Champagne

The Evolution of Champagne’s First Luxury Cuvée Dom Pérignon In 1668, Dom Pérignon began managing the vineyards and cellar of the abbey at Hautvillers. The young Benedictine monk boldly set out to create “the best wine in the world.” Soon thereafter, what was called “Father Pérignon’s wine” became known as a wine of the highest quality at the royal court of King Louis XIV in Versailles. Thus began the history of Champagne, the world’s most storied sparkling wine. Champagne’s first luxury cuvée was Dom Pérignon, always a vintage wine that is a blend (assemblage) of Chardonnay and Pinot Noir. Together, Chardonnay and Pinot Noir create an aromatic and flavor contrast with a critical character of tension. The premier vintage of this legendary cuvée was 1921. The core of the blend for DP comes from Champagne’s eight historic Grands Crus (Aÿ, Bouzy, Verzenay, Mailly, Chouilly, Cramant, Avize and Le Mesnil) and the renowned Premier Cru of Hautvillers. The goal with Dom Pérignon is to make a wine that expresses terroir and vintage character, with a characteristic intensity that is derived from precision rather than power. P2: The Refinement of a Legend In 2014, Dom Pérignon replaced the Oenothèque series of late-release Champagnes with P2, named for “the Second Plénitude.” Left on the lees, these Champagnes evolve in stages which produce what Dom Pérignon Chef de Cave Richard Geoffroy terms “windows of opportunity or plenitudes,” when the Champagne can be disgorged, creating a unique expression of the vintage. In 2000, Dom Pérignon released a few rare vintages of Plénitudes. These wines were carefully chosen regarding their stage of maturation. Since the Plénitudes continue to mature over years and

decades, the wines are, in a real sense, reborn several times. In this way, Plénitudes are Dom Pérignon’s ultimate expression of wines that defy time. Upon release, Geoffroy described the Dom Pérignon 2000 as classic, “Complete, tactile, balanced [yet] hiding an elusive depth, an ambivalent character. Austere yet seductive, precise yet caressing,” like the vintage’s alternating cold and heat. Compared to his memory of Dom Pérignon 2000, P2 2000 made a bolder impression. He elaborated, “This is what the plénitudes are all about, its facets are better delineated, its edges sharper, the global impression more accomplished.” Geoffroy explained that after long aging on the lees, the balance of Dom Pérignon 2000 has evolved into a wine with “insolent coherence. P2 2000 is best defined by this impression of coherence. The harmony is in motion, the wine is reinventing itself as I drink it.” Dom Pérignon P2 2000 has a “nose [that] is lively, invigorating, generous. [With] hints of bergamot and stone fruits [the wine] is assertive, vibrant. Graceful and light, it dances around until the finish, where licorice and toasted malt blend with each other.”

Champagne

A Superb Vintage of Champagne’s Ultimate Luxury Brand Champagne Krug Krug stands apart as the ultimate luxury brand among Champagne’s Grande Marques. With a no-expense-spared approach, Krug is one of the few houses that vinify their base wines in oak cask, which helps produce Champagne that is distinctively rich, round and opulent. Joseph Krug founded the House of Krug & Compagnie in 1843, and the concepts on quality he formulated over a century and a half ago have guided the company ever since. In the 1830s, Joseph Krug noted that the weather of any given year could vary considerably, affecting the quality of that vintage’s Champagne. He sought a way to overcome this. Using good wines from good vineyards, Joseph built a reserve of wines from separate plots, each with its own character, from which he composed a blend. In this way, he made Champagne whose quality would not be compromised by bad weather.

Today, to compose the blend of their Champagnes, Krug’s Chef du Caves Eric Lebel and Krug’s Tasting Committee selects from 150 reserve wines, from 10-12 different vintages, each of which is up to 15 years old. The wines are kept in small vats, which preserve aromas and flavors over time, and each parcel is vinified separately to retain its personality. Long aging helps to impart texture and tiny, fine bubbles, or mousse. Eric explained, “[We] select grapes from individual plots which will each express their characteristics, nuance and individuality. There is no hierarchy in our selection, no plot is considered better than another—some are no bigger than a garden. Each decision during blending takes into account the unique essence and character of each plot.”

2004: A Year of “Luminous Freshness” Krug has named the 2004 vintage “Luminous Freshness,” citing the sensations of early summer mornings in Champagne. After a chilly start, the 2004 growing season was beautiful from mid-September to early October, resulting in a generous year following the extreme temperatures and low yields of 2003. 2004 produced expressive, bright, elegant and discreet wines with excellent structure. Krug Vintage 2004 is a dialogue between the strengths of three different varieties, a blend of 39% Chardonnay, which brings verve and lift; 37% Pinot Noir, to add richness and backbone; and 24% Pinot Meunier, with vivacity, tension and citrus notes. Paying attention to the character of each vineyard and plot revealed the music of the year, a vintage marked by elegance and bountiful citrus. Krug Vintage 2004 was matured over 12 years in the cellars, period that enhanced the wine’s harmony, expression and finesse. Lebel added that Krug Vintage 2004 “is the last of the second trilogy in the history of the House, the first being 1988, 1989 and 1990 and the second 2002, 2003 and 2004.” Krug Vintage 2004 has acidity and structure that will allow it to benefit from a long maturation in bottle.



Champagne

Precise Wine Growing in Champagne’s Finest Terroirs Champagne Robert Moncuit Champagne Robert Moncuit’s Pierre Amillet is a talented and passionate winemaker. Similar to Jerome Prévost, François Huré, Aurélien Laherte and his friend Raphael Bereche, Pierre is among Champagne’s most gifted growers. Just as Burgundy’s best vignerons seek to capture the essence of their finest terroirs in bottle, Champagne’s best winemakers seek to precisely define their best vineyards through wines that express these distinct places of origin. Relatively recent in Champagne’s history, the dynamic started by Anselme Selosse in the 1970s has sparked a ‘quiet revolution’ among growers and helped build a global reputation for grower Champagnes. The Moncuit family has farmed some of the best vineyards in the Côte des Blancs. They first bought vineyards in 1889 and began bottling at the domaine in 1928. Pierre Amillet is the winery’s fourth generation winemaker. He has a singular obsession with Chardonnay from the chalk-rich terroirs of Le Mesnil sur Oger, among the finest terroir in Champagne to grow Chardonnay. Pierre’s work in the vines and in the cuverie is informed by a desire to maintain the family reputation for quality wine growing. Chalk, Old Vines and Deep Roots in Les Chetillons Pierre’s pride and craft were evident when he explained about his domaine’s vines in an exceptional parcel, “Les Chetillons has been in my family for about seventy years. It is a vineyard that I work with that is very easy to farm. When we talk about

terroir, it is a vineyard like [this] that delivers it. Les Chetillons sits directly on chalk. We find only chalk, not clay or anything else. So, when we talk about the terroir of Les Chetillons, we’re talking about chalk and nothing else. Along with chalk, there are old vines that extend down ten meters into the soil. It is with that set of characteristics that terroir is truly expressed. For a wine of terroir, it is not enough to have roots that go one or two meters deep. Terroir is directly linked to the root systems and the soil.” Pierre works with the same focus as any vigneron in Burgundy. In the cellar, his approach in vinifying Les Chetillons is one of care, precision and attention to detail. His mother, grandfather and father Robert Moncuit all vinified Les Chetillons separately, but did not bottle it on its own. Since it ended up in blends, its potential was never realized. Since Pierre took over the domaine in 2000, he has vinified Les Chetillons separately because he found that, in that distinctive vineyard parcel, he has achieved the best expression of the village.

A Reputation to Rival the Finest First Growths Château Pétrus The story goes that the producers of the hit 2004 film Sideways wanted to point out the logical flaw in a comment made by the film’s main character Miles when he expressed disdain for Merlot. Wanting to feature Pétrus in their movie, the producers sent the script to chateau owner Christian Moueix, who passed on the project. The reputation of Château Pétrus is of such magnitude that it hardly needs more publicity, so a 1961 Cheval Blanc was the great bottle drank by Miles in a burger joint instead... Pétrus is named for the Greek word for St. Peter, Petros. Historical records from the 1750s place Pétrus among the first established vineyards in Pomerol. The Arnaud family owned the estate for nearly two centuries, until the end of World War II, when a sale to Madam Loubat begun in 1925 was completed. With Loubat’s death in 1961, the estate passed to the Loubat family, who sold it to Jean-Pierre Moueix in 1969. The Moueix family has owned the estate since then. A Privileged Place for Wine Growing With around 800 hectares, Pomerol has a global reputation that far exceeds its relative size. Ranked with the top Bordeaux appellations on either bank of the Gironde River, Pomerol’s gravel, sand and clay terroir favors the early-ripening Merlot grape. Situated in a privileged place at the highest point of the Pomerol plateau, Pétrus is at the “Pétrus buttonhole,” where the appellation’s oldest soils are at the surface. Gravel and dense blue clay, with traces of iron oxide the locals call crasse de fer (iron dirt) have

excellent water retention. This helps impart the rich color, concentration and power characteristic of Pétrus. Almost all estate vines, about 12 hectares (30 acres), are planted to Merlot, with 5% Cabernet Franc. The oldest vines are about 60 years old; these vines were planted after the 1956 frost that struck the region. Usually, whole blocks are replanted rather than individual vines. Viticulture is precise, with green harvesting, aeration of bunches and low yields all constants. 2007 was the last vintage made by Jean-Claude Berrouet, who had been the estate’s enologist since the 1960s. Taking over, Berrouet’s son Olivier previously worked at Cheval Blanc. With full phenolic ripeness the goal, the estate’s 150 pickers can harvest the entire crop in just two days. Traditional vinification is done in 15 concrete and 4 stainless steel tanks. After malos in tank, the wines are aged up to 18 months, and racked every 3, in oak barrels, 50-100% new (percentage varies with vintage). With brooding power and aristocratic structure, the wine shows an uncanny verve and freshness. In the manner of all great wines, the aromas and palate flavors are filled with finesse, depth, delineation and concentration without heaviness.

A Pomerol Jewel Joins Bordeaux’s Top Echelon Chateau L’Évangile In 1990, Domaines Barons de Rothschild, owners of Lafite Rothschild, purchased L’Évangile from the Ducasse family. The current owners have implemented a more stringent selection for the Grand Vin, and the creation of Blason de L’Évangile, a second wine. In 1998, an extensive vineyard restoration began which has resulted in several hectares of vines being replanted while other parcels have been grubbed up. The vat room and cellar were renovated in 2004. Since Domaines Barons de Rothschild acquired L’Évangile, quality has been raised to that of Pomerol’s most prestigious estates. The history extends back to when vines were first planted. The Léglise family from Libourne was one of the families who created what are now the vineyards of Pomerol and their estate was listed in the 1741 land registry. By the end of the 19th Century, the property was close to its current 13 hectares (32.5 acres) in size. It was sold to a lawyer, Isambert, who renamed the estate L’Évangile. In 1862, Paul Chaperon bought L’Évangile and his descendants, the Ducasse family, owned the property until 1990. Louis Ducasse took over in 1957 and improved the estate, including replanting vineyards damaged by frost in 1956. Louis’s widow Simone Ducasse carried on his work in 1982. “A Unique Terroir, Irresistible but Absolutely Outstanding” The terroir is special. The southeast Pomerol plateau features “the Pétrus buttonhole,” where Pomerol’s oldest soils are at the surface. Gravel and dense blue clay, with traces of iron oxide the locals call crasse de fer (iron dirt) have excellent water retention. The vineyards of L’Évangile share this soil with Château Pétrus to the north, with Vieux Château Certan, La Conseillante and with Cheval Blanc in Saint-Emilion, all to the south. These soils help produce

majestic Pomerols, wines with richness, texture, volume and great length on the palate. Owner Baron Eric de Rothschild elaborated, “A unique terroir, irresistible, very different from the Médoc but absolutely outstanding.” Twenty-two hectares (55 acres) have been planted to 80% Merlot and 20% Bouchet, a local term for Cabernet Franc. Merlot gives the wine forward fruit, body and suppleness; Cabernet Franc lends finesse and structure. Operations Manager Jean-Pascal Vazart, at L’Évangile since 2001, and Technical Director Eric Kohler oversee the vineyards and winery. Parcels managed separately in the vineyard are vinified separately in the new cuverie. Average yields are kept to 38 hectoliters/hectare, 30 for young vines. Winemaking is traditional, with prefermentation cold maceration for some parcels. Malos are in barrel, and various parcels are progressively blended. Wines are aged 14-18 months in oak barrels, 75-100% new, with 60% from BDR’s cooperage in Pauillac.

Burgundy Wines that “Put Nothing Above Purity and Precision” Domaine Marquis d’Angerville One of the august wine properties within Burgundy or France, this domaine can trace its history back to 1507, when the Dukes of Burgundy abandoned it. In 1804, the Baron du Mesnil bought the property and built a manor house with a garden at one end of the 2.4-hectare (6 acre) Clos des Ducs vineyard. In the late 19th Century, the estate passed to Baron’s son, Eugène du Mesnil, granduncle of Sem, who was the grandfather of the current owner, Guillaume Marquis d’Angerville. In the 1920s, Sem joined forces with Henri Gouges, Armand Rousseau and other growers against dishonest Beaune negociants, who were then blending in cheap wine from southern France and selling it as Burgundy. The group of growers domaine-bottled their own wines and sought out their own customers. Guillaume’s father Jacques was a tireless champion for Volnay in markets across the globe. Twice, Jacques served as President of the Comité Interprofessionnel des Vins de Bourgogne, the precursor to today’s BIVB, the trade organization of producers that markets Burgundy wines. He also started the Institute de la Vigne et du Vin at the University of Dijon, a top school for enology and viticulture. Today, the domaine owns about 15 hectares (37.5 acres) of vineyards within the Volnay, Meursault, Pommard and Bourgogne appellations. Volnay holdings cover 12 hectares (30 acres) of parcels in no less than eight Premier Cru vineyards, including Fremiets, Pitures, Mitans, Champans, Cailleret, Taillepieds, and monopole Clos des Ducs, which some feel has Grand Cru quality. During Jacques’s tenure, all viticulture was lutte raisonnée (‘supervised control’), an approach that stresses plowing the soil, utilizing cover crops, and using natural compost over chemical products. Carrying his father’s work

further, Guillaume began a conversion to biodynamic viticulture in 2006 and completed it about six years later. To minimize soil compaction, an ATV is used to apply treatments instead of a heavy tractor. Wines That “Focus on Delicacy and the Purity of Fruit” The winemaking approach is traditional, conservative and ‘hands off.’ Grapes are completely de-stemmed before vinification. “I put nothing above purity and precision [while some prefer whole cluster fermentation, we prefer de-stemmed grapes to] focus on delicacy and the purity of fruit,” explained Guillaume. The grapes are cooled before fermentation, which proceeds naturally, with no pigeage (‘punching down’) but some remontage (‘pumping over’). “We hope the wine makes itself. Its something I learned from my father, and he from his father. We want to minimize our intervention,” continued Guillaume. Aged for 15-18 months, Guillaume elaborated, “I use different producers and different oak. We don’t want to overwhelm the wine with oak [so] I use only up to 25% new [barrels from several cooperages].” Sometimes a touch austere when young, these wines have pure aromas and delineated, layered palate flavors, with suave textures. The wines age magnificently.

An Ultimate Benchmark for White Burgundy Domaine Roulot Only a few Burgundy producers occupy a privileged perch high in the stratosphere in the world of fine wine. A small number of family domaines have been synonymous with the best from the region for so long that the names have become shorthand for ultimate benchmarks. Considered the absolute best in the world, these domaines are quality yardsticks against which all others are measured. There are not many white Burgundy domaines at this rarefied level (Coche-Dury, Leflaive, Comtes Lafon, Ramonet, Raveneau), but Domaine Roulot is part of this select group. Jean-Marc Roulot has headed up winemaking at his family’s domaine since October 1988. His father Guy Roulot had built a growing reputation for quality, evident in all of his wines, from Bourgogne Aligoté to Meursault Village and 1er Cru. He was one of the first growers to vinify and bottle his Village lieu-dits, wines named for a specific vineyard parcel. Sadly, Guy died in 1982 at the age of 53, and two gifted winemakers (Ted Lemon of Littorai in Sonoma from 1982-84 and Franck Grux of Maison Olivier Leflaive from 1984-1988) oversaw production before Jean-Marc arrived. Meticulous wine growing and winemaking techniques have given the wines dramatic focus, purity and precision. Wines of Purity and “Vertical Tension” Fifteen hectares (37.5 acres) of vineyards 20-88 years old have been farmed organically since 2000, certified since 2013. The Meursault parcels are 40-88 years old, including 1er Crus Meursault-Charmes and MeursaultPerrières, the latter vineyard considered by many vignerons to have Grand Cru quality. Chardonnay whole clusters are lightly crushed first, not the normal practice. Jean-Marc explained, “We get

most of the juice out at low pressure,” first pressing at 0.2 bar, then 0.6. This yields 90% of the juice, and results in good pH and purity. “It contributes a lot to the style,” elaborated Jean-Marc. The juice is cold-settled overnight with most of the lees. After decanting there’s another vat, so Jean-Marc mixes the lees to have the same turbidity in each barrel. This work is done above the cellar so that a plot picked on Monday is in barrel by Tuesday morning. If the must becomes warmer than 20°C, it is cooled; if not, it’s left alone. New oak is limited to 5-10% for Bourgogne Blanc, 15% for Village, and 33% for Premier Cru. Battonage is limited because it can add richness but bring heaviness and lessen purity. During a year in barrel, the wines get one light battonage every 2-3 weeks until malos end. The wine goes into stainless steel tank on the lees an extra six months. “We get microoxygenation in wood, then reduction in stainless steel. It gives the wine vertical tension,” said Jean-Marc. There’s a light fining with casein and bentonite and light filtration before bottling.

“The Best White Wine Domaine in Burgundy” Comtes Lafon How good are the Burgundy wines from Comtes Lafon? Wine writer Clive Coates MW, who has written about Burgundy for over thirty years and is the world’s foremost authority on the subject, answers: “Quite simply, this is the best white wine domaine in Burgundy, and it also makes excellent red wines.” While these wines don’t show the gossamer finesse, precise minerality and tense purity of Coche-Dury, Leflaive or Roulot, respectively, they are as complex, dynamic and balanced, but with the profound power, heft and richness that together signify Comtes Lafon. A sterling reputation for quality has made Comtes Lafon a name known around the world. Since he took over in 1984, fourth-generation winemaker Dominique Lafon has worked tirelessly to improve the wines. Nowhere is this more evident than in the vineyards. For some historical context, Dominique’s grandfather Jules held a celebratory harvest feast for his workers and friends in 1923. The following year, Jacques Prieur and team joined. Since 1933, every November on the Monday after the Hospices du Beaune auction weekend, a grand tasting and lunch known as La Paulée de Meursault has been the year’s banner event in Burgundy. A Long, Cold and Slow Approach in the Cellar While Domaine Leflaive was the first renowned Burgundy domaine to adopt biodynamic farming, Comtes Lafon was not far behind, well ahead of others at that level. Dominique replaced chemical treatments with plowing. He converted the domaine first to organic farming (certified in 1998), then to

biodynamic. The domaine owns about 16 hectares (40 acres) of prime vineyards in the appellations of Volnay, Monthélie, Chassagne-Montrachet, every Premier Cru in Meursault, and Grand Cru Le Montrachet. On average, old vines have been densely planted (10,000 vines/hectare) and the main rootstock used was 3309 and 161-49, lower-yielding clones that require more care but produce high quality fruit. In the spring and summer, all vines are trimmed and tied so that excess vegetation is managed. During harvest, there is sorting in the vines before more triage at the winery. In the very-cool winery, for whites, a slow gentle pressing precedes cold settling for 24 hours, then fermentation in new or used barrels for 3 months. After fermentation, malos start naturally and take about 4 months. Wines are racked in July, on the fine lees. After assemblage in vat, the wines go into older barrels for 18-22 months, depending on the vintage. The wines are racked again for clarity before lab testing and tasting. A small bentonite fining is done before bottling. In recent years, during elevage, rolling the barrels has replaced battonage to avoid introducing oxygen and the use of new oak has been reduced.



Burgundy Index

In the entire world of fine wine, Burgundy is the region that best exemplifies the concept of terroir. Some winemakers feel that their wines express a specific vineyard through Pinot Noir or Chardonnay. Each year, this expression must include the vintage’s character and the work of the winemaker. To underline the importance of selection in jazz music, Miles Davis once said, “It’s not the notes you play, it’s all the notes you don’t play.” Like jazz music, both wine growing and non-intervention winemaking include the process of selection. Learning this process is an evolution that takes generations. At top domaines like Lignier, Fourrier and Rousseau, knowledge is passed from one generation to the next so the process continues. RED

A Family’s Patrimony of History, Humility and Vineyard Work Domaine Jean-Louis Chave The finest Syrah wines on earth come from France, and the best examples there come from the northern Rhône. Here, of the three appellations known for Syrah, Hermitage tops the list, ahead of Côte-Rôtie and Cornas. Over the decades, the quality of wines produced by one domaine has helped it attain icon status above all others. This family’s name is the reference point for the grape, appellation and region. Founded in 1481 and with their winery in the village of Mauve, Domaine Jean-Louis Chave embodies the finest family traditions of wine growing and winemaking. Jean-Louis Chave and his father Gérard head the domaine, which owns seven choice parcels, including Le Meal, Les Bessards, L’Hermite and Beaume. The domaine bottles Hermitage Rouge, Blanc and a St. Joseph Rouge. Like Bartolo Mascarello in Piedmont, the Chaves are fervent believers in blending. All their domaine wines are the product of blending. Grapes from various vineyard sites are blended together, to bring complimentary characters to the wine, and as a hedge against one site not producing strong quality fruit in a given vintage. “Because we have plots in several different places, each with a defined character, we like to blend to create a more complete wine. That goes across all our wines,” explained Jean-Louis. While Hermitage hill’s granitic soils impart a marked earthy mineral character, many parcels contain limestone and clay, which lend finesse and power to the wines, respectively. “You Can’t Talk about Terroir if the Soil Isn’t Worked” Farmed biodynamically, the vines are 15-90 years old and have an average yield of 35 hl/ha. There are just over 13 hectares of vineyard in Hermitage and, in St. Joseph, the Clos de l’Arbalestrier

domaine, down the road from the Chave cellars in Mauves, was bought in 2009. The 2.7-hectare (6.75 acre) amphitheatre has been farmed organically and the vineyard is among the appellation’s finest. All vineyard work is done by hand or utilizing a horse, including harvest of the steep hillside vineyards. Jean-Louis noted, “The moment you plant a vine on a hillside, you must be able to work it rather than disinfect it. You can’t talk about terroir if the soil isn’t worked.” Part of the red Hermitage is vinified in open-topped wooden casks, the rest in stainless steel tanks, with manual punching down twice a day. To retain the character of each soil type, the seven parcels are vinified separately. “What I do treat differently is the stems, the Hermitage is fully de-stemmed, and the St-Joseph retains half the stems because its granite-based vines contribute to the freshness of the wine,” elaborated JeanLouis. After 18 months aging, a final blending integrates all parcels to express the unified essence of each appellation. The wines are bottled without filtration.

Respect for the Old Methods of Chianti Classico Montevertine Le Pergole Torte Montevertine is located between Florence and Siena, amid Tuscany’s rolling, picturesque hills, roughly 3 kilometers south of Radda in the Chianti zone. A small village atop a hill, Montevertine was inside a fortress during the 11th Century. In 1967, proprietor Sergio Manetti purchased the estate as a vacation home. He planted two hectares of vineyards and built a small cantina to make wine. At 425 meters elevation, the estate’s 18 hectares (45 acres) of vineyards are 90% Sangiovese, with 10% Colorino and Canaiolo, traditional grapes in Chianti Classico. Sergio’s debut vintage earned such high praise that he became a fulltime winemaker in 1971. In 1981, Manetti took a stand that has since served to define him and his estate. He refused to include Trebbiano in the blend for Montevertine, as was legally required, and he withdrew his winery from the Chianti Classico consortium. Since then, Montevertine wines have been labeled simply “Rosso di Toscana.” Montevertine is often erroneously referred to as a “Super Tuscan” wine, but the estate’s steadfast preference for native varieties is definitively traditional. “Super Tuscans” are typically blends, which include International grapes (Cabernet Sauvignon, Syrah and Merlot) that are not indigenous to Chianti Classico or Tuscany. The label does not say “Chianti Classico,” and the bottle’s neck does not have the Consorzio’s official trademark Gallo Nero (‘black rooster’), but Montevertine wines are among the rare remaining authentic, traditional Chianti Classico wines which respect and honor the old methods. Sergio Manetti died in 2000, before his longtime consultant, the renowned Giulio Gambelli, in 2012. Sergio’s son, Martino, and enologist, Paolo Salvi, now lead the estate, with the same philosophy and passion that Sergio and Giulio had. Montevertine’s Flagship Wine from a Single Vineyard Le Pergole Torte is Montevertine’s flagship wine and it is made only in outstanding vintages. This bottling comes from the estate’s oldest vines, the 2-hectare (5 acre) Pergole Torte vineyard, planted solely to Sangiovese, with a north-northeast exposure. Fermentation is in 150-hectoliter cement cuves for 25 days, with pumping over every day for an optimally long, slow extraction. After malolactic in large cement cuves, the wine is aged in 5.5to 18-hectoliter Slavonian oak barrels for 12 months, Alliers barriques for 6 months, then in bottle (no filtration) for 12 months before release. A prime example of grape and place, this wine has profound aromas and depth on the palate, bright acidity framing red berry and spice notes, terrific concentration and length. Though recent vintages can be decanted, this wine blossoms after a decade plus in the cellar.

Six Generations of Family Tradition in the Langhe Cascina Fontana On many mornings, the gentle, low hills of the Langhe are shrouded in fog, and the hilltops are visible as towns and castles peeking up through the mist. The red grape that carries Piedmont’s reputation around the globe, Nebbiolo, is named for the Italian word for fog, nebbia. Similar to Sangiovese in Tuscany, Pinot Noir in Burgundy and Tempranillo in Rioja, with Nebbiolo in Piedmont, the special symbiosis between grape and place is unique in the world. separately and then blended before bottling. The blend’s components can change from vintage to vintage, but the final wine will be balanced and age-worthy, even in so-called “off vintages.” The goal is to make authentic and traditional Barolo, very much in the manner of Mascarello and Rinaldi.

The Cascina Fontana winery is in the village of Perno, on a ridge in the Langhe hills south of Alba. The family has made wine for six generations. Mario Fontana is the current winemaker at his family’s estate. Mario’s wife, Luisa, mother Elda, and sons, Edoardo and Vasco, all pitch in to complete the work that needs to be done. From 5 hectares (12.5 acres) of estate vineyards come four wines: Barolo, Langhe Nebbiolo, Barbera d’Alba and Dolcetto d’Alba. Holdings include vines in some of the best crus in Castiglione Falletto (Mariondino, Villero), La Morra (Giachini) and Sinio. A close connection to the family of Bartolo Mascarello is evident in the estate’s approach to wine growing and winemaking. As with Mascarello’s Barolo, Fontana’s is a blend of vineyards, primarily from Castiglione Falletto and La Morra. In the winery, there is a long maceration in stainless steel followed by aging for two years in large Slavonian oak. Each vineyard parcel is vinified

This wine is the same: it does not reveal itself easily or cheaply. You have to discover it slowly and thoughtfully. A Prestigious Mosel Estate’s Breathtaking Rieslings Egon Müller Like Burgundy’s terroir with Pinot Noir and Chardonnay, Germany’s historic vineyards plus Riesling is a unique combination of place and grape which produces wines that are the ultimate expressions of their varieties in the world. The Mosel-Saar-Ruwer region’s steep slate vineyards help to make Rieslings that are “fine boned,” with sculpted, precise structures that are laced with elegance. These are Rieslings with the most finesse. Estate holdings include a parcel of ungrafted vines planted in the 19th Century. Placed among the great wines of the world, Egon Müller wines are enjoyable young, and they can easily age and improve for many years in the cellar. Vineyards in Exceptional Terroir Fruit for Scharzhof Riesling QbA comes from Müller’s Saarburg and Wawern vineyards, and from the Wiltinger Braunfels and Wiltinger Kupp vineyards. This is a wonderful, accessible introduction to Riesling and Egon Müller. Grapes for Scharzhofberger Kabinett QmP come from Scharzhofberg, one of the most famous vineyard sites in Germany, likely to have been planted by the Romans. Situated in Wiltingen, in a south-facing valley off the Saar, the vineyard’s steep slopes have a 30–60%

grade, at an elevation of 180-280 meters. Very deep soils have grey Devonian slate, which helps the wine’s crisp, delicately exquisite aromas and palate flavors. Normally meaning “late harvest,” at Egon Müller, the term Spätlese is used for wines made using grapes with superior ripeness or over-ripeness. For Scharzhofberger Spätlese QmP, harvest begins very late with variable weather. Optimally ripe grapes often come from the best parcels rather than from later picking. Spätlese wines can support more sugar than Kabinetts without losing balance. Though off-dry to semi-sweet when young, these wines gain incredible complexity after cellaring. The Wiltinger Braune Kupp vineyard makes more full-bodied wines, while those labeled Scharzhofberger develop into elegant wines that defy categories of “sweet” and “dry.” Scharzhofberger Riesling Auslese shows stony minerality, acacia and lilac notes, grilled exotic fruit, sweet stone fruits and bracing acidity, all in near-perfect harmony.

Saving Old Grapes to Show “The Soul of Monterrei” Quinta da Muradella This winery is located in the Monterrei DO region, just above Portugal in northwest Spain. From proximity to Portugal, the estate is named quinta instead of the Spanish term, finca. Muradella is the name of a 3rd Century BC Celtic fort near the town of Verin. Similar to the neighboring regions of Valdeorras, Bierzo and Ribeira Sacra, Monterrei’s lush, green hills are visually an idyllic, storybook land. The Romans prized the area’s rich geology for mining, notably gold. Ancient findings have confirmed that the Romans are also responsible for Monterrei’s other treasure, vineyards. Proprietor Jose Luis Mateo, a sensitive, perceptive wine grower and winemaker, and consulting enologist Raul Perez, have worked together to recuperate old vineyards of native grapes that were nearly extinct. Their relentless efforts have shown the great potential of indigenous varieties like the white grape Doña Blanca, historically seen as inferior and used only for orujo, the local grappa. In Gorvia Blanco, this grape shows remarkable aromatic and flavor complexity, with texture that recalls Mâconnais, Rhône and Friuli whites. With Quinta da Muradella, Jose Luis and Raul seek to recover Monterrei’s lost varieties to make wines that reflect the region’s authentic vinous identity, what Jose Luis termed “The soul of Monterrei.” This is currently not conveyed by industrial, volumetric, anonymous wines. By turns intuitive and intellectual, Raul has countless projects across Spain and in other countries. Raul has been called the best winemaker in the world. The soft-spoken and thoughtful Raul has called Jose Luis “the best wine grower in Spain.”

Local Grapes and Treasured Terroir Jose Luis and Raul make small production wines from 34 unique parcels, all certified organic by CRAEGA (Cjo. Regulador de Agricultura Ecológica de Galicia). Viticulture is biodynamic (Gorvia) or organic (Muradella, Alanda, the single variety wines) in Monterrei, the warmest, driest wine region in Galicia. The parcels have soils of decomposed slate, granite, iron and quartz, a treasure chest for a wine grower since these impart minerality to the wines. Interestingly, numerous local grapes can be found in other wine regions. Gorvia Tinto is made from Mencía, Caiño Redondo and Bastardo, the latter grape also called Merenzao in Galicia, Bastardo in Portugal and Trousseau in the Jura. QDM Sousón is made from 100% Sousón, also called Souzão and Vinhão in Portugal. Muradella Blanco is 100% Treixadura, a grape also found in Ribeiro, Rías Baixas and Portugal, where it’s called Trajadura. QDM Albarello is 100% Albarello, also called Brancellao in Galicia and Alvarelhão in Portugal. The wines exhibit forcibly expressive and nuanced aromas with etched palate flavors that convey the story of their distinct places of origin.

A Legendary Bodega’s Patient Pursuit of Perfection Bodegas Vega Sicilia Which are the most prestigious wine properties in the world? In France, Bordeaux has Lafite and Mouton, Burgundy has DRC, the northern Rhône has Chave. In Spain, there is Vega Sicilia in Ribera del Duero and R. Lopez de Heredia in Rioja. Since the Alvarez family bought Bodegas Vega Sicilia in 1982, when the Ribera del Duero DO was formed, Pablo Alvarez and his family have undertaken a single-minded, methodical and painstakingly precise pursuit of perfection that has made Vega Sicilia one of the few finest estates in the world. In 1848, the Marqués de Valbuena was unable to pay a debt, so he sold the 2000-hectare (5,000 acre) property to nobleman Toribio Lecanda, who gave it to his son, Don Eloy Lecanda Chaves, in 1853. Formerly a Catholic monastery, the Vega Sicilia estate was a working farm from which came cattle, produce, plaster and pottery. In 1864, the young Don Eloy brought back cuttings of Cabernet Sauvignon, Carmènere, Malbec, Merlot and Pinot Noir from a Bordeaux nursery to plant alongside Tinto Fino, the local name for Tempranillo. Despite the estate’s much-admired brandies, Don Eloy couldn’t make a bond payment, so the property went to the Herrero family in 1888. A year later, winemaker Domingo ‘Txomin’ Garramiola of Cosme Palacio in Rioja Alavesa came to buy wine. Phyloxerra had just struck Rioja, then doing a booming business. The Herreros agreed to rent their winery for ten years. Txomin was put in charge of the estate and he brought winemaking methods from Rioja, a region thriving through Bordeaux techniques. 1915 was the first vintage of a wine made to equal the world’s best. For several decades, this wine was solely a marketing concept for the family and was not for sale. The only way to get a bottle was as a gift from the Herreros. A legend was born.

The Best Vineyards at the Limit of Cultivation Since the 1950s, exceptional winemakers (Jesus Anadón, Mariano García, Xavier Ausàs and Gonzalo Iturriaga, current Technical Director) have maintained the winery’s remarkable consistency and longevity. Renowned soil microbiologist Claude Bourguignon (who has consulted for DRC, Leflaive, Dujac and Ausone) has called Vega Sicilia’s chalky, limestonerich soil “The best I’ve ever seen for vineyards at the limit of cultivation.” Average yields are a tiny 3-3.5K kilos/ hectare. In 2010, a new winery was completed, to vinify the estate’s 19 soil types. Each parcel is fermented separately into 30-40 lots for a more precise final blend. Unico, 80-90% Tinto Fino and 10-20% Cabernet Sauvignon (with Merlot in some vintages) is aged at least 10 years in various-sized oak and can easily mature 20-40 years in the cellar after release. Valbuena 5°, 85-90% Tinto Fino and 10% Merlot (2008 was last that included Malbec), is aged at least 5 years in large and small oak and bottle before release, and can be cellared 8-20 years after. Unico Reserva Especial, a blend of 3-4 vintages from the best lots, harks back to an old Rioja tradition. As much as any great wines, the range exemplifies powerful structure tempered by depth, elegance, finesse and great length.

Rutherford’s “Beautiful Place” in Napa Valley History Beaulieu Vineyard Georges de Latour A generation before the renowned Robert Mondavi established his namesake Oakville winery in 1966, Beaulieu Vineyard founder Georges de Latour and winemaker André Tchelistcheff began work that would make them and their winery synonymous with Napa Valley history. Released in 1940 to commemorate de Latour, the 1936 Georges de Latour Private Reserve was named BV’s flagship wine at the insistence of Tchelistcheff. This wine is considered by many to be Napa’s first ‘Cult Cabernet.’ Tchelistcheff would become known as Napa Valley’s most influential winemaker and, like Émile Peynaud, one of the world’s most important enologists. In 1900, Georges de Latour’s wife Fernande saw their first vineyard in Rutherford and called it beau lieu (‘beautiful place’). Soon after, de Latour sold his food business and bought the four-acre ranch. Using the name coined by his wife, he founded Beaulieu Vineyard with the goal to make Napa Valley wines to equal the best from France. From the beginning, de Latour’s nimble decisions bolstered his winery’s business. Phyloxerra had destroyed 15,000 acres in the Napa Valley by 1892. To combat this, de Latour brought Phylloxera-resistant rootstock from Europe. In 1920, Prohibition nearly killed California’s fledgling wine industry. Over 300 wineries before Prohibition dwindled to 60 afterwards. During Prohibition, BV legally sold sacramental wine to the Catholic Church. Georges de Latour would soon meet a kindred spirit who shared his passion for research and innovation. In France, de Latour met the highly reputed Tchelistcheff, known for innovative methods in the vineyard and winery. “The Winemaker’s Winemaker” Tchelistcheff was hired in 1938 and made sweeping improvements in BV’s winery. European methods of cultivation

and pruning, winery sanitation, cold fermentation for whites and rosés, controlled malolactic fermentation for reds, frost protection and preventing grape diseases all dramatically improved quality. After studying Napa Valley’s various terroirs, Tchelistcheff identified the best areas to plant Cabernet Sauvignon. Many of these became top BV estate vineyards. His method of vinifying separate parcels continues to this day. Tchelistcheff has mentored generations of iconic winemakers, including Robert Mondavi, Joe Heitz, Mike Grgich, Richard Peterson, MaryAnn Graf, Warren Winiarski and Heidi Peterson Barrett. BV’s current winemaker is Trevor Durling. Georges de Latour Private Reserve Cabernet Sauvignon is made from a selection of the estate’s oldest blocks, planted in 1900. About 50% is fermented in new French oak barrels, the rest in stainless steel and wood tanks, with extended skin contact, before malos in barrel and aging for about 22 months in 100% new French oak. With bold, dark berry aromas and deep palate flavors, this is a benchmark robust, structured Napa Cabernet. The 2014 vintage had a small percentage of Petit Verdot and Merlot; the 2013, some Petit Verdot.

A Howell Mountain Family’s Loyal Following Dunn Vineyards Like Tom Petty and Sam Shepard, legends who’ve recently passed, Randy Dunn, a man very much alive, has been identifiably, unapologetically and indefatigably American. Long considered an iconoclast, Dunn is a wine grower and winemaker with his own ideas about the best ways to do work in the vines and in the winery. Since 1979, Randy and wife Lori have made wines of place on Howell Mountain without pretense. An honest approach has helped build a loyal following that has steadily grown over the years. In 1978, Randy and Lori bought fourteen acres in Angwin, of which about five acres were Cabernet vines. At over 1,700 feet elevation, the town of Angwin is a few miles north of St. Helena and east of Calistoga. In the hills, with limitless vistas of most of the Mayacamas Mountains, Angwin is home to CADE, Robert Craig, O’Shaughnessy and a bunch of other top wineries. When the Dunns made their purchase, Randy was a full-time winemaker at Caymus in Rutherford. Randy, Lori, and their young son Mike worked the family’s vines on nights and weekends. With grapes that Randy farmed and bought from Harry Frank’s adjoining property, with fruit from Beatty Ranch, and with his harvest from his new property, Randy made the first vintage on his new property in 1978. In 1984, Howell Mountain was approved as a separate AVA within Napa Valley, something Randy and other winemakers had worked toward. In 1985, Randy and his family moved into the “Brown House” on the property and Dunn Vineyards was successful enough for Randy to stop working at Caymus.

Biodiversity in Mountain Vineyards Today, Dunn owns thirty-five acres among four vineyards. Typical of many mountain vineyards, Dunn

vineyards are planted amidst forest to encourage biodiversity. The family fervently believes in preservation. Randy and Lori donated the development rights for their 64acre Sentinel Hill property on Howell Mountain to the Napa Land Trust in 2004. In 2006, the Dunn family’s $5 million donation was critical to help the Napa Land Trust purchase Wildlake Ranch, a 3,045-acre parcel that extends from Mount St. Helena to Howell Mountain. This sprawling mountain site will never be developed. The Napa Valley and Howell Mountain Cabernet Sauvignon are 100% Cabernet. Since 2009, both wines are made from estate fruit. Total yearly production is 5,000 cases. Randy has often stated his goal to make “A wine that tastes like Cabernet Sauvignon from Howell Mountain.” He hates highalcohol wines and strives to reach 13.514%. Winemaking is traditional, with pumping over and 32 months aging in 100% new French oak. Currently, Randy’s children Mike and Kristina handle cellar and marketing work, but Randy remains a constant presence. Seriously structured tannins can make some vintages seem rustic and harsh when young, but Dunn wines evolve gracefully after 10-15 years, gaining expressive, suave characters similar to fine, mature Bordeaux.

California’s wine industry is younger than that in Old World regions, but its history is just as rich. Since Prohibition nearly killed California’s wine industry, a strong resurgence in wine production has continued for nearly a century. Cabernet Sauvignon is riper here than in Bordeaux overall, but the best wines age as well as First Growths. Syrah shows different characters than it does in the Rhône, but the grape’s fans around the world don’t mind. Today, Pinot Noir and Chardonnay lovers can choose between “Classic California, Big Flavor” or “elegant, balanced and more European” styles. California wines have continued to evolve.
