Letter from the Editor The dichotomy of life often alludes to the darkness and light which especially permeates in art. When the two combine, an exploration into the indefinite answer of what it means often provokes a meaningful conversation. We decided to ask submitters to show their representations of what light and dark mean to them.

What you will find on these pages are the division of bold black and subtle white colors, the variety of representations for one’s identity, the battle between good and evil, and the radiant energy revealed to the naked eye.

We hope that you will see that even in the darkness, there is light.

Also, here’s a list of our future themes.

We look forward to seeing your submissions!

Life on a Low Simmer:

Good Stock Farm

Driving through

the verdant Pioneer Valley in Western Massachusetts, slightly nervous about cooking with a James Beard award winning chef, we never expected the first evening to wrap up with pizza!

It all started at a Women’s Club luncheon, where my husband took my place at the last minute. As one of the only other men in the room, he struck up a conversation with Sandy and Angie D’Amato, the previous owners of Milwaukee’s beloved Sanford and Coquette restaurants. The luncheon was a book release for Good Stock, Sandy’s memoir sprinkled with recipes from all stages of his history. Somehow, David charmed them into allowing us to be the guinea pig class at their new cooking school, Good Stock Farm.

So we found ourselves trundling down the road in the company of Dave’s brothers and their significant others, passing horses and farm stands. Coming in from San Francisco, Albany and Milwaukee, we were at varying stages of exhausted.

To give the red-eye victims a break, we spent some time enjoying the Old Mill Inn’s front porch (oldmillinn.ma), lulled by the sound of the waterfall just below. Refreshed and checked in, we set off for Good Stock Farm. When asked what time we needed to be there, Sandy and Angie responded, “Whenever.

They welcomed us in the driveway, two smiling faces standing next to a hot grill. We walked into a house right off the pages of a smart design magazine: spacious, clean lines, and chock full of good taste and smart planning. While the original plan was to put the school kitchen in the barn, they decided to invite students into their home and enjoy their dream kitchen in the main house. Why not? A fireplace, pizza oven, island to prep at and to eat at, all in addition to a gorgeous range and a pantry area that made us drool—especially the San Francisco Area renters! Within the first hour, Angie clarified that she’s doesn’t cook. The design work, organization, and smooth operating all fell under her mastery, however.

From the spacious deck, we stepped out into a burgeoning garden. My immediate impression? Not only are they kitchen ninjas, they’re incredible gardeners too! Sandy was quick to correct me, saying “We have no idea what we’re doing. It’s our first garden and we’re playing it all by ear!”

Let’s just say their beginner’s luck was more than inspiring: exotic garlic cloves, snaking Sicilian squash, a lemony heirloom basil, beautiful climbing purple flowers, and asparagus—the balance of familiar and unusual blew our minds. At the end of the yard, an open view to the river rolling by. Next to the rows of herbs and vegetables? A pétanque court, which we took great advantage of Saturday under a stormy sky.

We reentered the house and got to work, after refreshing ourselves with cold iced tea and an amuse-bouche of homemade paté, pickled garlic scapes and baguette. Our nervousness about cooking with a star chef dissipated immediately as we put on our aprons and paged through the recipes for the weekend. No demi-glazes, complex terrines, foams or sous-vide projects at this school!

We dove into preparing a ridiculously uncomplicated herb salad with mustard vinaigrette and poached egg, a divine tomato conserve, manageable pizza dough, mussels and clams in herb broth, and grilled pit fruits with fresh ricotta. Altogether, you get a whole gourmet meal. Piece by piece, kitchen simplicity.

We felt as though we were hanging out at a friend’s house, prepping and snacking for a family dinner. Sandy showed us simple tricks that changed everything: how to properly cut an onion, holding a knife safely while coring tomatoes, the easiest way to prep peppers. All of these seemingly minor tweaks inspired those group “Aha!” moments, as we filed the game-changing tips away for future practice at home.

Each of us got individual attention from Sandy, which dovetailed well with a pace that allowed us to abandon our task for a moment to peek over someone else’s shoulder. We each tackled different parts of the meal, but worked elbow to elbow, so we could follow other recipes.

Through it all, Sandy seemed calm and collected, from incredibly smart menu planning and years of running a kitchen.

As Sandy served up the salad, he asked, “Well, what do you think? Should we toss the greens with the vinaigrette or just a little lemon juice and water with the dressing over the egg?” All of Friday evening felt like that—well-orchestrated but with room for improvisation to make the evening unique.

Pizza toppings included a mellow tapenade that incorporated caramelized onions, capers and anchovies. From sautéed mushrooms to home-smoked salmon (to die for!), we all got to make our own version of perfection. Playing with fire—each of us practicing on the pizza oven and taking a turn at the grill—was just as much fun as stirring a pot full of insanely red tomatoes on the stove. We ate on the screened-in porch, handing around slices of slightly charred pizza and bowls of grilled fruit and fresh ricotta. A lot of laughter in candlelight made for a memorable night.

We met Saturday morning at 10 a.m. to collect produce, stopping at multiple farmer market stands to get only the best corn, blueberries, and zucchini. We headed to the top of Sugarloaf Mountain for an eagle’s eye view of the valley, while Angie explained that the river’s current actually changed direction based on how the dam was set up.

We got a few hours to explore Northampton, and enjoyed all of the D’Amatos’ recommendations after a personal tour of Sutter Meats (www.suttermeats.com), a local butcher shop that makes delicious bacon jam to pork tamales. Northampton feels like a cool college town, down to the rainbow crosswalk.

Our second night at cooking school was summer embodied: fried chicken with lemon zest and parsley, sautéed zucchini with Romano, the best corn on the cob ever, gazpacho with parsley cream, and ginger blueberry shortcake with yogurt.

The easy teamwork made light work of doable recipes, and we took a pétanque break before it started to rain. Angie was thrilled to be breaking in the court, and we could see why!

We couldn’t help but cheer for our team as we played. Sandy is elegant and economic in his movements even here, as he concentrates on the target.

Having the opportunity to watch him show this same level of intensity in the kitchen, hearing this calm and focused man detail the exact temperature of water needed to create perfect bread for example, gave us a small peek into the mind of an artist. Their stunning home let us enjoy the work of Angie, whose artistry takes a different form. We left inspired in the kitchen and out, ready to share our new recipes and tricks with everyone! The grilled kohlrabi and sweet corn made an appearance back home at family dinner Sunday night for the first, but surely not last, time.

Top Takeaways: 1. Rinsing garlic, onions and shallots before using them raw keeps the food from getting skunky the next day.

2. Fresh corn tastes best with no help. Boil water; toss cobs in, cover and remove from the heat. After 3 minutes, serve. Top with a towel dipped in the water to keep it warm.

3. Heat pan, then heat oil, then cook.

4. Emulsify vinaigrette in the food processor to make it feel creamy without cream.

5. Extra virgin olive oil has a stronger flavor than regular olive oil, and regular olive oil won’t solidify in the fridge because it’s more viscous.

6. Don’t be afraid of using searing heat. Pizza cooked over 500 F is perfection!
