How would you describe yourself or the restaurant? The gardens at The Southern Hotel were the inspiration for the design of the dining room and we wanted to bring that feeling into to the restaurant. Our menu at The Gloriette is French inspired with a focus on seafood.

What sets you apart from other chefs/restaurants? We have an amazing, dedicated team of professionals that share the common goal with an owner who is a true visionary. When the two collide, amazing things happen.

What do you love most about the restaurant industry? The people and the energy it brings on a daily basis...it's never boring.

Do you have a favorite entree/dish? Our Flounder Grenobloise is a favorite take on a very classic French dish. I've gotten to that age where there's been a lot of favorites, even some I've forgotten about. Thankfully my wife reminds me of them, “babe, remember that rabbit dish you made at The Gatehouse...”

What is one ingredient you can't live without and why? Garlic. Garlic makes the world go round.

What is your favorite meal to prepare at home? Mostly comfort foods I grew up eating - lots of pasta, greens such as broccoli rabe, escarole and beans, eggplant parmesan the way my mother prepares it. Steak, steak and occasionally a steak.

What do you love most about the local restaurant industry? Louisiana's food culture is incredibly rich and unique to anywhere else in the world. As a chef working here, I am obligated to help preserve that culture.
