Mistake #1: Entrepreneurs Are Self-Centered – Because entrepreneurs are deeply focused on their own interests when building a business, they often fail to recognize the needs and priorities of those with whom they have to interact. This focus on their own desires can blind entrepreneurs to clues that could lead to better outcomes for both sides, an important goal when building working relationships.
Mistake #2: Entrepreneurs Are Overly Optimistic and Overconfident – Most entrepreneurs are supremely confident. They believe strongly that they will be successful (despite well-known statistics regarding failure rates). Because of this overconfidence, many fail to incorporate appropriate contingencies into the agreements they sign. Mistake #3: Entrepreneurs Need to Win. Now – The primary objective of many entrepreneurs is to win. They are often primarily concerned about besting their

counterpart and thus treat negotiations as one-off interactions, disregarding the possibility that future deals might be even more valuable than whatever is on the table at present. Mistake #4: Entrepreneurs Are Too Quick to Compromise — Entrepreneurs are “doers.” They try to get things done while operating under incredible pressure. They feel compelled to decide quickly and “move on.” Instead of exploring additional options and finding even more advantageous trades, they settle for quick (and minimally acceptable) solutions.
Mistake #8: Entrepreneurs Deny Their Emotions – Most entrepreneurs have a strong sense of what is fair. When they feel they are being mistreated, they fall prey to a slew of emotional mistakes, or cognitive biases, that allow ego to overrule logic. This can be especially problematic for entrepreneurs who tend to deny the relevance of emotions (and ego) in negotiation. While claiming “it is just business,” they can overvalue formal power, leverage, and control and undervalue the more subjective side of business negotiations. The book also includes extensive advice and worksheets to help readers recognize and prevent their own missteps. The authors explain how to prepare for, engage in, and reflect on each negotiation; how to deal with negative personal triggers; analyze the motivations that drive almost all participants; and step back to view heated situations “from the balcony” as an unbiased observer. If your first guess was water, then you are correct. While air regulations are gaining in significance, water purity has been a goal for most first and second-world countries for more than 40 years. Perhaps even more notable is the abysmal failure of most efforts toward keeping our rivers and oceans clean. Issues such as agricultural run-off, in-land garbage making its way to the ocean, and improper dumping practices has led to, among other things, a floating island of plastic in the Pacific Ocean, foaming rivers in India, and dying industries due to the acidification of the Atlantic Ocean.

Let’s talk about some of the big issues first… Yakuna and Ganges The Ganges River, and it’s tributary, the Yakuna are considered to be holy sites by Hindus. They are places where pilgrims come to bathe and drink from the waters – and they are so polluted the Yakuna foams as if it is a toxic bubble bath. While the National Ganga River Basin Authority (NGRBA) was established in 2009, and the levels of pesticides in the Ganga waters show marked demonstration since its inception, the levels of some organochlorines are still beyond the permissible limits for drinking water (Dwivedi, Mishra, & Tripathi). Disturbingly, the inorganic pollutants and microbial contamination have significantly increased (Dwivedi et al). The toxic foam on the Yakuna is caused by industrial waste. All India reports that 76% of the Yakuna’s pollution issues is caused by a 2% stretch along the river. “There are already 1.5 42 VENTRE

The Good News… Like any population who values its own survival, the Indians have begun taking action to reverse and protect its water resources with the Ganges and Yakuna Rivers. In addition to the NGRBA convening, in 2015 Prime Minister Narenda Modi committed $3 billion to clean up these waterways that not only provides drinking water for 400 million people, but is revered as a place of worship for over a billion Hindus. While the goal was to improve the rivers water quality by the beginning of 2018,
that goal has not been met (Berke). However, while the goal was not met, 2 of the 17 areas have met their clean water goals according to Ministry of Water, and another 6 are approaching their ideal numbers. CHANGES IN CHINA China’s land mass is one of the largest in the world. It is certainly the most populated. In 2014, the Ministry of Environmental Protection and the Ministry of Land and Resources jointly published a national soil survey. The survey discovered that 16.1% of its arable land was dangerous polluted. The government has since taken action, enacting laws establishing 13 kinds of responsibility from land owners to local governments. In this way, it is easier to determine where and how soil pollution begins, holds the correct offender responsible for clean-up, and shares the responsibility between developers and regulators. The new law also puts prevention and protection first by categorizing the various pollutants, and how they work. The goal is to ensure that Chinese land owners and officials can work from a place of prevention first, and remediation second as that is the more difficult of the two. It can take years, as well as very careful practice to safely remove some pollutants from the ground without causing more problems. While this remains a priority, China is still not as transparent as many local and global entities would like in monitoring their progress. (Chen)
Yangtze Of the 2.75 million metric tons of plastic rivers dump into the ocean each year, there are only 10 rivers which contribute to 95% of that total waste and 5 of those rivers are located in China (Christou). Christou further reports that 55% (approximately 1.51 million metric tons) of that plastic flows from the Yangtze. The Yangtze River, the world’s third longest river, is also the world’s largest polluter. There are many contributing factors which led to this tragedy. The Yangtze flows through three of China’s major industrial areas including Shanghai, Wuhan, and Chongqing, thus housing a population of approximately 400 million people (about 1/3 of China’s total citizenry). However, China is taking an interesting approach to the pollution issue caused by the industrial waste, sewage, and other mitigating factors putting the Yangtze at risk. Christou’s sources further reports that China has:
• Banned continued imports of trash (before the ban China was the largest importer of “junk,” leading to overflowing landfills which then would leak into the water supplies via run-offs, aqueducts, and accidents). • Demolishing 29 factories along the Yangtze so far, with another 109 slated for demolition by the end of 2020. A new law has been put in place that no factory may be built within 1 km of the river. • Committed $100 billion to river clean-up projects. Jensen-Cormier, an ecologist and writer on Chinese environmental issues, recently visited China to see how these projects were progressing. She observed that the local Chinese officials were quickly implementing President Xi’s vision for a “Beautiful China” by 2035. This includes water, land, and air initiatives which work to protect existing resources, or build man-made environments to support a healthier ecological system. The Yangtze specifically now has one free-flowing tributary where as recently as 2016 that was not possible.

downriver we travel, the darker the water becomes, foamy, less oxygenated, with obvious litter floating in its current. However, looks can be deceiving. In Minnesota – where the river begins – the National Park Service states, “Stretches of the Mississippi River within the park corridor exceed water quality standards for mercury, bacteria, sediment, PCBs (polychlorinated biphenyl), and nutrients. Unfortunately, these “impairments” can make the water unsuitable for fishing, swimming, and drinking.” The biggest issue confronting the Mississippi’s health is the fact it is governed by what is called 10 “mainstem” states, meaning it runs through 10 states which all have different regulations as dictated by The Clean Water Act. According to the Academies of Science, Engineering, and Medicine National Research Council: Although the Clean Water Act has led to many successes in reducing point source pollution, nonpoint source pollution such as runoff from agricultural land and urban areas, has proven more difficult to manage. […] Efforts to reduce nonpoint source pollution are hampered by inconsistencies among the ten Mississippi River corridor states in their water quality standards (consisting of designated uses and water quality criteria) and monitoring programs. State-level water quality monitoring programs along the river have different levels of resources and have not been well coordinated, leaving the river an “orphan” from a water quality monitoring and assessment perspective. While there are standards in place that should regulate such issues, pesticides and manure from agricultural areas and sewage and industrial waste from urban areas which are not directly correlated to the Mississippi waterfront end up impacting the river’s health and well-being. Rather than being able to take action under the guidelines provided, the Mississippi has remained under the mercy of poor stewardship practices. Since there is already federal regulations in place, many local governments and organizations are taking matters into their own hands. La Crosse County, Wisconsin Mississippi River Clean-Up volunteer organization has removed over 650,000 pounds of trash from the water in the last 25 years. Last year alone, in just their little section of the river, their 240 local volunteers pulled almost 15,000 pounds of trash and debris out of the river, including 136 fifty-five gallon barrels. It’s efforts like these that are making the most difference in the life and health of the river, as the regulations themselves are not proving to prevent debris and run-off from making its way to the water to date.

Water is Life
Understanding the life and health of our rivers and lakes is
essential to understanding the larger issue at hand… Our oceans. Everything which makes its way first into the lakes and rivers, if left to flow freely, will make its way downstream to the oceans. Perhaps a conscientious soul did not toss their water bottle or gum wrapper into the lake, however this does not necessarily mean that same bottle or wrapper did not eventually make it’s way to open water. 80% of marine litter, including plastics, oil, and raw sewage, makes its way to ocean from land-based sources via storm drains, sewers, and other routes (Denchak). It is not always about malice, but it is always about sustainability. Plastic Scientists from the University of New commissioned by the non-profit organization Orb Media discovered that 90% of bottled water, with samples taken from around the world, contained at least some trace of microplastic (Christou). Microplastics are categorized as being less than 5 millimeters long and can most commonly be found in toothpaste, facial wash and other beauty products, and clothing. These items migrate into
our water sources through drains when people brush their teeth, wash their face, and do laundry. They can also be formed when larger plastics become broken down through various means such as being crushed or chewed apart. Humans are now consuming these microplastics in the same manner as the sperm whale which recently washed ashore in Australia. It’s autopsy found more than 30kg of microplastics in its stomach, effectively poisoning the whale and causing it to starve to death. But humans drink fresh water and a sperm whale is a salt water mammal, you may be thinking. All true. The water cycle does not discriminate between the two, and our floating islands of plastic are only getting bigger… Wait, islands? Plural? Yes. Most people have heard about “The Great Pacific Garbage Patch” currently floating between Hawaii and California. This patch is simply the largest one, measuring approximately 600, 000 square miles (about twice the size of Texas), Florida Sea Grant agent Maia McGuire sampling for microplastics in a freshwater stream and microplastics photographed in the studio for a Florida Trend feature on Friday, July 21st, 2017
there are four other patches floating in both oceans that are simply smaller than the one seen most on the evening news (Rice). Furthermore, researchers “estimated that 1.7 trillion pieces were microplastics, but that 92% of the total plastic mass came from larger pieces. […] They also estimated that 46% of the plastic mass was from lost fishing nets known as “ghost nets.” These nets drift through the sea, ensnaring creatures and breaking into smaller bits of plastic” (Loria). These “islands” are not only taken up needed oceanic space, but the plastic and other waste is being fed upon by fish and other animals, which are then caught by fisherman and enter into our own food chain. Our digestive systems are no more capable of absorbing plastic than marine life. We are slowly starving ourselves just the way the sperm whale did. What Goes Up, Must Come Down While this portion is not specifically about air pollution or carbon emissions, it is important to understand the ocean’s THE NOSE KNOWS The loss of the sense of smell may be caused by many things, including aging and certain medications. However, recent studies have shown evidence of the long term exposure to pollutants and the loss of olfaction reaching back several decades, meaning our grandparents sense of smell was better than our parents, and our parents sense of smell was better than ours, and ours will be better than our children’s (Ajmani, Suh, & Pinto). This loss of olfaction is directly related to the ambient air quality in which a person grows-up and then continues to reside. Those individuals who live in areas where the concentrations routinely exceed the NAAQS (National Ambient Air Quality Standards) demonstrated a less accurate sense of smell, while those who resided in areas with lower air pollution generally maintained a more accurate sense of smell (Ajmani et al). While there are studies that show there is inconclusive evidence of these same issues, there is likely enough offered by scholarly sources now to cause most people to think about how air quality is affecting their sense of smell. part in addressing that issue on multiple fronts. The ocean absorbs man-made carbon and noise that affects not only the marine life, but the industries which depends upon them. It’s essential to understand how these issues can prove problematic. Denchak explains that our oceans are capable of absorbing approximately ¼ of all man-made carbon emissions. Scientists have determined that this means the water is now acidifying faster than they have in 300 million years so that by the end of the 21st century at the current pace the surface waters could be 150% more acidic than they are now. Denchak further argued that this acidification has already caused a decline in shellfish harvests, costing the Pacific Northwest oyster industry an estimated $110 million in lost revenue and 3,200 in the past few years. When taken in concert with the plastic and physical pollution problems currently plaguing the seas, the asphyxiation and hypoxia of marine life is becoming more and 46 VENTRE

more problematic. It affects the lowest forms of marine life, such as coral reefs and shellfish. If these do not thrive, then higher forms do not have the proper things to eat, nor does the ocean have what it needs to oxygenate it. Corals reefs and oysters, for instance, act as “garbage disposals” for the ocean. If they are being overrun, then the ocean cannot clean itself properly. Finally, a complication often overlooked in water pollution is noise. High-intensity sonar, such as that used by the Navy, as well as 60,000 commercial tankers and container ships engines, rotors, and radio waves shrinks the sensory range of marine life and has even been linked to mass whale strandings (Denchak). While there are often noise ordinances on land, no such guidelines exist for open water. Many marine animals, but especially mammals and sharks, rely heavily on Hertz level soundwaves to find potential food sources, danger, and even mates. When the water in which they swim is ‘muddied up’ with extraneous sounds,

Land pollution is the leading cause of water pollution, this includes deforestation, soil erosion, agricultural chemicals, industrialization, mining, landfills, and human sewage. Many of
these issues cause ground water poisoning or water nutrient enrichment with such chemicals as nitrogen, a common ingredient in even organic farming (manure carries this compound). Unecological farming or mining practices creates a loss of needed top soil, creating a loss of healthy land needed for trees or food production. Current fire management practices as well as civilization encroachment means that what would have been considered a natural wildfire causes soil erosion, landslides, and the potential for the loss of property and life. Deforestation Deforestation, the process in which the land is stripped of more trees than what is healthy for the soil or air quality. The areas in which this is a major concern, our tropical forests, continue to be battle grounds between ecologists and scientists and industries and farming. In 2017, the second-worse year on record, 39 million acres of tropical forest disappeared – an area measuring almost the size of the state of Washington (Leahy). Leahy further states that the worst hit areas are Latin America, Southeast Asia, and Central Africa. In many of these areas, local farmers cleared protected forest lands for crops or livestock. Part of the ongoing issue is the extreme poverty in many of these locations, where without arable land, these farmers and ranchers have no other method to make a living or feed their families. If the global community seeks to find a way to stop this kind of deforestation, then it must first address the very real human element at its root. Too often it these clearings are not done out of malice or greed, but out of survival. In the United States, since tracking began in 1630, our own lumber practices are more stable. According to the U.S. Department of Agriculture and Forest Service, the United States is currently about 70% as forested as it was in 1630. While the landscapes have changed and evolved, perhaps been converted from one use to another, the overall level of forestation within the United States since the 19th century as remained relatively steady at 33% of the total land area. One of the reasons for this continuity is private ownership of land (it is in the land-owners best
interest if the land stays fertile, for instance), conservation efforts in public land areas such as national parks, and guidelines which govern all entities. However, the one area in the United States that is rapidly losing trees is its cities. Breslin states the following statics: • A new study concluded the U.S. is losing about 36 million trees per year in metropolitan areas. • Nearly every state has reported a net loss of trees in recent years. • Tree loss in urban areas can worsen the urban heat island effect, which causes cities to warm faster than surrounding areas. Breslin explains that the loss of 36 million
REPAIRING DEFORESTATION By John Peterson Sustainable Forestry: Harvesting trees is a necessary element for many industries, but it does not mean it that it is an unsustainable practice. Replanting techniques, crop rotation, selective harvesting, and more are just some ways industries are ensuring sustainable forestry habits. Stewardship: The Forest Council Stewardship program offers certification on its products guaranteeing that its products are responsibly harvested. It helps protect the rights land owners and indigenous people, who are often the hardest hit by unethical forestry practices. REDD Incentives: Standing for “Reducing Emissions from Deforestation and Degradation”, this process seeks to offer economic compensation for countries to “store” carbon in their forests. This offers an incentive similar to those given to factories and power plants when they reduce their carbon emissions. By creating an off-setting economic advantage, conservation organizations hope that those who might have lost income from the land disuse for farming or ranching, will find other methods in which to thrive.

So, while our overall area of forestation remains constant, given that urban sprawl is becoming more common in metropolitan areas, it is safe to assume that this consistency will eventually be affected. Furthermore, cities, on average, are hotter than more agricultural areas. This is due to the increased hard surfaces such as concrete and asphalt which absorb and trap heat, and glass which reflects it.

Erosion and Contamination Soil erosion and contamination is a twofold issue. Soil erosion is determined by the loss of fertile topsoil, meaning the soil remaining is not conducive to growing plants, does not retain needed nutrients, is prone to run-off or landslides, etc. Contamination, on the other hand, is defined by the soil being enriched by chemicals such as too much nitrogen (some is needed for crop growth), or oil, parabens, DDTs, carcinogens, etc. Once the soil has been contaminated with these and other chemicals, it can be absorbed into water sources, crops, animals are contaminated when they graze, and so on. This is an issue facing the global community. The FAO (Food and Agriculture Organization of the United Nations) released a report in May 2018 detailing many of the problems with soil erosion and contamination around the world. In an article published on their website they summarized some of their findings: [In] Australia, some 80,000 sites are now estimated to suffer from soil contamination. China has categorized 16 percent of all its soils — and 19 percent of its agricultural soils — as polluted. There are approximately 3 million potentially polluted sites in the European Economic Area and the West Balkans. In the United States, 1,300 sites appear on that country’s Superfund National Priorities list of pollution hot spots.

COMMON FOOD CONTAMINANTS Methylmercury: Bacteria in water bodies convert the deposited mercury into this compound, which can then be absorbed by small aquatic organisms that are eaten by predators. These predators are the fish we eat. It is neurotoxic to humans. Polychlorinated Biphenyls (PCBs): While banned since 1979, they are still in limited use for some construction purposes in certain electrical equipment. They provide insulation to gas lines and electrical circuits. While declining, this can still be found in grazing animals and fish. Polybrominated Diphenyl Ethers (PBDEs): Found most commonly in furniture foam, small appliances, and electronic, it is used as a flame retardant. Prior to 2003, it was mostly found in food, but since 2013, the chemical is now simply in the dust accumulated in homes and workplaces. Bisphenol A (BPAs): This was primarily used in plastic food and drink containers before it was discovered that it could adversely affect the endocrine system.
These numbers allocate enormous quantities of land throughout the world. While the West Balkans and European Economic Area is still suffering from the Chernobyl meltdown of the 80s, causing huge swathes of land to be unusable, unfarmable, and, in many place, uninhabitable, there are still other areas where that is not the case and it is matter of poor stewardship and poor business/farming practices. soil erosion is desertification. When the soil, and the nutrients in the soil, dies to the extent it can no longer retain moisture it begins to dry out. After awhile the good topsoil begins to disappear, either through run-off, landslide, or wind. At the most extreme, the land becomes barren, or “deserted.” The U.N.’s official definition states, “desertification is land degradation in typically dry areas resulting from various factors, including climatic variations and human activities” (NASA). The causes behind desertification remain under debate, however, the most common issues which arise are overgrazing, improper crop rotation, drought, and industrial waste. Once a parcel has been determined to be “deserted,” the land is considered unable to produce natural vegetation for its area. The most import aspect to understand is that not all desertification is “bad,” some is a natural by-product of everchanging weather patterns and the natural flux of rainy season. Extended droughts and extended rain are both natural in the course of the earth since it was formed, neither man-made or created. However, even natural patterns can cause extreme changes in the earth and its living or dying.

Perhaps the best known, most regulated polluted resource in the world: Air. Carbon emissions, greenhouse gasses, smoke, noise and more have been listed as potential causes of air pollution. Münzel et al states, “Ambient air pollution is a leading cause of non-communicable disease globally. The largest proportion of deaths and morbidity due to air pollution is now known to be due to cardiovascular disorders.” These deaths include myocardial infarction (heart attack), stroke, and heart failure. Lesser morbidity rates account for asthma attacks, diabetes, and atherosclerosis. A study published by the Journal of Environmental Research Letters states that air pollution now kills approximately 2.0 million people every year (Yadav), while the World Health Organization (WHO) reported that in 2016 4.2 million people died prematurely and 90% of those individuals lived in middle to lower-income areas of the world (Nunez).
Perfluorochemicals: This chemical had a wide range of uses including food packaging and non-stick coating. It’s most dangerous aspect is that once heated, it could be released into the air and inhaled. It’s side-effects are not fully understood. Perchlorate: Used in fireworks, flares, and other explosives, it has been discovered in surface and groundwater. It is known to affect the thyroid. Organophosphate Pesticides: Used to control pests in a variety of crops, they leave a residue on the food. If consumed, they can affect the nervous system, especially in children. Industrial Industry is a necessary evil in the world where the environment is concerned. Without factories we would not have any way to make cars, clothes, food, components, phones, computers, medicine, packaging…the list is truly endless. No one is willing to live without a factory and the goods they provide to a civilized society. However, factories are also responsible for most of the pollution found in the land, in the water, and in the air. They are the cause of complex problems, and the ethical management of not only pollution, but what it would mean to society if those factories did not exist, is an issue governments and consumers struggle with on a visceral level.

The first issue among factories is the fact they all require energy to function. They must consume fuel of some sort to produce their products. The most common form of power generation in most factories is still natural gas, which leads to a release of nitrogen oxide and carbon dioxide into the atmosphere. While these emissions are still lower than coal burning – those pollutants include nitrogen and sulfur oxides, hydrogen chloride and hydrogen fluoride gases, and arsenic, lead and other metals – in large quantities or condensed areas, can still cause issues. The three other most common factory pollutants are: • Melt Smelting: These factories create everything from components to cars, instruments to infrastructure. Because of the heating and smelling process used to refine ore and aluminum, this creates metallic dust and silica in the air, as well as releasing sulfur, carbon dioxides, arsenic particulates, mercury and cyanide emissions depending on the metal being smelted. • Petrochemical Smog: The cleaning, painting, and heating processes of factories are varied and intense. These processes, however, when used while other raw materials or treatments are being heated release such compounds as carbon or hydrocarbon oxides that, once they interact with the sunlight, and intermix with other pollutants like sulfur and nitrogen oxides, become peroxyacetyl nitrates. This is better known as “petrochemical smog” or “the brown cloud.” • Food Processing: Rendering or washing meat and fish creates large amounts of liquid waste and smoke from the frying/ smoking which leaves behind mold and bacterial residues in the air. Processing grains creates miniscule dust which is released into the air and breathed in. These particles in the air contribute to multiple health issues world-wide. They mostly affect the very young and very old, but long term exposure can lead to 50 VENTRE

heart problems, breathing problems, and more in otherwise healthy individuals. Even with the United States Clean Air Act, there remains pockets around the country which are significantly impacted by air pollution. Home Meant to be our sanctuary, our homes can be as polluted inside as the air outside. Nor are problems relegated to only older homes, new homes are equally at risk. Older homes more often are tainted with such toxins as asbestos, lead paint, and formaldehydes while new homes, with their intense weather dealing, suffer from lack of air exchange leading to mold, nitrogen dioxide, carbon monoxide, and radon. All homes are at risk for cigarette smoke, pollen, cleaning chemicals, dry cleaning fumes (many solvents are carcinogenic), pet dander, particulates from incense and candles, times from paint, glue, and ink toner, and other hazards. Prolonged exposure to any or all of these hazards have been demonstrated to lead to increased flare-ups of such issues as asthma and chronic obstructive pulmonary disease (COPD), as well as irritating the mouth, nose, and throat. Some simple precautions for your home include: • Not smoking inside • Covering scented candles • Removing carpet • Dusting and vacuuming regularly • Using exhaust fans in the kitchen and bathroom • Minimize air freshener use • Wash bedding weekly in hot water Opening the windows, despite the possibility of some pollution outside, is still considered healthier than constantly running the air conditioner. This allows for a true exchange of air in and out of the home. Additionally, it is imperative to ensure the filters in both the furnace and air conditioning unit are clean and to invest in having the ducts of your home vacuumed by a professional at least once
FRACKING RISKS EXPLAINED Fracking remains a highly contested practice around the world, however it is also one of the most misunderstood regarding its dangers and benefits. For example, a study conducted by chemists at the University of Texas at Arlington found that “point source attribution of ambient contamination events near unconventional oil and gas development” sites such as fracking sits “found highly variable levels of ambient BTEX or benzene, toluene ethyl benzene, and xylene compounds” (Kellie). However, the same study found that these were “variable contamination events, attributable in many cases to specific gas flaring units, condensation tanks, compressor units, and hydrogen sulfide scavengers, indicate that mechanical inefficiencies, and not the inherent nature of the extraction process as a whole” (Kellie). This means that most of the issues resulting in air, land, and water contamination are because of human error and mechanical problems, not because fracking is “bad.” As the systems continue to improve and innovate, the process will, according to multiple studies independent of the industry, become safer.

The world as we know it now is very different from the world as it was a thousand years ago, or ten thousand years ago. There can be many culprits produced by nature including particles put into the air by forest fires and volcanic eruptions. These events can effect anything from additional carbon monoxide in the atmosphere to creating its own weather such as cyclones and tornados. Volcanic gases released during an eruption may contain hydrogen sulfide, hydrogen chloride, hydrogen fluoride, carbon monoxide, halocarbons and some metal chlorides which can lead to acid rain. expulsion, and VOCs (volatile organic compounds). Wind erosion is likely the least impactful, but when other factors such as drought are in the area, particles blowing in the air can lead to itchy eyes, runny noses, and clogged lungs. Methane expulsion, often in the news these days, and typically branded as “cow farts” is simply the release of digestive gases by not only farm animals, but many plants as they decompose. In a small, enclosed space these gases are flammable. In large quantities, they can effect the ozone layer as a greenhouse gas. Radon expulsion comes from nuclear reactive materials such as uranium which are found naturally in the earth. As these metals decompose, they release radon. In low doses they are dispersed and not harmful to humans. But, as we know from nuclear reactor meltdowns, in high concentrated doses, they can be disseminating. Finally VOCs, or volatile organic compounds, are any natural air-borne substance that may mix with a manmade substance to become oxidized and transform into aerosols. These substances may come from trees, flowers, metals, and water, but once they interact with other chemical compounds, they become volatile.
What You Can Do Pollution is something that affects us on every level. While there numerous regulations in place to help minimize the effects on the planet, waste and yuck still manages to make it into our air, land, and water. On a local scale, practical steps you can take to do your part include: • Put filters on your washing machine and dishwasher. This will help keep microplastics and fibers from your clothes from being washed into the sewer. • Stop buying cleansers advertising themselves as micro-abrasives such as facials cleansers and toothpaste. These are actually plastics that can not only make their way into your skin and gums causing permanent damage, but into the water. • Carpool, and plan your driving trips so you are not running a bunch of small trips throughout the week, but perhaps have a shopping day where you get all of it done • Mow your lawn early in the morning or later in the evening when the temperatures are cooler, this will allow the exhaust to disperse more harmlessly into the atmosphere than during the heat
of the day. Better yet, find ways to make your lawn productive like creating more spaces for fruit and vegetable gardening and zero-scape with native plants. • If you have a fireplace, clean your flue. • Re-use, re-new, and recycle: We’ve all heard it, but taking ourselves out of the fast-fashion cycle, using cloth bags, real dishes for eating and drinking do help in the end even if sometimes it takes up more water. Be an aware consumer. Remember, that not even organic or natural products are “pollution-free.” Cotton requires 70% more water than almost any other crop on the planet and often leads to a ‘deadening’ of the soil causing farmers to need to fertilize it again for a new crop. Fertilizers are a leading cause of ground water pollution and soil erosion. However, we still need to eat and create crops that clothe us. It is a matter to find better, more sustainable ways to do that and keep those same farmers in business. Unfortunately, there are no easy answers. What we do know, is that we have a choice every day to make a conscious decision to become more aware of the impact our species has on this earth. When the term “organic” is not healthy VOC is an acronym for volatile organic compounds. What are volatile organic compounds? Without getting too geeky they include a variety of chemical compounds generally understood to be mildly bad or quite bad for your health. They may have long-term or short-term health effects and allowable exposure levels are an ongoing battle between for-profit industries and environmental and health advocates. Perhaps the most common product affiliated with the term “VOC” is household paint where companies now normally advertise “low” or “no” VOC paint however VOC’s are emitted in many insidious ways such as most household cleaners, nearly anything “scented” artificially such as dryer sheets, air fresheners (the irony eh?), carpet, mattresses, nail polish removers, varnishes, disinfectants (a very curious one because people swap “disinfected” or “sterile” for VOC’s if you think about it), vinyl flooring, dry cleaning, and so on. Both benzenes and formaldehyde are typical common indoor pollutants coming from carpets, glues, cabinets, particle board and so on. New buildings or furnishings are subject to factory chemical off-gassing which is a legitimate “thing”. “Sick building syndrome” (SBS) is a condition when the buildings occupants experience ill health affects when no formal illness or diagnosis is identified. According to the EPA and WHO, up to 30% of new or remodeled buildings likely have unhealthy levels of VOC’s. Symptoms include headaches, dizziness, nausea, eye, nose or throat irritations, fatigue, a hoarse voice, flu-like sensations, itchy or dry skin, onset or 66 VENTRE

increased asthma and more. Severe side effects are organ damage, particularly of the liver or kidneys, and cancer. A household specific worth bringing up here is the garage where many people keep vehicles or store paints, oil, gas, thinners, cleaners etc. however if you have a bedroom or otherwise living space where you spend a lot of time located above the garage, you are at risk of those fumes wafting into your space. Your liver cleans your blood at night, which means bedrooms are more concerning to have designed above garages so to the architects reading this, take note…. Phytoremediation Maybe it’s because I am an herbalist, but it sure seems like plants appear to be forgiving, helpful, and wise friends to combat most of the problems we humans create. Phytoremediation is the use of plants to mitigate indoor or outdoor pollution. Plant leaves absorb gases through their surface area and the soil microorganisms also help neutralize VOC’s (assuming you are not getting pesticide/herbicide treated plants or potted soil thus adding to your VOC’s). A respectable research study published in PubMed observed that keeping a rubber plant in an office for one week reduced formaldehyde by 50%. NASA has recognized about 50 indoor plants that are excellent for indoor pollution including spider plants, aloe, pothos, peace lilies, rubber plants, snake plants, and many more. For those with a thumb that’s any color other than green, these plants are conveniently really easy to keep alive. #optoutside
While indoor VOC’s appear somewhat manageable, what gets arguably more serious and less avoidable are those put out by factories, commuters, or the fracking industry. Some of the most common and worst VOC offenders are nitrogen dioxide, sulfur dioxide, benzenes, carbon monoxide, particulate matter, and formaldehyde. Outdoors, all of these pollutants contribute to ground level ozone toxicity which in turn amplifies smog. There are two very dominant and prominent industries largely responsible for these VOC’s and they have a very interesting relationship….oil/gas and plastic. Oil and gas and plastic have a serendipitous and symbiotic relationship. It’s hardly a coincidence that single use plastic has exploded in a short amount of time and oil and gas wells are required to produce 99% of what’s required to make plastic. Since 2010, over $180 billion has been invested in new plastic production plants. The investors? Fracking beneficiaries like Shell, ExxonMobil, Chevron. ExxonMobil alone recently funded $10 billion for plans to build a plastic production plant in Texas. As the transport industry is headed for EV and less reliance on oil or gas, the future of fracking lies in plastics. As such, fracking needs plastic to thrive for their industry to thrive. Fracking needs you to need plastic. The environmental and health consequences are vast in this relationship. Never mind what we already know about the harm of plastics and how microplastics are now in nearly all table salt, or piles of plastic the size of Texas are floating in the ocean, or that the US alone uses approximately 500 million straws a day, let’s look at the oil and gas
industry that produces this. Johns Hopkins University did a meta-analysis tracking those that lived near fracking sites in Pennsylvania and discovered that those folks doubled their risk of eye, nose and throat complications. They were also twice as likely to have asthma. Benzene alone is 41 times higher sampled within 500 feet of a frack well. Benzene is a VOC that can cause bone marrow issues, anemia, headaches, dizziness, and leukemia just to name a few. Anschutz hospital in Denver, CO, where over 60,000 frack wells are active in the state and over a quarter of them are located near Denver, observed excessive rates of leukemia in young adults and collected data that revealed that those living near fracking sites were 4 times more likely to develop the disease. When Colorado elections included a measure to regulate fracking (not ban) in 2018, oil and gas spent $33 million dollars ($10 million in the month of October alone) in Colorado to suede voters in their favor. It worked. $33 million dollars is not only a tough match to beat from grassroots efforts, but also hints at just how much oil and gas stands to gain or lose depending on that single voting measure. Climate (no) Change The same giants that spend billions on plastic production also spend billions on lobbying against climate change. Shell alone spends $49 million a year on lobbying. The money is spent towards luring government decisions and showcasing to the public about their climate-friendly efforts. BP, Shell, and ExxonMobil spend billions in public advertising and social media towards the public on buzz words like “greenhouse gas reductions” and “low carbon footprint” when in reality, statistically only about 3% of their efforts are directed towards lowering carbon footprints. Toxin Fatigue It seems the more we know the more apt we are to run the risk of “toxin fatigue” where we all are aware that “everything is toxic” so we become numb or allow apathy to set in. This looks like a number of scenarios. We might feel insignificant in the entire complexity of it all. “What’s one straw”, “I’m thirsty so I want this (plastic) water bottle”. We “just want to live” and not feel awful for living. Then there’s the spell of oil and gas guilting us “do you not use phones, planes, buses, or a pen?! Then you need us!”. I’m not sure who can deny this argument, but there are better ways and we can work towards not needing nearly every waking moment or action reliant on the industry. Most of us have heard the proverbial story of David versus Goliath. Whether you fully believe in the story or not, there’s a valuable lesson that can be learned from it. If you’re not familiar with the story, here’s a little snippet. David was a 12-year-old boy who was unafraid to go out to fight a skilled warrior by the name of Goliath. He was famed for his giant stature.
David was no fool when it came to offense or defense. When he was offered heavy armor and a sword to face the mighty Goliath, he refused it, choosing to only go into battle with a slingshot. While the decision may seem simple on the surface, it was quite brilliant. David learned to master the skill of the sling during his time as a shepherd. He used it to defend the sheep against predators. The sling also gave him distance from the giant, which somewhat evened the playing field. David wouldn’t have much of a chance if he’d tried to face Goliath in hand-to-hand combat or with a sword for that matter. David emerged victorious because he understood himself as well as his opponent. According to Jewish history, David went on to win many battles during his time. do so. The question we have to ask ourselves is, “Are we prepared win?” What do we know about ourselves? What do we know about the opposition? Are we playing to our strengths? We must take time to work on ourselves. This includes proper rest, relaxation and rejuvenation. We can’t expect to win what could be a long battle when we are exhausted from fighting. You may feel guilty for taking a break, but you’ll be far more productive and efficient when you do. There are often critical resources needed to win a battle. These resources can include good team members, operating capital, proper counsel, a place of refuge, etc. Yes! There are ways to work around them. However, if you don’t know what you need, you won’t know where to start. It’s imperative to understand the needs of your business. The road less travelled can be challenging. We must be prepared mentally, physically, spiritually and financially. Remember! Everyone wants to win; the ultimate question is, “Are we prepared to do so?”

Places you can fall in love with life again—even if you already love your existence—begins with views like these. Try and resist sleeping with your patio door partly cracked open. The crash of waves and the hum of the night can be felt firsthand at this resort. We found tons of space to unpack and took comfort as large suitcases disappeared into a spacious bedroom closet. Dual bathroom vanities, central heat and air, flat screen TV’s and quiet neighboring suites made this stay much more comfortable than advertised in the brochures. Never dreamt of living in a beachside condo full time until now. As the kids rest in the other room on that fold-out or if those midnight munchies get the best of you---a microwave, wet bar, and mini-fridge with leftovers from Tierra Sur will do quite nicely. In moments like these, you will feel as if good luck and the good life have finally pulled into your port. You are right.

ou only get friendly service this genuine and quality seafood this abundant in the coastal communities, so suck up as much of it as you can. No knowledge of the language or region is required to enjoy the fine dishes at Moqueca Brazilian Restaurant and Bar. Located super close to your resort is a local staple that Oxnard has every reason to be proud of. Easing LA commuter nerves with a Brazilian national drink, the Caipirinha, is one way to win everyone over. It hit sobering notes on my palate all the while flashing me back to really fun drinks and a night out with really lively people. In a nutshell, this cocktail kicks your favorite Margarita’s ass back home—so give the keys to whoever is the designated driver at the table. The menu has a potpourri of familiar items for any foodie. Ventre Magazine’s stellar lunch started with the something that was new to our senses—the Capa Santa Gratinada—seasoned scallops in a half shell crusted with parmesan cheese and oven baked. You’ve never wanted to lick the inside of a seashell so hard in your life, until now.
Everything savory and fulfilling continues with the Moquequinha—a handmade clay pot with a choice of fish, shrimp, shellfish combo, lobster or all vegetarian onions, olive oil cilantro urucum essence, and coconut milk. The Yelp reviews alone let you know you’re in fine feather. I’d come back for any of the lunch specials if we lived here (stroganoff, bolognese, risotto). My lunch companion was eager to save some of this gold and bring back leftovers to our room at Embassy Suites by Hilton at Mandalay, but I cut him off at the pass. A few minutes inland from Embassy Suites at Hilton Mandalay Resort means a short Uber ride is a wise option if the mention of a wine tasting and wine cellars gets your heart palpitating. If not a connoisseur of wines, no need to be intimidated by Tierra Sur at Herzog Wine Cellars, as pairing the perfect meal with a Rose Cabernet or Merlot is easy for any Herzog employee within earshot. Come for a civilized wine tasting, pick up the perfect kosher gift before jumping on the 101 freeway or stay for a little bit longer to drink in this Avalon. Culinary expertise is about to seduce locals and outof-town foodies who have an appreciation for savory farm-to-table options. The scene is upscale casual and the locals know where to come for a romantic, special occasion get-away with superb healthy food choices. Your transformation of self begins with the charcuterie board---a beautiful display of Wagyu Pastrami, Chicken Liver Pate and Vela Pate en croute. Fresh cranberry, pumpkin figs, apple marmalade, and finger licking savory mustard only reeled us in deeper. We were quite tempted to order another round of the Wagyu Pastrami when our perfectly timed dinner entrees made its way to the center of our table. Braised Wagyu chuck roast with gnocchi alongside salmon with Yukon gold potatoes, leeks pepper and romesco (nut & pepper based sauce) turned our conversation from whale watching back to really special places to eat when celebrating life moments. The inclination to push my veggies around the plate was a non-option at this gem. Whether coming in for brunch or dinner, you will ask yourself; “Did the local farmer just leave out the back door? Why yes, they did.” The vegetables do more than just accompany these fine dishes. Each one stood on its own merit and garnered verbal praise. If you are going to test the durability of your waistband or Spanx, Tierra Sur Restaurant is the place to do exactly that.

laughter, and travel writers ordering California spiny lobster tail pizza and a fine Pinot as soulful live vocals plays nearby. We couldn’t decide which music was better on which night— soulful jazz or sassy blues— the band was just the right anchor for this impressive room. The Lobby Lounge connects to a large library on the right—an intimate setting with antique books and oversize furniture. A country club-like dining area and marble bar to the left completes the lobby circuit and serves crafted cocktails and stock market chatter mix. Bring your single lady friends—this scene is ripe with celebration and opportunity. Check out Club M on the property for more of those shenanigans. Enhance your trip with insider Intel from Fairmont staff members to experience seasonal attractions like a local. ishing we could divide ourselves into two, the pool called to us often from our 3rd floor balcony. Grand ornate beds with plush linens is alluring, but when you sleep, you miss the ‘Life of Riley” dancing around you. A private balcony sets the stage for twilight conversations and night views you could almost touch. A TV screen in the marble bathroom worked in harmony with this early riser who likes to catch the morning news while soaking in a deep European style soaking tub. The connecting window and door closes easily without disturbing your other half. The memory of Valerie Von Sobel moving around luscious rooms in haute couture speaking softly about her love for this Fairmont property could be you one day. Find that channel and watch it over and over. Dual sinks, a separate shower and a sitting area IN THE BATHROOM gave two travelers plenty of leeway to prepare for dinner downstairs without encroaching on each other’s space. A dressing table area and full-size business desk is another hint that this room is much larger then what you are accustomed to. A full wet bar, wrap around couch and posh settings dared us to stay an extra night or two. Taking me away from this Utopia could very well be the cruelest thing you could ever do to me.

iverse dining is just a few steps away from your select abode at Fairmont Grand Del Mar. Lucky enough to have a nosh in the Lobby Lounge the first night and smart enough to book an early reservation at Amaya the second night, what laid before us were two vastly different experiences, both memorable and luxurious to the senses. Romance is making a comeback at the Fairmont, proudly. Your chosen retreat has a unique way of hiding its secret treasures—Amaya is definitely one of them. A short stroll down dramatic hallways and a winding staircase takes you to this romantic and bustling scene below that can only be heard when planted deep within it. The menu was bounteous— just as you settled on one dish, the next one caught your gaze. Prime filet mignon, wild Ahi tuna, pan-seared salmon—all these dishes seemed to know me on a first name basis (at least in my head). Did they fly in a chef from Italy to make our meatball appetizer or pan seared sea scallop? You will be scooping that sauce long after that meatball is gone. Neighboring tables indulged in artisan cheeses, charcuterie and pickles served on butcher block slates. We knew immediately we were on track for a very special dinner when our handcrafted entrees were beautifully presented. The smoked mozzarella ravioli (veal cheek, pickled mustard seed and arugula) was hypnotic. My guest eventually shared a bite, but that meant I would have to return the favor. Every second of consuming Amaya’s prawn carbonara (squid ink linguine, house cured bacon, egg yolk) was coveted. Order this and know exactly what I mean. The night of “floating” continued. Our server and his supportive staff attended to our every need. Not a crumb lingered on the table, not a drink needed topped off. If your trainer inquiries as to whether the banana butterscotch or tiramisu made its way to your plate, your secret is safe with us. Black & Bule (Belvedere vodka, ginger beer, Chambord blueberries and lemon juice), became the ideal after dinner drink before making that trek up the summit. The server read me like a book and pointed me in this direction. If you feel closer to Shangri La here, blink twice.

Locals covet their favorite spots in this town and those places less discovered by tourists means your table is always waiting for you (and easier parking). My gut chose the avocado sous vide eggs benedict over a buttermilk brioche finished with a chile burnt caramel hollandaise sauce (add a strip of maple muscovado glazed bacon and you’ll love it). My other half had the garlic parmesan biscuit with roasted white chocolate and vanilla sausage gravy. Every bite was adventurous, savory, and hearty to the palate. Taking decadence to a whole new level was the fair trade couverture (35% white chocolate) chocolate frothed with steamed milk and infused with orange peel vanilla. My partner in crime gleefully showed off his white mustache afterward.

riving from the central coast to San Diego can be taxing on even the most solid friendships. Break up that long road trip with a killer pit stop in Costa Mesa, just off the 405 and 2 miles from South Coast Plaza, in a tucked away artsy slice of heaven that only the locals know about. The parking is easy and the vibe is neighborhood Zen zone, so relax and embrace it. Old Vine & Kitchen Chef Mark McDonald has a clear and distinct passion for comfort food surrounded by ingenuity. It’s inside a new space, but the table buzz feels like it’s always been there. That banana pecan crepe filled with caramelized banana pecans and ricotta mousse is a benefit to the community! The omelet options are plentiful, inviting and fun—pizza omelets, Reuben omelets, BBQ omelets, veggie omelets, and slowly roasted goat shoulder omelets for the true rebel at the table. Texas-sized biscuits smothered in Italian sausage gravy and potatoes with pancetta gravy reminds you of that really good childhood roadside cafe. But this is not just ‘any’ cafe. It’s an indooroutdoor art bistro that’s open for brunch, lunch, and dinner. What felt like a happy accident is more like the romantic jump start your vacation needed. The wine menu reads like a book—Portugal, Spain, Lebanon, Greece, New Zealand. No corner of the world was left untouched—a true wine connoisseur’s dream. The lust to live well had me give a boozy gaze to my designated driver. What started as a brunch stop could easily have been an all-day hangout affair. Your art heart won’t overlook the dessert menu printed on art menus. There to steal the show is dark chocolate cheesecake, blue cheesecake, and my personal favorite, freshly baked carrot cake. It’s all so clear that you’ve stumbled into the pride of Orange County. If we didn’t have to get on the road, I would have been the last man standing.

We can’t deny the transformative power of a vacation: quality memories being made over fine cocktails, five-star food and restorative time away from the hectic rhythm of life. Despite being new to the neighborhood, Harley Laguna Beach feels like a friendly staple. Whether dining alone or celebrating a special night out with faces you adore, this gem is a go-to and less than a mile from The Inn at Laguna Beach. Cheers to owner and Chef Greg Daniels for intersecting fine bistro dining and California flare into one delectable experience, perfectly reflective of the Laguna Beach community. The area is humble in its beauty and fun to explore by foot before or after your fine consumption. The service at Harley Laguna Beach defines hospitality at its best. Named after his grandfather, Greg and his team have every intention of keeping Harley Laguna Beach a warm and inviting atmosphere, despite its upscale offerings. We started making our memories over an array of spellbinding appetizers that spoke to our individual needs. Health is wealth in these parts. My side of the table vibed on the “taste of local farms” with crudités of raw, pickled and fermented vegetables and hummus and Peruvian ceviche swimming in a citrus and red onion sea of amazingness. The other half of the table coveted savory fried chicken (Korean style drumsticks bathed in a spicy garlic glaze) and remarked on how easy they were to eat without the mess. Neighboring tables almost tempted us to order the Baja Kumiai oysters on the half shell and those wood grilled blue prawns served over polenta with a Calabrian chili relish and herb oil. No one in earshot seemed shy in their love for all the complex and harmonious flavors. And this was just

the beginning. We could have easily ordered another round of everything before our perfectly timed dinner refocused that gluttonous daydream. A buzzing evening spot, it’s apparent this kitchen is a mastery of everything that swims and doesn’t: wood grilled spiny lobster, curried chicken pot pie, 16 oz. Duroc pork chop, 45-day dry aged bone-in Ribeye steak, and Stemple Creek Ranch grass-fed New York steak. Not to be overshadowed is the Yukon gold baked potato buried in coals and topped with crème fraiche, raclette cheese and chive (add California sterling caviar to bring your palate magic to the finish line). Every dish seasoned to flawlessness and lovingly presented. This lust for living well and eating large is apparent this close to the Pacific Ocean. Every unique bite came to an end with the tried and true dilemma: Do we order the roasted pineapple upside down cake or cheesecake with strawberry coulis and Szechuan peppercorn? My only disappointment…in a foodie haze, I may have left my to-go container behind.

Coastal Dining... Tired of whatever, whenever? Ventre Magazine has the keys for places to network and live well on every budget.
Charismatic owner and visionary Antonio Cagnolo has his pulse on the evolution of leisure. This neighborhood alone is envied by millions for its vibrant quality of life. Cultural exchange is on display at Antonello Ristorante. Off the leash and on the loose, the well-heeled in Orange County share an enclave with foreign dignitaries, local foodies, and Hollywood celebrities, all within a perfectly appointed room that sets no limit to our desires. Our fine night started with the ultimate hospitable wine selection and grilled prawns brushed with organic olive oil and fresh herbs. We quickly envisioned returned trips for the thinly sliced octopus, prime cut beef, and lightly fried calamari with Parmigiano Reggiano. A gaggle of good friends at a large table would have us here people watching every night if we lived close by. Think Old World Tuscan vibe with a classic Northern Italian menu. What feels more like the actual essence of origin is all due in large part to the charismatic owner and visionary Antonio Cagnolo. All of the hands here will lift you higher, but his especially. His intersect fine decor, a genuine homey feel, a setting where clearly big money deals, romantic liaisons engage, and fine libations take skill, all under one roof. And to make it feel allinclusive at the same time? Well done, Captain. We were happily torn between the Ravioli Di Aragosta (handmade lobsterfilled ravioli served in a saffron cream sauce with Maine lobster claws, chopped arugula and seaweed caviar) and the Vitello Al Tartufo (veal scaloppini cooked with Porcini mushroom in white wine and finished with European butter). Everyone at the table was the winner when we ordered both.

Vibrant choices abound in every direction and whiz by neighboring tables— gnocchi di ricotta, prime cut filet mignon, and the house specialty—Spaghetti Alla Pescatora (“Chef Sal’s Dad Pasquale’s Special from Sicily”)—imported Patagonian shrimp, jumbo scallops, half lobster tail, European cuttlefish, black mussels and Manila clams served in a light tomato broth. We were in the mood to escape current politics and lose our senses— Antonello’s is perfect for such an adventure. Celebrating that feeling of Zen, we finished the night with Bananas Foster. Decadence was on full display with a tableside flambé of bananas and vanilla gelato topped with butter, brown sugar, cinnamon, and dark rum sauce.
This place won our hearts. We can’t help but feel that as the area booms, so will the scope of leisurely pursuits, giving locals and visitors new ways to come together. One such way needs to be on your radar. Here in Santa Ana, the restaurant Renaissance is real. Old world tradition in a happy home exists. Yes, that’s Antonello Ristorante.

It’s tough work spotting trends, but someone’s gotta do it. You have to get your heart broken a few times over a mediocre lunch outing to say enough is enough. When you spot your favorite seasoning while on vacation or on that short, painless drive home, you’re in like Flynn for life. Um, for this L.A. travel writer, that’s Umami Burger. With an explosion of locations coming near you, Umami Burger’s “fine-dining fast food” is a California dream come to life. Every reason to live is tied in with that gourmet Manly burger—house beer cheddar cheese, bacon lardons, smoked salt, onion strings, Umami ketchup and mustard spread. Not hunting for the beef ? The Umami grilled chicken club and Sam’s crispy chicken would box up in fine feather to take with us—that is, if we don’t devour them on the car ride home. Umami is an ingredient taste sensation that Adam Fleischman perfected a decade ago—a full circle experience for this writer. Back in 2009, my friend Robin Fitzgerald dragged me to a new burger opening just around the corner from my humble abode in the L.A. neighborhood of Miracle Mile. My confusion on why there was such a long line for this tiny place with only 5 items on its menu turned to clarity after the first bite. To see the evolution of this brand is of no surprise to me, or anyone in that original locality. Sound of ambulances. Clear thud. When I come to, will you remind me

Attracted at first to the soft lighting and stylish décor, our cross country weary eyes recalled that we had eaten at Daily Grill before. With a location across town, the Daily Grill caliber for fresh quality food carries over to this neck of the woods, too. Fresh off the plane at Hollywood Burbank Airport and in no mood for fast food, this vacation would begin with a hearty meal worthy of the cool outfits I packed. Let the classic Cosmo awake you and realign your senses. The perfect mix of fine vodka, fresh juices in a chilled martini glass and soothing music at the bar will have you feeling civilized after that long flight. Refuel with bacon cheddar and chive tots with a homemade garlic ranch dressing. Spinach Artichoke dip, calamari, ahi tuna sashimi are familiar and executed to perfection. You want someone in your life to look at you the way we looked at the jumbo shrimp appetizer. The lobster pot pie was recommended by the manager, Jessica, who also had my dinner guest falling in love with the meat selections, explaining how each was hand cut by the executive chef only. Great pride is just beyond those kitchen doors. We felt guided through every wine region as she passionately suggested wines for each course. Gluten-free and low-calorie options are also on hand at Daily Grill—we just normally ignore such restraint. Crème brulee with toasted hazelnuts and whipped cream was the last bit of electricity needed for self-healing.

Generous space for your unmentionables, stylish furnishings in every direction, and plenty of room to dance about until 1 am is your destiny and goal in this particular suite. Sure, other rooms hold their own spectacles, but we can only speak from experience about the vibration in this room. Room 839 is special. Design elements are gender neutral and make you feel securely wrapped in style. With its Inner Harbor – Downtown Baltimore visibility, Room 839 may be the best waterfront secret this side of Maryland. Wishing I had more time to grace my derriere on the
modern furnishings and lux bedding, but the reality of a work day was calling. Sighs of satisfaction came easily after long production hours with a room that had been visited by a housekeeper with eyes as critical as mine; just what the doctor ordered. Amenities surround you—a minifridge, a coffee maker with the perfect French roast coffee, and an electronic bathroom mirror with bluetooth connection for when it’s time to jam out in the oversized soaking tub. Voss water billed to the company card will get a pass, and we suggest eyeing the maid’s cart stealthily for the L’Occitane products. Having Robin Meade on the flat screen TV every morning in the spacious living room made for feelings of being at home.
But the views. The views, for sure, you don’t have back home. The longer you’re here, the longer you’re lulled. Gosh, if you miss that flight in the morning and have to stay an extra night, is that a bad thing?

It’s not quick airport food or hurried service anymore, so breathe in the views and prepare for a special and extremely thoughtful meal. Explorers is nestled on the second floor of Royal Sonesta Harbor Baltimore and is an easy choice for any traveler or passerby. You’ll be thankful for those stairs when it’s time to walk off that sublime nosh. Torn between the Moroccan vegetable stew, the burger, and the salmon, I opted for the pan seared rockfish and even surprised myself. Your heart will be aflutter over this dish. My finicky palate surrendered to this culinary delight—the rockfish was cooked and seasoned to absolute perfection. The farro mushroom risotto flashed me back to that last five-

star resort on my passport. You’ll be surprised, too, at how lovingly tender they are. A craving the second night commanded a repeat performance. Trust me, when you try one thing on this menu, you’ll make time in your busy schedule for a return trip. Make a mental note to return for Happy Hour at the bar--$6 Thai fried calamari and $7 honey wings paired with a $4 draft beer will produce smiley travelers.
