What makes the Commodore a fan favourite? You see not only some of the biggest acts on the way up, but you also see some great bands on the way down. They prefer to play that venerable stage over a casino or seated theatre. The room has an energy known world-over. The sight lines are great, the sound is great.
What did your book research reveal that intrigued you the most? Just about anybody who’s anybody has played there. I like the weird anecdotes, too, such as when a team of safecrackers broke in in the middle of the night, blew the safe and stole
$650 — that was a lot of money in 1941. To the best of my knowledge, it wasn’t solved. Please ask your grandparents about this — if they seem shifty, or change the subject quickly, I’d like to talk to them.
If you could go back in time, which era of the Commodore would you visit? It would have been wonderful to be there when it first opened in the ’30s, hear the Big Band music and watch the DrySquad cops racing up the stairs to see if they could catch anybody drinking booze when it was an unlicensed “bottle club.” But to be honest, I’d love to have seen concerts in the 1980s, just before I was of legal age to get in. All my
friends certainly did with fake ID — I must have been the only honest 17-year-old in town.
What’s the one concert you wish you’d seen? The Ramones in August 1977. Punk rock was just breaking, and to read the reviews of the show at the time, the owners, the bartenders, staff and probably a lot of the audience just seem wholly unprepared for them. Some loved it. Plenty hated it. But you could see a changing of the guard that night. The wind changed direction, and things weren’t going to be the same. Behind the slick marketing and minimalist aesthetic are some very well-made and thoughtfully crafted beers. The majority of 33’s beers are session strength, which is great, because I have work to do and I can’t afford to be hungover (a serious workplace hazard in this line of work).
Balance. Brewmaster Dave Varga has been around a long time and he knows the most important characteristic (and often the most elusive) of sessionable beers is balance. No single element is ever allowed to overpower a 33 beer; they all work in harmony with each other, complementing or contrasting as needed.
33 Acres of Darkness is a fine example of a German schwarzbier. Roasty chocolate and coffee flavours are right up front, but the hop bitterness keeps the sweet maltiness in check, finishing crisp and dry and never overstaying its welcome.

Vancouverites love their farmers markets and in this edition of Stars of Vancouver they made their favourites known by voting for Trout Lake, Kits and Nat Bailey as their favourite locations to grab fresh baguettes, corn on the cob, grass-fed beef and, now, even craft wine and liquor. Chef Keev Mah, formerly of Sai Woo, is also a big fan
of this city’s farmers markets. Chef Mah shared a few thoughts about them with Stars.
Why are you a fan of farmers markets? I absolutely love the farmers markets and being able to directly connect with the farmers who grow the food we eat. It’s a blessing to have a
dialogue and connection with people who handle and grow the food we eat. While some can consider food merely for sustenance, as a society we have let corporations control and decide what we eat. The corporations don’t have our best interest in mind. Just talking to and tasting the produce of the farmers is sooo worth it. It’s also a great way to spend a couple of hours outside.
Are we blessed in Vancouver that we have access to such great produce? Or is it standard everywhere you’ve lived?
for survival. There is less emphasis about quality and the future.
We are indeed blessed in Vancouver to have seasonal variety in our produce, while having adequate sunshine yearly. We’re also blessed to have farmers who are diligent and knowledgeable in pursuing this as a career. It’s a lot of hard work with challenges such as finding temporary labour when needed on short notice. It’s great to see so many cities in the world having access to farmers markets, access to farms that practice agricultural biodiversity and access to better tasting food with less carbon footprint.
It’s very inspiring especially when you taste the fruits and vegetables cultivated with love and passion. For example, take a beautiful heirloom tomato, blanch it lightly, remove the skin. Then I steep (low simmer) the tomato in a well-flavored dashi or mushroom tom yum broth for hours. You end up with a beautiful, warm, umamifilled tomato. While great on its own with a little broth, it’s also a great start to get inspired to create a beautiful dish with this warm umamifilled heirloom tomato.
I think Vancouver is fortunate to have a culture of dedicated professionals (farmers, vendors, researchers, chefs etc.) who are committed to growing great products (not limited to farms) with consideration of sustainability and future generations. This is a blessing. In many regions of the world, this is not the case. Food is often looked at as a commodity and/or sustenance
Do these wonderful fruits and vegetables inspire you?
When working with farmers at the restaurant, often they will have crops that are deemed best suited for “chef” use because there isn’t a demand or perceived market to the public for this crop. Also, more restaurants are keenly utilizing foraged items on their menu. Almost without fail every year, there will be something new in the market. It’s very exciting and inspiring.

How do Stong’s markets become The chain has expanded such a part of each since then. Can you tell community they’re in? Stong’s has always believed in building us about your newest and maintaining relationships, whether locations and when it be with our suppliers, our staff or they opened? our customers. You can literally buy food anywhere — from the nearby dollar store, gas stations, farmers markets and, of course, grocery stores. But when you find a store that not only sells high quality goods, but is also invested in its community, it encourages loyalty in shoppers, which brings us to Stong’s Markets. Stong’s took first place in the Stars of Vancouver’s grocery store category for good reason.
Stars had some questions for Cori Bonina about the success of her family’s chain of stores.
When did the first Stong’s Market open? My great grandfather Carson Stong opened the first Stong’s Market in the early 1890’s in Toronto with his brother Joe. With the onset of the Depression in 1931, Carson moved to Vancouver and set up two of the first open-air markets in the downtown core and, in 1955, his
We returned to the North Shore in May 2016. The store is located at 2150 Dollarton Highway. As of December 2016, we reopened our Dunbar location at 27th and Dunbar. Both now offer relaxing cafes, great new freshly prepared food programs and an overall expansion in all departments.
Do you purchase local produce and fruit? Yes, local products have always been an important part of our core offering and we’re working on expanding our local produce even more this year. We’ve been reaching out to a lot of local farmers, so you’ll start seeing a lot more in both locations.
Why is that important? We believe that supporting the local community is a big part of our success and that goes all the way back to the beginning.
up right alongside us and it’s now spanned generations. We get mothers and fathers who bring their kids to ride Champion (our coin-operated horse) because they rode him when they were little. We have been on Dunbar since 1955 and have always been an integral part of the community. We sponsor schools, sports teams and notfor-profit organizations. When looking to open the second location, it was important to choose a community we already had a close connection with. We used to have three stores on the North Shore and we have always wanted to come back. I’ve personally lived on the North Shore for the past 23 years and my two kids, Karen and Carson, both grew up here. Carson, named for our founder, continues the family tradition as the fifth generation of Stong’s and is currently the store manager at our Northwood location.
