Tailor Made Steaks Fillet – The fillet is considered to be the most tender due to the fact that the muscle is non-weight bearing. It is also the leanest of cuts, sometimes considered to have the least flavour. The fillet runs along the inside of the spine. Sirloin –This cut is more flavourful than the fillet and contains fine strands of marbling ensuring heartiness and tenderness. It has a thin layer of fat along the top that also helps to add moistness when grilling. The sirloin is cut from the lower portion of the ribs. Rib Eye – Also known as the scotch fillet, taken from the rib. When cut into steaks, the rib eye is one of the most popular and juiciest on the market. This extra fat makes rib eye steaks and roasts especially tender and flavourful. Rump – This cut is from the rump of the animal which does a lot of exercise and is therefore the least tender, but this means it is the most flavourful. It has a firm texture and a nice layer of fat along the top that also helps when grilling and therefore makes it a popular choice.
