Really Easy Banana & Coconut Munchies Gluten & Dairy free with no added sugar Makes 12 Heat oven to 180ÂşC Prepare muffin tin or use deep paper cases. Put in a food processor or mixing bowl: 170g Dairy Free Spread (use butter of tolerated) l 3 large, Free Range Eggs l 2 bananas, skinned, roughly chopped (approx l 170g banana flesh) - if mixing by hand, squash these in the bowl first l 170g Gluten Free Self Raising Flour (I used Doves) l 100g Desiccated, Unsweetened Coconut l 1 heaped tsp Ground Cinnamon l 1/2 heaped tsp Ground Ginger l 1 heaped tsp Gluten Free Baking Powder l 2-3 tbs Milk or dairy free substitute (I used Coconut milk) l

Optional: 2 tbs dark baking choc chips (add to the batter & mix by hand, after making sure all other ingredients are mixed thoroughly) Mix really well, adding just enough 'milk' to make a dropping batter consistency. Divide between the 12 cases. Bake for 20-25 mins until a skewer comes out clean when inserted into the centre. Turn onto a cooling rack & see how long you can wait to eat one! These will sink a bit after cooling because there is no gluten to 'hold' the rise but they are still yummy.
