hen it comes to the holidays, there’s nothing like a little bling to set the mood, whether it’s lighting up your table, in a gift box or dangling off your ears.
When it comes to gift giving, jewelry is timeless, is always appreciated and can be purchased at multiple price points.

all about kids The holidays are a great reminder to help children in need

any kids today are lucky in that they have all of the toys and gadgets they could ever want, whether it’s a tablet, the latest smartphone or the hottest toy or action figure. But there are just as many kids who have very little, and the holidays can be a stark reminder of that. So while checking items off your kids’ wish lists this festive season, consider also helping out a child facing a notso-happy holiday. Here are just a few ways to help. Donate much needed gift cards, clothing or toiletry items to the A
Christmas Backpack Program at Covenant House. Each youth at the annual Christmas party will receive a backpack — covenanthousebc.org. Take an unwrapped toy to the annual Christmas Wish Breakfast at the Pan Pacific Hotel and enjoy a free buffet breakfast in return. Bring the bubbles You don’t need a special occasion to break open a bottle of bubbly at a holiday brunch or party

Champagne (but can’t be called that), we are now able to enjoy the bubble experience without the hefty price tag.
Her thought is life is too short to save bubbles for special occasions and that even camping is a time to celebrate. And who am I to argue with that?
Are there any B.C. or Canadian brands we should be looking out for? Ftiz by Fitzpatrick Cellars, Stellars Jay, Blue Mountain and one of my favourites from B.C. is Bella. I literally just tasted Les Dames Bubble made by Mireille Sauve with organic grapes from Anne Sperling’s vineyard. It’s a fundraiser for women in the food and beverage industry and last year they gave out $47,000 in bursaries
But with the holidays approaching, we actually have an excuse to break out the bubbly. To get the details on bubblies of all kinds, Joy turned to John Clerides, owner of Marquis Wine Cellars on Davie Street.

It’s been long thought by some that bubblies should be saved for special occasions. Is that still the case? No, we have come a long way, in that bubbles can be enjoyed before dinner as an aperitif. It’s also often thought that anything bubbly has to be expensive. Is that true? The process to produce Champagne is more costly and complex and as a result can cost more. However with the increase in popularity of Prosecco and Cava, Spanish sparkling wine made in the same method as Bollinger Special Cuvee Champagne
Just like red and white wines, are there certain bubbles that enhance certain foods? I have always found that bubbles can complement literally every type of food, especially sushi and food with a bit of heat in it. What is it about the holidays and bubbly that just go so well together? It’s that celebratory factor, getting together with friends, family and loved ones. Thank the French for that. A couple of things with sparkling wine and Champagne: with the huge
popularity of Prosecco, it’s easily remembered so people ask for it by name, versus Cava, which people do not specifically ask for it by name — but they should. So maybe making a huge holiday dinner isn’t your strong point, but you still want to entertain friends and family. That’s where a holiday-themed brunch comes in — with the help of celebrity chefs Lynn Crawford, who has put her own spin on eggs benedict, and Trevor Bird, who pays homage to a traditional turkey dinner with his confit turkey leg frittata recipe.

If you’re hosting a holiday party, chances are you’re going to have a house full of people and a lot of leftovers. This is a great recipe for a late brunch or lunch to help use up some of those leftovers. Chef Trevor Bird likes to confit turkey legs, to ensure a great texture and stop them from drying out in the oven. serves six Turkey Leg Confit 2 turkey legs 2 tbsp (30 mL) salt 1 tbsp (15 mL) pepper 2 sticks of rosemary 4 cloves of garlic 1 L duck fat, canola oil or any fat A couple of days before you’re going to use them for dinner or lunch, cure the turkey legs in the salt and pepper and let sit in the fridge overnight. The next day, preheat the oven to 250-F or 121-C with oil in an oven-safe baking dish with four-inch sides that can fit two turkey legs. Place everything into the baking dish cover with foil and place in oven for four-to six hours. Remove and let cool on the countertop. Once cool, remove from the fat and put in the fridge until you’re ready to use.
Cranberry Mustard 2 cups (500 mL) of cranberries (frozen or fresh) 2 cups (500 mL) honey or sugar ½ cup (118 mL) of orange juice 1 tbsp (15 mL) of ginger grated 1 tbsp (15 mL) of grainy Dijon mustard Method Place everything except Dijon into a pot. Bring to boil until the temperature reaches 219-F or 104-C. Let cool for one hour and add cranberries. Add 1 tbsp (15 mL) of grainy Dijon for a nice addition. Frittata 1/2 cup (118 mL) of turkey leg meat 1/2 cup (118 mL) of diced onions 2 cloves of sliced garlic 1/2 cup (118 mL) of cooked sweet potato, diced
1 tbsp (15 mL) of turkey fat left over from confit 1/2 cup (118 mL) of chives 6 eggs (beaten) Large pinch of salt Method Preheat oven to 300-F or 148-C. In an eight to 10- inch pan sweat onions and garlic in turkey fat and salt. Add everything else into the pan and warm. Pour in beaten eggs and place pan in oven for 30 to 40 minutes until eggs are cooked. Remove from the pan. Let cool for 10 minutes. Cut into wedges and serve with a salad and 1 tbsp (15 mL) of the cranberry sauce on top of the frittata.

Holiday brunch: cocktail time We didn’t have to look any farther than our home province for the ingredients for these locally-inspired cocktails. And, what better way to impress your boss’s wife or your father-in-law than mixing them a cocktail whether it’s a negroni created with home-grown salal berries, or a gin made right here in Yaletown. Then there’s the Nocino distilled on a family farm in the Cowichan Valley. The Douglas Fir D/6 Bar and Lounge, Parq Vancouver This cocktail features gin from Yaletown Distillery. 1.5 oz. Douglas fir-infused gin from Yaletown Distillery 0.5 oz. Cointreau 0.5 oz. dry vermouth 0.5 oz. sweet vermouth 3 drops of Bittered Sling Orange Juniper bitters Stir ingredients over ice and strain into a rocks glass over fresh ice. Garnish with a dehydrated orange slice and a Douglas fir tip. Serves one.
Odd Society’s Salal Negroni Odd Society Spirits has been harvesting and macerating B.C.-grown salal berries for the past five years in order to create a West Coast take on the classic British liqueur, sloe gin. Towards the end of every summer, the berries are handpicked along coastal B.C. and then steeped in Odd Society Spirits Wallflower Gin. Salal berries resemble a cross between a blueberry and blackcurrant, but the flavour is far richer and earthier. 0.75 oz. Odd Society salal gin 0.75 oz. Odd Society Mia Amata Amaro 0.75 oz. Odd Society bittersweet vermouth Build in a mixing glass with ice and stir before straining into a rocks glass over ice. Garnish with an orange twist.

Chef Lynn Crawford says nothing beats this combination of in-season squash and a delicious poached egg. Maple Roasted Butternut Squash
Hollandaise
1 large butternut squash
5 egg yolks
1/4 cup (60 ml) unsalted butter
1 cup (250 ml) ghee, (clarified butter) warm
1/4 cup (60 ml) pure maple syrup 1/4 cup (60 ml) brown sugar 2 tsp (10 ml) chili powder 1/2 tsp (2.5 ml) cinnamon Kosher Salt and Black Pepper Method Preheat oven to 450F. Cut squash in half and discard the seeds. Place cut side up in a shallow baking dish. In a small bowl, mix butter, maple syrup and brown sugar and then divide between the two cavities. Sprinkle both halves with chili powder, cinnamon, and salt and pepper. Roast for 45 to 50 minutes or until the flesh is fork-tender and remove from the oven and allow to cool slightly. Scoop flesh into a large bowl and mash together with a spoon.
2 tbsp (30 ml) of lemon juice Salt and Pepper Method Put the egg yolks in a bowl, set the bowl over a pot half full of simmering water. Whisk the yolks for two-to-three minutes until they thicken slightly. Remove the bowl from the heat and begin adding the ghee slowly at first, whisking constantly. Whisk in the lemon juice and season with salt and pepper. Poached Eggs 4 eggs, cracked into individual bowls or ramekins 1 tsp (5 ml) kosher salt 2 tsp (10 ml) white vinegar

Method In a medium sauce pot half filled with water, add kosher salt and white vinegar and bring to a simmer over medium heat. Use the handle of a spoon to quickly stir the water in one direction until it’s all smoothly spinning around. Add the eggs one at a time into the centre of the whirlpool. Turn off the heat, cover the pan and set your timer for five minutes. Remove the egg with a slotted spoon and serve immediately. Toast four slices of sourdough bread To finish the dish scoop the smashed squash onto the toasted sourdough bread. Top each toast with one poached egg, spoon the hollandaise over the poached egg.
