THE COUNTY GROUND, NORTHAMPTON
12-13 NOVEMBER 2016
Welcome to the essential guide for the very first Northampton Winter Food Festival. We have one heck of a show lined up for you – chef demos, more foodie talks than you can shake a stick at, lots of food and drink and a street food market with flavours from around the world. If you like food, then there’s only one place to be on the weekend of November 12 and 13. Whether you like it veggie, spicy, meaty, sweet or savoury, we will have something for you. This is the first winter food festival and we hope it will be the first of many: an annual event to showcase the best artisan food and drink in Northamptonshire, and from further afield. The festival takes place at The County Cricket Ground in Abington Avenue where there is lots of indoor space to keep you warm and dry. We will also be putting a marquee across the hallowed turf to provide even more shelter. We have lots of gastronomic treats for you, including Paris House Chef Phil Fanning, Bake Off legend Howard Middleton and Masterchef judge and food critic William Sitwell. Find out more about what they’ll be doing in this guide. We have many people to thank for making the first Northampton Winter Food Festival possible. First and foremost are our Volunteer Festival Makers who give up their time freely to help run the festival, greeting and guiding visitors. They are the most amazing people and their support is both humbling and uplifting. There is still time to volunteer if you would like to help out. Please email louise@winterfood.co.uk for more details.
Then there are the stallholders who have supported us by signing up to exhibit. These people are passionate about what they do and put themselves on the line when they sign up for a new festival. Please come out and support them. You never know, you might well find something delicious! Then there’s the team at The County Cricket Ground who have been intrinsic to the launch of the festival and we would also like to thank Northampton Borough Council and Love Northampton for their support in promoting the festival. And the last person we’d like to thank is you – lovely, wonderful you – for supporting our festival by taking time to look through this guide and hopefully coming to fill up with goodies ready for Christmas. With very best wishes for a great festival, Crispin Slee Founder, Northampton Winter Food Festival

CHEF DEMONSTRATIONS We are delighted to welcome a host of talent to our chef demonstration stage - fabulous local cooks and some familiar faces from the television. Phil Fanning will kick off the sessions on Saturday morning. Phil owns and runs Paris House in Woburn, one of the most fabled restaurants in the county. He will be joined by the likes of Bake Off legend Howard Middleton, Masterchef semi-finalist Jen Charlton and Northampton’s own Nigella Lawson, Carmela Sereno Hayes. All the chefs will wear microphones and the demonstrations will be shown on large TV screens so you can see everything close up. The chefs will concentrate on using fresh, locally-sourced, seasonal produce to prepare signature dishes with a festive theme. Katie Johnson from Wot’s Cooking will host the demo stage. Katie is a farmer turned broadcaster and writer, who worked as a presenter and producer for the BBC for 15 years. The scheduled running order is:
SATURDAY 11am: Phil Fanning Paris House in Woburn Phil Fanning is the multiaward winning Executive Chef and owner at Paris House, a fabled restaurant set in 22 acres of parkland on the Duke of Bedford’s estate in Woburn. Phil arrived at Paris House in 2010 and restored its Michelin star a year later - all at the age of 29. Heralded as one of the ‘brightest culinary talents in Britain’, he mixes modern British techniques with Japanese and Asian influences to create exciting and innovative taste experiences. He will provide a little taste of Paris House style and panache for you on the demo stage. www.parishouse.co.uk

Noon: Howard Middleton Baker and star of ‘The Great British Bake Off’ As a contestant on the fourth series of ‘The Great British Bake Off,’ he won the hearts of the Bake Off audience. He immediately caught attention with his first offering - a gluten free passion fruit and coconut sandwich cake which is now featured on the BBC Food website and then came missing custard and the infamous Hemp Loaf! His engaging personality and quirky sense of humour have made him a popular guest panellist on Bake Off’s spin-off show ‘An Extra Slice’. His first book, ‘Delicious Gluten-Free Baking’ was published in September 2015. Howard will be demonstrating at noon and 3pm on both days of the festival. While he cooks, he will be lifting the lid on the secrets of the hit show. His sessions are a must for any Bake Off fan! www.howardmiddleton.com 1pm: Anita Chipalkatty Hobby Cooks in Northampton Anita is a chef, teacher and mother who has a passion for Indian cuisine. She runs ‘Hobby Cooks’ in Northampton, passing on her knowledge of authentic Indian cooking, gathered from her upbringing and travels as an adult. fresh ‘ready’ meals but with balanced, nutrition in mind. Cooking professionally for over 15 years in a range of different styled restaurants and eateries, Nathan left college with a professional chefs diploma before working around the world, including restaurants in France, tapas diners in Spain and even street food vendors in Thailand and India. Returning to the UK, he spent six years as second chef and head chef in fine dining restaurants across England, all the time keeping active in the gym. It was only when he began training in Martial Arts that the importance of balanced nutrition and variety in diet became so obvious to him, and ‘My Health Hut’ was born. www.myhealthhut.co.uk 3pm: Howard Middleton Baker and star of ‘The Great British Bake Off’
SUNDAY 11am: Margartia Pap ‘Tasty Kitchen’ cookery school in Great Oxendon Born and raised in Vancouver, Margarita moved to London in 2006. 7 years later, she finally mustered up the courage to pursue her dream of cooking having fallen in love with food growing up in the family restaurant surrounded by fantastic cooks. She left the world of advertising to teach cookery classes in Kent and London - Margarita was hooked! Alongside the classes, she began a food business too - selling her authentic taste of real North American style fruit pies. Her Strawberry & Rhubarb was awarded a gold star by the Great Taste Awards this year. www.margaritastastykitchen.com Noon: Howard Middleton Baker and star of ‘The Great British Bake Off’
1pm: Carmela Sereno-Hayes Carmela’s Kitchen in Northampton Carmela was born in Bedford to Italian parents who settled in the UK in the late 1950s. Today, half of Carmela’s family have made their way back to Italy, where they carry on the local traditions and cooking styles. This remains a constant point of reference for Carmela, an Italian food writer and cookery teacher who holds her heritage close to her heart, teaching her ‘Cucina Povera’ cooking style at her classes and workshops. Carmela’s mantra is to cook simple, inexpensive, flavoursome food with good quality seasonal ingredients. 2014 saw the release of her first cookery book ‘Southern Italian Family Cooking’ and Carmela is working on recipes for her new title on Pasta & Sauces. Her passion is the family, especially her four children, and making pasta! Carmela will be offering samples of her famous Pannacotta at the end of the demo. www.carmelas-kitchen.co.uk 2pm: Jen Charlton Masterchef semi finalist 2016 Jen, from Milton Keynes, was a semi-finalist on this year’s Masterchef. A keen cook and baker with a passion for pastry, desserts, British and Asian food, Jen surprised the judges, including chef Marcus Wareing, by giving them a fish they’d never had before Nepalese Momos with a Thai coconut soup. Her love of food comes from her father, but didn’t start to seriously learn to cook until she met her husband and now she writes recipes for MK news as a Columnist. WINE TASTING
PERFECT WINES FOR CHRISTMAS If you’d like to indulge yourself and make Christmas that little bit more special this year, then we have just the thing for you. Dennis Kingshott from Catchpole Cellars will be hosting a series of free wine tastings over both days of the event, and will be offering his perfect selection for Christmas. He will start with a French sparkling called Veuve de Lalande, which rivals a bottle of Champagne but at £16.50, is half the price. Next is a white Bordeaux from the Chateau Haut Paugnan followed by an Italian red from Brindisi. Dennis says: “The Italian goes really well with turkey or goose with all the festive trimmings. That area of Italy is known for its hunting. If it moves, they tend to shoot it and eat it. “For that reason, the makers have produced a wonderful wine to match all things meaty and gamey which is why it is perfect with a good turkey or goose.” Dennis and his team will end their Christmas selection with a German champagne and truffle liqueur. He says: “It is an extravagant and beautiful way to finish a Christmas meal.” The wine tastings will take place in the small pavilion next to the scoreboard – look out for the signs - and will run at the following times:
SATURDAY Noon - Wines from South Africa 1pm - The perfect Christmas wine collection 3pm - Wines from South Africa 4pm - The perfect Christmas wine collection
SUNDAY 11.30am - Wines from South Africa 12.30am - The perfect Christmas wine collection 2.30pm - Wines from South Africa 3.30pm - The perfect Christmas wine collection Each session will last around 40 minutes and is limited to 40 people each. They are free and it is first come first served so please get there early if you want to get a seat and take part. For the South African wine tastings, Dennis and his team will introduce you to four wines from the Conradie Penhill estate, an artisanal winery based at the foothills of the famous Langeberg Mountains in the Nuy Valley, situated between Worcester and Robertson in the Cape Winelands. Catchpole Cellars specialises in top quality wines from small producers with exclusive distribution in the UK and offer cases by mail order. So when you try something you like, you can arrange for a supply to be delivered after the festival.

HOWARD MIDDLETON
BAKE OFF STAR TO LIFT THE LID ON SHOW’S SECRETS! As a small boy, Howard Middleton took the first tentative step into the world of baking at his mother’s apron strings in the family home in Sheffield. Bake Off star Howard recalls: “I learnt how to bake biscuits, bread and pastries. I loved it but I was a bit slow and my mother often used to say: ‘Oh come on – give it here’.” He baked throughout his adult life and grew more and more interested in different ingredients and cooking in different cultures, and gluten-free baking. One Christmas, he was out with some work colleagues and the conversation turned to New Year Resolutions. It came to Howard’s turn. He said: “I told everyone I was definitely going to apply for Bake Off. That was that. I couldn’t back down. I sent off the application on New Year’s Day and within a week I got a call and was interviewed over the phone.” A further round of interviews and screen tests followed – potential contestants are put through the mixer to ensure they are can rise to the challenge - and in 2013 Howard burst onto our TV screens in the fourth series of The Great British Bake Off. He immediately caught everyone’s attention with his first offering - a gluten free passion fruit and coconut sandwich cake which is now featured on the BBC Food website. And who can forget the look on Mary Berry’s face when Howard introduced her to baking with hemp!
He is also remembered as the victim of Bake Off’s infamous ‘Custardgate’ incident, when his custard was mistakenly taken by another contestant. Howard will be lifting the lid on the show’s secrets while he demonstrates on the chef demo stage at the Northampton Winter food Festival. He will do four demos – at noon and 3pm each day – and chats about his time on the show while he cooks, even taking questions from the floor. It is a must for Bake Off fans. Howard plans to make his crunchy nut carrot cakes and one of his festive recipes, sticky figgy puddings. Since leaving the tent, Howard has been a popular panellist on Bake Off’s spin-off show An Extra Slice and regularly demonstrates and teaches at Hartingtons Artisan Food School in Bakewell. His first book, ‘Delicious Gluten-Free Baking’ was published in September 2015 and he is a regular writer for the Great British Chefs website. He used to combine his life as a celebrity baker with full-time work at Sheffield City Council, but gave up work last year to concentrate on writing and cooking.

FOOD GLORIOUS FOOD
Eating is one of the great joys of life. There are few things so satisfying as a good meal, washed down with a glass of something fine. But how much do we really know about food. Do you know your Granny Smiths from your Brown Snouts? Do you know how meat gets its flavour?
From small beginnings, Phil now makes a range of award-winning ciders, including a rhubarb version which is heaven on earth.
Or does the shopping trip to the supermarket run on auto-pilot, a mission of expedience over experience?
Phil will be Talking Apples, revealing the varieties of apples he uses and their individual and very different qualities, along with tasters to bring the flavours to life.
We’re hoping to expand your minds. As well as having plenty to eat and drink on offer, we’re running a series of free foodie talks over both days of the festival. The talks are designed to be fun, yet informative, and will be led by some of our local food heroes. They will be informal and take place in our Foodies Lounge. Expect some free samples, but space is limited and seats are first come first served. Our speakers will be:
ALARIC NEVILLE, PHIPPS NBC
Northampton born and bred, Alaric saved the town’s brewing heritage by salvaging the names of Phipps and NBC from the corporate graveyard. Now installed in the old Albion Brewery in Kingswell Street, Alaric and his brewing team are bringing some of Phipps’ most iconic beers back to life. A font of knowledge, he will be Talking Beer Northampton’s brewing history and it’s unique beer cocktail, Sunshine and Rain, with free samples.
SUSAN GORST, MOORGATE FARM
PHIL SAXBY, SAXBY’S CIDER
A local farmer and scion of the Saxby’s pork pie dynasty, Phil is the man putting Northamptonshire on the cider-making map.
20
Susan rears free-range KellyBronze turkeys on her 17 acre small holding near Potterspury. She gets the birds when they are just one day old and plays music to the flock of babies to keep them happy. Susan – you’ve guessed it - will be Talking Turkey, explaining why free-range birds offer more flavour. Susan will be speaking on Sunday only and will be giving out free tasters of her turkey.
FOODIES LOUNGE
BILL HULME, FLEURFIELDS VINEYARDS Bill is a rarity – a wine-maker in Northamptonshire, and an award-winning one at that. He grows his grapes in Brixworth, in a vineyard which overlooks Pitsford Reservoir. Bill will be Talking Wine, how to grow grapes and the secret to making stuff that is good quality.
ELLIOT WALLIS, MONKSHOOD COFFEE Elliot is a coffee nut. He lives and breathes the stuff. He tastes, roasts and takes his coffee on the road to events and festivals in a cute VW van. He also runs Gyre and Gymble in Buckingham, an eclectic coffee shop, and is hoping to replicate its success in Northampton.
Elliot will be Talking Coffee in the lounge and explain how to get the most out of your daily cuppa.
LAURA BUTLER, THE BEER GARAGE Mum-of-two Laura Butler is Northampton’s answer to Melissa Cole, aka the Beer Beauty. Laura has been a beer drinker all her life and runs a business called The Beer Garage, delivering craft beer door-to-door. She is on a mission to bring the craft beer to the masses. She will be Talking Beer for Beginners, with free samples of craft beer. Laura will be speaking on Saturday only and would like an audience of ladies and non-beer drinkers!
GEORGE STERIOPULOS, THE LOST FARM George is a champion of rare breeds and is widely credited with securing protected status for the Manx Loaghtan sheep. He rears livestock the traditional way, slowly and with care, just over the county border in Grandborough alongside third generation farmer Jeff Clarke. He says: “There is nothing to beat the flavour and eating quality of a properly reared and pure bred piece of meat.” George will be Talking Meat, explaining what gives meat its flavour. continued...

The tap room has six real ales and as many real ciders on the go at any one time. Not that John manages much – he has to drive home to Northampton. COOKERY CLASSES
WHO WANTS TO BE THE NEXT HESTON? Are your kids besotted by Bake Off or mesmerised by Masterchef? Or do they simply love helping you in the kitchen? Phil Fanning, the Michelin recommended chef who kicks off our chef demos, first fell in love with cooking at his mother’s apron strings. And so did Howard Middleton, star of the Bake Off and who will be lifting the lid on the secrets of the hit show at the festival. Maybe your son or daughter could be the next big gastronomic thing. Feed their culinary talent by enrolling them in one of our children’s cookery classes. While they’re making something delicious, you can always enjoy a little time to yourself among all the stalls! Led by Rachel Wilson from Cookery Doodle Doo, the cookery classes will run over both days of the festival. Her classes are suitable for children aged three and above, although under fives will need to be accompanied please. Your children can learn how to make Festive Fudge, made with a no-bake mix, which they can cut into shape and wrap as a gift, or a Peppermint Snowman. Again, this is a nobake mix which they can shape and decorate, and wrap as a gift. The nose is orange fondant and the hat an Oreo cookie! The classes last for 30 minutes and will run at the following times:

SUNSHINE & RAIN
Whatever the weather, you will be able to enjoy sunshine and rain at the Northampton Winter Food Festival.
It’s not a meteorological phenomenon however but a beer cocktail and one that is peculiar to Northamptonshire. Made with Phipps IPA and a hardcore barley wine called Stingo No. 10, also made by Phipps, it takes its name from the colours of the two drinks. The IPA is bright and golden, representing the sun, while the barley wine is dark and inky, it drowns out the sun like a black rain cloud. The drink was a favourite among workers in the county’s boot and shoe industry but disappeared in the late 60s when Phipps’ new owners Watneys stopped making first Stingo No. 10 then Phipps IPA. Alaric Neville, the man who has resurrected the Phipps brewing tradition in the town, takes up the story. He said: “Sunshine and rain was an incredibly popular drink. I can remember my grandfather drinking it. He’d buy a pint of Phipps IPA and small bottle of Stingo No. 10 on the side, or a nip as they used to call it. Then he’d take a couple of swigs out of the pint and add a splash of the Stingo. You could see the dark colour of the Stingo against the gold of the IPA. “Then as you slowly drained the glass, you’d gradually add a little more Stingo. With an ABV of 9.5%, you don’t need too much of it. The old fellas would swirl it round the glass and could make a pint last all night. Mind you, they still went away with a smile on their faces.” Like Pimm’s, Stingo was rated according to its number and No. 10 was the very strongest. One of the reasons it was killed off is that it takes a
30
long time to produce and needs a specific environment to sit in while it matures. Alaric explains: “The beer is conditioned in bourbon and whisky casks for six months. This is not only expensive but you also need lots of space and exactly the right conditions. The tunnels here under the old Albion Brewery are perfect. There is acres of space and it is damp which keeps the barrels moist and tight.” Phipps, which has risen like a Phoenix under Alaric and his brewing team, reincarnated Stingo No. 10 last year. That was the first time the traditional winter brew had seen the light of day for nearly 50 years and it proved so popular it had sold out by February. This year Phipps have made double the amount in the hope that it will last all the way through to Spring. Alaric added: “Phipps IPA and Stingo are quintessential Northampton beers and sunshine and rain is unique to the town. Long may it be celebrated.” As part of the line-up of free foodie talks at the festival, Alaric will bring to life the story of Phipps and Stingo and also provide free samples of Sunshine and Rain. Please see page 22 for timings. Phipps offer tours of the old Albion Brewery, including the amazing maze of underground tunnels. Visit: www.phipps-nbc.co.uk

THE BEER GARAGE
THE BEER GARAGE
What is it with girls and craft beer? Melissa Cole, aka The Beer Beauty, is taking the national scene by storm and punches toe-to-toe with the beery blokes. And here in Northampton, we have our own Queen of Craft Beer, Laura Butler, who proudly announces: “I don’t drink bland, fizzy lager.” A beer drinker all her life, mum-of-two Laura is the woman behind The Beer Garage. For those of you who haven’t yet heard of it, The Beer Garage is an amazing new business in Northampton, guaranteed to get beer drinkers drooling. Laura trawls the country for the very best craft beers and then makes up a selection pack, either chosen by her or you. She then delivers the beer to your door for free. (You pay for the beer of course!) Her selection includes the best local beers and bottles and cans from further afield. Her inspiration for The Beer Garage came from a chance encounter on a family holiday to Spain. Laura explains: “We went up to the mountains to visit a touristy village called Frigiliana. There was a guy in the village who quite literally lifted up his garage door to reveal the most amazing beer shop. “He had beers from all over the world in there, and also brewed his own beer. All the local bars and restaurant owners would stop by and pick up their supplies. It was just amazing. “My husband Ricky and I spent ages in there. I was a full-time mum at the time. When we eventually
32
walked out, I said to myself ‘When I get home, that is what I am going to do when I go back to work’.” That was 18 months ago and from that chance meeting, the business – and its name – were inspired. The Beer Garage opened its door – although not literally, like the man in Spain – to business in May of this year. From a standing start, Laura now has over 150 customers. She started delivering only to and around Northampton, but is spreading her net more widely around the county. Laura will be taking part in the line-up of free foodie talks, offering an introduction to craft beer for ladies and non beer drinkers, with free samples. She is speaking on Saturday only. Please see page 22 for timings. You can find The Beer Garage online here: www.thebeergarage.co.uk

BECOME A FESTIVAL MAKER! In the vein of Olympic ‘Gamesmakers’, we are looking volunteers to help out at the first Northampton Winter Food Festival. Volunteer Festival Makers play a key role – helping to greet and welcome visitors, and guide them around the event.
As a result of the volunteer programme, Towcester Food Festival has been able to give away nearly £3,000 to good causes locally, including the Northampton Association for the Blind.
There’s still time to apply and as well as the satisfaction of being involved in major local event, Festival Makers get two free tickets to the festival and a free food voucher.
Volunteers need only give a few hours during the weekend of the event on November 12 and 13. They are responsible for stewarding at the event, greeting, guiding and assisting visitors.
A small army of helpers take great pride in supporting our sister event, Towcester Food Festival, which takes place in June.
Volunteers receive a full briefing ahead of the event and tour the site before any visitors arrive so that they know where everything is located. To volunteer, please email louise@winterfood.co.uk
Our first ever volunteer, mum-of-two Louise Ward, was so good we gave her a job and she now runs the volunteer programme! Sarah Findell has volunteered every year at Towcester along with her husband Malcolm and their two sons – Ross and Thomas. Sarah said: “I saw it is an opportunity to do something for the community in which I live. It’s really good fun and you meet lots of new people. It was a lovely way to spend the weekend.” Crispin Slee, founder of the festival, said: “I am completely humbled by the generosity of our volunteers. They are a wonderful bunch of people.”

VINO, VIDI, VICI
Bill Hulme sounds like the ultimate husband. Every morning, he gets up at 6am, takes the dogs for a walk, and then returns to bed with a cup of tea for wife Flora.
And when Mrs Hulme fell in love with Tuscany and asked hubby if she could have a vineyard of her own, Bill obliged. Most men would have coughed and spluttered and put it on the list of jobs that never get done, but Bill reacted like an whippet – he was straight on the case. It helped of course that he had a field in his ‘back garden’ that was perfect for the job, but he didn’t realise that straight away. First, he trawled the UK for potential spots. He even looked as far a field as France and Italy, but being a practical man, he realised none of them were viable.
36
Then he looked closer to home. The couple own eight acres of pasture land around the farmhouse in Brixworth which has now been their home for 35 years. Part of the land is sloped and south facing. Bill investigated. The soil was well-balanced and freedraining – perfect for growing vines. Bill and Flora had found their vineyard right on the door step. Bill, with help, put in 235 posts and one and a half miles of wire. He bought 1,000 vines and planted them lovingly by hand. This was back in 2000 when Bill was in his early 50s and still working full-time as management consultant and refereeing rugby at weekends.
FLEURFIELDS VINEYATDS
The vines took three years to bear fruit. In 2004, they harvested 699 bottles, in 2005, 2,400 bottles and in 2006, in 4,500 bottles. The next year disaster struck. Bill had never sprayed the vines to protect them and disease ravaged every plant. Undaunted, he went on a formal vineyard management course and was able to restore each plant to full health. He has never looked back. Bill said: “I love every day. It’s hard physical work but that keeps us both fit and you get to meet some lovely people.” The couple now grow enough grapes to make 5,500 bottles of wine a year, including a sparkling white and a pink fizz, and have won countless awards. They are a success story which has its roots, quite literally, planted in Northamptonshire. He’s not the first person to discover the hidden wonders of the county’s land however - the Romans very likely grew wine here 2,000 years ago. The vineyard is called Fleurfields, named after the breed of sheep that used to graze the field before it was ploughed up for vines. The couple host tours of the vineyard and will be selling all five of their wines – including their sparkling varieties at the Northampton Winter Food Festival. Bill will also be talking about growing vines and wine making at the show, as part of the free line-up of foodie talks. Please see page 22 for timings.

MOORGATE FARM
BRONZE TASTES PURE GOLD
Christmas is coming and the goose is getting fat. Or in Susan Gorst’s case – the turkey is gently putting on the pounds. Susan rears nearly 500 free range turkeys at her 17 acre small-holding in the village of Potterspury. The birds wander happily among the trees. But these are not just any kind of turkey – these are KellyBronze turkeys, which make them rather special. Bronze turkeys were noted for their flavour, but by the 1980s the flocks had nearly disappeared, replaced by white-feathered breeds. Supermarkets considered the lighter coloured birds to be more appealing on the shelf and as they could be massproduced, they were cheaper too. All this was, however, at the expense of flavour. The new birds were reared more quickly and simply did not taste the same. Bronze turkeys were saved by a poultry farmer called Derek Kelly who chose to swim against the tide of popular opinion. In the early 80s, he toured the country buying up all the last remaining flocks – hence the new name KellyBronze. People thought he was committing business suicide and his unfashionable mission did indeed nearly end in disaster. But he was rescued in 1989 when Delia Smith came to visit and recommended the KellyBronze in ‘Delia’s Christmas’ – and suddenly everybody wanted one.
muscle tissue, like a good a steak, which means it takes less time to cook and the breast remains very moist. It effectively self-bastes. Other birds are not kept for as long. They are only reared for 12 to 18 weeks which means they do not reach full maturity and do not develop fully, so do not have the same flavour. KellyBronze are also a game bird which means they need to be hung. We hang them for 14 days which in turn allows the flavour to develop. Their breast meat is creamy-white and the leg meat is much darker and can easily be confused with duck or goose.” The daughter of a hill farmer in the Lake District, Susan realised her dream to raise livestock when she began rearing turkeys 17 years ago. You can taste the difference at Susan’s stall and she will be taking part in the series of free foodie talks at the festival, when she will also provide free tasters. Please see page 22 for timings. You can find more information about Moorgate Farm at www.moorgatefarm.co.uk
Susan explains that not only is the breed more flavoursome than other turkeys, but the way it is reared also makes a difference. She said: “The fact that it is free-range plays a part but it also the fact that is matured to 24 weeks, this allows the flavour to develop. As it matures, the fat moves to the
