Welcome to the essential guide to Towcester Food Festival – packed full of information about the show, including all the key events, details of the fledgling businesses we are supporting, the people who are exhibiting and a full schedule of all the chefs who will be demonstrating over both days. This is the very first Towcester Food Festival – and we hope it will be the first of many: an annual event to showcase the best artisan food and drink made in Northamptonshire and beyond, and a chance for this historic town to come alive. We have deliberately set out to make the festival an event where you can come and spend time: either browsing, enjoying one of the free talks or demonstrations, taking in a food workshop, or simply sitting and relaxing with something good to eat and drink on one of our live music lawns. We have many people to thank for helping to make the first Towcester Food Festival possible. First and foremost are the ‘Festivalmakers’ who have volunteered their time freely to help greet and guide our visitors, and in some cases, plan the event. Then there are the

artisans who have supported us by exhibiting. Towcester Racecourse provides the wonderful parkland setting for the festival and its chief executive Kevin Ackerman is the man who had the confidence and vision to embrace the idea of the food festival in Towcester. There have been lots of amazing moments along the way – two stand out. The first is the phone call from South Northamptonshire Council offering its support as part of a wider initiative to encourage tourism and the local economy. They have been brilliant ever since so thank you SNC. And the second is the moment, after a rather haphazard approach, that William Sitwell emailed, agreeing to open the festival. He could not have been more helpful and kind so thank you William.

demonstrations we have planned for the weekend; listen to Sulgrave Manor’s Meg the Cook talk about Tudor food; see how to make truffles or string sausages - all laid on free - or book yourself on to a cooking class. There are classes for kids and for adults at the show.

As well as lots of tasty samples, there will be a street food market, where, among other things, you can try one try one of Becky’s Bhajis or sink your teeth into some slow-cooked, smoked beef, which has been lovingly reared by people who also cook it. The festival is just like a good meal – it should not be hurried. It is a place to come, spend time and indulge.

Did you know there are three commercial vineyards in Northamptonshire, two of whom make sparkling wine? In celebration of the county’s wine makers, there will be a Northamptonshire Bubbles bar at the festival, where you can also find a G&T made with gin from Northants. And as if that isn’t enough, there will also be a Pimm’s tent, two real ale bars, a real cider bar selling each of the four ciders made in Northamptonshire (I’ll say that again, four ciders from Northants!), cider from Milton Keynes and two wine stalls.


Parking If you’re driving to the festival, Towcester Racecourse has ample parking and parking at the festival is free. Your car will be quite literally right on the doorstep so you can easily come and go to stow your purchases. If you’re not coming by car, there will be a bag creche where you can safely leave your items and collect them later that day.

Masterchef Masterchef judge and food critic William Sitwell will be at the show on Saturday. He will do a live Q&A on Saturday morning with Guardian journalist Mark Lawson and in the afternoon will give a talk entailed ‘Foodie History: 4000 years of food in 3000 seconds’, featuring vignettes from his acclaimed

book ‘A History of Food in 100 Recipes’.

In Towcester We won’t be hogging all the fun to ourselves at the racecourse. We want Towcester to come alive during the weekend of the festival on June 7 and 8. There will be a Real Ale Trail around the town’s hostelries (See page 33). There will also be a fringe street food market beside the River Tove at Towcester Mill. From lunchtime, enjoy some Mexican street food from Hungry Toad’s truck. In the evening, the Hungry Toad will be joined two traders from the festival selling wood-fired pizza and gourmet hot dogs.

The Tart of the Town

Yorkshire has its puddings, Bakewell has its tarts and Towcester has its, erm, Cheesecake. Not the traditional kind you understand, ie the sweet tart made from cream and soft cheese that comes on a biscuit base. What would be remarkable about that? No, the Towcester Cheesecake is all together different. Based on a traditional Yorkshire curd tart, it is made according to a secret recipe and contains sweet curd cheese nestling in a flaky pastry case. It was first made in Towcester during the first half of the last century in a bakery run by a man called Ward. The bakery was later turned into a pub which still stands today and is now the Pickled Pig, run by a nice chap called Allen O’Shea. The old bakery was bought in 1949 by a certain Percy Adams, the grand daddy of today’s Oliver Adams bakery chain. He was a canny chap was Percy and he kept Mr Ward’s recipe for Towcester Cheescake a closely guarded secret. It remains just as tightly guarded today and the Towcester

Cheesecake is sold in just three places in Northamptonshire, two of them in Towcester: the Oliver Adams bakery; and the Dolphin Café run by Cate Casey. Cate was carefully vetted by the Oliver Adams team before she was allowed to sell the town’s eponymous delicacy. She said: “It was a very thorough going over – it was touch and go whether I was going to get the go ahead.”

to add to the party spirit in the middle of town. The Dolphin Café will be one of the venues for the town’s Real Ale Trail (see Page 33) and Cate will be serving up a mouth watering menu of steak, pizza and pie made by hand by an artisan producer in Northampton.

Not even Cate knows the recipe, but it has become a firm favourite in her trendy little town centre café and she will be ordering in extra supplies ready for the festival weekend. The cheesecake is traditionally eaten cold with a strong cup of tea but is also delicious warm with custard. As well as readying herself for visitors during the day, Cate will be staying open late on the Saturday night of the festival

What’s On? Live Music Lawns

Chef Demonstrations We’ve lined up a great series of cooking demonstrations for you, featuring the best local chefs and cooks from within a 20-mile radius of Towcester. These demonstrations are free and will take place over both days of the festival on the main Chef Demonstration Stage, with seating theatre-style for 150. All the chefs will wear microphones and the demonstrations will be streamed live on large TV screens so that you can see every detail of their art. No need to book, just turn up at the right time. Learn from the experts as they share hints and tips about everything from baking bread to making pasta, the best pub grub, Asian cooking and the art of making sausages. For full details of timing and who’s taking part, please see Pages 19-25.

Throughout the weekend, there will be live music on our two music lawns. Each will have its own vibe. One will be an acoustic lawn and the other will dance to the strands of jazz. Sit, eat, drink and lap up the atmosphere. Up and coming singer/songwriter James Gillespie will headline the acoustic lawn on both days of the festival. Soak up the atmosphere with a glass and a bite.

Masterchef judge William Sitwell Saturday will see one of the highlights of the festival – as Masterchef judge William Sitwell is gently grilled by one of the country’s most renowned interviewers – BBC broadcaster, Guardian journalist and author Mark Lawson. The Q&A will take place in the first floor of the Empress Stand at 10.30am on Saturday June 7. Not be missed! In the afternoon, William will journey back in time with his

fascinating talk ‘Foodie History: 4000 years of food in 3000 seconds’, featuring vignettes from his acclaimed book ‘A History of Food in 100 Recipes’. There will also be a chance to buy signed copies of his book. Talk at 2pm in the first floor of the Empress Stand. Horrible Histories Learn about food from days gone by from Meg Fedwelly,


the Tudor chef from Sulgrave Manor, a Roman Centurion from Towcester Museum. Suitable for kids and adults and all free, Meg will tell you how the Tudors ate and make one of their traditional dishes for you to taste. Towcester Museum’s Centurion will tell you about the foods the Romans introduced and show you some of the artifacts the conquering army used in the kitchens. Meg at 11am, 1pm and 3pm. Roman talk at noon, 2pm and 4pm.

SWAN CIC cooking demos Students from SWAN CIC will be showing off their skills during the weekend. Led by their teacher Spencer Fitzgerald, the students will be demonstrating how to make white, milk and dark chocolate truffles, and galletes - buckwheat pancakes with fresh savoury and sweet fillings. Demos every hour from 10.30am on both days. Look out for free samples!

Cookery classes As well as the free chef demos, there are a series of paid for cookery classes for both adults and kids. The kids classes will run over both days and will be led by Juliet Hanson from the Silverstone Food Company.

There are different sessions and kids can learn how to make pasta and decorate cupcakes. Behind the Scenes Tour Enter the world of a National Hunt jockey on our Behind the Scenes Tour of Towcester Racecourse. Follow in the footsteps of AP McCoy – who rode his record breaking 4,000th winner at Towcester footsteps – by visiting the weighing room and stable yard, and see the spot where AP changed for the big race and the stable where his mount was readied. Tours will be lead by a former National Hunt jockey and there will also be the chance to meet a racehorse up in the stable yard. Tours take place on the hour from 11am and cost £3 per person. 50p

Compost Corner Throughout the weekend, a Master Composter will be on hand to provide tips and hints about composting. If you’re new to composting, you can learn how to get started. If you’ve already signed the green pledge, you can find out how to get the perfect mix so you end up with compost just like they sell down the garden centre! As well as a Master Composter from Recycle for Northamptonshire, there will be a trailer from the south Northamptonshire Love Food Hate Waste campaign where you can learn how to save on your shopping bill by cutting down food waste. Chef Demonstration Stage Throughout the weekend, there will be a series of free cooking demonstrations taking place on the Chef Demonstration Stage, featuring the best local chefs and cooks from within a 20 mile radius of Towcester. All the chefs will wear microphones and the demonstrations will be streamed live on large TV screens so that you can see every detail of their art. No need to book, just turn up at the right time. There is seating for 150 with standing room at the back. The chefs will concentrate on using fresh, locally-sourced, seasonal produce to prepare their signature dishes. The chef demonstration stage will be hosted by Katie Johnson from Wot’s Cooking. She will keep you up to date with what is happening on the stage at all times. Katie is a farmer turned broadcaster and writer, who worked as a presenter and

producer for BBC local radio for 15 years. The local chefs and cooks taking part are:

Jane got a ‘proper’ job in a bank in her mid twenties and up

until 6 years ago worked as an Event Manager before taking a few years off, but all along the way cooking and food were always her passion, so following a spot of training at Ashburton Cookery School, she returned to catering. Now Chef/Owner of ‘The Barn’ at Upper Stowe where she has been since May last year and where she serves good home cooked meals, snacks and cakes with all food prepared and cooked on the premises. Beginning his career pot washing and preparing, Jake worked Saturdays for a café/deli in Daventry whilst still at school but once he’d left became an apprentice chef at a local hotel, attending Northampton College one day a week for his NVQ L3. What followed then was full time college studying for his advanced diploma in professional cookery and working for ‘The Narrow boat’ at Weedon where he then stayed before taking a Head Chef position at ‘The Sun Inn’ Kislingbury. 12.30pm: Geoff Woodburn – Real Artisan Bread near Brackley About Geoff: After years of making bread as a passion, it wasn’t until 2013 that Geoff became so fed up with the availability of ‘real bread that he took the plunge and launched Real Artisan Bread. The initial plan was a look at self sufficiency along with bread making, but due to the popularity of the bread being sold, those plans were abandoned and a cottage bakery was created. All Geoff’s bread is made completely by hand, from the mixing, kneading and shaping. He is adamant that the bread making should be a slow process, working with natural ingredients and meeting the criteria of the ‘real bread campaign.’ They have combined this approach with making unique breads using herbs, spices,

About Carmela: Carmela is a local Italian food writer and cookery teacher, offering demonstrations, workshops and classes throughout Northamptonshire. Along with her family – Carmela has four children – her passion making pasta and that is what she will be showing us at the food festival.

About Hao: Hao was born in Vietnam, fleeing the country as one of the original ‘boat people’ in 1979. Following stays in refugee camps, she arrived in Northampton in April 1981 and has lived in the town ever since.

‘Carmela’s Kitchen’ offers delicious Italian cookery classes and demonstrations from handmade pasta, to a variation of sauces, pizzas, risottos - the list is endless and her classes take place either in her family kitchen as well as her local Italian deli, and Cookery Schools in the county. Carmela’s mantra is to cook simple, inexpensive, flavoursome food with good quality seasonal ingredients and watch out for her first cookery book ‘Southern Italian Family Cooking’ which is out later this year. Passionate about her food, Hao loves experimenting with different cuisines, not just Vietnamese but Chinese, Thai, English, Italian and Spanish. She first ran her own Chinese/ fish and chip takeaway at the age of 21 and in 2007 ‘Dang’s Restaurant,’ the first and only original Vietnamese restaurant in Northamptonshire opened its doors, offering traditional authentic Vietnamese cuisine with a modern twist. Now well established in the county, the restaurant holds monthly charity evenings to help raise funds for various local charities and all these events are booked up for the year which gives you an idea of its popularity. The Launchpad Zone At Towcester Food Festival, we are helping food start-ups get off the ground by offering ten new businesses discount places at the festival via our bursary scheme. The Moulton Pie Company (Saturday only) Mark Stevens spent 35 years in the music industry

With his wife Barbara, Mark last year launched The Moulton Pie Company making succulent pies from the kitchen of their home in Moulton in Northampton. The artisan producers have already won plaudits for their pastry covered delights in the British Pie Awards and the Great Taste Awards. The couple are bringing a selection of their sumptuous range which includes traditional pork pies; leek, potato and stilton; and pastrami pies. Mark said: “We are traditional artisan makers and try to use as many home grown or locally sourced ingredients as we can.” All Mark’s pies are made fresh and he can only make enough to provide a stock for one day so he will be at the festival on the Saturday only. www.themoultonpiecompany.co.uk

Gary now makes Northampton’s only cheese, Cobblers Nibble, which is a hard cheese made traditionally by hand with milk from a Northamptonshire Fresian herd. He is also launching a new soft cheese at the show – Cobblers Nibble Gold. It is made from pasteurised cows’ milk and washed in Guilsborough Gold beer from Nobby’s brewery in Guilsborough, Northants, and matured for eight weeks.

Iain Cowan, from Wymington near Rushden, was high-flying project manager with IBM until he was made redundant last year. A life-long foodie, he decided to indulge his passion for making flatbread.

Anne Scott from Daventry spent years working for one of the UK’s largest contract caterers – first as a chef and then in HR - but decided on change when she hit 60.

Under the banner of Replete Flatbreads, he now makes gourmet flatbreads, including naan stuffed with onion bhaji and tomato and chilli chutney, and their best selling Greek Pitta bread filled with spinach and feta.

She said: “I’ve always loved baking. I was helping my mum to bake cakes as soon as I was old enough to stand on a wooden chair. I told myself that when I got to 60, come hell or high water, I was going to do something that I wanted to do.” Anne quit her job and launched Anne’s Home Baking with a stall at the farmer’s market in Rugby. Her gluten free treats cakes, pies, biscuits, buns and other bakes - were an overnight success and she now bakes full time.

The Happy Little Cake Company Vicky Robertson, from Great Billing in Northampton, combines a business in PR with The Happy Little Cake Company. But at the end of last year she had to rethink her cake business when she was diagnosed with coeliac disease. The food festival is going to be a party weekend for Towcester. As well as all the fabulous things that will be going on at the racecourse, the town will be buzzing too, especially on the Saturday evening. Four pubs and the Dolphin Café will be playing host to the Festival’s Real Ale Trail, one of the many firsts for Towcester over the course of the festival weekend on June 7 and 8. Beer + Muffin = Buffin Towcester Food Festival sees the launch of a new gastronomical treat which may come to rival the Towcester Cheescake as the delicacy of the district – the buffin! A savoury muffin made with beer (beer + muffin = buffin), the buffin is the brainchild of Nigel Betts – a beer-lover – and his wife Linda – an artisan baker – who together run The Blakesley Hill Cake Company. Varieties to date include the beer, bacon, cheddar and onion relish buffin, and the pear, walnut and Stilton buffin, both made with ale from the Hart Family Brewery in Wellingborough. Nigel explained said: “We like to use local ingredients and the idea with the buffins is to use real ale made by each of the 16 micro-breweries in Northamptonshire. We’ll create a bespoke recipe which is attuned to the specific flavour of the beer and roll-out a whole series of different flavoured buffins during the year. We’re talking to all the brewers.” (Editors note: We’re sure you are Nigel – this also gives you the excuse to visit every brewery in Northamptonshire. We’re not as green as we are cabbage looking!) Linda launched The Blakesley Hill Cake Company from premises in Greens Norton, Northants, in her spare time last year and this year quit her job as a groom to go full-time. A lifelong and passionate home baker, as well as buffins, Linda makes, delicious, freshly-filled cupcakes, muffins and small celebration cakes. She took the plunge to

launch the business after baking 300 cupcakes for Towcester Beer Festival to help raise money for the local rugby club – and sold out within hours. Linda said: “Baking a few cupcakes for friends and family is one thing but making 300 for the Towcester Beer Festival in 2013 was incredibly daunting but ultimately amazingly satisfying as we sold out and had tremendous feedback!” In the year since it was first launched, the bakery has grown steadily and now sells a wide range of luxury filled cupcakes and muffins, each with a distinctive flavour combination. Linda added: “I wanted my cakes to stand out and my choice of ingredients was central to that. We only use local free range eggs and artisan flour from the Wessex Mill while never adding artificial flavours, colours or preservatives.” Following a number of requests for gluten free products, the range now includes a wide selection for those with coeliac disease. Bag creche! Now, the last you want to be doing is carrying a load of heavy shopping around with you all day long as you snap up a host of goodies from all those yummy food and drink stalls. You know that and we know that, which is why there will be a charity bag crèche at the festival throughout the weekend, where you can leave your shopping and pick it up when you are ready. There is no fixed charge for this service, but you might like to leave a donation as the bag crèche is being run by volunteers from the Towcester Youth Coffee House, nice people who are helping to create a safe refuge for teenagers in Towcester and need to raise £100,000 to

refurbish their premises in Bransons Lane. Towcester Youth Coffee House is just one of the good causes Towcester Food Festival is supporting. We are also helping to raise money for the foodbanks in Towcester and Brackley, and donating to The Injured Jockeys Fund and South Northants Volunteer Bureau.

In January alone, Towcester Foodbank helped to feed 100 families in Towcester. Festival chief executive Crispin Slee said: “The festival is a celebration local food and drink so it seemed entirely appropriate that, as well as other good causes, we should support the two foodbanks in south Northants who help to feed local people.”

The foodbanks are part of the The Trussell Trusts’ UK-wide network. They help to feed people who are in crisis and have no money to buy food for themselves. Barbara Parfitt, the volunteer foodbank coordinator in Towcester, said: “We never cease to be overwhelmed by the generosity of the community in Towcester.”

Masterchef judge W il liam Sit wel l There are some things that Masterchef food critic William Sitwell just can’t abide – hotel windows that don’t open, Morris Dancing (or as he describes it stick wielding country dance) and, as we discovered during the latest series of Masterchef, square plates. It’s not just a mild aversion, the acclaimed food writer and editor of Waitrose Kitchen magazine, downright loathes four-sided tableware. Rectangular plates are equally the subject of his fury. Sitwell, whose fierce TV persona has Masterschef contestants quaking in their boots, spits: “They are an abomination. Food should be served on round plates – with not a right angle in sight!” Northamptonshire’s pre-eminent foodie is calling visitors to join in him in his crusade against square and rectangular plates by staging a ‘Square Plate Amnesty’ at Towcester Food Festival. Sitwell, who lives in south Northamptonshire, said: “If you have square plates, now is the time to cast them out. Bring them with you to the festival, hand them in and we will give them to charity for you.” William Sitwell be at Towcester Food Fedtival on Saturday June 7 to open the festival, tour the stalls and take part in a 45-minute Q&A with one of the country’s most celebrated interviewers broadcaster, journalist and author Mark Lawson.

Big cook, little cook! As well as all the free demonstrations, there is a chance for you to polish your culinary skills by taking part in one of the hands-on adult cookery classes.
