David Taylor When you speak to David Taylor, two things are immediately clear about the 19-year-old: his dedication and his gratitude. David, a former student of Knox Grammar, credits his path into music to his Year 7 music teacher. His teacher invited him to perform in front of his 300-strong cohort, a daunting prospect. “Luckily, my year group was extremely supportive, and at the end of my two songs, I received a standing ovation. This was a moment I will never forget, and was truly a defining moment in my life as it made me want to pursue music as a career.” Singer, Songwriter, Young Citizen of the Year 2017

David became involved with KYDS, a youth development and support centre, when he was in Year 10, writing
two songs, Pick Yourself Up and Take Pride, both making the iTunes Australia top 10. He donated 100 percent of the profits from these songs to KYDS. In recognition of his commitment to mental health, David was nominated for 2016 Australian of the Year and was awarded 2017 Young Citizen of the Year by Ku-ring-gai council. David released his first album in October 2016, Thoughts Then Reality, produced by ARIA-nominated producer Peter Holz, and completed his first Australian tour. He is now splitting his time between Australia and the US, where he is working on a potential US tour and collaborating with other award-winning writers on his second album. And he’s not even 20 yet!

Tiffany Thomas Kane While most 11-year-olds are thinking about the transition to high school, Tiffany Thomas Kane had something much bigger in her sights – the Rio 2016 Paralympics. When Tiffany was born with hypochondroplasia, a developmental disorder causing short stature, her parents were told by her specialist that swimming would be a good sport for her. Little did they know that Tiffany would take swimming to the next level! Turning 15 during the Games, she was the youngest member of the Australian Paralympic team in Rio. “It felt amazing [to be selected for Rio] and after all the training and gym sessions and hard work, it was a relief to make it to the team.”

And as well as making the team – a feat in itself – Tiffany won gold in the 100m breaststroke, setting a Paralympic record, as well as three bronze medals. In recognition of her talents, she was awarded the Order of Australia Medal, something she was “honoured” to receive. While her school, Ravenswood, has supported her by providing schooling around her swimming, Tiffany will focus more on her schoolwork for the next two years as she prepares for the HSC. But she still has her sights set on representing her country at more Paralympic Games and other even, including the 2017 Para World Swimming Championships in Mexico this October, before pursuing a career in sport.
Artist-in-Residence, St Lucy’s School
Marci Ordonez Marci has always had an interest in art, coming from a family full of artists and artisans. She became an artist just under 15 years ago after studying art at Sydney College of Arts, The University of Sydney. Almost a year ago, when the incumbent artist-in-residence at St Lucy’s School left the post, she was invited to apply for the role. She remembers feeling like she was home the first time she went there. “Art is about showing what you’re feeling, about the process and the peace, and being able to communicate in a different way. This is true for our students – where they don’t have words, they can
communicate in a different way.” Marci’s other role is working with Reverse Garbage, a reuse depot in Marrickville, where she works with school groups on creative projects that help them learn about ways to protect our environment. In her spare time, Marci uses her artistic talents and know-how to help a number of community groups, including a group of amateur artists who she helps showcase their works and secure exhibitions. Shopping List Romeo’s SUPA IGA 1.6kg whole chicken 20g butter, chilled, thinly sliced 2 thin slices orange 2 red onions, sliced thickly 2 stalks celery, cut into 3cm lengths 2 small carrots, cut into 2cm-thick rounds 200g button mushrooms, halved 4 cloves garlic, smashed 2cm piece ginger, thinly sliced 2 star anise 2 tsp pink peppercorns ½ orange, cut into wedges 500ml chicken stock 250ml water 1 tbsp soy sauce 2 tbsp Char Siu sauce* TO GARNISH Black sesame seeds Coriander sprigs
SKILL LEVEL Intermediate
METHOD 1. Preheat oven to 180°C (160˚C fan, gas 4). Using fingertips, separate chicken skin from flesh. Insert butter and orange slices under skin. 2. In bottom of a large, heavy-based, ovenproof saucepan with lid, arrange onion, celery, carrots, mushrooms, garlic, ginger, star anise, peppercorns and orange wedges. Sit whole chicken on top of vegetables and pour over stock, water and soy sauce. Cover with lid and roast for 1 hour 20 mins. 3. Remove from oven and brush Char Siu sauce over chicken. Return uncovered pan to oven. Cook for 20 mins or until chicken is cooked through and skin is golden and sticky.

Lan Yuan serves up a true taste of China with a menu that’s made to share Lan Yuan has been part of The Village for less than a year, but the combination of casual yet sophisticated dining and delicious ‘social’ cuisine has made the restaurant a firm favourite with locals. Lan Yuan offers an extensive menu, and Village Life asked manager Thomas Leung to pick out a few dishes that make for a great shared experience. “Well, 75 percent of our customers order our steamed pork xiao long bao dumplings, so you can’t go wrong there,” Thomas says. “Hakka steamed chicken with ginger and spring onions [pictured above] is a very popular dish, and a whole steamed barramundi with ginger shallots [right] in the centre of the table is a sight to behold. And if he wants to wow, he rolls out a stunning paella for a sure-fire hit. “Make sure that you work with only super fresh produce,” Jason says. “Our team hand-selects at the markets each day, and we simply do not compromise on quality.” Head up to Level 2 where Jason and his team are happy to offer tips on cooking seafood, which include using the right tools for the for the job. “It’s very important to use a flat, wide pan with a thin base for paella. 1. Combine wine and saffron in a pan over low heat and bring to a simmer. 2. Heat oil in a large paella frying pan over medium heat. Add onion, capsicum and garlic, and cook, stirring, for 5 mins. 3. Add the tomato and paprika and cook, for 1 min. Add the rice, stock and wine mixture and bring to the boil. Reduce heat to low and cook, uncovered, for 15 mins. 4. Add scampi, squid, mussels and clams and push lightly into the rice mixture. Cook, covered, for 5 mins. Add the peas and cook, covered, for a further 2 mins, until clams open. 5. Remove from heat. Sprinkle with parsley. Serve with lemon wedges.
