The hotelÊs bistro is a light, bright, all-day dining experience. The restaurant is named after the site where the hotel is built on. In the late 1800s the Dallas Chamber of Commerce asked Adolphus Busch to build a luxury hotel in downtown Dallas. Busch agreed on the condition that he could construct the hotel on the site of the 1880s Dallas City Hall for convenient distribution of his beer. It was believed all the original flooring had been demolished. During the 2017 restoration, The French Room SalonÊs carpeting was pulled up to reveal the hotel towerÊs original white marble flooring. The tiles were carefully honed to highlight their authentic patina and tell the history of the hotel.
