Hot Cross Buns METHOD

Heavenly homemade hot cross buns for Easter

1. To make the dough: Heat the milk in a pan until hot but not boiling. Remove from the heat. Add the butter stir until melted. When the liquid has cooled to tepid, beat in the egg and half the orange zest. 2. Mix the strong flour, yeast, ½-1 tsp salt and the sugar in a large bowl. Pour in the liquid and stir to make a soft dough. Knead for 5-10 mins on a floured surface until smooth and elastic. (You can use a mixer with a dough attachment if you have one.) Oil a large bowl and place the kneaded dough inside it, then cover with oiled cling film. Leave in a warm place for an 1 hr or until the dough has doubled in size. 3. Place the raisins and half the orange juice in a small pan and simmer gently for a few minutes. Allow to cool completely. Mix the cinnamon with 2 tbsp sugar and the remaining zest. 4. Turn the risen dough onto a floured surface and press it out to a large rectangle, a little bigger than A4 paper size. Scatter it evenly with the drained raisins, and cinnamon-sugar mix. Roll the dough around the filling, then knead it well for a few mins until the fruit and spices are evenly spread. 5. Grease and line a large baking sheet with baking parchment. Divide the dough into 12 bun shaped pieces making the top as smooth as possible. Place smooth-side up on the sheet, leaving room for rising. Cover loosely with oiled clingfilm and leave in a warm place for 40 mins or until the dough has risen and doesn’t spring back quickly when prodded gently. 6. Meanwhile preheat oven to 190°C/170°C fan/gas 5. Make the paste for the crosses by gradually stirring 6-7 tbsp water into the plain flour to make a smooth, thick paste, then put in an icing bag or small plastic food bag then snip off the corner to about 5mm. Pipe the crosses, then bake for 20-25 mins until the buns are risen and dark golden brown. 7. Mix the remaining orange juice with the remaining sugar and let it dissolve. Brush the syrup over the buns while they are still hot, then leave to cool. Eat on the day of baking or serve toasted the next day.

Billingshurst Weald Probus Club A social club for retired or semi-retired men with a professional background

T

he purpose of the Billingshurst Weald Probus Club is to make friends and enjoy ourselves together. We meet monthly on a Thursday morning at the Billingshurst Centre, Roman Way, to socialise over coffee before our meetings, starting with a discussion about club events and plans, and followed by a presentation by an invited speaker. We have dog-friendly walks on the last Friday of each month of about 3 to 4 miles, exploring our beautiful West Sussex countryside. A small team of members organise the walks and check out the food and beer at the pubs where we end up for lunch, and where non-walkers also join the party. Members and partners enjoy outings to places of interest. Planned visits for 2018 so far include a tasting visit to Hepworth’s Brewery followed by a trip

to Architectural Plants, Pulborough, a visit to Leonardslee Gardens, a visit to a medieval house with a display and talk about black powder guns. A visit to a musical at Chichester Theatre is also planned, and a varied programme for later in the year is being developed. Autumn and spring lunches, summer barbecues and fish and chip suppers are arranged each year. A ‘Christmas Social’ is always thoroughly enjoyed. ur Christmas dinner was extremely well attended. This year the Scouts Active Support Unit cooked the dinner for us, as well as their customary serving and clearing away. Between main and dessert, some of the Scouts and guides, who were lucky enough to have been selected to attend the 24th World Scout Jamboree, gave us a little bit of information about their fund raising for the trip which will take place in West Virginia in summer 2019. The raffle followed a quiz, pudding and cheese and then it was time to collect the ruby anniversary glass which has been produced to celebrate the Circle’s 40 years in existence. Colin Nicholson from Hennings got our year off to a great start in January with a tasting of Alsace whites and New World reds, along with all sorts of useful titbits of information. We started with a Pinot Blanc, then a Riesling and finished the first half of the meeting with a Gewurztraminer. All these Alsace wines came in the region’s flute shaped bottle – Colin said this shape of bottle implies ‘sweet wine’ to a lot of people, but at least two of the wines were

quite dry. After the break, New World reds. Argentinean Malbec was followed by Australian Shiraz and we finished with South African. After a quick discussion on cork versus screw cap, it was time to thank Colin for his visit and present him with one of our special anniversary glasses. Despite the flu going round, there was a good turnout for the Wine Circle’s Valentine Quiz. We started with a traditional Valentine wine, a pink fizz. Next came one of the ‘Majestic Loves’ range of wines, a Hungarian Grüner Weltliner, followed by an Australian Sauvignon Blanc. After the break, we moved on to a Cabernet Sauvignon/Shiraz blend. Then a grape new to some of us called Bobal as we tasted Pasion de Bobal and finally another slightly different offering – a sparkling shiraz. Quiz questions range from Valentine trivia, culture, people, food and drink and gods and goddesses. Macmillan Cancer Support Volunteers attend Reception at Buckingham Palace, hosted by HRH The Prince of Wales

acmillan Cancer Support’s Patron, HRH The Prince of Wales hosted a reception at Buckingham Palace on 31st January. The event recognised and thanked exceptional volunteers for their lifechanging contributions to helping people living with cancer. The reception focused on the contribution these supporters have made, and celebrated the vital role volunteers play at Macmillan. Billingshurst Macmillan Support Group are delighted that two members of the Billingshurst Macmillan Group, Terri Ashpool and Pam Goldsmith attended the prestigious event, on

behalf of all in the Billingshurst Macmillan Group, all of which have gone above and beyond their volunteer role. The Billingshurst Macmillan Support Group has been raising money in the fight against cancer for 22 years now and over that time members have made, baked and crafted for numerous events. To date the group are extremely proud that they have raised over £1.2 million, all for local cancer support. Big Deal, Small Talk Dying Matters Awareness Week: 14th-20th May

n event is taking place at Freeman Brothers, Billingshurst High Street on Tuesday 15th May as part of the nationwide annual Dying Matters Awareness Week. The firm recognises that talking about death and bereavement is challenging and this ‘Big Deal, Small Talk’ event will feature the opportunity to get free expert advice on funeral planning, and discussing your wishes with your loved ones. The goal is to create a friendly space for people to ask questions about funerals, with professionals on hand to offer free advice. Although the event is being run in a drop-in format, if you wish to make an appointment to speak to the team regarding something specific, please get in touch. The event will run from 11am until 2pm. In addition, 65% of people said that following the wishes of their loved one was most important when planning a funeral, and with this in mind, having conversations in order to clarify this would seem imperative. Freeman Brothers believes that by having a simple conversation in advance, what can be a stressful time may be eased a little by being aware of your loved one’s wishes prior to their death. Go the extra mile for St Catherine’s Hospice Midnight Walk

S

t Catherine’s Hospice Midnight Walk is back! With brand new walking routes, it’s the ideal chance to make your steps count while raising funds for your local hospice. Taking place in Horsham on Saturday 9th June, the walk, sponsored by Gatwick Airport, is open to everyone aged 10 and over and offers a choice of 7, 13 or 20 miles. It starts at 8pm or 10pm depending on your chosen distance. Wendy Buckingham, 44, from Surrey has already signed up. Last year she took part for the first time with a team of 12 family members and friends. Wendy remembers, “We walked in memory of my husband Ken whom St Catherine’s cared for. The best part was the camaraderie, and the volunteer marshals were amazing, they kept us going. There’s a fantastic atmosphere and the night feels really special. Walking together as a family and having my girls take part for their Daddy was amazing. We can’t wait to do it all again this year!” Nearly 1,000 people walked through Horsham in a spectacular sea of orange last year but St Catherine’s is hoping even more of you will pull on your walking shoes in 2018. The hospice is hoping to raise £125,000 to

help them provide care and support to local terminally ill people when it’s needed most. People like Donald, whom St Catherine’s Therapies Team arranged a walker for, so he could go into town and buy his wife a surprise bouquet of flowers. Louise Brown, Events Fundraiser at St Catherine’s said, “Signing up for our Midnight Walk is something to be proud of. Your support is vital in helping us be there for everyone who needs us, so we hope lots of you will join us in June and help make this year’s Midnight Walk a night to remember.” It doesn’t matter whether you’re walking for the first time, a personal challenge or in memory of someone you love. My name is Shelley Hobart and I am the new unit leader for 1st Billingshurst Rainbows. We are an active unit with our emphasis on guiding being girl lead and linked to our community. We had a fabulous Christmas Party (photo) which was organised by one of our Guides, Lizzie Hunt as part of her Baden Powell award and we had the most fabulous Rainbow cake made by my assistant leader Beth Cossins. We have also been learning to knit with help from our Trefoil ladies and we have recently visited the fire station in the village. Dounhurst Celebrate Thinking Day altogether!

G

irl Guiding Dounhurst District united on 22nd February to celebrate World Thinking Day at Pulborough Village Hall. We started the event with the Rainbows, Brownies and Guides each splitting into three groups to take part in craft activities. The activities were based on countries where the Guiding World Centres are located: India, Switzerland and Mexico. We had Switzerland cross-stitch woggles, Mexican hats and decorated India tiles. The girls were all mixed up so that the Guides were able to help the younger ones; this was fantastic to watch their team work and interaction. We all gathered for food, an international buffet. This was followed by everyone renewing their Promise and each section lighting a candle to think of Rainbows, Brownies and Guides all over the world. Two girls renewed their Promise as Young Leaders and were awarded their Promise badges. I found a lovely reading all about Baden Powell our founder: “With a special remembrance, we take time each year to think of our Founder, with thoughts that

are dear, a man who has inspired us to cherish our dream, a person whose memory is more than a name�. Part Two of our event was a Guide-only silent disco and we invited Fittleworth Guides to join our celebrations. I am firm believer of girl lead Guiding and the playlist of the disco was chosen by the girls. It was a fantastic scene to watch the girls singing and dancing with the ability to swap between two playlists in their headphones. I am sure the leaders had just as much fun as the girls. Overall a truly memorable evening for all those involved to celebrate Thinking Day 2018. Firefighters Charity Car Wash a Success

T

hank you to everyone who supported our charity car wash on 24th March. We can’t thank the community enough for their generosity and a final figure will be announced next month. All money raised goes to our chosen charity ‘The Firefighters Charity’ which supports Firefighters and their families if anyone ever suffered an injury. A few people on station have used the charity for different reasons and can only talk highly of it so the money raised really does make a difference. If you couldn’t make our charity car wash we plan to do it again in September. It’s been a busy start to 2018, with the crews being tested in challenging incidents. I would like to say our thoughts and feelings are with the

family who tragically lost two family members when their vehicle was struck by a train in Barns Green on a Saturday morning in February. We were one of the first on scene and Crew Manager Mike Sussex had an extremely challenging task on his hands but did exceptionally well working with other emergency services. Well done Mike. This tragic incident has been felt by many who live in such a close community. Thank you to everyone who has showed their support to the family. New recruit Andreas has settled in well, Ronnie has passed his first or three assessments and we now have one firefighter Ben Marshall stepping up for a Crew Manager role. A Good Read April’s selection from book reviewer Willow Coby Notes to my Mother-inlaw – Phyllida Law This is one of those deceptive little books that looks like a quick ‘read it and forget it’, but is really much more. At little over a hundred pages, it is indeed a quick read – easily done in one sitting – but the pictures of family life it paints will, justifiably, stay in your memory and affections for some time. The title is a fairly straightforward description of the contents. Law’s mother-in-law, Annie, shared her family home for seventeen years and “was picture-book perfect”. As she was deaf, Law would write her notes with reminders, requests and titbits of gossip every evening before going to bed. In response to her husband’s comment that she could have written and illustrated a book in the time she spent on these notes, she did so, gathering together a series of missives – some long, some short, some sad and some funny. The one-sided nature of the story – we never hear anything of Annie’s replies – means that we fill in the gaps ourselves. The topics range from the mundane – the availability of pearl barley or dusters – to the profound – the death of a family pet. All, however, are tinged with humour, mainly from the chaos of family life and the cast of unseen characters whose many deeds and misdeeds fill the pages. What raises this above the ordinary, however, is the sense of a bygone age. Annie belonged to a past that is gone, having been in service and maintained many of the disciplines and routines she learnt as a girl. The depth of feeling in Law’s relationship with her is palpable, and as Annie

becomes increasingly ill the reader cannot help but feel the sense of imminent loss. Often funny, never sentimental, but truly touching – a wonderful read. How I Live Now – Meg Rosoff I’m really not sure whether to describe this as a children’s book, but certainly if you know a teenage girl of 13 upwards, they will be captivated by it. Rosoff’s debut novel is narrated by Daisy, a 15year-old American sent to England by her newly married father for the summer to stay with her cousins. She is immediately drawn in by this wild and wonderful bunch – Osbert, Isaac, Piper and Edmond – and delighted when Aunt Penn begins to tell her more about the mother she never knew. But, within days, the world changes. A bomb in London may or may not have started a war, and Aunt Penn is unable to return home. Left alone, the children attempt to survive in the best way they can, and Daisy and Edmond fall in love. Meanwhile, the mysterious war develops through rumours and shortages and increasing military presence, until the inevitable happens and Daisy and Edmond are separated. In Daisy, Rosoff creates an engaging, realistic and intelligent narrator whose matter-of-fact style carries us forward. Something like a cross between Holden Caulfield and Esther Greenwood (The Bell Jar), she deserves to be as widely known as both. This is a novel about first love, about war and about being young. If you’re buying it for that teenager, you could do worse than read it yourself before you hand it over. You won’t regret it.

Get ready for Year of Culture: 2019

A

Year of Culture is set to take place across the Horsham district during 2019 and everyone is invited to get involved. From Hilaire Belloc to Hepworth Brewery, Shipley Arts Festival to Shelley, The Capitol to Creative Assembly and everything between, the Horsham district has an exciting cultural offering and the Horsham District Year of Culture 2019, sponsored by Leonardslee Lakes and Gardens, will aim to celebrate as much of it as can be squeezed into 365 days across the whole district. The Year of Culture will have events every month, taking place somewhere across the district to celebrate the many facets of culture that give this district its sparkle. There will also be some highlight events through the year which will inspire, intrigue and delight audiences. An incredible programme of Year of Culture Fringe events will also be promoted and celebrated. The two projects being considered are: 1. A Children’s Lantern Procession to follow on from the Billifest Christmas Fair in December 2019. 2. A drama project working with young people about local Sussex stories which would culminate in an open air performance at Lark in the Park in July 2019. A Blast from the Past!

Once upon a time on a small farm near Billingshurst…

“I

am sick of this mud!” declared Nanny as she came in for breakfast. “Look at my coat.” Grandad, obedient as ever (yeah, right), obliged and glanced at her coat. It was covered not only with smears of mud but it had bits of hay stuck on it. “Don’t take that off in here; I’ve just vacuumed the floor,” Grandad warned. Nanny went back outside then came in again sans coat and muddy boots. “Happy now?” She fell on her cup of coffee as if her life depended on it. It was the end of January and it had rained a lot and it was muddy on the small farm. Fortunately though, they weren’t lambing at all this year unlike Bill and Sally who usually lambed very early on in the year. They were up to their knees in the glutinous black stuff. Where Aaron and the girls came up and down through the gate it was not only muddy but slippery too. Nanny always tried to stay out of it. Mud glorious mud “I slipped and dropped the bundle of hay,” continued Nanny, eating her marmalade on toast, “and when I picked it up it was covered in mud. Still, that job’s done for a day or two. Feeding the crunchies is much easier and drier.” And as Nanny and Grandad ate their breakfast companionably they reminisced on their mud stories. Like… The time when Dingo, the mothballed quad, wouldn’t start in the paddock and they had to push it and Grandad fell on his knees – in the mud. Amidst the blue air, only Nanny cajoling him sweetly got Dingo back on drier ground where it started again with a throaty roar. The time when they had the pigs and Nanny tried to walk into their pen when Bill wisely wouldn’t go in there. Nanny lost her balance and face planted – in the mud. She laughed and staggered up and out. “City slicker,” they called her. The time when the kids – all four of them – decided to feed the pigs. One after another, they lost their gumboots, some of which they were able to pull out. Some of which were sucked into the mud. Nanny had to use extension pallets to balance on as she dug in the mud to extract them. To this day one size 5 gumboot is buried somewhere in what is known now as a

park/orchard paddock. An archaeologist excavating in the future will wonder what kind of civilization was here in those days. The time when Nanny was stocking up the straw in the pig ark and she tripped backwards over a piece of half buried wood. She not only fell in the mud but her backside found a small puddle of cold muddy water to land in. She lay flat on her back, wet butt freezing off and laughed. Back home, after drinking hot tea, she changed and finished the job. This January wasn’t so bad though. Ann and Gary’s new landscaped terrace was finally mudfree. As the chicken run area had always been an beaten path of muddy terrain, Nanny had organised lots of stepping stones so whoever was on chicken feeding duty could walk to the coop without getting mud on their shoes. Unfortunately that is where the mud-free zone ended. Open the door of the chicken run and one would find a landscape reminiscent of a World War One battlefield, only muddier. One entered with one’s arms out balancing very carefully. The only dryish bit was under the shelter Nanny had made out of an old wooden box. The chickens didn’t seem to mind though as long as they were fed and watered. All that mud sometimes didn’t seem a fair swap for three or four eggs every morning. Still the daffodils had begun to look like they would flower and the elder tree had little leaves. Seed catalogues began to arrive promising sumptuous flowers for the summer. Robins and other birds began to sing in earnest. As you read this story it will be Easter. Too bad you have had to be reminded about winter but you try and write an April story when it’s snowing and minus 3 degrees outside! Great Pilgrimage 90 The Biggest Royal British Legion Membership Event for a Generation

A

decade after the end of WW1, veterans and war widows visited the battlefields of the Somme and Ypres before marching to the Menin Gate in Ypres on 8th August 1928. Exactly 90 years later, thousands of Legion members will recreate the 1928 Great Pilgrimage to visit the same battlefields and then, on 8th August 2018, carry their standards along the same route to the Menin Gate, to commemorate the last 100 days of WW1 and represent an entire generation that served while defending their country The occasion will be a powerful act of Remembrance and will be the Legion’s largest membership event ever, bringing our Branches and Communities together with hundreds of Legion Standards on parade. We are only a few months away and we want to ensure that the memory of the fallen from our community will never ever be forgotten. As a Branch

we are already committed and engaged to take part and it would be our intention to see how we can involve our Community and Schools. To date 28 branches from Sussex have made a commitment to support this event. Our representatives from Billingshurst will be Robert Nicoll, Branch Vice Chairman and Standard Bearer and branch member Andy Chennell. It is the Royal British Legion’s responsibility both Nationally and locally to lead the nation in Remembrance, so we are making this a significant anniversary to honour the memory of those who sacrificed so much. Race to the King Double Marathon Challenge for Chestnut Tree House

A

re you brave enough to Race to the King for Chestnut Tree House? Now is what life is all about. And in its 15th birthday year, Chestnut Tree House children’s hospice is looking for adventure-seekers to seize the moment and make this the year for taking on an ultra-challenge to raise vital funds for local life-limited children. Taking place on 23rd-24th June, Race to the King is a double-marathon challenge for walkers and runners who are willing to go the extra mile – or 52.4 miles to be exact – to raise money for Chestnut Tree House. Starting at the Slindon Estate, just 12 miles from the children’s hospice, participants will walk, jog or run 52.4 miles along the ancient South Downs Way, finishing on the steps of Winchester Cathedral – the burial place of the first Kings and Queens of England. Lauren Gowing, Events Fundraiser at Chestnut Tree House, said, “Every challenge and event our supporters take on for us makes a difference. This double marathon is a real endurance challenge, but every penny raised will go a long way to helping us to raise the £6,850 we need each day to cover all our specialist care services – both at the hospice and in families’ own homes. “In our 15th birthday year, we want to inspire everyone to Live For The Now and make every moment count. This is the first time we’ve been involved in Race

to the King, and we urge anyone looking for an ultra-challenge to sign up and help us to help local life-limited children and families live life to the full.” Race to the King participants can choose to take on the full distance in one go (£39 registration), or opt to complete it over two days, which includes camping overnight on Saturday 23rd June (£59 registration). ‘Please may we have our pavement back?’

H

ave you recently received a postcard reminding you to cut your garden hedge? Children from WAKOOS after-school club in Billingshurst recently designed postcards to remind residents of the importance of cutting back their hedges to allow full pavement access to pedestrians, pushchairs and wheelchair users. Volunteers from Billingshurst Community Partnership delivered the postcards where they saw hedges growing over pavements as they felt many residents may not be aware that their front hedge was presenting a danger to pedestrians, who had to step out into the road to pass. In some areas where hedges are overgrown, parents are not always able to walk safely holding the hand of a younger child, and wheelchair users find some of the pavements very difficult or impossible to negotiate. Some residents may feel worried abou cutting back a mature hedge into what appears to be

dead wood but don’t worry. Gardening experts say that the vast majority of hedges, e.g. privet, beech, hazel, holly, pyracantha and laurel, will regenerate very quickly. The exception to this is Leylandii, which needs to be kept trimmed from the planting stage to ensure continuous bushy growth. Now is the ideal time to get on with this very important job, as the days are getting longer and birds are not yet starting to nest. So if you have received one of our colourful postcards – or even if you haven’t – now is the time to inspect your hedge and make sure it is cut right back to the original boundary of your garden. Fires in Billingshurst

T

he Fire Service, surprisingly, say they have kept no written records of fires they attended in Billingshurst and that their computerised system dates back only to 2009! The County Records Office cannot assist either so we must conclude that village history will best be preserved by gathering together the stories of witnesses before they are lost forever… One example is of the burning of the old western corn mill which is remembered at Mill Lane. This mysteriously burnt down on 5th November 1852. The ruined smock of the eastern mill, built in 1825 at Hammonds Farm was burned up in 1920. Ken Bedwell has memories of three major fires in Billingshurst. Rice Brothers had a garage in the early days of motoring on the site where Sainsbury’s now stands. Ken worked at the garage briefly and lived in a mobile home near Mr Lockey’s house at the back of the chemist’s shop, which is now Lloyds. One night, round about Bonfire Night he was awakened at about 4 a.m. by a lot of banging which he put down to fireworks. But it went on and on so he pulled back the curtains and was shocked to see the garage on fire and to realise that the noise was caused by pieces of the asbestos roof blowing up into the air. The fire brigade was called and cars were moved as quickly as possible out of the garage and danger. Another fire of the 1970s was Mr Higgins’ shop, now Austin’s. The High Street was closed and several brigades attended to put out the flames.

The following week Mr Higgins sold off the tools at half price, so Ken bought several at a bargain price. The third fire was when Beck Hall, a Tudor house in Marringdean Road, went up in flames. The flare could be seen for miles around and most people in the village went along to see it the next day. It was a sad sight as such was the heat that only the large, bent chimneys were left standing. The fire arose from building work going on in 1967. It was alleged that Miss Diana Dors, who bought Palmers Farm, was having the property done up. (Please advise the Editor if you know more of this story.) It had been built originally at Boxford in Suffolk, and then brought in pieces to Billingshurst by Captain Reginald Cosway in 1926. Rice Brothers’ garage had a flat on the floor above what are now the computer and charity shops. The Bedwells lived in the antique flat for a while with its uneven floors. When Rice Brothers had petrol tanks installed 20 feet down the foundations of Mr Lockey’s old farm house were revealed. The flat building and bricks were all part of a farmstead with stables. Ken saw old timber beams from under the plaster when the flat was restored. Obviously the house had been below ground level for many years. Young Musician District Final: The Weald School’s Archie and Ella in action

n Sunday 25th March at St Catherine’s School, Bramley, the Rotary Club held the District Final of Young Musician. 19 young competitors took part and the event was held in the new, prestigious auditorium of the school in front of three judges and an enthusiastic mixed audience of parents, friends and young people. Among the competitors there were two young musicians from The Weald Community School, sponsored by the Billingshurst Rotary Club: Archie Freeman, a violinist and Ella Clarke, flautist. Each had a solo part to play and the judges were looking for rhythmic accuracy, mood and character while giving them the opportunity of playing in front of a large audience and showing their musical showcase.

Archie played the theme music from the film Schindlers List followed by Czardas by Vittorio Monti and Ella played two pieces from Handel and Hypnosis. Both the students were accompanied on the piano by Ian Gardner, Head of Music at The Weald School. The judges gave them each a complimentary and glowing feedback saying that one day they could be excellent professional musicians. Unfortunately neither got through to the Regional Finals being held in Reading later this year but nevertheless they did extremely well and were a credit to The Weald School in Billingshurst. Responsible dog ownership

T

here is no doubt that the companionship of a dog is one of the best things in life, but with ownership comes a serious responsibility. Your dog is reliant on you for every thing it needs for its wellbeing and happiness. Dogs love to be exercised and they need at least one good walk a day – some breeds need much more, especially those with a working or sporting background. Walking the dog is something the whole family can get involved in and enjoy, there are also sports such as canicross that test the fitness of both dog and owner and are huge fun to get involved in and make more friends along the way. If you are working during the day it’s a good idea to employ a dog walker or ask a friend or relative if they can take the dog for a walk while you are out to break up his day and allow him to toilet. If employing a professional be sure to check their references and insurance status. Walking your dog is a whole lot more pleasurable if he is obedient to you. Finding a good training class will help you to gain the best from your dog and make him a real pleasure to be around – there’s nothing better than having a bracing walk in the country on a chilly day and stopping at the pub in front of a roaring fire for a warming treaty with your well behaved hound sitting quietly at your side! Well, it’s one of my favourite ways to spend an afternoon! It goes without saying that dogs MUST be kept on a lead around livestock; sheep in particular can get very stressed especially around lambing time by the presence of a strange dog, and it is also a criminal offence to allow your dog to ‘worry’ livestock, which means chasing or attacking. Your dog does not have to physically harm a farm animal for you to be on the wrong side of the law. Farmers are allowed by law to shoot dogs that worry their animals as a last resort. If your dog goes to stay with family or friends or is walked by someone else when you are not there, then legally it is their, as well as your, responsibility to keep your dog under control. Discuss situations where you might want your dog to stay on a lead, like around livestock, with anyone who is walking your dog. Discovering a wounded animal is very distressing for

the farmer and for the treating vet, and injuries and fatalities have a real impact on rural livelihoods. Dogs should also be kept on leads in areas where ground nesting birds such as pheasants and grouse are present from 1st March until 31st July to prevent disturbance to nesting birds. Do remember to bag and bin your dog’s poo when they go to the toilet in the countryside, and keep their worming treatment up to date. You can throw it away in any public bin. Leaving your dog’s poo in a field where livestock live can spread disease that can harm the animals that munch on the grass in the area. Bagged poo left hanging on trees or in a field also poses a risk to animals, which may eat the whole thing and become unwell. Cleaning up poo is part and parcel of dog ownership, unfortunately those who do not clean up after their dog can have a negative impact on responsible owners and many councils have banned dogs from areas of their land such as parks and gardens due to the mess left behind by irresponsible owners. Dog poo is unpleasant and can cause toxocariasis in humans, which can cause serious illness and blindness. If you do not clean up after your dog, you could also be fined up to £1,000. Make sure your dog is identifiable, as of the 1st April 2016 it is a legal requirement for all dogs to have a microchip registering the owner’s details; it goes without saying that these must be kept up to date following changes of ownership or address and telephone number – sadly many people neglect to do this thus making it harder to reunite dog and owner should the worst happen and your pet becomes lost. It is still a requirement for all dogs in a public place to wear a collar bearing a tag with the owner’s details on it; working gundogs are exempt from this rule when being used for sporting purposes. Two pints please John Nash is a retired, well sort of retired, fruit farm manager in Kirdford who enjoys scribbling about life on the farm from the now to days gone by.

T

his month, folks, I’d like to chat about one of that most common of products: milk. You know, that rather bland white stuff we buy in the supermarkets each week in those plastic bottles! Oh, how this natural substance has differed and been marketed over the years from the liquid that sixty years ago I squeezed, by hand, from the udder of a cow… The first time I sampled this nectar in its purest form was on my first job as a herdsman on a farm in Kent. Straight from college and on my first day on the farm, I collected a warm loaf of home-baked bread from the farmhouse, along with a big pat of butter, and a can of milk straight from the dairy, its top two inches thick with the yellow cream that Channel Island cows all give. I retired to my digs and enjoyed a huge bowl of cornflakes soaked in the milk from the herd of Jerseys. Followed, I confess, by several slices of toast smothered in farm churned butter. In the early hours of the morning I was as sick as a pig! Served me right of course. Even those brought up on ‘gold top’ milk would have suffered under the richness of that unadulterated milk straight from the udder of one of those wonderful beasts. The Channel Island breeds – the Jersey and the Guernsey – have always been recognised as producing the highest butter fat content of all the breeds of milking cows and it’s their milk that is recognised as the richest you can buy, the sacrifice coming in the smaller quantity that these breeds can produce. Incidentally, the way to differentiate between the two breeds, as they can look quite similar in build and body colour, is by the colour of their noses. Jerseys have black noses with a white ring around it; Guernseys have pink noses! Milk was pasteurised in those days (but not for us on the farm) but homogenisation was not yet a marketing invention. Pasteurised milk is heated to destroy any bugs that may be lurking in its depths whereas homogenising is a treatment that forces the cream in the milk to shatter into minute

droplets so that the fondly remembered layer of cream never forms on the top of the bottle, but stays ready mixed in the container. Considering the potential for health problems that must have been sitting there in those times it’s a wonder we survived! The old saying that ‘we all have to eat a peck of dirt’ may well have a modicum of truth that modern living has not fully appreciated. The immunity that was once built into us from childhood from the dirt and contamination of our environment has all but gone. We clean with chemicals that destroy 99% of household germs and forget the 1% that are then immune to the treatments that we may need. Oh, I know we have to be careful with such statements. TB was, and still is, a danger lurking in the herds that inhabit our land. Animals are tested and milk is checked and treated to prevent the danger reaching us, and we have become accustomed to the purity of the milk in the red- and green-topped plastic bottles. But, still… I’m sorry, I think I must be getting old, I’m reminiscing again! For a few years we had a lovely old Jersey cow here on the fruit farm. Long after my days as a cowman, and in those memorable years that we had her, she gave us three lovely calves and a lot of additional work but, best of all, she gave us real, fresh, pure, unadulterated milk. We all learnt to hand milk her, and we all got kicked for our pains; but we also all learnt to cherish her, and each morning and evening we carried our can full of rich, warm milk home. There is nothing like that nectar in the world. A million miles from the rather bland commodity that we buy from the supermarket shelf. Such is progress and such is life. I guess unless you have the room, and the time, to keep a Jersey or Guernsey tucked away in the garden shed, then you’ll have to keep buying the standard product from the shops or, if you are extremely lucky, from your doorstep milkman or one of the few farms that still sell unpasteurised milk. Just one word of warning if you decide to get a cow… it’s a darn lot of work to just freshen up a bowl of cornflakes. But, oh boy, it’s worth it! John Nash

Billingshurst Lions working with 10 Primary Schools 2017 was another busy year for the Billingshurst and District Lions working together with their ten local primary schools. Billingshurst, Plaistow & Kirdford, Loxwood, Rudgwick, Slinfold, Shipley, William Penn, Barns Green, Wisborough Green and St Mary’s Primary Schools all work hand-inhand with the Lions. At the start of the year 300 children entered the Lions South East art competition to design a ‘Poster for Peace’. Henry Devereux from Wisborough Green School won first prize and 25 other children won form prizes and certificates. The Lions also helped a number of local schools improve their outside spaces by weeding and planting with the children, clearing and then landscaping (see photo). The children and parents have been donating children’s clothes to the Lions Belarus Trust, which have now been delivered to needy children at schools and orphanages in Gomel, Belarus.

Donations from monies raised by the Lions allowed all the schools to purchase library books, music lessons or forest schools equipment. Finally, in November and December, children were involved in the Lions’ centenary educational ideas project called Roar 2017, with the Final involving 30 schools being held at the Kew Millennium Seedbank at Wakehurst Place. So, a very cooperative and successful year was shared by the Billingshurst Lions and the children, staff and parents of our local primary schools. Plant a Butterfly Garden

F

ascinating fact: Winston Churchill loved butterflies so much he had a garden designed specifically to attract them. His family home was the beautiful Chartwell, but you really don’t need a grand estate to attract butterflies because they will happily flock to the tiniest plot if the planting is right. When planting for butterflies we need to consider their life-cycle, and of course they start life as caterpillars. Butterflies choose to lay their eggs where there is a good food supply for their hungry offspring. A patch of nettles in a sunny spot is all you need to attract the red admiral, the small tortoiseshell, the painted lady and the peacock. If you want the common blue (though sadly these are not that common now) plant some birdsfoot trefoil, also known as lady’s fingers and properly named lotus corniculatus. A packet of sweet rocket seeds (hesperis matronalis) is a good investment. One pack produces flowers in all shades of lilac. They have a sweet scent, which is more powerful in the evening, and as a bonus they attract the orange tip butterfly. So, having satiated the caterpillars, we need to address the feeding requirements of the adult butterfly. The most famous butterfly-attracting plant is probably Buddleia davidii, hence its other name, the butterfly bush. It grows well in most soils but

needs to be pruned back hard every year so the flowers – and therefore the butterflies – are kept at eye level. Don’t worry too much if you know very little about pruning, Buddleias are hard to kill! Sedum spectabile must be one of the easiest plants ever to grow and even thrives in my poor soil. Its dusky pink flowers are always smothered in butterflies and bees when they open in late summer. Caryopteris clandonensis, or to use its more romantic name, blue mist spirea is also a wonderful butterfly magnet and very easy to grow. You can now buy packets of wild flower seeds and butterfly mixes. Try some among your borders and you’ll be rewarded with fluttering, jewel-like visitors all summer. Rachel Leverton

Loxwood Community Gardens Initiative

T

he Loxwood Community Gardens Initiative was formed in December 2008 when a group of likeminded individuals got together to form an organisation that would be intent in making our village an attractive and a more community minded environment. Once the group was formed, we managed to obtain use of an area of approximately one acre of overgrown, neglected woodland adjoining our Village Hall. Over the years, our enthusiastic team of volunteers have transformed this area into a haven for wildlife and an area that young and older people alike can enjoy. In 2010 we decided to plant our own orchard and wildflower meadow in this area. To date, we have planted 37 different varieties of fruit trees ranging from local Sussex apples, to pears, plums, cherries, medlars and damsons. The fruit from this productive orchard is available to anyone in the village who may wish to come along and make use of it. The whole orchard has now been under planted with a magnificent wildflower meadow which we maintain in the traditional manner. The woodland area itself has now been turned from an overgrown area into a very productive coppiced area that provides the village gardeners with their bean poles and pea sticks. This year alone we provided 41 bundles of bean and pea sticks to the village. Very recently we have obtained permission from a local farmer to take over the management of another parcel of this woodland, which we will maintain for the benefit of everybody. Over the next few months we will be laying a traditional Sussex hedge to form a boundary along this new piece of woodland. During the Christmas period our volunteers have constructed a footbridge over Pawlies Brook to allow access. The area will now be used by the village children as well as by the Loxwood Pre-School children for their Forest School. In 2012 the Loxwood Community Gardens Initiative were offered another extremely overgrown area in the centre of the village which was a parcel of land left over from a housing development. After much head scratching our group decided that we would like to provide an area in our village that could be used as a

meeting place for young and old alike. Over the last few years we have transformed this area into a spectacular formal garden with seating, York stone paving and raised beds for growing vegetable and herbs. To entertain the younger children we have a number of chainsaw carved oak features for them to enjoy. These include a three-metre high wildlife totem pole, depicting various animals and wildlife and we have a family of oak carved sheep that the children can sit on along with a wooden balancing frame. Since the start of the project we have raised more than £15,000 from various fund raising efforts. This includes around £5,000 from various grant organisations, a Big Lottery grant of £3,000, donations from village people of around £1,000 and we have put on various fund raising events in the village such as Quiz Nights, Race Nights, Garden Talks, Wildlife Talks and Open Garden Events in the village raising just under £3,000. Our Community group have had fantastic support from the village. In 2012 we decided to start an annual membership which would provide an income to cover our running costs such as equipment, insurance, plants and trees etc. Our membership has grown fantastically during this period of time from 36 households in 2012 to our current membership of 100 households in the village. Bearing in mind that we only have just over 600 houses in the village, we think this support shows how well the Loxwood Community Gardens Initiative group are doing. To sum up, this project has grown from year to year, including more and more people in the village. This has helped to provide a much better environment for people to live in bringing people closer together and forging a much stronger community spirit. Public Art for Billingshurst

elena Roden has been appointed to create pieces of public art for the ‘Amblehurst Green’ development at Billingshurst. Public art is included in new housing developments to create places with some character, belonging to a specific location, giving a sense of place. Helena is an experienced public artist who believes that community engagement is an essential ingredient in the process; she has extensive experience in running creative workshops and consulting with groups of people. She also works as an art outreach tutor for an adult education centre in London in collaboration with the British Museum. Helena has been appointed on behalf of the consortium Devine Homes, Bellway Homes and Persimmon Homes by a stakeholder panel. Painted metalwork is the material Helena most often uses for exterior situations as it is durable, low maintenance, adaptable and can include the use of colour. The photo shows one of her most recent commissions: a seat and figure inspired by 19th century philanthropist Emily Temple, a

modeller of wax flowers and entrepreneur who lived in Burgess Hill. But public Art can include all kinds of things, such as gates, benches, wayfinding and events, as well as sculptures. What happens next? Over the next few months Helena will work with commissioner Alison Turnbull to put together a project plan. This will be shared, and there will be invitations for community groups and individuals to take part in creative workshops, learning skills and telling stories. Hammonds Mill is an interesting part of the social geography of the area not just the remnants of the mill, but the history of breadmaking and the mapping of getting the wheat from the farm to bread on the table. Our Community Volunteers – Ian and Pauline Jepps

M

eeting Ian and Pauline Jepps, it is clear from the beginning that their voluntary activities are very much a partnership. “I couldn’t do it without Pauline and she couldn’t do it without me”, declares Ian. They are very active members of Brighton Road Baptist Church, where Pauline runs a lunch club for the elderly and Ian helps with transport. They also run a crafting club for the visually impaired in collaboration with Foresight, and since 2011 they have taken part in an initiative called Holiday at Home, for those who might not otherwise have any kind of holiday, which comprises three days of activities in their church during August, including meals and outings. In addition to this, Pauline cooks for a Scripture Union camp for a week every summer. However, it is when they talk about the Leprosy Mission that they become most passionate, pointing out that although the disease is now curable, it is still a huge problem due to the terrible stigma it has in countries such as India. Pauline said that she had been fundraising for them “for as long as I can remember”, going carol singing as a child with her sisters. This continued for many years until they saw an advertisement to ‘Trek for

Treatment’, trekking in Nepal in aid of the Mission, and they decided to take part, “in order to celebrate our 70th birthdays”. The trip began with two days in the hospital in Anandaban in Nepal, which specialises in reconstructive surgery for victims of leprosy, and having actually seen the work at first hand, they determined to do more to raise awareness and funds, becoming volunteer speakers in the local area in order to garner more support. Their conversation is peppered with inspiring and personal stories of people they have met and the life-changing experiences that the charity has brought them. They still find time to pursue many other interests including hill walking, park runs and music. Their Christian faith underpins everything they do, but they clearly derive great enjoyment from their work, particularly when they can help people who are marginalised by society. “These things need to be done,” says Ian, “but it isn’t all altruism.
