STYLISH NEW STORE FOR DCC

While everyone at The Village was sorry to see AnnaKat close its doors with Sue Jappy’s retirement after 36 years, we are delighted to announce that Designer Clothing Collection (DCC) will be taking over that space in April. “I am very excited about the new space,” says store manager Tania Ali. “It’s a bigger shop with a better display and we have a modern concept that our customers will love.” Fans of AnnaKat need not worry as DCC will also stock many of your favourite brands in the new store on Level 2. In fact, DCC will have around 15 new brands for Autumn 2017, including Basler, Gerry Weber, Lauren Vidal, Elisa Cavaletti, Faber and Luisa Cerano. Among the other major labels to check out for Autumn 2017 is an exciting new collection from Verge at The Designer Edit, Marc Cain and Ilse Jacobsen at Red Pearl, Mela Purdie at Adrienne & The Misses Bonney and the new Camilla and Viktoria & Woods range at Designer Forum.

A LOCAL FAMILY MAKEOVER! Mother’s Day is coming up… but any time is a good time for a bit of makeover fun at The Village.

NEW LOOKS TO TRY & LOVE Whether there’s a special event on the horizon or you feel like trying out a new look ‘just because’, The Village has got you covered. With so many stylish options at the centre – from Adrienne & The Misses Bonney to Diamond Studio, Leisure Shoes, Sweet Thing, Boffa Hairdressing and more – there’s something for every age group. To prove it, we took a local family and did just that – gave them a makeover to remember! This beautiful St Ives family has a long history at The Village that stretches back over 45 years. “We arrived in St Ives from Hong Kong in 1970,” says Jane Lee, aged 63. “Back then there were just five Chinese families in the area – now there are so many I can’t believe it!” Jane is one of nine children, so The Village has had plenty of business from the Lee family over the years, and even now Jane calls it her second home. She loves taking her grandaughter, four-year-old Grace, to kids’ workshops on a Monday and Jane regularly meets her friends, who are also

caring for grandkids, for breakfast and afternoon tea at Top of the Green and The Market Room. “It’s very different from other centres. I love the shops but also seeing friendly faces everywhere. When my mother passed away, I had so many retailers offering their condolences.” Likewise, Jane’s daughter, Janet, is a big fan of The Village and has been going there since she was born – literally! “One of my favourite memories is heading up to The Village after school and getting hot chips from the butcher for a dollar,” Janet says. “I also worked in pretty much every café when I was at uni. “These days, we spend waaay too much time in Kidstuff with Grace and Mackenzie, my son who is about to turn one. I love the homewares stores like Sorrento and Plenty and do my weekly shop in Harris Farm, Deli Hub and Sutcliffe Meats, among others. But beyond the shopping, The Village is a bit of a social hub for us and a great central meeting point for friends.”

CULTIVATING CREATIVITY St Ives Shopping Village has a long history of working closely with the community and supporting creative endeavours BY KAREN PORTER

There aren’t many shopping centres that can claim to be 40-year veterans as patrons of art, but St Ives Shopping Village makes that claim, loudly and proudly. The Village began their relationship with the Ku-ring-gai Art Society (KAS) in 1976 when the shopping centre became the dedicated gallery for the exhibiting artists’ work. “By being able to display the works of our exhibiting artists three times a year in a venue that has a high volume foot traffic, we have a very high success rate with sales and artist awareness,” says KAS President Charmaine Phillips, who is a successful botanical artist. The Gallery runs from The Living Room Café all the way up to the Post Office on Level 2 providing KAS with clear white walls and purpose-built tracking to display their artwork, and provides shoppers with the opportunity to view a high-quality art exhibition free of charge.

Not content with hosting three exhibitions a year, centre manager Amy Edwards looked for other ways to use the space. “The gallery gives us the opportunity to really connect with the community on so many levels and I really wanted to support the younger artists in the local area,” says Amy. “With this in mind, the centre has embarked on a comprehensive youth art program encompassing school exhibitions, special curated exhibitions and the new St.Art Gallery competition. The 2016 Year 12 Major Works exhibition, which ran through January, was a great success involving students from six local high schools, including St Ives High School. “The parents and students were very proud to see their work exhibited at St Ives Shopping Village,” says Patricia Geddens, relieving Head of Art at St Ives

CREATIVE High School. “It provides students with a real experience of seeing their work open to the public, some for the first time.”

“The Gallery lets students experience the thrill of seeing their work open to the public, some for the very first time.”

“Students need a rounded education to provide creative and critical thinking, and art allows them to develop this.” Julia Hemens, a 2016 graduate from St Ives High School, was featured in the Major Works exhibition. “Being involved in the Year 12 Major Works exhibition was great. You put so much time and effort into your work over a 12-month period and then it gets sent off to markers, usually never to be seen again,” she enthused.

The Village’s other major art initiative, St.Art Gallery, was launched in February. The quarterly art competitions give local students the opportunity to enter their masterpieces, created to a specific theme, to win prizes. Craig started in the butchering industry over 40 years ago, working in a meat factory in Wollongong when he was just 15. He fell in love with butchery and became immersed in the industry, learning as much as he could. He wanted to provide people with a betterquality product, but the issue he found was that the quality of the meat wasn’t consistent. “I found I could open these wonderful butcher’s shops and serve people, but I couldn’t guarantee the quality of the meat,” says Craig. “So, my wife and I made the decision to buy a farm in the Southern Highlands.” In 2004, they chose the location of their farm “Tova” for three very specific reasons. “We chose the property because it was close to the abattoir to alleviate any trauma to the cows, because of the lush countryside and because of its proximity to Sydney,” he says. Craig’s goal was to create the perfect piece of grass-fed beef. He consulted with biodynamic farmer, Graham Forsyth, on how to prepare and maintain the soil, grass and water for the cattle. “We didn’t specifically want to be a biodynamic or organic farm, but we wanted to be natural farmers. Our commitment to natural farming has led to us being global suppliers for the Paleo diet.”

To keep up with his growing retail business, Craig began to work with local farmers who had land, products and values that aligned with his own. He brings them together to supply his customers with a range of top-quality products that meet his standards and requirements. “I found there were situations where people had invested in farming property who didn’t have a background in the industry. I was able to share my expertise, help them develop their investment and have the confidence that we were supplying our customers with a consistent quality product,” he says. His philosophy of “paddock to plate” runs throughout his entire product range, including ham and bacon products that are low in nitrates, sausage products that are gluten and chemical free, and his commitment to humane and ethical farming practices. However, the most popular meat is still beef and Craig’s pick for Easter is a standing rib of dry-aged beef. “Roast the joint in a very hot oven as per your butcher’s recommended cooking time then, 15 minutes before it’s finished, baste with seeded mustard and melted honey. Serve with small roasted baby sweet potatoes and pumpkin and a fresh salad so that the meat can speak for itself.”

Shopping List Romeo’s SUPA IGA For the egg 175g milk chocolate (broken into pieces, plus extra for decorating 50g Rice Bubbles cereal To decorate 2 x 50g bags chocolate mini eggs 2 white chocolate buttons 50g golden marzipan 25g white chocolate (broken into pieces, plus extra for decorating, melted and cooled a little) Special Equipment (Most found at Plenty Kitchen & Tableware) Two chocolate egg moulds, piping bag, rolling pin, flat pastry brush or small paint brush. 1. Break the chocolate into pieces and gently melt in a heatproof bowl over a pan of simmering water, making sure the bowl doesn't touch the water. Stir until smooth, then take off the heat and stir in the Rice Bubbles mixing well to coat. Spoon half the mix into one of the moulds, then use the back of your spoon to press it into a thick, even layer. Be sure to cover the whole of the inside, leaving a thick edge. Repeat with the other mould and leave in a cool place to set. Put the moulds in the fridge for 5 mins.

RECIPE MAKES One Choc Chick

TIP: Putting the egg in the fridge once the chocolate has set makes it easier to add another layer. Don’t be tempted to leave the moulds in the fridge too long; the chocolate will discolour. 2. Carefully unmould the eggs. Fill one half with mini eggs, and then fix the halves together with melted chocolate. Patch any holes, and then leave to cool.

3. To make the eyes, paint blobs of melted milk chocolate onto the white chocolate buttons. Fix onto the egg using a little more chocolate. Spoon the white chocolate into a small piping bag, then pipe a beak and wings onto the egg. 4. For the feet, roll out the marzipan on a sheet of greaseproof paper to about ½ cm thick. Using a knife, cut out two feet, making them large enough for the egg to sit on. Once the egg has completely set, place the chick on its feet, pressing down so that it stays upright. Finish by scattering some mini eggs to create a nest.

Shopping List Romeo’s SUPA IGA FOR THE SPONGES 2 cups self-raising flour, sifted 1 tsp baking powder ½ cup cocoa powder 1 cup margarine, softened 1 cup golden caster sugar 4 large eggs 1 tsp vanilla extract ½ cup dark chocolate, melted and cooled 75 ml whole milk FOR THE CREAM 500 ml whipping cream ⅔ cup icing sugar 1 tsp vanilla extract FOR THE GANACHE 1 cup dark chocolate, chopped 2 tbsp unsalted butter, cubed 2 tbsp Golden Syrup To serve 4 cream-stuffed chocolate sandwich biscuits, cut in half 1. For the sponges: Preheat the oven to 180°C (160° fan) gas 4. Grease and line three 23 cm springform cake tins with greaseproof paper.

2. Combine all the ingredients for the sponges, apart from the milk, in a large mixing bowl. Stir a few times to roughly combine before beating with an electric whisk until smooth, 3-4 minutes. 3. Add the milk and beat again until thoroughly incorporated. 4. Divide the batter evenly between the prepared cake tins. Smooth the tops of the batter with the back of a damp tablespoon. 5. Bake for about 25-35 minutes, rotating the tins after about 15 minutes. When ready, they should be risen and springy to the touch. Remove to wire racks to cool. 6. For the cream: Combine the cream, icing sugar, and vanilla extract in a large mixing bowl. Whip until softly peaked. Cover and chill until needed. 7. For the ganache: Combine all the ingredients in a heatproof bowl. Set it over a half-filled saucepan of simmering water, stirring occasionally until melted. Remove from the heat and put aside to cool.

8. To serve: Turn out the cooled sponges from their tins. Place on on a cake stand or platter and top with half of the whipped cream. 9. Sit the second sponge on top, pressing down gently. Top with the remaining cream, and then the third sponge on top. 10. Pour over the ganache, letting it run down the sides of the cake. Decorate with the biscuits on top before slicing and serving.

HOW TO MAKE SPAGHETTI GAMBERI COOKING TIME 10 Minutes

Lifting things incorrectly puts a major strain on your back and we regularly see people who are in pain because of a poor lifting technique. Here is the correct way to lift: Stand with your feet shoulderwidth apart, and bend at the hips and knees. Grip the load firmly

and hold it close to your body, tightening your stomach muscles and using the strong muscles of your legs to lift. Always keep your back as straight as possible, and gently breathe out. Avoid twisting – turn by using your feet and not your back.
