Veggie Breakfast Burrito
Ingredients:
1 13.5 inch tortilla

4 oz cheese of your choice
4 oz soy chorizo
6 scrambled eggs
1 oz grilled mushrooms
¼ cup baby spinach
3 oz diced tomatoes
2 oz medium chunky salsa
1 Golden Yukon potato
1 whole avocado
1 dollop sour cream
Directions:
1. Warm tortilla
2. Scramble eggs
3. In a mixing bowl, add all other ingredients, chopped to your liking.
4. Add scrambled eggs, whole avocado, and ingredients from mixing bowl.
5. Pour all ingredients on warm tortilla, add dollop of sour cream, wrap and enjoy.
