GLUTEN-FRIENDLY PLUM PUDDING INGREDIENTS
EVERYONE CAN HAVE THEIR CAKE AND EAT IT TOO!
1.1kg The Source Australian dried mixed fruit 100g dried apricots (roughly chopped) 150g organic pitted prunes (roughly chopped) 1 cup soft brown sugar 1 ¼ cups organic banana flour 2 tsp bicarbonate of soda 1 tbs ground cinnamon 1 tbs ground nutmeg 1 tbs mixed spice 4 tbs oil 250g butter, melted and cooled (or coconut oil) 1 cup brandy (or orange juice) ½ cup any dark berry jam 4 eggs, at room temperature METHOD Place dried fruit, brandy, jam and spices into a bowl. Mix well. Cover and let stand overnight, stirring occasionally. Using extra butter or coconut oil, grease a 10-cup pudding basin. Refrigerate for 15 mins. Brush with butter or oil again then line base with baking paper. Whisk eggs and 250g butter or coconut oil together. Add to the fruit mixture, along with sugar, flour, 4 tbs oil and bicarb of soda. Stir to combine. Pour into prepared basin. Cut two large sheets of baking paper and brush one side with butter. Make a 3cm pleat in the middle to give the pudding room to expand. Place over the top and lock down with the pudding lid or tie tightly around the outside with string. To cook, place pudding basin into a slow cooker and fill three-quarters of the way with water. Turn on High for 5 to 7 hours or until a skewer comes out cleanly. Take care as it will be very hot. To serve, remove from water and let stand for 30 minutes before turning out onto a platter. Use up any leftover panettone in this simple, crowd-pleasing dessert. INGREDIENTS 500g mixed fresh berries 40ml Pedro Ximenez sherry 300ml thickened cream 250g mascarpone ¼ cup icing sugar, sifted 30g melted butter 30g raw sugar ½ panettone, diced into 2cm cubes

METHOD Pre-heat your oven to 200 degrees. Macerate the berries in the Pedro Ximenez sherry. Combine panettone, melted butter and raw sugar in a bowl and stir to coat. Toast in the oven on a baking tray lined with baking paper for 6-8 minutes, then set aside to cool.
Whip the cream to soft peaks, then gently fold together with the mascarpone and icing sugar until combined. Place a spoonfuls of the cream mixture in the base of a large serving bowl. Top with cubes of panettone and drizzle with extra sherry. Next, add a layer of berries. Repeat the process, then refrigerate until ready to serve.
