Roast turkey with lemon & garlic Ingredients
5-6 kg oven-ready turkey, neck and giblets removed and kept for the gravy 1 onion, halved 1 lemon, halved (save the zest for the butter) whole bulb of garlic, halved For the salt mix 2 tbsp sea salt 1 tbsp thyme leaves 1 tsp peppercorns For the butter 100g butter 4 tbsp vegetable bouillon powder 1 lemon, zested
Method
Up to two days ahead, make the salt mix by grinding the salt with the thyme leaves. Sit the turkey in a roasting tin and gently push your fingers under the skin, starting from the neck, until you can push your whole hand in down the length of the breast. Take care not to tear the skin. Season the bird all over with the salt mix, inside and out and under the skin. Leave the turkey in the tin, breast-side up, and put in the fridge for up to two days – the longer you salt it, the more succulent the turkey will be. For the crispest skin, leave the turkey uncovered so it dries out, but loosely cover it if you prefer.

Tip the butter, vegetable stock powder and lemon zest into a small bowl and mix until completely combined. Cover and chill. Can be made a few days ahead or frozen, wrapped in cling film, for one month. Remove the turkey from the fridge an hour or so before you want to cook it. Remove the butter from the fridge to soften. Heat oven to 180C/160C fan/gas 4. Work out your cooking time based on 40 mins per kg for the first 4kg, plus 45 mins for every kg after that. Use your hands to spread the butter under the skin so that it covers the entire breast area and work it into the crevice between the thigh and the main body, then smooth the skin over with your hands. Put the onion, lemon halves, and garlic in the cavity. Cover the tin loosely with foil and roast for the calculated cooking time. Around 30 mins before the end of cooking, increase the oven temperature to 200C/180C fan/gas 6, remove the foil, baste the turkey and return to the oven. When the turkey is beautifully brown and cooked through, remove from the oven and leave to rest on a warm platter covered with foil for up to 1 hr. Save the juices from the tin to make gravy.

Turkey balti Make balti paste first. Add the onions, garlic and ginger Ingredients 500g turkey diced 1tsp ground cinnamon ½ tsp chilli flakes 150ml chicken Stock 1 x 400g tin chopped tomatoes 1 chicken stock cube 1 red pepper deseeded and cut into strips 1 yellow pepper deseeded and cut into strips 1 orange pepper deseeded and cut into strips 1 tsp garam masala
to a pan with a little oil and fry for few minutes until onion golden brown.
Transfer to blender and add the remaining paste ingredients and blitz until a paste. Put in bowl and leave to cool down. Place the turkey in a bowl and add 4 tablespoons of the balti paste and mix well. Place in fridge and allow to marinade for at least an hour.
Place large saucepan on medium heat and add a little Balti paste Oil 2 large onion roughly chopped 1cm piece root ginger peeled and chopped 2 garlic cloves roughly chopped 1 tsp ground turmeric ½ tsp dried chilli flakes 2 tbsp smoked paprika 2tsp ground cumin 2tsp ground coriander 1tsp ground cinnamon 1tsp salt ½ tsp ground black pepper 3 tbsp tomato puree

oil. Add the cinnamon and chilli flakes and cook for 2 minutes. If needed add a little more oil then add 4 tablespoons of the balti paste and cook for a further 2 minutes. Then add the stock, tinned tomatoes and stock cube. Stir well and bring to the boil. Turn heat down and add the marinated turkey and cook for 15 minutes. Check turkey cooked then add the garam masala and cook for another 3 minutes. Served with rice of your choice and a sprinkle of fresh coriander.

Whisk the chickpea liquid with an electric hand whisk to form a meringue mixture with soft peaks. Add the sugar in increments, whisking in between each addition. Spoon the mixture onto two tins lined with baking parchment and bake in the over for approximately 150 minutes. Skim the cream from the top of the tins of coconut milk and whisk with the vanilla extract and a little of the clear liquid left in the tin until it resembles whipped cream. Layer the meringue and coconut cream with the berries before decorating with the remaining berries to serve.

Time to say ‘thank you’! Back in 1990, a group called Common Ground initiated ‘Tree Dressing Day’, to take place during the first weekend in December. It was a chance for a whole community to gather and strengthen their relationship with trees. An opportunity to celebrate old customs of tying natural yarns and coloured cloth in the branches and around the trunk of a tree to offer protection and say ‘thank you’ to a tree. This celebration still takes place across UK with many thousands of people taking part in a neighbourhood activity every year. Why not ring the changes this year and decorate your tree with natural objects found in your garden, the hedgerows and woods or use dried flowers this year – keep those artificial baubles and trinkets in the box this year – you might find you like the natural version even better – let me know! But are real Christmas trees better for the environment? The thought of saving one from being cut down might prompt you to buy an artificial tree that you can use year after year – but the big downside to this is that they are made of PLASTIC. The end-to-end production of a plastic tree creates double the carbon footprint of a real tree that ends up in landfill; from the extraction of the oil from which it is made to the emissions produced when the tree is shipped long distance (mainly from China). However, most local authorities now offer a shredding service and then use the shredded chips as mulch in parks and gardens – a truly sustainable way of recycling your real tree.
Around the world environmental activists are campaigning to urge world leaders to take immediate action to reduce global warming. Campaigners, Greta Thunberg and George Monbiot, have helped produce a short video ‘Natural Climate Solutions’ in which a tree is referred to as ‘…a magic machine that sucks carbon out of the air, costs very little and builds itself.’ A single tree can remove 1 tonne of carbon from the air over 40 years. We can all help save our planet immediately by planting more trees! So, at this time of year when we are thinking about buying Christmas gifts for our family and friends, what better present than a tree! Recipe
Cranberry & orange brioche & butter pudding Pour a layer of the custard into the greased dish, sprinkle Ingredients Butter, softened for greasing dish and spreading Brioche bread, around 500g minus the end crusts 600ml double cream Vanilla pod, cut in half & seeds scraped out 75g caster sugar 150g dried cranberries 8 large egg yolks Zest of 2 oranges Demerara sugar for glazing Serves 4-6 1 x ovenproof serving dish Grease an ovenproof serving dish with butter. Slice and butter the bread on both sides, leave to one side. Put the cream, vanilla seeds and pods into a saucepan and bring just to a boil. Meanwhile, whisk the egg yolks and sugar together in a heatproof bowl. Pour the hot cream over the egg mix whisking, then leave to cool a little. Pass the egg custard through a fine sieve and then add the orange zest.

Pre-heat oven to 130 ˚C / GM ½ Place the pudding in the oven and bake for 25-30 minutes until the custard is just set. Remove the dish from the oven and leave to stand for 10 minutes. Sprinkle a layer of demerara sugar over the top and use a blowtorch to caramelise. If you do not have a blowtorch, pop under the grill for a couple of minutes. Change in business can be good If you always do what you’ve always done, you will always get what you’ve always got – sound familiar? Many people have laid claim to this quote including Anthony Robbins and before him Albert Einstein, Henry Ford, and even Mark Twain. Regardless, what matters is the point it makes. If you want to change the end result, you need to change the way you do things. Think of this in the context of setting goals or achieving success. If you do not set goals for yourself, your work or business, you probably meander through life believing the outcomes of your actions are your destiny. For some they achieve success and have no regrets. More often than not, people look back and wish they had made a different decision.
Embrace change
Businesses frequently fail to embrace a culture of change and innovation. Learning and implementing something new can be challenging and may take longer than the “old” way, but if implemented for the right reasons with a clear plan and good supports, any hurdles can be overcome. Conversely they also often do things because they feel they should without stopping to really think about what works for them. For example you may have been using social media and online marketing to promote your business because you feel that that’s the thing to do in a digital age? Is it working for you? If not, why not stop and change what you are doing. Consider putting some print back into your marketing mix. Print marketing is tried and tested. We know what to expect - it’s authentic and trustworthy. But print marketing also faces accusations of being outdated and

expensive. By contrast, digital is fast, accurate and costeffective. But it’s also impersonal, less memorable and intangible; you don’t want your campaign to get lost in the digital clutter of today’s online world. In most cases, it really depends on your businees and your audience. You’ll need different campaigns for different products, and different forms of media will be more effective at targeting different audiences.

The tactile quality of print is proven to give a lasting form of emotional connection, a personal feel which gives printed media an inimitable trustworthiness. Recent studies have shown that potential customers are far more likely to trust your company when your marketing is presented via high-quality print, such as magazines. Gaining trust is a crucial part of any business. Moreover, printed materials can be kept. If you design a good product, your audience may well keep a hard copy, which they can engage with over and over again. Print marketing gives businesses a much higher level of impact than digital marketing can achieve, building more meaningful and long-lasting connections with consumers. So embrace change, set your goals, take the time to plan, welcome feedback and adjust your plan when necessary as you move forward and enjoy your success!

Ingredients 3 tbsp plain flour 1kg (2lb) rump or chuck steak or lean beef, cut into 2cm (¾in) cubes 2-3 tbsp vegetable oil 2 onions, thinly sliced 1 tbsp sweet paprika 1 bay leaf 5 allspice berries, crushed 500ml (16fl oz) beef or chicken stock 2 tbsp cornflour 2 tbsp tomato purée Tabasco sauce Chopped flat-leaf parsley, to serve Sour cream to serve

Method Place the flour in a clean plastic bag. Shake a few pieces of meat in the bag until lightly dusted. Repeat until all the pieces of meat are coated. Heat 2tbsp of the oil in a large frying pan over a medium heat. Cook the beef in batches, adding a little extra oil if needed, until browned. Be careful not to overcrowd the frying pan, as the meat will then steam rather than sear. Transfer to a large casserole dish or lidded saucepan. Fry the onions (adding a little extra oil if needed), over a low heat until tender. Add the onions, paprika, bay leaf and allspice to the casserole and cook, stirring for 2-3 minutes. Pour in the stock (or 500ml water and 1 stock cube) and bring to the boil. Cover the pan and simmer gently over a low heat for about 1 hour, or until the meat is tender. Mix the cornflour with 50ml cold water and add the tomato purée, plus a dash or two of tabasco sauce, to the goulash. Bring back to the boil and simmer gently for about 5 minutes. Garnish with chopped parsley and accompany with sour cream to serve.

Enabling time-poor consumers to make great shopping choices In our monthly look at the work of Red Tractor Assurance, we speak to CEO Jim Moseley about the relevance of farm assurance to shoppers. If busy parents had to list chores they least enjoy, going to the supermarket or placing an online food order for the week would rank quite high for most. Our daily lives are fraught; the school run, work, hobbies, socialising – not to mention the endless life admin that consumes precious hours of downtime. Fitting in a food shop, possibly with children in tow, is not how many would choose to unwind. The key fundamentals of the grocery shop are universal across time and geographies. Shoppers want to feel confident in the safety and legitimacy of the food they buy, have access to choice with good availability and convenience. Then there is the cost. In relative terms, the British grocery shop remains one of the cheapest in the world. Food consumed in the UK is the cheapest in Western Europe costing 8% less than the EU average, according to EU statistical body Eurostat. Yet the Office of National Statistics tells us the average UK family of four has just £60 a week to feed their loved ones. That’s precious little to enable the millions of shoppers across the country who want to buy local and support British farmers and producers, or to source the high-end artisanal products they might choose if money was no object. A middle ground is essential; products which are still farmed with extreme care and are safe to eat,

but affordable for all. Jim Moseley, CEO of Red Tractor Assurance, has sympathy for consumers who face a mind-boggling array of well-marketed products designed to reassure shoppers that they are making choices that satisfy their consciences. Small Business Saturday – 7th December Small Business Saturday launched in the UK in 2013. It falls on one of the busiest shopping days each year, the first Saturday of December. It’s designed to encourage customers to spend their money in independent, local businesses rather than big high street chains. Small Business Saturday UK is a not-for-profit, grassroots campaign, which exists to support, inspire and promote small business. The campaign encourages businesses to promote themselves and work with other small businesses, and consumers to ‘shop local’ and support small, independent businesses in their communities.

Best foot forward - Hellidon pub circular walk Northamptonshire offers a surprising variety of landscapes from the rolling hills in the north, to the scenic vistas and amazing woodlands in the south. If you add the Grand Union Canal with its many towpaths, quaint little villages that are secreted in history it is no wonder that they call this county the “Hidden Cotswolds”. HELLIDON PUB CIRCULAR WALK Distance: 4.3 miles / 9.5k steps Duration: Approx 1.5 hours Difficulty: Easy to moderate Dog friendly Download this walk, complete with turn by turn photos at: http://www.adventuregeek.co.uk/ag12 Hellidon & Catesby are both lovely villages riddled with quaint cottages, a church, an old post office and a lost vineyard. Sitting in the Red Lion Pub front garden you will see a white rounded building on the hill in the distance. Windmill vineyard is no longer in operation, but in years gone by a shop was on the ground floor of this splendid converted windmill which was originally built in the 18th Century. It was converted into a dwelling in 1978. We hope you enjoy this walk. There is a real mix of terrain, views, a mini-workout, fauna, wildlife, history and you may encounter a few cows along the way. Make sure that you have plenty of water with you as we guarantee that you will want a drink after a long climb up towards Catesby. THE ROUTE: Starting at The Red Lion Pub, Stockwell Lane, Hellidon, exit the car park and turn right. You will continue along Stockwell Lane for a while. Take time to admire the fabulous window boxes, and gorgeous thatched cottages that are along this route. As you take the bend to your

right you will pass a red telephone box on the right and you can spot the church on the hill to your left (up the steps). You are now heading out of the village and shortly you will spot a well / cast iron pump to your right. Continue on the path until you reach a fork in the road, take the right fork into Catesby Lane. The walk will lead you along a track for approximately one mile. You are in for a treat as the views are amazing and within half an hour the fantastic Clock Tower bed & Breakfast will appear to your left. Did you know? The delightful Clock Tower building comprises part of a stable-yard built in the 1850’s. At the crossroads, continue straight ahead, whilst looking for the footpath sign on your right. Take a moment to admire the way in which the trees have been planted here and you are transported right back to Downtown Abbey days! Turn left at the end of the field following the signs for the Luxury Dog Hotel, although you will be turning off onto another footpath before you reach this unusual place. Once you have walked along the well maintained lush green footpath, admiring the ponds to your left and your right, brace yourself for a workout! The path is just about to get interesting as you follow the roller coaster path, while dodging the badger holes and climbing uphill. I urge you to stop at least once on this climb as the views behind you are spectacular. You have now entered the quaint village of Catesby. At the T—Junction, turn left then take care when crossing the

The sign of the byway is hidden in the trees to your left. You will now cross a series of fields, many of these may have livestock. As mentioned, the downloadable walk has step by step instructions, which includes pictures of each gate you need to cross through these fields. Eventually, you will exit your last field and walk through a farm which is on the public footpath. This path brings you out onto the main road which will take you back to The Red Lion for a well-deserved drink in the pub. As a reminder, please walk on the right hand side of the road with exception to the bends – it is wise to cross the

Seasonal recipe
Roast pumpkin and swiss chard risotto Ingredients 600g pumpkin 4 tbsp olive oil 1 tbsp maple syrup 1 pinch cinnamon powder 50g flaked almonds, finely chopped 225g leeks, trimmed and finely chopped 250g arborio rice 100ml vegetarian dry white wine 1 litre vegetable stock 150g swiss chard 1½ tbsp single cream Total time required 45 mins Preparation time: 15 mins Cooking time: 30 mins
Method Cut the pumpkin into quarters, peel and de-seed. Then cut into thick slices/segments (approx 12-15cm) and place in a roasting pan. Mix together 2 tbsp oil, maple syrup and cinnamon and drizzle over the pumpkin. Roast for 25-30 minutes until tender, take out of the oven and cut into large dice. In a small frying pan heat 1 tsp oil and lightly toast the almonds until golden. Set aside. Heat the remaining oil in a large frying pan and sautĂŠ the leek until soft. Add the rice and stir until the grains are

well coated and slightly golden. Pour in the wine and stir until it is absorbed. Add one ladle of hot stock and simmer until absorbed. Repeat. After 10 minutes add the chard and let wilt. Continue to add stock at intervals and cook until absorbed into the rice (you may not need all the stock). Season well with salt and pepper. Once rice is tender but still very slightly al dente, add the cream and cook for a further minute before adding the pumpkin. Remove from heat, cover and rest for 2 minutes. When ready to serve sprinkle over the roasted almonds and a squeeze of lemon juice Serve the soup in bowls and garnish each portion with a poached egg, a scattering of croĂťtons and herbs, and a drizzle of the remaining rapeseed oil.

Remembrance Sunday Every year, the British Legion calls on the nation to unite in commemorating Remembrance Sunday. On Sunday 10 November 2019, the National Service of Remembrance will be held at the Cenotaph on Whitehall, London. Starting at 11am, the service will commemorate the contribution of British and Commonwealth military and civilian servicemen and women involved in the two World Wars and later conflicts.
Remember and honour Every year the nation unites to make sure that no-one is forgotten and to remember and honour those who have sacrificed themselves to secure and protect our freedom. Numerous cities across the country dedicate a day to distributing poppies and getting the public involved through activities and entertainment. Apple, cranberry and cinnamon scones A delicious way to use up leftover cranberry sauce! Ingredients 375g Self-raising flour 65g Unsalted butter, diced and fridge cold 65g Caster sugar ½ Braeburn apple, grated 1 tbsp Cranberry sauce 150ml Milk Squeeze of lemon juice

Method The first thing you need to do is to sour the milk with the lemon juice, the reason we are souring the milk is to help the chemical reaction with the baking powder that is in the flour giving you a much better lift thus giving you a lighter scone. Pre-heat the oven to 180°C. Grate the ½ apple including the skin. Sift the flour and the cinnamon together into a large bowl. Carefully rub in the cold diced butter. Add the sugar and the grated apple. Next add your cranberry sauce. Add the soured milk to the mixture and knead lightly. Tip out onto a floured surface and roll to a thickness of 4 to 5 cm. Use a crinkled cutter and cut your scones to the size you require, put on a non-stick baking sheet (I find that if you bunch them relatively close together I get a better lift) brush with milk and cook for about 10 to 16 minutes depending on size.
