Not a l l v e g a n s are c h r i s t i a n s , but a l l v e g a n s will be a w a r e that in the a b o v e s e n s e the word neighbour d o e s not j u s t mean the man next d o o r . Would a person r e a l l y be a c h r i s t i a n who kept five commandments and r e g u l a r l y broke the other f i v e ? Would a person r e a l l y be a vegan who loved the a n i m a l s but unfairly e x p l o i t e d and w a s unkind to h i s f e l l o w man, or who w a s a humanitarian and c a u s e d some of the a n i m a l kingdom t o be i l l - t r e a t e d , or who was kind to the human or a n i m a l kingdoms but wrongly e x p l o i t e d the mineral or plant k i n g d o m s ? Life i s a unity •and we are a part of it and have a part to play in it - a unique p a r t . N o - o n e e l s e i s in our p r e c i s e s i t u a t i o n with our p r e c i s e g i f t s and our p o t e n t i a l latent c a p a c i t i e s to unfold . W e c a n begin (if we have not a l r e a d y d o n e . s o ) in our p r e s e n t s i t u a t i o n and d i s c o v e r what n e e d s to be done - t h e n , working individually or in c o - o p e r a t i o n with o t h e r s - and fitting o u r s e l v e s by s u i t a b l e training where n e c e s s a r y , we c a n proceed to try to improve some part of our l i t t l e world. We shall become aware of a l l kinds of need around us a s we go - some that we had not known about a t a l l when we b e g a n . One kind of s e r v i c e will naturally lead to another and we s h a l l h a v e to be s e l e c t i v e or we s h a l l be overwhelmed and hardly h a v e time to s l e e p . W e may b e c o m e a l i f e l o n g s e r v e r in our own neighbourhood, v i l l a g e or town, or we may a c c e p t r e s p o n s i b i l i t y and play a leading part in a n a t i o n a l or world campalgr on b e h a l f of some part of the human, a n i m a l , p l a n t , or mineral k i n g d o m s . We c a n n o t fully s e r v e a l l c a m p a i g n s a t o n c e , but we c a n s e r v e one or two a t the same t i m e , quite a few in a full l i f e t i m e , and many in a s m a l l e r way by d o n a t i o n s , s p e e c h and l e t t e r writing to papers and f r i e n d s . If we l e t the spirit lead u s there i s no knowing the work we may be doing in the y e a r s a h e a d and we may find ours e l v e s in the most u n e x p e c t e d p l a c e s and s i t u a t i o n s , doing the kind of work that we would o n c e never have thought p o s s i b l e . G a n d h i , Ralph Nader, M a o - T s e - T u n g , Ruth H a r r i s o n , R a c h e l C a r s o n , Faraday and Baird, Ford and M o r r i s , Richard B a k e r , and s c o r e s of others who a r e changing or have changed our world never s u s p e c t e d a t the beginning of their work how important and w i d e s p r e a d the e f f e c t s might b e . The l a t t e r , Richard Baker, a f t e r being e d u c a t e d a t C h e l t e n h a m , England, the U n i v e r s i t y of S a s k a t c h e w a n , C a n a d a , and the U n i v e r s i t y of C a m b r i d g e , England where he r e c e i v e d a Diploma in F o r e s t r y , and a f t e r serving four y e a r s in t h e first G r e a t W a r , took up a post a s A s s i s t a n t C o n s e r v a t o r of F o r e s t s , Kenya, 1 9 2 0 - 2 3 , and a s i m i l a r post in N i g e r i a , 1 9 2 4 - 2 9 . His c o n t a c t s with the dust bowls of Canada and the growing Sahara d e s e r t in Africa c o n v i n c e d him of the urgent need to e d u c a t e m e n ' s minds in new ways - to plant more t r e e s , and to halt the w a s t e f u l p r o c e s s of f e l l i n g exis.ting f o r e s t s , farming a few y e a r s , then moving on and r e p e a t i n g the p r o c e s s . During t h i s period in Africa he founded (in Kenya in 1922) the s o c i e t y known a s "The Men of the T r e e s " followed by s i m i l a r s o c i e t i e s in Great Britain in 1 9 2 4 , in P a l e s t i n e in 1929 and l a t e r , in 1 9 3 2 , a world-wide s o c i e t y . B e s i d e s i n i t i a t i n g many e x p e r i m e n t s in the mahogany f o r e s t s , he did much r e s e a r c h both in Africa and Europe and attended a v a r i e t y of c o n f e r e n c e s including a World Forestry C o n g r e s s in Rome in 1 9 2 6 .
H i s g r e a t e r work, that of e d u c a t i n g the world about the v i t a l importance of t r e e s t o . a l l life on the earth began in e a r n e s t in 1930 with l e c t u r e tours in the U . S . A . and Canada and in 1931 with a World Lecture t o u r . He prepared a f o r e s t r y plan for the U . S . A . and Canada and a f t e r d i s c u s s i o n with President R o o s e v e l t h i s f o r e s t r y employment s c h e m e developed into the C i v i l i a n C o n s e r v a t i o n Corps C a m p s . In 1932 he a d d r e s s e d d e l e g a t e s at the Ottawa C o n f e r e n c e on the Empire F o r e s t r y ' s i t u a t i o n and in 1 9 3 6 did a f o r e s t survey in South A m e r i c a . A F o r e s t r y Summer S c h o o l was o r g a n i s e d by him a t Oxford in 1 9 3 8 , s i n c e when a s e r i e s of such s c h o o l s have b e e n o r g a n i s e d by him or h i s S o c i e t y in t h i s country and o v e r s e a s . During the s e c o n d World War he g a v e l e c t u r e s , s u p e r v i s e d , f o r e s t r y t r a i n i n g , and helped with a plan for the r e h a b i l i t a t i o n of returning s e r v i c e m e n . The G e n e r a l M e e t i n g of The Men of the T r e e s held a t C h e l s e a in 1947 a s s u m e d world l e a d e r s h i p in earthwide r e g e n e r a t i o n . Mr Baker c o n v i n c e d many World Forestry Charter G a t h e r i n g s during the period 1 9 4 5 - 5 6 , including taking the New Earth Charter t o U . S . A . in 1950, and he led the U n i v e r s i t y Expedition to the Sahara which s u r v e y e d 9 , 0 0 0 m i l e s of d e s e r t and e q u a t o r i a l A f r i c a . At normal retiring a g e in 1954 he r e v i s i t e d New Zealand in the I n t e r e s t of Forest and S o i l C o n s e r v a t i o n and s e t t l e d in New Zealand in 1 9 5 9 , l i t t l e knowing that a t the a g e of 70 some of h i s b e s t work s t i l l lay before h i m . In 1960 he a t t e n d e d the 5th World Forestry C o n g r e s s at S e a t t l e and c o n v e n e d the f i r s t Redwood Reunion at M i l l C r e e k . Two y e a r s later he t r a v e l l e d 1 , 2 0 0 m i l e s on h o r s e b a c k in New Zealand.for U . N . A . giving d a i l y t a l k s to s c h o o l s on the w a y . The problem of the world's- w a s t e l a n d s and d e s e r t s e x e r c i s e d h i s mind more and more a s time went o n , p a r t i c u l a r l y the S a h a r a , and in 1964 he c o n v e n e d the f i r s t Sahara R e c l a m a t i o n C o n f e r e n c e a t R a b a t . He l a t e r reported to 24 h e a d s of s t a t e , followed in 1 9 6 5 by b r o a d c a s t s and l e c t u r e s to s c h o o l s in New Zealand on C o n s e r v a t i o n and Sahara R e c l a m a t i o n . The next few y e a r s s a w him very a c t i v e a g a i n in a v a r i e t y of c o u n t r i e s a l l over the world. In 1966 he v i s i t e d f o r e s t s in Australia to c h e c k the f e l l i n g and burning of high f o r e s t ; he r e v i s i t e d Kenya for a n a t i o n a l Tree Planting W e e k and a reunion of the Men of the T r e e s ; he a t t e n d e d the s i x t h World Forestry C o n g r e s s in S p a i n . In addition to r e p r e s e n t i n g the southern i s l a n d of New Zealand a t the South P a c i f i c C o n f e r e n c e in Sydney in 1 9 6 7 , he a l s o carried out a Forestry F a c t Finding M i s s i o n in New Zealand and Q u e e n s l a n d . The following year (his 80th) was e x c e p t i o n a l l y b u s y , for he promoted a f f o r e s tation in India and P a k i s t a n , i n s p e c t e d progress in Kuwait, Iran, L e b a n o n , Egypt, Tunisia and S p a i n , and prepared f o r e s t r y p l a n s for J a m a i c a and British H o n d u r a s . Then b a c k to his great I n t e r e s t in the Sahara w h e n , in 1 9 6 9 , a f t e r d i s c u s s i n g the matter with the FAO in Rome, he v i s i t e d Tunisian P r e - S a h a r a with a group of s c i e n t i s t s . I n s p e c t e d Austrian t e c h n i q u e s on dune s t a b i l i s a t i o n in Libya , a d d r e s s e d s t u d e n t s of the U n i v e r s i t y of Vienna to r e c r u i t personnel for the Sahara R e c l a m a t i o n Programme and In 1 9 7 0 explored the southern perimeter of the Sahara along the f r o n t i e r s of Niger and Nigeria b e s i d e s fitting in a v i s i t to h i s former love - the S i l v i c u l t u r a l Experimental Area and Mahogany F o r e s t s of Nigeria . Two y e a r s a g o , at the U . N . , New York,, he conferred with the Ambassadors on the Sahara Reclamation Programme. If the r e s o u r c e s and s i n g l e - m i n d e d n e s s with which the n a t i o n s forged war were turned into forging p e a c e then this great programme could be implemented and a new c o n t i n e n t added to the world p o t e n t i a l l y r i c h e r in r e s o u r c e s than the USA or the USSR a n d , using t h i s a s a p a t t e r n , other d e s e r t r e g i o n s could be turned to m a n ' s u s e . He a l s o founded in 1971 a Man of the T r e e s annual prize for the b e s t graduate in Plant Pathology and r e c e i v e d the d e g r e e of Doctor of Laws from the U n i v e r s i t y where he began at Saskatchewan.
L a s t year he led a Men of the T r e e s d e l e g a t i o n to Nairobi to mark K e n y a ' s Golden • J u b i l e e when half a million t r e e s were planted In t h r e e d a y s . He a l s o lectured the Men of the Trees C o n f e r e n c e at L e i c e s t e r , attended the Malta C o n f e r e n c e and conferred with d e l e g a t e s from the Sahara c o u n t r i e s at the Seventh World Forestry C o n g r e s s In the Argentine. He a l s o found time to help launch the Year of the T r e e s here in E n g l a n d . (
Surely now in h i s 84th year he i s e n t i t l e d to hang up his ' s e v e n l e a g u e b o o t s ' . But there i s s t i l l much work t o be d o n e . So t h i s year he i s off to C h i n a , to a d v i s e the government on their g i g a n t i c t r e e planting s c h e m e s . W a s there ever a more adventurous l i f e than t h i s ? Few men in a l l history c a n have s e r v e d their neighbour and the life of the earth s o w e l l and s o c o m p r e h e n s i v e l y . Many more great v i s i o n a r y and p r a c t i c a l s c h e m e s such a s h i s a r e needed if m a n kind i s to s o l v e the problems that confront it; and a s for the Richard St Barbe Bakers of the 2 1 s t century - any o f f e r s ? NEED A N D GREED "The earth provides enough for m a n ' s need but not for h i s g r e e d " . This saying of Mahatma Gandhi t a k e s on a new poignancy a s one w a t c h e s on t e l e v i s i o n the heart rending s p e c t a c l e of Indians (and their c a t t l e ) suffering from the e f f e c t s of drought. The immediate i m p r e s s i o n i s that such earth could not produce a n y t h i n g , let a l o n e enough to s a t i s f y man's need,. Yet there i s good r e a s o n to b e l i e v e that if b a s i c r e s o u r c e s throughout the world were used w i s e l y human n e e d s could be s a t i s f i e d , not only now but in the y e a r 2 , 0 0 0 w h e n , short of c a t a s t r o p h e , a very much g r e a t e r number of people w i l l need to be f e d . At present t h o s e r e s o u r c e s a r e being squandered a t an i n c r e a s i n g l y r e c k l e s s s p e e d a s e x p o n e n t s of modern Industrial t e c h n o l o g y spread their f a l s e m a t e r i a l i s m e v e r more virulently throughout the world, promoting r e p l i c a s of t h e m s e l v e s in ruling e l i t e s - both left wing and right wing - and arousing the p e a s a n t m a s s e s to that 'revolution of rising e x p e c t a t i o n s ' that l e a d s to their own doom in the degredation of the s h a n t y town of today and the famine of the m i s u s e d c o u n t r y s i d e of tomorrow. But there a r e a l s o heartening counter trends: a growing r e c o g n i t i o n of the h o l l o w n e s s of the " c o n s u m e r s o c i e t y " ; a growing c o n c e r n for humane v a l u e s to be applied to a l l mankind; a growing d e s i r e to s e e man's mushrooming powers used for good •and not for e v i l . What a r e t h o s e b a s i c r e s o u r c e s on whose w i s e u s e man's s u r v i v a l d e p e n d s . e s s e n t i a l l y they a r e l a n d , w a t e r , f u e l , and human m u s c l e and brain power.
Most
Book a f t e r b o o k , report a f t e r report support the f a c t long r e c o g n i s e d by the vegan movement that the production of animal food r e q u i r e s much more land than plant food. Yet plans a r e being made to s t e p up animal production throughout the world. For e x a m p l e , C h i n a , whose farmers for forty c e n t u r i e s have supported a large population on c o m p a r a t i v e l y s m a l l a c r e a g e by d e p e n d e n c e on plant foods and c a r e f u l r e c y c l i n g of w a s t e s , i s launching a l i v e s t o c k production drive and i s importing breeding s t o c k from E n g l a n d . Again, in the European Community there a r e plans to r a i s e the production of b e e f and v e a l , A r e c e n t F . A . O . report s t r e s s e s the importance of developing ways of a c h i e v i n g t h i s i n c r e a s e d amount of meat without a t the same time producing an e m b a r a s s i n g surplus of milk and b u t t e r . (Vegans must r e s i s t the temptation to point out to their l a c t o - v e g e t a r i a n friends the s e r v i c e they perform to l i v e s t o c k farmers by helping to d i s p o s e of their g l u t s of dairy produce.') Even s o , t h i s i n c r e a s e d production i s not e x p e c t e d to s a t i s f y demand; the report a l s o s u g g e s t s that the developing c o u n t r i e s should g i v e their c l o s e a t t e n t i o n to " t h e i n c r e a s i n g o u t l e t s in Europe for b e e f and v e a l for i n d u s t r i a l p r o c e s s i n g . Their c a t t l e which graze in freedom a r e free from fat and i d e a l l y suited for p r o c e s s i n g " . But it i s the Third World that i s hungry and Europeans - or anyway t h o s e who can afford to buy meat - a r e suffering from d i s e a s e s of o v e r - c o n s u m p t i o n . As s t o c k farming i s e n c o u r a g e d one wonders how much c o n s i d e r a t i o n will be given to the dangers of d e f o r e s t a t i o n , over grazing and the drying up of springs and the denudation of top s o i l which h a s often followed such d e v e l o p m e n t .
But, countering this trend, it i s being more and more a c c e p t e d that meat i s not n e c e s s a r y to human h e a l t h and t h a t , providing B12 and plant proteins a r e added,the various t y p e s of meat a n a l o g u e s now on the market c a n r e p l a c e a n i m a l f l e s h . More . and more r e s e a r c h i s going a h e a d into the fundamentals of human diet to d i s c o v e r how man's n e e d s can be met in the most e c o n o m i c a l manner - truly e c o n o m i c a l of the e a r t h ' s r e s o u r c e s , that i s , not profitable to the e x p l o i t e r s . It i s much to be regretted that human brain power and r e s e a r c h f a c i l i t i e s a r e being w a s t e d on v i o l e n t a n t i - l i f e projects. To the v a s t a c r e s being w a s t e d on animal production must be added t h o s e used in the developing c o u n t r i e s for growing t e a , c o f f e e , sugar and many other crops for export to the a f f l u e n t who in most i n s t a n c e s would be h e a l t h i e r without t h e m . Trade should be in s u r p l u s e s a f t e r the genuine n e e d s of the population have been met. Land should be used first to grow food for the people who work i t . We In Britain p a r t i c u l a r l y should be giving thought to the trading terms of the future when developing c o u n t r i e s may c h o o s e to k e e p the food that they produce and on which we depend for half of our supplies. Sir John R u s s e l may s a y " c o u n t r i e s with l e s s than 1 a c r e per head could produce a p h y s i o l o g i c a l l y a d e q u a t e d i e t , but it would be mainly or wholly vegetarian". But the a c c e p t a n c e of s u c h a way of life will need much r e a d j u s t m e n t in most of the h a b i t s of the t r a d i t i o n a l l y meat eating B r i t i s h e r . All honour to the vegan pioneers and a l s o to the i n c r e a s i n g number of s e l f - s u p p o r t i n g a g r i c u l t u r a l e x p e r i m e n t s now being launched - what a pity that more cannot be c o m p l e t e l y vegan.' The good earth i s being w a s t e d not only by the e x t e n s i v e a c r e a g e used for i n e s s e n t i a l c r o p s but by the d e s t r u c t i v e methods of a r a b l e farming introduced by western technology. Heavy machinery, a r t i f i c i a l f e r t i l i s e r s , p e s t i c i d e s and i n s e c t i c i d e s a r e being used without c o n s i d e r a t i o n of long term e f f e c t s that will have to be borne by our children - c i t i z e n s of the much more d e n s e l y populated world of the f u t u r e . However, the polluting e f f e c t s of such methods a r e becoming s o o b v i o u s that worldwide movements for the protection of the environment are going a h e a d a t an e x p o n e n t i a l rate and gaining the support of a large number of s c i e n t i s t s and e v e n b u s i n e s s men ( s e e M e n t o n d e c l a r a t i o n and the Club of Rome Report). W e s t e r n t e c h n o l o g y w a s t e s not only the s o i l but m e n ' s m u s c l e s . It i s d e s i g n e d not to i n c r e a s e production per a c r e and h e n c e o v e r a l l production of food s u p p l i e s , but to i n c r e a s e production per man. Therefore it has l i t t l e r e l e v a n c e to the developing world where labour i s a l l too p l e n t i f u l . It i s e x p e n s i v e to buy and therefore tends to be used by the rich who d i s p l a c e more and more p e a s a n t s . Their m u s c l e s rot in the p o i n t l e s s e x i s t e n c e of the shanty towns while i r r e p l a c e a b l e and polluting f o s s i l f u e l s are used so that m a c h i n e s can do the work that could g i v e their l i v e s s i g n i f i c a n c e . However there i s a growing trend, e s p e c i a l l y in C h i n a , towards the a p p r e c i a t i o n of the importance of the rural community a s b a s i c to the health of the whole s o c i e t y . The Intermediate T e c h n o l o g y Group g o e s ahead endeavouring to introduce to the p e a s a n t the t o o l s he n e e d s to e n h a n c e h i s powers and free him from the s l a v e r y and want of the past without committing him to the new bondage of the machine dominated p r e s e n t .
W a t e r i s of a l l r e s o u r c e s the most e s s e n t i a l to plant and man and b e a s t , and we a r e heading for a s e r i o u s s h o r t a g e . G r a n d i o s e s c h e m e s for i n c r e a s i n g s u p p l i e s , such a s the Karba and Aswam dams often bring more problems than they s o l v e . Well sinking p r o j e c t s a r e bring great b e n e f i t s but they c a n imply a dangerous living off of c a p i t a l . It was encouraging to read in a r e c e n t C h r i s t i a n Aid report that only v a s t r e a f f o r e s t a t i o n s c h e m e s c a n d e a l with the recurring droughts of the Indian plains. But what c h a n c e have r e a f f o r e s t a t i o n s c h e m e s in d i s t r i c t s where e v e r y green blade h a s to be protected from s c a v e n g i n g hungry a n i m a l s ? India h a s t h e ^ l a r g e s t population of b u f f a l o , c a t t l e and g o a t s in the world" and i t s demand for water c o m p e t e s ^ f g r e a t l y with human n e e d s and yet it i s s o poorly fed that it y i e l d s l i t t l e food for human c o n s u m p t i o n . For two d e c a d e s an i n t e r n a t i o n a l q u a r t e r l y j o u r n a l - ' Q u a l i t a s Plantarum e t H a t e r i a e V e g e t a b l e s ' - h a s a p p e a r e d in H o l l a n d under t h e e d i t o r s h i p o f P r o f e s s o r S c h u p a n , D i r e c t o r of the F e d e r a l R e s e a r c h I n s t i t u t e of Plant P r o d u c t s a t G e i s e n h a m , R h i n e . " Numerous long term t r i a l s s h o w e d that man c o n s u m i n g p o t a t o e s a s s o l e s o u r c e of protein n e e s o n l y 2 0 - 3 6 grams of p o t a t o protein d a i l y . In regard to the world food problem t h i s i s v e r y Important b e c a u s e of the high y i e l d s of p o t a t o e s (P/A r a t i o 24 compared with m e a t , 8 compared with m i l k ) . An e n o r m o u s amount of o t h e r e x p e r i m e n t a l work h a s b e e n d o n e . For e x a m p l e , M c C a n c e and W i d d o w s o n ' s C o m p o s i t i o n of Foods ( 1 9 6 0 ) s u m m a r i s e s the r e s u l t s of o v e r a t h o u s a n d d i f f e r e n t s a m p l e s of food a n a l y s e d for m o i s t u r e , p r o t e i n , c a r b o h y d r a t e s , f a t , and m i n e r a l , and a l s o g i v e s much data for e s s e n t i a l a m i n o - a c i d s and v i t a m i n s . V e g a n s l i v i n g on plant f o o d s s i n c e 1 9 4 4 h a v e provided much u s e f u l data and h a v e shown that normal h e a l t h and d e v e l o p m e n t c a n be a c h i e v e d and m a i n t a i n e d providing t h e d i e t i s s u p p l e m e n t e d with B 1 2 . ( D i e t a r y d e f i c i e n c y of B12 w a s d i a g n o s e d and d e s c r i b e d to the I n t e r n a t i o n a l C o n g r e s s of Nutrition in Amsterdam in 1954 by W o k e s , B a d n o c h , and S i n c l a i r ) , In w e s t e r n n a t i o n s f o r t i f i c a t i o n of p r o c e s s e d plant f o o d s s u c h a s v e g e t a b l e milk with vitamin B12 p r e s e n t s no g r e a t d i f f i c u l t y ; in e a s t e r n c o u n t r i e s forming t h e bulk of the w o r l d ' s p o p u l a t i o n t h e problem is much more d i f f i c u l t . In C h i n a , where b a b i e s have b e e n t r a d i t i o n a l l y w e a n e d on to s o y a m i l k , the d i e t may h a v e an u n e x p e c t e d s o u r c e of the vitamin in the home made s o y a d i s h e s prepared with t h e u s e of a v a r i e t y of m i c r o - o r g a n i s m s . , some of which may produce B 1 2 . It would be worthwhile g e t t i n g s a m p l e s of t h e s e p r o d u c t s for t e s t i n g in E n g l a n d . Today, the s o y b e a n i s grown in many n a t i o n s around the world, a s a forage c r o p , for a grain c r o p , or a s a v e g e t a b l e . As a c l a s s i c example of a ' s h o r t - d a y - p l a n t ' it i s b e s t s u i t e d to being grown in a narrow band around the earth BELOW the 45th p a r a l l e l , and in n a t i o n s having a c o n t i n e n t a l l a n d - m a s s , i . e . China proper, M a n c h u r i a , North America, and Soviet Union. The majority of v a r i e t i e s grown in t h e s e nations h a v e an a n c e s t r y of Manchurian o r i g i n . They make t a l l plants which require a long growing s e a s o n , warm temperature, much m o i s t u r e , and strong light i n t e n s i t y . Britain has none of the requirements to e n a b l e ripe maturity in our c l i m a t e BUT, if people a r e the a v a i l a b l e s o y b e a n c l o t h , It i s p o s s i b l e for ripen dwarf and s e m i - d w a r f v a r i e t i e s of e d i b l e
t h e s e t a l l s o y b e a n plants to r e a c h prepared to cut their c o a t to fit most parts of Britain to grow and s o y b e a n a s a garden v e g e t a b l e .
On a v e r a g e , the s o y b e a n c o n t a i n s 40% protein in 18 v i t a l amino a c i d s , 20% o i l , of which only about a s i x t h i s saturated a c i d s , plus many t r a c e e l e m e n t s , iron, c a l c i u m , phosphorous, vitamins A, B 1 , G , high c a l o r y c o u n t , low carbohydrate c o n t e n t , l i t t l e or no s t a r c h . This produces a v i t a l food which i s ' f i l l i n g ' but 'non-fattening'. Soybean oil c o n t e n t i s governed by temperatures and it i s not p o s s i b l e to get a 20% o i l figure in the British c o o l summer c l i m a t e but this i s c o m p e n s a t e d by a s l i g h t l y higher protein figure than would normally be a c h i e v e d - and PROTEIN is what it i s a l l a b o u t . i S i n c e 1940 Sven A Holmberg of Norrkoplng, S w e d e n , h a s been breeding and v developing s o y b e a n v a r i e t i e s a t a latitude well to the north of Aberdeen, and about 13 d e g r e e s ABOVE the a c c e p t e d ' s a f e ' line for s o y b e a n . Of Edinburgh t h i s i s p a r t i c u l a r l y t r u e , and in M a y t h e V e g e t a r i a n C o n f e r e n c e provided an opportunity t o r e f r e s h happy m e m o r i e s of that f i n e c i t y and meet a g a i n s o m e Of t h o s e very f r i e n d l y folk a c r o s s t h e b o r d e r . A c c o r d i n g to s o m e t h e r e a r e two ' m u s t s ' in Edinburgh; The C a s t l e , and P r i n c e s Street. I would add H e n d e r s o n ' s V e g e t a r i a n R e s t a u r a n t in H a n o v e r S t r e e t , J u s t off Princes Street at the Walter Scott Memorial e n d . S o , when c a t e r i n g for t h o s e who l i k e a d i s h t o t a s t e ' m e a t y ' we n e e d h a v e no c o n s c i e n c e about using t h e s e . Furthermore, no whey i s u s e d in a n y Protoveg now and the o n l y f l a v o u r s c o n t a i n i n g c h e m i c a l c o l o u r i n g a r e the 'Ham' and 'Smoky Snaps' flavours. The r e c e n t a d d i t i o n of e x t r a v i t a m i n s (including B 1 2 ) , Iron and o t h e r n u t r i e n t s to t h e N a t u r a l , Pork, and B e e f f l a v o u r s i s i n d i c a t e d on the p a c k e t . B e c a u s e o f t h e e x c e l l e n t k e e p i n g q u a l i t y o f t h i s v e g e t a b l e protein f o o d , t h e o r i g i n a l e n r i c h e d k i n d s may s t i l l b e on s a l e in t h e s h o p s for a w h i l e . P e o p l e admired t h e a t t r a c t i v e g r e e n on w h i t e c o v e r , c o m m e n t e d on
the amount of Information on nutrition - so u s e f u l for new members - which it c o n t a i n s , and the wide v a r i e t y of the d i s h e s . It c e r t a i n l y s u r p r i s e s t h o s e who s t i l l think that v e g a n s l i v e on nuts and l e t t u c e . ' An e x c e l l e n t and most c o m p r e h e n s i v e f a s h i o n show was o r g a n i s e d by the Edinburgh Branch of Beauty Without Cruelty and w a s Introduced by C l i v e H o l l a n d , s e c r e t a r y of the S c o t t i s h A n t i - V i v i s e c t i o n S o c i e t y . The large room was p a c k e d to do j u s t i c e to a l l .the work put in by C o n n i e Bednarz and her team of h e l p e r s . After the b u s i n e s s m e e t i n g s a s e c o n d , and c l o s e r look a t the c i t y w a s p o s s i b l e and one was struck a g a i n by i t s s p a c i o u s c l e a n l i n e s s . Edinburgh i s truly a b e a u t i f u l c i t y with i t s many parks and open s p a c e s ; in particular the P r i n c e s Street Gardens with wide green s l o p e s leading up to the C a s t l e and Arthur's s e a t . I was very i n t e r e s t e d to s e e that a w i s e Corporation had r e s t o r e d some of the a t t r a c t i v e 17th century buildings s u c h a s the W h i t e House C l o s e and that the p i c t u r e s q u e house with i t s painted c e i l i n g s , where John Knox l i v e d , s t i l l s t a n d s . There were grim reminders too of the c i t y ' s troubled p a s t - a cannon b a l l buried in a w a l l and a memorial to w i t c h e s burned a t the s t a k e . We look forward to v i s i t i n g Edinburgh a g a i n before long, for the number of our members and s y m p a t h i s e r s in Scotland i s growing s o f a s t that we hope to o r g a n i s e a meeting there a s s o o n a s a s u i t a b l e d a t e and meeting p l a c e c a n be found. I used Plamil a s a s u b s t i t u t e for b r e a s t milk when my supply d i m i n i s h e d , Plamil i s t h e next b e s t t h i n g , I think it i s Important to s t a r t b a b i e s with f r e s h fruit J u i c e s and f r e s h fruit and v e g e t a b l e p u r e e s before c e r e a l s , s o that they a c q u i r e an e a r l y t a s t e and liking for natural f o o d s i n s t e a d of s t o d g e , and do not put on e x c e s s w e i g h t . At the a g e of 5 w e e k s I g a v e tiny amounts of f r e s h s q u e e z e d orange J u i c e diluted with c o o l e d b o i l e d water b e t w e e n f e e d s (for Vitamin C) and g r a d u a l l y i n c r e a s e d the amount of t h i s . At 2 months they had 1 t e a s p o o n of raw carrot J u i c e or grape j u i c e a l s o . At 3 months 1 t e a s p o o n f i n e l y grated raw apple or p e a r , s i e v e d g r a p e s or w e l l mashed banana . At 3 months 1 t e a s p o o n s i e v e d potato with carrot J u i c e or s i e v e d c a r r o t s . Gradually i n c r e a s e d amounts of t h e s e f o o d s . At 4 months a l i t t l e s i e v e d l e n t i l s (which had b e e n c o o k e d with onion and s p i n a c h l e a v e s or p a r s l e y ) .
At 5 months a l i t t l e Baby M u e s l i such a s " F a m i l i a " (although t h i s c o n t a i n s honey) or vegan Fruesli; s t i l l continuing with previous f o o d s . As t h e b a b i e s grew older I made home-made muesli with o a t s , dark s u g a r , grated a p p l e , and grated nuts mixed with w a t e r . As an a i d to t e e t h they had p i e c e s of peeled a p p l e or s l i c e s of raw carrot to b i t e on and n e i t h e r girl had any teething t r o u b l e s a t a l l . Sita got her f i r s t two t e e t h a t five m o n t h s , but Venetia w a s a y e a r old b e f o r e her f i r s t two t e e t h appeared and now h a s four a t s e v e n t e e n m o n t h s . I never used a n y tinned baby foods for the children but preferred to g i v e raw foods in p r e f e r e n c e to c o o k e d f o o d s . At 6 months s m a l l p i e c e s of skinned tomato or p e e l e d g r a p e s c a n be i n c l u d e d . Almonds are a good s o u r c e of c a l c i u m and I used to grind some up in muesli for the children in their first y e a r to aid development of t e e t h . I a l s o used peanut b u t t e r , Marmite or Barmene, b l a c k t r e a c l e with Tomar margarine a s s p r e a d s on wholewheat b r e a d . Made into s m a l l finger s a n d w i c h e s they a r e l e s s messy.' W h o l e w h e a t bread t o a s t e d i s a l s o good to u s e a s r u s k s . I did u s e Gafecttina baby c e r e a l s o c c a s i o n a l l y when t h e g i r l s were about 5 - 7 months o l d , or H o l l e Baby C e r e a l , but the former s e e m s d i f f i c u l t to obtain now, and there do not seem to be many whole food c e r e a l s for s m a l l b a b i e s . I used s o m e t i m e s to mix Sunnybisk into a pulp with boiled water and add l i t t l e Plamil for b r e a k f a s t at about 4 - 5 m o n t h s . My two daughters are thriving b e a u t i f u l l y on a vegan d i e t which i n c l u d e s l o t s of f r e s h f r u i t , some v e g e t a b l e s , and a l s o f r e s h fruit and v e g e t a b l e j u i c e s with wholewheat c e r e a l s . They do not h a v e any s w e e t s a t a l l , but e n j o y n u t s , d a t e s , raisins, etc. instead. They have had no vitamin supplements,dependlng on s u n s h i n e , P l a m i l , and l a t e r vegan margarine for Vitamin D , and Plamil and Barmene for B 1 2 . They have not had any v a c c i n a t i o n s , i n j e c t i o n s or a l l o p a t h i c drugs and h a v e only had an o c c a s i o n a l s l i g h t c o l d l a s t i n g about four d a y s for which we u s e b o t a n i c or h o m e o p a t h i c r e m e d i e s and a raw food d i e t . A vegan garden which i s g r e a t l y i n c r e a s e d in s i z e t h i s year s u p p l i e s h e r b s and salads. She knows her numbers up to t w e l v e , some of the ABC and c a n read a few w o r d s . She loves to do j i g s a w s and c a n do some 4 0 - p l e c e o n e s in about 10 minutes by herself. We w e l c o m e it for s e v e r a l r e a s o n s , not the l e a s t of which i s the f a c t that it confirms what we have b e e n s a y i n g for a long time; that there are only two s p r e a d s a v a i l a b l e which a r e free of any milk e x t r a c t a d d i t i v e s . They are ' T o m o r ' , the Kosher margarine, and ' O u t l i n e ' spread - not o f f i c i a l l y a margarine a s it c o n t a i n s more than the maximum water a l l o w e d in margarine. The writer in ' W h i c h ' reminds their r e a d e r s that any type of e d i b l e fat c a n be used in margarine, f i s h o i l s and animal f a t s a s w e l l a s v e g e t a b l e , and the proportions used will vary a c c o r d i n g to world p r i c e s and current a v a i l a b i l i t y . Non-fat milk s o l i d s a r e widely u s e d for flavouring made-up foods and r a r e l y thought worthy of m e n t i o n . L a c t o v e g e t a r i a n s may be i n t e r e s t e d to know that although the quantity of ' n o n - f a t milk s o l i d s ' - added to p r a c t i c a l l y a l l margarines to g i v e flavour - i s apparently q u i t e low ( 5 - 1 6 % a c c o r d i n g to the brand) t h i s r e p r e s e n t s approximately ten t i m e s t h i s amount of skimmed m i l k . As our regular r e a d e r s w i l l know, we h a v e made s e v e r a l u n s u c c e s s f u l a t t e m p t s to persuade c e r t a i n manufacturers to d i s c o n t i n u e what we b e l i e v e to be m i s l e a d i n g a d v e r t i s i n g , such a s d e s c r i b i n g C o f f e e - M a t e a s a ' N o n - D a i r y ' product e v e n though it c o n t a i n s both an e x t r a c t of milk and animal fat - not mentioned on the l a b e l , although ' v e g e t a b l e f a t s ' are• Our r e a d e r s may be i n t e r e s t e d in the l a s t reply from the Consumers A s s o c i a t i o n on the s u b j e c t : " W e a r e very much a l i v e to the problems of s e c t i o n s of the public who want d e t a i l e d information to e n a b l e them to buy food a c c o r d i n g to their particular b e l i e f s . . . On January 1st the Labelling of Food Regulations 1 9 7 0 came into f o r c e and this will mean that a l m o s t a l l prepacked foods will have to g i v e a full l i s t of ingredients. T h e s e must be i d e n t i f i e d by their s p e c i f i c , and not g e n e r i c , n a m e s , for e x a m p l e : V e g e t a b l e f a t ' i n s t e a d of ' f a t ' . I think that a s a r e s u l t your members w i l l find it e a s i e r to d e c i d e whether the food in q u e s t i o n c o n t a i n s any a n i m a l b a s e d I n g r e d i e n t s . I would a g r e e that l a b e l l i n g by s p e c i f i c names may be d o u b l e - e d g e d if the p u r c h a s e r d o e s not r e c o g n i s e the Ingredients - sodium c a s e i n a t e might fox some people - but I c a n n o t s e e how we can get around t h i s problem u n l e s s manufacturers were to add in b r a c k e t s a f t e r 'doubtful' ingredients "of n o n - a n i m a l o r i g i n " . The u s e of the word " n o n - d a i r y " for C o f f e e m a t e i s n e c e s s i t a t e d by c o m m e n d a b l e consumer protection t h i n k i n g , that i s , to prevent c h e a p e r n o n - d a i r y products c a s h i n g in on the reputation of dairy p r o d u c t s . V e g a n i s m , we f e e l , i s only one a s p e c t of a s p i r i n g towards a higher c o n c e p t i o n of living and e x p r e s s i n g s e l f l e s s love in e v e r y thought and a c t i o n .
