• THE EDITOR'S NOTE We had a great response to last month’s article on dog walking, which just goes to show how many canine lovers we have in this area. One of the readerrecommended walking areas was Frensham Little Pond and a comment was included about it being a great place for dogs to swim. Unfortunately that is not the case, as I have been asked to point out by the National Trust. Because the site has been designated a Site of Special Scientific Interest by Natural England, there are some restrictions in place which include not allowing dogs to swim in the pond. I have to say that, as a regular visitor myself, I was not aware of this and it seems that many others are equally unaware, so I am happy to let readers know. I am certainly more aware that there are rare ground nesting birds that reside in the heather, such as nightjar and woodlark, and that walkers are asked that their dogs are kept under close control (preferably on leads) during the breeding season from March to September. This obviously applies to many places in our area, so please do keep an eye out for signage when out walking with our fourlegged friends. April really is a lovely month and is the ideal time for us to get out and about. We are so lucky to have lovely gardens in the wider local area, and our gardening writer Beth has picked out a few well worth visiting in her article this month. There are so many more of course and a number of these are open for charity under the National Garden Scheme (NGS). This is a great organisation, based locally near Guildford, which has over 3,700 breathtaking private gardens open every year. What a great opportunity to see gardens much like our own in size and scale - and get design and planting inspiration or just enjoy the skills of talented amateurs. revisited Phil Kemp visits the award-winning vineyard on the Hog’s Back THE CHALKY south-facing slopes of the North Downs provides a perfect setting to reward a small group of pioneering vineyard owners for their forward-thinking adventure, this being to establish English wine as not only a popular choice for wine-lovers but also to become serious contenders in the international wine scene. Michael and Hilary Wagstaff took over Greyfriars Vineyard only seven years ago and have quickly and successfully transformed it from a hobby-scale outfit into a commercially successful winery - which last year produced 70,000 bottles of sparkling wine, and 5,000 of still wine. Until recently they were also managing a vineyard in Shere near Guildford, but surprisingly the couple had no hands-on experience of growing and harvesting wine prior to this, having come individually from successful careers in the petroleum industry and legal profession. There is an interesting story as to what triggered this dramatic life-style jump, as Michael explains: “Hilary bought me a book on viticulture, written from a geological perspective by my old geology lecturer from Imperial College, and it really sparked our interest.”

Greyfriars has attracted a lot of attention in the highly competitive world of wine. In 2017 the vineyard was presented with a Gold Decanter Award for their Blanc de Blancs Brut sparkling white wine, and also silver and bronze awards.
“It was quite serendipitous really,” added Hilary. “Having been inspired by the book we had also just found our dream house in Puttenham, and then someone pointed out there was a vineyard up for sale

Michael, adding with a proud laugh: “So we must be doing something right!” I was eager to explore the vineyards to get a sense, not just of the scale of Greyfriars’ operation, but also to grasp just what it takes to run a successful English winery. Standing by an impressive expanse of rows of wired vines, stretching out into the distance of this beautiful setting on the slopes of the Hog’s Back, Michael waved his hand across the landscape before us. “We have planted 60,000 vines, supported by 400km of wire on 18,000 wooden posts. The vines start to come to life in mid-April and once the shoots get up to a manageable height we trim them with a leafcutter on the side of the tractor to manage the canopy so that you can get in to harvest the grapes.” “We also have to prepare for frosts,” added Hilary. “We can get bad ones in March but late frosts can occur well into the first or second weeks of May. You’ve seen the large pallets of what look like paint pots? Well, they’re actually ‘bougies’, the French word for candles, and we put them out in the fields, thousands of them, ready to light when we suspect a frost may strike. You could lose your crop once the buds have burst so the candles once lit raise the temperature around the vines sufficiently to prevent that.” Looking out over the vines I commented on what I could imagine as an amazing and almost surreal sight, especially when viewing them from a distance in the darkness. “Yes, it is,” agreed Michael. “We even had the BBC’s One Show phone us up having heard about this and wanting to send out a TV crew to film it. Sadly, we’d finished the candle lighting – but maybe next year?” The Wagstaffs also have a second vineyard site further along the Hog’s Back towards Guildford, and where I was to experience for myself the Monkshatch Cave. Literally dug into the chalk on the side of the North Downs this tailormade cave provides a perfect controlled environment for ageing their vintage wines. “The cave provides three-and-a-half thousand square feet of storage. We’ve currently got 140,000 bottles in here but there is capacity for quarter of a million!”, boasted Hilary.

The cave, with its cold bare chalk walls and low-lighting, felt like a perfect set for a James Bond film. Fitting perhaps as the cave and the natural roof above provides the vineyard with a perfect site for their popular open days. I am by no means a wine aficionado but my visit to Greyfriars has certainly provided a tantalising introduction to their awardwinning range of English sparkling and still white and rose wines. Why not take an adventure out onto the North Downs on one of the Wagstaff’s tastings and open days? I’d be surprised if you didn’t share my enthusiasm. GLORIOUS GARDENS Loseley's Walled Garden
April is a beautiful time to visit local gardens, says Beth Otway APRIL IS such a magical time of year! It’s quite simply awe inspiring to see the landscape being painted by mother nature in every beautiful shade of green, as more leaves unfurl and the view becomes ever greener each day. I love to be outside, surrounded by the birds singing and bees buzzing. On warm days you may see butterflies flying – look out for the green toned Brimstone butterfly this month. Whether you're looking for inspiration, a family day out, a beautiful place for a walk or an opportunity to unwind, I am sure you'll find everything you wish for in these beautiful gardens. Did you watch the recently filmed mini-series of Howards End, which was broadcast on the BBC at the end of last year? Vann, a privately-owned house and Arts and Crafts garden, near Godalming, was used as the location. Vann occupies a charming location, nestled in amongst beech and oak woodland, surrounded by fields. The gardens at Vann extend to five acres, and feature a truly magical water garden which was designed by Gertrude Jekyll and is a pure delight! A natural stream has been cleverly engineered to flow into the rill, down to the lake, via a series of ponds and into the water garden.

This area is utterly enchanting and was also planted by Gertrude Jekyll in 1911, with shuttlecock ferns, Solomon’s seal, and a multitude of spreading bog and water plants including trachystemons, peltiphyllums, rodgersias, and calthas, which have endured creating a naturalistic, lushly planted paradise. The name Vann comes from the words venne or fenne, meaning bog. The snakeshead fritillaries, which Gertrude Jekyll planted, have now spread and naturalised, they simply relish this dewy ground. Gertrude Jekyll planned much of the planting at Vann. Over the years some of this planting has evolved, newer cultivars have replaced a number of the older more invasive or less floriferous plants, but this garden is still undoubtedly a Jekyll garden. Visitors can admire the vertical Yew Walk, with its central rill and twin borders filled with crocus,

been restored and adapted by the gardens’ current owners. Dunsborough Park features borders which have undergone restoration work designed by Penelope Hobhouse, with later re-workings made by Rupert Golby. The older walled garden was remodelled with divisions to create garden rooms, which were designed by Simon Johnson. The tulip meadow will deliver the wow factor at Dunsborough Park this April, but visitors will undoubtedly be impressed by the gardens’ enchanting folly bridge, the 70ft ginkgo hedge, espalier trained fruit trees, and daffodils, alongside the garden owners’ collection of garden statues, sculptures, and ornaments. Dunsborough Park is a privately-owned house and garden, it will be opening to the public from 11.30am until 3pm, on Saturday 14th April, Thursday 19th April, Saturday 21st April and Saturday 28th April.

Vann is particularly charming in springtime, its naturalised plantings of daffodils and snakeshead fritillaries epitomise the joy and wonder of spring. Wildflowers, cowslips, and forget-me-nots only serve to add to the dreaminess of this delightful spring garden, increasing this garden’s loveliness. Vann is opening to the public from Sunday 15th April until Wednesday 18th April, opening from 10am until 6pm each day. Vann is also open every Wednesday from the 1st April 2018 to the 30th June. Don’t miss your chance to see this classically beautiful, naturalistic garden as its spring glory reveals itself. Dunsborough Park in Ripley boasts a glorious 100 acres of grounds, which feature a spectacular tulip meadow, the Dutch garden, a productive cut flower garden, a tranquil Italian garden, a beautiful white garden, and the water garden with its charming folly bridge. The gardens and grounds at Dunsborough Park were originally laid out in the eighteenth century, the gardens continued to be added to over the nineteenth and twentieth centuries, and have

Improvement works continue in earnest at RHS Garden Wisley, so the gardens may look quite different depending on when you last visited. I love to visit the Alpine House at Wisley in spring time, where you can get to know many charming, dainty alpine flowers. The plants on display are tended to daily and changed frequently, so you’ll always find a new favourite flower here! The orchard at Wisley is full of pretty apple, pear, and cherry blossom in springtime, which is complemented by spring flowering bulbs, while Battleston Hill is ablaze with the colour of camellia, magnolia, rhododendron, and azalea blooms. Do ensure that you plan at least one visit to Winkworth Arboretum in Godalming this April to enjoy their magnificent display of bluebells, which carpet the woodland at this National Trust gem. Listen out for call of the male cuckoo, or a woodpecker drilling, as you explore this woodland spring paradise. Birdwatchers can look out for chiffchaffs, willow warblers, little grebes, and common sandpipers at Winkworth, and on warm days brimstone, orange tip, speckled wood, small copper butterflies, and white butterflies can be spotted in the arboretum. Kew’s cherry walk delights visitors with a profusion of pink and white cherry blossom trees. There are at least two hundred and fifty magnolias at Kew, this is a great time to admire these magnificent trees, as well as to delight in daffodil, tulip, lilac, and wisteria flowers. From Friday 30th March to Sunday 15th April, younger visitors can take part in A big day out with Peter Rabbit™ at Kew Gardens with activities based on the tales by Beatrix Potter, focusing on edible plants. Comparable with gardens considered national treasures, the Walled Garden at Loseley House covers 2.5 acres and is divided into ‘rooms’ each with its own unique planting scheme and personality. There’s the rose garden with over one thousand bushes, the flower garden with its maze of pathways and hidden corners and the white garden that contrasts spectacular, showy, blooms with lush yet subtle silver and grey foliage. Then there is the extensive herb garden, the organic vegetable garden with its unusual varieties and, just outside the walls, the wildflower meadow – a haven of calm and tranquillity. Magnolia in bloom. Magnolia Kobus, a Magnolia species that originates from Japan, produces a spectacular display of six petalled, snowy white flowers, which are touched with the most delicate tinges of pink. Wild garlic grows in profusion at Winkworth, as does my favourite, greater stitchwort in addition to many other beautiful wildflowers. The attractions I have recommended so far are not ideal venues for the disabled visitor. Much of the ground at Winkworth Arboretum is very steep and uneven, and although Wisley has improved some of its paths, it is not the most accessible of gardens. However, if you venture a little further, the Royal Botanical Gardens at Kew are a dream come true for all garden visitors. The paths at Kew are wide, flat, and smooth, they’re easy to both travel or walk over, ideal for wheelchairs or buggies, easier and smoother both for the passengers, and for those pushing them! A visit to Kew allows disabled visitors the opportunity to appreciate the gardens alongside their friends and family, rather than having to stay behind or rushing on ahead, as is so often the case when visiting gardens with narrower pathways. The gardens at Kew extend to three hundred acres, they are a delight to visit at any time of year. In springtime

APPART’S ANNUAL Easter art exhibition and sculpture trail continues to grow its reputation as a showcase for some of the finest artists in the South East and Farnham artists are well represented. Last year’s appearance on BBC South Today widened its appeal and led to record attendances.
are provocative and allegorical and deliberately challenge the viewer to come up with their own interpretation of the work. ‘Bird Play’ is intriguing and has a surreal feel to it. Maria Ellis is an artist that is passionate about drawing and painting and this year her acrylic pictures of seagulls and a peregrine have caught our attention.
Surrey-based artist Roger Dellar will open AppArt on Friday 30th March (Good Friday) and will be one of many distinguished artists on view. Roger Dellar is a professional figurative artist who works in oils, pastels, mixed media, acrylics, and water based media.
Penny Fleet creates wonderful still life paintings of flower arrangements and ‘Summer Sweet Peas’, a collage of acrylic, ink, oil and pastel, is a fine example. Jean Heathcoate paints local scenes in oil and she employs an impressionistic style to bring out the nature of the scene and its mood. ‘Bighton’ is an uplifting view of this colourful landscape.
Roger’s paintings have an impressionistic feel to them. Many of his paintings have dark undertones and accents of light and this enables him to capture that moment in time of his chosen subject. ‘Hampton Court Skaters’ is a good example of this.
AppArt’s Easter Exhibition and Sculpture Trail is open from 10am to 4pm from Friday 31st March (Good Friday) to the 14th April. Entry is free, refreshments are available and a warm welcome is ensured.
Farnham abounds with talented artists who work in many different medias. Stavros Kotsiréas paints and sculpts and we first saw his intricate sculptures at RHS Wisley. Denise Jaques specialises in beautifully-designed mosaics sculptures. Her sculptures often have an organic theme and they sparkle and move in the wind. By contrast Allan Wallis’s sculpture reflects his sense of humour and it is the juxtaposition of the subject with an object that amuses. ‘Hog Wash’ and ‘Puddle Duck’ with the green wellingtons illustrate this. Chris Sercombe paints ‘alla prima’ with painting knives in oil from direct observation and his still life studies are striking and ‘Easter Buns’ has a seasonal theme Ronnie Ireland paintings

The word gastronomic and Holiday Inn do not usually sit easily alongside one another, but in this case they very much do. The Holiday Inn Winchester is just outside the city, just off the A31 near the Science Centre. I was unaware that most Holiday Inns are actually franchises and this one is owned by a company that takes a great interest in food. A glance at the Morn Hill Brasserie menus shows unexpected
delights such as partridge, rabbit and John Dory, unusual dishes such as Jerusalem Artichoke velouté, pheasant rillettes and even faggots, as well as more humble but no less desirable dishes. There is also a big nod to local produce and small local producers, which is to be admired. My lunch there was truly one of the best I have had in a long while. Pigeon salad, duck parfait and the aforementioned pheasant rillettes were all lovely, a good match. My main was even better. A moist supreme of guinea fowl with haggis, neeps and tatties, game chips and a whisky jus was perfection. The ice creams are all homemade; honeycombe was great, a dark chocolate sorbet even better and a great foil to a cherry soufflé, one of the most

impressive I have ever seen. My fellow diners were no less impressed with their choices. A solid wine list, great staff and a large dining room make this an excellent venue. It is our side of Winchester, has lots of parking, you can get a bus into the city and even stay the night if you want to make a weekend of it. With Andy Goundry the same basic chassis to make several different models and even makes of car. Sometimes this can be foreseen: the similar SEAT Ateca and Skoda Karoq SUV’s share the same VW Group Czech assembly plant, for example. However, the same factory also produces some Audis! One of the more unusual examples of both unexpected manufacturing sites and platform-sharing is the Renault Koleos SUV, which is made not in France but in South Korea at a Samsung factory.
Don’t be a car badge snob! HOW MANY of us stay loyal to one particular brand of car, perhaps because it is built in Britain, or maybe it’s seen as being of higher quality than lesser makes? Yet, the increasing globalisation of the car industry means that brands associated with particular countries are often made far away from their assumed home. For example, the C Class Mercedes Benz. Definitely made in Germany, right? Wrong! Most C Class Merc’s actually originate in South Africa – not a place you might traditionally associate with automotive quality. And they are not alone: the latest Volkswagen Polo, for example, is made in both Spain and South Africa, not Germany as you might expect, or indeed hope. And even the iconic MINI - surely a truly British brand - is affected, with the production of some cars taking place in Holland! Perhaps the most unexpected build site, though, is for the upmarket Volvo S90 and V90 models, some of which are put together in China and shipped to us in the UK by rail! The situation is complicated further by the ever-increasing “platform-sharing” - using

So should you be worried that the quality of upmarket makes is lost by being made in unexpected places or sharing parts with lesser marques? Not at all, in my humble opinion: each brand adopts the same quality standards regardless of where their cars are built. Even more importantly, the fact that the same components as diverse as engines and electrical switches are used on many different models means that the manufacturers can justify spending much more on developing those parts, meaning that their quality and reliability should be improved, which benefits all of us!
The diesel saga continues As the potential health hazards of diesel engines become increasingly widely known, sales of diesel-engined cars are reducing dramatically in favour of petrol power. This reduction should in due course work its way through to reduced levels of pollution. However, many people are, rightly, concerned at the amount of diesel pollution emitted from buses, accusing bus manufacturers and operators of ignoring this issue. This is far from the truth, however, for the latest Euro 6 bus engines are extremely clean. Unfortunately, simply replacing all pre-Euro 6 buses with clean new vehicles is not a quick process, as a bus can have a service life of anywhere up to 15 years. Scrapping older buses with years of life left in them would result in massively increased fares to pay fo r the new buses, even if the manufacturers could produce them fast enough. Engine manufacturer Cummins has come up with an excellent solution, however, by developing upgrade kits to rework older buses with the latest in clean, green engines – much cheaper than replacing whole bus fleets. The first of these upgrades hit the streets recently, in the form of a venerable London Routemaster, and more conversions are in progress. So hopefully, we can look forward to reduced pollution from buses as well as cars in the future.

Is the future electric? Although sales of diesel cars have increasingly given way to petrol, there has also been an increase in the number of electric cars being sold. Many people remain apprehensive about electric cars, not least because of negative publicity which claims that the electricity supply network is vastly inadequate to recharge large numbers of electric vehicles. Media hype said that UK’s electricity generation would need to increase by 50% (30 gigawatts) to meet electric vehicle demand by 2040. Britain’s National Grid company, however, says that this is untrue: they believe the most likely scenario is that electric vehicle usage even by 2050 will only prompt an increase of 8% (5GW) over today’s peak electricity demand of 61GW. National Grid says that the highest period for electric demand is typically a cold evening when Manchester United are playing in the Champions League and everyone switches their kettles on at halftime! This could be handled, they say, by Smart Charging: if capacity has been reached in a particular area, smart vehicle chargers can be signalled to either delay charging or charge at a lower power in the relevant areas until the demand settles down. Should a customer need to charge their vehicle urgently, they could over-ride the system with the press of a button. Smart Charging should, therefore, avoid the need to build extra power stations. Sci-fi? No – the use of smart chargers is likely to be mandated in the Automated and Electric Vehicles Bill 2017-2019 which is currently making its way through the House of Commons. Indeed, some charge point providers are already producing devices that are smart-charge-ready. So perhaps electric cars are more practical than you might have thought. April 2018
How soon will we see Driverless cars? Politicians and manufacturers alike would have us believe that the age of driverless cars is almost upon us, but I suspect that it will, in reality, be many years before fully driverless cars are common. Why, as a petrolhead and engineer, do I hold such a Luddite view? Not because of doubts about the technology, for to all intents and purposes, all the necessary systems exist today, indeed many are already incorporated into the cars we drive now. My reservations are purely related to human nature: unless driverless cars are totally segregated from other traffic, they will need to share the roads with cars driven by humans. There will inevitably be a transition period, most likely taking decades, between the first fully autonomous vehicles and the last human drivers on the road. Driverless cars will be programmed never to speed, to give way to others as much as possible and generally to obey every rule of the road – in other words, to be perfect drivers. Driverless cars will turn in perfect circles, never cut corners, and would certainly never jump a red light. If a person walks out in front of one, it will stop instantly, with superhuman reflexes. However, the impeccable behaviour of driverless cars is likely to cause drivers of ordinary vehicles much frustration, indeed the knowledge that a driverless car will do everything possible to avoid an accident is likely to result in them being “bullied” by aggressive human drivers, for example by cutting in front of them to gain a few seconds in a traffic queue. So driverless cars could actually turn humans into worse drivers! When roads have no more human drivers on them, we are likely to be much safer, for human error is involved in 90 percent of accidents. But in the period until then, for driverless cars to become a reality, they must deal with their biggest problem: the flaws of human beings! Guillards Oak Gardens, Midhurst Three very different gardens on the same road in the old market town of Midhurst. No 14 owned by a plants woman crammed with many interesting and colourful plants. The garden is on several levels, accessed by steps so is not suitable for wheelchair access. No 38 is owned by the winner of Midhurst in Bloom. The upper level with patio and seating area, has a bed planted with a riot of colour and the lower level, accessed by several steps, has a fish pond stocked with Koi Carp and Goldfish and is fed by a little waterfall. No 49, Garden House, is one-third of the original house. The garden has a formal design but is very informally planted by a real 'plantaholic' and is always being developed. Open 3rd and 5th June (2pm-6pm) A special garden is once again open under the NGS this year. Her Majesty the Queen has once again given permission to open the private royal garden at Frogmore House, Windsor. This landscaped garden set in 30 acres with notable trees, lawns, flowering shrubs and 18th Century lake, is rich in history. It is largely the creation of Queen Charlotte, who in the 1790s introduced over 4,000 trees and shrubs to create a model picturesque landscape. The historic plantings, including tulip trees and redwoods, along with Queen Victoria’s Tea House, remain key features of the garden today. Watercress Soup
Smoked Haddock and Watercress Fishcakes
Ingredients:
1.5 onions; diced; 3 cloves garlic; peeled and crushed; 3 medium potatoes; peeled and sliced; 300g watercress; 1 vegetable stock cube; 125ml double cream; 75g unsalted butter; salt and pepper; 1 tbsp olive oil; 2 litres boiling water. Serves 5.
Method:
1. Heat the olive oil in a large saucepan and add 25g of the butter. Once the butter starts to foam, throw in the onions and garlic with a good pinch of salt and fry until softened and beginning to caramelise. 2. Add the water to the pan, followed by the potatoes and vegetable stock. Bring to the boil and simmer until the potatoes are cooked through. 3. Add in the watercress and bring to the boil as quickly as possible. Simmer for 30 seconds then remove from the heat. Use a sieve or slotted spoon to transfer the watercress, onions and potatoes to a blender, in batches if necessary, then use a jug to add enough hot stock to cover. Do not pour everything into the blender at once as the soup may end up too thin. Blend thoroughly. 4. Blend the cream and butter into the final batch, then whisk everything together. Add salt and pepper to taste.

You might like to consider adding fried smoked lardons or chorizo, smoked haddock pieces or even sautĂŠed prawns to the soup before serving.

Ingredients:
400g potatoes; 30g butter; 500g smoked haddock; 1 litre milk; 85g watercress; zest of a lemon; 2 spring onions, sliced; 2 tsp oil; flour to dust. Serves 4.
Method:
1. Peel the potatoes and chop into small chunks. Cook in boiling water for approximately 10 minutes until tender. Drain then add the butter, season and mash roughly. 2. Meanwhile in a large deep frying pan, gently cook the fish in the milk (in 2 batches if necessary) for 8 minutes or until it flakes. Lift the fish out of the milk and set aside on a plate. Chop the watercress. 3. When the fish is cool enough to handle flake it into a large bowl, add the mashed potatoes, watercress and spring onions and grate in the lemon zest. 4. Gently combine all the ingredients then shape into 8 fishcakes, using your hands. Leave to chill in the fridge for ½ hour. 5. Heat 2 tsp oil in a frying pan, dust both sides of the fishcakes with flour and gently fry on each side until they are browned and hot to the centre. Serve with a salad of fresh watercress.

Diana Henry’s Linguine with Watercress Pesto
Creamy Watercress Stuffed Chicken
Don’t be afraid of wholewheat linguine. I can’t eat wholewheat pasta shapes – too chewy – but wholewheat linguine is lovely. It’s slightly nutty too!
Ingredients:

450g wholewheat linguine; 75g watercress, coarse stalks removed; 10g flat leaf parsley (leaves only); 1 clove garlic, crushed; 40g toasted pine nuts (or you can use toasted blanched hazelnuts); 30g freshly grated pecorino (or Parmesan); 7 tbs extra virgin olive oil; salt and pepper. Serves 4.
Method:
1. Put the linguine into a big pan of boiling slightly salted water and cook until it is cooked but still al dente. 2. Meanwhile, make the pesto. Put the watercress into a food processor with the extra virgin olive oil, parsley, garlic and nuts. Blitz, using the pulse-blend button. Add half the cheese, blend again, then scrape into a bowl and stir in the rest of the cheese. Taste for seasoning. 3. Drain the linguine, then return it to the pan with a little of its cooking water. Mix in the pesto and serve immediately. You can offer more cheese on the side.
50g/2oz soft (medium fat) cheese; 1 (85g) bag watercress, finely chopped; 1 small clove garlic, crushed; 4 chicken breast fillets, skinless; 4 slices Parma ham; 15ml/1 tbsp olive oil; 60ml/4 tbsp marsala wine 150ml/¼pt chicken stock; 60ml/4 tbsp double cream; salt and freshly ground black pepper. Serves 4.
Method:
1. Mash the cheese with half the watercress, garlic and salt and pepper. Use a knife to make a slit along one side of each chicken breast to make a pocket, fill with the cheese then wrap the parma ham around the chicken, tucking the loose ends of ham underneath. 2. Heat the oil in a frying pan add the chicken and cook for 8 mins, turning it over once until the ham is golden. Add the marsala to the pan, sauté for 1 minute, stir in the stock, then cover the pan with a baking sheet or foil and simmer for 15-20 mins or until tender and cooked through. 3. Transfer the chicken to a plate and keep warm. Simmer the liquid to reduce, until it becomes syrup. 4. Stir in the remaining watercress and cream and bring to the boil. Simmer for 1 minute, then remove from the heat and season to taste. Serve with crushed potatoes and green beans.

Farnham Sculpture • PROFILE Chipping and chattering IT’S WELL known that friendships and activities are two of the ingredients of a happy life, so spending time with a small group of wood and stone carvers would seem to be a winning formula. 15 years ago, six wood and stone carvers were looking for a studio after Adult Education closed their class. They found one in Farnham Pottery at Wrecclesham, near Farnham. The first studio was a disused garage but after a couple of years the membership had grown and the carvers moved into a bigger studio in the main building. The pottery changed hands and was magnificently restored and brought to life with space for potters, makers, classes and exhibitions and now has a wonderful café too.
an exhibition. Each year one Friday evening before Christmas, there is a fair organised by the owners of the pottery with goodies, craft stalls and tempting food. The carvers will be exhibiting their work although frankly most of the carvers don’t want to sell their work. They say that when so many hours have been invested, no price seems enough. Most have their finished work at home on window sills and shelves or give it to family and friends. So the point of belonging to the group, they say, is not to make money, it is for the peace and satisfaction that comes by spending time with like-minded people, and using simple hand tools to create something of which to be proud. Most new members have no experience of wood or stone carving but usually they like doing things with their hands or maybe did woodwork at school. If necessary they are shown how to use the tools and where to source raw materials. They are supported and encouraged by the more experienced to achieve the end goal of a finished piece of work. Out of 11 members, four are women, two are stone carvers. One couldn’t pick a common subject from the work of the carvers although animals often feature. Every person has their own ideas and their work is unique.
The stone and wood carvers are still there, chipping and chatting. Every September the pottery is open for Heritage Open Days, celebrating the survival of a very special piece of local history and the carvers have

Capel 8 HIGH ROAD AND PINE VALLEY DEVIL'Sfigure PUNCH of BOWL: This walk is in a figure of eight, both roughly 5 miles, so if you want a shorter walk, you could do one leg at a time. The walk description is provided by Guildford Rambling Club and readers are welcome to join them on their walks (guildfordramblingclub.org.uk).
• THE WALK 1. Walk down the road for a ¼ mile from the village hall to pass the church and the Capel News offices and reach a small green on the left. Take the path left along the side of this green. Follow it into a hedge corridor and on along a wider track. Ignore a fork right, continue forward to take a right turn at a T-junction. At a 3-way signpost, turn right and follow the path down a slight slope for over a ¼ mile to a road. Turn left and walk to the A24. Cross across the near end of the big roundabout. On the far side, go right and up a road signed to Grenehurst Park. Take the rightmost of the two entrances and continue along the road. 2. At its end continue forward along a wide grassy track. Soon reach a railway crossing. On the other side, emerge on a road and turn right. Almost immediately turn left into Vann Lake Road. Now walk for almost ¾ mile along the road. Pass mobile homes, ignore a right turn signed Vann Lake, pass various houses, the road becomes a track and, eventually, immediately before Rill Cottage, follow a signpost right and into trees. The path runs along the end of Vann Lake for a short distance and then enters trees and quickly reaches a 3-way signpost. 3. Turn right. The path skirts Vann House (over on its righthand side) to reach a road. Turn right, ignore the right turn into Vann Farm Road and continue forward to pass Vann Cottage and, immediately after it, turn right at a (hidden) 3-way. The path soon runs along the lefthand side of two fields. Ignore a path, go straight on and over a stile to another field. Walk along its lefthand side and around the first corner to turn left through a gap into another field. Go straight across to a road. Turn right and walk down to cross Ockley Court Bridge and pass Ockley Church. Continue on to a point, by a house, where the road turns sharp right. 4. Here, take the track forking off left to pass the house and go out into fields. The (concrete) track

reaches trees. Continue forward. Ignore a wide grassy track right. After another 50 yards, take a track right following a byway arrow. The track takes you over a railway bridge and to the side of the A24. Go straight across to a stile into a field. Continue forward across this field and through a few trees into another field. Cross this, keeping a farm to your left to reach another field and continue on over it and double stiles into the next. Head a ¼ left to another stile and another field. And continue on until, in the final field before the houses of Capel, crossing half-right to find a exit between a red brick and a (grubby) white house. Emerge on a road with the village hall a little way to your right. 5. After lunch, opposite the church, walk left, along Vicarage Lane for about ¼ mile. Pass the old school (now apartments) and a 30 limit sign. Then, quickly reach and cross a stream and immediately take a footpath left. Continue forward, ignoring a footpath left, to reach a driveway. Turn right and walk to a road. Turn left and, after 200 yards and immediately beyond a barn, take a path right. This becomes a wide grassy track and then swings right and enters a field, over a stile. Walk along the lefthand edge and, at the far end, into a wood by the righthand side of a small section of wood rail fencing. Follow the path through trees to a T-junction with a track where you turn left. 6. Walk in trees to reach an open area where powerlines cross above the track. Here, find a yellow arrow post hidden in heather to take you on a narrow path to the right. Walk through a wood and over a plank footbridge to enter a field at a 3-way signpost. Turn left and walk along the edge of the field. At the first corner, go through a gate onto a wide vehicle track. Jink left 5 yards to find a plank footbridge and gate to take you right. Walk along a field edge to find a gate right. Go clockwise around the next field and out at the second corner. Walk along the lefthand edge of a field to reach a road and house. Turn left and walk 100 yards to Newdigate Church and the Six Bells. 7. Turn into Church Lane. Walk as far as the vets and cross over to take a footpath right, into a field by the side of the vets. Head out parallel to the righthand side of the field

Just beyond the barns and a gate, reach a junction and turn right to follow the (part metalled, part not) access road (Dukes Road). Follow this to its junction with Rusper Road. 8. Turn right, cross and, after 50 yards, take a footpath left into a field. Walk along the righthand side of this and the next field, cross a footbridge and again walk along the righthand side of a field. Go straight past a 3-way signpost and quickly reach a gate and a 2-way signpost. Cross a footbridge to follow the bridleway forward. Go through a few trees to reach a field. Here, turn left and walk to the far end. Go through a gap and along a wide, grassy avenue. At its end, at a 3-way signpost, turn left. Follow the righthand edge for 100 yards to find a gate on the right. Now follow the righthand edge to the far side of a field and into the next. You are now walking parallel to a drive. 9. At the far side exit from the corner onto a road and turn right. Look for the second signpost on the left, hidden in the hedge opposite Aldhurst Farm.

Go straight across a field into trees and follow the path through them to the next field. Head across it to enter trees again. On the other side go through the trees then walk alongside a hedge to find a gap, right, that leads you through more trees. Emerge in another field and walk forward for 20 yards to find a hidden stile, right. Enter a field and cross to the far left corner. Go through a gate to walk along the lefthand side of the next field and then pass a garden fence. Enter another field through two gates and head for the far left corner and a stile into Vicarage Lane. Turn left and walk to the road through the centre of Capel. Turn right and walk to the start.

First of all, a big thank you to Stefan for taking over the jottings for March. As he mentioned, Angie and I had a fantastic holiday in Sri Lanka. It is a beautiful country and the people are delightful. We stayed in seven different locations and saw some amazing sights and tasted some fantastic food. We decided to push the boat out and have the holiday especially designed for us and to this end we went to Godalming Travel who have a lot of knowledge of the country. The trust has worked with Surrey County Council to secure this site, and is working with leading landscape architect Marian Boswall to ensure the setting enhances the environment whilst safeguarding its ecology. The Surrey Slam 2018 sees the launch of ‘The Surrey Slam’ – a new short-form cricket competition, helping cricket-lovers to fit a weekly game into their busy schedules. The competition, starting in May, provides an accessible, fast-paced version of cricket, that fits in easily with people’s work and personal commitments – holding matches at 6pm on week nights, within localised leagues to minimise travel time, in a T20-style format, with a match length of less than two and a half hours. The Great Farnham Duck Race Saturday 5th May The popular Farnham Duck Race, organised by the Farnham Weyside Rotary Club, takes place for the 31st time on the River Wey by Gostrey Meadow. It is one of Farnham’s most popular events, attracting large crowds to watch the hundreds of ducks as they race down the river. It is a successful fundraising event, and there are plenty of prizes to be won, in the heats and in the final race. Festivities start at 10am with plenty of stalls and attractions especially for children. The first race starts at 12 noon and there will be several heats during the afternoon. Proceeds to Rotary charities which will include a children’s charity in Uganda. Tickets will be on sale on the day and around the town during the weeks running up to the Great Farnham Duck Race.
