Dream pandemic wedding
In the midst of the pandemic, Arnell Murrain and Youn-Sun Lee were chosen from over 100 couples to win their dream wedding. Steam Whistle teamed up with 23 industry partners to throw a gorgeous celebration for an unemployed hospitality worker, which followed all of the new COVID-19 restrictions. Arnell, a bartender at a banquet hall who is now at Teacher’s College, met Youn-Sun, a Korean language instructor, at a French language event in Toronto. eir love story won the jury over. So on August 15, 2020, their dream wedding began with a stunningly modern socially-distanced ceremony in the Steam Whistle Roundhouse and ended with an intimate dinner for ten guests from their bubble in an outdoor tent on the Locomotive Hall patio, with the CN tower as the backdrop. COVID-19 measures included digital questionnaires to pre-screen guests, temperature checks, bathroom attendants sanitizing between guests, custom masks and a live feed so that Youn-Sun’s South Korean family could share in the day.

Beer-infused ceremony
When chefs Jessica and Nicolas Gignac tied the knot at Stack Brewing in Sudbury on June 15, 2019, they had a beer-soaked ceremony from start to nish. Fresh hop cones were woven into the owers and chuppah, and guests showered the couple with barley instead of rice. roughout the day guests lled their custom pint glasses with brews from the couples’ favourite local breweries:
46 North, Stack, Gateway City, and Full Beard. e Gignacs’ love for beer is more than a hobby: they launched the Food Manchu food truck outside of Full Beard Brewing in Timmins before they started working at Stack, where Nicolas is the Executive Chef. So of course, Chef Nic also infused all of the dishes on their wedding meal with di erent local beers.

Go Beyond Beer
For journalist Stephanie Hallet and actor Jon Owens, beer played more of a supporting role in their day. e L.A.-based couple ew to Stephanie’s hometown of Toronto to marry so that her grandmother could attend their ceremony on September 1st, 2019. Stephanie fell in love with Muddy York’s industrial Victorian vibe and booked it from the U.S. after owner Susan Michalek gave the couple a video tour. e casual day began with guests mingling at the bar before the ceremony, then taking their pints to the brewery's grassy front yard where a gourmet pizza truck served personal pies. e couple hung a poster of the 1967 Supreme Court ruling Loving Vs. Virginia, a landmark civil rights decision, which overturned laws banning interracial marriage. “ is was the law that makes our marriage legal,” explains Stephanie, “So we really wanted to celebrate that, and to acknowledge the history there as well as the fact that a relationship like ours was outlawed for quite some time.”

Tying the knot at an old favourite
Old Flame regulars, Stephanie Pfa and Nicole Bird, think of the rustic, friendly brewpub as the movie set for their life together, so it was only natural that they wed at the Port Perry brewpub on September 28, 2019. “ e sta are people we instantly called our friends,” says Nikki. Plus the beer is fantastic, “We love the little extra love and magic they put into it.” On the big day the ceremony was held under twinkling fairy lights between an altar fashioned from whiskey barrels. Flights of beer and pints of cider circulated all night long, then brewery plates and pretzels came out for late night snacking. When the night wound down, each guest was gifted a growler to ll up with their favourite Old Flame beer, taking a sip of the celebration home. j

It began around the year 1000 in the salt-mining town of Goslar, Germany. Harnessing the town’s salty river water, brewers added lactobacillus (the bacteria that sours yogurt) for acidity, wheat for body, next-to-no hops and coriander seeds to spice it up. Nearly extinct, the style was popularized by American craft breweries in the early 2000s. ese days goses are often fruited or dry-hopped.
WHAT'S THE DIFF BETWEEN A GOSE AND A GUEUZE? A gueuze is a spontaneously-fermented lambicstyle ale from the Brussels region of Belgium. Made with wild yeast, it’s dripping with funky barnyard avours. It’s pronounced “gooze.”

In the Venn diagram of breweries, there are typically two circles: one is “has really great beer,” and the other is “has really great branding.”
It is an unfortunate reality that the place where these two circles overlap is exceptionally slim. New breweries tend to either lead with great product, making branding and communication the secondary job of whoever can take it on, or they come out of the gate with a strong brand and communications game, ultimately driving shortlived demand for a mediocre product.
is is what has always made Collective Arts Brewery so compelling. Since the Hamilton-based company launched, it has existed squarely in the space where these two circles overlap, using unique branding to market exceptionally wellmade beer. Notably, as the company has rapidly expanded over the last seven years, it has never left that rari ed space.
Founded in 2013 by Bob Russell and Matt Johnston, Collective Arts’ uid, artist-focused branding was in many ways the impetus for the company.
“Years before either of us quit our day jobs,” Russell says, “we were in a hotel and I wrote down, ‘Build a grassroots craft brewery by creating amazing craft beer and infuse it with the talents
of emerging artists and musicians.’” is grandiose concept would become the duo’s mission statement as they formed the company.
Johnston crossed paths with Russell when he was working as VP of Marketing at Moosehead Breweries, and Moosehead hired Russell’s design rm to create the Hop City Brand, Moosehead’s “crafty” o shoot.
“At one point,” Johnson says, “I realized I was starting to become a very bad employee. I was way too opinionated to be part of a seven-generation family-owned company. So I told Bob I was interested in going out on my own and asked him if he would be interested too.” e pair quickly realized they shared a passion not just for beer but for the arts.
“ en one day I called Bob and I said ‘Are you really serious?’ and he said, ‘Yes.’ And I said, that's great news because I just quit my job today,” Johnson says. “And then I called my wife.”
e idea they came up with, born via that mission statement scrawled in a hotel, was unique in terms of craft beer: an ever-changing brand that

would champion creativity and the arts by rotating work from emerging artists as the brewery’s beer labels. “We built our brand kind of upside down,” says Russell, whose previous roles saw him working with North America’s largest breweries. “Companies want something like Labatt Blue on the label but then struggle with how to keep it contemporary.”
Instead, Collective Arts does regular calls for art, has a jury review around 500 submissions, and pays chosen artists to use their work for threemonth stints.
“Every time we do these calls for art and create new labels,” Russell says, “the brand is automatically relevant because it re ects what's on the street at that given time.” Russell says you can see themes and politics morph the Collective Arts brand, “And really the only thing we actually own is that little strip that says Collective Arts Stranger an Fiction Porter.”
Of course, good branding only helps you sell beer once if what’s in the tin doesn’t live up to the
cool label. Next up was guring out where they were actually going to brew their beer and who was going to brew it. Given the exorbitant costs of opening a bricks and mortar brewery, they opted to contract brew and crossed paths with Ryan Morrow, who is now arguably one of the province’s most talented beer makers.
“We actually almost brewed at Amsterdam Brewery in Toronto,” Russell says, “but we stumbled into Nickel Brook and we hadn’t even really tried their beer before.” e pair ended up striking up a conversation with Nickel Brook founder John Romano and learned he was looking to take on contract brewing to ll capacity.
Johnston and Russell were skilled at branding and, at the time, Nickel Brook kind of…wasn’t, and so the two organizations started a mutually bene cial relationship, tapping Morrow to brew their beer and building the beer and science branding that Nickel Brook now carries.

“ at was back when craft beer was de nitely booming,” Morrow says. “And you would get people come in and be like, ‘I want to start a brewery blah, blah, blah,’ and we’d politely give them the time of day and be like, okay, cool, whatever.
“But then Matt and Bob came by, it was like, ‘Oh crap. ey actually know what they're talking about, they actually have a vision, and there's a roadmap to success.”
And while the route may have changed from the initial roadmap, Collective Arts has seen huge success. In 2014, Nickel Brook and Collective Arts expanded operations together to the 50,000 square-foot former home of Lakeport Brewing in Hamilton and then, in 2017, Collective Arts took full ownership of the space. In 2019, Morrow, who was tackling head brewing duties at both companies, began working exclusively for Collective Arts. In January they opened a 10-barrel brewhouse, taproom, patio, and retail store in downtown Toronto. And they hope to open their
Brooklyn New York brewpub, gallery and live entertainment venue this September.
Collective is one of the few Canadian craft breweries to have their cans appear in all the right places: in serious bottleshops and taste-making beer bars from Miami, Florida to Sydney, Australia.
e founders credit that expansion to their art-focused brand concept. Craft breweries tell brand stories that are rmly rooted to their place of origin, so often their relevance diminishes the further away you get from the beer’s hometown. Collective Arts has avoided that hyper-local focus by accepting art submissions from diverse locales. Both the Toronto and Brooklyn brewpub announcements were met with immediate local support, in part because Collective Arts frequently features artists from New York and Toronto on its cans.
“We are from wherever the art communities are,” Russell says. “And really that's how we've been able to continually grow our brands.”
e brewery has also expanded their liquid portfolio to start making spirits, cider, and cannabis -infused beverages, the latter of which are already available in the US. “If it's something that we are excited about drinking or learning about or playing with and we can be really proud about making it, then we’ll try it,” Johnston says.
In the post-COVID world, the pair is hoping to take some time to grow into their shoes. “We've diversi ed a lot,” Russell says, “Now it's about getting our feet under us a bit and, and letting the team grow what they've created and stabilize it.”
When asked if they think they’ll continue to balance the ne line between good branding and quality product, they are unphased by the question. “Well yeah,” Johnston says. “Don't do things if you can't do them well.”
But they aren’t without a touch of humility about how far the recipe has taken them so far.
“It’s been pretty cool,” Russell says. “You put something down on a piece of paper and you talk to your buddy about it and you both get excited about it and then it's real.”
Johnston concurs. “You watch it grow and you watch people respond to your brand and it really blows you away,” he says. “Sometimes it's hard to believe that this has actually happened. You pinch yourself every once in a while, and say, ‘Is this real?’” j

Island time

As the season begins to warm up, many of us are already daydreaming about being o on an island somewhere far away from the nonsense of the world, taking in the view and sipping on an ice-cold beer.
For our two interview subjects, that dream is very much a reality, as both are co-owners of breweries located on islands here in Ontario.
In 2015 Nishin Meawasige, along with friends Blair Hagman and Joet Dhatt, opened Manitoulin Brewing Co. in Little Current with the thought of making beers that connect with island life, even naming their beers after famous Manitoulin landmarks.
Located in Hillier in Prince Edward County, Gillingham Brewing Co. was opened in 2019 by wife and husband team Christine and Andrew Gillingham. Both come from a corporate background and left their lives in Toronto behind to start a brewery on their family’s vineyard, where Andrew brews traditional beers packaged in the iconic stubby bottles.
Growler: What made you want to start a brewery on an island?
Meawasige: I think the island had a certain kind of mystique attached to it. A lot of people
know about it, and it’s got a claim to fame as the largest freshwater island in the world. Back in 2015 we saw an opportunity to showcase a brand and develop products under the Manitoulin Island name and we thought that people would enjoy that. We also recognize that there’s an emerging trend of folks wanting to move to rural areas and perhaps get away from busier centres and we thought that the island was only going to grow and be more of a hub for creativity, tourism and ultimately for communities to thrive.
Gillingham: Along with the opportunity we had to open up here, we chose Prince Edward County because it’s an up-and-coming craft beer region. ere’s like eight or nine other breweries here all o ering something unique, with more on the way. And because it’s also a wine and vacation spot, it seems like the perfect place to start a brewery.
Growler: Tell me a bit about the local community there.
Meawasige: Well here on Manitoulin Island we have a pretty wide swathe of communities. We’ve got a signi cant Indigenous presence here on the island and it’s very much a kind of interwoven fabric of municipalities and First Nation communities that I think really gives it its unique nature and draw.

Gillingham: It’s a very small local community, but we love that. It’s so fantastic to be able to walk down the road and say hi to people that you know. We’re a very strong tight knit community wanting to support each other, so wherever and whenever we’re able to donate or contribute it’s always to a local cause. ere are also all kinds of entrepreneurs here, which is also what inspired us about the county. Within the last ve years this county has grown substantially and has continued to do so with fantastic restaurants, artists, and of course the wineries and breweries. It’s small, but has big intentions and big opportunities, and a variety of places to explore in addition to the parks and beaches which bring in a lot of tourists.
Growler: Have the locals in uenced you much as a brewery or has it been the tourists?
Meawasige: So from Sault Ste. Marie to Sudbury and down to Parry Sound over here to Manitoulin, we kind of consider that our local market. Anything beyond that we look at as o -island folks. What we found was that the o -island market has been able to allow us to branch out more into kind of funky avours and a little bit more diversity to our product so that we’re still able to be relevant with the times. We know there are beer trends out there, so we’re able to delve into that from time to time. But at the same time our local customers keep us grounded and make sure that we kind of stick to our roots and make good quality, drinkable, sessionable beers that are going to appeal and be enjoyed at any time.
Gillingham: e locals in uence us on the type of beer we produce because at the end of the day, we have a huge tourist community down here but our locals are here 365 days and they’re the ones who really help us sustain our business. And we see that especially with our clientele, 80% or higher of which is local and without them we wouldn’t be able to survive.
Growler: Do you have much of a relationship with other breweries in the area?
Meawasige: Yeah! We’ve done a variety of di erent events and collaborations with other breweries up here and we de nitely want to be able to support each other. ere are fewer breweries per capita in northern Ontario than southern Ontario so it’s a bit more challenging for us to stand out and be relevant in a southern Ontario market when a lot of that market is what helps drive sales growth in the industry.

Gillingham: Other breweries down here are great. Everybody wants to support one another. We always try to collaborate and promote each other when we can. If there’s someone on our end of the island looking for something speci c that I know another brewery would o er, we’re always pushing them there. ere’s always that cross promotion because we all bene t.
Growler: What have been some of the challenges of having a brewery that’s fairly remote like that?
Meawasige: ere’s that sense of isolation. We do have a fellow brewery here on the island, Split Rail Brewing out of Gore Bay, and we’ve had collaborations, but beyond that our closest brewery would be Stack Brewing out of Sudbury or in the opposite side Northern out of Sault Ste. Marie, so both of them are nearly two plus hours away from us, so it’s a bit of a jaunt.
Other challenges are obviously Manitoulin being pegged as a seasonal destination, but we really want to break that mold and we think we can. We live here 365 days a year and know that Manitoulin Island has just as much to o er in the fall and winter as it does in the summer. Certainly it’s beautiful, but the real gorgeous moments are in the dead of winter when, for instance, the season just showed up and the lake froze over without any snow on it, so it’s literally polished glass. Families are skating on it and because our water is so crystal clear, it’s just amazing.
Growler: What do you folks have on the horizon?
Meawasige: We have a new product called Ten Mile Point Pilsner in the LCBO. It’ll be our sixth listed product. It’s going to be great. We actually launched it last year in a small batch in the brewery to get a feel for it during the season. It’s named after a very signi cant landmark here on the island with a lot of history behind it and an absolutely beautiful viewscape.
Gillingham: We’re a small brewery and intend to stay small. It allows us to be a little more creative and do more experimental brews. Our whole story is brew traditional but with our own little spin on it. But we started our rst year very conservative not really knowing what to expect and we realized that we were probably a little too conservative, so there’s growth on the horizon. We’re looking to expand and build an exclusive taphouse and really focus on the outdoor space in the very scenic family vineyard. is will give us a lot more space in our main building that we’ve needed as the county is becoming busier.
We’re family operated, small batch, and really want to keep that intimacy and maintain that experience. j

During the depths of the pandemic lockdown last year I often found myself fantasizing about beer-themed vacations I might enjoy once the virus is vanquished. Even though the prospect of travelling was unfathomable then, picturing myself wandering the streets of Berlin, Brooklyn or Buenos Aires in search of my new favourite beer gave me comfort and inspiration to keep moving forward.
Now that it’s 2021 and vaccinations are actually happening, it’s becoming more reasonable to imagine travelling somewhere. We might be limited to Canadian travel in 2021, but even so, there are great options for beer explorations within our borders. And it certainly seems like life will be largely back to normal by 2022. So why not dream a little now?
Along with some bucket list picks of my own, I reached out to some fellow beer scribes to get their suggestions, too.

ere are nearly 1,500 breweries in Germany so you won’t have trouble nding locally made beer anywhere you travel there. Be prepared to taste a lot of helles, dunkel and weissbier because most breweries typically only make those standard German styles, but deeper exploration will lead you to regional or seasonal specialties like rauchbier, bock, kölsch and altbier.
e top spot on my bucket list is Berlin. Apart from a single day there while backpacking around Europe in 1991, I’ve never been back to the German capital so I would love to spend a week exploring its urban geography and visiting breweries. In addition to its eponymous Berliner weisse style of sour beer, many of Berlin’s young brewers are in uenced by American craft beer, so this is the one place you might actually taste a German IPA.
BEER VACATION
In his excellent 2018 book, Will Travel For Beer, Toronto-based beer writer Stephen Beaumont recommends a pair of western German cities separated by a half-hour train ride: Köln and Düsseldorf, homes to kölsch and altbier styles respectively. Each city celebrates its own beer with pride and style, including unique glassware and serving traditions.
Another German destination on my wish list is Bamberg, a small city in northern Bavaria that is famous for its rauchbier, made with smoked malts, but also for the sheer number of breweries in the city and surrounding towns. ere are so many that you can walk between breweries along forest trails for days on end. Sounds like heaven to me!
CZECHIA
Tops on Stephen Beaumont’s bucket list and a close second on mine is Prague, a beautiful city with amazing architecture and history to go along with the delicious beer. Světlý ležák is the Czech name for what we call Pilsner, and along with that delicious golden lager, many Czech brewers make a fantastic tmavé pivo (dark lager). No visit to Prague is complete without a stop at U Fleků, a restaurant-brewery that has been brewing continuously since 1499. It is de nitely a touristy spot, but its dark lager is delicious and the kitchen does a ne job of making traditional Czech dishes.
I also recommend visiting the Pilsner Urquell brewery in nearby Plzeň, where the Pilsner style originated in 1842. e tour of its historic facility
includes a visit to the extensive cellars under the city used to lager the beer before the advent of modern refrigeration. ey still brew small batches down there in open-top fermenters, and there is nothing quite like tasting that beer.
BELGIUM
Crystal Luxmore, co-editor of e Growler Ontario, listed three Belgian breweries at the top of her personal bucket list: Cantillon, Orval, and Rodenbach. I was lucky enough to visit Belgium for a week in 2014, and I would love to go back. Each of the breweries she mentioned o ers a very different experience, and that is exactly what makes Belgian beer so exciting. Unlike Germany where most of the breweries make the same handful of beers, no two breweries in Belgium are alike.
e Cantillon Brewery in Brussels is also a museum, where you can take a self-guided tour that showcases the traditional Lambic brewing method it has employed for more than a century, and then taste the results: gueuze, framboise, kriek, and more. Wild-fermented and sour beer lovers will also want to visit Moeder Lambic, a specialty bar with two locations in Brussels.
Rodenbach’s brewery tour features a majestic hall lled with 294 giant oak foeders, some of which are 150 years old. Its Flemish roodbruin (red brown) ales are tart and refreshing with big cherry and plum notes, despite the fact that no fruit is used in the recipes.
Orval is one of six Trappist breweries in Belgium. It does not o er brewery tours, but the old Abbey’s ruins are open to the public, and there is a café where you can taste the “jeune” version on draft alongside the “vieille,” which is bottle-conditioned with Brettanomyces yeast, creating the famous “goût d’Orval.”

I could list Belgian beer destinations for pages and pages (Bruges, Antwerp, Westvleteren, etc.). Su ce to say, Belgium is an ideal choice for any beer lover to explore.
ITALY
It might be surprising to feature Italy on a beer bucket list, but I’ve been hearing many good things about the craft beer scene there. Italian beer writer Maurizio Maestrelli recommended Rome and Milano: “ e capital has always been considered the capital of craft beer in Italy. A small pub in Trastevere, Ma Che Siete Venuti a Fà (translated: What the hell are you doing here?) was elected best pub in the world a few years ago by Ratebeer, but there are many other good beer places in the city (Open Baladin, Barley Wine, Hop & Pork to drink, and Johnny's O License to buy Italian craft beers). Milano also has very good places like Birri cio Lambrate, the oldest brewpub in town and a very cozy place, Birri cio Italiano, Scott Du , Lambiczoon, and Birri cio La Ribalta. From Milano you can also visit by car some great small breweries such as Birri cio Rurale, Alder Beer, Birri cio Menaresta, and Birri cio Hamer.”
Evan Rail, a Prague-based beer writer, agrees. “If I could go anywhere right now, Italy would be it. Because of my lockdown-induced wanderlust, I’ve started dreaming about where to go when we can travel again, and a beer tour through the Dolomites in the Friuli region is at the top of my list, starting with Birri cio Artigianale Foglie d’Erba. e rst draw is that Foglie d’Erba make excellent, charismatic beers. But the brewery itself is set in the Dolomite mountains, one of the most beautiful parts of Europe. I’ve been through the
area a few times over the years and was always wowed by the scenery.”
UNITED STATES
e U.S. is home to many of the world’s most exciting breweries. My last pre-pandemic trip was to New York City, and I can certainly vouch for Brooklyn’s incredible beer scene. While Crystal Luxmore would love to visit Scratch Brewing, a farmhouse brewery in a forest in Illinois that brews with farmed and foraged ingredients like mushrooms, nettle and hickory.
e U.S. west coast o ers several craft beer hotspots, including San Diego, Portland, and Seattle. Heck, once the Canada-U.S. border opens again, I’ll be happy just to visit Bellingham, which is a three-hour ferry ride from where I live in Victoria, B.C. j

Hey, we’ve got great beer here in Canada
Perhaps your budget isn’t quite ready to take you to Europe. No problem: we have amazing beer right here in Canada. Personally, I’d love to check out Halifax’s craft beer community. Tara Luxmore, co-editor of The Growler Ontario, says Québec’s Gaspé Peninsula is at the top of her list: key stops are Pit Caribou and Brasserie Auval, along with terroir-driven breweries on the far-flung Îles de la Madeleine.
Of course, I recommend checking out the amazing beer scene out here in British Columbia. B.C. has more than 200 breweries now so you will have no trouble finding craft beer pretty much anywhere you go. That said, I’d recommend Vancouver for its diverse and vibrant scene— there are 30 breweries in the city itself plus at least that many in the surrounding area, most of which opened in the past five years. And no beer-focused visit to B.C. would be complete without visiting Victoria, home of Spinnakers, Canada’s first brewpub dating back to 1984, along with a dozen other breweries, including well known companies such as Phillips, Hoyne, and Driftwood. The Birth of Great Lakes Spirits
When the pandemic hit last spring, Great Lakes Brewery (GLB) decided to collect all of the full kegs they had in the market and replace them with fresh beer once bars and restaurants reopened. But with over 15,000 litres of beer about to go to waste, GLB President Peter Bulut Jr. decided to buy something he’d always wanted, but now needed, a still.
Bulut wanted to honour the dream of his late father, Peter Bulut Sr., who founded GLB and had always dreamed of going into the spirits business. Now it nally made sense, by procuring a still, the brewery could transform all of the spent beer into hand sanitizer. ey could also apply for the licensing to make and sell spirits. ere was just one problem, there was no one on the team to head up the new operation.
For eight years, Matt Bod was the brewer and bar manager at Bar Hop, a hip Toronto beer bar
with three locations. Laid o in the rst week of lockdown, he spent ve long weeks at home feeling restless. So, he knocked on the door of his landlord, Mike Lackey, who is the Head Brewer at GLB and asked if he needed help loading boxes on the canning line. Lackey came back with a di erent role, Distiller.
So Bod got to work, starting with hand sanitizer: “It was an awesome chance to learn a new skill set in the craziest year ever,” he said, “I had ve weeks to learn how to distill with no pressure. Making hand sanitizer is really, really easy because you don’t care what it tastes like, all you have to do is make sure not to blow anything up and you’re good to go.”
Zero explosions and 2,500 bottles of sanitizer later, Bod started digging into gin. Rather than a juniper-forward, London style gin, he opted for a bright, citrusy spirit made with lemon, lime and orange zest, all food waste products, plus fruity and spicy pink peppercorns, sarsaparilla and a handful of other ingredients.

e next step was crafting a ready-to-drink (RTD) cocktail that t with the GLB brand.
“We tasted a bunch of the popular ones on the market, they had that arti cial taste to them, even if it says natural avours, like mango, there’s no way an actual mango ever went near the drink,” says Bod. Troy Burtch, GLB’s Director of Marketing adds, “We don’t skimp on ingredients and processes when it comes to Canuck, so we used that same ethos with our spirits and RTDs.”
Instead of the crystal clear zzy RTDs that drink like a La Croix, GLB’s versions are cloudy, full- avoured and more complex. Made with gin or vodka, they come in citrus or key lime avours with rotating seasonals like strawberry and hover around 130 calories. ey’re also venturing into seltzer with a tropical-inspired tipple coming out this spring.
e response has been positive, regulars are grabbing a couple of RTDs along with their beer and the Vodka Soda with Citrus has been picked up by the LCBO.
So what’s the long-term goal for GLB? “We want to have fun and do it well,” said Burtch, “We have so many events in the summer and having seltzer, hard soda and beer on hand provides so many options for drinkers.”
Mad Science Seltzer at Indie Alehouse
One of the main reasons breweries are venturing into the hard seltzer market is because it’s a fermented beverage and the process is a lot like brewing, so there’s no need for extra licensing or equipment. Developing a new product takes a lot of time, which is something Indie Ale House owner Jason Fischer knew he’d have on his hands last March. Along with a production brewery and the agship Junction brewpub, Indie also runs a small brewery within Toronto’s Eataly marketplace. Sitting in on meetings with the Eataly team, a large operation with stores worldwide, Fischer gleaned the insight that COVID-19 was here for a while, not just the four-to-six-week lockdown that was projected.
So while the Eataly team discussed changes in selling beer and wine to-go and new product ideas, Fischer started talking with the brewers.
HARD SELTZER OR HARD SODA?
It’s easy to confuse these two beverages, but GLB’s Matt Bod explains the di erence:
“A seltzer is made up of fermented sugars without any grain or hops, and it’s made in the same basic process as beer,” explains Bod. “Put the sugar into the kettle, heat it up, chill it, send it to a tank and pitch yeast.”
“Hard sodas start by making the spirit, then blending it with juice and soda water made in-house,” added Bod, “It’s not that di erent from getting a mixed drink at a bar.”

“We started to think about what would work on the patio,” he says, “we don’t have a distillery so it kind of shaped our options and we came up with a seltzer.”
Inspired by Italian soda avours and with access to premium ingredient suppliers through Eataly, Fischer started to experiment. “Part of last year was me doing the mad scientist thing alone in the basement of Eataly for three months, making little tinctures and avours and teas and using roots and all sorts of weird things,” said Fischer, “at one point there was 100 di erent coloured jars in the fridge.”
Indie’s Junction location got a sidewalk patio last summer thanks to the CafeTO program, and without a ton of fresh kegged beer on hand, they tried out a 6.5% ABV Cherry Vanilla Seltzer and served it over ice. It sold out quickly on draught, but the canned version did not hit the standard Indie was aiming for, so they spent the fall and winter re ning the process and experimenting with avour.
“We could make a seltzer that’s fake, cheap, easy and try to make money, which is something we desperately need with COVID, but that’s not a t for us,” Fischer says, “So we’re going to try and make a higher end, better version and still keep it cheap, so we can reach people who didn’t have us
on their radar, but they try it and decide to spend their money on it rather than on a clear, arti cial product.”
After so much trial and error, Royal Fizz Italian Bitter Orange Seltzer, which is made with amaro herbs and roots, is launching this spring at Indie and Eataly. Dry, spritzy and complex, it balances bitter herbal notes against citrus avours, and it’s delicious. Meanwhile all that tinkering in Eataly’s basement has led to more avours being developed—watch for a red berry and amaretto mix and a dry lemon seltzer this summer. j

With two locations in Kingston, Ontario, this cozy co ee house is known for its home-baked treats, latte art and welcoming vibes. Owners, husband-and-wife team, Mitali and Vid Banerjee founded KCH in 2017. e couple has two other restaurants behind them, including a rooftop restaurant in Indore, India. When it comes to food, they approach it from place of passion. Take one of the café’s most popular dishes—the butter chicken sandwich. Rich, spicy butter chicken, marinated in their house spice mix and cooked in a tangy tomato sauce, is sandwiched between two fresh naans. We’ve made this recipe in batch size so you can make a bunch of the lling and freeze some for later.
A light-bodied dark beer will counter the sweet, rich sauce without overwhelming it. Mu , from Matron’s Fine Beer in Prince Edward County, has
lightly bitter co ee and toasty notes that contrast the tangy, sweet sauce. While its light body, ne bubbles and dry leave your tongue refreshed between bites.

RECIPE

INgredients
Makes approximately 10 sandwiches. Mix keeps in fridge for 3 days, or freeze up to 3 months.
Sandwiches
• 4 chicken breasts
• 2 tbsp salted butter
• 2 tsp crushed dry fenugreek
• 2-3 tsp dry "Butter Chicken Masala" spice (a combination of red chilli, coriander, cloves, nutmeg, garlic, dry ginger, and black pepper powder)—available at any Indian grocery store
• Butter Chicken Sauce (recipe below, or if you’re in a hurry, use a grocery store version)
• Mini naan rounds
• Spring onions
House Spice Mix
• 2 tsp red chili powder
• 3 tsp Tandoori Masala or Garam Masala
• Pinch of salt
• 1 lemon
• 1 tbsp oil
Butter Chicken Sauce
• 2 tbsp butter
• 3 nely chopped onions
• 6 garlic cloves
• ½ inch ginger
• 1 can tomato paste
• Salt and sugar to taste
• 3 tbsp heavy cream
directions
1. Preheat oven to 450°F. Combine red chili powder, Tandoori Masala or Garam Masala, salt, lemon juice and oil to make the House Spice Mix.
2. Marinate chicken breasts in the house spice mix for 30 minutes in a refrigerator, transfer to the oven.
3. In the meantime, prepare the Butter Chicken Sauce (see recipe below)
4. Lightly grease a pan and cook the chicken pieces for 15-18 minutes, until the breasts reach a temperature of 165°F. Cool then coarsely shred with a fork for the sandwich mix.
5. Now the step where you add all the avors! In a saucepan, melt butter, add fenugreek (our secret ingredient!)

6. Add 2-3 tsp of Butter Chicken Masala spice mix, and the shredded chicken. Cook for two minutes, then add Butter Chicken Sauce.
7. Mix the chicken and sauce well. Cook on medium heat for a few minutes to evaporate most of the water.
8. Allow to cool. Spread mix onto mini naan rounds, add spring onions and top with naan.
Butter Chicken Sauce
1. Melt butter in a medium-sized saucepan. Add chopped onions, garlic cloves and ginger, cook until golden brown, about 15-20 minutes, stirring occasionally.
2. Add tomato paste and mix well. Cover and cook for 10 minutes.
3. Transfer to a blender and blend until smooth. en transfer back to the pan and add salt and sugar to taste. Stir in heavy cream and remove from heat. j
