Editorial " T h e t i m e is NOW" Jay Dinshah

Spring! This i s surely one of t h e m o s t heart-warming and e v o c a t i v e words in our language. It conjours up thoughts of l o n g e r , l i g h t e r , warmer days, of seed sowing and new growth, o f r e n e w a l in perennials and blossom t r e e s ; and expanding consc i o u s n e s s in ourselves. We a r e a l s o moving i n t o t h e Springtime of The Vegan Soc i e t y . F o r over 27 y e a r s , t h e S o c i e t y which began l i f e in a period o f s t r i c t rationing and chronic shortage of m o s t foods t u f f s and goods, has grown slowly in a h o s t i l e c l i m a t e , enduring p a t i e n t l y t h e cold winds of c r i t i c i s m f r o m friend and foe and taking r o o t in the dark damp e a r t h of disbelief and discoura g e m e n t . Like C h r i s t i a n i t y , when i t came t o t h e crunch, i t was considered ideal but i m p r a c t i c a l . B u t t h e personal e x p e r i m e n t s o f hundreds of Vegans, and t h e rapidly growing l i s t of e x p e r i m e n t s by suitably qualified s c i e n t i s t s and d o c t o r s is proving o t h e r w i s e . As IVlr. Jay Dinshah (of the U „ S 0 A , ) said in his s p e e c h a t t h e 1971 A 0 G c IVl r , t h e a t t i t u d e towards veganism has changed considerably since a previous v i s i t in 1965. In t h e v e g e t a r i a n movement, veganism is regarded, p a r t i c ularly in t h e leadership, with more understanding and sympathy, and m o r e and m o r e see v e g e t a r i a n i s m a s a s t e p on t h e way t o v e g a n i s m , and t h e voice of veganism is heard increasingly a t vegetarian congresses. 3

R e c e n t s c i e n t i f i c work is demolishing more shibboleths of t h e t y p e - f i r s t c l a s s protein comes only f r o m animal foods. The m e a t industry knows t h a t in t h e f o r e s e e a b l e f u t u r e i t cannot supply t h e world's meat r e q u i r e m e n t s , and i t welcomes r a t h e r than r e s i s t s the introduction of t h e new protein foods. T h e s e w i t h t h e plant milks and t h e regular introduction of new lines in vegan f o o d s , make i t continuously e a s i e r t o provide a varied vegan d i e t , and we e x p r e s s our c o n s t a n t admiration f o r t h o s e f i r m s who a r e pioneering the vegan food t r a d e against g r e a t odds - o f t e n having t o cope with m a s s e s of regulations or w a i t y e a r s f o r some import or export regulation t o be l i f t e d . The change outside t h e food f i e l d , in clothing and f o o t w e a r , in household and allied goods is even more r e m a r k a b l e . A l m o s t 2


everything t h a t f o r m e r l y came f r o m animal sources can now be obtained f r o m a l t e r n a t i v e sources and t h i s t o o is a cumulative process. The world economy moves inexorably towards a vegan economy. The e a r t h can produce much m o r e , and more healthy food when i t turns over t o a vegan economy, and a t t h e same t i m e i t will r e l e a s e more land f o r r e c r e a t i o n a l purposes, - t h i s will become urgent as t h e 5 day week gives way t o t h e 4 day and then t o t h e t h r e e . More vegetarian r e s t a u r a n t s a r e opening and succeeding vegetarians a r e becoming accepted as part of t h e s c e n e . The s u b j e c t is discussed more frequently in magazines and daily papers; i t is mentioned a l m o s t regularly on radio and T , V . The outstanding example of t h i s was t h e r e c e n t B , B , C c 2 T . V . s e r i e s of t h e Phil pott f i l e on Saturday evenings January 8 t h . , 1 5 t h . , and 22nd. The f i r s t programme dealt with the rearing of a n i mals, t h e second with t h e i r slaughter and processing t o h a m burgers and other meat products, and t h e third with t h e a l t e r n a t i v e s - vegetarianism and veganism. This was a m a r vellous and f a i r exposition of the various viewpoints, and t h e highest praise is due t o both those t h a t produced t h e s e r i e s and those vegetarians and vegans who took part in i t . I f e e l sure t h a t only t h o s e t h a t were confirmed meat addicts would f a i l t o be disturbed and possibly moved one or two s t e p s towards our position. IVlost excellent contributions were made by Alan Long, Eva B a t t , t h e Howard f a m i l y and many o t h e r s known t o our m e m b e r s . I do hope i t can be repeated t o a much wider audience on B . B . C , 1 and possibly shown in other English speaking c o u n t r i e s , f o r t h i s is probably the f i r s t t i m e t h a t vegetarianism and veganism have been put over objectively, without tongue in cheek, and more wonderful s t i l l , what they a r e ' a l t e r n a t i v e to 1 was shown. Y e s ! The t i m e is NOW! Veganism is suddenly coming into i t s own, and we must t a k e full advantage of the tide t h a t a t l a s t is flowing our way. F o r t u n a t e l y 'the sap is r i s i n g ' within the S o c i e t y j u s t a t t h e right t i m e . The flow of new members is rising, the many keen young members a r e forming a new and a c t i v e Y t V „ S ( s e e a r t i c l e and meaning in t h i s journal) and t h e C o m m i t t e e hope t h a t t h e more economical production of t h i s journal by Donald S c o t t will r e l e a s e funds f o r extensive propaganda through l e a f l e t s and meetings t o spread our message f u r t h e r a f i e l d . 3

Raising A Vegan Family Through Bab/hood By F r a n c e s Howard When Frieden and I married on August 1 s t . 1964, i t was with the hope t h a t we would be able t o have a vegan f a m ily; so i t was with g r e a t joy t h a t we g r e e t e d the b i r t h s of R u s s e l l , on 16th August 1965, and Sophia on 1 8 t h . November 1967. A f t e r r e l a t i v e l y painless b i r t h s , I found c o l o s t r u m feeding the m o s t uncomfortable part of the procedure. Russell did not have much c o l o s t r u m , but Sophia did and I am glad I persevered, as I sure t h a t t h i s not only brought t h e milk sooner, but laid t h e foundation f o r her whole f u t u r e development. B r e a s t f e e d i n g was a delightful experience, not only f o r t h e children , but f o r me also. I fed R u s s e l l b r e a s t milk exclusively f o r 20 weeks and Sophia f o r 5 weeks. I then fed a t r a n s i t i o n d i e t f o r a much longer period, and finally weaned Russell at 20 months, and Sophia a t 24 months, gradually r e ducing the f e e d s per day f r o m five a day a t 14 months t o one a day a t 21 months. Vegan children should be b r e a s t f e d as long a s possible. R u s s e l l had s o f t f r u i t s and home-made baby-foods blended in t h e food m i x e r , all raw except f o r soya f l o u r . He was not given cooked food or sugar t i l l he was eighteen months old. Sophia was introduced t o f r u i t juice a t one month old, one drop of f r e s h sweet juice each day, gradually increasing over the weeks t o a t e a - s p o o n f u l and then t o h a l f a cupful. A t t h r e e months I introduced raw c a r r o t juice and o t h e r vegetable j u i c e s . A t five months I gave her s e m i - s o l i d s , mashed banana and mashed p o t a t o , a t f i r s t in tiny q u a n t i t i e s . A t six months she s t a r t e d t o e a t Familia Baby Muesli, which a t t h a t t i m e , was vegan. Now i t contains honey. B o t h children were weaned onto cashew/soya 'milk' as we found a f t e r lengthy e x p e r i m e n t s t h a t t h i s was the type of plantmilk t h a t suited t h e m b e s t . B y the t i m e Sophia was 12 months old she scorned pappy food, and would e a t only what she could pick up with h e r f i n g e r s . Russell weighed 18 lbs a t 12 months and 22 lbs a t 24 months. He walked and talked a t 19 months. He is s t i l l below average weight and h e i g h t , but then, t h e r e a r e other children in t h i s neighbourhood f a r more undersized than R u s s e l l . Sophia weighed 20 lbs a t 12 months, and 26 lbs a t 24 months, and has 5


s i n c e grown t o above avaerage height and weight. She walked and t a l k e d a t 12 months. I give t h e m R a t i o n a l D i e t Product Vegan V i t a m i n s , T r i o v i t A . C . D , t a b l e t s in winter only. Vegevit y e a s t - B 1 2 t a b l e t s c r u s h e d in Y e s t a m i n y e a s t and sprinkled onto n u t s , or Barmene f o r t h e i r B 1 2 intake. V i t a m i n s a r e , of c o u r s e , no s u b s t i t u t e f o r sound n u t r i t i o n . I t may be t h a t vitamins a r e not n e c e s s a r y a t a l l with a vegan diet - but we have used t h e m and j u s t hope t h e y have done good r a t h e r than h a r m . B e f o r e I m a r r i e d , I had read "Raw E a t i n g " by A . T . Hovanessian. He l o s t two children through drugs and cooked food and r a i s e d h i s third child exclusively on raw vegan food. I t r i e d t o do t h i s with R u s s e l l t i l l he was eighteen months old. Then our f i n a n c i a l s i t u a t i o n d e t e r i o r a t e d , and I was unable t o buy s u f f i c i e n t q u a n t i t i e s of t h e r i g h t kind of f r u i t , s o I put R u s s e l l on t o a mixed cooked and raw vegan d i e t . He soon d e veloped i n f l u e n z a , then m e a s l e s , t h e n influenza again, and a s e r i e s o f colds which never seemed t o c l e a r up f o r long. At f i v e and a h a l f he' had chickenpox quite s e v e r e enough t o s c a r h i m , and a s our financial position had improved, we put t h e children on t o raw food again. The elimination of cooked food, and a d i e t c o n s i s t i n g e n t i r e l y o f f r u i t , n u t s , s m a l l salads and dried f r u i t , with small amounts o f a g a r , B a r m e n e and soya, was followed by a t o r r e n t of c a t a r r h , which continued t o pour out o f t h e m f o r eight weeks. T h e i r cheeks became r o s i e r , and t h e i r energy g r e a t e r , in s p i t e of t h e c a t a r r h . A f t e r eight weeks t h e y b e c a m e f r e e r of c a t a r r h than they had been f o r a long t i m e . They s t i l l have an occasional cooked meal (parties e t c . ) and I e x p e c t t o have t o blow t h e i r noses f o r a few days a f t e r t h e s e occasions. Sophia soon g o t t i r e d of dried f r u i t , and I have had t o advise R u s s e l l t o give i t up a l s o , a s his t e e t h a r e begining t o decay, perhaps due t o eating t o o much dried fruit. Our food now':costs about ÂŁ2 per head per week, compared with ÂŁ 1 . 50 on a partly cooked d i e t . R u s s e l l was exposed t o G e r m a n M e a s l e s a t school. F i f t y per c e n t of children show no s y m p t o m s . On a raw d i e t R u s s e l l had none e i t h e r . B u t s e v e r a l weeks a f t e r t h e incubation period, I l e t t h e children have s e v e r a l cooked m e a l s , and he developed German M e a s l e s , Sophia following two weeks l a t e r . When t h e children were sick I put t h e m t o bed, made t h e m w a r m and c o m f o r t a b l e , and quiet. As soon as they were well enough t o t a k e i t , I gave t h e m sips o f s w e e t f r e s h orange juice 6


(or dilute sour orange juice i f sweet were not available). This was followed by t h e all f r u i t diet until they were well again. This t r e a t m e n t was s u f f i c i e n t in all c a s e s e x c e p t one, when I had t o f a s t Sophia under supervision, a s she could not even take w a t e r . She was back t o normal in a week. Neither o f t h e children has been vaccinated or inoculated against anything a t a l l . The wisdom of t h i s was confirmed in 1971 when i t was o f f i c i a l l y decided t h a t smallpox v a c c i n ation should no longer be routine f o r babies. In the past 20 y e a r s , vaccination has killed t w i c e as many people a s t h e d i sease i t s e l f , and f o r each person killed by vaccination twelve have been injured ( New S c i e n t i s t 5/8/71). In addition, v a c c i n e s , even i f they can be humanely produced in f u t u r e by modem methods have, like all drugs, t o be routinely t e s t e d on animals. How could we make our children g u i l t y , however ignorantly, o f such c r u e l t y ? A L F R E D BRISCO We a r e deeply grieved t o hear of t h e passing of t h e D i r e c t o r of t h e Home of R e s t f o r H o r s e s , Blackwell, C a r l i s l e , M r . Alfred B r i s c o , whose l i f e was devoted t o his s e l f - i m p o s e d t a s k of relieving t h e s u f f e r i n g endured by so many animals. Among many other campaigns he was responsible f o r drawing a t t e n t i o n t o was the plight o f animals in t r a n s port. P a r t i c u l a r l y h o r s e s and very young c a l v e s , the l a t t e r o f t e n taken f r o m t h e mother cow a t b i r t h , loaded on t o ships, unfed, unwashed and o f t e n without w a t e r , t o be t r a n s p o r t e d t o countries where they would be 'put down' by e x t r e m e l y callous methods o r , even worse f a t e , f a t t e n e d f o r white veal in dark, covered boxes b e f o r e b e ing killed. We all know how much p e r s i s t e n t hard work must go into every microscopic r e f o r m achieved, y e t our dear friend and fellow vegan Alfred B r i s c o , continued r e l e n t lessly t o t h e l a s t . His death will be mourned and his memory blessed by all who new him - human friends and animals alike, f o r he t r u l y lived up t o his b e l i e f t h a t vegans can do s o much more than merely r e f r a i n f r o m eggs and milk. My problem i s t h a t my p a r e n t s - i n - l a w , particularly my husband's m o t h e r i s unsympathetic t o our new way of l i f e ; f r e quently making c o m m e n t s t o t h e e f f e c t t h a t h e r son was s a t i s f i e d with t h e food he had a t home and would be again, e t c , e t c . When we v i s i t , m y husband and I t a k e plant milk and tomor, b u t I have n o t contributed anything o t h e r than t h o s e i t e m s in c a s e she t o o k o f f e n c e . No concessions t o our t a s t e a r e made a t m e a l s , and an awkward s o r t of atmosphere developes. We a r e growing m o r e and more r e l u c t a n t t o go t o t h e i r home. W h a t would you advise? ANSWER: T h i s i s a d i f f i c u l t period in your relationship with your inlaws a s you obviously r e c o g n i s e . I shall assume t h a t v i s i t s a r e r e t u r n e d f r o m t i m e t o t i m e , and you must t a k e the opportunity on t h o s e o c c a s i o n s to t r y t o improve t h e s i t u a t i o n . T h i s does n o t mean t h a t you should make concessions t o t h e m by providing anything o t h e r than vegan food, on t h e c o n t r a r y . B e p r e pared t o go t o s o m e trouble with t h e menue, avoid unusual f l a v o u r s or ingredients. F o r i n s t a n c e , a vegetable soup made w i t h t h e v e g e t a b l e s you know your m o t h e r - i n - l a w likes and only use h e r b s or s p i c e s which a r e favoured. Soup, a well baked p o t a t o and salad a r e usually a c c e p t a b l e t o m e a t - e a t e r s . In addition make a simple savoury r i s s o l e or patty with nuts as t h e main ingredient. I f t h e savoury i s r e f u s e d or ' l e f t ' make no allusion t o i t , ignore any unfavourable comment - with an understanding s m i l e if you can manage one! A g e t - t o - g e t h e r between your husband and his f a t h e r would be t h e v e r y b e s t "course a t t h i s s t a g e ; i t is a l m o s t c e r t a i n t h a t he ( your f a t h e r - i n - l a w ) deplores t h e tensions a s much as you do. I f in s p i t e o f your combined e f f o r t s things do not improve in t h e n e a r f u t u r e , avoid v i s i t s a t meal t i m e s , and make no a t t e m p t t o c o n v e r t . Probably the f e a r t h a t you will use propaganda a g a i n s t m e a t - e a t i n g , f o r which she has no d e f e n c e , is t h e c h i e f c a u s e o f her behaviour. 8

A l m o s t a l l contained some o f t h e 33 preservra t i v e s , 28 a n t i - o x i d a n t s , 45 S e q u e s t r a n t s (? presumably s e p a r a t o r s ) , 60 b u f f e r s , 117 n u t r i t i v e supplements. 111 e m u l s i f i e r s and 39 s t a b i l i s e r s and t h i c k e n e r s in general use. Fewer than h a l f t h e 3 , 0 0 0 additives Americans e a t withoutrealising i t have been t e s t e d f o r s a f e t y . EUROPEAN ECONOMIC COMMUNITY The T r e a t y o f Rome provides (irreversibly) t h a t r e g u l a t ions of the Common Market a r e d i r e c t and binding on m e m b e r s , over-ruling t h e i r own laws. The t r e a t y of Rome provides i r r e v e r s i b l y f o r ousting, the jurisdiction of Her M a j e s t y ' s C o u r t s over a wide field of a c t i v i t i e s . HYDE PARK, LONDON A good proportion of vegans supported the vegetarian march f r o m Speakers Corner t o the Royal Smith f i e Id Show a t E a r l s Court on D e c e m b e r 5th, l a s t , when Alan Long presented a petition t o some of t h e f a r m e r s showing t h e r e . The rally was organised by t h e London s e c t i o n o f the V e g e t a r i a n S o c i e t y t o c a l l a t t e n t i o n t o the advantages which a vegetarian way of l i f e could bring t o famine a r e a s and t o p r o t e s t against t h e modern methods o f raising food animals by 'intensive' means. P e t e r R o b e r t s brought aloneo a model of a c r a t e d c a l f which a a t t r a c t e d much a t t e n t i o n , but i t was the hen coop of c r a t e d g i r l s outside E a r l s Court which m o s t frequently caught t h e eye of the c a m e r a s . Formation of Local Group On Sunday, January 9th 1972 t h i r t e e n m e m b e r s m e t a t the home o f t h e S e c r e t a r y t o inaugurate a Surrey and D i s t r i c t Group. M r s . S . Coles undertook t o be Chairman and M r s . Jannaway t o be S e c r e t a r y . M r s . B a t t gave a lively and stimulating t a l k on "How t o Spread V e g a n i s m " . She emphasised the importance o f being a good example - 'healthy and well groomed' , o f volunteering f o r c l i n i c a l t e s t s , of writing c o n s t a n t l y t o newspapers and j o u r n a l s and o f collecting i t e m s f r o m t h e m and forwarding t h e m t o t h e S e c r e t a r y . She hoped t h a t other groups would b e f o r m e d , though much d e t e r m i n a t i o n was required t o be a vegan - i t was not j u s t a m a t t e r of paying subs as with s o m e animal w e l f a r e groups. M r s . B a t t emphasised t h e i m p o r t a n c e o f m o r e people becoming l e c t u r e r s on Veganism. She said no s p e c i a l s k i l l s were needed - only willingness t o work hard collecting and checking f a c t s , and p r a c t i c e in putt i n g t h e m over in a c l e a r and i n t e r e s t i n g manner. She then gave many incidents f r o m h e r own experience t h a t were e n t e r taining a s well a s i n f o r m a t i v e . The r e a s o n f o r the leek becoming the symbol or badge of t h e Welsh people; to be worn on S t . David's Day, remains o b s c u r e . Could i t be t h a t t h e s t o r y of E m p e r o r Nero eating t h e m on s e v e r a l days every month t o c l e a r his voice i m p r e s s ed t h e m ; a nation noted f o r i t s s i n g e r s acquiring a ' t i p ' f r o m a n o t h e r nation o f singers - Italy! T h e r e s e e m s no doubt t h a t I t a l y was c e l e b r a t e d f o r i t s leeks; they were highly e s t e e m e d by t h e Romans who probably brought t h e m t o B r i t a i n . The S c o t s a l s o adopted t h e leek and included i t in t h e i r n a t i o n a l dish " t h e c o c k - a - l e e k i e " s possibly t h e y were im p r e s s e d by t h e economy of i t ! One o f t h e e a r l i e s t w r i t e r s on vegetable around t h e begining o f t h e s i x t e e n t h century extolled the v i r t u e s of t h e leek in a v e r s e about the month o f March; "Now l e c k e s a r e in season, f o r potage f u l good And s p a r e t h the milck cow, and purgeth t h e blood T h e s e hauving with peas on, f o r potage in Lent Thou s p a r e t h bothe o t e m e l , and bread t o be s p e n t " . The e a r l i e s t r e c o r d s a r e t h a t i t was cultivated f r o m the wild l e e k by t h e Egyptians in t h e t i m e of t h e Pharaohs. Now-a-days we see leeks in t h e shops f r o m S e p t e m b e r onw a r d s , but t h o s e taken f r o m t h e ground in e a r l y spring are f a r s u p e r i o r in flavour and t e n d e r n e s s . F o r t h e home gardener they a r e a m o s t accomodating c r o p , doing well in cold and damp s o i l s and t h e uncongenial c l i m a t e o f t h e N o r t h ; no vegeatable could be l e s s demanding o f a t t e n t ion. T h e e a r l i e r in t h e spring i t is sown t h e b e t t e r . Choose a s h e l t e r e d sunny place a s a seed bed, and t r a n s p l a n t about the middle o f May. The v a r i e t y Musselburgh is m o s t rewarding. T h e i r use a s a vegetable i s p r a c t i c a l l y unlimited; soups, s t e w s , pies or j u s t plain boiled. I f t h e l a t t e r , use l i t t l e w a t e r and when cooked s e r v e in t h e same way a s asparagus. T h e a u t h o r o f my old gardening book makes t h e following c o m m e n t on t h e s u b j e c t o f leeks and I quote, " a root which d e s e r v e s t h e patronage o f t h e philanthropist and t h e l e g i s l a t o r ". 14

Tips

Successions of sowings of salad crops are advised; see. t h a t the soil is m o i s t and warm a t the t i m e of sowing - w a t e r the evening b e f o r e i f n e c e s s a r y . C a r e f u l a t t e n t i o n t o the watering of vegetables is worth while; the quicker they m a t u r e the more succulent they a r e . This is particularly noticeable with l e t t u c e , radish arid early c a r r o t s . The occasional spray with compost water or soot w a t e r also promotes growth. Thin l e t t u c e , radish and c a r r o t s when they a r e about 1% inches high. Mulch the rows of peas and beans with compost when they are about 9 " high and see t h a t the soil is moist b e f o r e applying i t the n u t r i e n t s f r o m the compost will then be more quickly available t o the plants. Keep the soil clean of weeds. As early l e t t u c e , radish e t c . mature under Dutch l i g h t s , ventilate as fully as possible. Remove lights about the middle of April, and prepare for t h e planting oÂŁ melons or cucumbers early in May. All thinings, weeds, crop debris and other unwanted green growth should be removed a t once t o the compost heap - never l e f t on t h e soil t o harbour p e s t s or encourage disease. R. L E T T E R FROM THE CHAIRMAN. I t is d i f f i c u l t t o know what t o w r i t e f o r the very f i r s t Young Vegans Section in the Journal. I am not an o r a t o r , nor a w r i t e r . I deal in action - and i t is action I shall give you in the YVS. We have already had one very s u c c e s s f u l Young Vegans Weekend, ( and here on behalf o f the YVS may I thank M r s . Jannaway f o r the use of h e r home and the delicious c a t e r i n g she provided f o r us), and t h i s is j u s t one of t h e many a c t i v i t i e s we have planned. T h e r e will be a t l e a s t one event every month all guaranteed t o be i n t e r e s t i n g and entertaining. However, wa do not want t o s t o p t h e r e . We must c a r r y t h e Vegan message t o everyone, whoever, whatever, or wherever they may be. The t i m e has come t o s t o p apologising f o r being vegans, t o s t o p hiding away and t o s t a r t doing something. The membership of t h e Vegan S o c i e t y is increasing now like i t h a s never increased b e f o r e , and i t is about t i m e we ceased leaving everything t o M r s . B a t t and o t h e r members o f t h e S o c i e t y who so f a i t h f u l l y and so e a r n e s t l y have kept t h e S o c i e t y going over the y e a r s and have raised i t t o a position where we a r e now ready t o push forward and c a r r y our message t o the world. I t i s up t o us, The Young Vegans, t o give our f u l l a s s i s t a n c e and l a t e r t o c a r r y on t h e good work t h a t l i e s ahead. The coming y e a r s will present us with an opportunity t h a t must not be missed. The young generation no longer a c c e p t without question t h e t r a d i t i o n s and established views of s o c i e t y , and pollution, ecology and the environment a r e now b e c o m ing m a j o r concerns - concerns engraved upon t h e h e a r t s of us all. Veganism provides t h e logical and p r a c t i c a l s y s t e m upon which t o rebuild a world f i t t o live in. I am not suggesting t h a t Veganism is a panacea f o r a l l t h e world's problems - but i t i s t h e b e s t way t o s e t us on t h e road t o a higher type o f l i f e . The n e x t s i x t y y e a r s or so will decide whether the human r a c e will make progress t o this higher level o f e x i s t e n c e , o r condemn i t s e l f t o oblivion. We a r e living in exciting t i m e s , and we a s Vegans, must begin t o t a k e t h e r e i n s of h i s t o r y and, by our example, carve the way ahead. I t is us, The Young 21


V e g a n s , who m u s t carry the m e s s a g e . We must r e a l i s e t h a t t h e youth oÂŁ today is t h e Society of tomorrow. It is the hands of the young t h a t salvation or damnation r e s t s . S o , t h e n , i t is up t o you t o a c t . The s u c c e s s of the Young Vegans S e c t i o n depends upon you. Join us. Our range of s o c ial a c t i v i t i e s is t h e r e f o r your enjoyment and t o give you the means whereby you can meet o t h e r vegans in a congenial a t m o s phere. It is up t o you whether or not you wish t o p a r t i c i p a t e in our promotional and educational a c t i v i t i e s , or t o take part in t h e running o f the YVS. Leneman, against Mrs. F r a n c e s Howard in r e f e r e n c e t o her review of t h e book entitled "Guide lines f o r young men and women". Method I Put mixing bowl (with f l o u r s and s a l t ) in warm place near stove. Switch cooker t o 100ŽF, (or a l i t t l e below) and leave the door open. P u t bread t i n t o warm. Measure warm w a t e r and pour about 3 ozs over the y e a s t in a s m a l l basin. Stand t h i s in the open f o r a few minutes. When dissolved (don't wait f o r i t t o g e t really f r o t h y ) s t i r i t into the r e s t of the warm w a t e r , pour into t h e flour and mix well by hand. This will t a k e s e v e r a l minutes by which t i m e t h e dough should be e l a s t i c and easily kneaded but noy slippery. (If i t is slippery, work in a l i t t l e e x t r a flour very gradually. ) Oil and flour bread t i n , put in t h e dough and place on s h e l f j u s t above the c e n t r e of t h e oven, leaving the door open. When t h e dough is r i s e n t o f i l l the t i n , close the ovendoor and t u r n the h e a t up t o 450°F. Bake f o r 35 minutes. I f the bread looks 'done' a t t h e end of t h i s t i m e , remove and t e s t by knocking. I f hollow sound r e s u l t s , turn out onto wire t r a y . If not, put back f o r another 5 minutes. C o r r e c t W a t e r T e m p e r a t u r e can be obtained without a t h e r m o m e t e r by adding % pt. of boiling w a t e r t o % pt. of Cold w a t e r . Mix and pour o f f surplus.
