• Remember the old advertising phrase, “There’s always room for Jell-O”? How about a gelatin mold made with meat stock? Add cold pork, chicken, hard-boiled eggs and some vegetables, and you’ll end up with a concoction known as aspic. Although some cooks add unflavored gelatin to the mix for a firmer mold, traditional aspic uses the coagulated broth remaining after boiling an animal’s head, bones and feet.

• The family’s pleasant Southern lifestyle changed forever when Helen, only 19 months old, contracted a mysterious illness that her doctors called “brain fever.” Her illness is thought today to have been scarlet fever or meningitis. Although fairly short-lived, the illness left her both blind and deaf. Keller’s parents thought she had recovered until they noticed there was no response from the toddler when the dinner bell was rung or when they dangled objects in front oftheir daughter’s face.

Most of us eat cheese several times a week but might not know what we’re really eating. This week, Tidbits brings you some facts about the process and a few different poular types. • Altlhough the exact origin of cheese is not actually known, a story handed down by some food historians credits the discovery to an Arab nomad more than 5,000 years ago. It is said that he poured milk into the stomach of a freshly killed sheep or goat to use as a canteen to take along on his journey. The sun warmed the milk, allowing the bacterial process to do its work. When the nomad later stopped for a drink, he found the churned up milk had solidified into what we know today as cheese. After tasting the substance and liking it, he shared his discovery with others, who in turn copied his method. Ad TheProof: rest, as they say, is history.

sheep or goats, although the milk of yaks, horses, buffalo, camels and even reindeer can be used. One type of Mozzarella cheese comes from the milk of a water buffalo.
• What exactly was Little Miss Muffet eating as she sat on her tuffet? During the cheese-making process, the milk is separated into solid curds and the liquid whey by adding an acid (such as vinegar) or a starter bacteria to sour the milk, followed by heating. Curds are really a raw or unprocessed cheese, such as cottage cheese.
• A very rare cheese comes from a Swedish farm that raises moose, but don’t expect to sample any morsels with your mouth unless you’re ready to pay through the nose. The lactation period of a moose lasts only a few months, so the farm is able to produce only 660 pounds of “Moose House” cheese per year, and it sells for about $32 per ounce, or $500 per pound!

• Have you ever wondered what makes those holes in Swiss cheese? They are caused by bubbles of carbon dioxide gas produced by bacteria that is introduced to the cheese mixture. The CO2 builds up at weak points in the curd, forming the bubbles that harden into what we see as holes when it is sliced.

Can you tell me when my favorite show, “The Biggest Loser,” will be back for its next season? I can’t wait for it to start! -- Edie T., via e-mail
A:
The weight-loss competition/reality show will be back for its 12th season on NBC beginning Tuesday, Sept. 20 (8 p.m. to 10 p.m. ET). This season sees “The Biggest Loser” with two new trainers: tennis star Anna Kournikova (who replaces Jillian Michaels) and celebrity trainer Anna Kournikova Dolvett Quince. Trainer Bob Harper and host Alison Sweeney will return, and they will be joined by 15 contestants competing in a “Battle of the Ages,” which groups contestants by age. There will be three teams of five divided by age: the youngest players, all under 30; the middle players, ages 30 to 49; and the older players, ages 50 and above.

The fifth season also was a who’s who of guest stars, including Marcia Cross, Kal Penn, Regis Philben, Raquel Welch, Dakota Fanning, Jason Priestley, Rosie O’Donnell, Seth Meyers, Scott Wolf and Alyssa Milano. Season five is finally available on DVD, and can be found online and wherever your favorite DVDs are sold. ***

Q:
This spring I really got into Christian Slater’s new show called “Breaking In.” I was so sad when it was canceled by Fox. Now I am hearing it might not be canceled. Is that true? -- Dylan F., via e-mail
A:
In an almost-unprecedented reversal, Fox decided to uncancel the caper comedy that centered on a team that is hired by companies to break into their own security systems in order to find flaws and weak links. Back in May, all signs pointed to “Breaking In” coming back for the fall, but when the fall schedule was announced a short time later, the show was nowhere to be seen. After much behindthe-scenes negotiation, Fox announced in August that the show would be back for 13 episodes to begin airing midseason 2012. ***

Everyday CHEAPSKATE
Dear Jill: I’m afraid that isn’t possible. The CRAs (credit reporting agencies) will not accept payment history from someone other than what they consider a “qualified creditor.” There is a good reason for this. If every private party who was also a creditor tried to report info to the CRAs, they would be swamped with information and would have a difficult time determining what is valid and what is bogus -- i.e., people trying to boost credit scores with fraudulent information. But don’t be discouraged. The way you handle your credit card and the way you pay all of your other bills should be sufficient to build a decent credit score. * * * DEAR MARY: I have a pink summer suit

Rowdy for Rawhide Rowdy is a wonderful, loving and friendly dog … 99 percent of the time. When we try to take his rawhide from him, he growls and lunges and tries to bite if reprimanded. And when we put him in his crate for a timeout, he growls and darts into a corner. When we calmly try to get him out of the corner to go to the crate, he growls and barks and bares his teeth and will lunge at us before running into his crate. Once in his crate, if we look at him or talk to him, he bares his teeth, barks, growls, snaps, lunges and snarls. We have never hit him or punished him in any way other than time out in his crate. My boyfriend and I are now scared of Rowdy and don’t know what to do. We have a puppy and don’t want her to model his behavior. What should we do? I am truly afraid he will bite us. He only acts like this with the rawhide and timeouts -- no other times. The rest of the time he’s his sweet loving self.
You know, Einstein said the definition of insanity is doing the same thing again and again and expecting different results. First on the to-do list: Rid your house of those rawhides! lifelong health Dr. David Lipschitz
Fat and Fitness Can Coexist With Right Habits In many states, the percentage of adults classified as obese is over 30 percent of the population and rising. These people have a body mass index (BMI) above 30, which is calculated by dividing weight in pounds by the squared height in inches and multiplying the result by 703. Numerous charts are available that make it possible for anyone to determine if he or she falls within the obese category; if that person is overweight but not obese (BMI of more than 25 and less than 30); or at the ideal weight (BMI between 19 and 24). Studies estimate that 50 percent of the American population is either overweight or obese. Referred to as the No. 1 health threat facing us, obesity increases the risk of heart attack, stroke, high blood pressure, diabetes, many cancers and severe osteoarthritis that can lead to disability due to back and joint pain. Now comes some good news about obesity. A recent report published in the journal Applied Physiology, Nutrition and Metabolism used a tool called the Edmonton Obesity Staging System, EOSS, that grades obesity on whether the person has significant diseases such as heart disease or cancer. The EOSS grades on a range from 0 to 4, with those having grades of 2-3 having moderated coexisting conditions and between 0 and 1 as being healthy. The study followed 6,000 obese Americans from 1987 to 2001 and compared their risk of dying to 20,000 people who were in the ideal weight range. Obese people who had grades of 2 or 3 were 1.6 times more likely to die from any cause. However, those with grades 0 and 1 with no significant health problems were no more likely to die than normal-weight people. In fact, their risk of

Six-year-old Melissa was asked to give thanks at Sunday dinner and proceeded to thank God for each family member at the table. She then began to give thanks for the food, naming each and every item as her family patiently waited. After a long silence, she leaned to her mother and whispered, “If I thank God for the Brussels sprouts, won’t he know that I’m lying?”

YOUR
SOCIAL SECURITY by Tom Margeneau
Quick-and-Dirty Social Security As my longtime readers know, I usually answer only one or two questions in each column. That’s because most Social Security rules are so complicated, and I try to cover as many “ifs, ands or buts” as possible in my answers. That inevitably limits the number of topics I can handle in any one column. But today, I’m going to give quick-and-dirty answers to as many questions as possible.
Q:
My husband is 72. I’m turning 62. Can I take benefits as a wife on his record now and switch to my own full Social Security at age 66?
A:
No. If you take reduced Social Security benefits on any record, that reduction carries over to any other benefits you might be due. (FYI: that rule does not apply to widows.) So at 62, you will probably just get reduced benefits on your own Social Security account. However, if you wait until age 66, then you can take benefits as a dependent wife on your husband’s record and later, at age 70, switch to full benefits on your own -- benefits that would come with an extra 32 percent delayed retirement bonus.
Q:
In a prior column, you wrote that only people who have worked and paid taxes into Social Security can get benefits. But my mother is getting Social Security widow’s benefits, and she never worked a day in her life! Please explain.
A:
In that prior column, I should have written: You get Social Security benefits only if you have worked and paid taxes into the system, or if you are the dependent spouse or child of someone who has.
Tidbits of Coachella Valley
they said I don’t qualify for SSI, because my income is too high. What’s going on?
A:
The woman who asked me about her eligibility for Supplemental Security Income lives in a different state than you do. SSI is a welfare program, and the eligibility rules vary from one state to another. You live in a cheap state with very low incomeeligibility rules. The other woman simply lives in a more generous state. I guess you could either move or try to talk your very conservative governor and state legislators to pony up more money for folks like you. Good luck with that one!

Or you could get widow’s benefits from your second husband. Or you could get your own Social Security. Of those three options, you would be paid from the record that gives you the highest rate.

Q:
I’m getting widow’s benefits from Social Security. I’m 71 years old. I’ve been seeing a man for a couple of years, and he wants to get married. I told him no, because I would lose my Social Security. Was this the right answer?
A:
I have no idea if “yes” or “no” was the right answer to his marriage proposal. But I can tell you that the “no” you gave him was based on incorrect information. You will not lose your Social Security widow’s benefits if you remarry. A woman who remarries after age 60 can keep her widow’s benefits from her first husband, even though she’s married to another man.

10 years. Is this true?
A:
No, it’s not true. The 10-year-durationof-marriage rule applies only to divorced women. A woman who is divorced must have been married to her ex-husband for at least 10 years to claim any kind of benefits on his Social Security record. But because you are currently married to your husband, that 10-year rule doesn’t apply. There is a one-yearduration-of-marriage rule, but you’re already seven years beyond that, so you’re OK.
Q:
I plan to retire at age 58. I know I can’t take my Social Security until I’m 62. My current annual statement that I get from Social Some things just Security says my age-62are benefit will be about $1,500 per month. Can I to count on getting that too good change... four years from now?

The pewter dish in this photo belonged to my mother. It is 5 inches in diameter and 1 3/4 inches deep. Marked on the bottom are the letters “web” and the number “1176.” I would never part with it, but would like to know what was it used for, who made it and if it has any value.
A:
You have a porringer. Porringers were used in Colonial times to serve porridge. Those made by Paul Revere are very famous and desirable. Web Silver Co., located in Philadelphia, Pa., made yours. They were founded around 1950 and are still in business. Web made both pewter and sterling objects. The number “1176” is a design number. Your porringer was made in the mid 20th century and would probably be worth $25 to $50.

Their Casu Marzu starts with a sheep’s milk Pecorino cheese, but with one variable. Whole cheeses are left outdoors on the ground so that the Piophila casei, or “cheese fly”, can lay its eggs inside the cheese, as many as 500 eggs at a time. Once the eggs hatch, the larvae literally eat their way through the cheese. Their acidic digestive juices break down the cheese’s fats, resulting in a very soft texture. When the Casu Marzu cheese is ready for the market, there are usually thousands of little white worms still wiggling inside. It’s up to the individual diner whether to scoop out the tiny maggots before eating. • The Scottish regularly cook up a dish called haggis, which is basically all the guts taken from a single sheep. They stuff the stomach with a mixture of the liver, heart, lungs, rolled oats and a variety of spices all boiled in a pot. Some fast-food restaurants in Scotland even have this item on their menu, served deep-fat fried or as a burger on a bun. For those who don’t care to indulge in eating the concoction, there are contests for “haggis hurling,” a sport that actually has a place in the Guinness Book of World Records. The current record-holder threw a 1.5-pound batch of the intestinal bundle a distance of 180 feet, 10 inches.

PHOBIAS (continued): • Some phobias relate to what’s up above, such as the sun (heliophobia), the clouds (nephophobia), the moon (selenophobia), and the stars (siderophobia). Some folks are just afraid of looking up – they are called anablephobes. • Not all phobias seem that abnormal or uncommon. Lots of people might have a fear of death, known as necrophobia. But those with an extreme form might be terrified of being buried alive. A nosocomephobe has a fear of hospitals, a verminophobe is afraid of germs, and a hydrophobe has an irrational fear of water. • Individuals suffering from extreme agoraphobia rarely leave their homes, due to their fear of public or open spaces and the inescapable situations that may occur there. Only home is safe. • Some phobias can be a learned behavior that comes from listening to others describe a production traumatic event. An individual in one’s life can HRS: MIN: trigger a phobia, such as peladophobia, the fear stamp of bald people.
