FROM THE TEAM

The holiday season is upon us yet again. It’s hard to believe this year is almost over. And what a year it has been. Even after the marriage equality decision, we still have many more battles to fight. Most recently, a legally married lesbian couple in Utah was fighting to keep a child they adopted. The judge basically said he didn’t want the child growing up in a homosexual household – even though the couple already had two other children. Stories like this will continue for the next few years as a portion of our society adapts to the changing times. It is quite surprising that people living in an “advanced” country, and what many call the best country in the world, could be so narrow-minded. As we look ahead to 2016, it is important to emphasize the impact of our actions. What we do as a community can and will change people. We have the power to educate people on the importance of overall equality. And not just marriage equality. Many people believe that since we have the freedom to marry, we are completely equal. That is definitely not the case. Many of us can still be fired from our jobs for being gay, and many of us may still face harassment from society, which the government can’t really control. Education is the best way to change minds. People are afraid of what they don’t know, and it is our job to help these people understand that we, as a community, are just like everyone else regardless of sexual orientation or gender identity. If everyone reading this can change the mind of one person, then we are that much closer to complete equality. I wish you all a very happy holiday season, and remember, in the words of the great Mick Fleetwood, take care of yourselves, and take of one another! Sincerely,

BOOK REVIEW

And Then I Danced:

Traveling the Road to LGBT Equality reviewed by Jonathan George And Then I Danced: Traveling the Road to LGBT Equality by Mark Segal is a novel surrounding the journey about a young homosexual boy thirsty for acceptance and understanding through a trying time in American history. As a homosexual male, Segal has experienced what arguably every gay and lesbian member of society has experienced: prejudice, misunderstanding, and a need for acceptance (or, at the very least, tolerance). From experiencing firsthand the Stonewall riots to his pivotal and, at the time, controversial remarks on live television in the 70’s, as well as numerous others, Segal has been at the forefront of the gay rights movement. His expertise is clearly outlined in this work, and the knowledge the reader gains is unparalleled from other autobiographies and works of nonfiction on the market today. Though Segal’s recount over numerous decades of the gay rights movement is very detailed, it is done almost to the point of disorganization. Though he even promises in an excerpt to maintain chronology throughout the book, it strays from that slightly and forces the reader to maintain full focus. It is certainly not the easiest book to follow, especially for those, like myself, who demonstrate naivety and/or a lack of knowledge in relation to all things involved with the gay rights movement. And, if you are in the same boat as me, you’ll be finding yourself questioning who people are and what Segal may be referring to often, marking your place with a ribbon or Tennessee Titans football ticket (my bookmark of choice), and Googling or asking Siri who a certain person is or what a certain event entailed.

a book without retaining much, especially in regards to names—they seem to be tossed around quite a bit with little to no explanation of who that individual is. (“Okay Google. Who is so-and-so?”) Though I would have appreciated a little more back story as to who these people were or more about certain aspects of the gay rights movement that are elaborated upon only slightly, this edition could create a thousand-page book that would not have been as marketable otherwise. All in all, And Then I Danced: Traveling the Road to LGBT Equality is a necessary and well-rounded book about the gay rights movement, as well as the trials and tribulations that face the LGBT community every day. If you are looking for a quick read into this world, I would suggest you start with something more basic, or perhaps do your research about the Stonewall riots, and perhaps Segal himself. If you are rather knowledgeable in the realm of this movement and want a more detailed understanding of it, mixed in with Segal-like humor and charisma, this book is for you! pictured: Mark Segal photo by Peter Lien

To some readers, this may be a positive, as it forces you to expand your knowledge even further than the experiences outlined in Segal’s book; for others, it is perhaps a recipe for a sense of being a little lost, or, without doing the required research or having the necessary knowledge, leaving you blazing through

DINING Bourbon Basil Buttered Golden Beets photo courtesy of The Chef & I

Unexpected Elevation Delicious Decadence Takes Center Stage by Erica Rains with recipe from Chef Chris Rains Luxury is the new black this holiday season. This year, killer holiday soirees are happening all around us. From sparkling champagne and twinkling white lights to fabulous dresses and beautiful spaces, the vibe is decadence, and it’s delicious. The elevated experience flows through to what we’re serving, and holiday fare is taking center stage. Whether you are an aspiring chef or just a hot mess in the kitchen, you can achieve these dishes and blow away your family and friends. Really. They won’t know what hit them. We are all falling victim to weird social media phenomena like “FOMO” (Fear of Missing Out) and food intimidation. Friends used to just share photos of a culinary masterpiece from their favorite local restaurant or vacation experience, but now they are starting to create dishes on their own that are Instagram-worthy.

8 | UNITE Nashville

The holiday parties seem to have grown up a bit this season. Gone are the deviled eggs days of yore. No longer can you get away with Santa cookies. (We KNOW you bought those at Costco and just arranged them on your own platter.) Try this recipe from Chef Chris Rains’ arsenal this holiday season. They are fool proof to prevent you from having a “nailed it” moment. The name of the game this season is to break out of the (Jello) mold and be brave. Bring this dish to your next holiday event and people will tell tales of the night you turned them on to beets. That’s right. Beets.

Bourbon Basil Buttered Golden Beets What you’ll need: • Baby or Large Yellow Beets: 1 pound • Whole Butter: 4oz • Water: 1 quart • Sea Salt: 1 cup • Basil: 4oz (Chiffonade, Julienne) • Bourbon: 3oz • Brown Sugar: 1/4 cup Directions: 1. Submerge beets in cold water 2. Remove one at a time and immediately roll in a bowl of sea salt 3. Place on a baking sheet 4. Bake at 350 degrees for 20-60 minutes depending on beet size 5. Remove beets when they begin to feel soft on the outside 6. Let cool at room temperature for 30 minutes 7. Take a dry towel and rub off salt and skin off each beet

8. In a sauce pan melt butter, bourbon and sugar together over medium low heat 9. When melted and warm and in basil, then beets 10. Serve warm You CAN do this, and you will be pleasantly surprised, as will all who try it. This dish has been a hit this year at events. The sweetness of the brown sugar and smooth bourbon and butter finish is unexpected…and undeniable. Try this recipe and see where that leaves you. Snap photos quickly before serving so you can brag on social media. Indulge in the decadence that is this holiday season without breaking the bank (or your back) to create this hit. Send your photos to erica@thechefandicatering.com. And remember, don’t be scared! You’ll make a holiday entrance with your family and friends that will be both fearless and fabulous – just like the food. Bon Appetit!

HEALTH

Stop the New Year’s Resolution Insanity! by Josh Rogers

The holidays can wreak havoc on your body, between the copious amounts of sugary desserts, alcoholic beverages and extra snacking; it isn’t hard to pack on a few additional pounds, which always coincides with the #1 New Year resolution...something revolving around losing weight and looking like a gladiator or Victoria Secret Angel in the new year of opportunity. Over the years, I’ve found that most New Year resolutions do not work. They’re generally made after too many cocktails and not enough serious, profound thought. To make real changes in our lives, we have to look in that “dreaded” mirror, decide if we are “happy & satisfied” with our current state of affairs, and then make a serious commitment for change and improvement. You can do it, but you must be completely upfront and honest with yourself. Anytime is a great time to put a plan into action. If you are committed to having your goal coincide with the New Year, plan NOW

so you can hit the ground running (literally). Here are a few tips to help you get started: Getting Motivated - You have to look inside yourself and find that fire--that passion and zest for life! Unfortunately, you probably are as fat and out of shape as you think. Admitting it is the first step, right? Now, let’s get fired up and do something about it! Make this your year...the year you regain control of your life and make that New Year resolution a reality. Fitness is a lifestyle, not a yearly resolution. The moment that sinks in, your life will change drastically, as you will be more motivated and energized in all other aspects of your world. What is it that you want to do? Do you want to run a 5k, a marathon, compete in a CrossFit Competition, or just look better in your “birthday suit?” Of course it doesn’t have to be that insane, goals can be anything. Set your goals. First, set a

“A journey of a thousand miles must begin with a single step.” -Unknown

10 | UNITE Nashville

fun, healthy or even crazy goal. Then go for it! Don’t focus on weight loss--let that be a by-product of your fitness goal. If you continue to focus on that number on the scale, you’ll drive yourself and everybody else around you C-R-A-Z-Y! Set attainable/realistic goals. Unfortunately, there is no magic pill or formula. Those extra 10-20 pounds did not appear overnight, even though some days it feels that way. By setting unrealistic goals, you are only setting yourself up for failure and discouragement. Success comes gradually and sometimes slowly, but small victories are still victories. “RESULTS come over time, NOT overnight!!!” Be Consistent - Fitness is a lifestyle! Make an appointment with your workout routine every day and don’t cancel it! Would you cancel an appointment with a client...NO! It’s all about mindset, do not give yourself a way out! “It’s not what we do once in a while that shapes our lives, it’s what we do consistently!” Try a new workout. Spice it up, get out of your comfort zone! Maybe you are stuck in a rut and need a new challenge. The Nashville fitness community is thriving with an abundance of options. Of course, I am partial to RESULTS Fitness and their high intensity interval workouts (Ultimate Results). Some of my other favorite HIIT (High Intensity Interval Training) workouts are HotBox, Get FIT 615, Marathon Fitness, and Shed Fitness. If you want to try Yoga, my favorite places are Epic Yoga, Shakti Power Yoga, and Sanctuary Yoga. For pilates, I recommend Studio Novo and Willow. If dancing and shaking your groove-thang strikes your fancy, check out CODE Jay Fitness or b.fab.fitness. Now, get out there and try something new and exciting, as none of these will disappoint! Find an Event - You’re motivated! You’re dedicated! Now, it’s time to find a fun event that will keep you motivated, in shape, and having fun. Make up your mind and commit to do that one thing that you’ve thought about and always wanted to do (it could be a black tie event, fitness competition, a bikini on the beach, etc.). Get your family, friends, co-workers involved. A solid support system is a great source of accountability. There are thousands of exciting adventures out there for you to choose from. Getting motivated, committed and dedicated to the New Year resolution is the hard part. Now, get out there and have some FUN!!!

POLITICS

The Need for Political Involvement by Darrell Bouldin This year I attended the Victory Fund’s Nashville Brunch as a guest. It was well attended as always but I would have liked to have seen even more people from a broader diverse cross section of the LGBT community of Tennessee there. Though the Victory Fund is nonpartisan it is dedicated to electing LGBT candidates to office supportive of LGBT issues first and foremost. I support these efforts, and more in Tennessee to involve LGBT people in the entire political process. Of particularly importance to me is increasing participation of LGBT people in the Tennessee Democratic Party. I have been involved in local and state Democratic party politics for several years now. I was the first openly gay delegate from Rutherford County to a major party convention when I attended as an elected Delegate the 2012 Dem-

12 | UNITE Nashville

ocratic National Convention in Charlotte. This year I was elected the Executive Vice President of the Tennessee Young Democrats (TNYD), the Tennessee Democratic Party youth outreach organization and state affiliate of the Young Democrats of America with a mission to encourage those between the ages of sixteen and thirty-six to become engaged in politics and participate in the Democratic Party. The TNYD has a strong recent and current history of LGBT involvement. The first openly gay Chattanooga Councilman Chris Anderson was involved in the Young Democrats when he was elected President of the Tennessee Young Democrats (TNYD) in 2003, and later in 2007 was elected the national Executive Vice President of the Young Democrats of America when the organization would be led by both an openly gay President and EVP for the first time in its history. Another openly gay man Eric Patton served as TNYD Executive Vice President from 2009 to 2011 under great LGBT ally Claudia Weaver Huskey who has served as President of Nashville Pride this year and has been an exceptional ally to our community. Our current Young Democrats of America National Committeeman representing Tennessee and former President of the College Democrats of Tennessee Mathew Eli Plott is also openly gay.

At the Victory Fund Brunch there were two newly elected openly gay and lesbian Nashville Metro councilpersons there. Nancy Van Reece and Brett Withers. Long-time equality advocate Chris Sanders was recently named to the Clinton campaign’s Tennessee Leadership Council. The TNYD has been in our recent history a welcoming and affirming organization with several openly gay men in leadership positions. These represented recent victories for LGBT visibility in politics and the Democratic Party. We also have many great organizations doing LGBT advocacy work in Tennessee such as the Tennessee Equality Project. We have a few local organizations dedicated to political LGBT work such as the Tennessee Transgender Political Committee led by longtime Democratic activist Marisa Richmond. There have been many individuals who have played a part in encouraging LGBT civic participation in Tennessee. Too many to name. Yet there is still more room for improvement particularly in elected public offices. We still do not have one openly gay state legislator in the State Senate nor the State House of the Tennessee General Assembly. Nor do we have an openly gay mayor in the state. Although Mayor Megan Barry is certainly a phenomenal ally on our issues. In order to elect LGBT candidates we need to start building a bench of prospective candidates who may need to run, lose, and run again to build our political momentum. We need more LGBT people actively participating in politics and civic leadership. This will lead to future wins for LGBT political visibility in Tennessee. Toward this goal this year with the cooperation of our new President London Lamar I founded the Tennessee Young Democrats LGBT Caucus open to all those ages 18 – 35 who are Democrats and want to be more involved in the political process. This is in addition to several other constituency caucuses to be founded. I would encourage anyone who wants to get more involved in the Tennessee Young Democrats or even the Democratic Party to reach out to me. We need your engagement and involvement at all levels.

nashville’s modern family by Blake Kniffin

The story of Nashville residents Kyle, Pennington and their son Cayden has been told around the globe. Popular LGBT website GaysWithKids recently featured the family on their site and their story has touched thousands of readers. Kyle and Pennington first met through Facebook in 2005. Kyle lived in Knoxville and Pennington lived in Birmingham. The two flirted for some time but

14 | UNITE Nashville

it never really went anywhere. After losing touch for several years, Kyle tried to reconnect with Pennington after receiving a job promotion which would cause him to relocate to Birmingham. The very first night Kyle and Pennington hung out, Kyle boldly told Pennington “you know we are going to date right?” to which Pennington replied “Oh we are huh?” Kyle quickly responded “yep!” The two officially became a couple about a month later after some convincing on Kyle’s part. Cayden is Kyle’s biological son from a long time childhood friend. So Pennington came into Kyle and Cayden’s lives after Cayden was born.

“Unfortunately we live in the Bible belt, so there has been some significant resistance from some immediate family members on one side or another that has been difficult,” stated Kyle. “There were several cases where parenting abilities and good judgement were unjustly questioned from some (not all) of our family.” Regardless of how people feel about gay parents, the proof is really in the pudding with Cayden. Kyle, Pennington, Cayden’s mother and her husband have a healthy, happy, intelligent and well-rounded son. “We really don’t let people’s opinions affect us much,” Pennington says. “Haters gonna hate. That being said though, there is a significant amount of family that loves our marriage and celebrates life with us on a regular basis. So that is great for us. I have to give a lot of credit to Cayden’s mother and stepfather as well. They have become some of our best friends and we are so blessed to be united on how we raise Cayden. A true little modern family we always joke.” Both Kyle and Pennington were a bit anxious about raising their son in the buckle of the Bible belt, but the local community has accepted them with open arms. “We were anxious about how this was going to go given the culture here in Tennessee. Cayden plays baseball and basketball year round and we actually have a great group of friends at the ball park,” mentions Kyle. “We all sit on the bench together and cheer on our children. We joke and laugh and talk about the growing pains and joys of small children. “We really have enjoyed this opportunity to break down some stereotypes to people and have been really welcomed in the process,” Pennington adds. “The community has really been awesome and makes us feel like any other parent on the stands

FEATURE which has been really great. I would even go as far as to say we are one of the popular couple’s on the ball field. It also helps that Cayden is the bomb at baseball so having the kid that helps the team win is also a plus.” Cayden is extremely proud of his family and is happy to explain the structure to all of his friends. “Cayden told his entire baseball team and their parents. Clarifying who each person was and answering questions from the other children like “so you have 3 dads?” and “So your dad married a boy?” As you can imagine, we were immediately very anxious to the children’s response as Cayden really enjoys playing sports and I didn’t want that to change. The other kids understood and very quickly moved onto the next topic, un-phased at all. I don’t think it could have gone any better when Cayden told his friends I was married to another man,” Pennington mentions. “The children shrugged it off and treat him no differently since. He did something similar in the lunch room at his elementary school as well; identifying Pennington as his step-dad and me as his father. It got some questions from the other little kids but once Cayden answered the questions, it has never come up again,” stated Kyle. When it comes to couples thinking about having a family, Kyle and Pennington offer some wonderful advice. “Do it. It gives so much purpose to life. The bars and Sunday fun days are great, but watching your son hit a home run is something that brings so much joy. Also, don’t be afraid of how your child will be treated in

16 | UNITE Nashville

schools these days. Here in the Bible belt, Cayden is popular and happy at school and functions well in organized sports. The children understand his family demographic and treat him the same. This was one of my biggest concerns and as it turns out, the future leaders of our country really don’t give a damn who you are in love with and that is refreshing.”

MUSIC Harry Wayne Casey photo by A. Streiber

Get Down with KC by Joey Amato

KC and the Sunshine Band are still as popular today as they were when they first danced into the music scene 40 years ago. Harry Wayne Casey – KC for short – developed a unique fusion of R&B and funk, with a hint of a Latin percussion groove, giving us an impressive string of hits like “Get Down Tonight”, “That’s The Way (I Like It) and “Shake Your Booty”. His sound and influence can be heard today in music by artists like Bruno Mars. Maroon 5 and Robin Thicke. The South Florida resident has sold over 100 million records, earned nine Grammy nominations, three Grammy Awards and an American Music Award. KC led one of the most progressive bands of the 70’s and is credited with changing the sound of modern pop music. For the first time in over a decade, KC and the Sunshine Band recently released a new album,

18 | UNITE Nashville

Feeling You! The 60s. The album is a tribute to the era that shaped KC into the revolutionary artist he became in the 70s, as a young person becoming acquainted with the world around him. Just like the rest of America during that time he was shaped by the music, conflicts, innocence, sex, social and political movements and counterculture of the era – which led to him founding the dance revolution. “The widespread social and political issues of the 1960s was, in part, the inspiration to do something that would make people forget about their problems and be happy,” said Casey. “People were looking for something that would divert their attention from the negative aspects of everyday life surrounding them.” The album is part one of the two-part Feeling You project, and features covers of songs by sixties legends Bob Dylan, The Kinks, The Righteous Brothers and Aaron Neville.

What was your inspiration for new album? During my shows, I used to play some obscure tracks from albums that I recorded and I felt I wasn’t capturing the entire audience, so I started doing cover versions of popular hits. I did “True Colors”, “Love the One You’re With” and even “Say What You Need to Say” by John Mayer. I always wanted to record a few cover songs on an album, so when I started recording a new album of original material and added some covers, I thought why not record a 2 CD set. What song did you wish you wrote? There are so many, but I wish I wrote “Hello” by Adele. It’s such a great song, I can’t stop listening to it. What is your biggest accomplishment to date? Living the American dream. The awards are great and getting a star on the Hollywood Walk of Fame is incredible, but the biggest reward is getting to see and feel the audience every night and share the music with them. Do you ever get tired of touring? Not really. It’s a bit of a hassle today. I’ve really enjoyed the last 20 years, but it’s taken me a long time to feel comfortable in my own skin and understand my character (KC versus Harry Wayne Casey). When you are living in it you don’t have time to step out. What advice would you give to young artists? Go with your heart and believe in yourself. With social media and iTunes, it makes it easier for young artists to get exposure rather than relying on an A&R guy at a major label. Being humble is also very important. What is the most embarrassing thing to happen on stage? I’ve fallen several times and that’s always embarrassing. I forget entire verses of lyrics sometimes too. If I get distracted at all, I don’t remember. But most all, I was wearing this jumpsuit during a show in Ohio and I never used to wear underwear. Next thing you know, I’m exposed. Talk about a wardrobe malfunction. KC and the Sunshine Band still play over 100 live shows annually, circling the country and playing dates regularly throughout Europe, Australia and South America. KC’s songs have stood the test of time and still make fans want to do a little dance, make a little love and get down!

Hawaii

is for Honeymooning by Blake Kniffin Hawaii. This Pacific paradise was the last state admitted to the Union in 1959. Having only been a state for barely half of a century, Hawaii still feels like an exotic island nation. The state’s capital, Honolulu, sits on the beautiful Island of Oahu. Providing the perfect combination of tourism, metropolitan, and tropical hideaways, Honolulu is the perfect place for the honeymooning homosexual.

20 | UNITE Nashville

Many think that a trip to Hawaii is far beyond their budget allows. However, airfare and hotel accommodations are comparable to a trip to Vegas. Speaking of accommodations, Waikiki Beach’s Hotel Renew provides the perfect balance of luxury and local flavor. This boutique hotel is nestled a stone’s throw from the beach and boasts breathtaking

ocean-view rooms. Up-scale, modern, and clean, Hotel Renew is LGBT-friendly. Upon checking in, the staff welcomes guests with delicious pineapple juice and warm, steamed towels. Adorned with a beautiful water feature, Hotel Renew’s lobby provides a lovely breakfast buffet which doubles as a bar in the evenings. With affordable rates, Hotel Renew is certainly the perfect place for LGBT-honeymooners.

While staying on Waikiki Beach, couples must take an afternoon adventure to Diamond Head. Part of the Honolulu Volcanic Series, Diamond Head is a volcanic tuff cone. Don’t be mistaken, Diamond Head is not an active volcano. It was designated a US National Landmark in 1968. Open to the public, Diamond Head provides a trail to the top, for hikers to view the stunning ocean and surrounding landscape of Oahu.

Plan to spend several days at the beach to unwind and enjoy the sensational seascape. On at least one of those days, make it a late one. Hawaiian sunsets are stunning and are best viewed from a beach chair. If you’re feeling adventurous, there are plenty of opportunities to take surfing lessons. If that’s not for you, it’s certainly fun to watch others try!

The two must-see parts of Pearl Harbor are the USS Arizona Memorial and the USS Missouri tour. Sunk during the attack on Pearl Harbor, the USS Arizona’s memorial is built over its final resting place. The USS Missouri, docked next to the USS Arizona Memorial, was the location of the Japanese surrender, which marked the end of World War II. Like bookends, the two ships proudly serve as the beginning and ending markers of the United States’ involvement in the war.

The Island of Oahu is also home to the historic Pearl Harbor. This historical site is a must-see for everyone visiting the island. Roberts Hawaii, a local tour company, is a fantastic way to experience Pearl Harbor. Their friendly tour guides pick up guests at their hotels and shuttle them to Pearl Harbor in a comfortable, air-conditioned (this is important folks) bus. Once at Pearl Harbor, Roberts Hawaii guests are able to bypass the long ticketing lines and are provided free audio-guided tours narrated by Jamie Lee Curtis.

With so much to see and do, it’s recommended honeymooners stay more than a week to enjoy one another and everything Oahu has to offer. To find out more about the Island of Oahu, visit www.gohawaii.com/oahuisland.

Chicken Pot Pie

by Joey Amato

The Country Music Hall of Fame has always been known to attract throngs of tourists and locals to their incredible exhibitions ranging from Taylor Swift to Tanya Tucker to their current exhibition featuring Keith Urban. But one exciting addition to the Hall is their revamped restaurant 2|22. 2|22 is a full-service restaurant, which sources their food from local farmers and growers to provide the best possible quality in meats and produce. Under the direction of the museum’s executive chef, Bobby Hammock, and sous chef, Ian Coppock, the restaurant offers a metropolitan twist on Southern favorites, which includes everything from crab cakes to a modern twist on chicken pot pie. One of my favorite items on the menu are the Nashville Hot Chicken Wings. I typically don’t enjoy food with intense heat, but the wings are tossed in 2|22’s own hot sauce and served with carrots and house made pickles and contained the perfect amount of spice. My only problem was I should have asked for two orders instead of one. Next up, Chef Coppock prepared the scrumptious Chicken Pot Pie, a wonderful serving of all natural chicken served with a savory cream sauce, sweet peas, carrots, red potatoes over a cheddar-herb biscuit crust. This delectable entrée is another unique twist on traditional Southern fare and definitely worth a try. Those opting for a sandwich should try the Music City Yard Bird. The lightly fried chicken breast comes with lettuce, sliced tomatoes, house-made dill pickles, and paprika aioli on a brioche bun. If that isn’t enough to satisfy your hunger, I highly recommend the Triple Smoke Cherry Bread Pudding. We had no idea what we were getting but our server said it was their most popular dessert on the menu. The cherry bread

Clean eating is key to a successful journey in fitness and health, not just workouts. Remember to enjoy your personal journey and challenge yourself in every workout. It is about you, not anyone else. I truly believe working out and a healthy lifestyle are the fountain of youth. How do you find motivation? I find it everywhere. Other people, their success stories, and the way I feel overall emotionally and physically when I work out. I am huge believer in keeping a positive mindset in all you do. DINING

Grilled Teres Major Steak photo courtesy of City Winery

Dining Review:

City Winery by Shawn W. Klumpjan

Few cities the size of Nashville can brag about possessing the multiple dimensions and facets that large metropolitan cities contain. Over the last five to ten years, Nashville has grown extremely fast. What excites me the most is its emerging and very distinctive style - a southern lifestyle that ingeniously incorporates a culture that is respectfully international with a restaurant scene that is quickly earning a reputation equal to the entertainment offering that is notably Music City. It is this that really gets me excited! DeVineGuy, as a Lifestyle brand, is always in search of top-notch multi-faceted experiences. City Winery seamlessly delivers on that expectation. It possesses: an impressive venue; an amazing event and meeting space with wonderful views of the city’s ever changing skyline; a kitchen that crafts some ingenious farm to table dishes from a Nationally Acclaimed Executive Chef; a bar mixing edgy cocktails driven by a talented and innovative team; and, as of this year, a winery bringing the world of viticulture to an urban center with truly attention grabbing wines. 28 | UNITE Nashville

After the publication of an article I wrote about Pinot Noir from Willamette Valley, Oregon I received an invitation to City Winery to be a part of the “crush” of five tons of grapes from the Hyland Vineyard in Willamette Valley. A crush is when the skin of the grape is slightly broken to allow the juice to flow…. I was totally beside myself with excitement. I wasn’t sure what to expect honestly; however, being a freak for all that is food and wine I was totally intrigued. After learning that the City Winery also includes a venue for music and performance I couldn’t wait to check this place out. Upon arrival, an impressive and expansive lobby welcomes you. Designed to greet large crowds, the entrance of the venue is graced with a curved staircase and a beautiful backlit wall of multiple color wine bottles. The bar is impressive with wines on tap and a substantial collection of craft and popular liquors. A dining area is nestled between the bar top and a wall of glass exposing a charming outdoor patio. This expansive unified area in spite of its size promotes a welcoming arrival. The performance venue is inspiring and large enough to handle “A List” artists with an impressive stage featuring a state of the art lighting and sound system, all skillfully incorporated into a total wine-centered décor. Incredibly, the room is still intimate enough to feel the energy of the performance with amazing acoustics that enhance your overall experience. Following the crush of City Winery Nashville’s first vintage I was invited to return. I will honestly tell you I was a little apprehensive. It is rare to find an establishment that takes all these aspects and marries them into an experience that impresses on all facets. However, not knowing what to expect I opened my mind

ON SALE NOW AND COMING SOON and was ready to experience a new winery, a restaurant run by a renowned chef all while being serenaded by a venerable Nashville “GOD” of music and songwriting, Mac McAnally. I quickly realized that my hesitation was unfounded. We started our experience in the main bar area. While waiting for the doors to open we enjoyed a glass of the 2014 Rosé of Pinot Noir from California. This wine has a beautiful depth of color with layers of flavor expressing Strawberry, floral and a lovely earth tone, overall reminiscent of Old World wines in a New World creation. We entered the venue and were escorted to our chairs at a perfect table to take in all the elements. We were greeted with the Wagyu Beef Tartar garnished with sweet corn, scallion relish, smoked mustard seed aioli and shredded egg yolk. Paired with the Rosé this dish stood up to the wine while not overwhelming it. We ordered the PEI Mussels, which totally blew me away. The balance of flavor with roasted garlic, tomato chow chow, bacon and a wonderful marsala baguette made a great dish to pair with many of the wines served on tap. The Syrah, a bright and spicy Thompson Vineyard creation from Santa Barbara California was a perfect match with the Grilled Teres Major Steak: garnished with charred cauliflower puree, enoki mushrooms, wilted baby bok choy and a burgundy demi glaze. This gluten free dish pairs elegantly with all of the reds offered at the winery. The Pork Braciola with crispy brussel sprouts, red potato and mozzarella gratin, also a gluten free plate, paired beautifully with the Rosé, Pinot Noir and Syrah. We were able to really dive deep into the versatility of these wines that elegantly complimented the amazing creations of Chef Kristin Berginson. I have to say that an A+ is deserved across the board. Overall I am so thrilled about my first experience with City Winery. Everyone from the service and the management team to all of the back of the house contributors have a ton to be proud of. As a proud resident of this great Music City I am thrilled that we have a entertainment venue, restaurant, and of course working winery that meets up to the “Gold Standard” of Nashville’s exceptional quality. When I think of words like sophisticated, approachable, welcoming, and fun….now I not only think of my beloved city, but I think of City Winery Nashville.

CULTURE

Local Printmakers Celebrated at the Frist by Jesse Walker Featuring 24 artists from the Nashville area, Anthology: Visual Narratives from Nashville’s Print Community will be on view in the Frist Center’s Conte Community Arts Gallery through February 7, 2016 and is free to the public. This juried exhibition celebrates Nashville’s small presses and artists who use printing techniques in artistically significant ways to tell stories.

heart of Nashville’s culture. “The Nashville area is home to some terrific graphic artists who work with a wide range of ideas and sensibilities,” says Frist Center Chief Curator Mark Scala. “Nashville, of course, is also a publishing center, and a world center of music—it’s all about the aesthetics of communication, storytelling, understanding ourselves through shared narrative.”

Anthology features a diverse selection of works, including etchings, graphic novels, illustrated posters and poems, all of which speak to the

While local artists take center stage in Anthology, the themes of the artworks are by no means restricted to geographic boundaries.

The subject matter ranges from the playful, as in Leslie Haines’s humorous representation of the English alphabet in Animal Abecedary (S is for Slug, C is for Cat) (2014), to more intimate narratives such as Jana Harper’s project Joie’s Story (2013), inspired by memories of her mother. The exhibition also includes mixed-media works like Cynthia Marsh’s Katika Afrika (2012–13), which employs digital printing, wood type, and found woodland debris to chronicle a three-week art-making adventure in East Africa. The jury selection process for Anthology began in May when book artists, print makers and printers within a 55mile radius of Nashville were invited to submit up to three works of art. By the deadline, the Frist Center received 162 works. The entries were then reviewed by a three-person

jury: Katie Baldwin, assistant professor of book arts and printmaking from the University of Alabama in Huntsville; Liz Coleman, reference librarian and galleries coordinator from Nashville Public Library; and Mark Scala. The artists were assigned aliases to ensure anonymity. “The work submitted used many different mediums. An image created completely digitally could be just as difficult to create and take just as long as a work created in the traditional printmaking style” says Katie Baldwin, who studied book- and printmaking in her academic career and was formally trained in traditional Japanese woodblock printing. While the judges noted the submitted works’ remarkable diversity, they were also looking for creativity, originality, and potential appeal to gallery visitors.

HEALTH

here is nothing worse than being thought you’re older than your stated age. The good news is that there are two simple ways to prevent this: toxins and fillers, both administered with a few quick injections by your plastic surgeon. And it seems like an increasing percentage of health conscious individuals, including the fastest growing segment of users, men, have started to discover their benefits. Nonsurgical facial rejuvenation procedures have continued to rise year over year for the past decade or so.

Dr. Mike Burgdorf

There are three main ways that we age: Sun Damage, Deflation, and Descent.

Keep Aging In Check

We all know we should wear daily sunscreen to avoid sun damage. But, how do we prevent (and restore) the deflation and descent components?

by Dr. Mike Burgdorf

Two Simple Answers The answer comes in the easy forms of injectable toxins (Botox, Dysport, Xeomin) and injectable fillers (Restylane and Juvederm). With my patients, I like to use the sinking or leaky boat analogy. The toxins work to plug the hole in the bottom of the boat or to turn off the force that causes the wrinkle. Toxins, like Botox or Dysport or Xeomin, selectively paralyze the muscles that causes the wrinkling force. Over time, the body then is able to smooth out these wrinkles without the constant interference of the muscle pulling the overlying skin inward.

Fillers work in another way. In the past we used to use fillers sort of like a large bucket bailing out the boat: we would use fillers to “fill in” the wrinkles. While this worked well, we have realized a different way to use the filler. The new paradigm shift is to use stronger, thicker fillers and place them deeper to restore or rebuild the foundation of the face. Kind of like rebuilding or adding to the base layer of the boat. Instead of attacking a wrinkle or fold that is created from the descent of the face (like we used to do), we now approach facial rejuvenation with a focus on the foundation of the face. If the foundation of the cheek can be strengthened and lifted with Restylane Lyft or Juvederm Voluma, the fold created from the nose to the mouth is much lessened in appearance. Scheduled Treatments for Best Results The toxins are traditionally used in the upper face: the area between the eyes, the forehead and the wrinkles on the sides of the eyes (the so-called crow’s feet or laugh lines). Fillers are used to augment the midface/cheek, folds between the nose and mouth (the naso-labial folds) wrinkles extending from the corner of the mouth down towards the chin (the marionette lines), and for the lips. Both can be performed in the office during the same visit with minimal downtime. Combine Two Minimum Treatments for Maximum Effect When utilizing a combination of toxins and fillers, the interventions can be minimal, yet the results of staving off aging can be significant.
