Champagne’s Ultimate Luxury Brand Krug Even among the Grande Marque houses, Krug stands apart as Champagne’s ultimate luxury brand. The overall approach can be summarized by the phrase “no expense spared.” Along with Bollinger, Krug is among the few producers who vinify their base wines in oak cask, giving Krug Champagnes their distinctively rich, round and opulent character. A Reserve of Wines and Blending for Quality Founder Joseph Krug was born in 1800 in the German town of Mainz. Growing up, he learned to speak three languages. As a trader, he arrived in Paris in 1834. He took a position with Jacquesson, the top Champagne house at the time, where he became a partner and travelled frequently. Joseph noted that the weather could vary considerably, affecting quality from one vintage to the next. He sought a way to overcome this. In 1840, Joseph partnered with Hippolyte de Vivès, a wine merchant in Reims, and the two men tested new blends for three years. In 1843, Joseph founded the House of Krug & Compagnie. Joseph found it necessary to use good wines from good vineyards, tasted separately, plot by plot. More importantly, he built a reserve of wines from separate plots, each with their own character, from which to make a blend. In this way, he could make Champagne whose quality would not be compromised by bad weather. Joseph’s concepts on quality have helped successfully guide Krug in the years since. The Character of Each Plot and Long Aging To make their Champagnes, Krug’s Chef du Caves Eric Lebel and Krug’s Tasting Committee draws
upon 150 reserve wines, from 10-12 different vintages, up to 15 years old. These are kept in small vats, to preserve aromas and flavors over time. Grapes from each plot are vinified separately to retain each parcel’s personality. Eric explained, “Our philosophy is to select grapes from individual plots which will each express their characteristics, nuance and individuality. There is no hierarchy in our selection, no plot is considered better than another— some are no bigger than a garden. Each decision during blending of our wines takes into account the unique essence and character of each plot.” Long aging is key, to impart a superior texture and tiny, fine bubbles, or mousse. Krug Grande Cuvée, a blend of around 120 wines that combines the diverse characters of ten or more different vintages, matures in the cellar at least six years, and Krug Rosé at least five years. Krug Vintage and the unique crus of Krug Clos du Mesnil and Krug Clos d’Ambonnay spend at least ten years in the cellar.

Champagne’s First Luxury Cuvée Dom Pérignon The young Benedictine monk Dom Pérignon assumed managing the vineyards and cellar of the abbey at Hautvillers in 1668. The abbey’s vineyards on the north slopes of the Marne were among the finest in Champagne and they thrived in his care. He boldly stated his goal to create “the best wine in the world.” Soon, “Father Pérignon’s wine” had a reputation for quality that became known at the Royal Court of King Louis XIV in Versailles. Thus began the story of Champagne, the most storied sparkling wine in the world. Intensity Based on Precision Over Power Richard Geoffroy came from a Côte des Blancs family of wine growers many generations old. Named Dom Pérignon Chef de Cave in 1996, Richard decides when to declare a vintage. The premier vintage of this legendary cuvée was 1921. Every vintage of Dom Pérignon is produced using the best grapes on the estate. Each one is a unique creation with a style and identity that are distinct to its vintage. Always a vintage wine, Dom Pérignon is a blend (assemblage), whether it’s Dom Pérignon cuvée, DP Blanc or DP Rosé. Chardonnay and Pinot Noir provide aromatic and flavor contrasts that create a critical character of tension. The core of the blend comes from Champagne’s eight historic Grands Crus: Aÿ, Bouzy, Verzenay, Mailly, Chouilly, Cramant, Avize, Le Mesnil, along with the renowned Premier Cru Hautvillers. The blend for Dom Pérignon can select from all 17 Grands Crus of Champagne. With

a minimalist winemaking philosophy, the goal is to express terroir and vintage character. The wine’s intensity is based on precision, not power. With complexity gained by slow aging, all Dom Pérignon cuvées including Blanc and Rosé are known for their impressive ability to age. In recent years, Oenotheque and P2 bottlings have been released. Since 2014, Dom Pérignon has named its late-release Champagnes P2 or Plenitude. Left on the lees, these Champagnes evolve in stages which produce “windows of opportunity or plenitudes,” when the Champagne can be disgorged, resulting in a unique expression of the vintage. The Act of Creation: When the Intent Meets the Constraint Richard explained, “2002. 2003. 2004. 2005. 2006. [There is] special significance of declaring five vintages of Dom Pérignon in a row. There was more to it than mere chance regarding the climate: perseverance, dedication, teamwork. Our intent is to rise to the aesthetic ideal of Dom Pérignon—its singularity. The character of the year, brought on by the passing of seasons and by the whim of nature, is the constraint. The act of creation happens when the intent meets the constraint: Dom Pérignon emerges from the tension between these two poles.”

New Ideas Raise an Old Region’s Profile Champagne Jacques Selosse Some have called him “the madman of Avize,” others regard him as a sort of prophet. What is clear is that Anselme Selosse has had a huge impact on the region of Champagne. Many journalists and wine trade people feel that, since he took over his father’s estate in 1974, there has not been a more influential wine grower and winemaker who has helped change the way people make and perceive wines from Champagne. Over three decades, he has been a seminal, innovative leader of grower Champagnes. These have had progressively stronger sales with each vintage. When an importer scored exclusive representation of Selosse in the U.S. market a few years ago, their managers couldn’t have been more genuinely excited. This domaine’s wines have long been highly sought-after by connoisseurs, who call Selosse wines “Burgundy with bubbles.” The Concept of Terroir in Champagne In the 1970s, Anselme studied enology in Burgundy and was exposed to exceptional growers like Coche, Lafon and Leflaive whose work stressed low yields, organic viticulture and terroir. After completing his studies, Anselme brought these ideas back to the estate named for his father, Jacques, in Avize on the Côte des Blancs in Champagne. In those days, the big brands were dominant, grapes were considered a commodity, and there was no value placed on good work in the vineyard. In 1974, Anselme drastically reduced yields and organically farmed choice parcels with chalky marl-rich soils in Avize, Cramant and Oger. Selosse has always focused on low yields from healthy soils and good viticulture to grow grapes with true physiological ripeness. In the winery, Anselme takes non-intervention to the extreme. Only native yeasts are used with minimal

SO2. Fermentation and aging is in barrels of various capacities (228, 400 and 600 liter), less than 20% new, with wines on the lees for long periods. Malolactic is left to occur naturally, depending on lot. One wine comes from a solera dedicated to a single vineyard; another comes from a solera started in 1986 from two parcels. Along with remarkable transparency, the wines show unmistakably distinctive aromas and textures. “It is hard to think of a single individual in Champagne today whose work... is more influential than that of Anselme Selosse... if the future of Champagne truly is going to be one in which terroir plays more of a role then the region as a whole will have to pay more attention to Selosse and less to its accountants and brand managers.” —Andrew Jefford, The New France

An Innovative First Growth Estate’s History in Pauillac Château Mouton Rothschild Pauillac has three of the Medoc region’s five First Growths, which speaks as much to the selling prices of the appellation’s wines when the Classification of 1855 was determined as to the considerable quality of the terroir. In these heavily gravel, stony and sandy marl soils fairly close to the river, Cabernet Sauvignon ripens well, creating concentrated, burly wines with graphite-inflected minerality and rich notes of dark berries and tobacco leaf. Cabernet is often the main component in the blend for Pauillac wines. Of the three most prominent Châteaux in Pauillac (Château Lafite-Rothschild, Château Latour and Château Mouton Rothschild), Mouton is a bit more known, due to the fact that it is the only estate to be promoted from Second to First Growth. Baron Philippe de Rothschild engineered this remarkable coup in 1973, well over a century after classification. Mouton’s Leader and Innovator Philippe’s many accomplishments, from when he took the reigns of the estate in the early 1920s to his death in 1988, have had clear impact in raising the profile of this Château to be among the finest estates in the world (his daughter Philippine, who died in 2014, carried on much in the manner of her father, maintaining the estate’s position at the highest level). He began bottling at the Château in 1924, well ahead of appellation regulations. In 1926, he built The Grand Chai, a huge barrel cellar 100 meters long. begun; today, this visual trademark is recognized the world over. Taking the Time to Get it Right West of the winery, the heart of the estate’s vineyard is an area named The Grand Plateau. Shared with Lafite, it has deep gravel soils and a southern exposure. The estate has 90 hectares (222 acres) of vineyards, average age is 50 years; 15-20 hectares (37.5-50 acres) are about 70 years old. Of the total production, around 50% goes to the first wine, 25% to the second wine, Le Petit Mouton, and the rest is for negociants. After reading about French winemaking in the 19th Century, Estate Director Philippe Dhalluin offered, “People then didn’t have the same means we have. They had the time to observe, and cultivate. It shows you have to take a certain time if you want to do something. That’s why I’ve delayed a year with the new vineyard, because when we plant, we plant for 80 years. You have to get it right.”

A Reference Point Producer’s Wines of Concentration and Finesse Domaine Hubert Lignier A ‘reference point’ producer in the Côte de Nuits, Domaine Hubert Lignier has long been on par with Ponsot, Dujac and Gouges within the Morey Saint Denis appellation. This family estate turns out Burgundy wines of concentration and finesse that honestly express their terroir and vintage. From Clos de la Roche Grand Cru to Bourgogne Rouge, each wine respects its place of origin. Self-effacing yet always ready to make a joke, Hubert makes wines that speak in subtle yet profound aromas and complex flavors. Terroirs Expressed Through Old Vines and Biodiversity Domaine holdings cover 8.3 hectares (about 21 acres), mostly within Morey Saint Denis, Gevrey Chambertin and Chambolle Musigny, with some in Nuits Saint Georges and Pommard. For viticulture, the practice is “lutte raisonnée,” literally “reasoned fight” in French. To preserve biodiversity and microbiological life in the soil, organic compost and soil tilling are used rather than chemicals or pesticides. Thin, organically poor topsoil atop clay and limestone subsoil keeps yields low (20-25 hectoliters per hectare) and green harvest is utilized when necessary. Young vines are Cordon-trained to control vigor. To propagate vines, sélection massale (cuttings are taken from a number of selected, old vines) is used. Hubert reflected, “The soil is the key to succeed in making a great wine: respecting and looking after it is essential to reveal a great terroir.” During harvest, bad bunches are sorted in the vineyard before fruit goes to the sorting table. Vinification is traditional, with de-stemmed clusters, natural yeast fermentations in open-top cement tanks, and pigéage (punching down) by foot to ensure an optimal, soft extraction.

A Conversation Between Father and Sons The domaine has evolved through a father’s extended working dialogue with his sons. Before his untimely passing in 2004, Hubert’s son Romain had dialed back extraction and new oak to focus on finesse, texture and characters of the climats.. Hubert’s son Laurent has continued in this direction, favoring a prefermentation cold soak to obtain gentler extraction. Laurent explained, “We aspire to make authentic and sensual wines that express their own terroir.” After a five-day cold soak, fermentation takes 15-20 days, at 3334°C. Malolactic is in cask or sealed vat. Wines are moved only by gravity. New oak for aging is a judicious 20-30% for village wines (18 months) and up to 50% for Premier and Grand Crus (20-24 months). There is no fining or filtration.

The ‘Crème de la Crème’ in Chablis Domaine François Raveneau Shrewd white Burgundy lovers have known that wines from the Chablis appellation have flown under the radar for years. With incredible value for money, the best examples can age for decades, like the finest whites from the Côte d’Or, but for a fraction of the price. Of the many top-quality domaines in Chablis, every wine expert knows that two stand above all others, François Raveneau and Vincent Dauvissat. Between them, Raveneau gets a slight edge. Historically, Raveneau and Dauvissat introduced Côte d’Or winemaking in Chablis, including barrel fermentation and extended lees contact. Sommeliers feel Raveneau wines show their best at 8-10 years, when they begin to reveal distinct richness and complexity. Non-interventionist Wines of Profound, Quiet Strength In 1948, François Raveneau created the domaine by consolidating his holdings with parcels from his wife’s family, Dauvissat, as it happens... A non-interventionist wine grower and winemaker, François was a proponent of “natural winemaking” generations before the term or the movement existed. The domaine’s yearly production has always been tiny. Kermit Lynch asked to import for years and François finally relented, reassured by his friends, local wine growers. In the 1970s, Kermit was the first importer to exclusively use refrigerated containers to protect wines during shipping. Today, François’ sons, Bernard and JeanMarie, direct the domaine much in the same manner of their father. Bernard’s daughter, Isabelle, has joined them.

There is no fuss, fanfare or ego-driven Twitter feeds. Like François, the Raveneaus are modest, soft-spoken and extremely industrious. Here, the wines do the talking, in profound tones of quiet strength. Top Chablis Vineyards and Minimal Winemaking When François Raveneau died in 2000, he had amassed almost eight hectares (about 20 acres) in choice climats. The majority of vineyards are Grand and Premier Cru (Les Clos, Valmur, Blanchots, Chapelot, Vaillons, Montmains, Forêts, Montée de Tonnerre and Butteaux) with 15-55 year-old vines, all on Kimmeridgian limestone. Winemaking is minimal, to underscore each parcel’s typicity. Grapes are hand harvested and pressed gently by pneumatic press. Indigenous yeasts are used. The juice is left to settle, then racked off the lees into cuve. Fermentation takes two weeks, before malolactic in barrel. Wines are aged 18 months in old oak barrel and smaller feuillette from Chassin cooperage (7-8 years old) that help a soft micro-oxygenation, enhancing the elegant aromas and creamy textures characteristic of Raveneau wines.

A Wine Growing Family’s Tradition in Cornas Domaine Auguste Clape Few names are synonymous with a great wine region’s timehonored traditions such that to mention them makes one think “Classic.” Chave in Hermitage. R. López de Heredia in Rioja Alta. Raveneau in Chablis. Château Mouton Rothschild in Pauillac. Giacomo Conterno in Barolo. Auguste Clape is responsible for putting the appellation of Cornas on the wine world map. For most of the 20th Century, wine growers in the northern Rhône sold their grapes to big negociants. The concept of bottling your own wine at the domaine—or of making terroir-driven wines from your own grapes—didn’t exist. Clape was the first Cornas producer to bottle his own wine in 1955. All Vineyard Work By Hand Today, Auguste’s son Pierre-Marie and grandson Olivier run the domaine. They own eight hectares (20 acres) in parcels growers consider the best in Cornas (Reynard, La Côte, Les Mazards and Pied La Vigne). A few years ago, the family bought a jewel, the Les Sabarottes vineyard, from Noël Verset, who was retiring. A greatly respected grower, Verset likely chose to trust his vines to a family who would care for them as he would. The steeply angled slopes farmed by the Clape family begin to explain why the total yearly production is only around 30,000 bottles. All vineyard work must be done by hand. Olivier explained, “We don’t have that many vineyards, but we always have to be preventative when we work the vines. For instance, with doing treatments (before it rains, to prevent maladies), if we had vineyards in the flat and used tractors, we could do five hectares in one day. Here, it takes a week.” Many plots have thin topsoil atop heavy granite subsoil. Lutte raisonnée is practiced, with compost and turning the soil instead of chemical products. The good-
natured Olivier is proud of his family and appellation traditions. Hands Off Winemaking and Pure, Honest Wines Winemaking stresses non-intervention in a “bare bones” unpretentious approach, like a short Ramones or Clash song compared to a long, epic tune by Pink Floyd or Yes. Whole clusters are fermented with natural yeasts in open-air cement tanks with punching downs or pumping overs twice a day for 12 days. Malolactic occurs in 6- or 12-hectoliter foudre from Alsace, 50 years old. Cornas and Cornas Renaissance are aged 22 months in the dark, cavernous cellar, with bare earth floors and black cottonlike mold on stacks of aging bottles. Though they often show rustic edges and tight tannins when young, the wines are pure, honest and profound, a snapshot of their parcel and vintage.

A Wine Growing Family’s Rich Patrimony of Tradition Domaine Jean-Louis Chave The northern Rhône is to Syrah what the Côte d’Or is to Pinot Noir. Chapoutier’s Hermitage holdings are the most extensive and Jaboulet’s grand vintages of La Chapelle can keep for 50 years, but Domaine Jean-Louis Chave in Hermitage is unlike these big negociants. Perhaps more than any other in France or elsewhere, this small domaine founded in 1481 exemplifies the finest family traditions of wine growing. Like Rioja Alta’s R. Lopez de Heredia, Burgundy’s Hubert Lignier and Piedmont’s Giacomo Conterno, Domaine Jean-Louis Chave favors old methods. For sommeliers, wine buyers and Syrah lovers the world over, Chave is a touchstone to Hermitage and the best of the old ways to make wine in that magical appellation. A Blend of Choice Parcels Brings Balance Gérard Chave and his son JeanLouis head the domaine, which owns seven choice parcels, including Le Meal, Les Bessards, L’Hermite and Beaume. As in the northern Rhône overall, the Hermitage hill’s granitic soils impart a marked earthy minerality to the wines. Many parcels also contain limestone and clay, which lend finesse and power, respectively. Gerard explains, “A wine should be capable of aging, and for that it must have balance and structure—those are the words that count.” “Old School” Vineyard Work Most vines are old (15-90 years old) with an average yield of 35 hl/ha. Viticulture is organic and all vineyard work is manual or utilizing a horse, including harvest of the steep hillside vineyards. Part of the red Hermitage is vinified in open-topped wooden casks, the rest in stainless steel tanks, with manual punching down twice a day. To retain the character

of each soil type, the seven parcels are each vinified separately. After 18 months aging, a final blending integrates all parcels to express the unified essence of Hermitage. The wine is bottled without filtration. No high-tech winery gadgets or singleparcel cuvées here. Ripeness at the Northern Limit and Traditional Training On the difficult conditions of his terroirs, Jean-Louis notes, “Like with Pinot Noir in Burgundy, we’re at the northern limit at which Syrah can ripen here at Hermitage, so we have to do everything we can to achieve full maturity every year. It’s not something we can take for granted.” Typical of this domaine’s preference for old methods, vine training is traditional gobelet. Gérard explains, “Wire training may be convenient for some, but it makes the Syrah age more quickly than the stand-alone gobelet stake system, which is more compact for the vine, and should branches die, there is more vine base to restart with.”

One of the Great White Wines of France Château-Grillet Château-Grillet is an appellation and a single estate that covers 3.5 hectares (8.75 acres) in the northern Rhône, located just south of Condrieu. Ancient mosaics found nearby confirm that vineyards in Château-Grillet and Condrieu were planted by the Roman emperor Probus in the 3rd Century AD, using vines brought from Dalmatia in Croatia. These historic vineyards are thought to be a byproduct of the Pax Romana, which granted a Gallic tribe in the area Roman citizenship and the right to plant vines. During the Middle Ages, Rhône wines were difficult to sell in northern France due to the high taxes charged by towns along the route.

Château-Grillet’s Global Reputation In the 17th Century, Rhône wines were transported more efficiently over the Loire River to a growing market in Paris. During this period, Château-Grillet wines were known around the globe. Among the estate’s guests was the famous mathematician Blaise Pascal, in 1652. Thomas Jefferson visited in 1787 and the Empress Joséphine de Beauharnais, first wife of Napoleon I, had the wines in her cellar. In 1829, James Christie bought Château-Grillet for King George IV of England. The wine’s price was equal to or greater than Hermitage and Côte-Rôtie. The Neyret-Gachet family owned the property from 1827 to 2011. In 1936, an appellation contrôlée was created for ChâteauGrillet, to recognize the excellence of its terroir and wines. The estate is a monopole, a vineyard owned by one producer. The wines were on the lists of the greatest French restaurants of the day, including La Pyramide in Vienne, whose chef Fernand Point was the first to win three Michelin stars.
Once Again, One of the Great White Wines of France The wines went through a low point from the 1970s to the mid-90s (some vintages inconsistent from overcropping and picking too early), but Château-Grillet has since made the journey back to top quality. François Pinault, owner of Château Latour in Pauillac and Domaine d’Eugénie in Vosne-Romanée, purchased the estate in 2011. Estate manager Frédéric Engerer has overseen a conversion to biodynamic viticulture. Terraced Viognier vineyards, an average 45 years old, are in a southfacing amphitheater, on poor soils of granite, quartz, feldspar and mica, with some sand, clay and loess. Each parcel is gently pressed, separately and precisely, before separate vinification in small, temperaturecontrolled steel tanks. Fermentation and malolactic are in tank or in barrel, depending on lot, before aging for 18 months in French oak barrels, 20% new. With a different character than Condrieu, Château-Grillet wines need a few years to unpack, but then show structure, finesse and depth.

Honest, Handmade Wines That Accurately Reflect Their Place of Origin Paolo Bea Montefalco is a hill town in Umbria, where the morning fog line hovers above the gentle, rolling, lushly green hills, only to burn off with the rising sun. Among Italy’s many “breadbaskets,” Umbria is a source for produce, cereal grains, olive oil and wine. Umbria’s indigenous Sagrantino grape has loads of personality and a serious tannic structure that allows for long aging. Its image among wine connoisseurs has grown as swiftly as the area under vine. In seven years, the total surface area of Montefalco Sagrantino DOCG vineyards has expanded five times, from 122 to 660 hectares (305 to 1,650 acres). Since 1500, the Bea family’s working fattoria (farm) has raised farm animals, fruits, vegetables, olives and grapes, all for artisanal produce, foods and wine. Like the family’s farm products, these honest, handmade wines accurately reflect their place of origin, the vineyards they came from. Winemaker Paolo Bea established the estate in 1980. He works alongside his sons Giuseppe, wine grower, and Giampiero, winemaker and export manager. A trained architect, Giampiero designed the winery built in 1996 of stone, wood and earth. A Wine Grower Ahead of His Time Of the estate’s 15 hectares (37.5 acres), 5 are vineyards, 2 are olive orchards, and the rest is fruits, vegetables and grains. Vineyards have been planted among fields and forest to preserve biodiversity. Sagrantino is 60% of the vineyards, with almost 40% planted to Sangiovese and Montepulciano. An additional small parcel contains white varieties Grachetto, Malvasia, Chardonnay, Sauvignon and Garganega. Vines are cultivated organically with hand harvesting. Typical of his philosophy, Paolo Bea is a founding member of Vini Veri, an association of growers that practices non-intervention viticulture and winemaking. Natural predators are used to control pests rather

than chemicals. Decades before the term “natural winemaking” existed, there has been minimal intervention in the cellar. There is natural yeast fermentation, with long maceration (30-50 days for reds, 2-3 weeks for whites). There is no fining or filtering, and little or no SO2 at bottling. Instead of small French barrique, the reds are aged in large Slavonian oak botti, to preserve the character of the vineyards. Paolo explained, “With an ever growing conviction, we practice, discover, and appreciate natural winemaking methods that exclude the use of chemicals in the vineyard and artificial stabilizing techniques in the winery. Each season is a new discovery, a chance to apply and evaluate knowledge we have gained in previous years.”

A Model of “Old School” Winemaking Tradition in Piedmont Giacomo Conterno Every Barolo lover knows the legendary Cantine Giacomo Conterno in Piedmont. This rarefied status has come by way of superb wines. Only a few traditional Barolo producers remain, but wine lovers lucky enough to taste a fifty year old Borgogno, Rinaldi, Cappellano, Fontanafredda or Mascarello know the experience is astounding, like any majestic bottle from Hubert Lignier, R. López de Heredia or Château Mouton Rothschild. For Barolo, the head of this select class is Giacomo Conterno. The fourth generation winemaker is Giacomo’s grandson, Roberto.

A Visionary’s Generosity Helps Raise a Region’s Image In 1908, Giacomo’s father Giovanni opened a wine bar in the village of San Giuseppe. Giovanni made Barolo from purchased grapes and sold wines at his bistro and in barrel. In those days, it was typical for Barolo winemakers to buy grapes and make fresh, light wines for early drinking, which were sold in cask or demijohn. Conterno wines sold in Liguria and as far away as Argentina. Father and son determined that the market was ready for a grand Barolo. Only made in great vintages, it would undergo long fermentation and have the capacity to age for decades. The 1920 Monfortino Riserva was the winery’s first release in bottle. Over the years, its reputation grew steadily. Giovanni died in 1934, and son Giacomo’s years leading the winery during World War II were marked by his generosity. Since grapes must be sold quickly, he advised growers to buy cement vats and make wine for additional income during the year. A passionate visionary and ambassador for Barolo, Giacomo explained, “A wine will be acknowledged and respected when everyone makes it well.”
Wines of Structure, Tannins and Long Aging In 1974, the Conternos bought the 16-hectare (40 acre) Cascina Francia vineyard. Serralunga d’Alba has sandstone-rich soils which help to produce wines with serious structure and tannins. The Serralunga commune’s 34 crus are the most in the region. Here, parcels were added to Conterno holdings from the Ceretta and Arione crus, in 2008 and 2015, respectively. Fruit for the Monfortino and Francia wines comes from Cascina Francia. Grapes are selected on the vine, with the finest bunches selected for Monfortino. Fermentation of both wines is identical except that Monfortino gets slightly longer maceration and no temperature control. Wines undergo long maceration and extended aging in large, old oak casks (‘botti’). In the old days, Monfortino used to mature in a 5,000-liter botti at least ten years (for example, 1970 Monfortino was bottled in 1985). Today, Barolo Francia is aged for four years before bottling; Monfortino seven years. The estate has experimental vineyards to test massale selection vines, and a high-tech de-stemmer that works with incredible precision.

An Iconoclast in Brunello di Montalcino Pursues Perfection Soldera In the world of fine wine, a few iconic estates seem to exist in the ether, way above the rest. Over decades, their wines have exemplified a constant pursuit of perfection. Their names are yardsticks by which all others are measured. Domaine de la Romanée-Conti in Burgundy. Château Mouton Rothschild in Bordeaux. Chave in Hermitage. Clape in Cornas. Demand often far exceeds supply for such superlative bottles, thus they’re difficult to find and not inexpensive. In this select club is Soldera, in Tuscany’s august region of Brunello di Montalcino. Prime Vineyards in Tavernelle Gianfranco Soldera was not born into a family tradition. Overall, his approach has been meticulous, reflective and relentless. After a successful career selling insurance in Milan, he spent years searching for a winery in the Veneto, Piedmont and Tuscany. A friend told him about the 24 hectare (60 acre) Case Basse estate in Brunello’s Tavernelle subzone. Southwest of Caprili and northeast of Gaja’s Pieve Santa Restituta, the estate is in a prime area for Sangiovese. At 300-350 meters (984-1,148 ft.) elevation, the topography forms a “sweet spot” high enough to avoid frost and draw cooling night breezes, yet low enough to enjoy warm temperatures and consistent ripening. Gianfranco bought the wild, overgrown estate in July 1972. It has a distinctive type of galestro, the flaky schist soil native to Brunello di Montalcino and Chianti Classico. Very friable and soluble, this greatly contributes to wines with complexity and minerality.

A proponent of natural yeasts, Gianfranco has studied yeasts for 21 years and there are concurrent research projects with universities. Fastidiously selected grapes are de-stemmed and ferment in conical Slavonian oak vats with indigenous yeasts. Maceration and fermentation takes 28-35 days with occasional pumpovers and no temperature control. Malolactic takes 15 days, before aging for 4-5 years, in 50-85 hectoliter botti, made of Slavonian oak air-dried for 12-13 years by a cooperage in the Veneto established in 1776. Soldera explains, “Barriques are only for deficient wines that didn’t get enough tannins and aromas from the grapes and need to make up for this lack with oak sensations.”

A Bodega’s Conversation With Rioja’s Past R. López de Heredia-Viña Tondonia For the past 140 years, R. López de Heredia has remained true to itself, an ultra-traditional bodega and a living history of winemaking in Rioja. Like Giacomo Conterno or Bartolo Mascarello in Barolo, this winery has never found it necessary to change tradition. Established in 1877, the winery buildings look like something out of America’s Old West. In Rioja Alta’s town of Haro is the Barrio de la Estación, the historic railway district that is home to several legendary bodegas. On the Ebro River, a common wall separates R. López de Heredia from RODA, one of Rioja’s newest bodegas, designed like a set from a James Bond film. This close physical proximity symbolizes Rioja’s incredible diversity and an on-going evolution that connects one of Rioja’s oldest bodegas to one of its newest. The Past is Always Present María José López de Heredia is an energetic, charismatic and joyful force of nature. A gifted winemaker who grew up in Rioja’s most revered, historic bodega, she constantly invokes the words of her grandfather and great grandfather. For her, the past is always present and gives her strength. María José’s father Pedro, one of the most respected wine growers in Rioja, sadly passed away in 2013. Pedro’s proud children, María José, Mercedes and Julio, currently run the bodega. Original Clones and Wild Yeasts María José explained: “We do ‘selección masal’ (cuttings from selected old vines are used to propagate new vines) in our vineyards because we can preserve the genetic diversity of each grape variety. We
make our own grafts in our nursery, and we have always done this. In fact, all the clones in Rioja of Graciano come from Viña Tondonia and five Tempranillo clones, as well… We use only indigenous yeasts because they leave spores inside the very old fermentation vats as well as in the comportas (wooden baskets) made of poplar that we still use for harvesting.” Tinas (vats) with open tops, made of Spanish, Bosnian, French and America oak, 90-140 years old, are used for fermentation. The vats, comportas and old American barrels for aging maintain the natural, wild yeasts throughout the winemaking process. Wild yeasts originate from the terroir and are expressed through complex aromas of cigar box, herbs and spices, and precise flavors of crushed wild cherries and strawberries. Wines are aged 3-10 years before release.

World-Class Wines From Meticulous Vineyard Work Weingut Keller Germany’s Rheinhessen region was known for Liebfraumilch, an insipid, bulk wine sold by big brands. Traditionally, of the Rheinhessen’s three Bereiche (subregions), Nierstein was thought to have the highest quality, Bingen next and Wonnegau the last. A younger generation’s careful work has resulted in a dramatic paradigm shift. Wonnegau’s growers are applying knowledge from studying their vineyards to produce remarkable wines that are among the best from Germany. Winemaker KlausPeter Keller elaborated, “If you want to produce fine wine, you have to know what fine wine is about. The first thing you have to do is travel and drink the world’s finest wines. The second is work on your vineyards meticulously.” Vines and Training Tailored to Diverse Soil Types Within Wonnegau’s municipality of Flörsheim-Dalsheim, Weingut Keller has been a family winery since it was established in 1789. In the late 1980s, wines made by Klaus-Peter’s parents Klaus and Hedwig gained international notoriety. Klaus-Peter and his wife Julia studied enology and viticulture at Hochschule Geisenheim University. Klaus-Peter worked harvests in South Africa and at Domaines Hubert Lignier and Armand Rousseau in Burgundy; Julia worked at Müller-Catoir and Robert Weil. Since the mid-1990s, the Kellers have been applying their collective, in-depth knowledge gained at top estates to work on their family property. For over 15 years, KlausPeter and Julia have analyzed tens of thousands of soil samples to learn the nature of their terroirs. Klaus-Peter
explained, “At last we know how to handle our parcels.”

World-Class Wines From Prime Parcels Impressive holdings include 16 hectares (40 acres) of choice vineyards, 70% are classified Großes Gewächs (the top VDP vineyard designation, roughly analogous to AOC Burgundy’s Grand Cru), including Morstein and Kirchspiel in Westhofen, Hubacker and Bürgel in Dalsheim, and Pettenthal in Nierstein. A Cult California Producer’s Terroir-driven Wines Eisele Vineyard On the short list of most sought after “Cult California” Cabernet Sauvignon wines, even among Colgin, Bryant Family, Screaming Eagle and Harlan Estate, Araujo Estate has always been known for making terroir-driven wines of place. In 2013, Artemis Domaines purchased the estate, whose name was changed to reflect treasured terroir, Eisele Vineyard. Headed by François Pinault, Artemis Domaines owns Château Latour in Pauillac, Domaine d’Eugénie in Vosne-Romanée and ChâteauGrillet near Condrieu in the northern Rhône. A Choice Vineyard’s Long Reputation for Quality Eisele Vineyard is located east of Calistoga, in the northeast part of Napa Valley. In the 1880’s, Riesling and Zinfandel were cultivated; Cabernet Sauvignon wasn’t planted until 1964. In 1969, Milt and Barbara Eisele bought the property and sold grapes to co-operatives and then top producers. During the 1970s, several exceptional vineyard-designated wines were released, including Ridge in 1971, Conn Creek in 1974, and Joseph Phelps from 1975-91, who bottled Eisele Vineyard separately or used the grapes in his own blend, as with his 1976 Insignia, almost entirely Eisele fruit. A Sharper Focus on the Vineyard Bart and Daphne Araujo bought the estate in 1990 and their first vintage was 1991. They replanted some Cabernet Sauvignon and added Cabernet Franc, Merlot and Petit Verdot, using better clonal selections and renovating the winery. Tony Soter was hired as winemaker. Three years later, the winemaker became Françoise Peschon, whom Tony had mentored and who had previously trained at Château Haut Brion and Stag’s Leap Wine Cellars. Viticulture

was converted to organic in 1998 and biodynamic in 2000. In 1999, Michel Rolland was hired as consulting oenologist and sorting became more rigorous, yields were lowered and native yeasts were utilized. Demeter certification was obtained in 2002. A Great Vineyard’s Biodiversity Eisele Vineyard is situated on an alluvial fan in Simmons Creek with a southern exposure. The Palisades Mountains give protection to the north and cooling Russian River Valley breezes come through the Chalk Hill Gap. The fifteen-hectare (37.5 acres) vineyard has dry, rocky and volcanic soils that force vines to penetrate deep to find water, nutrients and trace minerals. Small, thick-skinned berries have tremendous color, concentration and complexity. The property’s orchards, vegetable and flower gardens work with insects and wildlife to create biodiversity that benefits the vines. Over 500 olive trees, many planted in the late 1800s, produce extra-virgin olive oil. Grapes are rigorously sorted before being de-stemmed and cold-soaked. Fermentation is in stainless steel tanks. The Eisele Cabernet Sauvignon is aged in French oak barrels, 100% new, for 22 months.

California Wines With Balance and a Sense of Place Sandhi Sandhi is a word that means “collaboration” in Sanskrit. In 2010, this “dream team” project pooled the impressive talents of renowned wine industry veterans. Rajat Parr was a renowned sommelier who first gained prominence as wine director at RN74 in San Francisco with an extensive, Burgundy-heavy wine list. Parr is now Partner at Domaine de la Côte and Evening Land Vineyards, which produce notable bottlings from many of the top vineyards in California and Oregon. Veteran winemaker Sashi Moorman has worked at Ojai, Stolpman, Evening Land and Piedrasassi. The Sta. Rita Hills AVA is chock full of vineyards that have quickly become known for quality, a sort of California version of GevreyChambertin or Vosne-Romanée.

Wines of Place From California’s Best Vineyards Moorman’s years of working in the Sta. Rita Hills AVA and Santa Barbara County have been key to the recent success of Sandhi, which focuses exclusively on vineyards in the southern half of Sta. Rita Hills, due to the area’s diversity of sites and superior soils. Sashi’s in-depth knowledge of these vineyards has been invaluable and prescient. In addition to the known vineyards in Sta. Rita Hills that Sandhi makes wines from, like Sanford & Benedict, there are a growing number of vineyards that have continued to build a strong reputation for quality, including Rita’s Crown, Bentrock, La Côte, and Rinconada. On one of his choice Chardonnay vineyards, Sashi elaborates, “Rita’s Crown lies on the actual Santa Rita Hills with a south-facing exposure at a very high elevation of 700 ft. Chardonnay is planted in diatomaceous earth with a very thin layer of clay topsoil. It is an ideal terroir for producing mineral driven, high acidity wines
with great concentration and length. Rita’s Crown was planted in 2007. It lies above Mt. Carmel and just west of Sea Smoke.” Sandhi makes an excellent Pinot from the Sanford & Benedict vineyard. Planted in 1971 by the legendary Richard Sanford, this vineyard’s Pinot Noir vines are the oldest in Santa Barbara County. Easily among California’s finest terroir for Pinot Noir and Chardonnay, the site’s north-facing blocks are planted on hard, silica gravel with good drainage. In recent years, many California Pinot Noir and Chardonnay wineries have gained global recognition for making wines that have more balance, elegance and finesse. This is a new alternate to the classic California style that is fruit forward, burly, dense and shows high alcohol. Since their premier vintage, Sandhi has made compelling and profound wines that are evocative expressions of their exceptional vineyards. Rita’s Crown, for example, has diatomaceous soils formed by fossilized seashells, which impart marked minerality and concentrated flavors.

A Winemaker Favorite California Cabernet Spottswoode Estate For decades, these wines have faithfully rendered their place of origin with finesse and restraint. Spottswoode Estate’s wines are often cited by winemakers, from California and around the world, as their favorite Cabernet Sauvignons. Napa winemaker Graeme MacDonald summed up, “Spottswoode is classic bench. It’s about grace and elegance.” One of Napa Valley’s historic properties, Spottswoode’s pre-prohibition Victorian house is a reminder of “Old Napa.” Established in 1882 by George Schonewald, a German immigrant who planted vines, the estate was purchased by Mary and Jack Novak in 1972. Spottswoode released their debut Cabernet Sauvignon in 1982; a century after the estate was founded. Today, Mary’s daughter Beth Novak Milliken manages the winery, and daughter Lindy Novak directs marketing. Benchland Vineyards Spottswoode Estate farms vineyards on benchland, a “sweet spot” where the valley floor makes a gradual transition into the mountains. With similar geology to that found in Oakville and Rutherford, the estate’s vineyards are in western St. Helena at the foot of the Mayacamas Mountains. Alluvial clay-loam soils from Sulphur Creek have excellent drainage and cooling ocean breezes that flow through the gap between Spring Mountain and the Mayacamas help the grapes develop balancing acidity. Most of the property’s forty acres are planted to Cabernet Sauvignon, with small blocks of Cabernet Franc, Petit Verdot and Sauvignon Blanc. Organic viticulture has been utilized since 1985; in 1992, the vineyard was certified organic (California Certified Organic Farmers or CCOF). Rich Soils and Sustainable Bio-diversity Young blocks have tightly spaced subsurface drainage to re-direct excess

spring rainwater. Modified trellises and tight vine spacing help canopy management and ripeness. To enrich the soil, cover crops are planted every fall. Reduced tillage and native grasses in the vineyard feeds the soil. Biodynamic practices and composting are helping maintain diverse, rich vineyard soil. A variety of flowering plants are habitats for beneficial insects. Nesting boxes for native birds helps a sustainable bio-diversity. California’s wine history is younger than most Old World regions, but it is every bit as rich. Since Prohibition nearly finished off California’s wine industry, a strong resurgence in wine production has continued for nearly a century. Overall, Cabernet Sauvignon is riper here than in Bordeaux, but the best wines can age like First Growths. Syrah exhibits a different set of characters than in the Rhône, but the grape’s fans around the world don’t seem to mind. Max Schubert’s Tireless and Passionate Vision Penfolds Grange The story of Penfolds Grange seems like that of a Hollywood detective or film noir movie from the 1940s. In 1950, Penfolds Chief Winemaker Max Schubert was sent to Spain to research how sherry was made. At the time, the Australian market was keen on sherry and Port. Armed with the knowledge that Australian tastes were changing, Max decided to add a stop in Bordeaux during his trip. There, he was inspired to make Australia’s first great red, a wine that would show its true potential only after undergoing maturation in bottle. After working on the wine for seven years, Schubert held a tasting for company executives who didn’t understand it. Max was ordered to cease production after word of the wine’s existence caused the company embarrassment. Characteristically, Max followed his own voice, and continued refining the 1957, 1958 and 1959 vintages in secret. Friends occasionally tasted the wine being developed, and some bottles were given away. Despite the fact that the wine was thought impossible to sell, rumors began circulating about Schubert’s special project, Grange Hermitage. A second tasting with the same board members, this time of the 1951 and 1955 vintages with bottle age, resulted in accolades. Schubert was given permission to release the 1960 vintage. Penfolds Grange has become a legend.

Penfolds Grange Raises the Bar for Australian Wine During his tenure, Schubert played a major role in transforming Penfolds from primarily making fortified Sherries and Ports to being Australia’s finest red wine producer, a reputation it gained in the late 1960s. Penfolds Grange has done for Australian wine the same thing that ‘The Judgment of Paris Tasting’ accomplished for California wine in 1976. The best fine wines from Australia have equal footing with the best from France or anywhere else. The 1962 Penfolds Grange, along with other cuvées from
that vintage, helped solidify the profile of Penfolds as one of the greatest fine wine producers in the world. Peter Gago has been Chief Winemaker since 2002. The winemaking hasn’t changed much since Schubert’s day. De-stemmed grapes are crushed, with fermentation in both open- and closed-top fermenters with skins kept submerged to encourage the aerobic process. There is delestage (‘rack and return’) twice a day, to promote extraction and aeration of the skins. All components finish fermentation in new 300-liter American oak hogsheads before aging for 18-20 months.
