letter from the Welcome to Holidays in the City Why is it that the weeks leading up to Christmas seem to fly by at warp speed? One minute it’s Thanksgiving and the next we’re counting down the Fridays until Christmas with Facebook memes featuring Will Ferrell as Elf. (By the way, Best. Christmas. Movie. Ever.) And with so much going on — the shopping, wrapping, baking, parties, kids’ concerts and events, church, the entertaining, visiting with family and friends, not to mention everyday life including work, laundry, meals, etc. — it’s easy to forget the holidays are supposed to be about spending happy times with loved ones. (OMG, I’m starting to have an anxiety attack just thinking about everything I still have to do.) And even if you don’t celebrate Christmas, it’s almost impossible to survive the month of December without getting drawn into some kind of holiday festivities.

Our goal with Holidays in the City is to try and take out some of the guess work around the holidays and, it's hoped, ease your stress, even if it’s just simple instructions on how to best cook a turkey. We’ve also offered tips on how to entertain on a budget, keep the vegans in your life happy, recipes for cocktails, mocktails and low-calorie drinks, and ideas for what to do and where to go. And when it comes to holiday movies, we have some suggestions for you. Did I mention Elf? We’ve also found some really fun advent calendars. You're going to want to check them out. For the sake of full disclosure Elf is my favourite Christmas movie, which is why it ranks number one on this list. But if you were to ask my eightyear-old grandson, Home Alone is hands-down the best. The point is to take some time out of your busy schedule, make some popcorn and settle in for a night of fun.

Elf (2003) "The best way to spread Christmas cheer, is singing loud for all to hear." I still get tearyeyed at the end of this movie, when a crowd of jaded New Yorkers comes together to save Santa from the Central Park Rangers. Wideeyed Buddy the Elf, played by Will Ferrell, finally realizes he’s actually human so leaves the North Pole in search of his father who does not share his enthusiasm for life or the holidays. Buddy also eats his spaghetti covered in syrup. What could be better? Rated PG. 6

Home Alone (1990) When a bratty eight-year-old boy, played by Macaulay Culkin, acts out the night before a family trip to Paris, his mother (Catherine O'Hara) makes him sleep in the attic, which is how he accidentally gets left behind when his family flies off to Paris for the holidays. But big trouble interrupts his time alone in the shape of some bumbling burglars. Rated PG

It’s a Wonderful Life (1946) Frank Capra’s classic tale stars Jimmy Stewart as George Bailey, a man with a big heart who makes personal sacrifices for the well-being of his small town. He also helps a second-class angel named Clarence earn his wings. What’s not to love? Rated PG A Christmas Story (1983) “I want an official Red Ryder, carbine action, two-hundred shot range model air rifle!” Nine-year-old Ralphie goes to great lengths to convince his parents he not only wants, but also desperately needs, an official Red Ryder BB gun. And who can forget the leg lamp? Set in the 1940s, this movie is a hilarious throw-back to simpler times. Rated PG How the Grinch Stole Christmas (1966) Based on the Dr. Suess book of the same name, it follows the story of a small-hearted villain determined to ruin the holidays by stealing gifts and decorations from the homes of Whoville on Christmas Eve, only to discover it can’t be done. Rated PG.

Two Rivers Meats butcher shares his thoughts on baking a bird — or not Sandra Thomas | sthomas@vancourier.com

Pasqual Stufano, head butcher at North Vancouverbased Two Rivers Meats, offers his advice on everything from what to look for in the perfect turkey to his thoughts on tofurky (just don’t). What should people look for when buying a turkey? The first feature I look at is where the bird actually came from. Looking into what farm it’s from and how the animals are treated makes a difference not only to the life of the bird, but also the flavour and texture. Size is another important feature to look at. You want about 1.25 lb per person but it’s always best to leave a side of leftovers. People tend to have their game face on at turkey time and the leftover meat makes for some amazing sandwiches and soup bases the next day.

101 and sage. Fresh rosemary and oregano works great too and I’m not opposed to rubbing some Spanish paprika on the bird. Baste with butter? Yes. All the butter. Butter under the skin, butter over the skin, butter inside and out. Butter, butter, butter. Stuffing inside the bird or not? My dad would hate this if he heard it, he’s a chef, but I never understood stuffing in the bird. By the time the stuffing is safe to eat, you have a dry turkey breast. I like to bake the stuffing on the side, but that’s just my opinion. What about brining a turkey? Brining definitely helps keep the bird moist and gets that salty seasoning all through it.

What’s the rule of thumb when cooking a turkey? How long? What temperature? Cooking it low and slow is key. It’s better to use a meat thermometer than to rely on a timer because the size of the bird and type of oven can make a huge difference. I keep the temperature 220-275-F until the internal temperature of the bird reaches 165-F.

If someone doesn’t want to cook a turkey, what are the most popular proteins used as an alternative? I love ham for holiday feasts — green ham, smoked ham, bone-in or boneless. All the ham! If someone doesn’t want to cook a turkey because of the bird size, it’s easy to tweak your traditional turkey dish. For example my family and I made confit turkey legs for this past Thanksgiving. Another great option is braised turkey legs because they’re flavourful, moist and a more manageable size for a smaller party or more varied menu.

No Vegan and gluten-free holiday recipes from Well Seasoned Gourmet Food Store

Since Chef Angie Quaale opened Well Seasoned Gourmet Food Store in Langley in 2004, the shop has become popular for its vast selection of not just baking and cooking staples, but also its unusual and local ingredients.

Spiced Whole Roasted Cauliflower (appetizer) Ingredients 1 tbsp. Monsoon Coast Ras el Hanout (North African spice blend) ½ tsp kosher salt ¼ cup extra virgin olive oil 1 medium head cauliflower, leaves trimmed and bottom cut flat ¼ cup tahini 1 tsp. finely grated lemon zest 2 tbsp. fresh lemon juice 1 clove garlic, minced ¼ tsp each kosher salt and freshly ground black pepper 2 tbsp. chopped toasted almonds ¼ cup chopped cilantro leaves Instructions Preheat oven to 425°F Combine spice blend, ½ tsp salt and oil — set aside. Cook whole cauliflower in large saucepan of boiling water just until tender, but firm — about four minutes. Drain well and place cut-side down in greased baking dish. Insert tip of sharp knife into top of cauliflower in five random places. Brush spice mixture all over and into crevices. Roast in the center of oven for 20 to 25 minutes or until browned and tender. Meanwhile whisk together tahini, ¼ cup boiling water, lemon rind, lemon juice, garlic, ¼ tsp. salt and pepper; whisk in a bit of extra water to thin sauce until thin enough to drizzle if necessary. Set aside.

Drizzle the tahini sauce over top of roasted cauliflower; sprinkle with almonds and cilantro. Cut into wedges and serve.

Instructions

½ cup chopped yellow onion

In a small pan, sauté onion and garlic in oil over medium heat until soft but not browned.

2 cloves garlic, minced

Place in a large bowl and add quinoa, cranberries, sweet potato, apple, walnuts, parsley and sage. Season with salt and pepper and set aside.

3 tbsp extra-virgin olive oil 2 cups cooked quinoa 2/3 cup dried cranberries, soaked in hot water and drained 2/3 cup chopped sweet potato, steamed until tender ½ cup grated, peeled apple ½ cup walnut pieces 2 tbsp chopped fresh flat leaf parsley 1 tsp dried sage kosher salt, to taste Freshly cracked black pepper, to taste

Preheat oven to 375°F. Slice acorn squashes in half, and scrape out seeds and strings. Place face down in large casserole or roasting pan and fill with 1/2 inch of vegetable stock, and bake for 15 to 20 minutes. Remove, reserve any remaining stock and place face side up in pan. Fill each cavity with stuffing. Drizzle with olive oil and any remaining stock, and cover tightly with foil.

Bake until squash are cooked and fork tender, about 30 minutes. Remove the foil for the last 5 minutes.

‘Tis the season for cocktails you might not normally sip while lounging by a pool, which is why these specialty drinks are only available for a limited time. Of course, if you decide to make them yourself you can actually sip a Mistletoe Martini poolside. Recipes compliments of Fairmont Hotels.

No alcohol needed for these festive holiday drinks. ‘Tis the season to enjoy celebratory cocktails, but not everyone wants to imbibe and some are just too young — step away from the punch bowl, Tommy. To make sure no one, including the kids and the palaeos, will feel left out of the party check out these festive mocktail recipes.

Instructions

1/2 litre Sprite

Garnish the rim of a martini glass with crushed candy cane.

Ice

Mix all ingredients into a shaker glass, add a full scoop of ice and shake vigorously for 10 seconds. Strain into martini glass. Top off with a dry sparkling wine.

Red sugar to rim the glasses (optional)

Pour two quarts of water in a one gallon pitcher. Add the Kool-Aid mix and sugar and stir until the sugar is dissolved. Add the pineapple juice and lemonade and stir well. To top the rim of a glass, dip the top in water then dip into the sugar. Just before serving, add the Sprite and ice.
