he combination of delectable cuisine, first-class service and elegant atmosphere is leaving diners raving about Kathryn’s Bistro and Martini Bar. Voted #1 Fine Dining on the Crystal Coast in 2007, 2008, 2009, 2010, and 2011, Kathryn’s has become Emerald Isle’s premier restaurant, drawing praise from both traveling visitors and grateful locals alike. Ken Ayre, co-owner with his wife, Kitch, says he receives positive feedback nightly in the restaurant. People say, “Thank you so much for opening Kathryn’s! We never come to Emerald Isle without dining here!” As Kathryn’s heads into its ninth summer since its opening in June 2004, the family business is still first-class all the way. “The most important aspect of our business is ensuring a wonderful dining experience for our customers,” Ken says. Kathryn’s does this through its incomparable menu which is filled with offerings of fresh, local seafood and Certified Angus Beef.

While every menu item is sure to please, Kathryn’s Maryland Crab Cakes have become the restaurant’s signature entrée. Made with fresh, local lump crabmeat, even folks from Maryland (The Ayre’s home state before relocating to Emerald Isle in 1995) admit that Kathryn’s crab cakes are the best! Kathryn’s also puts a twist on traditional southern cuisine with the Carolina Classic: Kathryn’s own version of shrimp and grits—a true southern favorite! In addition to our menu, Kathryn’s offers several nightly specials including creative varieties of fish, lamb, lobster, and soft shell crabs. “Specials give us a chance to be innovative through fine cuisine and to provide our guests with variety,” Ken says. Kathryn’s has also become Emerald Isle’s favorite place to enjoy a martini. The first-class martini bar, housing over 30 different variations of martinis, includes favorites such as the Original and Dirty Martinis, as well as exotic creations such as the Emerald Isle Martini and the Hypnotic Boombatic. Along with a full-service martini bar, Kathryn’s also offers an extensive selection of wines by the glass and by the bottle. Due to a growing demand from customers, Kathryn’s launched off-site catering in 2009. Whether you are having a wedding, a birthday party, or a family gathering, Kathryn’s catering services make entertaining easy. From intimate to grand, lavish to informal, Kathryn’s will assist you in customizing the perfect menu. Kathryn’s will be there every step of the way to lend a hand planning and executing your special event. We encourage you to visit our website, kathrynsbistro.com, for more information. Combine superb food with the dedication of the Ayre family and the expertise and loyalty of their staff, Kathryn’s is truly a dining experience to remember. Find out why Kathryn’s is voted #1 Fine Dining on the Crystal Coast!

iscover a place where white sandy beaches, historic seaports and pristine nature seamlessly combine. Where boaters and golfers, sun-seekers and Civil War buffs all find happiness. Where everyday life becomes something truly spectacular. Discover the Crystal Coast. A collective name for North Carolina’s Southern Outer Banks, the Crystal Coast spreads from Cedar Island in the east to Swansboro in the west and from the Bogue Banks in the south and up north to New Bern. It includes the beautiful beach areas of Atlantic Beach and Emerald Isle as well as the historic towns of Beaufort and Swansboro. This extraordinary coastal area boasts some of the best beaches on the East Coast but lacks the crowds and traffic which plague many coastal communities. And it is all set in one of the most historically important areas in North Carolina. From swashbuckling pirates to Civil War battles, this region has seen some interesting times. Tour important Civil War sites such as Fort Macon, which was bombarded by a Union land-sea operation, or the battlefield of the famous Battle of New Bern,

A tour of the waterfront town with its oak-lined streets, Victorian homes and quaint atmosphere is one of the best ways to capture the essence of days gone by. Just three miles off the coast of Beaufort are the remnants of one of the region’s most famous visitors, Blackbeard the pirate. At the bottom of the sea lay Blackbeard’s infamous ship, Queen Anne’s Revenge. Just discovered in 1996, archeologists have recovered artifacts from the watery grave, and they are now on display at the North Carolina Maritime Museum in downtown Beaufort. Deep diving is one of the most popular activities for visitors and locals due to the warm waters of the Gulf Stream and plentitude of wrecks to explore. In fact, there are more than 2,000 vessels underwater. And with water as warm and clear as Caribbean seas, it is an experience like no other. There are hundreds of other ways to explore the multiple waterways surrounding the Crystal Coast. With the longest fishing season on the Atlantic Coast, anglers can enjoy year-round success on the rod. Multiple species pass through these waters, all of which can be found grilled, steamed, blackened and fried at area restaurants. From gourmet plates to mom-and-pop delights, dining options are quite varied, but you’re guaranteed to find the freshest seafood and a friendly face wherever you go. If your vacation goal is solitude, getting away from it all is easy to do on the Crystal Coast. Navigate your own kayak or canoe around the undisturbed shoreline of the Cape Lookout National Seashore. Fifty-six miles of shores surround the Cape Lookout Lighthouse, and it is all undeveloped, quiet and beautiful. So whether you’re here to learn about times past, explore the serene beaches of our coast or just sit on a beach towel and let your worries melt away, we hope you have a wonderful time discovering the Crystal Coast.

Watch them waddle! The North Carolina Aquarium at Pine Knoll Shores is hosting some special guests for summer 2012 - penguins! Bring the colony – that’s penguin talk for family - to see Penguin Plunge, free with admission or membership. The exhibit showcases six African penguins. This species also is called the black-footed penguin, and because its call sounds like a donkey braying, jackass penguin. The exhibit resembles its native habitat, southern Africa’s rocky coastline. Penguin Plunge includes a big pool to show how these birds “fly” through the water rather than the air. In addition to their natural charm, r the captive-bred penguins in the ylo Ta exhibit make a powerful conservation statement for their wild cousins. Pollution, habitat loss and fisheries depletion imperil all penguin species, as well as wildlife closer to home. The Penguin Plunge exhibit runs May 12 through Sept. 30. Watch for penguin programs and other activities during your visit. (Penguin Plunge was created by Animal Interaction Design Group of Virginia Beach, VA.)
More for the birds Penguins aren’t the only reason this summer is for the birds. Winging It – Birds in Flight launches an all- new show this summer. This ticketed program stars native owls, hawks, pelicans and vultures, soaring around Big Rock Theater. It runs daily at 1 p.m. in Big Rock Theater. Tickets are $4 in addition to admission for ages 3 and up - ask for combo tickets when you arrive. Turtle Tuesdays and Finny Fridays World Oceans Day June 8 coincides with the first “Finny Friday” of the summer, spotlighting sharks. Fun programs, activities, exhibits and crafts focus on these magnificent creatures, their troubles and their important role in the ocean ecosystem every Friday through Aug. 10. For an extra dose of toothy times, Shark Week July 22 – 28 spreads the fun frenzy over seven days. Turtle Tuesdays turn attention to all types of turtles with crafts, live animal programs and other activities once a week beginning June 12.The Sea Turtle Celebration Aug. 14 emphasizes hatching season and honors the Aquarium’s rare white sea turtle, Nimbus, who turns three years old. Any day you visit,
check out the interactive, hands-on Sea Turtle Rescue that lets you experience what it’s like to treat a sick or injured sea turtle. “Otter” reasons to visit Don’t miss the special programs at the river otter exhibit, scheduled four times every week. Other animal feedings, live animal encounters and programs and dive shows are offered daily, free with admission. A number of specialized behind-the-scenes activities and outdoor adventures also are available – these require fees and advance registration. The beach at its best
he quintessential beach community, Atlantic Beach, expertly balances low-key, residential areas and bustling beachfront entertainment. Part of the Crystal Coast, this area is rich with beauty, history and activities to satisfy all ages. As one of the oldest towns on the Bogue Banks, Atlantic Beach sprouted up from a beach pavilion built in the late 1800s to provide oceanfront entertainment for tourists staying across the sound in Morehead City. Over a century ago, Bogue Banks became home to one of the first bathing pavilions to accommodate guests of the New Morehead City Hotel who were accustomed to bathing in the ocean. Word spread, patrons flocked to the area, and the Atlantic Beach resort was formed. By the 1920s, and after several business deals, a new Atlantic Beach opened in an area known as the “Circle” on Bogue Banks. This new area boasted two bathhouses—one for men and one for women—and quickly prospered with the addition of a bridge that connected Atlantic Beach to the mainland. During the Great Depression, the Atlantic Beach property encountered several setbacks but was eventually held by the Manufacturers Bank and Trust Co. of New York. With the prospect

just a few more short years, the area was marked out for streets, and property lots were sold. More structures followed as well as the construction of the boardwalk along the oceanfront. Today, the pavilion no longer exists, but the site on which it stood is now part of the Atlantic Beach Circle, a reference point for locals and
visitors alike. Souvenir shops, a small boardwalk, restaurants and more keep the Circle a popular social spot for both teenagers and families. Despite starting out small, the town of Atlantic Beach is a flurry of activity during the summer season. The miles of beautiful beaches that make up Atlantic Beach are its most popular attraction. There are several public access points across the beach, so sunbathers, swimmers and surfers can spread out and enjoy a little piece of paradise. Whether you set out to build a sandcastle that can withstand the waves or just plan on getting your feet wet, the sandy shores are sure to please. Something unique to this part of the North Carolina coast is the arrival of sea turtles each year. In Atlantic Beach, sea turtles, the most common being loggerheads, nest from May to October. The residents of Atlantic Beach make strides to protect these incredible animals and encourage visitors to be aware of the nest sites during the summer and fall seasons.

Gem of the Crystal Coast
amed after its beautifully lush maritime forests, Emerald Isle is a laidback beach community made up of unspoiled beaches, pristine forests, quaint beach cottages and loads of activities for the whole family. Originally inhabited by Native Americans, the island was explored and used by English colonists and also pirates, such as the infamous Edward Teach, also known as Blackbeard. In 1893, a group of families came to the island and settled there, creating the town of Middletown. Still, it remained largely uninhabited until the 1950s, when cottages first began to dot the beaches.

COASTAL CUISINE EMERALD ISLE It was then that Henry K. Fort of Philadelphia bought what is now Emerald Isle and part of Cape Carteret as an investment. He saw the success of neighboring Atlantic Beach and imagined Emerald Isle expanding to a resort of the same caliber. However, Fort couldn’t secure enough support to build a bridge and his dream of a resort community was abandoned. After Fort’s death, the land was inherited by his daughter Anita Fort Maulik, who ultimately sold the property to a group of investors from Southeastern North Carolina. The land, not yet known as Emerald Isle, was purchased for $350,000, the largest amount in Carteret County history at the time. The seven investors then divided the land into 54 blocks, each a little more than 1,000 feet wide, and development was underway. Ferry service began in 1960, connecting the mainland to the beaches and helping spur visitors to the budding beach community. When the Cameron Langston Bridge was built in 1971, development continued, bringing in more beach rentals, attractions and restaurants to the family-oriented beach community. Today, Emerald Isle is abuzz during the summer and peacefully serene throughout the rest of the year. While more than 3,500 people are lucky enough to call the town home, in the summer, the population quadruples as families flock to the Bogue Banks for the ultimate beach vacation. From surfing to sunning, mini-golfing to shopping, the opportunities for fun are endless in Emerald Isle. A surf rod and a bucket of bait will start your fishing adventure—try your luck on the pier or on a charter boat. You can also stop at one of the many local seafood stands or markets to purchase

Motorized boats and jet skis, as well as kayaks and canoes, are available for full and half-day rentals at local businesses. Want to explore rare and pristine maritime forests? A new walking and bike path along Emerald Drive and Coast Guard Road offers great views of beaches, marshes and coastal ecology. COASTAL CUISINE EMERALD ISLE It all began when he was 25 years old and his mother had taken an interest to finding sea glass. As he and his brother-in-law combed the beach in search of the turquoise, blue and green pieces of glass, they began to find shark teeth, and now Goodpasture has continued this never-ending search for shark teeth into his 60s. Barry and his wife, Sue, live in Botetourt County, Va., but for nine years, they’ve been coming to their vacation home on the Crystal Coast where they can kick back, relax and, of course, spend hours looking for shark teeth. The couple volunteers to help protect the sea turtles on Emerald Isle, and Barry often hands out shark teeth to fascinated kids who come to learn about the turtles. This generous act has earned him the nickname “Shark Tooth Man.” Most days, Barry goes out early in the morning to find the teeth, but it varies depending on the tide. “It’s crazy; every day is different,” he says. Barry has a special technique that’s been successful through the years in finding shark teeth. He focuses on a pile of shells, and when the tide comes in, it starts to wash the shells back out into the ocean. When this happens, the sharks’ teeth are lighter, and they float above the shells, so when Barry gets a glimpse of the teeth, he quickly reaches down and grabs them. “We’ve been down here, and it’s just tons and tons of shells, and that’s when I love it, especially when they’re spread out,” he says. “When they’re spread out, you can spot one better than when they’re all bunched together.” Sue explains that once a person starts finding things, their eyes focus in on it better. Then when they pick it up, they can almost feel whether it’s a shark’s tooth or a shell. “I’ve seen people that will just sit and sieve through the [shells], and that’s their technique. Everybody seems to have a different technique,” she says. “Mostly it’s just persistence.” “Patience has got a lot to do with it,” Barry adds. And he would know. He’s never actually counted his collection of shark teeth, but speculates that the number is in the thousands.

“The most I think I’ve found in one day is 73,” he says. “Normally I don’t come home until I’ve got at least one.” He and Sue display the collection in bottles and vases around their home. Barry says the white teeth he’s found are from the sharks still out there and the black ones are millions of years old. The teeth range from all types of different shark species, the largest being from the megalodon shark, an extinct species from the Cenozoic Era that was believed to be the biggest prehistoric shark that ever lived. From searching online, Barry speculates that some of the larger teeth could be worth hundreds of dollars. “It’s just something people want,” Sue says. “The real thrill is finding it yourself.” The next time you’re walking along the shoreline of Emerald Isle and the tide’s coming in, you may just be lucky and quick enough to grab your own shark tooth using techniques straight from the Shark Tooth Man of Emerald Isle. /

Jump aboard a high-speed boat to the nearby Cape Lookout National Seashore to explore pristine nature, untouched for centuries. Or just sit back and relax on the patio of a lovely old inn and toast to another relaxing day in this seaside paradise. Both quaint and bustling, Beaufort has all the flavor of a small North Carolina port town but with enough attractions, amenities and activities to rival any seaside destination. Most of all, it is the history of the town that gives Beaufort its distinct character and unique setting. Settled in 1709, Beaufort is North Carolina’s third oldest town. Originally inhabited by the Coree Indians in their village, Cwarioc, meaning “fish town,” Beaufort was then inhabited by French Hugenots and eventually settled by the British in 1709. In 1713, Robert Turner, who held the original land grant for 200 acres, laid out the town and named the streets just as they are today. The town was named in honor of Turner’s friend Henry Somerset, Duke

of Beaufort, and was incorporated in 1722. By the late 18th century, Beaufort was becoming an active seaport. Inhabited by sailors, privateers, fisherman, soldiers and planters, it was a diverse community with a common thread—the sea. While Beaufort’s active sea trade allowed it to be connected with seaports thousands of miles away, its geography kept it isolated from the interior of the state. This isolation has helped the town retain its historic appearance. As the seaport became active so did the lingering pirates, one in particular you may have heard of—Edward Teach a.k.a. Blackbeard. His ship
ran aground on a sandbar near Beaufort, and he and his crew would come into the Pamlico Sound to visit and resupply, and the Beaufort harbor became their comfortable place for rest and rejuvenation. Most were appalled that these pirates were allowed to roam the land freely and were tolerated by government officials. According to popular belief, Blackbeard was a frequent visitor to Core Sound, perhaps residing at the Hammock House when in the neighborhood. Legend has it that he would merely anchor his ship in the creek, row to the house and tie up on the porch post, while other stories depict Blackbeard burying treasure in the Hammock
House yard, although none has been found to this day. Artifacts from Blackbeard’s famous flagship, Queen Anne’s Revenge, can be found at the NC Maritime Museum. An ice cream treat in the afternoon shade.

In the 20th century, Beaufort continued to grow. There were lulls where not much happened and spurts of building and great influxes of people moving to the area. In the early 1900s, St. Paul’s Episcopal Church School came to life once again after a more than 30-year lapse in teaching.

COASTAL CUISINE BEAUFORT In 1906, the railroad came across the way and started making regular visits to Beaufort. In 1907, the railroad station on Broad Street was built, and a new, large brick courthouse was built on the square. Still standing today are the homes of Beaufort’s early sea captains, seafarers and merchants. Beaufort boasts more than 100 homes in the Historic District (which is on the National Register of Historic Places) that are more than a century old and several private residences that are more than 200 years old. In many of these homes, you will see the influence of the West Indies architecture brought to Beaufort from generations of sea trade. The Beaufort Historical Association, which celebrated its 50th Anniversary in 2010, owns and operates the Beaufort Historic Site, a two-acre complex that includes eight historic buildings, six of which are restored, ranging from a 1778 primitive cottage to the apothecary shop and doctor’s office of 1859. Tours of the historic

trip to the Crystal Coast is not complete without experiencing the scenic seaport of Morehead City. The waterfront historic district is bustling with an exciting collection of marinas, fishing charters, tour boats and friendly faces. Promenades, rich history, restaurants, antiques, art galleries and unique shops are also to be found. Located just off Arendell Street, between 4th and 14th Streets, this area is a must-stop for any vacationer looking for a great meal, deal or adventure. Morehead City celebrated its 150th anniversary in 2007, paying homage to its long history as an important shipping and fishing port in North Carolina’s history. The town was established by a group of investors who sought to take advantage of the deep channel of Beaufort Inlet and build a rail to Goldsboro. The town was laid out in city blocks, much of which still exists today. Since then, Morehead City has become known as the “Summer Capital by the Sea” (minus a few years during and following the Civil War when the town was occupied by Federal troops) and has been a popular vacation destination and fishing port. s the second oldest town in North Carolina (in 2010 the town celebrated its 300th anniversary!), New Bern has a classic Main Street feel, ripe with historic buildings and landmarks. Named after Berne, Switzerland, New Bern was founded by Swiss and German immigrants in 1710 and has been a critical part of North Carolina history ever since. In the latter half of the 18th century, New Bern was the first permanent seat of the colonial government of the state. Then, after the Revolutionary War, the former palace of British governor William Tryon became the original state capital building of the independent state until the 1790s when it was destroyed by a fire. More than 150 years later, a new palace was built, reconstructed from the original drawings and plans. A visit to the historic building and beautiful gardens or a trip to the newly built

Enjoy a taste of the Crystal Coast
rounded by oceans, bays and inlets, this part of North Carolina is blessed with a bounty of fresh seafood year round. Fishing has been a part of Crystal Coast heritage for more than 400 years, from the whaling industry in the 18th century, to the mullet and oyster trade in the 19th century, to the thriving modern seafood industry of today. Thousands of fishermen make a living off the surrounding waters, bringing in an assortment of fish, including mahi-mahi, grouper, tuna, striped bass and a variety of shellfish. Some of the most popular seafood dishes on the Crystal Coast are shrimp burgers (fried shrimp on a bun with coleslaw and sauce), clam chowder and anything made out of crab. Perhaps the most famous way to serve crabmeat is in the form of crab cakes—a mixture of crabmeat usually with breadcrumbs, herbs and spices—and sometimes mayonnaise— formed into a patty and broiled or fried. Hard shell crabs are also served steamed, plated with small mallets to crack open the shells and pick out the sweet meat. From the first full moon in May until late summer, soft shell crabs are found in eateries prepared fried, broiled or sautéed. Out of season, look for good-quality soft shell crabs that have been individually quick frozen. Fresh catch is also served in an endless amount of ways—steamed, fried, blackened or “Calabash-style,” which means lightly breaded in seasoned cornmeal. Area chefs use their creative license to create delicious dishes you could never dream up on your own, combining seafood and fresh ingredients from local farms, such as Can it get sweet potatoes or any better than this? collard greens. However, the most famous dish in the Tar Heel state has to be Carolina barbecue. First, understand that the word “barbecue” and the word “grilling” are not synonymous, and in this neck of the woods, barbecue means pork; not chicken or beef. Carolina barbecue is a combination of pork, heat and smoke that makes for a tender, rich, succulent meat that is minced and usually paired with a thin vinegar sauce. There are some varieties in the way barbecue is cooked, but
5/7/12 4:46 PM
COASTAL CUISINE nobody is more proud of their barbecue than North Carolinians. A plate of barbecue will definitely be accompanied by coleslaw and a pile of hush puppies—delicious fried balls of cornmeal, flour, eggs and sugar— another North Carolina tradition. You’ll be delighted by the dining options on the Crystal Coast, from casual family restaurants to upscale eateries. But no matter where you eat, rest assured you’ll get a side of that good old-fashioned Southern charm with every meal. FARM-FRESH FAIRE Take a taste of the local harvest sprouting up throughout the Crystal Coast by visiting one of the region’s farmers markets. While the big season for farmers’ markets lies between the beginning of May and Labor Day, a few of the more well-known farmers’ markets are open all year-round and allow you to sample all sorts of local treats that burst onto the scene well after summertime. If you’re visiting during the spring, Crystal Coast is lush with everything from carrots and collards to blueberries and beets. Summertime visitors can take home sweet corn, cucumbers, summer squash and cantaloupes. Fall finds include apples, green beans, peanuts and pecans. No matter what the season, many farmers’ markets also sell a variety of baked goods, preserves, freshly baked bread, herbs and cheeses. Stop by the Carteret County Curb Market, an annual summertime favorite that runs every Saturday from May through Labor Day and is located at the corners of 13th and Evans Streets, Morehead City. 252-222-6359 For a well-known farmers’ market that runs year-round, visit the New Bern Farmers Market, open every Saturday from 8 a.m. to 1 p.m., located at 421 South Front Street, New Bern. 252-633-0043. www.newbernfarmersmarket.com /

he beaches of Crystal Coast can be quite a thrill during the day, but also at night. The soft shuffling of the waves, the sky lit up by shimmering stars and during the summer months, you are even likely to see under the gleaming moonlight a bale of sea turtles in fervent march to reach the water. More specifically, baby sea turtles. During the summer time, Crystal Coast’s nature comes to life and leaves its tracks on the sands. From May through August, sea turtles will surface during the night to lay their clutch (a nest of eggs) on the shores. The turtle will make her way above the high-tide line and begin digging a large depression into the sand called a “body-pit” and another smaller one inside called the “egg chamber.” As the name suggests, it is in this chamber that the female will deposit her ping pong ball-sized eggs and cover them with sand until they hatch. A sea turtle can deposit anywhere from 50 to 200 soft-shelled eggs at one time. That’s a lot of eggs! Once fully grown, the hatchlings begin their life-long adventure by first traveling across the sand en masse to the ocean. Huddled under the dark of night, the hatchlings will surface but with a tentative precaution. They are easily deterred by humans, animals or even artificial lights such as porch lights, flash cameras and flash lights. So if you are planning a night excursion onto a Crystal Coast beach, be aware of where you are stepping and careful where you shine that flash light! Though independent as these tiny creatures may seem at such a young age, do not be fooled—they are quite delicate. Sea turtles have been on the endangered species list for many years now, with the main cause of their population decline being human involvement. Turtles are often the victims of fishing malpractices and typically wind up as the bycatch from many fisheries. Fishing practices such as shrimp trawling often destroy the habitat and food supply of sea turtles, placing During the summer the population at great risk. time, Crystal Coast’s The intricate designs of certain species’ shells, such as that of the nature comes to life Hawksbill sea turtle, make the and leaves its tracks turtle a heavily sought after creature in the global market, as well. Their shells are traded to make on the sands. exotic food, jewelry, oils, leather and other items illegally. It has been estimated that within the past century, the population of the Hawksbill sea turtle has declined by 90 percent. In an effort to help sea turtles from getting trapped in fishing nets or longlines, the US Federal Government and the Shrimp Trawling industry worked together to create a Turtle Excluder Device (TED). The device

essentially allows the turtles and other sea creatures captured unintentionally to escape without affecting the fishermen’s catch. The Crystal Coast is a great place for kicking back with a line out on the water. But be sure to take note of where you cast out your line and what winds up on the other end! Fishing isn’t the only thing keeping the turtles on the endangered list. Urbanization and development are also a major factor in the degradation of the sea turtle population. While it seems the life of the sea turtle is dappled with woes and formidable challenges, there are those willing to help. Here on the Crystal Coast, residents are in tune to the trials of the turtles and have taken it upon themselves to do their part to help protect these fragile creatures. Volunteers scour the beaches along the coast in search of turtle tracks. They follow the tracks to the nesting site and dig carefully by hand to discover the actual nest. Once the location is verified, the site is marked off and then roped off with tape, like a mini crime scene. Organizations such as the Pleasure Island Sea Turtle Project consist of dedicated volunteers who perform these tasks each day to help prolong the survival of the species. Another unique way residents of the Crystal Coast are playing a role to help the turtle population is by setting up clinics like the Karen Beasley Sea Turtle Hospital. This hospital is purely dedicated to rehabilitating injured sea turtles and protecting the habitats of those that make their nests near Topsail Beach, where the hospital is located. They have helped dozens of sea turtles recuperate and return to the seas over the years. If you feel for these sea creatures as much as the volunteers at the hospital, you can take part in the efforts too. The hospital opens their doors for visiting hours during the day to allow patrons to pay their respects to the injured turtles and to watch the experts in action. Another way to help these creatures is to simply be a conscious seafood shopper. Know where your seafood is coming from and if it is turtlefriendly. Be wary of where you stay at the beach. If you choose to sunbathe at a spot near a nesting site, help preserve the nest by granting the eggs some privacy. Each small step you do is a big step in the long run for the turtle’s survival. Finally, take part in the celebration of a successful sea turtle recovery. Hospitals on the Crystal Coast such as the Karen Beasley Hospital sometimes hold a celebratory turtle release once a turtle has been nursed back to health. These events are usually spread by word-of-mouth. But if you see a small crowd of people congregating at a localized spot on the beach with banners and cheers filling the air, you can be sure a turtle release is in progress. Stop by and watch as volunteers send the turtle back to its natural habitat. /

FISHING a fisherman’s dream. Flounder, red drum, black drum, speckled trout, sheepshead and ladyfish can all be caught inshore in the sounds, inlets, and waterways. Offshore fishing heats up as well as bluefish, Spanish and king mackerels, cobia, amberjack, barracuda, mahi, wahoo, grouper. Even billfish such as sailfish and marlin are all eager to give you a great fight. As the fall approaches, most of these fish stay in the area and just get bigger and more aggressive. This is also when the famous Crystal Coast spot run kicks into gear. Spots are great for kids and first-time fishermen, but there are also 50-year Captains that love to go spot fishing. The spots make their run down the beach and through the main waterways, so they are easy to find, and they will eat just about any piece of bait you offer up, especially shrimp and bloodworms. Spots fry up great, making a delicious treat that is easy to catch. The Crystal Coast winter does not bring an end to the fishing. Bundle up and brave the elements for big red drum and bluefish in the surf, excellent speckled trout fishing in the inshore waters and some great bottom fishing offshore in the Gulf Stream. Winter is also the time that giants appear. Giant Bluefin Tuna from 100 to 800 pounds will be lumbering along the Crystal Coast waiting to either make your day or hurt your feelings. If you want in on the action but don’t have your own boat, there are many local fishing guides and charter boats that can get you on the open water for some world class fishing. These knowledgeable captains put clients on fish year-round both inshore and offshore. Depending on the time of year, the charter option can put you and your family or friends on trout, flounder, sheepshead and redfish inshore and mackerel, cobia, mahi, tuna, wahoo, grouper and bottom fish offshore. Even anglers with their own boat can always benefit from the tips and tactics learned by taking a charter and applying them to their personal fishing trips. It’s really no wonder why the Crystal Coast has found a place in so many anglers’ hearts. With such a diverse range of species and a year-round fishery that caters to every level of experience, you can believe that the Crystal Coast is ready…it’s just waiting for you to get out and go fishing! /

OYSTER SHELL RECYCLING By Anne Taylor Robertson
W
ith the rise of companies and organizations going green, North Carolina’s Crystal Coast has adopted an oyster shell recycling program to help sustain and foster the growth of oyster reefs in coastal North Carolina. North Carolina’s Oyster Shell Recycling Program is an initiative of the Department of Environmental and Natural Resources. So what is oyster shell recycling, and why is it important? Oysters are born as free-floating organisms in the water. While they only take a few hours to develop as free floating, they take about a year to fully mature. It’s during that first year that they look for homes to settle in and attach themselves to. They eventually settle onto hard surfaces, which is why oyster colonies can often be found attached to pilings, piers, and other hard surfaces in and near the water. While this is sufficient for a temporary home, oysters do best when they settle into old oyster shells. Oyster reefs are not only important for commercial farming purposes but are essential to the health of the ecosystem as well and provide great hook and line fishing for the recreational fisherman. Oysters are a natural cleanser for the environment and are also part of the food chain, even outside of the typical oyster bar. They pump dozens of gallons of the brackish water that they live in through their gills each day, amounting to more than a gallon an hour per oyster, and in this way, they filter much of the water that we play in at the beach and consume as well. This keeps our natural bodies of water along the Crystal Coast beautiful and clean and gives us plenty of oysters to enjoy. The Oyster Shell Recycling Program makes it easy for visitors and residents of the Crystal Coast to put their “trash” back where it came from. Most county and city landfills and trash sites will accept oyster shells and will deposit them back into the water. Even local businesses and restaurants are doing their part for the environment—dozens of restaurants, especially, are contributing to the cause. Not only is it important to sustainability and the environment; it is important to keeping the local economy stimulated as well. Keeping the oyster population high will ensure a good season for commercial fishermen, as well as providing for local oyster bars and seafood restaurants. These establishments, in turn, give back to the ocean by recycling all the oyster shells they use instead of just throwing them away. The recycling program came into existence under the North Carolina General Statute, which includes bans on other materials that will aid in the prevention of pollution as well as the protection of the natural environment. During your stay on the Crystal Coast, don’t forget to look for and support local restaurants and businesses that want to give back through North Carolina’s Oyster Shell Recycling Program! /

small change can equal big difference An Emerald Isle based nonprofit organization aims to fund clean drinking water projects around the world—and all they’re asking for is your spare change
R
estaurants in America have one major thing in common with remote villages in the developing world: a dependence on clean water. The major difference is that while clean water is readily available for our use here, 1 billion people around the world lack access. As a result, a child dies from a water-related illness every 15 seconds. When local restaurant owner Chris Johns made this startling discovery, he decided to make a difference. In January 2010 he started a nonprofit organization, QH2O, committed to providing clean drinking water around the world. Area restaurants are partnering together and giving each guest the opportunity to give one quarter— yes, just 25 cents—to the clean water cause. 100% of each quarter received goes directly into funding a clean water project. Already, through quarters, the organization has funded 10 wells in countries like Tanzania, Uganda and India, but there’s still a lot of great work to be done. Want to be part of the solution? Just dine at one of our partner restaurants and tell your server you want to participate. The quarters can be added directly to your bill. Life is valuable, and water is life, but the remarkable thing is that this investment costs us so little. All too often we throw pennies into fountains, dimes into parking meters and quarters into gumball machines without thinking twice. QH2O is collecting small change and making a major difference in the lives of thousands. To learn more about QH2O, visit www.QH2O.org /
