THE EDITOR'S NOTE IT IS always slightly disconcerting to come back from a sunny holiday abroad, return to work and immediately have to deal with adverts and events that are all promoting Christmas. The move from summer to autumn this year seemed to be almost instantaneous, so I have gone from shorts and polos to jumpers and jackets overnight. Let’s hope that we can hold off using scarves for a good few months yet. At the time of writing, my friend Jane and I are just about to see off 50 vintage, veteran and classic motor cars on the annual GUTS Motor Tour, which raises money for Guildford Undetected Tumour Screening at the Royal Surrey hospital. This year, we are visiting the Wellington Country Park, followed by a picnic lunch at the Royal Military Academy, Sandhurst. This is the fifth tour we have organised and after this year, we will have raised close to £20,000 for a very worthwhile local charity. If anyone out there would like to help Jane and I with this endeavour next year (and beyond), please email me at gutsmotortour@gmail.com as we would love to have a bit more help! You will note this month that we have slightly redesigned the cover and the insides of the magazine to incorporate our new logo, which is one we have been using for the past few months on our social media pages. These are just a few cosmetic changes to the magazine as we approach our tenth year of publishing community magazines next year. How time flies! On page 10 of this month’s issue, you can read about VantagePoint being awarded the Trade Mark Surrey Hills. I won’t repeat myself here but we are all very proud of this and my thanks goes to my colleagues and our writers who have all promoted this area, its businesses and the products they make and sell over the past nine years.

HALLOWEEN

Over the past few years Halloween has quickly become the party occasion of the year, says Sindy Hammond-Jones. TEN YEARS ago, you may have seen a few carved pumpkins dotted about, and the odd little ghost draped in bed linen wandering the streets, but now, in 2018, Halloween really is big business. Love it, or hate it, this celebration is not going anywhere, and in fact, it will only get bigger. With schools, businesses and work places all embracing Halloween, it’s hard not to get involved one way or another. Halloween for any party shop is the busiest time of year. People celebrate it in so many different ways, from great big parties to simply going out trick or treating. It is quite often a drawn out celebration, with perhaps a party at the weekend before (this year it is Saturday 27th October) and then out trick or treating on the actual night, Wednesday 31st October. At The Party Company in Godalming, we have been planning for the big event since March, but so many people leave it to the last minute.

Fancy dress It’s always a tricky one as everyone always thinks they have to go for the blood and gore... when actually if you look at the Americans, who in my opinion are the Kings and Queens of Halloween (they’ve been all out celebrating this for much longer), it’s more about imagination and creating the funkiest characters from their favourite books or TV shows. This I feel can take the pressure off and makes it a lot easier, as you can just accessorise day-to-day outfits or add to fancy dress costumes you already have. For instance, pirate or princess costumes can be turned into dead pirates or princesses... spray with some fabric blood and paint yourself white and then add a dash of talcum powder through back combed hair. Decorations Another favourite part of Halloween is decorating, purely because there are SO many options these days. You can go from decorating your porch with a carved pumpkin and some spiders webs, to silhouettes in your windows or go the whole hog with the entire house. Just do what you are happy to put up and take down, after all sometimes it’s only just for the day. Food This is something fun to do with the children, from making edible fingers out of hot dogs, stuffed eyeballs from lychees to jelly brains, the creativity is endless. Pinterest is a fountain of knowledge for all your creative needs… Finally, if you do decide to celebrate the frolics of Halloween, make sure you get to enjoy it and don’t make the to-do list the impossible list.

Hare are a few survival tips to get you through the ghoulish part of the season: Trick or treating If you’re not a fan of trick or treaters knocking on your door, then baton down the hatches, close the gates and leave your porch light off! Many newspapers now publish a poster you can put up to say no to trick or treaters. So this is always worth looking out for. Alternatively, if you’re happy to supply everyone with the sugar rush of the century, maybe put a carved pumpkin or a candle outside your house to show parents and children that you’re happy for people to knock on the door. If you’re feeling generous when handing out treats, make sure they are wrapped. I personally give an option of

The Watts Gallery and Artists’ Village Phil Kemp is captivated by an engrossing tour of the home and art of England’s Michelangelo. HIDDEN AWAY in the beautiful Compton countryside near Guildford is a unique celebration of the ‘Art for All’ passion of the Victorian artists George and Mary Watts. I confess that, apart from a brief visit some years before The Watts Gallery was completely renovated following a very effective fundraising drive, I had not taken much interest. However during a tour of the gallery a few weeks ago I very quickly started to scold myself for having missed out on a truly fascinating and absorbing experience. This not only for the art I was to enjoy, but also learning how The Watts Gallery and Artists’ Village proactively engages with the community - and reaches out to provide a wide range of opportunities to experience hands-on creative ‘make’ sessions. As we approached the main building my guide, Susanna Plummer, explained what a critical role volunteers play in keeping the gallery open. “We have over 300 volunteers who you will meet throughout your visit. They literally help everywhere and are hands-on with everything ensuring we stay open. A hard core of about 50 put in a lot of hours on a constant and ongoing basis. They’re brilliant!”

“This is the main gallery,” Susanna explained as we walked into a very spacious well-lit area with tall ceilings divided by a series of arches. The first room boasted an amazing rich red flocked wallpaper, and the second a deep blue - both of which so impressed me with the way they didn’t detract as you’d perhaps expect, but instead provided a perfect backdrop for the collection of paintings displayed there. “There are a couple of works I’d like to introduce you to that for us are pride of place. This is After the Deluge,” said Susanna, as we stood beneath a large oil painting with a huge sun at its centre completely dwarfing a watery landscape below. “The idea is that after 40 days and 40 nights of rain in Noah’s Flood this portrays the 41st day. Now, the open-ended question for you is as to whether you interpret this as a sunset or perhaps a sunrise?” The more I looked at the painting, which took George Watts more than five years to complete, the

THE WATTS GALLERY AND ARTISTS' VILLAGE postcard of this painting into Robben Island where he was imprisoned and it gave him strength. Barack Obama, who apparently had also been deeply moved by the painting, used this as the theme of a keynote address and for a book he had written.” Now initially, as I started to examine the painting, all I could see was a female figure sitting hunched on a rock blindfolded and holding a lyre. But as I looked deeper I could see that she was actually seated on a globe, her face looked totally at peace, and despite the fact that there was only one string left on the instrument, she could still play it. Susanna had obviously noted my deepening response, and smiling she asked: “And can you make out the star at the top? One little star – and that’s hope isn’t it? Children tend to spot that star straight away!” I must admit that I hadn’t, but thanks to Susanna I realised not only what a remarkable gallery this was but what an incredible artist Watts had been. I had already been challenged prior to my visit by a description of the artist as ‘England’s Michelangelo’ - which to me as an uninformed visitor seemed perhaps overstated. But I very quickly came around to the realisation that he was so capable of delivering very enquiring interpretations of what he saw and experienced around him, and with such deep emotion. Surely, he and Michelangelo were not dissimilar in that respect?

more absorbed in the question I became. I was looking for positives, and perhaps what is so clever here is that perhaps a sunrise as a beginning is more positive than a sunset which represents the end. Or does a glorious sunset augur well for a perfect day tomorrow? Susanna broke me away from my conundrum as she steered me towards the second painting, although I was not in any way prepared for the emotional response this was to trigger for me. “This is Hope which Watts painted around the same time,” explained Susanna. “I went to a talk awhile ago in which I learned that Nelson Mandela had snuck a

The sculpture here is the original plaster one and from which full-sized bronze statues have been cast and that now stand in London, Cape Town in South Africa, and Harare in Zimbabwe. “It’s absolutely spectacular – and this has again been re-cast in bronze and is coming to stand on the edge of the Artists’ Village estate,” said Susanna. “You should be able to see it when driving both ways along the A3!” We explored Limnerslease, the imposing Arts and Crafts half-timbered home of George and Mary on the other side of the

THE WATTS GALLERY AND ARTISTS' VILLAGE

“When they came to Compton they realised that not only had a lot of the traditional crafts fallen out of favour, but that the largely local agricultural economy was declining in the face of the modernising Victorian era,” explained Susanna. “So they decided to help train the local community in practical crafts and founded The Compton Pottery in 1898. In fact the Watts Chapel was crafted and built by Mary, an acclaimed designer in her own right, with the help of the community.” If you’ve not visited the extraordinary red brick domed chapel a few hundred yards down the lane from the house you must. It is an Arts and Crafts masterpiece adorned with terracotta tiles and boasts breathtaking blue-green-bronze panels sympathetically illuminated by recently upgraded lighting. A visit to the house provides an opportunity to explore George and Mary’s adjoining studios where they worked tirelessly on pushing the bounds of their creativity. “Here in The Compton Gallery you can watch a film about the Estate and see the Artists’ Village being born,” said Susanna. “You can also see personal effects in the display cases. This one for example has Mary’s diary in it. And you learn about how successful the Compton Pottery was trading as it did until the 1950s. Pieces from the pottery were sold at Liberty’s, the famous store in London.” I was particularly taken by George’s own studio where he worked every day, and which is dominated by the huge canvas of The Court of Death, his last major work. It hangs on a hoist above a trap door so it could be lowered in to the room below enabling him to effortlessly work on the higher parts. Oh, and don’t forget to ask to see the skeleton in the cupboard… On the ground floor there are two learning studios where hands-on educational visits are hosted. Madeleine Pike, who helps organise the studios’ activities, explained: “We tend to tailor the workshop visits to what they’re studying in school. So they can be quite specifically geared for example to look at pottery, sculpture, or printmaking, with the creative workshop led by the artist. And we also have makebased workshops open to everyone.”

As well as a visit to the gallery shop, housed in the old Compton Pottery and where you can browse a wide range of bespoke and artisan products, also enjoy The Tea Shop with its mismatched crockery (donated by members of the public) and their Scone of the Day. And the last word without question went to Susanna: “Nowhere else in the world could I have butternut squash soup served up with a Nutella scone!” There’s so much more I could share about The Watts Gallery and Artists’ Village. Pets and Fireworks Zoe Blake considers some precautions to keep your pet calm on fireworks night WE ARE getting nearer to that time of year that many a pet owner fears… fireworks night! This can be a stressful time for our pets and us owners. Sadly it’s not just a ‘one night’ occurrence anymore, they can continue on for a few weeks making it impossible for us to know when we might get caught out. It’s natural that our pets may show a mild reaction to the noises, however reactions can be severe and put our pet at risk of injury. Dogs may pant, shake, hide away, bark, toilet themselves, and some may even destroy their immediate environment almost trying to dig themselves free. Cats will hide, become withdrawn, urinate in the house and over groom. If we plan early we can hopefully reduce the stress and anxiety that is felt by our pets (and us). So what can we do? Before the night First set up a den; often animals will feel safer if they have a hiding place to go to. This can already be an area that our pets like to spend time in, such as a crate/bed/ wardrobe. Provide plenty of bedding and padding to ensure the animal sees it as inviting. Pop a blanket over the top if you can as this can muffle the external noises. If you don’t have this sort of set up already then now is the time to think about where you might be able to make one. Moving furniture and clearing out cupboards can free up areas that can be adapted but

please remember that your pet needs to feel this is a place of safety and not somewhere that is seen as a punishment. Ideally set this up a good few weeks before you anticipate them starting. There are a number of calming products/supplements on the market which may help, I am happy to discuss these with you if you contact me. Sadly for some, these products are not enough and so medication can be prescribed but you would need to discuss this with your veterinary surgeon. I often recommend a ‘dummy run’ before the night if using medication to check that the dose prescribed has the desired effect. On the night Ensure all windows and doors are closed and you have the TV on or music playing. Distract your pets by offering them toys, treats or playtime. Walk all dogs early so as not to get caught out by the early evening fireworks. Keep all cats inside overnight and consider bringing in rabbits/guinea pigs that live outside. Ensure all resources are provided for your pet if you have changed their normal circumstances, so a normally outdoor cat will require a litter tray etc. Most importantly don’t punish your pet for displaying unwanted behaviour as this can make them more distressed. Consider a natural supplement or pheromone product to make them feel calmer. Use medication as prescribed. After the night Consider a de-sensitizing programme once firework season is over. Good luck! Elizabeth Finn comes to Haslemere

You may not have heard of Elizabeth Finn before, but her former home in London is commemorated by an English Heritage Blue Plaque. Why? At the age of 72, this visionary lady decided to make a stand against poverty, rife in Victorian times, and founded the Distressed Gentlefolks’ Aid Association, a wonderfully old-fashioned term today. Over the years the name of the charity has changed, finally to Turn2us, but its aims remain today as they were 120 years ago, to help those living in poverty. Elizabeth Finn Homes Ltd, a wholly owned subsidiary of the charity, operates a group of nine awardwinning care homes across England providing personal and nursing care. Although the Homes are run on a commercial basis, any operating surplus at the end of the financial year passes to Turn2us to support its work – how brilliant is that? The tenth home in the Elizabeth Finn Group will open in Haslemere in the autumn, on the site of the former Wispers School. Along with all other Elizabeth Finn Homes, Oak Hall will focus on providing industry-leading personalised care, with first-rate facilities and equipment throughout. Oak Hall has four categories of room ranging from standard to suites, suitable for a couple. All are light, airy and have ensuite wet-room facilities; all have restful colour-schemes with high quality softfurnishings. There are also assisted-bathrooms available and the floors are serviced by three lifts. The dining experience will be to the same exceptional standard as the care provided, with restaurant-style dining from a changing menu

utilising fresh, seasonal ingredients. The impressive reception areas in the Home are complimented by the adjoining Country Club, complete with a bistro, fully licensed bar and a coffee area. The residents of the retirement village in the grounds of Oak Hall are welcome to use these facilities. Oak Hall will offer a range of care options: residential, full nursing care, respite, convalescence and specialist palliative care. We employ the best in order to provide the best care and will have high ratios of staff to residents. We believe that quality of life is as important as quality of care, and our social engagement team will liaise with residents to establish their interests in order to develop engagement opportunities tailored to the individual. Oak Hall will have an enlightened, innovative approach to care of the elderly with the holistic needs of our residents firmly at the centre of everything we do. As autumn approaches, all the team at Oak Hall are focussed on ensuring that everyone and everything will be ready to do precisely that. Highways England - motorway heroes! Andy Goundry takes a look behind the scenes MOST DRIVERS will have grumbled about whoever was responsible for setting the overhead warning signs on a motorway after obeying their warnings of problems ahead, only to find the road completely clear. However, Highways England is the organisation responsible for those messages, and a visit to their south-eastern control centre in Godstone made us see the signs in a new light. Highways England, not the police, are responsible for getting motorway obstructions safely cleared and the road reopened as quickly as possible. Traffic conditions are monitored by cameras mounted high up alongside the motorway. Whilst these are separate from the police speed cameras, anyone of a less than law-abiding disposition should note that the footage is recorded and could be used as evidence of bad driving. Each control centre operator has a bank of screens and controls to monitor the relevant cameras, switch on overhead sign information as required, and communicate with their traffic officers on the motorways. Other operators handle communications into and out of the centre, for example, to alert local radio and TV stations of incidents as they develop. Indeed, BBC Radio Surrey and Sussex's traffic reporter, Sylvie Blackmore, works from a mini studio in the Godstone Centre. The initial report about an incident is usually a phone call from a member of the public. The operator's first task is then to warn traffic heading towards the scene, so an overhead

sign warning must be set within those first few seconds. At that stage, the incident is probably still unverified (yes, people do sadly raise false alarm calls), so these

HIGHWAYS ENGLAND messages will include the word ‘reported’, for example, ‘report of accident ahead’. And guess what the biggest problem they face in responding to a caller’s message is? Us, the road users! Why? Because usually, the caller has no real idea of where they are on the motorway, or sometimes even which motorway they are on, particularly when they call using a mobile phone. If it's safe to do so, it's better to use one of the emergency phones at the side of the motorway, which connect directly to the nearest control centre and automatically identifies the location. If you have to use a mobile phone, try to give the operator the number of the closest marker post – these are located around 100 metres apart on every motorway. As soon as the incident has been assessed, the overhead messages are changed to give more information or instructions. So if you see an overhead sign which does not include the word ‘reported’, be especially wary – because it is telling you that an incident really has taken place.

Images, clockwise from above: Typical motorway distance markers, giving the operator the numbers from these will save vital time in an emergency; A typical Traffic Officer 4x4; a Traffic Officer demonstrating the towing equipment on his 4x4.

If the incident is a breakdown, Highways England traffic officers (not the police) are solely responsible for dealing with these, using their familiar black and yellow chequered 4x4s. Despite the traffic officers being the first attendees at many incidents and so acting almost as a fourth emergency service, they are amazingly not allowed to drive using blue lights or sirens, or even exceed the speed limit. This often results in a crew rushing at their maximum-permitted speed to an incident whilst traffic hurtles past them blatantly ignoring the speed limit and the overhead warning signs! Once at an incident, the crew will assess the situation and update control. Their duty is to then get the motorway open again as soon as possible. For example, if it’s a breakdown in one of the ‘live lanes’, the disabled vehicle is dragged off the road to a place of safety. If you've ever wondered why the traffic officers need to use big 4x4s, it’s because they are able to drag a 44-tonne articulated truck. Often the crew need to make a temporary motorway closure to allow a vehicle or debris to be removed from the carriageway, and this is done by just one two-man crew. Starting at motorway speed with ‘Do Not Pass’ warning signs illuminated, the 4x4 then gradually slows all lanes of traffic,

22

V.

Haslemere, Midhurst & Petworth

stopping them at a safe distance from the incident. One crew member starts dealing with the incident whilst the other speaks to the lead drivers in the stationary traffic lanes to ensure that they do not drive off until given the all-clear. Once the motorway has been cleared, the traffic officers then restart the traffic flowing as quickly as possible. Not until then can the centre operator switch off the overhead signs. The work of the traffic officers can be incredibly dangerous: close proximity to a busy motorway is a very dangerous place to be, and sadly more than one of them has lost their life whilst performing their duties. So next time you see the overhead warning signs operating, drive accordingly, but spare a thought for all the work going on behind the scenes to keep us all safe, and moving, on our motorway network. How recent is Your Will? Does it qualify for the new tax allowance’ Residence Nil Rate Band? You have worked hard for everything you have, a Will enables you to provide for those you love. An out of date or badly written Will can cause distress, needless expense and often legal disputes in the family as well as higher levels of tax. It really is worth doing the job properly. If you do not have a Will the State distributes your assets and often tax is higher.

If your Will is several years old:  The Residence Nil Rate Band is worth a lot in tax saving but only applies in certain circumstances. Your Will should be checked..  Births, marriages, divorces, and deaths may mean your Will is out of date.  The law has changed considerably in the last 10 years.

Home Made Wills are often disastrous: The State’s distribution of your assets may not be what you would like and very often results in a higher tax:  Children have inheritance rights. A legally married spouse may not inherit enough.  A long term partner (who is not a spouse or registered civil partner) does not inherit anything.  If no guardian is appointed by Will orphaned 

children are the responsibility of the Local Authority. A family member who inherits may lose State Benefits.

Charcoal Making by the Wey Valley Woodman

Phil Kemp meets up with artisan Ian Baldwin to learn how charcoal is made sustainably WE ALL enjoy a good barbecue in the summer, don’t we? And the majority of us still enjoy and champion the traditional smoky sizzle over red-hot charcoal, rather than the more clinical cook on a fancy gasflame grill. As you noisily tip a good pile of lump charcoal into the bowl of your barbecue have you ever wondered how it is made and where it comes from? I went to see local artisan charcoal burner Ian Baldwin who with over 20 years’ experience was to really open my eyes on this traditional craft in action. As we walked towards his yard on the Birtley Estate near Bramley, I could see his three kilns with neat wood piles surrounding each of them. One was in full burn, chimneys smoking. “I worked as a ranger for nearly 18 years at various locations for the council,” explained Ian in response to my question as to how he got involved in charcoal. “Working in countryside management provided me with a good skills-base and knowledge of

everything woody. And the nice thing about what I’m doing now is that I’m able to deal with say a problem dangerous tree and turn it into something useful. A lot of the timber you see sitting around here you couldn’t do much with. A lot is very knotty and low-grade firewood, and I can re-use in effect old fencing posts for example - and we’ve even turned an old butcher’s block into charcoal!” Standing next to the closest of the kilns, each of which endearingly have their own names, these being Hermione, Ron and Harry (the oldest one) which you may have already twigged are Potteresque, Ian started to explain the process. “A normal bonfire has unlimited oxygen available. Inside a kiln you can restrict this. Around the outer circumference and level to the ground are four air vents. With the four chimneys you have in effect eight points of the compass, four in and four out, providing a constant but controllable feed of oxygen.”

CHARCOAL MAKING We looked inside one of the kilns being prepared for a new burn. “We stack the kiln to the top and then pour hot coals down into the middle to get it going, so effectively starting a small fire in the centre fed by a limited supply of oxygen. It's more like baking wood in a process called pyrolysis. This is where you’re using fire to boil off the more reactive chemicals first. The water boils off as steam. The slowest in the queue to grab oxygen is carbon - which is handy of course as that’s exactly what you’re after.” Ian pointed to the smoke coming out of the chimneys of the kiln in full burn. “First you get white smoke which is mainly steam as the water boils off. Then the smoke turns blue, to grey, to colourless. And it is at that point that we stop any more oxygen getting in by filling in the vent holes at the bottom to close the burn down.” I watched Ian’s team for the day hard at work unloading freshly-made charcoal from one kiln in readiness for grading on what Ian fondly refers to as Santa’s sleigh, as the chute is remarkably similar in shape. And then loading it with fresh logs. Mike, Ollie and Richard were only recognisable by the colours of their t-shirts as all were wearing respiratory masks. “And what’s nice about it really is that it is sort of ‘grunty’. You’re humping bits of wood around and putting them in the right place. There is a degree of technicality of course but it is minimal.” Looking inside one of the large paper sacks filled with perfectly baked charcoal ready to go on sale I felt that this was quite a degree of understatement, but I was in the company of undoubtedly a highly experienced specialist. And this view was endorsed by what Ian explained next. “Biochar is a new word you need to look up. It’s very small bits of charcoal that are an extremely clever soil improver. First discovered in the Amazon as thick layers of charcoal from a long-lost civilisation - added to the soil it grabs hold of not just water but trace minerals that would otherwise leach out and be lost. I’m currently investigating

with Secretts on trials using my biochar, and hopefully involving Surrey University too.” Ian had also shown me some large flat tins with holes punched into the lids, and in which he’d burned willow to make charcoal pencils favoured by artists. And this is something you could do at home. But could you start your own charcoal kiln? Well yes, if you can find an acceptable location given smoking chimneys – and have around £1,300 to spend on a new one. You could build one I suppose if you have the metalworking skills – but achieving the highly effective burns of The Wey Valley Woodman would take a lot of learning. Autumn Recipes Shallot, Pumpkin and Red Pepper Soup with Candied Shallot and Pumpkin Seeds

Butternut Squash, Shallot & Butterbean Casserole

Ingredients:

Ingredients:

For the soup: 4 red peppers, deseeded and cut into quarters, 30g butter, 1 tbsp rapeseed oil, 6 shallots, diced and peeled, 750g pumpkin, peeled and diced into 2cm pieces, 1 red chilli, deseeded and finely chopped, 4 garlic cloves, peeled and crushed, leaves of one sprig of thyme, 1.2 litre good vegetable stock, 100ml double cream (optional), sea salt and black pepper. For the candied shallots: 250g unsalted butter, 1/4 tsp of cumin seeds, 8 (250g) shallots, peeled and sliced, 1/4 tsp ground cumin, 1/4 tsp paprika, 1 tsp honey. To serve: 2 tsp chives, finely chopped, 30g pumpkin seeds, toasted, 120ml low fat crème fraiche.

Method:

1. Place the peppers skin side up, on a baking sheet and roast in the preheated oven for 20-25 minutes, until the skins are charred. Remove from the oven and place in a bowl. Cover with cling film and leave to cool. Once cool, peel off the skins, and reserve the flesh. 2. Meanwhile, melt the butter with oil in a large, heavy based saucepan. Add the shallots, pumpkin and red chilli, season with sea salt and black pepper and sweat the vegetables for 5-10 minutes without browning. Add the garlic and thyme and cook on a low heat for a further minute. Pour in the vegetable stock, bring to the boil and simmer gently for 15 minutes. Add in the red peppers and cook for a further 5 minutes. 3. For the candied shallots, melt the butter in a small pan over a medium heat, add the cumin seeds and shallots and fry until soft. Add the ground cumin and paprika and cook the shallots for a further 1 minute, stirring the shallot mixture all the time to prevent burning. Fry until caramelised for approx. 1-2 minutes. Remove from the heat and season with sea salt and stir in the honey. 4. Blend the soup in a food processor or with a hand blender and adjust the seasoning to taste. Return to the pan, if a little thick add more stock and if you wish, stir in the cream. Gently reheat the soup and ladle into warmed bowls. Place a spoonful of low fat crème fraiche in each and sprinkle with the chives, toasted pumpkin seeds and candied shallots.

1 medium butternut squash (approx 600-800g), cut into 2.5cm chunks (leave the skin on for added texture), 12 shallots, peeled and left whole, 6 sage leaves, roughly chopped, 3 tbsp extra virgin olive oil, 3 cloves garlic, crushed, 1 heaped tbsp flour, 175ml white wine, 1 tin butterbeans, drained and rinsed, 400ml vegetable stock, 2 tbsp sundried tomato paste. For the dumplings: 200g self raising flour, 100g vegetable suet, 2 tsp dried mixed herbs, salt and freshly ground black pepper, 5-8 tbsp cold water‍.

Method:

1. Place the butternut squash and shallots in a roasting tin along with the olive oil, sage leaves and a good grind of pepper and salt to taste. Roast in a hot oven (220°C/ Gas 7) for 20-30 minutes until the vegetables are tinged with colour at the edges. 2. Whilst the squash and shallots are cooking make the dumplings by combining all the dry ingredients in a large bowl. Add enough cold water to bring it together to make a soft dough. Shape the dough into 8 small balls and set aside. 3. When the squash and shallots are cooked, remove from the oven and turn the temperature down to 180°C/Gas 4. 4. Add the flour to the roasting tin, stirring to coat the vegetables and soak up all the roasting juices. Add the garlic and white wine to the roasting tin, scraping the bottom to release all the sticky caramelised bits. 5. Transfer to an oven proof casserole and add the beans, sundried tomato paste and enough vegetable stock to cover the vegetables. Give everything a good stir, Bring to the boil and cover. Cook in the oven for 30 minutes. 6. Remove the casserole form the oven and carefully add the dumplings so they float on the surface. Return to the oven, uncovered, for 20 minutes until the dumplings are crispy on the outside and fluffy and cooked through on the inside. Serve immediately with mashed potatoes and green beans. GARDENING Beth Otway

Bottle gardens and terrariums

I LOVE terrariums and bottle gardens! I so enjoy designing tiny plant worlds and creating miniature gardens. This is the ideal time to build a terrarium or bottle garden, and these Lilliputian microcosms are fun to make. They really will enhance your home and provide the perfect gardening therapy through the autumn and winter months. If you’d like to create your own terrarium or bottle garden you will need: • A clear glass vessel: you could use an old fish tank, a glass jar, or an old carboy. • Grit or gravel: to form a drainage layer at the base of your terrarium. • Activated charcoal (available online and from aquarium shops) to keep the compost sweet. • Peat free coir compost: for planting. • A bucket and water: to soak your block of coir compost in, prior to planting. • A piece of weed suppressant fabric, or a remnant of cotton material: to keep the compost above from blending into your drainage layer below – cut your material to size to cover the base of your terrarium. • Terrarium plants: Choose plants that are suited to lower light levels and high humidity. For this terrarium I have used Pileas, ferns, and Fittonias, but the choice is yours, you’ll find an extensive plant list at www.pumpkinbeth.com. Instructions: • Wash your clear glass vessel and allow to dry.

30

V.

Haslemere, Midhurst & Petworth

• If your coir compost arrives in block form you will need to soak the block in a bucket of water for up to 45 minutes before planting. It’s wise to check the compost after 15 minutes, as you may need to add more water. • Water your plants to ensure that they are hydrated and ready to be planted. • Place a 2-3cm (1”) layer of grit and activated charcoal in the base of your terrarium. • Sprinkle a thin layer of activated charcoal over the top. • Then place your piece of weed suppressant fabric, or cotton material over the top to cover the grit and keep your compost separate from the drainage layer below. • Ensure that your coir compost is moist but not waterlogged, then mix some activated charcoal into your coir compost and add this compost mix to your terrarium. The compost should be about 6-7cm (2-3”) deep. • Now it’s time for the plants! You may wish to position your plants inside your terrarium first, so you can find an arrangement you’re happy with before you begin planting. • Place your planted terrarium in a bright to semi shaded position, away from harsh, direct sunlight and cold drafts. The middle of the room is often a good location, or the corners of a bright room.

MUSIC

Bold as brass!

The evening concert performance will also include the world premiere of a new work conducted and written specially for the youngsters by a prominent young composer whose works have been performed all over the world.

GRAYSHOTT CONCERTS are giving 40 of the most promising local young brass-players an inspirational musical day’s experience they will never forget. They will take part in a one-day workshop and rehearsal on Saturday 27 October 2018, working with members of the internationally acclaimed London Mozart Players (LMP) to prepare an exciting and challenging programme for the evening public concert at St Luke’s Church, Grayshott, GU26 6LF. Works will be played by youngsters in two groups, Grades 2-5 and 6-8, side-by-side with LMP members, who will tutor them throughout the day. LMP professionals will also showcase pieces performed by themselves. They will be augmented by three brass band stars for extra excitement.

Make no mistake. This is no ordinary children’s concert! You can expect to hear some of the best young performers from throughout the region, selected by the Hampshire Music Service, who are responsible for co-ordinating musical instrument tuition and excellence for over 5000 children. Add in the skills of LMP’s orchestral brass specialists plus three stars from the world of brass bands – and by the evening concert, the youngsters will have reached new heights of ability. Last year, with string players, most of us couldn’t tell the difference between the older group and the professionals themselves. The professionals will perform side-byside with youngsters and will entertain us on their own. To ensure another packed church, the tickets are entirely FREE (with a retiring collection) but must be applied for in advance at www.grayshottconcerts. co.uk to avoid over-booking (booking now open).

WEEKEND WALK

Thursley to Grayswood This interesting walk takes you through woods and fields, up and down hills and offers some splendid views. It was submitted by Guildford Rambling Club (see guildfordramblingclub.org.uk) TURN LEFT along the road and walk about 300 yards to find a tunnel, on the right, under the A3. You will need to hop over the low safety barrier to go down steps and under the A3. On the other side, turn left and walk out into a field. Follow the path down the slope half-left to reach trees and a stile. Climb over the stile and drop down left onto a track and follow it to pass the house at Hole Farm. Go out of the entrance gate and turn right. Quickly fork left to follow the wide track for about 1.25 miles. Along the way pass a lake, on your right, ignore a finger post pointing left and eventually emerge on a bend in a metalled lane. Blackhanger Farm is down to the right but you continue forward over Halnacker Hill, passing a lone house to reach a road. Turn right and walk 350 yards, passing Halnacker Cottage, to reach a road junction. Here hook back left, signed to Brook. After about 0.25 miles, find a finger post pointing right. Follow this down and then on for over a mile, along a wide grassy corridor, sometimes along the left-hand side of fields and through a number of gates until you reach a T junction with a very wide corridor. You

can see the large modern barns of Witley Farm away to your left. Here, turn right and walk up and over slight rise and on until you reach trees. Immediately you will see, on your right, an information plaque for the site of a medieval moated manor house. There is a little island, covered in primroses and daffodils in the Spring. Continue on, quickly passing a pond on your left and swinging right to follow the path into a large field. Turn right and walk along its edge to a gate onto a metalled drive. To the left is a railway bridge but you turn right. Walk a little way, almost to South Park Farm and, here, take a footpath left and into a field. Follow the path alongside the garden fence, around the end of the garden and though a gate. Turn left and follow the hedge along the grassy track to a railway embankment. The path takes you right, through a gate and up to emerge at the start of the drive to Damson Farm. Turn left and immediately go under a railway bridge. Continue along the track, passing scattered houses until eventually emerging on the Grayswood Road with All Saints Church and the green to your right and with the Wheatsheaf further along. You could picnic in the churchyard or on the green. After lunch, walk past the pub a little way and turn right, down a private road. Just beyond the first house, take a path forking off to the right. Follow this down into trees and then up to reach and cross the railway line. On the other side, continue forward to reach a junction with a yellow arrow pointing left (towards Haslemere) and another pointing right, into a small field. Enter the field and go straight across and out onto a track. Turn left. Now comes a steady one mile climb. You continue along the track, ignoring a faint fork right at a point where the track swings left. Reach a T junction with another track and turn right. Pass a lone house and ignore an immediate left. The track soon swings left and you follow it, ignoring a track right. Reach a fork and follow a yellow arrow right. The track climbs steeply and swings left. At a junction with a track heading off to the left and down, go right.

Ignoring a left turn and two forks right, go straight ahead and steeply up onto Gibbet Hill. There is a trig point here, also a memorial to a murdered sailor and splendid views. Go straight across and down onto the Quiet Lane, a metalled lane. Turn right to walk along it for about 0.75 miles to its end and then beyond. A lane merges in from the left. PROFILE

Haslemere Musical Society

V.

The concerts are often graced by top flight soloists. HMS is grateful to be supported by loyal friends, patrons and sponsors. There is lively debate about which works should be performed; every member has a voice. Many pieces chosen are from the classical repertoire. In the coming year the society will be performing Haydn’s ‘The Creation’ and the Beethoven Mass in C. After last year’s success with scenes from ‘Die Meistersinger’, the orchestra will explore more Wagner, from ‘Tristan and Isolde’ and the poignant Wesendonck-Lieder. THE HASLEMERE Musical Society was founded in 1923 and is proud to be one of the few amateur societies to have both a symphony orchestra and chorus. Members are players and singers from Haslemere and beyond; they come from all walks of life, and ages range from the mid-20s upwards. Lively rehearsals for both choir and orchestra are held at 7.30pm on Monday evenings in the Haslemere Hall, from September until May. The society presents four concerts a year. All comers are welcome at more informal summer sessions, and the come-and-sing events in St Christopher’s – where a piece is rehearsed and performed from scratch – are famous for their tea and cakes!

In December’s programme there will be not one, but two ‘Hallelujahs’: the famous chorus from the ‘Messiah’ and that by Leonard Cohen. The choir have also recently sung about a foggy day in London town and how a nightingale sang in Berkeley Square. This year is the centenary of Sir Hubert Parry. Knowing his associations with Shulbrede Priory in Linchmere, it is pleasing that Parry’s setting of Blake’s ‘Jerusalem’ will be performed in Haslemere.

HMS maintains its high standards by having four permanent professionals. Director of Music, Dr James Ross, has worked with HMS for 10 years now and has developed remarkable performance skills in both the choir and the orchestra. His work is in high demand internationally, notably for charity where, in the last 3 years, he has raised over £1 million. The society’s other professionals are Tom Horn, a gifted violinist who leads the orchestra, and Clive Osgood, the well-known Haslemere organist and composer, who is accompanist to the choir and has composed new pieces for performance. He has recently directed the choir while HMS has sought a new chorus master/mistress. Six excellent candidates have been shortlisted and each will have the opportunity to lead a rehearsal session. Why not join the choir and play a part in choosing the next chorus leader?

JOTTINGS

Jottings - your community noticeboard Jottings is your FREE community noticeboard for charities, local events, groups and information, compiled by Nick & Angie Crisell. To feature, please email jottings@vantagepublishing.co.uk by the first Friday of the month prior to month of publication. Please note that space is limited and inclusion cannot be guaranteed. I must admit to having done very little over the past month as I have been recovering from having a new knee, albeit a partial replacement. I have been fairly diligent on the exercise front and after 50 years of being told to “get on yer bike” by Angie I have done just that. Luckily the cricket has been on so I have been able to peddle away and watch at the same time. Actually, if any of you are contemplating new knees, I can say that the experience is not as bad as I thought. It’s all about exercising and being patient. Full recovery does take time but everyone I have spoken to says it is absolutely worth it. Anyway, it seems looking through the jottings, that there is quite a bit going on in October so I will definitely be getting “on me bike”! The Alpha Course Monday 1st October The course has been tried by 29 million people in 169 countries. An opportunity to explore life, faith and meaning in a relaxed environment. No pressure and no cost. Held at St. Alban’s Church, Hindhead on Monday evenings from 1st October. For details go to www.stalbanshindhead.org.uk. Everyone welcome. The Arts Society West Sussex Tuesday 2nd October 2pm Jennifer Toynbee-Holmes will talk on Whistler, Wilde and Sargent. London's Tite Street was one of the most influential artistic quarters in the late 19th century and early 20th century and her talk should be extremely interesting. On Tuesday 6th November, Philippa Barton will talk on Thomas Chippendale and his contemporaries. Furniture in Nostell Priory and Harewood House are classic examples of his work. The talk will discuss his use of mahogany and marquetry and his relationships with his patrons. Meetings held in Fittleworth Village Hall at 2pm and the doors open at 1.40pm. Tea and coffee after the lecture. Call 01903 411086 or contact jackiebuckler@sky.com for more information. Visitors most welcome - £5. See www. theartssocietywestsussex.org. RHS Garden Wisley Tuesday 2nd October 10am–6pm On this Tuesday, Wisley will open its doors to everyone for free. Go along with friends and family and enjoy the late autumn colour in the Garden. The Plant Centre has an extensive range of plants, garden accessories and garden gifts that suit all levels of gardeners’ skills. Grayshott Folk Club Wednesday 3rd October 7.30pm Grayshott Folk Club has finally got their men (and one woman)! After a great deal of perseverance and dogged determination, Police Dog Hogan has finally been brought in for questioning! Police Dog Hogan (https://policedoghogan. com/) are a hard-to-pin-down mix of Americana influences and British song writing tradition. They combine fiddle, trumpet, banjo, mandolin, accordion, drums and guitars with four-part harmonies-then fuse it all into songs whose subjects range to the first day's battle at Passchendale. These guys are rapidly becoming the go-to and must-see Festival band and this summer played to huge audiences at Wickham, Cropredy and Cornbury Festivals. Taking place at Grayshott Village Hall, Headley Road, Grayshott, Nr. Hindhead GU26 6TZ. Tickets are just £15 each and are available from Grayshott Post Office and Haslemere Bookshop or by calling Des O'Byrne on 01428 607096. Don’t miss this one; it will be a great evening! WIN Guildford Wednesday 3rd October 7pm–9pm Their next networking event will be held at Old Thorns in Liphook. Topics will include the best way of busting debt. Olivia Fenion had massive debts and will talk through how she took control of it and became solvent within 4 years. It’s a breath-taking story. She is now a successful business owner and owns an extensive property portfolio. Also speaking will be Sarah Sparks, award-winning public speaker, executive coach, author and trainer who works with senior leaders in the corporate world.
