A Sweet Simple Taste by Alexa Benson-Valavanis

The massive fig tree which doubles as a jungle-gym for adventurous nephews much of the year, right now is dripping of sweetness. Perpetually hungry English Labradors wander underneath it, day and night, in search of fallen treats. Many evenings after work we harvest a few ripe figs and explore recipes to enjoy the tree’s generosity. Tonight, as the sun sets behind its thick leaves I am reminded of the Buddha who sat for countless hours beneath a fig tree’s shade. I think of Christ who lived amid fig trees in a land far from here. I imagine all of the people across the centuries and planet’s vast surface who’ve enjoyed the joy of a fresh warm fig. It is a comforting thought. Although certainly the beautifully complicated shared experience of human beings couldn’t be reduced to a single taste, somehow knowing how easily this flavor has slipped through time and space brings me happiness. Food has a way of doing this, doesn’t it? We all have foods that with one bite transport us to our grandmother’s kitchen or to camping trips as a child. We have recipes that hold ancient family secrets and those we’ve created all on our own. We have tastes we crave and those we could go without knowing again. What a simple pleasure - to taste! Tonight we’ve settled on figs wrapped in prosciutto and stuffed with goat cheese. You are more than welcome to join us, if you’d like. Grab some figs. Remove the stems. With a small sharp knife open the fig from the top to the middle with an Xcut. Place a small amount of goat’s cheese into the opening. Wrap the fig with a piece of prosciutto and secure with a toothpick. Place figs on a baking sheet, drizzle with honey, and put under the broiler until the prosciutto starts to sizzle. The result is a sweet and salty, creamy and delicious taste! 11

Opened in 2007 by Dr. Vimali Paul, the Derm Bar in Chico has quickly become a cornerstone of Chico’s beauty and anti-aging scene. The concept, borne from the urging of patients in Dr. Paul’s internal medicine practice to expand her concentration into skincare, seeks to make highend skincare techniques and procedures accessible to everyone, especially those who haven’t had the chance to experience it previously. Originally located in Downtown Chico, the Derm Bar relocated to the Philadelphia Square complex adjacent to Eaton Road and the Esplanade in 2011, providing patients with plenty of parking opportunities and a significantly greater level of privacy. Whatever you do, don't call Jim Hale a chef. Once upon a time, he hired one of those for his restaurant in Willows, but it was a disaster. Rumor has it that in 2009, the trained chef sold food to other places and had a criminal background, leaving Jim and his wife, Linda, to pick up the pieces as they lost their restaurant and their home, then were forced out of retirement just to survive. Jim was a general contractor for many years - a builder with a “craftsman job.” He remembers eating a lot of fast food during that time. One day he realized, “I go out and put the best gas in my car. Why am I putting garbage in my body?” When the time came to rebuild in 2010, Jim and his grandson, Nick Odetto, got themselves a truck and set up shop in Paradise, on the corner of Clark & Pearson. He sold a corvette so he could afford it. “People's hearts are warm up here,” he says. “We try to be as simple as possible. I don't like to freeze things. I don't like leftover stuff. I don't like fillers.” When Jim's menu full of traditional American meals like hamburgers and hot dogs eventually found some success, a friend of his offered to let him rent out space at the Paradise Pines golf course, so Jim's American Grill opened there in March 2012. Jim's hamburgers are quickly becoming legendary. He frequents The Butcher Shop in Chico. He uses red oak to smoke the daily specials of BBQ beef and pulled pork for about 12 hours. He buys local whenever he can. “I don't have any secrets,” Jim says about his purchasing habits and recipes. “On the days you don't wanna cook at home, come eat with me. I do things my own way. I want the quality I want.” From the construction-worker table sans tablecloth to his unwillingness to settle for anything less than the best, Jim's craftsman background shines through in everything he does - all for reasonable prices. “I'm not gonna slop this hamburger together,” he insists. “Whether you rebuild an engine, rebuild a house or go in there and build a burger, it's all the same; you gotta do it the best you can.”

When Neil A. Harris began his law practice in 1987, the specialization of “Elder Law” did not exist. But that did not change the fact that compassion compelled him to be an advocate for those who are ill, disabled, and mentally and physically declining in life. Often, with age comes the designation of being lawfully incapacitated and incompetent. “Elder Law focuses on the crisis before death, of passing on. It's always crisis work because people are about to die,” explains Mr. Harris. Estate Law deals with the things that happen after death: who gets the property that is left, custody of children, distribution of savings among family and friends, etc. More importantly, elder law requires “surrogate decision making,” states Mr. Harris. Someone also needs to make arrangements for long-term in-home care or hospice to treat the emotional, spiritual, and physical needs of the client. While Elder Law and Estate Planning are distinctly different, the two specializations work together and Mr. Harris deals with both on a daily basis. Back in 1985, Elder Law was just making its way into the spotlight. It had been considered a part of Trust & Estate Planning but Mr. Harris was involved in the Elder Law Committee as a part of Legal Services which was defunded but not without value. Ten years later, the certification

of “Elder Law” was granted at a national level by the California Employment Lawyers Association (CELA), and criteria were developed to regulate the definition. Mr. Harris contributed to this development as well as legislation in 2000 regarding laterlife marriages and in 1993 regarding the definition of “estate.” Throughout 15 of the California counties lying Northeast of Sacramento, Neil A. Harris is the only attorney that focuses on Elder Law. He enjoys spending time with his clients and believes that the most important aspect of his work is treating the elderly with respect and listening to what they have to say about the experiences they've gone through and the knowledge they have learned in life. “I get paid to listen to peoples’ stories,” he marvels. “It's the best job you can have.” In 2007, Mr. Harris began working with his current business partner, Nicole R. Plottel. It started out as a request for her to use her German language skills in translating documents but developed into more serious business as Ms. Plottel's trilingual skills, empathy and compassion for the elderly, and dedication to working hard found the spotlight. This was the exact skill set that Mr. Harris valued in his own practice, so the two formalized a partnership in 2011. “We opened our practice

as a center with the idea that we wanted to offer full services to the elderly,” says Mr. Harris. Although Mr. Harris refuses to discuss his own cases for the public eye, he does reflect on Supreme Court cases regarding Terri Schiavo and Nancy Cruzan, as well as the Oregon Right to Life. These have been inspirational cases for Elder Law, forcing the public to debate the issues and consider why people make the choices they do, who has control over life and death, and what constitutes freedom. “I keep wanting to learn more,” states Mr. Harris. “Everything you learn, you apply to your life even though you don't know you're going to.” As a Chico native, Mr. Harris has seen a lot of changes in his hometown, not the least of which are sprawl and an increase in practicing attorneys. But his focus remains on his clients; the quality of care they receive both from caregivers and himself are of utmost importance. He has continued to practice Elder Law for almost 30 years and has been named as a Fellow in the National Academy of Elder Law Attorneys (NAELA), and the American College of Trust and Estates Counsel (ACTEC). His peers think highly of him and he is one of the most sought-after attorneys in the area. Mr. Harris is a game-changer himself and, by all rights, a local legend. 15

These days, it is clear that music is truly what drives us. It defines generations, plays to (and often alters) our moods, and most recently was the impetus that breathed new life into Apple, a company dying on the vine, turning it into the largest company the world has ever seen. Now worth more than Google and Microsoft combined, Apple is living large on the success it has seen borne on the back of that one timeless commodity, music. It is curious then, with music engulfing so much of our daily lives, that we are still so apt to remain standoffish to new musical experiences. One such experience is found in the realm of the symphony. Previously relegated to societal elites, the symphony experience has changed dramatically over the last century, though unfortunately, the associated reputation has not changed alongside it. These

days, groups like the North State Symphony not only make symphony halls accessible to all people, but they provide musical interpretations that are fun for all groups to listen to. The 2012-2013 season of the North State Symphony, entitled “Experience the North State Symphony” promises to be the best season yet and from the looks of it, also the most accessible to a broader audience. Each concert has its own unique theme and each piece was a request from an audience member, supporter or an orchestra musician; truly this season is a symphony by the people and for the people. Fan favorites like Beethoven’s Ode to Joy and Ninth Symphony, as well as Gershwin’s Rhapsody in Blue will grace the stage this season, and best of all, listeners will get to experience them live and in their full acoustic beauty. This season’s themes include “Experi-

ence the beat,” “Experience the Intimate,” “Experience Vienna,” “Experience the Season,” “Experience Charm,” “Experience the Lyrical,” and “Experience Joy.” In between these wonderful experiences, the North State Symphony will also host a show especially for children with famous musical personality, Dr. Noize, titled “Phineas McBoof Crashes the Symphony!” Aimed at educating a new generation on the joys of classical music, the fun and informative show will teach attendees about the instruments used and other fun facts regarding the symphony. There has truly been no better time than this season to find your way into a concert seat at the North State Symphony. The concerts are sure to bring about a whole new level of appreciation for classical music to the area and if one thing's for sure, you’ll definitely see us there.

The California Olive Oil Council describes olive oil as perhaps one of the most romanticized and valued crops in history. The Lucero Family has been farming olives in Corning, California since 1946, and has some of the oldest trees in North America. In 2005, the third generation olive grower, Dewey Lucero made a leap of faith, and it has turned out to be a very smart move. Olive oil production in the Lucero family started years ago. A tale of two friends who would pick olives, dry them on prune sheets, and then smash them between two metal plates with a car jack. It began with a passion to have something tangible that could be shared with others. The passion continued to grow, and led to the investment of a hydraulic jack to work faster and then ultimately the purchase of a mechanical mill. Larry Thatcher, a family friend ventured all the way to Italy in his quest to improve efficiency in their olive oil production. The olive oil that was made was soon enjoyed by not only family and friends, but was developing quite a following. Both Dewey and his father began selling the olive oil. They shared it with co-workers and friends, literally out of the trunks of their cars. When Dewey found himself being laid off from his job, he leapt, with both feet into putting Lucero Olive Oil at the top of the industry. Dewey knows that surrounding yourself with the right people who share your passion improves your chances of success. “I have been fortunate, I have had great partners, great guidance, and everybody here shares in the excitement of what we’re doing. That’s what is special about something you produce on your own, you are able to exude excitement about the product, and people see

that and then they get really excited. That is the thing about Lucero Olive Oil, we have a story, we have a reason for them to want to enjoy the oil we produce.” All of Lucero’s 27 employees reflect the passion that Dewey speaks to, you can feel their excitement with each interaction. Larry Treat is the Mill Manager at Lucero, and is responsible for making all of this oil. “Larry watches every single little step in the process, he’s a fanatic about the details, and he is perfect for this job.” “It’s easy to make good Extra Virgin Olive Oil, but it’s hard to make Award Winning Extra Virgin Olive Oil.” So, how is Extra Virgin Olive Oil made? The single biggest factor that separates an award winning olive oil from the rest is simple, it’s in the details. The olives that are used at Lucero are strategically grown within a 5-10 mile radius of their mill located on Loleta Avenue in Corning. The art of producing Olive Oil begins with a truck delivering olives to the mill. Following a cleaning process with fans that remove stems and leaves, the olives enter a water bath. From there, they are crushed,

pits and all. Lucero chooses to leave the pits in during the crushing, in an effort to extract a small amount of oil that lies within the pit itself. From there, the olive paste enters a device known as a malaxer, where the olive paste is stirred and warmed. Next, the paste it put through a centrifuge where the heavy matter separates from the oil. After the initial centrifuge, small amounts of solid can still exist. So water is added and a final rinse, or polishing is put on the oil. The oil is then placed in large containers where it is delivered to be bottled. Dewey personally approves each batch of oil before it continues into their bottling room to be filled, and labeled by hand. Lucero also laser dates the bottles with the harvest date, so that the consumer knows to consume it within that year. Lucero Olive Oil Once opened,

oils should be consumed within 2-4 months. While Lucero offers 12 varietals of Olive Oil, the list of awards they have earned continues to grow, and is at 172 to date. Lucero Olive Oil is the most awarded olive oil producer in North America. Most recently, on August 10th of this year, they were awarded a gold medal for their popular Miller’s Blend in Israel. In April, they earned the top prize in a Japanese competition where 140 extra virgin olive oils from 16 countries were represented. Lucero earned one of only five Premier Awards, for their 2011 Arbequina. In March, Lucero’s Ascolano was awarded Best of Show at the 2012 California Olive Oil Council Olive Oil Competition. In 1992, the California Olive Oil Council was founded. The COOC offers a Seal Certification Program that provides a means to guarantee that you truly are purchasing guaranteed extra virgin olive oil. The program offered a standardized method of grading 100% California olive oil as extra virgin. In order for an oil to qualify for the certification, it must submit to a sensory evaluation and also pass a chemical analysis. Additionally, the oil can be mechanically extracted without chemicals or excessive heat. Lucero Extra Virgin Olive Oils have earned the Seal for 2012. In just the last couple of years, Lucero has begun to focus on education. With that in mind, they built an amazing retail store at the Mill that is open 7 days a week 9am-5pm. Dr. Deborah Penner

Born and raised in Chico, Dr. Deborah Penner has been no stranger to health complications. By the time she was five, her severe allergies and asthma had become so extreme that she was forced to spend an entire month in a room with an air purifier each year, making frequent visits to the hospital to receive oxygen treatments. Throughout her time as a young adult, her debilitating allergies continued, finally resulting in fibromyalgia and heart arrhythmia due to the medication needed to counter her asthma symptoms. As the story often goes though, these experiences led her to select the career path that she did, and through it she has helped numerous individuals facing similar obstacles to hers. While working on a vineyard crew in college, one final injury to her body, this time to her neck, got her attention and sent her in search of chiropractic care. The experience and care she received prompted her to join the chiropractic field, and in 1981 she enrolled in the Western States Chiropractic College in Portland, Oregon. In 1984 she moved to San Diego and began working at an interdisciplinary clinic alongside medical doctors and in the fall of 1987 moved back to Chico to help her parents who were in need of her support and caretaking. She decided that her home town was the perfect place to set down roots and open her private practice, and one year later in the fall of 1988, she did just that. Her office has been on the corner of East 1st street ever since. In 1997, after nine years as a chiropractor in Chico, Dr. Penner lost both of her parents and two of her closest friends in a six month period. The stress and underlying medical issues kicked into overdrive causing hormonal imbalances, profound sleep dysfunction and episodes of severe anxiety. She decided to visit a doctor who focused on nutrition and was diagnosed with massive liver and gallbladder congestion. Her doctor put her on a personalized and balanced diet; within forty-eight hours of starting the diet, she began experiencing significant changes. The experience caused her to shift gears and focus on nutrition above all else, both for herself and her practice. Fifteen years later, Dr. Penner has made a full one-eighty in her own health and credits her knowledge of nutrition for the change. Her practice now focuses on nutritional therapy, analyzing patients’ health history alongside their daily nutritional choices and applying the findings to creating a system that is right for them. She utilizes 21-day purification programs as well as resources and products from Standard Process, the oldest nutritional company in the United States. These products provide nutritional and vitamin therapy through concentrated extracts from whole foods like fruits and vegetables rather than synthetic vitamins (B and C for example) created in laboratories from corn tar, corn syrup, and sulfuric acid that can often cause liver, gallbladder and pancreatic issues. At fifty-seven years of age, she’s proud to exclaim that she is experiencing the best health of her life and has plenty of clients that can claim the same. During the winter season, the one thing I miss most about summer are the green trees; what are some trees I should use that would provide me with a greener landscape year-round? Answer by Marc Wesley CTSP A

Dear Dennis, If you want green trees that will fit into your landscape year round then I would suggest evergreen trees. You should first decide the size that you will need to fit into your landscape. You don’t want to plant a tree that will grow into utility lines, or turn into some other type of nuisance. There are many small growing evergreen trees that you can choose from. Here are a few choices that you can consider. I’m sure if you look around you will find a perfect tree to plant in your garden area. If you need help planting it let me know.

A small evergreen that grows to a mature height of 20 to 25 feet. The tree grows best in areas of full sun to partial shade and in moist, well-drained soil. Cornelian cherry dogwood is tolerant of soil alkalinity and blooms with small clusters of yellow flowers in early spring. The flowers give way to small red fruit in the summer. The tree has a rounded mature form and is a native of Europe and Asia. Cornelian cherry dogwood is commonly used as a specimen tree in landscapes.

Japanese tree lilac (Syringa reticulata)

A small tree native to Asia. This evergreen develops to a mature size of 15 to 25 feet and a rounded form. The tree blooms with large, white flower clusters in early summer. The bark of Japanese tree lilac closely resembles that of cherry tree, with its long, horizontal lines. The tree grows best in full sun and in slightly acidic, moist, well-drained soil. Japanese tree lilac has a good tolerance to wind and is popularly used in mass plantings or as a specimen tree in gardens.

Strawberry tree (Arbutus unedo)

A small tree with a spreading growth habit. The evergreen tree has a unique gray-brown bark which peels to reveal a reddish younger bark beneath. Strawberry grows up to 30 feet in height with an equal width and has leathery, glossy 2- to 4-inch-long foliage. The tree blooms with white or pink blueberry-like blossoms in fall, continuing well into the winter. The flowers are followed by round red fruit about 3/4 inch in diameter. Strawberry tree is native to Ireland, Southern Europe and the Western Mediterranean region. Grow in welldrained soil and in areas of full sun.

It was Mother's Day, and he wanted to do something special for her. Soon, he had devised his very first menu; oatmeal, pancakes, and coffee. Jim leans back and laughs as he recalls how that meal was made on that day so long ago. Describing how he first put the beans in the coffee pot, then followed on top with the filter! The oatmeal was dry, the pancakes burned, and then there was that coffee. But, like only Moms can do, she accepted his gift with a full heart. For this meal had been prepared for her on that day by her 4-year-old son, Jim. It was the perfect passion for a child whose parents believed in exposing their children to foods of other countries, and to the satisfaction of growing your own ingredients. "We weren't a mashed potato and meatloaf family," Jim jokes. He shares stories of his Father's “Christmas Around the World” meals. He will be working at the salad station in the prestigious Venetian Hotel in Las Vegas, NV. It is a multi-level restaurant, with an exposed serpentined kitchen, where they serve 500-600 patrons an evening, at Canaletto Ristorante Veneto. With the support of his parents, Jim worked by day through High School, and by night at the restaurant. He listened, and he learned from everything that went on around him. Committed to his passion, Jim would work on his knife skills by cutting bags of potatoes on his days off. Others would notice his dedication, and he was rewarded with progression in the kitchen ranks. Shortly after Jim's Mom relocated to the North State, he would join her. His choice to relocate gave him the opportunity to work at some of the area’s most beloved restaurants prior to joining Farwood Bar & Grill earlier this year. When Howard and Lynette bought their newly built Chico home in 1989, everything was just how they wanted it. They raised their family there, and year-after-year made their own special marks, gradually converting house to home. Twenty-three years later, the house is now seeing new marks made by the third generation of their family, and alongside those new marks came a need for renovation. Howard and Lynette realized it was time to make some changes to their home as it was beginning to feel the ravages of time. The cabinetry in the kitchen was experiencing the fading expected after twenty-three years of family use, and the once perfect tile and grout countertops that had seen numerous family meals over the years were beginning to crack and chip. An increase in storage and a new space plan were both of necessity as well, so they called Tanya at New Again Kitchen and Bath. A geologist by passion and profession, Howard had long wanted natural stone countertops in the kitchen, so Tanya set out to find the perfect match. The result transformed the old tile and grout into a granite slab countertop made of one of Howard’s favorite stones, Larvikite from the coastal town of Larvik, Norway. Appropriately nicknamed “Blue Pearl,” the countertops perfectly complimented the couple’s new chocolate birch cabinetry. By doing away with the once popular soffits, Tanya was able to add height and a significant amount of storage space to the kitchen cabinetry, while the granite backsplash sneaking up the walls completed the transition from countertop to cabinets. With the addition of four grandchildren in Chico alone, space was a concern, so Tanya suggested extending the island in the middle of the kitchen and finishing it off with a granite top that would provide enough room for the entire family to gather around. Finally, the fluorescent lighting was removed and replaced with friendlier recessed lighting and the area was painted to match the new kitchen motif. The results? You’re looking at them, and Howard and Lynette couldn’t be happier. The entire remodel took two weeks to complete and the kitchen is now the family space that the two always wanted. As a professor, Howard states that, “it gets an A!” The ease of keeping the countertops clean and the added storage alone made the project worth the investment and the two can’t find a single thing to be critical of. Ensuring Sustainability of Business in the Event of a Loss: by John Sweeney It is important that my clients’ commercial policies provide protection to ensure that they can continue working and generating income in the event of a catastrophic loss. When I meet with a client to review their policy coverage, one the first things that we discuss is if they own, lease, or rent their building. If renting or leasing, I always ask to review their lease because it is a legal document, providing the guidelines for what my client is responsible for in the event of a loss. For example, if you are renting a 7,000 square-foot building, and a fire occurs that you, as the tenant, are deemed legally

responsible for, you are obligated by your lease to replace and/or repair the damage. In this example, let’s say the building is valued at $1 Million. A lease will typically require that the tenant provide General Liability coverage of $1 Million or more. However, it is important that the client understand, that the part of the building that is under his care, custody and control does not fall under the General Liability clause in the policy, so there is no coverage for this loss under that line of protection. This type of loss would fall under the Tenant Legal Liability clause, which should include Tenant Fire Legal

coverage. It is important that these lines of coverage are reviewed annually to make sure that the limits of coverage are adequate to cover such a loss. The agent and client must be careful to ensure that this very important coverage is not overlooked as many carriers will provide a default limit (based on other policy limits) that may not provide adequate coverage for the tenant in this area, as an example, they may only offer $100,000 or $300,000 protection. This is just one of the many aspects of a client’s business that needs to be reviewed regularly to provide adequate sustainability coverage.

Previous columns have been important, but this topic is crucial to a wide variety of movers (especially StudentAthletes). Shin splints, Osgood Slaughters, stress fractures, and ankle sprains are common in the early season as young athletes come back from a summer of swimming, lounging, and sleeping in. Few things put a cloud over a season like an early injury. Training the ankles through stability-based strength training is a great way to address the atrophy that a summer near the pool eating Cheetos can bring to the lower leg. Stability based strength training includes balance devices such as the BOSU Trainer, the Reebok

There is not one simple stretch that I could tell everyone to do that would be right for everyone. Postural stress is one of the number one ergonomic stressors on people’s spines that causes the buildup of trauma which leads to many, many neck problems. They may have too much neck curve, too little, their head shifted to the right or left… the combinations are endless and these combinations have to be taken into account when prescribing postural exercises to minimize the ergonomic stress of sitting at a computer. Much like a combination lock, just spinning the dial may work

one time in a million but if you know the combination you will get it right each time. To accurately determine the right stretch for you, an expert analysis would be the first step. Only then would a customized stretching and rehab protocol be recommended. This could encompass spinal manipulations, postural exercises and/or postural traction. When performed together, not only can a stretch be recommended, but the core problem causing the pain is addressed. The Gym that Trainers Can Call Home by Aveed Khaki

Over the years, we’ve written about a number of our favorite gyms in town, but up until this point we’ve never written about one built by trainers specifically for other trainers to thrive. The general politics of the fitness industry in town tends to cause trainers to strike out on their own, opening small studios and catering directly to a niche clientele. Often times, this limits the scope and breadth of their offerings and as any self-employed trainer will tell you from a financial point of view, it isn’t easy. Danny Webb and Joriah Dering’s new venture, appropriately named The Gym, is setting out to change that. Born and raised in Chico, Danny met Joriah during their sophomore year at Chico High School. Both avid athletes, the two quickly became friends and spent a significant amount of time together on the high school football and basketball teams. Shortly after high school, Danny and Joriah moved down to San Diego. Danny decided to take on University of San Diego’s school of business while Joriah went to work building and managing gyms throughout San Diego and La Jolla. Danny married his wife Courtney and the two decided to move back to Chico where Danny took over as a fulltime history teacher and athletic director at his alma mater. In the fall of 2011, after having worked with a number of

trainers over the years and hearing their difficulties, Danny began to conceptualize the possibility of opening a gym specifically dedicated to helping them succeed. He called Joriah and shared the idea with him only to find that a number of similar gyms already existed in southern California. Knowing that the concept had been proven elsewhere, the two set out to bring the concept to Chico. In the spring of 2012, after months of work, Danny and Joriah opened the doors to The Gym on Commercial Avenue in Chico. With the mission to allow trainers the freedom to be their own boss, provide large gym capabilities and resources with a warehouse sized attitude, and educate the public on the importance of fitness and nutrition, The Gym has already made huge strides locally. In the few short months since, The Gym has already attracted six of Chico’s most respected instructors: Dr. Steve Henderson, Casey Smythe, Whitney Wolff, Debbie Holt, Maria Corrales and Shannon Devine. Dr. Steve Henderson, known to many around Chico as Mr. Fitness, has been responsible for the training of such local legends as

Aaron Rodgers and Emily Azevedo, and was the go-to consultant for both In Motion Fitness and Chico Sports Club during their infancies. A professor of kinesiology at Chico State, he and Casey Smythe now head up Delta Strength, a fitness program that focuses on training the entire individual as the sum of its parts rather than individual components. Whitney Wolff brings one of Chico’s only fully certified CrossFit instructional courses to The Gym and Debbie Holt brings years of personal training experience to the table. Maria Corrales offers up a healthy serving of yoga, whether as a workout itself of post-workout stretching, and Shannon Devine is the registered dietitian on duty. Crab Stack and Citrus Tomatotini Dare we say we’ve struck the motherlode? Indeed, we shall. Chef Marcus at Bellachino’s has outdone himself yet again with his newest creations, the Crab Stack and Citrus Tomatotini. Stacked in four beautifully 800 Bruce Rd. light and refreshing layers, the Crab Stack builds Chico flavor, layer-after-delicious-layer. From the first layer, a (530) 892-2244 foundation of chopped avocado sets the groundwork for the heirloom tomatoes, dungeness crab and grapefruit above it. A sprig of celery leaf tops the tower for a cumulative taste that we have no qualms in saying, is nothing short of perfection. The tower is drizzled with lemon, lime and Lucero Olive oil for a smooth citrus bite. Pair this piece of heaven with the Citrus Tomatotini, Chef Marcus’ secret citrus and tomato martini, for a meal that will leave no taste bud untouched.

Dear Gary, where have you been all our lives? Chef extraordinaire, Gary Jones is taking the old Albatross Restaurant in Chico to new heights, and he’s bringing a number of secret items along with him. One of our personal favorites is the light and summery Ensalada Caprese. Sliced heirloom tomatoes blessed with a large helping of burrata cheese and sprinkled with fresh herbs and a fig balsamic reduction will make you wonder whether or not you should keep a steady stream of this plate en route to the table throughout dinner, and we wouldn’t blame you. We were thinking the exact same thing. Regardless of the meal, make sure this dish precedes it.

Seasonal sundaes? Now that’s something we can all get behind. To finish out the summer, Shubert’s is bringing back a little taste of Americana with their Caramel Apple Sundae. Famous homemade green apple sherbet, creamy caramel, almonds and whipped cream will take you back to those favorite memories at the Silver Dollar Fair. Not to be outdone by summer, fall will be ushered in by Shubert’s Pumpkin Pie Sundae. The first was butter poached scallops with roasted beet risotto. The risotto rice was bright red and looked amazing in contrast to the white scallops. The second dish was a rib eye in a creamy beurre rouge sauce and red pepper polenta on the side. A dreamy and succulent dish so popular it has made its way to the daily menu. Bravo!

As summer comes to an end, nothing is more welcome than the fresh and tropical taste of pineapple, and Pita Pit delivers it in spades. High and I really liked it. I stopped doing it for awhile and after living in France I was really inspired and decided to major in it.

UL: How was your time in France? HV: I lived in Aix en Provence for

a year and I loved it. It is small like Chico. I got artistic inspiration mostly from going to the museums. I was doing landscapes and I really liked the impressionist artwork like Monet and Cezanne. UL: Are you planning on continuing

your art in New York? HV: Yeah, I’ll definitely try and make paintings and promote myself. It’s kind of scary, but I want to try showing my work there and selling it there. UL: Where is your favorite place to

UL: Where is your favorite place to

photograph? RR: Anywhere in the mountains, away from city life. My biggest passion is landscape photography. Anything that is hard to get to, both physically and technically difficult to shoot. I’ve been on the side of slopes while it’s snowing and it’s 30 degrees trying to get the perfect shot. UL: Do you go on trips just for

Ryan Robertson has a deep love and interest for people. He is beginning his career in law enforcement, a dream he’s had since Jr. High, because he wants to have a positive impact on people’s lives. “If I’m going to spend 30 years doing something, I want people to be affected by it.” To prepare for retirement, he’s studying entrepreneurship at Chico State in the hopes of opening an ice cream shop in his later years so he can “hand out scoops of happiness to people.” And while this Redding-to-Chico migrant makes his way through people’s lives, he provides us with dreamlike images of our natural surroundings with his ability to see beauty and capture it on film.

photography? RR: It’s one of my favorite things to do. I’ve got a couple of friends, pretty outdoorsy people and we’ll go climbing and backpacking to get shots that most people don’t take. I also did a trip to Indonesia and did some photography. We were rebuilding a kindergarten that got knocked down with the tsunamis as a service project and I was the team photographer. I love the energy when I’m taking pictures of people.

Whether it be art, music, sports, some people are just good at talking to others. When I see someone who uses their gifts, that’s pretty inspirational to me. UL: What are 3 words you describe
