RECIPE: SPANISH POTATO OMELET
In Spain this is called a potato tortilla, and it is often served in little squares on the tapas table. We think it is also a tasty breakfast dish. It’s a great way to use leftover cooked potatoes. Serves 6.
● 6 large eggs
● 2 cups peeled and cooked potatoes, cut into 1/2-inch dice
● 1 small onion, finely chopped
● 1 green pepper, minced
● 12 green stuffed Spanish olives, sliced
● 1 teaspoon salt
● 1/4 pound cooked ham, cut into 1/2-inch cubes
1. Preheat the oven to 3500F. Coat a 9-inch round pie pan with cooking spray.
2. In a large bowl, beat the eggs until fluffy. Stir in the remaining ingredients and turn into the prepared pan.
3. Bake, uncovered, for 40 to 45 minutes until the center is set. Cut into wedges to serve.

In the early years, in my haste to plant certain crops, thinking earlier was always better, the emerg ing squash would many times be eaten to the ground by voracious cucumber beetles before the plants could even form their true leaves. Planting later resulted in more successful crops.
● 1 small spaghetti squash
2 cups cooked chicken, cubed or shredded
for vegan)
2 tablespoons basil pesto
1/2 cup chicken or vegetable broth
2 tablespoons pine nuts, slightly toasted
Preheat oven to 375 degrees. Split the spaghetti squash in half and place in baking pan to cook until tender, about 45 minutes. When done, set aside to cool. When cool enough to handle or using hot pads, shred the squash fibers into “spa ghetti” with a fork. Place in a large skillet along with the remaining ingredients, mixing well, and heat until dish is hot. Serves 2–4.
