Lipase × Lipase is an enzyme found within our digestive system ×It is able to break down (digest) fat into fatty acids and glycerol ×They are enzymes which degrade fats in milk

Lipase Ă—There are a large number of molecules in milk Ă—Enzymes in milk do not make a major contribution to the digestion of milk in humans


Lipase Ă—At pH values above 7, lipase starts to denature and aggregates when heated above 45 ༰C Ă—A t pH values below 6 , lipase denatures upon heating but the activity and its native structure is completely recovered upon cooling


Lipase activity Ă—The rate of lipase activity is a measure of how fast the lipase enzyme can catalyse the procedure of breaking down the lipid into triglyceride and fatty acids


Lipase activity Ă—The lipase solution would convert milk fat into triglyceride and fatty acids, causing the pH to decrease


Lipase activity - Temperature Ă—Temperature is an independent variable Ă—By changing the temperature of the lipase solution, the change of rate of lipase activity would be measureable
