hisparents'livelycircleoffriendswhoshowedhimfrom anearlyage,thejoyofhumanconnectionandazestfor lifethatwouldcometodefinehisownstyleofliving.
Atage19,aftercompletinganapprenticeshipasadental technician,HayoimmigratedtoCalgary,Canadawithjust asuitcaseand$100-andhisadventurousspirit.He quicklybecameapartnerwithhisemployer,andby1971 hadboughtouthispartnersandrenamedthecompany AurumCeramicDentalLaboratories.Intheensuing decades,fueledbyHayo'svision,Aurumestablisheditself asaninternational,industry-wideleader.

Imagineenteringaroomand beingpresentedwithamystery basketcontainingseasonal ingredients,sometimesones youhaveneverseenbefore. Youarethenaskedtocompose andexecuteathree-course menu(firstcourse,main course,anddessert)forfour peopleusingallofthese ingredients,aswellasdrawing onavarietyofstaplesfroma pantry.Yourwrittenmenumust becompletedwithinthefirst half-hour,andthenthreeanda halfhoursareallowedfor preparation,afterwhichthe finisheddishesarepresentedto bejudgedinfifteenminute intervals.Itisanextremely challengingcompetition.
Followinghiswinatthe2022 NationalCompetitioninHalifax, ourownEthanGreenwillbe facingthatchallengeashe competesasCanada’s representativeatthe InternationalFinalofthe JeunesChefsRôtisseurs CompetitionfromOctober4-8.
Raisedandcurrentlylivingin LunenburgNovaScotia,Ethan foundapassionforcookingata veryyoungage,askingto‘help’ hisparentsbypullingachairup tothestoveandmanninga station.Encouragedand enjoyinghistimeinthekitchen athome,hecontinued exploringhisculinaryinterest andat15reachedouttoalocal chef,whogavehimanentry opportunityintothebusinessin hisprofessionalkitchen.Never discouraged,hewasheddishes andranforthechefs,doing whathecouldtohelpout.
At17,duringservice,a situationarosethatfoundEthan helpingbyworkingtheline.He fellinlove.Whilebalancing school,sportsandwork commitments,hewouldnever saynoinpickingupwhatever shiftshecould,preppingand doingwhatwasneeded.
Hehascontinuedhiscareer withExecutiveChefMartin RuizSalvador,MaîtreRôtisseur inavarietyofestablishments, andincreasinglevelsof responsibility,intheLunenburg areafrom2016tothepresent day.
