NEW! Join us as we visit a special exhibit in Philadelphia on Egypt’s most illustrious, controversial and mis-represented queen, Cleopatra! So powerful was her threat that Rome re-wrote her story in an attempt to malign her reputation. The last decade has uncovered much new information on Cleopatra and we’ll be on the cutting edge of it! Beginning with a presentation on the bus, we’ll trace the life and times of this illustrious lady and watch as her reputation is smeared and then rehabilitated. Led by award-winning ancient historian, Dr. Ken Ostrand, we’ll also learn of recent efforts to uncover her palace in Alexandria and final resting place. Then it’s into the exhibition at the Franklin Institute! Consisting of more than 250 pieces, including a statue 15 feet in height, the exhibit contains objects more than 2,000 years old, hidden under the sand and seas due to earthquake and tidal waves. They’ll tell us of the efforts to recover the famous queen’s world – a world that saw her reign as Egypt’s last queen and captivate both Julius Caesar and Marc Antony. Afterward there will be time to explore the rest of the Franklin Institute, one of America’s oldest and most powerful science museums! Course fee includes ticket to the exhibit, presentation by Dr. Ostrand, and deluxe coach transportation. You will have time for lunch and dinner on your own.

WWII Photography of WAC Captain Charlotte McGraw
NEW! This class will appreciate, examine and interpret the photographs of Captain Charlotte McGraw, the premier WAC photographer of WWII. Her photos depict a broad spectrum of assignments performed by WACs, including making “V-Mail,” making early mimeographs, operating radios, bulldozer operators, flight dispatchers and as trainers of other WAC contigents in China, the South Pacific and North Africa. Her photographs went well beyond her military assignment, featuring war damage in these areas, captured German aircraft, cemeteries, and many photos of foreign soldiers and non-combatants, street scenes and architecture. This class will be valuable for those interested in women’s studies, WWII history and/or the photographic arts. Culinary Arts Program – CORE Tools of the Trade This three-hour course combines a hands-on knife skills session with an in-depth discussion of food sanitation, kitchen safety and the proper use of different kinds of cooking equipment. It is designed as an introduction to both the culinary arts program and its instructional facility, and is geared toward properly preparing students for participation in future hands-on classes at the Center for Culinary Arts. Culinary Arts Program
The Culinary Arts Program (CAP) is an exciting hands-on series of food preparation classes designed for home cooks with a variety of experience looking to expand their culinary knowledge. CAP students learn skills and cooking techniques from local food experts. We’ll teach you everything from basic kitchen safety to the preparation of a multi-course meal. Plus you’ll have the opportunity to explore a variety of cuisine and food topics including regional specialties, breads, desserts, ethnic cooking and more. If you’re really serious about cooking, enroll in the CAP Certificate. It’s a 42-hour program that includes five core courses, four electives (topics change each semester), and a Certified Executive Chef Review course. Once you have obtained your CAP Certificate, you’ll be eligible to participate in our Advanced Special Series. This special series of classes is designed specifically for students who have completed our CAP Certificate and want to continue to learn and expand their knowledge. Series topics will change each semester so you will always find something new to learn!

The Culinary Certificate takes only In order to receive the certificate, you must attend and successfully complete 42 14 evenings hours of the program. Prior to completing to complete. your final class, Certified Executive Chef
Review, you will be required to fill out the Graduation Application and pay the $75 fee. After completing the C.E.C. Review, you will be eligible to graduate. A CAP Graduation ceremony will be held to honor students. This reception is open to all graduates, and their family and friends. Graduates receive a Culinary Arts Program Certificate, apron and cookbook. The ceremony is held each year in the month of June.

Fish and Shellfish Identification, Prep, Cookery In order to prepare masterpieces using fresh fish and shellfish, you need to know how to identify and purchase them and how to store, handle and clean them prior to cooking. The first night of this two-night core class will focus on the foundations needed to become comfortable working with fish, including how to choose a fishmonger, how to purchase fish and know what kind of quality you are getting, how to break fish down and to ready it for cooking. You will also learn basic cooking methods, such as grilling, sauteing, roasting and braising and develop some classic, simple sauces to compliment your fish dishes. On the second night, you will learn the differences and similarities that exist in the major shellfish categories, discuss the proper way to buy, transport and store them at home and ready them for cooking. You will then prepare some basic recipes that will hightlight the freshness and flavors of the shellfish using methods that will work any time you are preparing these tasty treats. CAP Core. Yeast Breads: Basics of Breadbaking (7 hours) Be introduced to equipment, techniques and methods to bake your own delicious bread. Learn to work with yeast and create doughs from different flours. Herbs and Spices (6 hours) Learn the difference between herbs and spices and their food compatibility. Pre-requisite: Tools of the Trade.
Meat Prep and Cookery (6 hours) This class will focus on understanding the differences between various cuts of meat and poultry and learning interesting and delicious ways to prepare them. We will explore, among other things, proper cooking temperatures, basic butchery, seasoning, searing and sauce making. Pre-requisite: Tools of the Trade.
Stocks and Sauces (6 hours) Learn the principles of making quality stocks and sauces. Students will focus on the five mother sauces. Prerequisite: Tools of the Trade.
Fish and Shellfish Identification, Prep and Cookery (6 hours) Learn to identify, purchase, store, handle and clean fish and shellfish. Explore a variety of cooking methods for seafood, including grilling, sautéing, roasting and braising. Pre-requisite: Tools of the Trade.
Vegetarian Workshop (6 hours) This class is a comprehensive primer of vegetarian cooking. Students will learn about and work with such items as beans, grains, tofu and a wide variety of delicious vegetables. Pre-requisite: Tools of the Trade.

Final Showcase

The Certified Executive Chef Review is your “final exam” before obtaining your certificate. This is your opportunity to apply all of the skills you have learned in your previous classes. Cooking teams will be formed in order to prepare various dishes, which will be sampled and “graded” by the Certified Executive Chef. Pre-requisite: Must have completed all required core and elective courses prior to taking this class. This is the final course in the certificate program.

Culinary Arts Program – BEVERAGES Sauvignon Blanc and Chardonnay In Depth Discover wine...have fun...help kids! Explore the wines of the world with Thom Horsey, wine industry veteran of 30 years. Thom has worked for both Robert Mondavi Winery in Napa Valley and Rodney Strong Wine Estates in Sonoma Valley, and has conducted over 500 wine seminars in his career. In this 3-hour class you will learn the basic body, taste and flavor characteristics of Sauvignon Blanc and Chardonnay. We will discuss and taste the various styles produced in the key wine growing regions and also discuss various aliases and food-pairing tips. A portion of the instructor’s fee is donated to the ARC’s Ladybug Fund, which provides funding to families of children with special needs.

Tea and Chocolate Pairing Tea is a 5,000 year old ancient brew discovered by the Chinese Emperor, Shen Nung. Chocolate was discovered 4,000 years ago by the Maya and Aztec of Mexico and Central America. Both are rich in cultural history. There is also evidence that the antioxidant flavonoids in tea and cocoa are beneficial for cardiovascular health. In Keller’s latest cookbook, Ad Hoc at Home, he celebrates family-style dining with a collection of marvelous recipes meant to be served in large bowls and platters. This is an instructional class for the beginning player, or for a player who is returning to the game. The instructor focuses on developing the basics of the game: forehand, backhand, volley and serve. The class has a relaxed pace and uses a variety of drills to enhance footwork, hand-eye coordination, and muscle memory of shots. Scoring is also covered through practice drills of mini-tennis, using speedballs, and progressing to full-court play. No experience necessary.
This gentler, slower paced practice makes it more accessible to people of all sizes, ages, and fitness levels. The class removes any fears or challenges in doing yoga, while it also assists with stress reduction and weight management. It creates an atmosphere of safety and comfort that fosters self-esteem and body awareness.

Interior Decorating Antiques for Interiors This class will train your eye how to select and decorate with antiques. You will learn how to tell if an item is a true antique. SCUBA: Open Water SCUBA Diver Certification Your underwater adventure begins here! Imagine watching the water level move up your mask as you slowly go below the surface and continue to breathe! It’s the most exciting feeling imaginable! Open Water SCUBA Diver is the entry level scuba certification course, during which you will learn the fundamental knowledge and skills to safely scuba dive in open water. Adult-Youth Beginner Golf Would you like to spend more time with your Junior golfer? Tired of your son or daughter beating you on the course? Mind Your Manners Mind Your Manners is a 5-week program for rising 1st – 5th grade boys and girls. The program focuses on social skills, dining skills and character education. Twelfth Night: Shakespeare Camp for Kids Be a Shakespeare player this summer! Join Richmond Shakespeare’s professional actor-teachers in a summer camp that unlocks the best of the Bard for rising 4th – 7th graders. Camp participants will spend a week rehearsing an abbreviated version of Twelfth Night that will be performed for family and friends at the end of the week. Students will be introduced to basic dramatic skills such as enunciation, focus, cooperation, voice projection and acting. Students will also learn how to understand and speak Shakespeare’s text, with some fun historical and cultural facts about Shakespeare’s England thrown in! NEW for 2010! Join us for Odyssey Adventure, an exciting action-based course for high school students, held on the University of Richmond campus. This fun and unique experience offers the chance to achieve personal goals and build self-esteem. Participants rely on each other as well, learning about teamwork and leadership skills. Utilizing a two-level structure, a variety of challenges are offered for everyone. The class is divided into “pods” of participants who will traverse multiple team challenges anywhere from 20 – 35 ft. in the air! Besides the thrill of climbing in the structure, Odyssey Adventure provides a chance to step out of your comfort-zone, appreciate new people, and realize the awesome power of a high functioning team. This program is facilitated by a staff of highly accomplished professionals who are fun, friendly, and sensitive to the needs of all of our participants. Each is also carefully trained in the management of participants’ health and safety while on our programs. Throughout the course, the staff will conduct short debriefing sessions to help the group look at its strategies and encourage participants to set goals to make each of the next events even more successful. At the end of the day, we will take a few moments to reflect on the experience and transfer the learning from the day back to your real life environment. It will be a day to remember! Imaginative Portraits Create portraits with personality! Learn about the proportions of the human face as well as basic portrait drawing. In the Headlines Have you heard the latest? In this class you will use technology to have instant access to the latest news and information from newspapers around the world. You will collect political, socio-economic, and geographical data in order to compare how different news sources handle current events and to be able to express and support your own opinions about global affairs that affect you now and in the future. Foolproof Writing Need a foolproof formula to great writing? In this class, you will focus on several types of academic writing in preparation for school-year essays, high school and college entrance essays, and SAT writing prompts. Most of the workshop will concentrate on pre-writing and planning, word choice, sentence structure, proofreading, and general writing quality. Bienvenidos! Spanish Language Enrichment Make use of your Spanish speaking skills! You will review and study basic grammar structure and vocabulary in the target language. In addition, you will also practice and improve on your basic conversational skills, as we study various cultural situations and settings. This is a highly useful course for students or potential world travelers eager to utilize and perfect their knowledge of Spanish in a creative and meaningful way. Writers’ Workshop Infuse your poetry and prose with personality! You will take your writing to the next level by polishing and perfecting, using strategies involving word choice, sentence variety, tone, and voice. In order to understand the creative process, you will explicate poetry with special attention to figurative language and form. You will complete a portfolio of your own creations and works in progress, and learn how to appreciate each other’s creations in a congenial, casual atmosphere. Paper Cutting Be on the cutting edge of art! Explore basic paper cutting and collage techniques. During this course, you will learn the history of paper cutting and its place in many cultures. Luz! Cámara! Acción! Speak and practice Spanish in a creative way! During this course, you will study several award winning short films from Spain and various countries in Latin America. Journalistic Writing in the 21st Century In the age of the 24 hour news cycle and the explosion of social networking media, journalism is an ever-evolving medium. This class will focus on journalistic writing in the forum of internet, newspapers, blogging, and social media. The branches of journalism covered will include news, features, opinion, and sports. We will also discuss ethics and responsibilities as the class publishes its own on-line product. (Morning and Afternoon session – Instructor: Matt Cross)
Public Speaking Come and conquer your stage fright! Learn what it takes to become an effective public speaker. Different exercises will help build your confidence levels in front of a crowd. You will practice with material that is already familiar to you so that your focus will be on body language, eye contact, voice, tone, and adjusting to the audience. Children’s Technology Workshop icamp™ Children’s Technology Workshop icamp provides rising 2nd – 8th graders with the chance to author their own day camp experience. Children complete applied-technology adventures that are customized to their skill level. Activities occur both on and off the computer with a focus on engineering and robotics, video game creation, animation, and graphic design. During the first activity at camp, children will select 3 - 6 adventure projects that they will complete during their week-long session. Students can choose from among 10 theme-based adventures: Animation Alive; Expedition Egypt; Fashion Designer; Mission to Mars; Medieval; Architect; Olympics; Team F1 Racing; Rescue; and Gamemaker Guru (grades 4 - 8 only). Our highly trained adventure guides help children to select programs that suit their age, area of interest, and skill level to maximize the fun and thrill of success. Student-teacher ratio is 7 to 1. Students can choose to attend a half-day ($319) or full-day camp ($638). If attending for half-day, students should bring a snack and drink. If attending for the full-day camp, students should bring snacks, drinks and a bag lunch. Students will take fun activity breaks outside, so please send students to camp with sunscreen and appropriate clothing. Full day campers should register for both the morning and afternoon session for the week. Fee: $319 for each half-day (morning or afternoon) or $638 for full day (9 a.m. – 4 p.m.). Speed Reading for Work, School, and Recreation For Adults, College Students, and Entering High School Seniors. Our adult speed reading program may help you read three to four times faster in novels, newspapers, and most business and school materials. In more difficult reading, such as academic and professional journals or college textbooks, you can learn to read two to three times faster. Ballroom Dance Teachers Academy You can have a career you love! Become a Certified Ballroom Dance Teacher! Learn to dance and teach 17 different ballroom and nightclub dances. The Ballroom Dance Teachers Academy is a formal vocational program that offers professional training to aspiring ballroom dance teachers. We will train you to become a dance teacher, prepare you for national certification exams, and teach you how to maximize your career in the ballroom dance world. EKG Technician Certification Program This comprehensive 50 hour certification program prepares students to function as EKG Technicians and to take the ASPTElectrocardiograph (EKG) Technician exam and other National Certification Exams. Medical Billing and Coding Professional Medical Billing and Coding is one of the fastest growing careers in the health care industry today! The need for professionals that understand how to code health care services and procedures for third party insurance reimbursement is growing substantially. Physician practices, hospitals, pharmacies, long-term care facilities, chiropractic practices, physical therapy practices and other health care providers all depend on medical billing and coding for insurance carrier reimbursement. This 70 hour course offers the skill needed to solve insurance billing problems, manually file claims, complete common insurance forms, trace delinquent claims and use generic forms to streamline billing procedures. Master’s of Landscape Architecture Interested in expanding your studies to include a Master’s of Landscape Architecture (MLA)? Thanks to an educational partnership between the University of Richmond and Virginia Tech, UR Landscape Design Professional Certificate graduates have the opportunity to apply to Virginia Tech’s MLA program–in its Washington Alexandria Architecture Center–with one year’s advanced standing. This approach allows interested, capable and motivated individuals to acquire the additional knowledge and skills needed to become a landscape architect. Landscape Design Professional Certificate Curriculum Woody Plants Core This curriculum consists of five courses that can be taken in any sequence. Completion of the Woody Plants Core is one step in the process of receiving the Landscape Design Professional Certificate. Students study approximately 300 plants suitable for the growing environment in the Mid-Atlantic region during various seasons. Field study sessions are scheduled at local gardens and nurseries and are supplemented by lectures on horticulture, nursery and planting standards. Some students choose to complete only the Woody Plants Core curriculum. This option is ideal for landscape professionals and horticulture staff seeking to improve knowledge and proficiency in the industry. An intensive survey course in plant science. You will receive a basic introduction and understanding of plant ecology, nomenclature, physiology, morphology and pathology. Learn the common groups of plants with a general focus on the structure and function of higher vascular plants. Begin to create a vocabulary to describe and critique your designs and the work of other classmates. UNIVERSITY OF RICHMOND ALUMNI University of Richmond alumni with an associates, baccalaureate or advanced degree are entitled to a 25% discount on ONE non-credit course per semester. CLASS LOCATION Most courses are held on the University of Richmond campus, but some are held at local businesses. Exact locations are sent to the participant in a confirmation via e-mail and mail before the course begins.
CANCELLATION AND REFUND POLICY We recognize you may occasionally need to cancel your registration. You will receive a full refund, less a 30% administrative fee, if your request is received at least 7 business days prior to the first class meeting. We regret that we cannot provide a refund if we receive your written cancellation in 6 or fewer business days before the class start date or once a class has started. Payments for all CULINARY ARTS and TRAVEL programs are NOT REFUNDABLE unless written notice is received 7 days in advance of the first class meeting. If this condition is met, a full refund will be issued, less a 30% administrative fee. Due to the financial impact of last minute cancellations, this policy is strictly enforced. Failure to attend a class does not constitute an official withdrawal from a course. We no longer offer “credit vouchers” for unattended courses.

CONTINUING EDUCATION UNITS (CEUs) The continuing education unit is used to recognize participation in non-credit classes, courses, and programs. The University of Richmond assigns CEU credit based on the SACS Commission on Colleges’ document C.E.U.: Guidelines and Criteria. One CEU is awarded for each ten (10) contact hours of instruction in a specified continuing education program or activity. Courses are graded as satisfactory/ unsatisfactory (S/U) or with appropriate letter grades.
