Want to see a comedian who doesn’t use President Trump as the butt of a joke? Good luck, because J. Bryant Steele says you’re more likely to fall victim to a great white shark attack in the Etowah. Using a newly coined phrase, Holly Lynch explains the all-important passage to figuring things out. For those who love sports, Jim Alred says there is nothing like winning but the lesson is in the race.

Publisher's Note My son just recently hit the 18-month mark, so he’s one and a half. It seems there are conflicting opinions on how to describe a child under the age of two but both are accurate. So, I suppose I’ve covered my bases. Regardless, he is a walking, almost talking Tasmanian devil wrapped in a package of undeniable cuteness that somehow makes the fact that he leaves a trail of destruction in his wake at every turn somewhat tolerable. My first two children presented their own parenting challenges, but never have I faced a force of nature like my third. He can be snuggling down for a nap or watching "Sesame Street" one second, and then you blink your eyes or check a text message and he’s on top of the book shelf pouring milk on your collector’s Blu-Ray edition of the “Back to the Future” trilogy. Before you judge, we correct these behaviors and he responds, but he is extremely innovative in finding new kinds of mischievous mess making. To say we live in a beautiful state of exhaustion would be an understatement, but this too shall pass…I hope. Our daughter fought going to sleep, sometimes violently. Our first son didn’t sleep, ever. And our new little guy makes our house look like Chris Farley and John Belushi are permanent residents on our couch. Such is our cycle of parenthood and I accept it whole heartedly. We teach our children and our children teach us, and my little mess maker has essentially put me through an OCD boot camp to break my need for cleanliness to relax. Between him, work and our other two children’s extracurricular activities, time to clean is limited. Don’t get me wrong, it still gets done. It just seems to be undone just as fast. As the months of this tornadic progression have worn on, my need for clean is still ever-present, but my will has been broken. For the first time in my life I can occasionally walk into a room bombed with toys, books, blankets and possibly random kitchen tools and find my way to the couch to put my feet up for a moment of Zen. It still bothers me, but I can look past it and for those who share my affliction, that’s a big step. It took an 18 month, year-and-a-half old baby to teach me to cope, but his guerilla tactics worked. I just wrote a column essentially thanking my kid for destroying my house…boy did they work.

Playing the Trump Card Cents & Sensibility with J. Bryant Steele
10 v3 magazine
SARCASM has never been better or more biting than since journalists had to begin to write and speak the words “President Donald Trump.” It’s comedy paradise for late-night TV stars. The ratings for “Saturday Night Live” have surged and its edginess is back. Stephen Colbert has come out of his doldrums on “The Late Show.” John Oliver, Trevor Noah, Samantha Bee, and Seth Myers are all on a roll. And it’s not just about “The Donald”. Attorney General Jeff Sessions, Press Secretary Sean
Spicer, senior advisor Kellyanne Conway, et. al., are walking caricatures. Even Scott Stantis and Michael Ramirez, two reliably Republican, arch-conservative cartoonists, have taken to bemoaning this White House and the current condition of the GOP. Support his agenda or not, Trump is a burlesque show. If he didn’t get his feelings hurt so easily, he would probably take credit for the pundits’ surge in popularity. But the flip side of the economic coin is a question: Have gag writers
for the late-night stars been laid off? Because the Trump parody pretty much writes itself. I don’t know if there’s anything else on YouTube anymore. If comedy writers have to turn to coal mining for work, then job creation is kind of a wash. On a somber note, the back-and-forth among serious commentators is exasperating, so I am taking a wait-and-see position on the outcomes on health care, foreign relations, the environment and the federal budget. But while I wait, I’ll enjoy all the chuckles Trump and Co. are providing. I thought former President George W. Bush was inarticulate, but he stood up quite well when we were all in a state of shock and disbelief after the terror attacks of 9/11. He came across as comforting and in control – as presidential, if you will. But Donald Trump was the first candidate in recorded history who felt compelled to assure voters that his penis is adequate. Also, that he’s smart. I’m reminded of the old axiom, “If you have to brag about it, it’s probably not true.” The most astonishing thing to me remains this: Early in the campaign, Trump made fun of Sen. John McCain for being captured during the Vietnam War. There was a time in America when, if you ridiculed a war hero, you couldn’t get elected mayor, much less president. Only slightly less astonishing were his crude sexual comments about a portion of the female anatomy, which went viral on the internet. Again, once upon a time that would have doomed a campaign at any level. But our society has become fractured, racist, sexist and uncivil, never more so in my lifetime. And I’ve been under the delusion that I had lived in a time of progress. In a conversation about Trump with a few friends, I suddenly recalled this iconic literary line from more than a century ago. “When I use a word, it means just what I choose it to mean—neither more nor less.” A friend replied, “That’s it! You’ve nailed it! Trump’s living in Wonderland.” Actually, that Lewis Carroll quote is from “Through the Looking Glass,” not “Alice’s Adventures in Wonderland.” But my friend’s response was well-taken. Trump’s Wonderland is one of “alternative facts.” And if journalists dare factcheck him, they’re “fake news.” Much has been made of the notion that Trump doesn’t read. But just in case he receives a copy of this issue of V3, here’s more dialogue from Lewis Carroll for him to reflect upon (maybe Ivanka will read it to him): “Why, sometimes I’ve believed as many as six impossible things before breakfast.” “If I had a world of my own, everything would be nonsense. Nothing would be what it is, because everything would be what it isn’t. And
contrary-wise, what is, it wouldn’t be. And what it wouldn’t be, it would. You see?” “Would you tell me, please, which way I ought to go from here?” “That depends a good deal on where you want to get to.” “I don’t much care where--“ “Then it doesn’t matter which way you go.” “Who in the world am I? Ah, that’s the great puzzle.”
BizBits Last month’s weather was costly in these parts. March is supposed to come in like a lion and go out like a lamb. Instead it started out unusually pleasant, then suddenly dipped to sub-freezing temps just before the official first day of spring. Landscapers and home gardeners had to shovel up and toss aside early-blooming plants that died suddenly. More relevant to most of us, perhaps, is that 80 percent or more of blueberry and peach crops died. Strawberries and apples were also hit hard. It’s estimated that overall crop losses in Southern states could exceed $1 billion. As for
you and me, we’re going to have to adjust our grocery lists. If any one person created or defined rock ‘n’ roll it was Chuck Berry, who died last month. He was 90, which is a blunt and fitting rebuttal to the preachers, tele-evangelists, etc., who, back in the day, condemned this new musical style as a fast track to eternal damnation. Unprovoked shark attacks dropped in 2016, after a record-breaking 98 attacks the year before. That’s according to the International Shark Attack File (yes, there is such a thing). There were 53 such unprovoked attacks in America last year, just two in Indonesia, something to consider as you plan your summer vacations. That’s another reason to live amidst rivers rather than on the ocean. When was the last time an unprovoked catfish attacked you? That’s a promotional motto our area chambers of commerce and visitors’ bureaus can put on T-shirts and coffee mugs, and I offer it at no charge. Just doing my part for the local economy. J. Adulting 101
TODAY I SERVED ON A jury for a theft case. Along with 11 other men and women, we found the accused man to be guilty of three charges. I've never served jury duty before, despite my having been a registered voter for the last 24 years. Before going to the courthouse the first morning, I struggled to picture a jury of my peers. I considered the folks I see at the bank, in Walmart or at the doctor’s office, and wondered what kind of people I would see selected. Would they wear pajamas, thinking that was appropriate outerwear? Would everyone wear their Sunday best? Would they all be looking for a good reason to be dismissed? I'm thrilled to report that the whole experience was much more intelligent and thoughtful that I had first expected. Adults were attentive, cell phones were off, and the room was quiet. The irony of the entire experience was just how foolish the crime was in comparison to the seriousness of the trial and our deliberations. The weight of determining a person’s innocence (or, in this case, guilt) was not lost on my group. The jury was comprised of hard working people: a 20-something with spiked hair and two part-time jobs, a techy-techy guy with a great sense of humor but who exuded the most professional appearance and demeanor of any of us, a 70-year old grandmother, and our foreman. He was a salesman who earned the title because he had the dubious distinction of having served on a criminal jury previously. Our group laughed about our pets and hamburgers and silly excuses for getting out of jury duty. But when we deliberated, we were specific and thoughtful. When it was time to walk back
in the courtroom, we were silent and serious. We knew how to have fun, but also how to be adults. All of this past week’s experiences helped round out my thoughts about “adulting.” Adulting is a word our culture has recently invented. We’ve taken a term to indicate age and maturity and turned it into a verb. I believe my generation has coined this term for one reason. We are rapidly approaching (ok, maybe I’m already there) middle age, and we find ourselves slightly shocked at the very adult situations we find ourselves handling. As a child, I remember thinking that when I was a grown up, I wouldn’t do anything I didn’t’ want to. Boy, was I wrong. In the last year, I’ve helped manage my father’s healthcare, my mother-in-law’s move to assisted living, helped a dear friend plan her husband’s funeral, and attended a memorial service for an infant. One of my college student workers needed help to prepare his taxes and I counseled another who is changing majors. I pay bills, clean up messes and get the car serviced. I go to work, practically every day. It sounds like I’m not having a very good run of things. But, the truth is I’ve never been happier in my life. The very adult circumstances I find myself in are tempered by the joy of facing challenges head-on, and using the support system that 42 years of relationships has created. There’s confidence in realizing that I can handle these adult issues while still having fun. I eat the foods I like, have a glass of wine when I want, and laugh with friends and family. Adulting, to me, means I’ve finally gotten my “stuff ” together and, when you really look
Trends & Traditions with Holly Lynch
at it, it’s pretty good stuff. I’ve heard people use the phrase “not my circus, not my monkeys” to distance themselves from the chaos of adult life. While I agree there are times for boundaries, it’s also important to acknowledge the chaos of your life, take ownership for it and find the joy and reward from managing the challenges. So, this fun phrase is more my style: “I don’t have ducks. They are not in a row. I have squirrels and they are at a rave.” Yes, that’s my life – full, chaotic, challenging and a bit scattered. But it’s my adult life, and I wouldn’t trade it for anything. While sitting in a jury room, filled with thoughtful people all debating the chaos of the accused man’s current life, I had the slap in the head realization that this is adulting, putting aside your regular life to determine facts in a sobering case. The difference was so obvious to me – 12 people who had their “stuff ” together, and one man on trial who so sadly didn’t. He is in his mid-thirties. Around his age, I was just starting to accept who I was, what I believed, acknowledge my mistakes, and plan where I wanted to go with my life. I hope he takes advantage of the time he’s serving to figure himself out. I’m not naïve enough to think incarceration is a time of deep reflection, but I can pray for him and hope he figures out his future. Because adulting is rewarding and better than I ever imagined it to be. Go Hard For the Love of the Game with Jim Alred
16 v3 magazine
THE GAME ENDED with a whimper, not a bang. The three short blasts from the officials’ whistle brought the players to a stop and left one side shaking their heads in frustration. For 70 minutes of game time, the squad fought. They controlled the ball, passed well, and defended so hard the other team failed to a record a shot on the goal.
The team played most of the game on the opponent’s side of the field, but as time expired the scored remained knotted at 0-0. The tie felt like a loss to one team. I have no idea what it felt like to the other. Through the disappointment I tried to praise our players for a solid effort. Their faces told me my message probably didn’t sink in. For some reason, I found myself fixating on the game far more than I should. And as I turned the game over in my head, I realized why I refused to let it go. For 44 going on 45 years, I’ve played games, sports and life with simple philosophies. Do your best. Put yourself out there and give every bit of effort that you can. Play to win, so that if you don’t at least you know you gave it your best shot. It’s not all about winning, but how you play. I saw a basketball coach in Florida instruct his players to hold the basketball with a four-point lead and seven minutes left on the clock. The team won. I saw another coach try it in a game, and his team lost. Football fans wail when their team is holding a lead and goes into the prevent defense. For those unfamiliar with it, a prevent defense is employed to keep the other team from making big plays. However it usually allows opposing teams to piece together smaller plays and move down the field. Oftentimes, this strategy turns out bad for the team employing it. Many fans can regale you with tales of the times their favorite teams utilized the prevent defense, and the only thing it prevented was their favorite team winning the game. The night after the game, my family watched Dead Poets Society, a film I had not seen since I was in high school. The message of the film embodied
by the Latin phrase, “Carpe Diem,” encourages us all to seize the day. That night, I thought back to the many, many athletes and people I’ve seen embody the phrase. One of my earliest sports memories is watching the 1980 U.S. Olympic Hockey team upset the Russians at the Lake Placid Olympics. The U.S. team, full of plucky college kids, vanquished the Soviet machine in an epic contest. As the game wound down and the U.S. skated to victory, commentator Al Michaels uttered the famous words, “Do you believe in miracles?” The Russians were favored. The U.S. could have deployed a defensive strategy and hope for a late counter-attack goal. Instead, they played to win the game from the opening puck drop and did. Their strategy and willingness to seize the day delivered one of the greatest upsets in Olympic history. During high school, I ran track. Longer distances remained my specialty, but I competed in the mile as well. My lack of foot speed meant I found myself getting passed by faster runners with more kick at the end of races. My coaches saw my reaction after the same runners managed to beat me to the finish line during the mile during a few track meets. I complained about how it seemed unfair and said I wished those runners would step up to run me in the two mile. My coaches smiled and offered me advice. They unveiled a strategy to help me sap the sprinting power from my opponents before the final lap of the four-lap race. The idea seemed simple on the surface. Keep pace with the kids who had great finishing speed for the first two laps and then take off on the third lap. The idea was to gain as big a lead as possible.
The strategy forced the faster runners to make a decision. Go with me and possibly not have the full force of their kick on the final lap or let me get away and hope to have enough to chase me down at the end. It also forced me to give a lot more energy on the third lap and hope I had enough in the tank to finish strong. If this were a Disney movie, it would end with me vanquishing the faster runners en route to a big win. In reality, the tactic allowed me to beat a couple of them and not beat another. When the season ended all three of the runners told me they hated running against me, because I made them work a lot harder than they wanted. If I had taken it easy and tried to outsprint them, I would have lost every time. I’ve remembered the lesson and employed it throughout my life. When given a choice between the easy, or playing not to lose, and the hard, or playing to win, I err on the side of playing to win each time. It’s meant some losses and some disappointments, but it’s also allowed me to achieve some victories I never thought possible. As I walked off the soccer field on Sunday, I thought about the game and how our players reacted. They all fought hard and did what they could to win. They didn’t go into a shell and play it safe. They didn’t win, but I’m more proud of them for fighting and trying everything they could to win. And maybe that’s why the game stuck with me. Because I hope each of our players learns playing to win can have its pitfalls, but even when you do lose you know you gave it your best effort. *The views expressed in this column are those of the writer, and do not represent the opinions of V3 Magazine.

Atlanta Steeplechase
FASHION
The Atlanta Steeplechase is one of those spring events that is perfect for expressing yourself. Each year, we see the pendulum of fashion swing from the casual comforts associated with Southern style to the exciting new trends hitting the runway in New York. Tank tops and cutoffs are appropriate for some tent parties, while bow ties and wingtips are mandatory for others. Many of The Lodge’s customers prefer to be cool and comfortable in colorful basics. Others look at it as an opportunity to express themselves and their individuality. This where seersucker, linen and silk sport coats come into play. Fedoras and bowties offer the opportunity to make a statement about your personality as well. These are all fun items that make the Atlanta Steeplechase the “cocktail party with horses thrown in” we all look forward to every year.

Country Road, Take Me Home Imagine kicking back in a gorgeous country retreat. Now, imagine that this is the place you call home. text EMORY CHAFFIN photos CAMERON FLASICH

ust 20 minutes from Downtown Rome, you can turn down an unassuming driveway along Floyd Springs Road and find yourself on a beautiful 40acre horse farm. A gravel path greets you and meanders its way through flowerbeds, shrubs and a gorgeous green lawn until you arrive at the door of Robin and Keith Phillips. The Phillips’ moved into the home in November 2006 after a full remodel and added additions, which almost doubled the original footprint of the four-bedroom home from under 2000 square feet to slightly under 4000. The home’s open floor plan flows effortlessly from the living room into the kitchen, dining room and the hall beyond. The kitchen is
immense and well equipped for anyone who appreciates a good meal with friends or family. The expansive property is perfectly suited for country living with a six-stall horse barn, a pole barn, a garden shed and outlying storage building. 20 acres are divided between two fully enclosed pastures and the remaining acreage is comprised of beautiful landscaping, open fields and distant hardwoods. A massive garden of 125 blueberry bushes can be found in the back yard. An herb garden also runs adjacent to the covered deck and open-air stone patio. The stunning masonry monument includes an outdoor fireplace and built-in Green Egg smoker. A wet-weather creek flows past the patio area and small garden shed, making it

the picture perfect place to relax outside and take in the natural beauty of the surroundings. Fitted with living quarters and a full bathroom, the horse barn is fully equipped to handle every equine need. A full-length, spacious hay loft is accessible from either end. The barn also features a large tack room and feed room, and a wash station with hot and cold water. Though only two horses remain for the Phillips, it once played home to twelve, so it is well prepared for any equestrian and all their gear. While the Phillips have thoroughly enjoyed their time on the family-centered estate, they are now ready to pass it along to the next proud owners. What's you? Invasive pests are on the run, because this group of professionals has the tools to remove their presence for good. TEXT Greg Howard

ometimes, you don't realize you have a problem until it bites you. Across the millions of households and businesses in the Unites States, termites, mosquitos, roaches and other things that creep and crawl around unwelcomed can be a real, well, pest. But, not only are they an overall nuisance, they can also cause both costly structural damage for your home and a health risk for you and your

loved ones. Pests are often a forgotten threat until they get out of hand. Some don’t make the news until they stand as a major issue which threatens our community. According to recent study, termites alone cause over $5 billion in property damage to households annually. Surveys show that over 56 percent of Americans report that they have an ant problem in their household, placing them at

We already know that rodents can harbor and spread more than 200 human pathogens. And mosquitoes still stand globally as the most deadly animal towards humans, responsible for up to 800,000 deaths each year due to their transmission of diseases such as West Nile virus, malaria, dengue fever, and yellow fever. That is why men and women like Ryan Streeter, branch manager for the Rome office of Active Pest Control, remain as some of our
true, everyday unsung heroes. Streeter is a family man, happily married with two kids, who has personally worked in the pest control industry for 15 years. Today, he ensures that people across the Northwest Georgia region are safe and pest-free in their homes, and that his Floyd County team is well equipped to meet their needs. Whether he is working in the field or in the office leading his fellow team members at Active Pest Control, Streeter loves what he does for two simple reasons. “I love the pest control industry and wouldn’t do anything different unless I was forced too,” says Streeter. “I love helping people, as well as knowing that every day I will be doing something different. My team and I believe that when we go out to homes or places of business that we are genuinely helping people by solving problems and providing a service they need. Needless to
say, there’s a lot of job satisfaction as a result of that.” It’s a tough job. In fact, there is much more to being successful in the pest control industry than one might realize. Streeter ensures that his team has all been thoroughly trained and tested to learn how to identify any solve any and all pest control problems a home or business owner might have. With just a simple inspection, a pest control technician at Active Pest Control can give a knowledgeable diagnosis as to what problems are affecting a house or place of business, and begin to prepare a way to not only solve the current issue, but prevent it from occurring again. “We see a lot of cases involving ants, spiders, and roaches in the community,” Streeter explains. “Also, due to the high number of crawl space homes that we have in the area, termites

the home and those who inhabit it. This service can be described as the absolute pinnacle of service that Active Pest Control provides, combined with the best termite warranty in the industry. Joseph Willingham, a Floyd County community member and realtor for Keller Williams, can attest to the superior service that Active Pest Control provides. “They have awesome customer service,” explains Willingham. “I can call or text any of the employees at any time and I don't have to worry about whether or not they will show up in a timely manner and be professional. I know that if they say there is a problem that they will fix it. They come to my house once a month for pest control, and every quarter they protect my home against termites. I choose them for my home and my clients because I trust them.”
stand as a major problem. A lot of times, people do not understand the types of problems that we deal with. They can seem like minor issues but can cause major health risks to our clients.” Oftentimes, people who seek to solve the problem themselves can potentially cause more problems for their loved ones than the pests, unintentionally choosing the wrong products in their homes that they have not been trained to use. Whether chemicals need to be used, or a natural solution is present, the technicians are trained to provide a safe removal to the threat caused by unwanted pests. The greatest lesson Streeter, or any of the knowledgeable technicians of Active Pest Control, can teach the local community is the need to prevent a problem with pests before it occurs. Here, the mindset of being reactive instead
of proactive towards the threats of structural damage and health risks that pests can bring, will only cause much greater costs for the individual in the long run. Why wait until it is too late to prevent a potential costly problem? This is why Active Pest Control team has created what they call a customer VIP Plan that serves as an active and ongoing solution for protecting against any threat of pests now, and in the future. The plan starts off with an initial inspection and treatment for any current pest removal needs including termites. Then, for a small monthly fee, Active Pest Control provides monthly inspections and treatments that will guarantee protection from mosquitos, german roaches, bed bugs, stinging pests, fleas, ticks, carpenter ants and bees, spiders, rodents and any other pest that could threaten the well-being of
So, whether you currently have a pest control problem that needs immediate attention, or whether you are making the smart choice to protect your home and loved ones from the threat of potential pest problems that you may never see coming, Active Pest Control would love help. To schedule an inspection call 770-954-9941 or visit the office in Rome at 510 West 12th Street. pring is in the air, and with the warmer weather comes the urge to get out of the house for a night on the town. Nothing gets the evening going like pulling up to the table at a fantastic place to enjoy a meal. With our options seemingly growing with every month that passes, those eateries that leave a lasting impression on us are often first on the list. Visiting a neighborhood staple is always a hit, but with the budding trees and the scent of blooming flowers comes the willingness for adventure and new experiences. Not even a half hour outside of Rome, in the heart of Downtown Rockmart, is a destination restaurant that will have folks racing back for more. A family with roots in Northwest Georgia has chosen this charming little town to give back to the place and the people who have be so instrumental in their lives. The restaurant industry is just one of many businesses Andrew Heaner has started locally, and his pursuit of excellence in all things opens the doors for working families to realize their dreams as well. At first glance, you’d think that Knucklehead Café (217 West Elm St., Rockmart) was lifted from a popular vacay destination and dropped minutes from your front door. Starting as a vision in the minds of Andrew and Mary Helen Heaner, Knucklehead Café is now a reality after opening their doors two years ago. And with a name like Knucklehead, this highend establishment instantly wets the inquisitive chops of passersby.
42 v3 magazine
A Knucklehead is the name given to a specific 1947 model of vintage Harley Davidson motorcycle. Andrew Heaner collects all kinds of motorcycles and he felt that the new restaurant would be the perfect place to display some of the history found in his collection. The décor of the restaurant stands as a museum of motorcycles, and because of the attention the Knucklehead crew pays to the food, they get visitors from all walks of life through the doors. A great majority of their patrons are families and foodies who want to enjoy high-quality cuisine. As you enter the front doors, you are greeted by a welcoming smile from one of Knucklehead’s 20-plus staff members. The eye is then drawn to a display of custom choppers fabricated by Mark Martin who is also responsible for the detailed ironwork scattered throughout the dining rooms, and on the outside of the building. Eric Tant, director of food services, points out a couple

Both Tant and David Heaner talk about the collection as if giving a tour of a gallery, each piece having its own story to tell. With exposed wood and stonework touches, the space feels more like a resort than a place to enjoy a meal. From the distressed hardwoods in
the bar, to one of the original Pabst Blue Ribbon bars that served guests years ago, every inch of Knucklehead Café has been crafted with purpose. However, the thing that keeps the tables full and the kitchen busy is the food. “We love the collection of bikes, but what we really strive to provide is great food, great service and cleanliness,” Heaner says as he walks towards the state-of-the-art kitchen. “Everything we make is fresh and we use the best ingredients available. We have even developed and packaged our own brand of gourmet seasonings, meat rubs and sauces under our Runnin’ Wild brand, because we are serious about the food that comes from our kitchen. For example, we have developed a buffalo seasoning that tastes exactly like the wet sauce you will find on chicken wings. We have a dish that is unique to our establishment called buffalo fries. We sprinkle the fries with our seasoning so that they are not soggy. People are really surprised at how much they taste like buffalo sauce.”

The menu does not stop at burgers and fries. Chris Peek, executive chef at Knucklehead Café, is putting his special touches on everything from salmon and asparagus, to Certified Angus Beef ribeyes. A full soup and salad bar are also available for hungry guests. Even the mac and cheese has been given the royal treatment, because no plate leaves the window without the attention to detail that the Knucklehead staff requires. And if you are a fan of slow-roasted meats that fall off the bone, you are in luck. Knucklehead as sought out the best methods for smoking meat that pairs perfectly with their seasoning line. “This is a smoker that was designed by Myron Mixon, who is an award-winning grill master,” Tant explains as he lifts the lid on the mammoth-sized outdoor oven. “As you can see, we smoke all of our own meats. From the ribs and beef briskets, to the hams we use for our pulled pork dishes, we do it all right here. Most people use Boston Butts for pulled pork, but we have found that hams give us the flavor profile that suits the quality of pork we want to provide. We 44 v3 magazine
have been told that our ribs, smoked with our Runnin’ Wild Pork Candy rub, are outstanding. They really are some of the best ribs I have ever eaten.” The wings at Knucklehead also get the kiss from hickory smoke before they are finished in the deep fryer for a crispy crust. “I really love the crunch of a wing when I take the first bite,” says Tant. “That’s why we will take the extra step of frying the wings, so that our customers can still enjoy the smoky flavor and the texture they have become accustomed to. And we have a wide variety of wing sauces that we can toss them with. Personally, I really like to mix the buffalo sauce with our lemon pepper seasoning. If you prefer the traditional preparation of wings, we can accommodate customers as well. The option is available for wings to come to your table hot and crispy from the fryer, without the smoke flavor added. The flavor is great and I haven’t seen many restaurants experiment with recipes like we do here.” Signature seafood dishes, like the shrimp served with a smoked tomato aioli, and penne Alfredo all leave the kitchen with perfection in
mind. Some diners even choose a bold addition to pasta by adding Knucklehead’s house-made smoked beef sausage. If meat is not for you, then several vegetarian options are available for order. The wait staff is knowledgeable and helpful as they guide tables through the many choices they have on the menu. Robin Haney, general manager of Knucklehead Café, visits every table to ask about their meal. Her engaging personality gives diners a sense of eating at a close friend’s home, as she works to ensure all guests are happy and full of tasty food. Again, Andrew Heaner’s emphasis on providing high-quality businesses has inspired team members who really take pride in the service they provide. “Eric, Chris and Robin are wonderful and we couldn’t do this without our team,” David Heaner smiles. “We are really happy with what they have accomplished.” Hopefully, everyone saves room for dessert. Knucklehead crafts a signature pie that changes each month. In March, the chocolate mint option was served to families who savored the sweet delight until the last crumb was gone. In April, the pie will change. One can’t help but be curious as to what Peter Cottontail will leave at Knucklehead’s doorstep in celebration of spring. After the meal, don’t forget to stop by a corner of the restaurant reserved for guests who want to take something home. Runnin’ Wild seasonings, meat rubs and sauces are sold along with Steak n’ a Bag, which is the Heaner’s brand of beef jerky. Flavors like Habanero Chipotle and Honey Glazed Pepper add a bold twist to jerky that eats more like a steak than the leathery textured variety most are accustomed to. Locally sourced honey, pickled veggies and hoop cheese are also there and waiting for a cupboard near you. As ladies who are members of the local Red Hat Society prepare for dinner and teenagers from Rockmart High School pile in the doors for a weekly radio sports show that is broadcast live from Knucklehead’s dining room floor, every face wears a smile. Mark Garrett, a regular at Knucklehead, tells us what it has meant to his hometown to have a restaurant this special be a gathering place. “You just can’t get food like this often. The burger with Gouda cheese is so great. Everything I’ve eaten here has been delicious,” Garrett says. “I am a lifelong resident of Rockmart and I remember when this building was a Chevrolet dealership. To see what they have done with this space is truly amazing. When I walked through the doors I thought to myself, there is nothing like this anywhere else! We are fortunate to have Knucklehead here.” Visit Knucklehead Café online at knuckleheadcafe.com or call ahead to book large parties at 770-684-6511.
