wine lover and I’d hope he’d bring a decent bottle from his collection.

On several of the lists you’ll find Chenin Blanc, Ken Forrester, Stellenbosch which is such a great wine and wonderfully versatile. I’ve loved it for years and it’s fantastic value. I’d recommend that to anyone. There are so many glorious wines in Blu and Luminae and Qsine but a real favourite of mine is Dry

Creek Vineyard, ‘Old Vines’, Sonoma County, California. It’s fresher and brighter than many big boy Zinfandels you might have tried. And has real versatility with food. I’m a bit of Pinot Noir nut and all the lists have some glorious wines. But one that I think may get looked over is Bodega Chacra, Barda, Patagonia, Argentina on the Murano list. It’s from the south of Argentina, the place they call ‘The Land of Apples, Cherries, Pears, Grapes and Dinosaurs’. When you're out for dinner with friends, who chooses the wine? It’s usually a diplomatic dance where we end up deferring to the sommelier. I’m always happy to hand over the list to someone else. Choosing wine can be a bit of a busman’s holiday. But then our friends insist it comes back to me. So normally I ask lots of questions about what everyone enjoys and what they are going to eat and then turn to the sommelier for a chat. They know the list better than anyone and I’ll always happily take their better judgement. What do you love most about your job? Discovering interesting things about other people. Take today, I’ve done wine training with a young restaurant team from Serbia, The Philippines, France, India, Sri Lanka and Ukraine. I then had an intense discussion online about wine with someone from California and given travel advice to people in Nepal, Brazil and Tennessee. What other job would let you do that? What advice would you give to people who are new to the world of wine? Relax, it’s just a drink. It’s true it’s an infinitely varied drink, bringing joy at everything from a fiver to £15,000 or more a bottle, each one laden with history and culture and social significance as well as complex flavours and aromas. But it’s still just a drink. You won’t always have the opportunity you do on Celebrity ships to experiment and discover new wines. But when you do it’s magical.

First stop was Cobh, where we travelled to Ballymaloe house for a beautiful homemade (and homegrown) lunch. And we were honoured to have a cookery demonstration from Irish TV chef and cookbook author, Rachel Allen (whom the BBC described as the ‘Irish Cooking Queen’). We then sailed onto Dublin – a maiden call for Celebrity Eclipse®, meaning she was welcomed with the inaugural Plaque and Key Ceremony. The warm welcome continued into the evening with Irish Dancing, singing and music from the talented Irish Dreams. And from Dublin to the wild and remote town of Akureyri in northern Iceland, where we awoke to a dusting of snow on the ground. After visiting Godafoss falls (literally meaning ‘waterfall of the Gods’) we journeyed through lava fields and volcanic landscapes while witnessing wondrous blue sulphur pools. In Reykjavik, Lisa Lutoff-Perlo hosted an exhilarating 4x4 driving experience where guests sped up the side of an active volcano before trekking past steaming craters, sulphur mud pools and a spectacular geyser that shot water 30-metres into the air. Also in Iceland’s cool capital, our members were treated to a stunning ‘Fire and Ice’ evening at the Harpa Concert Hall where Icelandic singer and violinist, Greta Salome performed a repertoire of music, including her Eurovision songs. If you never managed our Iceland and Ireland President’s Cruise, worry not – you can set sail in 2018 direct from Southampton on 18 August, or directly from Dublin on a 10-night sailing on 30 April, 10 or 28 May.

And getting there is just as exciting – take the MTR (Mass Transit Railway) to Tung Chung and then take the Ngong Ping Cable Car to Ngong Village and signs to the Monastery are easy to follow (around two hours, yet a world away, from Hong Kong’s hustle and bustle).

PARMESAN CRE AM

170g unsalted butter (cubed)

700ml heavy whipping cream

170g all-purpose flour

210g Parmesan cheese (grated)

1.9l whole milk

SMOKED TOMATO COULIS 1 tablespoon of shallots (chopped) 2 garlic cloves

450g goat cheese (mashed)

1 tablespoon of olive oil

200g Parmesan cheese (grated)

3 large tomatoes

½ bunch fresh parsley

1 tablespoon of granulated sugar

I was in a show with Wayne Sleep at the Prince Edward Theatre in London and Prince Edward was the Guest of Honour. He came to meet the cast and I spoke to him personally which was a real honour as I love the Royal Family.

We are working on the next Celebrity EdgeSM reveal as the public is so hungry for what is going to be happening on this incredible ship following a famously successful new ship launch, so more will be revealed soon!

They all have a different emotion and soul which speaks to audience members differently for different reasons. However, I think it would have to be 'Life'. This is a show that does bring out different emotions and speaks to different times in everyone’s life and yet exudes joy! From a creative standpoint, it is the music choices and simplicity of the set whilst executing very unique and uplifting choreography and vocals including live music. It checks all of the boxes for me.

METHOD

—To make the Parmesan cream, combine Parmesan cheese, cream and bring to a simmer, remove, blend in a blender and set aside in a small sauce pot. —For the smoked tomato coulis, in a saucepan, sweat shallots and garlic with olive oil. Add the diced tomatoes, granulated sugar, basil and thyme; cook for 1 minute. Deglaze with white wine, add the vegetable stock, and simmer for 45 minutes. Adjust the seasoning with salt and pepper to taste, strain through a fine sieve. Let cool and reserve. —To plate each serving, pour 115ml Parmesan cream in a soufflé cup. Place a soufflé in the centre of the cup and bake for 7 to 10 minutes or until bubbly at 175°C. Once cooked, drizzle the tomato coulis around the soufflé, then add a drizzle of pesto if liked.

—To make the soufflé, preheat the oven to 110°C. Make a béchamel sauce with the butter, flour and milk then pass through a fine sieve. Let cool, then mix in the goat cheese, Parmesan cheese, parsley and chives. Gently fold in the egg yolks. Beat the egg whites until soft peaks form, and gently fold into the mixture. Butter 6 soufflé moulds and place on a baking sheet. Spoon the mixture into moulds. Bake for 8 minutes. Let cool and reserve.
