! it t a e d n a e k a c r u o y Have Who says you can’t have your cake and eat it ... a healthy cake!!! Do you ever have that tired ‘slump’ feeling come mid morning or mid afternoon? One of the reasons for this could be a result of having a breakfast or lunch that is high in simple carbohydrates, such as white bread, sweetened cereals, white pasta, baked potato, and not enough protein. Unfortunately when that tired feeling hits, we often head for a chocolate bar or a bag of crisps – tasty they may be, but the energy these give us will be short lived and leave us wanting more.... To avoid the slump make sure you eat a balance of protein and more complex carbohydrates for every meal. Add a piece of fruit to your porridge or some tomatoes with your egg, and you’re on your way to your ‘5’ a day. A balanced lunch For lunch, again choose meals that give a good balance and include some fresh vegetables – if you’re having a baked potato for example, have it with salad and include some protein such as a piece of chicken. If you’re having pasta, choose wholewheat and have with vegetables and some protein such as prawns. But beware, when eating a packaged meal from a shop, check the ingredient label – if it’s supposed to be a prawn pasta salad, make sure that the only ingredients are prawn, pasta and vegetables! To keep our energy levels high during the day, eating the right snack is important, nuts, seeds, dried apricot, olives, dried beans, hummus and raw veg are excellent choices. But if a cake is what you crave, here’s a recipe for a cake that provides an excellent

balance of protein and complex carbohydrates that will keep your energy levels high and stop you feeling hungry, great for an afternoon snack: Ingredients: 5 large eggs, yolks and whites separated 1 tbsp vanilla essence 3 tbsp agave nectar or maple syrup 3 tbsp natural low fat yogurt 2 large bananas mashed Dry ingredient list: 100 gm organic jumbo oats 30 gm ground flaxseed 30 gm ground almonds 25 gm seasame seeds 75 gm sunflower/pumkin seed mix 2 tbpn cinnamon powder 100 gm whole nuts (unsalted) of your choice 2 tsp baking powder 100 gm dried chopped apricot Extra nuts & seeds for cake toppings Whisk together the egg yolks, yogurt, vanilla essence, syrup until a pale yellow creamy colour, then add in the mashed bananas and mix in well. Whisk up the egg whites until soft peaks form. Add the egg yolk mixture to the dry ingredients, ensuring well combined, then gently fold in the egg whites until well mixed. Spoon the mixture into muffin cases in a muffin tin (this will make about 16 individual cakes), sprinkle some seeds and nuts on to the top of each cake. Place in a preheated oven, gas mark 5, 190˚c for 35 minutes. Take out of the oven and place on a cooling rack. Keep in an air tight container – these also freeze really well. Yum!
