O
n Saturday May 21st, 2022, in the middle of the Victoria Day weekend, Dave Smith and his partner Jen set out from Toronto to visit friends and enjoy a day trip to rural Ontario. Visiting a brewery was on the agenda, and the choice was between Port Perry’s Old Flame Brewing and Uxbridge’s The Second Wedge. “We decided on Second Wedge, because we were in the mood for ales,” says Dave, “I probably would have ordered the Monday Night Piper.” As they drove down the highway towards Uxbridge, darkening clouds made themselves

apparent in the rear view window, but there was no indication that it was anything other than a standard storm. The weather alert that came over the phone network was the only hint of what was about to occur. In reality, the volume of the cloud was caused by a freak Derecho. The hot air mass moving along the Windsor-Quebec corridor had met a cold front from the north creating perfect conditions for a tornado. “Lanie had gone to the bar to order a beer and we had just found a table. The brewery staff were closing the garage door. The rain went from ver-

tical to horizontal, and then all hell broke loose,” says Dave. “I thought, because my brain slowed down, ‘there is roof go!’ and I yelled ‘Duck!’ It was pure chaos for twenty seconds. Then it got bright. And wet.” Soaked with cold rain and covered in insulation, but otherwise unharmed, the guests of The Second Wedge were gathered into a first floor hallway that remained intact.
Mike Lounds, head brewer, had been driving into the brewery to pick up a keg for a friend’s Stag and Doe. The drive to the brewery took longer than usual as he was navigating around downed trees. Upon arriving, staff member Luke Geddes relayed the news, saying “it’s gone, man. It’s gone.” The quick thinking of the staff ensured that guests of the brewery were safe within the first minute of the event. Laterally, the staff and a number of local volunteers went into what Lounds characterizes as Salvage and Contain mode. Relaying the news to the other members of the brewing team required humour to soften the blow. “How do you feel about open air brewing?” was the way he broke the news.
The Enhanced Fujita scale (yes, the one from Twister) measures the strength of tornadoes. It places the Uxbridge tornado at the high end of EF2, a category that indicates considerable damage and includes sustained wind speeds of up to 190 kilometers per hour. There is video, courtesy of a Tesla in the parking lot, of the roof coming completely off the structure. In just under a minute, The Second Wedge Brewing Company was closed for business indefinitely. Because of the height of modern fermenters and brewhouses, any recently designed brewery is going to use the roof structure for piping water and glycol through the building. Electrical cabling is frequently attached in the same way. With the roof destroyed, all of the brewing equipment was put out of commission.The grain auger, which fed malt into the brewhouse, was discovered by the side of the road a mile away.

Wedge would have to pare their offerings back to the four core beers that make up their lineup. “I still have 2021 harvest hops in cold storage for a recipe I was going to brew that week.” The brewing industry and members of their local community have rallied around. Fundraisers that were organized independently have seen proceeds go to members of the front of house staff for the brewery. Collaboration brews with Sawdust City and Market have kept The Second Wedge in people’s minds. The Uxbridge legion has been letting them use the space on Tuesdays for Trivia Night.

“For weeks, every driveway in Uxbridge had stacks of tree limbs and branches 6-8 feet high. There was no electricity for five days. For three weeks, the same three trucks rotated through the town, cutting up downed trees.” You might wonder how a brewery continues to function without an operating brew house. “We’ve become a logistics company. We live on Slack,” said Richter, “for the first two months, our company operated out of the living room.” For a brief period of time, they weighed their options, talking to companies that typically produce beer for contract breweries, but found that the batch size was much larger than they were used to. It was Rob Carefoote, owner of Carefoote Beverage Solutions, who came with the answer to their problems. As he was installing new piping at Market Brewing in Newmarket, he suggested that The Second Wedge’s undamaged fermenters and brite tanks might be temporarily relocated as Market did not yet have tanks to fill the new space that was being prepared. Market had previously offered to allow their neighbours to brew a batch, but this was a step up. Although Lounds had spent much of his time since taking over from previous head brewer Doug Warren coming up with his own seasonals, the strictures of the situation meant that The Second

Pieces of the business that you might take for granted as being straightforward are significantly complicated. “We have to plan four days ahead if we want to clean kegs. We need to get them from our storage in Uxbridge to Newmarket, schedule time to use the keg washer, clean the kegs, and then deliver them back to storage. It’s like that for everything” “We had a really good insurance agent, Greg Strahl from Palladium, who always reminded us to max out our coverage as the brewery expanded and we got new equipment,” said Richter. “As soon as the roof was on and the year switched to 2023, the business was getting the building ready.” The Second Wedge’s new and improved digs include a taller ceiling that will allow for a second floor gallery with additional seating that could be used for events. The tasting room will have an increased number of taps and the brewery will expand to a tied house license that will allow them to pour beers from guest breweries and cideries. The brewery itself is getting a refinished floor, new water, glycol, and Co2 hookups, and a garage door to the tasting room to make the space more versatile. While construction is ongoing, The Second Wedge will reopen their beer garden, albeit with a few fewer shade trees, on Victoria Day weekend. The taproom is expected to follow in early June. When asked which of their beers they envisioned drinking to celebrate reopening, Joanne Richter opted for their High Grass Saison, which she praises for its refreshment and the way it complements the beer garden. Mike Lounds opted for 3 Rocks IPA, saying, “I’ve fought with it so many times.” When reached for comment, Dave Smith said, “Probably still Monday Night Piper. I just really like Scotch Ale.” j

W H AT IS IT ? An offshoot of top fermenting American IPA styles, typically using new world hops for big, vibrant aromas by focusing on cold side additions to create biotransformation and extract essential oils.

John Kimmich was working in his lab at Alchemist in Vermont late one night, and managed to create Heady Topper, the original example of the style. He aimed for massive dry hopping to impart aromas of citrus and tropical fruit, which are held aloft by minimally characterful base grains and supported by additionally fruity yeast esters from English derived strains. It’s so hazy, you’re meant to drink from the can.

Can you teach someone
TO LIKE BEER? There may be a beer for everyone, but some of your friends haven't found theirs yet. by David Sun Lee
H
ow do you approach someone who has already told you they’re not a fan of beer?
“I generally just start by asking what it is they do enjoy?” says Sam Brown of She Brews Brewing & Consulting in Kingston, Ontario. “Red wine drinkers I introduce to a Flanders red but a Smirnoff Ice drinker I may test the limits with a Berliner Weiss. Dry white wine drinkers may enjoy a Brut IPA, which often has champagne yeast [giving it] familiar dry wine characteristics. However, even now, juicy IPAs are a big thing.” Ren Navarro, of the consultancy Beer. Diversity. takes a similar tack. “If they like wine, what kind? Red? White? Dry, slightly sweet, crisp and cold? There are enough beers out there that run parallel to cocktails and wines in their taste profiles. Someone once told me that there's a beer for everyone. And these days, I definitely believe it.” Navarro also asks them to describe what it is that they don’t like about beer. “I once had a guy tell me he hated the taste of any beer that had more than 100 IBUs. What does that even mean? Turns out he didn't like the heavy pith flavour in IPAs.” She adds that throwing a bunch of jargon at someone can be a turnoff. “Take it slow and easy. Taking that moment allows that person to open up a bit more to what you're trying to introduce them to.” The final piece of advice from Navarro is obvious: “have a multitude of options for them to try. That non-beer person will probably surprise you with the selection that they enjoy” Just having good beer isn’t enough to capture the attention of customers who aren’t big on beer. “Creating an inclusive non-judgemental environment is very key to me,” says Brown. “An environment that

encourages people to explore their own boundaries and defeat their own misconceptions of what beer is in North America. There is so much to learn and understand about beer.” Navarro agrees. “Not everyone who inhabits your space is there for beer. But making a welcoming and accessible space means that the non-beer drinker might be tempted to try your beer on one of their subsequent visits. And who knows? Maybe they'll become your biggest fan!” I had two beer-averse volunteers meet me at Great Lakes Brewpub in downtown Toronto to put Brown and Navarro’s advice to the test. The first volunteer is Janet Kwan, a photographer in Toronto, who has tried beer often, usually via her friends or husband who is a “mild hobbyist” of beer, but hasn’t had any beer at all in a few months. Our other volunteer is Vanessa Ling Yu, Executive Director of caterToronto and social entrepreneur involved in a few food projects around the city and she hasn’t had beer in three years. Asked if they drink alcohol at all Kwan said, “Not often. If I do it’s sweet stuff like ice wine or a cocktail. Even then I don’t drink it that often. I think part of it is I don’t love the taste of alcohol and I turn red immediately and I feel it,” says Kwan.

For Yu, who favours red wine or the occasional cocktail, she’s never liked the taste of beer in any of its guises. She also likes her drinks to be on the dry side because she doesn’t like sugary drinks at all. Thanks to Great Lakes’ varied selection of beers we were able to taste a wide variety of styles including a Vienna lager, ESB, NEIPA, pale ale, fruited Belgian ale, imperial coffee stout and even a barley wine. While NEIPAs can register as on the sweet side for people who drink beer regularly, Kwan said she still found the NEIPAs very bitter. And the fruited belgian ale, which was fairly dry, was not a hit with Yu. The other styles all were too close to their conception of what beer tasted like to them. Interestingly they both landed on the imperial coffee stout as being their favorite beer of the day. “Well this one I think I like it because it tastes thicker and maybe more familiar,” says Kwan.” This one was kinda nice because it doesn’t like beer. It just tastes like a chocolatey coffee drink.” Yu agreed adding “It does the best job of hiding beer.” Brown wasn’t as surprised that the tasters liked the stout. “From my experience, folks often assume the dark colour to mean heaviness and to give less desirable notes only to find there are surprisingly
sometimes smooth, chocolate, cocoa, or coffee notes.” When I asked Navarro what surprised her most about introducing beer to people she says, “My own assumptions, mainly! Being surrounded by beer drinkers means I don't always think about someone's reluctance to try something.” From our tasting session the main lesson learned was that while someone with experience with beer might have their own ideas about how to approach people, they’re likely to surprise you with their preferences. Our tasters agreed that education was a key factor in if they were open to trying beer. “I feel like learning more about it helps me appreciate it and understand it more.” Kwan says. “When my friend introduces us to stuff that is a new release he’ll say ‘this tastes like orange, this tastes like whatever’ and then that’s when i’m like oh i’ll try that sounds interesting.” Yu added that being more descriptive on your beer menus would be helpful. “I do think they need to add a few more adjectives. Sugar content really helps because it’s an objective quantity. You don’t have to go into ‘the gravel and the autumn air’ but maybe more than four adjectives.” She goes on to add that it might even be helpful to indicate which beer is the least beer-like! j

Everyone has a pÉchÉ story A prized Québecois beer makes its long-awaited return to Ontario by Max Morin
T
his past February, over thirty bars around the world marked the 10th edition of Péché Day, Brasserie Dieu du Ciel’s annual celebration of its renowned Imperial Coffee Stout, Péché Mortel. This take-no-prisoners stout and its namesake party had become molded into the circadian rhythm of craft beer until the onset of the COVID pandemic eliminated its distribution in Ontario. After partnering with a new importer, Péché Mortel, which translates to “Mortal Sin,” makes its long awaited return and this time in tall cans on LCBO shelves for the first time. How a 9.5% Imperial Coffee Stout—often served using nitrogen instead of CO2—from a tiny
brewery in Montreal made its way into the hearts and minds of beer drinkers worldwide is anything but happenstance. “When I decided to brew a beer with coffee, I wanted to make sure it's not just in the name,” Jean Francois Gravel, co-founder and brewmaster of Dieu du Ciel told me. Most coffee stouts and coffee porters in the United States or England in the early 2000s, like Fuller’s Chocolate Stout, had delicate coffee notes, which accented a sweeter malt backbone. Being an avid coffee drinker and seeking to push the envelope, Gravel saw an opportunity. “I told myself if I do a coffee stout it's definitely going to be coffee forward,” he said.

In this case, fair trade coffee from lauded Montreal roaster Café Rico. Some dark fruit sits in the cut of the slight acidity from the roasted malt. It finishes somewhat dry for the style making it difficult to content yourself with just one glass, especially when it’s pouring on a nitro faucet, which gives it added body and a velvety texture. The alchemy of caffeine and alcohol create an unmatched buzz. It’s a slap to the face and a warm hug all rolled into one glass. Everyone who’s tried it has a Péché story. As Gravel puts it, “that’s the danger when you reach that point on our menu. You start with one Péché and your next beer might be another Péché [laughs].” The first beer to embrace coffee made instant waves on popular rating sites like RateBeer and BeerAdvocate, which helped send tourists flocking to Dieu du Ciel’s cozy brewpub; a pilgrimage to try one of the world’s best beers. When pressed to answer why he thinks Péché continues to resonate with beer drinkers, Gravel points to its unforgettable taste and another practical reason. “It’s a beer that travels so well with a long shelf life. Anytime someone would have it at a bar it would taste great,” he explained. In fact, its bold flavor and alcohol content gives it added resistance to changes in temperature and time to the point where many continue to cellar the stout and its prized annual variants for many years past their born on date. “It’s become more than just a beer,” explained Ben Metcalf, co-owner and cellarman of Arabella Park Beer Bar in Kitchener. “What makes it special—other than being so obviously delicious—is its fortitude [...]. People just want to be friends with it.” For me, Péché represents the very best of what craft beer can offer: a great story, unmatched consistency, and most important of all, deliciousness.

When I ask Ralph Morana, who has hosted Péché Day at Bar Volo in Toronto for many years, to explain the lure of Péché he believes it comes down to brass tacks taste. “Péche Mortel is one of the smoothest Imperial Coffee Stouts that I have ever had. When you drink it, the beer goes down so easily and if you have several, you will not know what hit you,” he said. Even though the beer hasn’t been regularly available, it hasn’t stopped some bar owners from finding creative ways to list it. “We were on our last bottle from a case of a very rare edition of Péché Mortel and just hid the bottle in the back of the fridge,” admits Ken Inouye, manager of The Brain—Hamilton’s best craft beer bar. “It lasted hidden for over a year until some beer nerd finally noticed it on the app and asked for it. They loved it,” he explained. Now that Gravel and his team worked through packaging trials, a new label design, and guided the beer through LCBO’s laborious submission process, he’s excited to be back in Ontario for the long term. “Now that the path is set we should be able to get the beer there a couple of times a year,” he said. If the 10th anniversary of Péché Day was any indication, best act fast if you want to write your own Péché story. j

s with any other pleasure in life, beer is enjoyed with all your senses. Even before tasting, you will appreciate its colour, brightness, haziness, and of course, head. Depending on the type of beer the head or the amount of foam can vary. It could be abundant, thick, light, ephemeral, or even absent. Have you ever thought about what makes beer foam, (head, kräusen, or whatever you might call it) so special and different from other carbonated beverages? Making the foam possible are the ingredients: the proteins and non-starch polysaccharides (or complex sugars) remaining from grains, alpha acids from hops, and of course the gas present in the beer. However, the serving technique is crucial

even if your beer has the perfect components for an eye-catching head. With this in mind, let’s discuss how Czech beer tradition and experience had raised the bar and created a whole culture around beer foam. If the foam is dependent on ingredients, the pouring technique and faucet are crucial when any person wants to serve a good pint of inviting beer. Czechs are perfectionists in this task, and they have a diploma for the person who masters the tradition after being trained and certified, the Tapster. But an expert needs the appropriate tool to perform this task, and here is where craftsmanship enters into the equation to develop a complex yet simple tap to get the best out of a Czech Pilsner
screen between the faucet and nozzle. This metallic screen creates a barrier, generating a turbulent flow and producing a lot of nucleation points where gas and beer are mixed forming the dense foam. The bubbles formed trap all the hydrophobic (water hating) components of beer (protein-lipid complex) holding them to travel across the liquid, building a web of bubbles imprisoned and protected by iso-alpha acids from hops, coating the whole structure and floating over the beer.

creating a celestial foam on top of the bright golden beer. In a conversation with Paddy Treacy, Northern Lines owner, and LUKR distributor mentioned that this kind of system is the closest thing to drinking a beer from the Brite Beer Tank.
How is the LUKR faucet different from a normal tap?
If you are familiar with how a beer should be poured, the regular tap is like an on-off switch, so this task is easy to perform and only requires practice. When you pull the handle, a shank moves in the body of the tap allowing beer to flow into your glass at a single speed depending on the gas in the system. On the other hand, a LUKR Czech faucet is more complex, and its parts allow the Tapster to maintain the faucet, cleaning regularly depending on the frequency of use. If we dissect the faucet body, we can observe that it is formed by a nozzle, a mesh, and a longer faucet, making this part effortless to disassemble and clean. The body has an additional part before the shank that will regulate beer flow, called a kompensator. Finally, the handle acquires another dimension because it is tuneable and has a side-pull one with 180-degree freedom of movement. This feature frees the Tapster to control the amount of beer being poured, triggering the ability to try new flavours and textures in foam serving.

Types of Czech beer pouring Čochtan (Neat): No foam. British style. Not common on a Pilsner serving because it is too bitter tasting. Hladinka (Smooth): Pilsner classic pouring. Half beer, half foam. The perfect Czech beer experience showing foam aromas and textures. Šnyt (Split): Old fashioned serving, mostly reserved for the Tapster to test the pouring and the lines. It is a small pour with lots of extra foam. Mlíko (Milk): Almost pure wet and refreshing foam to appreciate all the texture and richness of flavours. Must be drink fast to cherish this delicacy. Reflections of a Trip Through B.C.’s Northwest Ale Trail

Despite recent social, economic, and environmental turmoil, a love of delicious craft beer connects the communities of Northern British Columbia. by Max Morin
L
ast summer, I traveled to the edge of Canada in northwestern B.C., where breweries dot communities backdropped by snow-capped mountains, raging rivers, and ancient forests. I’d never been west of Winnipeg so it may as well have been the edge of the world. I went there on an organized tourism trip run by the BC Ale Trail looking for beer–I was on the hunt for the seasonal Spruce Tip beers in particular–but ended up leaving with a crystalized sense of where beer sits, for this community and me, in this socalled return to normalcy.

After a layover in Calgary, I flew to Prince George, the gateway and economic hub of Northern B.C. The town sits at the confluence of the Nechako and Fraser rivers and is a hop, skip, and a jump from the dazzling Chun T'oh Whudujut/Ancient Forest, a portion of the only inland temperate rainforest in North America. Prince George boasts three breweries, each with differing tap lists and points of view: Cross Roads Brewing, Trench Brewing, and the newly opened Deadfall Brewery. At my first stop, CrossRoads Brewing, sampling Pidherney Pale Ale was better for my jet lag than the Gravol. Their classic northwest pale ale screamed grapefruit pith and pine with distant fieldberry notes. Head brewer Tyson Brooks walked us through the brewery but beyond its shiny facade something else grabbed my attention–a blue and yellow label emblazoned with “Putin is a Dick.” The worldwide collaboration initiative called "Resist” was launched by Pravda Brewery after Russia’s invasion of Ukraine and Brooks had just released CrossRoads’ own interpretation in order to raise money to support refugee relief.

Across town at Trench Brewing, the locals drink The Fang IPA, their best-selling flagship hazy, but I was blown away by their subtle and spicy Czech Lager, Arctic. Getting to drink straight from their bright tanks was a privilege afforded by Joe Wiebe, our guide and author of Craft Beer Revolution: The Insider's Guide to B.C. Breweries. From Prince George, we made our way by car down Highway 16, the lifeline of northwestern B.C. that travels all the way to Prince Rupert on the coast. The scenic spell got interrupted by faded red dresses dangling from trees. Highway 16 is known by another name, The Highway of Tears, from where dozens of First Nations women have disappeared or been found dead. Just as with the Putin label, the red dresses are symbols of a crisis still simmering beneath the surface. Ursa Minor Brewery sits off the shores of Ootsa Lake on a 540-acre ranch a few hours east of Smithers. Using his father’s old bush plane hangar, owner Nathan Nicholas and wife Gwyn finally opened their doors in 2021 after a devastating wildfire charred the region in 2018 and the pan-

The brewery is only accessible by dirt roads and a ferry or float plane from communities nearby; which are known more for their fishing and hunting lodges than for craft beer. Put another way, Ursa Minor is arguably Canada’s most remote brewery, and perhaps its most beautiful. We arrived by float plane and the moment I stepped off, it felt like being touched by God. I’ve never seen green be so green. Vibrant beds of yellow sunflowers led up to their taproom. Nicholas travels hundreds of kilometers to pick up his malt and hops, and forages on their farm for his other ingredients. Their beers are intentional and rooted in place, especially their malty, sessionable Red Squirrel Red Ale. Your brewery bucket list needs a rewrite and Ursa Minor has to be on it. From there we headed west to Smithers, a recreational town known for its larger-than-life personalities and even larger ski slopes. Bulkley Valley Brewery, a ski shop-turned local favourite, was fresh off a silver medal at the Canadian Brewing Awards for their Ullr Oatmeal Stout and it was easy to taste why. The interplay of roast, light acidity, and chocolate was a study in restraint and delight.

If there’s such a thing as a godfather of brewing in Northern B.C., the title surely belongs to Craig Outhet who opened Wheelhouse Brewing in Prince Rupert back in 2013. Along with Chef Dai Fukasaku at nearby Fukasaku, they led a jaw-dropping beer pairing dinner: tuna tataki from Haida Gwaii with a crispy pils, steamed sidestripe shrimp from Kitimat Sound with white IPA, maple miso glazed black cod with West Coast pale ale. There was no time for note taking–only eating, drinking, and good conversation. In this small 14-seater restaurant in Cow Bay, the meal towered above the surrounding mountains. on most locals’ minds was the worrying spring thaw and the rising water levels of the Bulkley and Skeena Rivers, which were threatening to flood the town or disconnect Smithers from neighboring communities. A few blocks away, Smithers Brewing Company crafts modern styles in their modern taproom, with a draught list replete with sours, hazy IPAs, and barrel-aged farmhouse ales. However, I was struck by Bootlegger Brown Ale, which showcased a hard-to-nail malt depth without being sweet. Black tea, caramel, and a hint of backing bitterness merged to create one of the trip’s best beers. Traveling from Smithers to Prince Rupert by way of Terrace is breathtaking and many consider it to be the most scenic drive in all of Canada. From Seven Sisters Peak to Ksan First Nation Village, I never stopped feeling a sense of gratitude and wonder.
The following day, Prince Rupert was getting set to welcome only the second cruise ship to port since the start of the pandemic. What was once a bustling tourism destination became an isolated paradise during the Covid-19 outbreak. I walked by shuttered businesses on the main street. Outhet told me Wheelhouse would be closed for the day despite the thousands of tourists coming to town. When I asked him why he’d turn down the business he smiled and said, “because I brew for people here.” As I walked back to my hotel room with views of the Prince Rupert Harbour, I still couldn't shake the duality of the trip. Beer has an incredible ability to keep us grounded and connected. Beyond the headlines and anxieties that inevitably surround us. Whether it was the late spring thaw, reconciliation, or fishing caps, beer remains a gateway to having these difficult conversations or gracefully shelving these problems for another time. Local beer is as constant as the scores of bald eagles that soar overhead. As I prepared to call it a night, the hotel receptionist stopped me in my tracks. “Did you see them?” She pointed to the inn’s small deck with a view of the harbour. I walked out and saw a few cars parked by the water as people stood in amazement. They were looking out but I couldn’t tell why until I saw one gracefully leap out of the water. I was alone with my beer. All at once the world felt big again. j

rom the moment of the announcement of the purchase of Collingwood’s Side Launch Brewing Company by London’s Equals Brewing, a company that specializes in co-packing and contract brewing, the reception by beer lovers was one of cautious optimism. The company had been brewery of the year in 2016, and was named the best brewery in the province by the first edition of the Ontario Craft Beer Guide. “On the first day, when we brought the staff from Equals and Side Launch together, the word was potential,” said Justin McKellar, CEO of Equals. “Our attitude towards the previous ownership is one of grace and gratitude.” McKellar’s approach has been scientific. With the craft beer market in the province maturing, he’s asking, “Who are we? Who are our consumers, and what do they want?” The result is a concerted effort to reach out and re-establish Side Launch as a community hub within the Blue Mountain region. The city’s industrial heritage and its everyday outdoor ethos are hallmarks of its character, and vitally important
to the people living in Collingwood. The legacy of shipbuilding, represented on the brewery’s cans, is going to play a bigger part of their branding going forward. Outreach includes an improved experience in the taproom, which has been doubled in size to 180 seats, and a patio that has also been doubled in size. “This is a four season paradise with skiing, biking, sailing, and hiking. The beer has to be great. If we can create the meaning, a reason for people to visit, they’ll keep coming back.” Speaking of coming back, McKellar intends to resurrect brands that have been successful in the past. “We want to focus on what has worked in the past and resonated with people.” This summer will see the return of the Passionate Sour and Hibiscus Sour in the LCBO. This fall will see the return of Mountain Lager and the Dark Lager. An IPA mixer pack, featuring a Pineapple Sour IPA and West Coast IPA will highlight some of the more innovative products beginning in April. It looks like a successful second voyage for Side Launch. j

DIRECTIONS 1. Preheat oven according to puff pastry package instructions. Wash, pit and slice plums into a work bowl. Add sugar and toss until well combined. 2. Working quickly, roll out the cold puff pastry onto a well-floured sheet of parchment paper until the pastry is about 1/4-inch thick and just larger than a 12-inch non-stick tart pan with removable bottom. Drape the pastry over a rolling pin to transfer it to the pan, fitting into the edges. Trim excess pastry. 3. Lay plum slices over the pastry, working in a circular pattern. Place the pan on a baking sheet (to catch leaks) and transfer it to a hot oven. Bake for 20 minutes or until edges begin to brown.

Farmstead Ale was the first beer GoodLot Farmstead Brewing ever released and is described as "sunshine in a can." Notes of stone fruit as well as Ontario Cascade and Nugget hops complement the sweet and rich flavours of the tart by offering a hint of bitterness. With a beer the colour of the setting sun, this pairing is the equivalent of wrapping yourself in your lightest sweater as you sit outdoors with friends and enjoy the first or last few moments of summer warmth. A moment that feels foreign after a bitter winter, but is always welcome. —Sabryna Ekstein
4. Meanwhile, mix jelly with a dash of water and warm in the microwave to a liquid consistency. Brush melted jelly generously over the plums and bottom of the tart (not edges, where it might burn). Bake tart another 5-7 minutes or so, removing from oven when edges are deep golden brown. Remove pan edge, slice into generous portions and serve with whipped cream or caramel ice cream. j
