WINE PAIRING Steve Dinnell & Mal Higgs from Porters Liquor match wine to your food Steve and Mal from independently-owned Porters Liquor are both in their element when it comes to planning a family function, as they like nothing more than pairing fabulous wines with delicious food. “I prefer a casual event. Maybe roll out the BBQ if it’s warm, or you can’t go wrong with a nice bit of fish,” says Steve, who was recently named Liquor Store Owner of the Year. “I’d recommend a good Chardonnay with fish to bring out the flavours.” While Mal tends to go for more of a two-course “casual and fun” sit-down lunch for his family, he agrees that getting some advice around matching the food and drink is crucial. “These days it’s not always about red meat/red wine and white meat/white wine,” shares Mal. “It’s important to know the style of food being served. For instance a light Asian dish with red meat wouldn’t suit a gutsy red. You might go for a Riesling or a lighter red like a Pinot Noir.” Steve believes that people are interested in trying many different wines, which is where dealing with an expert pays off. And don’t forget drinks like beer, Aperol Spritz and Seedlip non-alcoholic spirits for those not into wine.

Janelle Neal from Bed Bath N’ Table talks table settings As manager of Bed Bath N’ Table, Janelle sees many of the St Ives residents still going for the traditional roast for a family gathering, but there are plenty who put on a more casual affair. “Personally, I do put a roast beef on when I get my immediate family together,” Janelle says. “It’s a very Australian spread with meat, veggies and salads. It’s not a big gathering as my husband is from Canada and has no family here, and I’m a country girl. I grew up on a farm in Coonamble. So it’s just us and my two daughters.” As for creating a look for the table, Janelle is spoilt for choice working in Bed Bath N’ Table, and likes to keep things simple. “I’m a big fan of basic, neutral tones,” Janelle continues. “I really like the Hamptons look, and the Sienna range in store is perfect for that. However, we stock a huge range of Easter merchandise if you want to go with a seasonal theme. every Easter Sunday, and a lengthy Easter egg hunt is still a big part of the day,” says Signe. “All the kids get involved, even my oldest who is now 21! These days though, I only take a few eggs, along with an Easter gift. My nieces, who are 10 and 5, love Beanie Boos (plush toys), so I get them the latest one.” Like Signe, many of Kidstuff’s customers are also looking for a chocolate replacement at Easter. “We sell quite a few dinosaur eggs, funnily enough,” Signe continues. “You put them in water and they hatch a dinosaur. SERVE THE FAMILY A STUNNING SEAFOOD PAELLA FOR SOMETHING A LITTLE DIFFERENT THIS EASTER If your clan love their seafood, then why not serve up a paella this Easter? There’s a delicious recipe below, but the beauty of paella is you can throw in anything you like. Buen provecho!

SEAFOOD PAELL A Serves 4 Shopping list: Sydney Fresh Seafood (inside Harris Farm Markets) and Coles

CREATE A CL ASSIC If you enjoy a traditional Easter spread, then ask the team at Sutcliffe Meats for the perfect cut for a table roast like the mouthwatering spread on page 21. “For a great roast, we have easy-to-carve legs that are very popular,” says Pantelis Petroulias from Sutcliffe Meats. “Or, if you’re looking for something a bit different, USA-style pork ribs are perfect for a casual barbecue gathering.”

20-24 raw shell-on king prawns 2 tbsp olive oil 500g firm fish fillets, cut into chunks 1 large onion, finely chopped 500g paella rice 4 garlic cloves, sliced 2 tsp smoked paprika 1 tsp cayenne pepper (optional) pinch of saffron ½ x 400g can chopped tomatoes (save the rest for the stock, below) 500g mussels, cleaned 100g frozen peas 100g frozen baby broad beans handful parsley leaves

For the stock:

1 tbsp olive oil 1 onion, roughly chopped ½ x 400g can chopped tomatoes 6 garlic cloves, roughly chopped 1 chicken stock cube 1 star anise

METHOD 1. Peel and devein prawns, set aside. Reserve heads and shells.

2. For the stock, heat oil in a large pan over a mediumhigh heat. Add onion, tomatoes, garlic and prawn shells and heads. Cook for 3-4 mins, pour in 2L of water, add stock cube and star anise. Bring to boil, then simmer for 30mins. Leave to cool slightly, then whizz in a food processor. Strain through a fine sieve.

4. Stir in rice and cook for 30 secs to toast. Add garlic, paprika, cayenne (if using) and saffron, cook for 30 secs. Stir in tomatoes and 1.5L of stock. Bring to the boil, then simmer, stirring, for 10 mins (rice should be al dente). Return fish to pan with the prawns, mussels, peas and broad beans.

3. Heat oil in paella pan. Brown fish for a few mins each side, set aside. Fry onion for 4-5 mins until softened.

5. Cover with foil and cook on low for 10-15 mins until mussels open and the prawns are cooked. Scatter over parsley to serve.

The right pan for the job

Paella literally means ‘frying pan’ in Valencian. You’ll need quality cookware to create the perfect dish. Plenty Kitchen & Tableware can steer you in the right direction with a choice of both enamel and carbon steel. “With enamel you don’t need to season the pans, but you do with carbon steel to keep them in top condition and prevent rusting,” says Tiffany Herbert from Plenty.
