THE HERMITAGE BEHIND CLOSED DOORS Our Privileged Access excursions offer Viking guests exclusive access to stunning private homes and palaces, private concerts and afterhours entry into world-class museums. One of our most remarkable Privileged Access experiences is The Hermitage Behind Closed Doors. Russia’s State Hermitage Museum boasts some 3 million works of art and historical artefacts that are precious to the country’s heritage, and only a fraction are on public display — the rest are locked away in a carefully monitored facility. During this eight-hour excursion, guests are treated to an early morning guided tour through the main collections before the museum opens its doors to the public. Guests then join a local historian inside the museum’s secured vaults to view 19th-century frescoes, treasured sculptures, Romanov furniture and imperial carriages. mekong overnight Whether it is a visit to the home of a local family or an enriching cooking class, our Local Life excursions reveal the rhythms of daily living in each destination. Mekong Overnight is one of our most popular Local Life experiences — and with good reason. This two-day Vietnamese adventure begins with a scenic drive to C`ân Tho', where guests visit Ong Pagoda, a colourful late 19th-century temple built by Chinese immigrants to worship the god Kuan Kung, a statue of whom sits inside the temple surrounded by incense. This excursion also includes a stop at the bustling Cái Răng floating market — the biggest floating market in the Mekong Delta. In the city of Vĩnh Long, which is divided by a number of small canals, guests can take in the traditional houses and fruit plantations lining the banks before meeting local fishermen and learning about their fishing techniques. The Viking Sun is a true cultural flagship. Outside of Oslo, the Norwegian capital, the ship's owner, Viking Cruises, in a serious nod to its Nordic heritage, owns the largest collection of Munch works. All of the 35 works adorn the walls of vessels such as the Viking Sun, one of six ultra-modern ocean-going ships in the Viking fleet. Viking's art collection, complementing the restrained, lightfilled and blond-timbered Nordic-style ship interiors, also includes lauded paintings by Norway's 81-year-old Queen Sonja, once the subject of an Andy Warhol lithograph. On my circuits around Viking Sun's salubrious decks, it is, perhaps unsurprisingly, the works of the expressionist Munch that most intrigue and inspire. I soon learn that Norway's most celebrated artist first

took up the brush aged 12, dedicating the rest of what's been described as a nomadic, turbulent and bohemian life to art. Impressive as it is, Viking's Munch collection pales compared with the painter's own output which saw him, over six decades until his death in 1944, create more than 2000 paintings and tens of thousands of prints. Aside from the seven original Munch works hanging aboard Viking Sun, including the sensual, perhaps suitably named 1896 lithograph On the Waves of Love, Viking has secured digital rights to the entire collection of the artist's work via a partnership with Olso's venerable Munch Museum. Each night on a giant screen in Viking Sun's central atrium, a thematic presentation entitled "Munch Moments" showcases a selection of the painter's works, including self-portraits and a cameo by The Scream. The presentation is accompanied in part by a musical recital which includes works by another notable Norwegian, the 19th-century composer Edvard Grieg. A confronting swirling motif emblematic of the angst that can suddenly overwhelm the human condition — even in a part of the world known for its phlegmatic natives — The Scream actually consists of four versions painted between 1893 and 1910. It was perfectly described in a verse by Munch in his own diary, with the entry referring to a setting-sun "blood red" sky that left the artist "trembling with anxiety" resulting in "an infinite scream passing through nature".

Fortunately, after five indulgent days of my passage through the watery nature of the vast Pacific, I disembark utterly angst free and fully enlightened about the life and work of the master Munch from a world away, Norway. 27

DESTINATION-FOCUSED DINING AT ITS BEST By Shonagh Walker The Viking Star is a 745-foot-long and 94.5-foot-wide small ship that accommodates just 930 guests, so you’ll never have to fight for a table at one of its topnotch restaurants. With over eight dining spots to choose from, including the award-winning Manfredi’s Italian Restaurant, The Kitchen Table and The Chef’s Table, or 24-hour room service that offers daily destination-themed delights, gastronomes might be tempted never to leave the ship. Breakfasts were enjoyed at The World Cafe on Deck Two. All dietary requirements are catered for, from vegan through to gluten-free, to meat eaters, with roasted vegetables, beans, bacon and eggs, frittata, sausages, French toast and so much more. I typically ate lunch at my onshore destination, but again, The World Cafe has plenty to offer, as does the adjacent Poolside Grill. For dinner, Manfredi’s Italian Restaurant became a firm favourite. Again, all dietary requirements are catered to impeccably. I frequently favour a vegan diet and it was never a problem for the chef to tweak dishes slightly. My regular dining companions were meat eaters and devoured with delight dishes including osso bucco, parmigiana di pollo and a thick-cut rib eye. At every meal, the three of us relished the selection of red wines that the sommelier suggested to accompany each dish. The World Café is also open for dinner, if you prefer a more casual dining experience. IN G R E D IE NT S: 1 litre (4 cups) whole milk 6 egg yolks 2 cinnamon sticks 1 lemon (skin only) 7 tablespoons of sugar 3 tablespoons flour Ground cinnamon
D IR EC TI O N S: 1. Pour milk into a saucepan on medium heat and begin stirring with a large spoon or whisk. While still stirring, add egg yolks to the milk. 2. Place the cinnamon sticks and an approximately 1-inch-long piece of fresh lemon peel into the mixture. Gradually, add 4 tablespoons of sugar and 3 tablespoons of cornflour until well combined. 3. Let the mixture thicken, stirring for about 10 to 12 minutes, until the custard has a creamy consistency.

4. Remove from the heat, discard the lemon peel and cinnamon sticks, and pour into a serving dish. Use a spatula to transfer all of the mixture. Let it cool slightly. 5. Sprinkle some sugar evenly on top (about 2 to 3 teaspoons) and burn the sugar with a kitchen torch or under your oven broiler. You should get a thin, caramelised crust. 6. Finish with a gentle dusting of ground cinnamon. Serve warm.

“Pass the port” is a saying I’ve heard all my life, so I’m thrilled that the Viking Jupiter is spending a day in the port of Porto, and not passing it by. Hugging both sides of the wide Douro River estuary, Porto is one of the most beautiful and charming small cities in all of Europe — the perfect size for a walking tour that ends with a tasting of its famous fortified wine. First, we explore the historic city centre, setting off from the eighteenth-century Clerigos Tower, the tallest bell tower in Portugal, and strolling down the steep Praca da Liberdade to the Sao Bento railway station. Train stations aren’t usually places you want to hang around in, but this one is so exquisitely decked out in vast azulejo tiled mosaics depicting the history of Portugal, it’s more of an art gallery and museum. Rua De Flores is next, lined with lively shops, cafes and restaurants — we plead with our guide to stop at Nata Lisboa for a quick stand-up bica (espresso coffee) and pastel de nata, the country’s famously rich, caramelised custard tart. Then it's across the nineteenth38
century Dom Luis Bridge to Vila Nova de Gaia, notable for its steep hills and mosaic-tiled eighteenth-century port houses. We wander through the still, darkened cellars, gaze in awe at vast barrels that hold up to 1000 litres of port, and visit the on-site cooperage where barrels are made and repaired. By this time, we’re a bit thirsty. Time for a tasting in the elegant visitor’s room, where we learn the difference between ruby port (younger with a full, fruity sweetness and a deep ruby colour) and tawny port (aged longer with a more complex, less sweet flavour and browner colour). The final glass is of a pretty, pale pink rosé port, served chilled as an aperitif or mixed with tonic, that’s designed to appeal to the millennial drinker. Clearly, the Portuguese have worked out how to "pass the port" to the next generation.

Viking Resident Historian How long have you been with Viking’s resident historian program? A university colleague referred me to Viking in late 2017. I’d initially been a bit put off by the reputation of some cruise lines. However, I did my due diligence on Viking and discovered that it was entirely different — with interested and interesting guests, a well thoughtout education program and elegant, comfortable facilities. After going on board the Viking Sun on its inaugural World Cruise in 2018, I was sold. Can you tell us about your interests and areas of specialisation? My professional work has focused on the history of Indonesia. I am fascinated by the processes which turned an archipelago of diverse cultures and peoples into a single, modern nation — albeit one that still faces many challenges. interests. With two colleagues, I wrote a book on the cultural history of the orangutan to examine the ways in which people have been intrigued by the close resemblance between humans and orangutans over the last four centuries. What three history books would you recommend to our readers? Lost History of Christianity: The Thousand-Year Golden Age of the Church in the Middle East, Africa, and Asia–and How It Died by Philip Jenkins. This is one of those fascinating books that uncovers a world that I had no idea about until I read it. Forests of Ash: An Environmental History by Tom Griffiths. It’s a great story of the way that Australians have coped with living in a land of bushfires. East West Street by Philippe Sands. It’s an intriguing book, part autobiographical, that traces the life stories of three important thinkers on international law and genocide back to the city now known as Lviv (in Ukraine) but once called Lemberg, when it was part of the Austro-Hungarian empire. 43

Enrichment Manager, Ocean Cruises 1. What attracted you to Viking and how long have you been working with us? I started with Viking in January 2015, just before we launched our first ocean ship, Viking Star. 2. What does your job entail? I manage the Enrichment program across our entire Ocean fleet. This involves recruiting guest speakers and resident historians to deliver interesting and destination-based lectures. I also recruit Resident Astronomers for Viking Orion and Jupiter, where our Explorer Dome planetarium lets you gaze into space. 3. What do you find most challenging about your job? Assigning more than 450 speakers across six ships is a logistical puzzle! It can be challenging to fit in with each speaker availability and ensure their expertise is matched to the best itinerary. 44
4. What do you find most rewarding about your job? Feedback that lets me know guests are enjoying the program. This is what my job is all about — ensuring our guests learn something new about the region they are cruising in. 5. How does Viking ensure guests enjoy an enriching and educational experience as they holiday? With such a large choice of experts, I select the best speakers who can deliver an enriching and educational program. Every cruise has a mix of around four expert speakers, plus the lectures are recorded so you never miss one! We also have smaller discussion groups and one-on-one sessions with our resident historian, along with Q&A sessions with our resident astronomer. 6. We’re making our way down Edinburgh’s busy Royal Mile when our tour guide — a Scottish gentleman named Peter — beckons me away from the group. “Quick, follow me” he says, before pointing under the low brick archway of what appears to be an unremarkable cobblestoned alleyway. “Jamie Fraser’s print shop,” he whispers and nods. Peter heads back to the group, who he is leading on a walking tour of Scotland’s capital. My Outlander secret is safe, for now. I stand alone in Bakehouse Close — named because when the city and its castle was still walled, this laneway was a dead-end, closed to the world outside. I turn slowly on the spot as 18th century Jacobite-era Edinburgh appears amid the dreary Scottish weather. You see, I’ve been romanced by historic TV dramas like Outlander, The Crown, Downton Abbey and Vikings.
