Letter from the Editor With the end of the school year and the start of summer for many, we wanted to pay homage in Issue 18 to the sense of adventure that warm weather and freedom can bring! We also wanted to challenge our contributors to push their own boundaries in their creative lives and their real lives and we couldn’t be happier with the results! In this issue, you’ll see exotic locales, new photographic techniques, avant garde clothing, and twists on old classics. And what about you, our awesome readers? We want to challenge you to get out and explore your world: a new drink, a new restaurant, a new country, and a new perspective. My goal this summer is to pick up a new sport and to visit at least one new city. When we try something new, we not only have the opportunity to learn about the world, but also discover new things about ourselves. With a new sport, I want to learn new skills but also see if I have the self-discipline to stick with a workout routine longer than a month! With traveling to a new city, I want to learn about how other people live their lives. I also want to take this opportunity to remind you that our next issue will be our 3rd Anniversary issue! That means the return of our Annual Cover Contest. The theme is SYNCHRONICITY and the deadline is July 14, 2014. We’re looking for beautiful submissions which show how elements can work together, how individual pieces can make up a greater whole, and how co-operation can bring us all to new heights!

In the midst of the Polar Vortex, one would imagine that people would escape the chill by reaching for a cup of hot chocolate, or even a comforting bowl of hot soup. However, on Monday, March 24th, 2014, people braved the fierce winds to travel to the Liberty Grand Entertainment Complex and witness the Toronto Finals of the mixology competition hosted by Made With Love.

growth of the foodie culture in Toronto in the past few years, it’s no surprise that the cocktail culture has shown its potential as well. I for one was looking forward to enjoying the cocktails served by many of Toronto’s elite mixologists.
Made With Love is a series of events held in Canada to provide the general public with access to professional mixologists. What originally started as a small, friendly event in December of 2009 in Montreal has grown to a nation-wide competition to find the best bartenders in the country.
After dropping off my jacket at the coat-check, I was greeted by two tables at the entrance before entering the venue. One was serving a classic Caesar using Mott’s Clamato, while the other served a cleverly named drink called Enter the Gala. The latter was a cocktail consisting of peach nectar and 1800 Tequila (one of the sponsors of the evening) topped with raspberry foam. Both drinks were easy on the palate and were great for building up a thirst for what was to come.
So far in 2014, competitions have been held in Quebec, Toronto, Winnipeg, Calgary and Vancouver. Winners from each city will then qualify for the Finals in Quebec. With the amazing

FEATURE stationed at each table ready to showcase their techniques to the judges. In hindsight, it was a smart choice for the judges to make their rounds early and interview each finalist before the venue got too busy. Some of the mixologists tried to maximize the table space by dressing up in costumes and decorating the table in order to fit a particular theme or narrative. Others kept things simple by donning their work uniforms, which had the added benefit of putting more focus on the drinks and the methods used to create the drink.

It was a slow start to the evening at 6 pm, but once the after-work crowd caught up, the venue became quite packed. You could hardly believe it was a Monday given the abundance of energy in the room and one could be certain that the free flowing alcohol was a factor. (The event ticket covered unlimited drinks from the bartenders.) If you looked closely, you could see beads of sweat on the bartenders as they tried to keep up with everyone’s orders! A DJ also provided some background music, spinning some loungy house music to entertain the guests and keep the mood of the venue vibrant and upbeat. Other than drinks, finger foods such as truffle fries and sliders were served. This created a much-needed buffer for the night of drinking. Aside from using the alcohol provided by the sponsors consisting of 1800 Tequila, Appleton Estates V/X Rum, Skyy Vodka, Jim Beam Devil’s Cut, and Alberta Premium Dark Horse Whisky, the sky was the limit for the types of techniques and ingredients that would go into each cocktail. Robin Kaufman of the Toronto Temperance Society kept things simple by mixing Dark Horse whisky with Black Pepper infused gin, cinzano rosso, cucumber celery syrup and bonker’s bitters to create a strong, bold drink with that was garnished with a skewered celery ribbon. Perhaps as a nod to foodies pairing drinks with food, Aaron Male of Brassaii paired peanut brittle with a mixture of Devil’s Cut bourbon with smoked peach juice, cream tea and house-made vanilla-blood orange bitters. Tyler Newsome of the Whipporwill Restaurant & Tavern took this a step further by recommending that patrons keep switching between bites of the black cardamom candied ginger with Spinal Tap (Dark Horse whisky, carob & coconut molasses, nigella, cumin & chili infused angostura bitters).

My personal favourite of the evening was Skies Over the Sea by Joshua Oliver Prout of Rock Lobster Food Co. on Queen Street. A deep, earthy drink that combined smoked fig and tea infused vodka, cynar amaro liqueur, lime leaf, yuzu citrus and kombu bitters. The combination of the flavours bared quite a resemblance to kumquats or sour plums. It reminded me a lot of the Asian flavours that I tasted during my years in Hong Kong. What was also interesting was that Prout brought the Japanesemade heat based siphon used to infuse the vodka with the smoked fig and tea. While it was an expensive piece of equipment - costing about $10,000 - he mentioned that it was a significantly quicker way to infuse flavours into alcohol. The other favourite of the evening was the Burning Question by Dave Fauteux of Two Black Sheep. After mixing Appleton rum, cacao and vanilla bean tea, wormwood bitters, and raspberry shrub in a container, Fauteux ignited bourbon smoked hickory in a PolyScience Smoking Gun Food Smoker and fed smoke into it. He then vigorously swirled the cocktail with the smoke, allowing the cocktail to absorb the flavours of the hickory. Surprisingly, the drink itself had a subtle smoky flavor that helped mellow out the other flavours in the drink. I also liked Coffee and Donuts by Adrian Stein of Boots & Bourbon Saloon and the Three Course Cocktail by Agil Soni of Marché. I love coffee, and Stein was able to produce a boozy recreation of my favourite morning pick-me-up! This was a fun play on a breakfast drink consisting of cocoa bean and cinnamon infused Devil’s Cut, toasted coffee syrup, chicory tincture, cinnamon tincture and coffee infused angostura. As a bonus, the drink was served with a handmade donut injected with a banana walnut old-fashioned gel.

With the Three Course Cocktail, we were given the opportunity to hear how Soni’s years growing up in India inspired him to put this together. Between bites of the boozy lime puff cracker appetizer, and sips of the tangy tamarind main course, you could hear his passionate story before finishing with a coffee dessert chaser that was a great way to cleanse the palate. At the end of the evening, two awards were given out. One award was presented to the bartender whose drink impressed the judges the most. The appropriately titled “People’s Choice” award was presented to the one collected the most dog tags that were given to the attendees for the evening. Sadly, neither of my favourite drinks won any awards for the night. The judges chose “What Would Monty Do?” by Jay Meyers of Hudson Kitchen as their favourite for the evening and the “People’s Choice” winner was “A Sea of Trees” by Michael Mooney of The Geraldine.

When Douglas Heung is not keeping up to date on Toronto’s food scene, you might find him getting ready for Mud Hero! Once that’s done, he hopes to get back to travelling.
Many in the audience felt that Mooney served an intriguing mix of Hendrick’s gin, lemon juice, Grand Genmaicha tea syrup, egg white, shiitake mushroom/ fennel/thyme shrub, and umami bitters topped with dried cherry blossoms and cedar dust. In contrast, Meyer’s cocktail had a shorter ingredients list (Dark Horse whisky, vanilla cognac, vermouth and ginger liqueur topped with ice cream) but it was just as impressive. Without a doubt, Toronto’s mixologists have a lot to offer to the world. The combination of technical skill and ingenuity has resulted in an amazing range of tastes and ways to enjoy a cocktail. I thoroughly enjoyed the event and would highly recommend it for people who love cocktails! Until next year!

CHOWZTER – Big Eats, Big Ideas By Vivien Hoang Photography by Chowzter and Mijune Pak Have you ever tried asking somebody where they had the best pizza of their life? A traditional pizza from NYC? A deep dish pie from Chicago? What about an artisanal flatbread pizza from the West Coast? You’ll quickly find that everybody has an opinion – and everybody is willing to share it! Best burrito? Best ramen? Best dumplings?

Jeffrey Merrihue and David Bullitt are no different. They are brothers and the owners and founders of Chowzter, an international network of foodies and writers who are just as passionate as they are about discovering the best food on the planet, and eager to share it all on Chowzter.com and on their smartphone app. Chowzter started when Merrihue and Bullitt, avid travelers, began sharing their list of food recommendations with each other. Soon, they discovered other lists people had compiled of local must-try cuisine and restaurants, and they realized “we needed these locally inspired lists in every city in the world. Chowzter was created with this desire to eat well in every city we could imagine.”

The initial focus of the project was all about the food. Bullitt recalls, “two brothers arguing about where to find the best tacos in the world … After talking about the idea of a global list of best items to eat by city by phone for a few weeks, I flew to visit [Merrihue] in London for vacation and we hammered out a business plan. We called a friend in the morning. I was to return to San Francisco and pitch the idea. He agreed on the spot to invest. Chowzter was born.” Of course, funding and an idea are just the first steps. Now, it was time for the hard work, the learning and the fun. The brothers initially thought it was just going to be about food and eating, but that changed as they began mixing all the ingredients together. “Many of our initial ideas were spot-on, while others where laughably limiting. The most notable part of this project has been working with the food experts. We originally thought we were all about the food, but in reality we are all about the people who are passionate about food. We love how food brings people together, how it connects us. Language, race, and gender are meaningless when we start to talk about taste. At this past awards ceremony in London, we had over 50 food experts from around the globe eating, drinking and sharing their experiences.” They’ve had their share of challenges – trying to balance work, their families and this project – as well as the financial and logistical side of any new business. But they’ve also had triumphs and perks along the way that would make any entrepreneur jealous. They’ve hosted global award ceremonies in exotic locales like London (England), Lima (Peru), and San Francisco (USA), meeting with international writers and food enthusiasts. Some victories are more personal. For Bullitt, the most amazing moment was “standing in front of the Chowzter sign we had professionally tagged in front of the Chowzter Awards. It was 12 months after our first investor backed us. It was a special moment as brothers.” EXPLORATION & DISCOVERY| ISSUE 18 | VEUX | 37
For Bullitt and Merrihue and the writers and supporters of Chowzter, food isn’t just about putting calories into your body. “Our long-term vision is to change the way people experience food and that one should never have a bad or even a mediocre meal again. Food should be hand-crafted fresh daily from locally sourced and ideally organic sources. We want people to reconnect with food as a source of physical as well as emotional nourishment.”

They encourage people who want to learn how to gain an appreciation of food. “Go on a single dish bender and try as many types of the same dish over a short period of time. Understand the differences between each of them and come to your own conclusion (like wine) as to which one is best and why. You will gain new appreciation to the nuances of each dish that allow you to have good comparisons.” Homework that involves going out and eating delicious food? Count me in!

After all this discussion about food (and getting hungrier and hungrier in the process), I had to ask them what their favorite food was. For Merrihue, “Last year was Story Deli Pizza in London. This year it’s Ceviche at Chez Wong in Lima … I can’t wait for next year.” I think the question is harder to answer for Bullitt, “I don’t have a favorite food, as it’s the journey of global exploration where the local interpretation of any given dish is what I yearn for.” You can check out the online reviews at www.chowzter.com and also download their smart phone app so you are never far from handy food reviews! Poutini’s uses PEI potatoes, homemade gravy and fresh cheese curds from Mapledale Farms for its poutiness. Poutini’s does a fantastic job of keeping the fries, cheese and gravy fresh. Documenting
the Streets Interview by Wales Wong Photography by Verena Stefanie Grotto Verana Stefanie Grotto’s passion for photography is thanks to being surrounded by family members such as her mother and uncle, both of whom had a penchant for clicking the button and capturing special moments on film. It eventually evolved into her decision to pick up a camera and create a visual of what is happening right now by documenting the lives of her subjects—especially the younger generation. “I love this type of photography because it is real. I base my life on human relationships, the way we interact with each other, and how it all depends on and varies from territory, culture and lifestyle.” The idea for Kids of Grime came to her a few years ago. “I just moved to London in 2009, after living for four years in Barcelona where I studied Fashion Marketing and Communication, worked as Fashion Coordinator at VICE, and worked on a project [about] the style of the youth in the city for three years. I don’t really remember how or when, but I started hearing people talking about this ‘Grime music’ and became interested.” She researched topic on the internet and realized that few, if any, had spent the time to really understand the culture by using photography to document this musical movement or, in her words, the “’renaissance’ of this culture.” Photograph by Jessica Lehrman

With this in mind, she started her trek on photographing the Kids of Grime. She wanted people both within and outside the United Kingdom to recognize the talented individuals who were sweating and pushing hard for their music to be heard and their dreams to be realized. “I wanted people to know that this is not just a music genre, but it is a culture as well; it’s a lifestyle, a way of speaking, a way of moving, a way of being.” Rappers like Wiley, Dizzee Rascal, Tinchy Stryder, and Skepta have continued to show themselves as examples of individuals in the industry who follow their dreams. Grime music has its roots in Bow, London in the early 2000s and has since gained much worldwide attention with Wiley and Dizzee Rascal paving the way for others. Grotto admires the culture of Grime and it has also inspired her in some of her fashion shoots. “It is a very young British style from the hood that has influenced a lot the catwalks and great designers.” The music itself has shown her another side of life that she recognizes as being different from her own. The stories of the artists’ lives, their reality, and their struggles move her. “At the end of the day, what we all have in common are our struggles and that is what should unite all of us.” She will continue to pursue new projects and a book on the Kids of Grime documentary which is tentatively set to be published at the beginning of next year. Her projects include a smaller book on the “rebirth of the rap scene in New York” that feature photos of rappers such as Bodega BAMZ, The Underachievers, Flatbush Zombies, A$AP Mob, A$AP Rocky, and as well some legends such as Wu Tang Clan. Fashion is always on her list. Indeed, with all the energy she puts into her work, it’s no surprise that she is also currently studying to become a personal trainer.
