After leaving a high profile job in Radio Programming earlier in 2015, Terri has been on a new journey of self. Promoting her brand through motivational speaking, teaching radio at CSB, and writing a new book, 2016 is going to open doors she has never even dreamed of before. Caroline’s Cafe Shkethia Young Many people recognize Key West, Florida for having delectable Key Lime pie , pleasant weather and beautiful beaches . But today I'm going to add one more item to that list... Shrimp Po Boy’s. Sitting snugly on the famous downtown Duval Street is a nationally recognized lunch eatery called Caroline’s Cafe. Caroline's is not only big on flavor but also history. The American eatery is housed in a home built around the early 1800’s. The establishment provides an elevated outdoor seating area perfect for enjoying the sultry scenery of Key West. The restaurant’s outdoor covered seating area is the hanging source for several bright lanterns that illuminate down on the miniature wooden tables. Located in the middle of the crowded patio area is the restaurant’s busy bar setting that provides an array of midday cocktails to celebrate any occasion. Caroline's menu contains many Key West classics such as Conch Fritters and Yellow fin fish . However,

the Shrimp Po Boy is definitely enough to tantalize any seafood lovers’ taste buds. The fresh hearty shrimp are placed on a toasted hoagie and lathered with Caroline's special spicy mayo. The simple but succulent sandwich is garnished with fresh lettuce and tomatoes to assist in accenting the crunchiness of the shrimp. The well seasoned sub is accompanied by a plentiful order of piping hot French fries. The filling meal not only receives high praise for its tastefulness but also its affordable price. Caroline’s Cafe is definitely the place to come and enjoy a flavorsome meal or people watch while celebrating life.!

Chicken and Apple Quiche By CWSpeaks

Working in a local restaurant/deli gave me the opportunity to learn how to make quiche. Ever since then, I’ve played with the main ingredients and came up with my own version that allows you the opportunity to put leftover chicken to use. Whether its white meat or dark, the flavor of chicken combined with crispy sweet apple and cheese is an instant hit at a brunch or light lunch.

Ingredients: 1 Nine inch pie crust ½ cup of cooked chopped chicken ¼ cup of sliced green apples(apples to be peeled and in thin half slices) 1 egg ¾ cup of cream (or half and half) 1 tablespoon of mustard ½ teaspoon of nutmeg ½ teaspoon cayenne pepper ½ teaspoon sugar Preheat oven to 350 degrees. Mix tablespoon of mustard with tablespoon of cream in a small bowl. Brush mixture onto pie crust, place pie crust into oven, baking for 7 minutes. Remove pie crust form oven. In small bowl mix cream, egg, nutmeg, sugar and cayenne pepper.

Place chicken, apples and cheese into pie crust. Pour cream mixture over ingredients in pie crust. Place back into over and let bake for 15-20 minutes, until done. Remove from oven and let sit for 5 min before serving. Enjoy!
