Self-awareness vacuum-in-chief Donald Trump has publicly bragged about the size of his personal fortune, his crowds, his private jet, his hands, and his Johnson, but with each boast comes a greater insight into his almost tragically thin-skinned insecurities.

and smoking too much, occasionally tending to his runner beans in the back yard. I was nine when he died and, save for a kind uncle who became a part-time surrogate father I guess, I was raised by my mum and nan with few other male role models — my two aunts were around a lot, also.

Trump, like his boss and fellow bully, Vladimir Putin, suffers the misguided belief that a strong man must be a strongman. His prehistoric views on, well, everything, appear emblematic of those of many a male baby boomer, while, on the other side of the political — and social, cultural and intellectual — spectrum, the likes of Prime Minister Trudeau of Canada, or France’s President Macron, appear to represent all that a modern man could, or should, be: self-assured yet temperate, sensitive and inquiring. It’s tempting to put these polar opposite philosophies down to generational divides, but life’s not as neat as that. US senator, and possible 2020 presidential candidateto-be, Bernie Sanders, 75, and British prime minister-in-waiting Jeremy Corbyn, 68, are silver-haired proof that manners, grace, humility, kindness, decency and even feminism are virtues that transcend both time and gender.

It’s said you can’t miss what you never had, but that adage is of only limited truth. For all the love and emotional care that so many women are so adept at bestowing, for a child, they lack a certain presence and physical security that comes only with the company of an older male. Later, through my teens and probably even into my twenties, whether it be the fathers of friends or girlfriends, work colleagues, or the older crowd down the local pub, I sought the company, conversation, and, ultimately, validation of older guys — and you hardly need a degree in psychology to figure out why.

My father has never been around. My early years were spent living with my mother at my grandparents’ house, so my first recollection of a male figure was my granddad. He rarely spoke and spent his days sat in his armchair reading hardback books

So, what does it mean to be a man? There’s certainly no need to be built like an All Black or possess the wit of Oscar Wilde or the bank balance of Warren Buffet, Start with just being there, man. Whether it be at home, the office, the factory, the farm, or the pub. Be open. Be available. Listen. You never know who needs it. Enjoy the issue. Jamie Desplaces

Verve catches up with French model and actor Philippe Dumas and his tres magnifique silver beard. Your career took an unusual path from law school to advertising then films. Tell us about the journey?

I left with a master’s degree from law school, and while waiting for responses to my job applications, a friend asked if I would be interested in working on a feature movie as a trainee during that free time. I was curious to discover more about it, so thought ‘why not?’ It was fate — I worked in the movie business for 25 years.

Where do you mainly live?

Even though I travel a lot for my job, I live in Paris most of the time. I have a small apartment in the centre of Paris, which I adore. It's a cosy little place in an old building from the last century, close to Georges Pompidou Museum.

Your beard is obviously a big part of your persona? How do you take care of it?

My beard is my signature. I am aware that it is a big reason that I am booked for projects, so am thankful, and take good care of it — I hate the scruffy look some beards have. I want it to be silky and I really like when people tell me that it smells good. I’m careful when eating — and rinse after each meal. I never trim it myself, but go once a month to the barber — always the same one as he knows the shape.

What dishes are the most challenging to eat with such a beard? Having a long beard is challenging since all liquids are my enemies! The moustache absorbs a lot of liquid, soup is the worst. Very often when I can, I use a straw to drink. It is imperative that it remains neat and clean

Your top three grooming tips?

Rinse your beard after every meal. Apply a mask once a week — a 20-minute mask leaves your beard smooth and silky. Apply a drop of oil daily to tame the hair, leave a nice smell and make your beard look healthy.

How do you feel about being 60?

It is just a number. People are living older now thanks to the medical progress and we can say that 60 is the new 40. What is important is to keep an open mind regarding novelties in all fields such as arts, computers, technology, and politics. By doing so, you can keep up with the youngest who won't see you as an old person because you are on the same page, but with a great advantage: life experience. Age power!

What’s the most embarrassing moment you have had?

I was doing a fashion show in Milan and I was the smallest guy in the show. They were all 6'2” and I am only 5'9”. I really felt uncomfortable in the line. If I could have disappeared, I would have.

Can you share some of the most important lessons you’ve learnt?

The most important is not to judge anyone by their exterior look. Don’t judge a book by its cover would be my motto. You meet the nicest people that way. Also, it is important to be patient. Patience helps us navigate many problems. It allows us time to evaluate and to think. Lastly, have respect for all human beings, then the world will be at peace.

What is your favoured daily attire?

Every day I wear jeans — they are comfortable and fashionable. Depending on what you wear with them, they can be smart, casual, elegant. You can wear them with a tuxedo jacket or a t-shirt and get a completely different look. I’m also a fan of waistcoats — I have many of different colours and patterns. They work great with jeans and suit the beard, for a very cool, elegant look.

What is the best advice you've been given?

The best advice that a wise and good friend gave me was that if health is good, nothing else matters. And he was right. Losing your keys or missing a plane is annoying, but there is no harm done. Getting cancer or losing a child, that is when you really can complain. This advice has been of great use throughout my life.

SOMETIMES IT'S HARD BEING A MAN In the ninth century BC, Spartan boys aged just seven were sent to military schools where they suffered beatings to harden them physically, and were coerced into sexual relations with older soldiers to reinforce their loyalty. In England, teenage would-be knights fought and jousted before being sent to fight in the Crusades while male Lakota (a native American group) youths were forced to fixate on the sun while suspended by ropes threaded through pegs pierced through their skin. Many ancient rites of passage to manhood persist. Maasai boys are exiled, the solitude believed to inform their wisdom and respect for others, but not before they’ve endured tortuous rituals like teeth-pulling, tattooing, bodily piercings, burning and circumcision (this one pops up a lot across many cultures). Young boys of the Sambia tribe of Papua New Guinea are also separated from their mothers and must perform bizarre undertakings like nose-bleeding and sexual relations with their male elders. In some Indian regions, young men may prove their character by walking barefoot over smouldering coals, or even wrestle bulls. While secret initiations into certain clubs or sporting teams may require some form of humiliation, rites of passage in the west are rare—and unlikely to involve the sacrificing of body parts or fighting ferocious beasts, but that’s not to say struggles on the path to manhood are any less heartfelt, they just often occur within the privacy of thought. A couple of years ago, a note by a nine-year-old Canadian boy clearly resonated with many when

his handwritten musings about the worse things about being male went viral. Among his concerns were that boys smell bad, grow too much hair, and had an “automatic bad reputation”. He also lamented our inability to be mothers, our predisposition to violence, and, most tellingly, that we’re not supposed to cry. A common thread is that the cultural and social realignments of the 21st century has left a generation of men adrift — the redefined concept of masculinity somewhere over the horizon, but how far, and in which direction, no-one is quite sure. “Men are performing for an invisible authority, the Department of Masculinity,” writes Grayson Perry in The Descent of Man. “We never know when we are being observed, so we constantly keep watch on ourselves and each other; we guard the boundaries of the role. We are all the authority figure and the prisoner.” Late last year, the Guardian invited its male readers to write in to express what they believed society expected of them. The response was one of contradiction and of confusion. One reader, who grew up in London with his mum and sister, but no dad, said he was grateful for the lack of macho clichés in his upbringing as it had left him with a more open mind about what it was to be ‘manly’. A gay man also from London, said dating apps are awash with the phrase ‘masc 4 masc’, that is, gay men making it clear they’re only interested in guys who “show no signs of femininity”, while Francisco from Santiago, said manliness used to be about protecting your family, but is now something “more superficial”.

Kotti from Guntur, said that in many parts of India men are not expected to be emotional, and that men in their movies were seldom seen as thinkers, or even someone who “feels”. Peter summed up the mood best with a comment that being a modern man is “confusing, challenging, and everyone has an opinion”. Today’s men need to understand how women think; be emotional, yet strong, as well as a listener, a gentleman, a chef, and a mechanic,“ and ultimately a role model to the next generation of men coming through”. In a piece for the New Statesman, Steven Poole valiantly argues that it’s not masculinity that’s in crisis, rather humanity itself and that the notion of a “crisis of masculinity” simply “reinforces the idea of male exceptionalism” and “shores up the patriarchy”. His finishing line, however, that “maybe a real man is one who never gives any thought to masculinity at all” could either be construed as wishful thinking, or somewhat callous given recent suicide statistics that prove overthinking needs be urgently addressed. Suicide is the leading cause of death for British men aged 20-49 (three times the rate of women), and suicide rates in men aged 45-59 are at the highest since the early ‘80s. In the US, suicide rates are also at their highest level in 30 years, while the number of young Kiwi men killing themselves is double that of Australia (themselves suffering record numbers), with Maori males aged 15-24 twice as likely to take their own lives than their non-Maori counterparts. A study of male suicide survivors by Vienna’s Medical University found that

almost all reported that “their masculine beliefs led to them isolating themselves when they were feeling down, to avoid imposing on others… [and] that adherence to masculine norms meant that feelings associated with being vulnerable provoke greater anxiety than the thought of being dead”. Suicide rates have risen 65% in the last 45 years, and in 97% of countries, rates are higher among men than women, on average, by more than two-to-one (it’s even worse across western nations, particularly in the UK and US where it rises to four-toone). Men are also more likely to get (and die from) cancer than women (around the world, women’s overall health just tends to be better) while accounting for 95% of workplace deaths. In most countries, women can generally expect to outlive their husbands by five years. Celebrated in more than 60 countries, on 19 November — coinciding with Movember — International Men’s Day, shines a light on the above issues and more. It is, says the foundation, “an opportunity for people everywhere of goodwill to appreciate and celebrate the men in their lives and the contribution they make to society for the greater good of all”. ARTICLES OF STYLE Suits rose to be defence force fashion in the 1940s, when they moved away from their gangster association, to be a symbol of both business and authority. Commander Vernon J. Geberth once referred to the suit as psychological armour. The Secret Service wear suits to appear less military looking, uniforms following the president or first family can be very intimidating and send out the wrong kind of public message — more of a dictator than a leader. They are meant to be visible yet invisible. The president needs to be approachable, kiss children and speak to the people, yet be kept safe. Suits are subtle, and fashionable. They are designed specifically for the public eye, and allow the team to fit into all kinds of situations without scaring the nation with their presence. Articles of Style have found a way to suit men from all walks of life, including the Secret Service. Articles of Style, previously known as The Style Blogger, was launched in 2009, and developed a global readership, featuring in magazines such as Playboy and Sports Illustrated. The blog was designed ideally, to reach a male audience and make fashion as relatable as possible for the everyday man. In particular, finding the perfect suit is something men have always struggled with, listening to the advice of a store clerk trying to make a sale rather than dress a man to impress, the creator of Articles of Style, Dan Trepanier CEO and creative director of AoS, also known as ‘America’s Best Dressed Man’,

was left with no choice but to launch his own company to make customised suits in America, for Americans, and have never ever had a return. Partnering with Southwick Clothing, America’s oldest menswear manufacturer, AoS is made up of a team of five men and fits each client personally using try-on garments (they send a first draft of the suit if you like, which they also consider a 'welcome to the family' bonus). Men’s fashion is different because it isn’t always seasonal, it’s long wearing, and in today’s market, there was no good option for something timeless yet simple. Dan upskilled as a tailor and together with his team turned the popular blog into an online store, which launched in 2015. What’s so unique about Articles of Style is that, not only are they ethical, American-made and a high-quality suit, but the whole process is done online. You won’t find another service quite like it. Dan said for years they sampled every online tailoring brand, and were always very disappointed with the product and experience. There was a massive drop-off between an in-person fitting experience and the online ‘selfmeasure’ experience: “This, combined with our readership worldwide constantly requesting to buy the garments we were showcasing in our editorials...led to the ‘aha’ moment. The online fitting process is an absolute game-changer for e-commerce. It allows people, anywhere in the world (we have clients in more than a dozen countries), to have a bespoke experience with experts that they trust creating quality clothing for them.”


Run through the process of how you make your suits? It starts with the client filling out a physical profile on our website — height, weight, sizes, problem areas, and so on. We then cross reference your profile against millions of data points that map the human body — essentially getting a rough estimate of your measurements, dimensions, and importantly, your personal preferences. We then cut your personal try-on garments, which are custom-made for you (and yours to keep). This allows the client to have a ‘fitting experience’ that bridges the digital/physical gap, and gives the client and our expert tailors a point of reference. We then review the fitting photos and feedback to make all the adjustments to the client's pattern. This is where the magic happens. We do full bespoke adjustments, including posture, shoulder slopes, and asymmetry. Without the fitting garments, these things are impossible to determine — with just body measurements, for example. As far as I know, the one-on-one try-on fitting process is exclusive to AoS. In terms of making these suits, did you have to test the fabrics first? How did you know what would be suitable for the Secret Services? What kinds of fabrics do you normally use, and did this differ when making them for the Secret Service? I've been testing fabrics for 10-plus years, and it's an industry that is always evolving. For the Secret Service, they need something custom made, as most of these guys are huge and they can't look like slobs. They also need something very lightweight as they often stand in the sun for long periods and

they can't be sweaty next to the president. Most importantly, they need something that stretches and has a maximum range of motion — they have to be ready to react to any threat, without restriction. Lastly, it has to be black, and it has to be built to take a beating. For this project, we sourced a lightweight pure wool with natural stretch and moisturewicking properties, which we had to dig for, but turned out to be the perfect cloth for a very difficult job. Do the suits have any secret pockets of extra room to conceal communication tools or weapons? Yes, the garments have secret — ha! — details like hidden wire channels, holster straps, and extra room in areas for things like pistols and ammunition. Each guy's requirements are slightly different, which makes custom the best solution for these guys, in addition to their unusual size and shape, of course. What was the reaction to the suits by the Secret Service? They were very impressed, especially with the fit and comfort. I keep asking for pictures, but that's sort of against the rules. Any more interesting stories? You never know who you're going to meet with such a large online reach worldwide. Last week we made garments for a champion UFC fighter, a state senator, an executive with SpaceX, Vladimir’s Putin's translator, and a taxi driver. We get a fresh perspective on life from every client, that's probably the best part of the job — aside from their reactions when they receive their garments.

Verve chats to master jeweller, Greg Holland. How long have you been in business?

My career stated back in 1986 with the Benchmark Jewellery Company in Mauranui Ave. After leaving New Zealand for 4 years and then living in Wellington for 6 years, I returned to Auckland and started my manufacturing retail business in 2002 working from my current space in Daytone House, Davis Crescent.

From where do you source your diamonds?

My diamonds are sourced from local suppliers here in Auckland. On occasions I deal with international suppliers particularly when I’m looking for something unusual, like pink diamonds and other large coloured diamonds.

Current trends in bespoke jewellery?

I am seeing a resurgence in bespoke jewellery itself. Customers are increasingly wanting handmade, something totally unique, and to work with someone they can trust. Anything can be crafted: if we can dream it and draw then it can be created.

Best way to keep jewellery clean and sparkly?

A regular professional clean and polish is the best way to do this. If a Verve reader wants to come in to my studio, I will clean their jewellery, free of charge.

What brings you great joy?

In a business sense - the moment in a customer’s eye when they see their finished piece for the first time: that is really amazing! I have had tears of joy and huge hugs of delight from my customers and that is really what it’s about for me. In fact I had a call from a customer today to say that his wife is still getting regular compliments on her piece even after 12 years!

What is the best advice you've been given?

To think big; to be yourself; to do what you love and surround yourself with amazing people – and I have done just that!

I’m a fortunate in that I have the option of using the Gulf Harbour ferry and the train which has been a great alternative to driving, and all the challenges that this entails.

What is on your perennial to-do list?

To be outdoors as much as possible: I live on the Hibiscus Coast so anything water-related is high on my list — but I am also preparing for my annual ski touring trip. Ski Touring is a new passion that I absolutely love. Being in the Southern Alps is incredible. The club fields in the Craigieburn range in north Canterbury are incredible and offer a true adventure.

Three books on your bookshelf?

GARRY MCALPINE:

IN SEARCH OF NEW HORIZONS

Regular listeners of Radio Live might recognise Garry McAlpine (or at least his smooth “Mid-Atlantic” tones) as the ‘Singapore Sling’—the broadcaster’s former Asia correspondent. He’s now settled back in New Zealand following a decade-long stint overseas, mainly in Singapore, where he also produced documentary series for governments, universities and businesses, often with a historical, military, or environmental slant, to be aired on television and platforms like YouTube. “My first stop was Indonesia, and I remember when I first announced it everyone said, ‘It’s too dangerous, you’ll die over there,’” he recalls. “I said to them, ‘You do realise most people die in bed on their backs, asleep? But no-one says don’t go to bed, it’s too dangerous!’” He makes the valid point that few would have proffered such prophecies if he were a younger man about to embark upon his first overseas experience. When Garry’s son, now 35, embarked upon his OE to teach in South Korea, he expressed apprehension to his father about going alone to a strange where land where he didn’t know anyone or even speak the language. “I told him he should be more worried about the people who will be looking to steal his kidneys!” chuckles the producer. “But a few months later, he called in the early hours of the morning from a party to thank me for encouraging him to go. He was so happy.” I ask Garry about his upbringing — and father — and he describes his childhood in Dunedin as “a difficult one” where he “got hit, a lot”. “That’s why I never raised a hand to my boy,” he continues. “We have a very jokey relationship. He’s always called me ‘Garry’, from about the age of four. He’d ask things like, ‘Does everyone have a Garry?’” While studying archaeology at the University of Otago in the ‘70s, Garry was the lead singer of cult rock band Lutha, lauded as one of the most influential Kiwi acts of their time, “We were one of the groups all the kids listened to in high school,” beams Garry. “Chris Knox once told me how they all watched in awe as we got two albums of original material from EMI, straight out of Dunedin. No one had ever done that before. Because the first album was released by EMI it’s now one of the most collectible records in the world, due to its rarity [their work has since been re-released on CD and digitally. It’s very cool].” An earring and equally glinting eyes still betray Garry’s rebellious, rock ‘n’ roll spirit. He speaks fondly of his hometown, and its vibrant, creative student soul. “I don’t think Dunedin has grown much since I was there,” says Garry. “It’s a wonderful little city that has everything.” But it wasn’t enough to sate his eversearching state. “I’ve always been adventurous and inquisitive,” he says. After a stint teaching in Auckland, he moved to Australia “to sell drugs”, before adding, after a comedic pause, “of the ethical, pharmaceutical kind!” Later, back teaching in Auckland,

Garry honed his film skills before hooking up with producer Neil Roberts, founder of Communicado — the production company most famous for smash hit 1994 movie Once Were Warriors. “I just knew when I saw the rushes for that movie, we had done something special,” says Garry. “It all just came together — the directing, the producing, the acting. For many of the actors it was their first time. Of course, it wouldn’t have been anything without the wonderful story by Alan Duff. Before that, no one thought it was possible for New Zealand films to make money.” Neil Roberts died of cancer in 1998. “We had plans for all sorts of projects,” says Garry. “He had bought a pair of MiG 21 fighter jets. We were going to start making our own vodka, buy a club in Poland and put one of the planes in there. We had done everything down to making the labels. But Neil died three months after being diagnosed.” Garry’s first major gig in Asia was to make a series of films called the Legacy of China about the history of Chinese inventions, later making shorts for “some of the best brains in the world” regarding cutting edge sustainable technologies and hazards such as natural disasters. “Along with Australia, we are the closest Western culture to Asia,” says Garry. “The more we learn about them, the more it will be to our advantage. New Zealand is perceived very positively, they know about the beauty, the surplus of water, the surplus of food, and the All Blacks.” Garry says he “doesn’t do politics — unless there emerges some crazy person like Donald Trump”, and that our society swings between left and right but always finds its balance. “New Zealand has always been very creative,” he goes on, “and it’s important that the younger people can learn from the experience of others who have done it.” Though Garry admits that he too can learn much from the younger generations in this ever-changing technological landscape — and is keen to do so. He returns with “several local and international broadcast projects in the pipeline” to be screened online. “That’s where our future audiences are all residing,” says Garry. “I’m utilising my 10 years’ experience working in Asia advising Kiwi businesses seeking expansion into the region.” Garry reveals he’s also keeping busy writing, producing, and filming several short-form media productions for some local companies, as well as voiceover work. “I know a hell of a lot about some weird and wonderful topics in Asia, such as the demise of the banana, and marrying blow-up sex dolls!” he adds. I presume the two topics aren’t linked. “I’ve come back to New Zealand for a new adventure. It’s another phase of my life.”

Juan also imparts his aerobic expertise to prisoners at Mount Eden, an endeavour that he describes as “an honour”. “It’s something I’d always wanted to do,” says the yogi. “It’s an incredible feeling to be there, I find it humbling to spend time with those guys. They are human beings, just like everybody else. They have also made mistakes just like everybody else—of course, some mistakes are bigger than others, with bigger consequences. But, they are fulfilling their responsibilities. It’s interesting to see them in that environment immerse themselves in the practice and to see how the medicine of yoga works in their bodies and their lives. During thier practice, they have a feeling of not being judged. It teaches me a lot too.”

WHAT DO YOU TAKE FROM IT? “Being in the prison brings me to a place of love and compassion. When I have those connections, I am fulfilling my purpose in life. I must also learn to keep a firmness within myself, to have a certain presence in the room so that I am not pushed around — not physically, but you have to hold that space. This has brought more confidence into my being.”

Like in so many other parts of the world recently, yoga's popularity has boomed in Colombia, but when Juan first started practising more than a decade ago, the philosophy was met with much scepticism in his deeply Catholic homeland, some viewed it as “guys lying on beds of nails” and even “devil stuff”: “But it’s so interesting to see yoga be so embraced across so many cultures. Every human being is looking for happiness and this physical practice teaches you to go deep within yourself, to alter subtle parts such as your breathing.”

From an early age, Colombian yogi, Juan Diaz harboured "curiosity about ancient techniques that help gain a deeper understanding of existence and the self". As a teenager, he discovered yoga and felt an instant connection, realising "through movement, breath awareness, and meditation, I would be guided further into this exploration of the self and reality". Juan has been practising for more than 10 years with different teachers around the world and is constantly developing his "intuitive, fun and strong self-practices to integrate into his teaching, ancient and modern philosophy to create a space of connections within the body, mind and emotions".

Prior to Auckland, Juan spent time in Hawke's Bay where he introduced yoga to kids with autism: “Their attention span is short but I managed to teach them in short periods of times. The repetition really helps them with their breath and to find stillness and connection with the world. Most of the time they are in their own space but when they are having to reach to the extremities of their breaths, they are in the present. They have fun, and it improves their behavioural patterns.” Juan says that he too is in a constant state of learning, learning to not judge, and to approach every situation with a sense of equanimity: “Yoga is an amazing tool. The more we practise, the greater connection we have with ourselves, and the universe. It is a constant process of refining, of peeling back layers, rewiring our thought patterns. It is an anchor in my life and I feel grateful and privileged to be able to share it with other people. Even those who feel yoga isn’t their thing should still try to incorporate more movement into their lives. To concentrate on breathing and spend some time withdrawing from their senses and just being still. The changes to your life are endless."

KRIS LAL: CURATING INFLUENCE Whether you’re new to social media, or an online superstar, Kris Lal and his team at Curator can make you shine more.

Working with “premium influencers” around the world, Kris and his clan consults, creates, manages, negotiates contracts, and runs digital campaigns “to grow your social media equity and reach”. He’s still on a high when he meets Verve for coffee having snagged a gig with Air New Zealand just a couple of days before. “There are a few other companies here in Auckland that do similar things, but they’re not offering the same service,” says Kris, who previously sold luxury watches for duty free, and is an influencer in his own right, with 36,000 followers on Instagram. “Everything is very personality-driven, and what we do is very bespoke. I’m very honest with people — for some types of business, social media is just not going to help them in the short term, and I tell them straight away.” Kris will only take on clients for whom he can promise results. “We cut out the middleman,” he says, “and do the research. I can tell you exactly what brands each one of our influencers' followers are interested in so that we can find the perfect fit for that business. We are organic, we don’t simply stick a picture on the page and make it look like advertising. Plus, my sales and marketing background helps." A 2016 study by TapInfluence found social media marketing to be 11 times more effective than banner ads, and of all the platforms, Instagram is fast becoming the most powerful marketing tool, boasting the highest rates of engagement. Of its 700 million users (400 million daily), half follow at least one brand, and, according to Inc.com, 17.5% of Instagrammers follow up with searching, shopping or sharing with friends when inspired by a particular post. By the end of this year, more than 70% of brands are predicted to have an Instagram account.

“Most people just don’t understand social media,” says Kris. “To be really successful you must invest a lot of time stay up-to-date stop and join groups to build follower and interaction numbers.” He compares social media to “a beast”: “It’s a living, breathing organism and depending on what you say to it, you can become famous or notorious very quickly. It’s about understanding how the crazy thing works. It can be very intimidating for those who are not part of that world.” Kris has worked with all manner of clients, from small businesses to globally-renowned musicians (“T-Boz of TLC, America's biggestselling girl group ever, is a very good friend”), but no matter what their success or celebrity so far, he says that it’s vital people learn to think outside the box: “Take a restaurant for example. It may be that a comedian could get you a lot more followers — and customers — so you have to open your eyes to a different way of doing things. It’s about fresh perspective, giving clients different options.” Kris aims to do such a good job that he become surplus to requirements when it comes to the client’s next endeavour. “We work with a brand to say this is how we do it, to impart our knowledge so that they can then do it for themselves,” he says. “It’s not that we don’t want their business but there is no better feeling that teaching someone set of skills then seeing them implement it for themselves. How did you first get involved with comedy? I'd always enjoyed comedy and did Theatresports through high school. I got into stand-up comedy though Class Comedians, which is a program in the comedy festival where you hang out with actual comedians and they teach you all about it: how to write jokes, how to deliver jokes, tips about stage presence, and just great contacts in the industry. At the end you perform in front of an audience of about 200 and it was the most nerve-racking thing I've ever done in my life. I opened with a joke about my brother hearing the 'pick up Pizza Hut' jingle then literally going out and picking up an entire Pizza Hut building. The punchline was that he got done for shoplifting. Not too bad for a first timer – you might disagree. What’s your average day like? It's mainly sitting in an office during the week, and in a studio at the weekend. During the week I write for Jono and Ben, or The Project, or 7 Days. That's just sitting at a computer desperately trying to think of funny things and writing them down. I do the warm-up for Family Feud, which is trying to keep the audience entertained and informed while they sit around waiting while the cameras are reset and the people in lighting are screwing around. I'm very lucky that the people at Three have been so nice and given me so much work. It's actually got to the point where I have enough comedy and writing stuff to do that I'm not doing any dentistry anymore. Crazy!

SAM SMITH Sam Smith is a comedian, writer, and musician. For many years, he also worked as a dentist during the day. In 2011, Sam was a Raw Comedy Quest finalist and he won Best Newcomer in the NZICF in 2013. He is currently creating a comedy fundraiser for multiple sclerosis awareness and producing a podcast with Radio NZ.

What are the challenges of having MS, and how does this affect your life on a daily basis? Do you find that having a sense of humor helps you cope with these challenges? MS has been a big change in my life. I was diagnosed six weeks after my son was born so it was a bit of a crazy time. I lost the strength and feeling in my hands which meant I couldn't do dentistry anymore. Never fear! I've regained almost 100% of that feeling in my hands now, so I could go back, but I'm really enjoying being a comedian/writer right now. The thing about MS, or at least my form of MS, is that it comes in episodes. I'll have little niggles every so often – pretty bad fatigue, pins and needles in my hands, sore feet, a sore lower back – that will be there for a day and then disappear. That's what 'normal' has become. During an episode, I'll lose feeling in my legs and arms and have to go chill out in hospital for a week. The hardest part is fear of the unknown. You never know when it's going to strike. I think having a sense of humour does help with that. Rather than thinking, 'Is an episode coming tomorrow?' I'll be thinking, 'If it comes tomorrow I can have a sleep-in which sounds awesome!' Can you talk about the comedy fundraiser you’re helping put together? Oh yes! I'm very excited about this. I was approached by the MS Society to put on a comedy night after they saw a documentary episode I did on a TV show called Attitude. I've got a bunch of my favourite comedians doing a stand-up show on Tuesday, 29 August. There will be some comedians you've heard of, and some you haven't, they're the cream of the crop and it's going to be a great night. It's at the best comedy venue in the country: The Classic, which coincidently is also where I did my Class Comedians training back in the day. Is laughter the best medicine? No, I think antibiotics are the best medicine. They're amazing. Laughter is pretty good as well, keeping stress levels down is really important and laughter does that, but I'd hate to see someone try to laugh-off a full-blown bacterial infection.

Nestled in a forest-like landscape in the small village of Grabouw, South Africa, an architect’s home has a seamless flow between interior and exterior.


01 In the almost utilitarian master bedroom, a small shuttered window opening provides ventilation, while the large north-facing window inspired by Mexican architect Luis Barragán frames the garden view. The Zulu pots on the windowsill are from the Winterton area of the Drakensberg in KwaZulu-Natal, and Marcus collects them "whenever he can find them". "I had a straight line in my design, but an architect friend suggested I make the line perpendicular to the roof slope. It worked beautifully and made the shape much more dynamic," Marcus explains. Throw from Weylandts and cushions from Skinny laMinx. 03 The white leather sofa on the verandah is Marcus’s favourite spot for Sunday afternoon naps with his dogs, especially after a long cycle in the mountains. The three ceramic cow heads were made by a dear friend, the late ceramicist Nicolene Swanepoel.




01 In the kitchen, a large Woodsware crockery collection creates a striking focal point. "About 15 years ago, I stumbled upon a small set of 14 pieces at an antique shop, and then my collection grew," Marcus explains. He designed the large dining table with an African mahogany top as a centrepiece to match the steel structure of the house. The pendants above the table are 1970s track lights salvaged from a renovation project. The painting above the prep bowl by Eric Duplan is a favourite piece, and the splashback tiles were chosen to match it. 02 A wooden sliding door separates the lounge from the verandah, where a pair of Wassily chairs and a mid-century coffee table create a sophisticated look. 03 In winter, the built-in bench in front of the ďŹ replace is where you will ďŹ nd Marcus. CREDIT CHECKS FOR PROSPECTIVE TENANTS Choosing a right tenant for your valuable rental property is so important, but not so easy. You ask all the right questions and of course the last landlord is the best reference you can get, but some tenants do not have a last landlord, they may have lived with family. Prospective tenants present themselves well to the landlord, say all the right reasons as to why they want the property, and convince them they would be an ideal fit. But make the wrong decision and you will rue the day you let them move in. This is where the credit check becomes very important. Property managers have access to this valuable information — and it is a necessary tool for us. It will tell us if there are any police convictions, tribunal rulings, bankruptcy or outstanding debts. Just the information we require to assist us in choosing the correct tenant. Just this week we had a prospective tenant apply for a property of ours, she was well-presented and drove a nice car. She seemed ideal, but we ran a credit check

to discover that she had been involved in a serious police incident. There are not many checks as bad as that, but the credit check enables us to make sure we don’t place unsuitable tenants into our properties outstanding debt and tenancy orders is the most useful information we require. It’s so easy to place a tenant in a property, but so difficult to get them out. Trust me, the procedure takes time and is unpleasant. Especially if you must eventually evict them from the premises, or require police assistance. KEEPING YOUR RENTAL PROPERTY IN GOOD SHAPE There is already a lot going on for residential property investors when it comes to maintaining their properties to an acceptable standard, and there are big changes coming. From 1 July, 2019 all rental properties are required under legislation to have ceiling and underfloor heating, with EECA, the government agency responsible for energy efficiency and conservation, being tasked to promote the government’s Healthy Homes programme. As investors who own rental properties need to stay up to date with their legal obligations, EECA’s websites are definitely worth reading. STYLE AND COMFORT I’ve had a fabulous week working with a client who wants to look completely different. She’s had two children in the past five years and like loads of new mums, has found the transition from working gal to pregnant to full-time mum challenging. She tells me (like so many mums I’ve met) that she feels that she’s lost herself a little. She reminisced with me about how prior to children she used to wear her hair in a myriad of styles, colours and cuts but she hasn’t had a decent haircut since her first child was born almost five years ago (we visit my hairdresser tomorrow). She’s loved learning how to apply make-up, not just for occasions, also she’s learned how to do a 'five-minute face'. To our first session, she wore a top that was tired and long past it’s best, and yoga pants. I am truly looking forward to creating a wardrobe that works for who she is now, rather than something she isn’t. I often joke that comfort and style sometimes go together, but comfort and frumpy always do. I absolutely get that comfort is a key driver for so many of us when we’re choosing our clothes – after all who wants to spend the day feeling uncomfortable? I also believe that you can do comfort and style if you choose wisely. There’s jeans out there with enough elastane to feel every bit as comfortable as yoga pants, but they’ll look a lot more polished when you head out for dinner with friends. There are

soft, relaxed pants that flatter tummies but are made in fabrics and styles that elevate their wearer’s overall look even worn with a pair of trainers, team them with a block heel and the result is quite simply, "Wow!". Grab a denim or bomber jacket and by the end of the first day in it, you’ll feel like you’re wearing your favourite cardigan. With the rise of the 'sports luxe' trend, stylish sweatpants and sweatshirts abound and it’s totally acceptable to wear these to your local café. Look for relaxed knits and soft tees, but add accessories to lift them. As with anything, it’s the details that make the difference. Get these right, and you’ll go from frumpy to fabulous easily. Our store would have been, and still is, the first high end store to sell parallel imported goods.

Can you tell me more about your grand opening?

How do you give customers a reason to come back?

We're holding the grand opening special starting on the 4th of August. There will be up to 25% off selected styles. What made you choose to sell certain brands such as Prada over others?

I researched a lot to find the best and most popular brands, and selected those over the rest. Is there a method to your display?

Yes. We display Chanel bags on the right of the shop because we are actually the only store to sell them in New Zealand. On the left side we showcase what's trending, such as the 2017 Prada Cahier. How do you help ladies decide which bag to get?

You can tell what brand someone is partial to by what they wear when they enter the shop. If they wear mostly Prada we take them to the Prada section, to help grow their collection. Because different styles are grouped together, they also have the opportunity to look at styles they might not otherwise have had a second look at.

We import directly from Italy, which allows fast importing times. We also sell duty-free, and as mentioned earlier we are the only suppliers of Chanel handbags. Do your prices differ compared to the city's central stores?

We treat every customer as a VIP and build a rapport with them, working with them personally to find the right bag or accessory. If you sign up as a member, you also receive $30 store credit to use towards your first purchase. Do certain types of bags suit certain types of people?

Rather than trying to put the customer into a box, we let them choose what they know suits them, as they know themselves best. We simply help them find their own perfect bag. Do you plan on opening any new stores in the future?

Yes, I plan on opening one in Queenstown because it has lots of tourists and high income. I also plan to open one in Wellington also for its high income, which is important due to our customer base.

LIVING WITH A TOUCH OF LUXURY Living in a Ryman serviced apartment has led resident Jane Russell to experience levels of comfort in life that she never anticipated. “It’s like living in a really nice hotel,” she says. "I get clean towels every morning which is a luxury I’ve never had. I get a cooked meal every day and the apartment is cleaned once a week and the bed linen is changed. I’m grateful for these difficult jobs being done because it’s harder for me to bend these days.” Jane originally moved into an independent apartment at Ryman’s Edmund Hillary Retirement Village but when her health situation changed, she knew she had to review her living situation as well. “I lost the sight in my left eye and I wasn’t comfortable driving.” Not wanting to depend entirely on her daughter, she says: “I just had to make a decision for myself and I could see my life getting worse if I didn’t. My life had changed but I appreciated being able to change within the village.” Jane swapped her independent bright and sunny serviced apartment of the village’s gorgeous landscaping fountain, with the added benefit of the action.

Jane and her family marvel at how her social calendar has flourished. As well as regular trips in the village van to the shops for grocery essentials, the village has a constantly updated calendar of events and activities to keep residents entertained. “I’ve got to know a lot more people and I can do all of the things I want to do. I play bowls outdoors and indoors, which is just a short walk away, and I play card games and scrabble and all sorts. I can do all that here with friends from all over the village.” Ryman Healthcare is currently building a new village on Campbell Road to provide the same service for retirees living in the surrounding suburbs of Greenlane, One Tree Hill, Royal Oak, Onehunga and Ellerslie. Sales advisors Anna Irvine and Lucy Caldwell say prospective residents typically comment on how much the villages resemble a five-star resort, or even a cruiseliner. However, it’s the peace of mind and lifestyle options available that are often the deciding factors, they say. “If you’ve never lived on your own before that can be quite daunting or isolating,” says Lucy. “So moving into the village you not only have that feeling of security but all your needs are catered for.” Both mention that because it is still your own home, you are encouraged decorate with all your own furniture, you can invite your friends over, and you can treat the village centre as your extended living area.

Missing, broken, rotten, and crooked teeth are dental conditions that ruin our desire to smile. disturbed. Most of these people are diagnosed (mostly men) when their wives or partners complain about their snoring. If you suffer from one of these symptoms, it is time to pay a visit to your doctor. The first step requires that you and your partner talk to your doctor about health history. The second step will be the examination. Your heart rate, blood pressure, and height and weight measurements will be taken. Your doctor will also listen to your heart and lungs and might want to do some blood tests to make sure you are not suffering from diabetes. Then, they will also complete a questionnaire called the Epsworth Sleepiness scale. If there is any suspicion of diagnosis, your doctor will refer you to the specialist who will arrange for further tests, which could include sleep studies. Once diagnosed, you will be offered different treatment options. With treatment, complications will decrease (risk of heart attack or stroke) and hopefully with time, you will feel better.

OUT DARN (BROWN) SPOT! Did you know? Brown spots, or the more technical name for them – hyperpigmentation — may soon surpass wrinkles as the most frustrating sign of skin ageing. We’ve been addressing wrinkles and loss of elasticity for a long time, but the incidence of pigmentation or brown spots is rising and people are finding it quite distressing. Hyperpigmentation causes skin discolouration and uneven skin tone, which is very influential in the youthful look of our skin. In fact, according to a study published in Evolution and Human Behaviour, unbalanced skin tone can make a person look more than 12 years older. Not to be confused with freckles, brown spots don’t fade in the winter, and become more evident as we age. They are caused by an overstimulation of melanin (pigment) in our skin. Melanin gives our skin, hair and eyes their colour. The spotting comes about when triggers cause the melanin to overproduce. The number one trigger is sun exposure without protection. Hormonal factors such as the use of birth control pills and pregnancy, and post-inflammatory hyperpigmentation (PIH) caused by past trauma or scarring are common ones also, and both of these causes are intensified by sun exposure. Pigmentation is notoriously difficult to get rid of. One analogy I like to use likens them to blue ink on a white shirt, which paints a pretty apt description. So, can anything be done to get rid of them? You can call us — we’re the brown spot busters! Seriously though, we can help you discover the root cause of your brown spots. Knowing your personal triggers will reveal the best treatment for you allowing us to prescribe a set of professional treatments with home care.

With that said, there is no quick fix and you will need to be patient. It will take at least 30 days of treatment (with sunscreen use) before you notice progress. In general, 75% of skin brightening is considered successful, and this can take up to four months. It’s also important to note that sometimes spots can look darker before they lighten. I suggest the following to help prevent and minimise the incidence of hyperpigmentation: 1. APPLY SPF DAILY Sunscreen helps prevent UV light from bringing new spots to the surface, and helps control the colour intensity of spots you can see. If you spend time in the sun without protection you can quickly undo all the work that’s been done in the clinic. 2. KNOW YOUR INGREDIENTS Look for products that contain retinol and specific peptides that help treat and prevent hyperpigmentation for powerfully enhanced skin brightening. We get great results with Dermalogica’s PowerBright TRx. It contains magnesium ascorbyl phosphate (MAP) — a stable form of vitamin C, which is helpful for treating hyperpigmentation, scavenging free radicals that cause erratic behaviour in melanin-producing cells, and controlling the enzyme activity that produces melanin and palmaria palmata (red algae) and laminaria ochroleuca (brown algae), which can help enhance luminosity, renew skin tone and control the processes that contribute to hyperpigmentation. We never recommend hydroquinone, a popular skin-lightening ingredient, because of its risk of adverse reaction. It has been banned in most of the world due to safety concerns. Eighteen months ago, Kathleen Curwen-Walker threw open the doors of the Auckland Academy of Adult Ballet for a very simple reason: "I am compelled to dance, and I love to connect with others on this level." Making ballet available in all its forms – classical, jazz, contemporary – has created a forum, she says, "Where like-minded people gather to create artistry through movement and music". Despite ballet’s reputation for being purist, elitism is mercifully absent in the newly refurbished studio in Onehunga. Dancers of all ages, experience, and condition learn under the supervision of Kathleen and her crew of experienced and qualified tutors. As they gently encourage, inspire and challenge, the only judgements ever heard refer to the turn-out of a knee, or the delicate curve of an arm.

ANTARCTICA

Antarctica; it’s somewhere I’d dreamed of visiting since reading about the exploits of Shackleton, Scott and Amundsen. And frankly, who doesn’t want to see penguins? I’ve seen Happy Feet! I also love whales, so expectations were high. Believe me when I say that the One Ocean Expeditions cruise I experienced earlier this year blew me away. Hands down one of the most amazing trips I’ve ever done. The two-day crossing of the Drake Passage to get to the Antarctic Peninsula from Ushuaia fades into insignificance when you wake up to magnificent scenery, a vast emptiness and a quiet that is unique to here. Our cruise ship, the Akademik Ioffe, was designed for polar regions, and is not only the most stable, but also boasts the highest ice-rating of any ships in Antarctica. The One Ocean Expeditions staff are a mixture of nationalities and specialists in various fields so there was variety of talks to keep us entertained each night — we even enjoyed twicedaily Zodiac trips either on the water or to the land for a commune with the penguins! They have no fear and are very curious, so if you sit or stand still they will come and check you out. To be surrounded by these small, lovable creatures brings a smile to everyone’s face. We had numerous encounters with colonies of Adélie and chinstrap penguins and all were different and their antics so entertaining. Birdlife also captures your attention, and then there are the seals, also wonderful to watch, from the crabeater seals to the ferocious leopard seals and the giant whale seals.

ANTARCTICA

The two absolute highlights for me were the whales and the ice. We had absolutely amazing humpback whale encounters with these giant, gentle and curious creatures swimming next to, around and under the Zodiacs. I could have put out my hand and touched them they were so close, and although they do get very close they never touch the Zodiacs. The shout of “whales at the gangway!” meant a delay in re-boarding but no-one cared as it was a joy and a privilege to watch these magnificent creatures. We had scientists on board our trip studying the whales and they were always fascinating to talk to about their research. The ice itself was so spectacular it really struck a chord with me. It was like being in an ever-changing sculpture park, with different sizes, shapes and colours all around you; from the brash ice on the surface that the Zodiacs bounce over to immense icebergs and everything in between. The colours range from the white you expect, to green, to the bluest of blue of such a vivid shade you can’t believe it’s real, and they change all the time due to the amazing Antarctic light. Words cannot describe the beauty of this ice against a backdrop of snow-covered landscapes. FERNANDO DE NORONHA HEAVEN IS A PLACE ON EARTH... AND BENEATH THE WAVES

The archipelago of Fernando de Noronha protrudes from its eponymous marine national park, a UNESCO World Heritage Site that covers more than 40,000 hectares. Glinting waters cradle a bounty of wildlife such as sharks (not the man-eating kind), tuna, turtles (the hawksbill and green turtle breed here), pilot whales, and a massive resident population of dolphins (possibly the largest of its kind anywhere on Earth). Nowhere else in the entire Western Atlantic region is there such a concentration of tropical seabirds, while the forests hum to the croak of colourful, tropical frogs, along with birdsong, including that of endemic examples like the Noronha vireo, Noronha elaenia, and a subspecies of the eared dove. Less than 3,000 souls inhabit Fernando de Noronha, the largest and only populated island among the sprinkling of lustrous monoliths that break the

ocean’s azure surface from a submerged volcanic mountain range, the South Atlantic ridge, 350km from the Brazilian coast. The main island stretches for 10km, and averages just 1.5km wide, bordered by Brazil’s best golden beaches that give way to a craggy 300m peak, Morro do Pico, surrounded by rainforest and dotted with quaint, quiet hubs. The island’s also known as the Hawaii of Brazil, owing to the tubular swells that roll around much of its shores, attracting surfers from across the globe. There are two seasons here: one dry (April-August), one wet (September-March), both hot. The nautical Eden is named after a Portuguese aristocrat who may or may not have even ever seen it, and there are conflicting stories about who discovered them— though they were almost certainly found by an early 16th century Portuguese expedition (Columbus had only sailed upon the New World 11 years prior). Charles Darwin visited Fernando de Noronha three centuries later, and it has since attracted an array of naturalists and their ilk. Today, there is something for just about everyone, on every budget—but especially for those open to a little adventure (and preferably not prone to sea sickness).

Such is the clarity of the waters around the isles that visibility stretches for up to 50m. Huge tidal pools at Praia da Atalaia afford the opportunity for snorkelers to glimpse octopuses, lobsters, and small sharks. Head with your snorkel mask to Sueste Bay to share the sea with the endangered green and hawksbill turtles—high tide here is best. The Costa Azul Trail, also two-hours, begins in the village of Remedios, the island’s capital, running past 18th century architecture, more beaches and the ruins of a fort under the shadow of that peak, Pico. Sancho Beach is a must, the epitome of an isolated tropical stretch, accessed via a steep climb through a narrow gap in its protective rock face (this was a favoured hangout of Jacques Cousteau). For most visitors, the highlight of the trip comes courtesy of a clifftop view of a sheltered bay where, each morning hundreds of dolphins gather, some to chill, some to frolic, having spent the previous night feeding in the open ocean. It is the largest known gathering of resident dolphins anywhere in the world, and one of only a couple of places where the spinner dolphin (famed for their leaps and spins from the surf) breeds. Around some other parts of the archipelago guests may swim with these magnificent marine mammals, but not here. Officially, the cove is named Baia dos Porcos — the Bay of Pigs — but with time has come to be christened, rather more fittingly, as Baia do Golfinhos, or Dolphin Bay.

“You hear that?” asks Peter Leniston, as he closes the door behind us. We’re surrounded by dozens of 40-litre glass fermentation vessels merrily bubbling away. “It’s the sound of beer making itself!” It sure is a wonderful and strangely relaxing noise—and smell—and Peter jokes about recording it to make a mediation CD to rival whale music.

BEER: IT'S AN OCCASIONAL CRAFT

Peter is the founder of the Occasional Brewer, a Wellington-based home craft beer brewing operation that is not just unique to New Zealand, but the world. Guests are expertly guided by a star-studded team including two pharmacologists and a microbiologist in the art of making beer. From start to finish, no-one but you is allowed to touch your brew — though the staff do take charge of the time-consuming cleaning up (and beers brewed by them can be sampled from the on-site bar). “We have a very high success rate,” beams Peter. “I’ve had a few local commercial brewers quite astounded, saying that they didn’t think we could take people off the street and make such quality craft beer from scratch. There are lots of things can go wrong, but it’s like cooking — if you follow the recipe, have good sanitation and manage all your temperatures, then it’s going to be a decent product. "We’ve really thought long and hard about how to make sure the product is good because it stands and falls on that.” Each of the 14 brewing stations produce 40 litres of of the golden, tan or black stuff (20 six-packs), and the process takes around three hours. This is followed by a couple of weeks of fermentation before customers come back — with their own

designed labels — to bottle it. The array of options include American- and India pales ales, blondes, pilsners, stouts, porters and bitters. Though craft brewers add all manner of weird and wonderful ingredients to their wares, I was fascinated to learn that much of the flavour comes from how the grain, usually barley, is kilned (those heated for longer have a stronger taste of dark chocolate or coffee, I can vouch for that because I munched on them). All of the brewery’s ingredients are locally sourced, usually from South Island. Customers tend to fall into the 30-50 age range, mainly professionals, small business owners and tradies. The space has also become popular for corporate functions and stag-dos. Around a quarter of the customers are female, many of whom, adds Peter, are very serious indeed.

“People aren’t simply doing this to save money,” he says. “We often joke that we’re not selling beer, but bragging rights! There are now thousands of people in Wellington who have a deep understanding of how to make beer and what goes into it.” Peter believes craft beer will soon be treated with a similar reverence to wine, and paired with appropriate foods. I ask why he believes the industry has taken off in such a big way. “It’s sitting in the same kind of space as cooking,” he says. “People have learnt so much about food and it has become this cultural phenomenon with all the TV channels and so on. I see craft beer sitting 10 or 20 years behind that. Once people have been drinking it, they won’t go back to the generic draughts of the six o’clock swill. There has been a definite shift in mentality.” Peter plans to open an Occasional Brewery in Auckland. I sure hope we don’t have to wait too long.

BREWING BEER AT A GLANCE Beer is mainly made from four ingredients: grains (usually barley), hops, yeast and water. The reason for this tradition stems from a 16th century Bavarian law known as Rheinheitsgebot — or ‘the German Beer Purity Law’ — introduced to prevent brewers using excess wheat, necessary for baking, and thus keeping bread affordable. Grains are moistened, which tricks them into thinking it is spring so that they sprout and produce enzymes which are ‘stolen’ later to produce simple sugars. The grains are heated to prevent germination, which would otherwise consume those potential sugars, before toasting, or kilning. The extent of the toasting affects the strength of that chocolate or coffee taste. This whole process is known as ‘malting’, the resulting grain usually referred to as ‘malt’. Next up is milling, which essential means crushing the malt in preparation for mashing whereby the grains are steeped in hot water to activate those enzymes to release the sugar. The water is drained, leaving a sticky, sweet substance called ‘wort’.The wort is then boiled, and hops (these give beer its distinctive aroma and bitterness) added. This would also be the time when craft brewers add any of their more unusual ingredients. The mixture is now left in the fermenting vessel, along with the yeast which consumes the sugar and releases its waste products: CO2 and alcohol. This of course means the resulting beer is flat. Bubbles can be added through forced carbonation (a bit like a huge Soda Stream), or the more traditional method of adding dextrose during the bottling process, causing the yeast to kick back into life and release more gas. __ Words: Jamie Christian Desplaces

INGREDIENTS • 4 large potatoes or 750g, peeled (Agria) • 3 Tbsp butter • 4 spring onions, finely sliced • 2 Tbsp parsley, chopped • juice of 1 lemon • 2 Tbsp sour cream • 6 medium textured fish fillets or 750g • 2½ cups milk • 1 clove garlic, squashed • 2 Tbsp butter • 1 onion, sliced • 3 Tbsp flour • ½ cup cheese, grated • ½ tsp smoked paprika (optional)

METHOD 1. Pre–heat oven to 200 °C. Dice the potatoes, cook in salted simmering water until tender. Drain and put back into the saucepan, put aside. 2. Place whole fish fillets, milk and garlic into a deep fry pan, bring to a simmer and cook for two minutes. Remove from the heat and stand for three minutes. Using a slotted spoon, remove the fish and place directly into a greased baking dish, breaking it into large pieces to cover the base of the dish. Strain and keep the cooking liquid. 3. Melt butter into frying pan, cook the onion over a low heat, until golden. Sprinkle the flour in, stir and cook for two minutes. Continue stirring and slowly add the warm cooking liquid, bring to the boil then reduce the heat to low and cook until the sauce thickens. Add the cheese and smoked paprika, season with salt and pepper, stir well. Pour the sauce over the cooked fish in the baking dish. 4. Lastly, add the butter to the cooked potatoes and mash. Stir in the spring onion, parsley, lemon juice, sour cream and season with salt and pepper. EASY PASTRY Alternatively you can use 400g short pastry

• ¼ tsp cinnamon • 1 dessert spoon of flour • 75g brown sugar • 2 large baking apples e.g. ballarat, braeburn or Granny Smith peeled • 1 Tbsp milk or cream to glaze

1. Sift flour with baking powder and salt into a

large bowl. Add sugar and butter, rub the butter into the dry ingredients until the mix resembles fine breadcrumbs. Make a well in the centre.

2. Mix egg yolk with a couple tablespoons of water.

Add to the dry ingredients with the remaining tablespoon of water. Using a butter knife, mix the egg and water into the flour until the mixture forms large clumps. You may need to add a little more water depending on the moisture in the flour.

3. Tip the dough onto a floured surface, pat together with floured hands. Don’t over work the dough — work quickly. 4. Roll out into a large circle of dough about 1.5mm

thick. Roll the dough outwards away from you in quick strokes. Place onto a piece of waxed paper or directly onto a greased oven tray with sides.

5. Add cinnamon, flour and sugar to a large bowl.

Core and finely slice the apples, adding to the bowl as you cut them. Toss the apples in the sugar mixture. Tip into the centre of the pastry. Fold the pastry around the apples and crimp the edges together to hold the apples. Brush pastry with milk to glaze.

6. Bake in preheated to 215 °C for 30-35 minutes or until pastry is golden. Remove from oven and cover with cloth for 10 minutes to rest before cutting and serving. — Recipe: Tracey Sunderland / thegalley.co.nz

DANS LE NOIR? DINING IN THE DARK

Lining up with other guests inside Auckland’s Rydges Hotel, I was about to enter a world unfamiliar to the vast majority of people: total darkness. With my hands on the shoulders of a stranger, our guide for the evening, Mel, led my group into the dining room. Like an uneasy conga line, we trailed this way and that, with Mel coaching us around the room, cautioning us about tables, before finally stopping us at ours. At first, I panicked about seeing absolutely nothing. My eyes tried to adjust to the darkness and discern the outlines of the room and my table companions. Mel placed my hands on the back of my chair and slowly, I felt my way into it, also feeling the plate, silverware, and glass that sat invisible in front of me. I held up my hands and looked to my friend beside me, but both were impossible to see. Eight people were seated at our table. A man’s voice took the lead, suggesting we introduce ourselves right to left (somehow we went diagonal!) around the table, sharing our name, occupation, and most embarrassing moment in the dark. This led to hilarious stories that I doubt would have been shared so quickly if we had been able to see each other’s faces! Throughout the conversations, I caught myself gesturing with my hands and looking in the direction of the voice speaking. However, as time went on (and I had no concept of time) I found myself slouching or resting my chin on my hand, subconsciously aware that no one could judge me based on appearance or composure.

Although I had no idea (and still don’t) what the room looked like, I was able to ground myself at the table solely based on the voices around me. What I lacked in vision, I made up for with my touch and hearing senses.

fully readjust. It was even more startling to see how each of the dinner guests really looked, as I had built up a separate image of them based on their voice and conversation. We all hugged and laughed as if we had known each other for years.

The other guests and I selected from three meal options: Trust the Chef, Seafood, or Vegan. When each course was served, the other guests and I who chose Trust the Chef guessed what we were eating. Because much of taste is influenced by vision, this was especially interesting. Most of the time I could taste whether something was a meat, vegetable, or sweet, but it was difficult to name the specific type of food.

The most surprising reveal came when the staff showed us the plates of food we had eaten. While some of the guests were spot on in their guesses, what I thought I ate and what I actually ate were two different things (delicious nonetheless!).

While some people admitted to immediately eating with their hands, I gave my silverware a shot, finding it difficult to cut meat and placing an empty fork into my mouth on several occasions (my most embarrassing moment in the dark!). Like the others, I quickly ditched the lady-like skills and enjoyed my food with no regard for style. Throughout the dinner, open conversations continued. Although I was constantly aware that it was dark, it became much more comfortable the longer we talked and ate. Eating in the dark brought out the most authentic version of myself, and talking to people was both easy and entertaining. When the meal concluded nearly two-and-a-half hours later, we were led again into the light. It was overwhelming how bright the world was around me and my eyes took several minutes to

The servers working at the restaurant are low vision or blind, all of whom were so kind and able to make me feel comfortable stepping into their world. For a dining experience like no other, I recommend Dans le Noir?, and I challenge you to pour your water without spilling it across the table!

GEROME CONTEMPORARY GREEK WITH A TWIST

After giving Parnell's new restaurant, Gerome, time to settle in, we decided it was time to try out the stylish eatery. We ventured out on a cold and wet winter's day as we were in need of some warm comfort food, Gerome did not disappoint. We were greeted by the welcoming smile of restauranteur Ramiz Malik and elegantly designed interior by Paul Izzard, the charm was evident from the get-go.The plush velvet furnishing, brass fittings and dark stained bar located down the centre of the room gave off a 1920s vibe. This was matched with booth seating which offers the diner a more private and relaxed environment. With a mezzanine level and outdoor deck, the restaurant is set up perfectly for private functions. The food is loosely based on Greek flavours with a contemporary twist. Head chef James Kenny has worked for the likes of Gordon Ramsay and has designed the menu to share, and regularly changes it up depending on the season. With a range of small and large dishes the food was served on unique handmade crockery by Richard Naylor. To start, we ordered the roasted cauliflower, capers, pomegranate with sour cream vinaigrette as well as the seared saganaki and peppered figs. The cauliflower was easily a highlight with the perfect balance of sweet and sour accompanied by the texture of the pomegranate. From the large dishes we ordered thigh of chicken, butternut puree with wild mushrooms along with short rib of beef. The beef was tender, fell off the bone with ease and was melt-inyour-mouth delicious. To finish, we decided on the house sorbet which was a refreshing end, accompanied by the loukoumades, nutella, and coffee ice-cream. With a range of gluten-free and vegan options on offer, and prices varying from $13-19 smaller and $18-37 larger, we think Gerome is certainly worth a visit. We recommend getting a group of friends together to explore the abundance of marvelous New Zealand produce on offer, or simply perch yourself at the bar to enjoy the extensive cocktail menu.

GROWING BERRIES

Many berries are easy to grow and they are perfect for an urban garden as they don’t take up much space and can be grown in pots. There is a huge range of berries that can be grown, but the delicious and hardy cane fruit, such as blackberries and raspberry, have become oddly unusual in the home garden. But hopefully knowing a few tricks might inspire you to home-grow some deliciousness. Position: Full sun, will tolerate part shade. For best results grow in free-draining soil. In pots: Grow in at least a 40l pot. Half wine barrels are perfect and can hold 2-3 plants (they don’t need to be the same variety). Fill the pot with a good potting mix, such as Kings Container Mix. To keep the canes under control, use a wire frame around the pot or bamboo poles and wire to form a structure for them to grow over. Growing in the ground: Mix in compost and sheep pellets with your soil before planting. Grow in rows or individually. A post and wire system is a good solution to keeping them upright and productive. Pruning summer and autumn fruiting varieties such as raspberry aspiring and ivory. These varieties fruit twice in a year, once in autumn (on this year’s growth) and in summer (on last year’s canes). With these, in winter, prune this year’s canes back by around a third (cut back to a good bud) and remove any weak canes back right to the ground. In autumn, remove last year’s canes at ground level. Pruning summer fruiting varieties: Summer fruiting varieties fruit on second-year canes. In autumn, cut the top 10cm off new canes, cutting back to a good bud, to encourage branching. LORDE MELODRAMA When Lorde says "maybe all this is the party" on 'Liability (Reprise)', she isn't confining the soiree to your standard social, tipsy, giggly teenage kind. Lorde's Melodrama encompasses a full spectrum celebration of emotions. It's a party incomplete without meltdowns, existential contemplation and enticing elicit substances — R-rated in every sense since the 20-year-old conjured up a shy, millennial electro-pop coming of age on Pure Heroine four years back; an entire lifetime ago in teen evolution years. On Melodrama our girl presents herself with courageous transparency and sincere, soul-bearing female integrity. She sits somewhere quite comfortably between being finally all grown, but still on an uncertain path of self-exploration that comes hand in hand with the doomed fate that is entering adulthood. Judged by its cover, Melodrama is shaped as an intense heartbreak record, but when read between the lines the album is nothing less than a project of self-healing, internal growth and utmost empowerment. On the opening verse of joint tracks 'Hard Feelings/Loveless' Lorde reminisces tenderly over a rush

that once was, but sounds ultimately powerful on its second verse upon revealing, "I light all the candles / Cut flowers for all my rooms / I care for myself the way I used to care about you". 'Writer in the Dark' is similarly heart-sinking, but this time the lustrous pop is traded for a stripped back, goosebumpinflicting ballad. "But in our darkest hours, I stumbled on a secret power, I'll find a way to be without you babe" appears as a sure glimmer of hope at the climax of it's quaking chorus, where while Lorde's love remains unconditional to her former lover, in her new found solitude she manages to compel the peace to move forward alone. Lorde's Melodrama unapologetically brings to the table all the drama that comes with being a girl in the world, never once needing approval for all the extravagance and emotional messiness that her heart knows are valid. SERIOUSLY SIRI In 2005, Atlanta voice actor Susan Bennett was invited by speech software company Scansoft to lend her tongue to a new project for a speech database that she presumed would be used for their internal systems. Little did she know that her voice would come to be relied upon by hundreds of millions of people around the world, for she was to be the original Apple sage that’s Siri.

“It made me feel the way I felt when I first heard my voice on the iPhone — creepy! I think complete and utter AI is where we’re headed, but I’m not sure it’s such a great thing for the human race. However, I do like to be positive, so I’m still counting on us humans to adapt to make things better.”

It was a monotonous, months-long recording process with the actor required to spend arduous days reciting often nonsensical sentences such as, “militia oy hallucinate, buckra okra ooze”, “cow hoist in the tub hut today”, and “fossa ask fossa ask fussy”, so that every possible sound could be programmed to build infinite phrases and paragraphs. It was two years before the launch of the first iPhone, and a further four before the release of the iPhone 4S that introduced us to Siri, the world’s most famous virtual assistant — and among its most famous voices, period.

Do you worry we’re too tech-reliant?

Susan tells me she thought it a little creepy when she first found out about it. She was informed neither by Apple nor her employer, but rather a colleague emailing to ask if it was her speaking from their new phone. Susan headed for the Apple website, clicked on the promotional video and heard herself speak back. Rather ironically, she kept schtum about it for two years. Apple has never officially admitted to Susan’s role in the development of Siri — tech companies are notoriously secretive about such things — but sources have vouched to CNN and other news networks that it was her work.

“Not really! I’m one of those people who manages to hit the wrong button on just about any device. Pretty ironic, right?”

One of the reasons it took Susan so long to reveal herself is that voice actors — like screen ones — can suffer typecasting. “I knew that many people wouldn’t be able to see beyond that,” she says, “even though I’ve done a lot of different work in my lengthy career. Ultimately, it’s been great, because it has enabled me to do something completely different such as Siri appearances and speaker events.” These include a TED Talk and introducing Apple co-founder Steve Wozniak at the 2013 Dallas Digital Summit. The 2013 movie Her, starring Joaquin Phoenix, tells the tale of a man who falls in love with the Siri-like voice of his computer operating system, played by Scarlett Johansson. I ask Susan if she has seen the movie and how she felt about it.

“Yes, actually. Machines do so much for us instantaneously, and we have so much information available at the touch of a button — or the sound of our voice — that we forget to use the original computer, the human brain. I think kids, especially, are losing sight of the process of things, of being able to resolve a problem, or solve a puzzle by themselves.” Are you a technophile?

Susan loves words rather than gadgets. I ask what is her favourite and she says “perspicacious”. I inquire as to how she sees Siri — as a character? Or perhaps even a friend? — but Susan tells me she sees her for what she is, “a technological phenomenon”, but “basically a disembodied voice”. I wonder what it takes to be a successful voice actor. “A good ear, the ability to listen, and interpret, take direction, and read well,” comes the reply. “In other words, to be able to act!” Susan’s only been recognised twice from her tones, once by a banker, the other time by a waiter. “I told them they should be working in audio since they had such good ears,” she says. “It’s hard for people to recognise my voice, because I don’t speak with the same pitch or rhythmic pattern as Siri. So, when I go into Siri mode, people are generally shocked.” In 2013, the original Siri was removed by Apple, so Susan’s diction will eventually fade from our consciousness. W HY SIR I? Norwegian Dag Kittlaus, co-creator of Siri, wanted to christen his firstborn daughter ‘Siri’, which in the Scandinavian country means a ‘beautiful woman who guides you to victory’. DIGITAL LEARNING GUIDING KIWIS INTO THE FUTURE

Being in government is about making forward-looking decisions that will prepare our country, and the next generation, for the 2020s, the 2030s and beyond. The National-led government has shown that we are always looking ahead – identifying where we can make changes now so we can all benefit down the track. We’re doing this in many ways. One is by setting ambitious trade goals to grow our exports and see more of our products on shelves around the world. Another is by investing in huge infrastructure projects to prepare our transport corridors for the future. And recently, we announced the biggest change to the school curriculum in 10 years – a change that will help New Zealand’s young people build the skills they need to succeed in the 21st century. At the forefront of this change is the need for our children to be digitally fluent. When we talk about digital fluency, we don’t just mean being able to use technology effectively. Digital fluency is about having the skills and knowledge to become innovative creators of new digital technology. The new curriculum will see all young people from years one to 10 taking part in digital learning and new achievement standards developed for NCEA to help older students develop specialised skills already in high demand by employers. To support the introduction of the curriculum changes, which are currently open for submission, the National-led government will invest around $40 million over three years to help upskill our teachers, develop new digital learning resources, and extend online exam trials. This will also fund other initiatives aimed at getting more young people, including those from disadvantaged backgrounds, involved in digital innovation. We’re delivering the changes we need to future proof our education system and, in turn, the next generation of young Kiwis will be delivering more of the innovative thinking we’re world-renowned for. Success stories like Rocket Lab, Weta Workshop and, just recently, Team New Zealand, have shown we’ve got the creativity, the talent and the determination to not only keep up with the big players, but outperform them. The National-led government is ambitious for the next generation and our digital learning approach is about continuing to support an innovative education system that fosters innovative minds. SUSTAINABLE AUCKLAND

In last month’s column, I talked about the importance of our environment. We are squandering our unique natural heritage. Only the Green Party will clean up our rivers, conserve our native forests and prevent the loss of more endangered species. We also need to make our cities sustainable. Transport is crucial. To solve congestion, we need to offer Aucklanders frequent, convenient and affordable alternatives to driving their car. The Greens have a vision of a modern, integrated transport network for Auckland. Connected up networks of buses, trains, light rail, ferries, safe cycling and walking will get our city moving again and improve the quality of life. The government needs to become a real partner in achieving this vision. For too long, the government has put obstacles in the way of investment in the City Rail Link and other projects. The government’s spending plans are dominated by more roads, which will just push the congestion somewhere else. The Greens will start by working with Auckland Council to get rail to the airport in time for the America’s Cup defence. We will switch spending away from roads to transport alternatives. This will not only reduce congestion, but it will benefit tourism and our economy, health and our urban environment, and reduce our climate emissions. The Greens will also close the gaps between the haves and havenots. I have heard Aucklanders from all walks of life, including business leaders, saying that we should not allow kids to go hungry or sleep in cars. Currently, too many children are lacking the basics, getting sick from damp homes and missing out on a decent education. Our safety net is ripped and we need to repair it. It is time for us to step up to this challenge. The Greens will set targets to end child poverty and ensure everyone has enough income and a warm, dry home. It is affordable and it will be in all of our interests over the longer term. We also need to take better care of our elderly. I have been leading an inquiry on aged care, and we have seen too many cases of neglect, long waiting times for operations and elder abuse. The Greens will ensure that our elders be treated with respect and dignity. Auckland could be one of the world’s great cities. Let’s step up to that challenge. Offline mail is mail downloaded into a program like Windows Live Mail, Windows Mail, Thunderbird, Opera and several more free programs. The advantage of offline mail is you can read any email you have downloaded even if you have lost your internet connection. Paid for programs like Outlook can be expensive and not worth it for a casual or home user.

You can still buy MS Outlook but if you are a home user then it is unnecessary to pay for it. MS does have a free online version of Outlook but it is very slow.

My journey as a foster carer started 25 years ago and it has taught me more about myself and the world than I would ever have learned on my own. I have been fortunate to meet some of the most amazing children and experience some of the best days of my life, along with some of the hardest days. As a family, we made the decision to become foster carers when our daughter was five-years-old. Being a foster carer is not the easiest, in fact I would place it as one of the hardest and most challenging jobs in the world. The reality is that these children need someone to love them for who they are and stay consistent with them through extreme circumstances. We signed up for fostering out of a deep compulsion to help vulnerable children who are being neglected in many ways. I believe we all have a responsibility and duty to care for children, whether that’s someone we know, a child at our school or even a relative. I find a huge satisfaction in bringing happiness to a child’s face which was once consumed with fear and sadness. It’s a privilege to be in a position where I can provide a young life once burdened with fear with a positive upbringing and hope for the future. I seriously encourage others to become foster carers because I want them to experience what I have learned through fostering. There are many children out there that are desperate for someone to stand beside them and shout to the world that they are unique, they are important and they do matter. We are fortunate now to have three amazing children that have been placed with us for almost six years. We have experienced many challenges that all three have thrown at us but we feel that the determination, love and respect that we have given has truly paid off and I get hugged and told that I am loved so many times a day. Twenty-five years ago, I made a choice that has brought me more happiness, fulfilment and opportunity for growth than I ever knew was possible. I encourage you to take a look and see if fostering is a path for you and your family.
