Brine:
• 2 cup white vinegar
• 2 cup water
• 2 tbsp salt
• 1 tbsp dill seed
• 1/2 tsp mustard seed
• 2 sprigs fresh dill
• 2 bay leaves
• 1 tbsp peppercorns
• 7 cloves of garlic
Vegetables:
• 2 Carrots
• 1/2 White Onion
• 3 Cucumbers (kirby cucumbers are the best)
• 1 Zucchini
• 1 Jalapeno
1. Chop the vegetables any way you like. For carrots, I like to do thin, vertical strips. For the onion, I cut the half into quarters and then peel off individual slices. For the cucumbers, you can do vertical quarters if you like spears or you can cut small round slices if you like chips. Same for the zucchini. Finally, for the jalapeno, cut it into small slices and add as many as your spice preference desires.
2. In a saucepan boil the water, vinegar and salt. Stir the salt in until it dissolves. Place your dill seed, mustard seed, fresh dill, bay leaves, peppercorns and garlic into a sterilized jar. Add in your chopped vegetables and then pour the brine over the vegetables until jar is full. Set aside to cool until they are room temperature, then put them in the fridge.
3. Can be eaten at anytime but best taste starts after 10 days or so. Keep refrigerated.
