Bohdan Zachary Dear Milwaukee PBS Members and Friends, As 2018 nears its end, I’d like to take this opportunity to thank each one of you for your support and advocacy of Milwaukee PBS. Many of you contacted Congressional representatives when a threat to defund public media was proposed. Your calls, emails and letters to our political representatives really made a difference in Washington, DC. Your financial support of Milwaukee PBS has enabled us to focus even more attention on the issues and topics that interest our communities. We produced dozens of stories on our local series: Adelante!, The Arts Page, Black Nouveau, 10thirtysix™, Outdoor Wisconsin, and Around the Corner with John McGivern™. Our productions were honored with awards from the Milwaukee Press Club and the Midwest 2

Emmy branch. In addition to how we reflect southeast Wisconsin on the air, Milwaukee PBS engaged in community efforts that included writing workshops for children as well as our annual Mittens and More campaign that results in thousands of pairs of gloves, scarves and hats that are donated to help others in our area. Nature: Snow Bears Airs Sunday, December 2, 9 p.m. on Milwaukee PBS Channel 36

SNature: et against the harsh backdrop of the Arctic, Polar Bear Facts: Snow Bears is a dramatized story based on the extraordinary adventures and life-changing journey of newborn polar bear cubs as they leave the safety of their den for the first time. Bravely led by their mother, the cubs must make the perilous 400-mile trek to the sea to feed. Encountering many dangers and adventures along the way — marauding male bears ready to kill, extreme weather, arctic foxes, walruses, narwhal, snowdrifts and ice cracks — they undertake an epic survival challenge. These cubs are rarely seen in their natural habitat, and this is a unique glimpse into their world. Kate Winslet narrates.

•After months of winter hibernation, the return of summer to the Arctic means that polar bears must make the 400-mile trek to the edge of the ice surrounding the North Pole. This area is abundant with seals, their favorite food. Timing for the journey is crucial - if they don’t leave the island in time, the sea ice will be gone, which means they could be marooned for the summer. •Adult bears can travel up to 50 miles a day, but for cubs even 10 miles is a struggle. At three months old they need six rest breaks a day Adult bears can also swim up to 60 miles nonstop, but not the cubs. •Arctic foxes get through the winter by scavenging for scraps and surviving on their food stores. They tend to eat the leftovers from a polar bear’s kills. •Polar bears can smell seals under three feet of snow. Hunting requires precise timing and experience – only about one in ten hunts is successful. •The North Pole is populated with diverse creatures such as narwhals, walruses, and seals. They migrate to the region during summer when fish are abundant.

Ingredients

Add Zing to Banana Quick Bread Cindy Juds

Directions

Soak the coconut and the corn flakes in the 6oz of Sprecher Root Beer and let it stand until needed. In a separate bowl cream butter and sugar well, add egg and extract and mix well. Blend flour, baking powder and salt. Add to butter mixture, mix well, then add the root beer mixture. Make small balls, and roll into white sugar. Place on ungreased cookie sheet. Press each cookie with a fork. Bake at 350 degrees for 14 minutes or until they are light brown.

Ingredients

Dry – Mix in one large bowl 2 cups sugar 2 teaspoons baking soda 2 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt

Spices

1/2 teaspoon apple pie spice 1/2 teaspoon pumpkin spice 1/8 teaspoon ground nutmeg 1/8 teaspoon ginger

1 and 1/2 sticks of butter 2 teaspoons baking powder 1/2 cup of sugar 1/2 teaspoon salt 1 egg 1/3 cup chopped coconut flakes 1/2 teaspoon root beer extract 6 oz of Sprecher Root Beer 1 cup finely chopped corn flakes 1 and 1/2 cups flour 1/3 cup of chopped nuts

1/8 teaspoon all spice 1/8 teaspoon cloves 1 teaspoon cinnamon

Wet - Mix in one large bowl

2 teaspoons Sprecher Root Beer 1 tablespoon Mexican vanilla extract 3 large eggs 2 teaspoons cold dark rich coffee 4 ripe, (almost black) bananas mash-up with fork 1 cup OREO Thin Bites Fudge Dipped cookies (do not break-up) 1 cup canola oil

Directions

Preheat oven to 350 F. Then blend together the dry ingredients into the wet ingredients in large bowl. Pour mixture into two 9x5 loaf pans. Spray with cooking spray such as coconut oil. Bake 20-30 minutes until banana bread is golden brown. Cool, wrap bread in foil.

2/3 cup golden raisins 1/4 cup Sprecher Oktoberfest Lager 2 and 1/2 cups flour 2 teaspoons ground cinnamon 1 teaspoon apple pie spice 1 teaspoon ground ginger 1 and 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon kosher salt 1 cup canola oil 3/4 cup granulated sugar 1 cup packed dark brown sugar 1 teaspoon vanilla extract 4 large eggs 1/2 cup Sprecher Oktoberfest Lager 2 cups chopped apples from 2 large, peeled, cored apples 2/3 cup chopped pecans, toasted *Browned Butter Beer Glaze (recipe follows) **Gilded Pecans, for garnish (recipe follows)

Directions

Preheat the oven to 350 degrees. Spray Bundt pan with baking spray. Place raisins in small microwave-safe bowl. Add 1/4 cup Sprecher Oktoberfest Lager and microwave 90 seconds. Set aside. Whisk the flour, cinnamon, apple pie spice, ginger, baking soda, and salt in a bowl until evenly combined. In bowl of stand mixer, combine oil, both sugars, vanilla, eggs, and 1/2 Sprecher Oktoberfest Lager until smooth. Add the dry ingredients and mix. Stir in raisins and any liquid in bowl, chopped apples, and toasted pecans and mix to combine. Pour batter into the prepared Bundt pan. Bake until a cake tester inserted in the center comes out clean. 55 to 60 minutes. Cool the cake in the pan for 30 minutes, then remove cake from pan. Allow to cool completely. Drizzle with glaze. If desired, decorate immediately with Gilded Pecans. Cook’s note: this recipe uses 7 oz. of Sprecher Oktoberfest Lager. Enjoy the remaining 5 oz as you bake.

*Browned Butter Beer Glaze Ingredients

1/2 cup (1 stick) butter, softened 2 tablespoons Sprecher Oktoberfest Lager 2 cups sifted powdered sugar 1 teaspoon vanilla

Directions

Melt butter in small saucepan over medium heat, whisking often until foamy. When butter foams, whisk constantly until butter turns a deep amber color, being careful not to let it burn. Remove from heat and immediately whisk in powdered sugar, Specher Oktoberfest Lager, and vanilla. Whisk until smooth. Adjust consistency, if necessary, by adding a little more powdered sugar or a little more beer. Pour over cooled cake, or allow glaze to cool a bit to pipe.

Gilded Pecans Ingredients

1/2 cup large pecan halves 1/4 teaspoon fine sea salt 1 tablespoon butter Edible glitter

Directions

Preheat oven to 325 F. Place butter in small bowl and melt in microwave. Add pecans and toss to coat. Add sea salt and toss. Spread pecans in single layer on foil-lined rimmed baking sheet. Bake until fragrant and slightly darkened in color, about 15 minutes. As soon as pecans are out of oven, dust them with edible glitter. Cool pecans on baking sheet.
