Journey through Mexico’s Past Every week, guests of Grand Velas Riviera Maya discover Mexico’s roots during a Pre-Hispanic night with authentic Mayan cuisine, complemented by a musical that tells the story of this fascinating ancient civilization. The journey begins with a sampling of dishes such as cochinita pibil, pork flavored with annatto and spices, tzic de venado, a venison salad, and recado negro; a black chile paste. Then comes a show with musicians playing ancient instruments such as drums, logs, wood, shells and wind pieces. The evening concludes with storytelling of the history of the admired and mysterious Mayan civilization.

Glamour in the Riviera Nayarit The third edition of the Grand Velas Riviera Nayarit Fashion Show was held on June 10th, featuring renowned designer Raquel Orozco and the premiere of her Resort 2017 collection. The show was followed by a Meet & Greet and dinner at Frida restaurant, where bloggers and influencers, artists, fashion personalities, guests and resort executives accompanied the star of the evening. The event was once again a resounding success, and Grand Velas Riviera Nayarit has great surprises in store for the years to come. ELITE After creating the $25,000-dollar taco, the resort presented another all-star celebration of fine cuisine: The Grand Chef Festival. From June 21st-24th, eight renowned celebrity chefs delighted attendees with culinary demonstrations and themed dinners: Penny Davidi (festival curator), Mia Mastroianni (mixologist), Eddie Jackson, Maneet Chauhan, Katsuji Tanabe, Elizabeth Falkner and Adam Gertler; all with vast experience and numerous television appearances in the US. For the grand finale, the festival featured the second edition of Kitchen Fiesta, the event first held at sister resort Grand Velas Riviera Nayarit; with open kitchen stations where celebrity and house chefs teamed up to prepare exciting dishes for spectators.

From June 17-21, the Riviera Maya hosted the Annual Congress of the North American MaĂŽtres Cuisiniers de France and the AcadĂŠmie Culinaire de France; one of the most important culinary events worldwide. The two organizations have the same objective: promoting the culinary and pastry arts, as well as preserving international tradition, and Grand Vela Riviera Maya was one of the principal sites to host activities during this magnificent, successful event.

Executive Chef of Restaurant Piaf Born in the town of Angers in the Loire Valley of France, Chef Legeay has 15 years of professional experience in French cuisine. He began his studies in biology and geography, however his interest in the world of cuisine was always greater; influenced by his grandparents who owned large gardens and a butcher shop. His studies were carried out alongside some of the best chefs in the world, including MaĂŽtres Cuisiniers de France. Today he is Executive Chef of restaurant Piaf at Grand Velas Los Cabos, where he offers his diners an interesting fusion of the traditional flavors of the classic French bistro with the most modern culinary techniques.

MAKE IT AT HOME
Pepper-Crusted Tuna and Green Salad Treat your family and guests to a dish full of tropical flavors and freshness.
INGREDIENTS Coconut dressing:
• 1/4 c. coconut milk • 1/2 c. coconut cream • 1/2 c. rice vinegar • 1/2 c. coconut oil • 1/2 tsp. salt
Tuna:
• 1/2 lb. fresh tuna • 1/4 c. black pepper • 2 tsp. grape seed oil
Salad:

1 c. edamame (still in pod) 3/4 tsp. salt 1 1/3 c. frisée lettuce 1/3 c. zucchini 1/3 c. peas 1/4 c. cucumber 2 tbs. pea sprouts 2 tbs. fresh dill
PREPARATION Coconut dressing: Mix the coconut milk, coconut cream, rice vinegar and salt. Stream in the oil, mix, reserve and refrigerate. Tuna: Season with salt, and roll in black pepper. Heat a pan and add the grape seed oil; when hot, sear the tuna for 15 seconds on each side. Remove from pan, slice diagonally and reserve. Salad: Heat water and salt to blanch the edamame for 2 minutes. Remove from heat and remove beans from pods. Wash remaining ingredients, chop or slice to taste, and mix. Serve the salad with the tuna and dressing.
